Getting our June Enterprising Man to slow down from working his two Live Fit Smoothie locations was no easy task. Our cover photographer, Steve Randon, along with the Sophisticated Woman Magazine staff, had the pleasure of watching Ryan Miller doing what he loves— making delicious green tea smoothies and showing us some athletic moves on the rings. Following the photo shoot, Ryan walked next door to CrossFit Mandeville for his complete workout.

I WAS BLESSED growing up with a dad that was always around. He ran a boys boarding school so he was always home when I wasn’t in school. I even got to see him at school, not that I liked that—as a teenager the last thing I wanted was to have my dad at school with me. In the long summer holidays after the last boarder had left, we would all pile into our VW bus and take off for France, where we would explore a wine region. As children, we were not interested in those damp caves and barrels of wine; it is only now I truly appreciate all the things he taught us and all the unique memories our family shared. We would set up camp somewhere. In the mornings as young children (I was 6 on our first trip) my sister, Elaine and I would be sent to the boulangerie to buy croissants with the line of French that our parents taught us ‘douze croissants s’il vous plait’ (12 croissants please) we would repeat it all the way so that we wouldn’t forget it. Midway through the trip, we would stay in a house or apartment because my mum needed a break from camping.

Joanne Gallinghouse’s father Ed Jemison: Dad was a self-proclaimed “genius architect.” At least, that’s what he taught me to tell people from when I first began to talk! We were both so proud of the office building Dad designed for us.

Sarah Cottrell’s father Colin Barrett: My dad ran a boarding school and was head of the math department. Other than his family, his greatest accomplishment was that at 62 he moved to the Iringa Region of Tanzania, Africa and taught high school.
Anna Grundmann’s father Van Grundmann: My dad always taught me to work hard, do what you love and put family first. When I was little, my dad would travel during the week but he never missed a birthday, dance recital or soccer game.
Gwen Anderson’s father William ‘Bill’ Schank: My dad had very strong work ethics throughout his career as a Supervisor for Jefferson Parish Water Department. He believed in the benefit and importance of hard work with his job and family. Our entire family misses him dearly.

Dianne Waller’s father Dr. Edward Fletcher: My dad spends a lot of time in his car driving to rural areas for housecalls as a medical director for hospice. He is a compassionate physician and father, who worked long hours when I was young but made time to take me ice skating in central park.

Claire Thomas’s father Gerald Joseph Daigle: My father worked for Public Service in New Orleans installing water meters. During the holidays we would go look at the Christmas lights out at the Lakefront. As we drove along he would point out all the fancy houses where he had installed a meter.

The lines upon the brow 1/3 came Vertical Non-Bleed somehow much too early on.” I wrote these song lyrics in 1993, 2.43” x 8.875” so you can imagine how many more lines on my face have appeared since then! As a man, the concept of vanity has been difficult to own, but finally, as my lines grew deeper and more numerous (leading to frequent comments about my looking tired or over-worked or under-slept), I relented. Under the guise of “trying a new product on myself so I can better tell patients what to expect,” I injected a facial filler to replace the lost volume, which caused my laxity and wrinkles. After seeing so many patients love their “Botox brow lifts,” I then injected just a tiny droplet under each of my brows. What was the effect? My hollowed cheeks became full, more youthful cheeks immediately. These tired-looking eyes with upper lids resting on lashes were open, alert eyes that actually made me feel more awake and energetic. The disappearing chin with “marionette lines” extending downward from the corners of my mouth became a distinctly contoured jaw line and chin. In other words, I went from tired and aging to a more rested and youthful look in just a matter of minutes.

AS A COVINGTON NATIVE, Dr. David Moores knew when he graduated from the Louisiana State University School of Veterinary Medicine in 2003 that he wanted to practice here on the Northshore. OBESITY IS a condition in which a person has a lot of excess body fat. A formula called Body Mass Index (BMI) is used to calculate its severity based upon weight in kilogram divided by height in meter squared. A BMI between 25–29.9 kg/m2 is considered overweight, whereas a BMI greater than 30 is considered obese, and a BMI greater than or equal to 40 is considered super obese. I AM ALWAYS experimenting with new ways to cook and serve my favorite dishes. My Himalayan Pink Salt Slab provides a natural cook top and serving platter in one, additionally my recipes now receive the benefits of natural, pure salt with no chemicals or additives. The salt plate is as versatile as it is easy to use. Cure, bake, sauté, grill or chill—there are a myriad of options as well as numerous recipes. Here is one of my favorites for the summer. Sounds complicated, but Pinchos de gambas is not only easy, but delicious! Pinchos are simply tapas on skewers and Gambas are shrimp.
Pinchos de Gambas—A Shrimp Appetizer Ingredients: Serves 4 12 jumbo raw shrimp, shelled and deveined 1 cup of white wine 1/8 cup of extra virgin olive oil 1 1/2 tablespoons minced fresh garlic 1/4 teaspoon thyme 1/4 teaspoon parsley 1/4 teaspoon oregano 1/2 teaspoon freshly ground black pepper 1/2 teaspoon smoked paprika 3 green onions 1 pink grapefruit halved (cut about 12 small
wedges for skewers) 1 avocado halved 4 skewers – approximately 8 inches in length Directions: Combine the wine, oil, thyme, parsley, oregano, and shrimp in a bowl and toss well. Short on time? Use a Saveurade Frejus instead. Cover the bowl and marinate in the refrigerator until ready to use, but no more than 4 hours. When ready to cook, allow shrimp to come to room temperature. Drain the marinade from ingredients and set the liquid aside. Thread each skewer with 3 to 4 shrimp and grapefruit wedges alternating between each piece of seafood. Brush with the remaining liquid. Sprinkle the black pepper and paprika on each skewer. Brush the green onions, grapefruit and avocado with extra virgin olive oil just before grilling. Heat the salt plate on the BBQ grill according to directions. When the barbecue and the salt plate are hot, grill the shrimp for five to six minutes. Once the shrimp loses its translucent appearance it is ready to eat and can be served with the grilled avocado and grapefruit. Make a spritzer with the remaining wine, sit down and enjoy!

With a focus on fresh fruits and vegetables, Live Fit offers clean-eating options to people with a variety of health and fitness goals.
RYAN MILLER is a firm believer in the power of visualization. Whether it stems from his background in the visual arts or from his goal-oriented nature, Ryan has used this technique to accomplish personal and professional milestones. Less than 18 months ago, Ryan detailed the dream of owning his own smoothie company. Not only did he create a business plan with specific benchmarks and deadlines, Ryan even overlaid an image of his logo onto a photo of a building façade so he could literally envision what a Live Fit store would look like. As a native of Mandeville (Ryan graduated from Fontainebleau High School in 2000), Ryan feels a kinship with the area and understands the importance of supporting the community. His dreams are being realized according to plan with a relocated site along Highway 59 that features a drive-through window and a second location on Highway 22 near his business partner, Robert Cole’s, successful company, CrossFit Mandeville. “I’ve always lived a healthy lifestyle. I enjoyed going to the gym, cooking and eating well. But I really didn’t think I’d make a career out of it,” Ryan said. “After working in the graphic design and construction industries, I began looking for a business opportunity that would fuel my passion. I inevitably returned to health and fitness.” Ryan explained that he noticed the lack of nutritious, on-the-go dining options while he was working in construction. He was always looking for two things: a gym to exercise and a healthy place to eat. “I figured if I wanted these things, other people wanted them too. I knew I could fill a niche in our community and provide a service that would help people,” he said. Three months after Ryan completed his business plan, he opened his first Live Fit location. With a focus on fresh fruits and vegetables, Live Fit offers clean-eating options to people with a variety of health and fitness goals. With no added sugar, no preservatives, syrups or purees, Live Fit smoothies can be used as a low calorie, nutritional meal replacement or as a high protein supplement for people who are interested in weight training. Gina Groh of Made 2 Matche Boutique, one of Live Fit’s biggest fans, loves that there are options for people who are lactose intolerant. “I can’t get enough of the non-dairy Green Apple Spinach Smoothie!” she raves. Live Fit carries Ponchatoula strawberries when in season, along with locally produced honey. Additional vitamins and supplements can be added to the smoothies depending on a customer’s goals. Live Fit staff members have been trained to assist customers with choosing the right enhancements. Sandwich wraps, salads and snacks are also available.

I can adapt recipes and make sure what I eat tastes good while also being good for me,” he said. “One of my favorites is a take on spaghetti and meatballs. I use spaghetti squash instead of pasta and turkey instead of ground beef.” “Our goal is to show people that they can enjoy eating well and being fit. There is no need to sacrifice taste or enjoyment,” Ryan said. “We’re about so much more than smoothies. We try to give people the tools and the support to live a healthy lifestyle. ‘Live Fit’ is our philosophy.” “We’ve had some customers who have never eaten healthy before but who want to make a change in their lives. We understand this can be daunting, but once people begin fueling their bodies with nutritious foods, it is so much easier to stay on track. Junk food begins to lose its appeal,” he said. Ryan noted that food companies and restaurants often make it difficult for people who are trying to make better choices for their wellness. Nutritional labels are difficult to decipher and some can even be misleading. “I don’t think people realize how much added sugar there is in processed foods. Even products like corn syrup and agave, which are not considered ‘true sugars’ have the same effect as sugar on our bodies.” In order to provide the healthiest options for its customers, Live Fit features ingredients like organic peanut butter, almond butter, Greek yogurt, coconut milk and 30-Calorie almond milk. There are a variety of proteins available including rice, soy, egg, pea, casein, hemp and whey. Live Fit also carries a full line of products as well to help maximize performance. While Ryan wants to help educate customers on health and nutrition, he also understands that his customers are an important resource as well. Therefore, he has
created a dynamic where customers help and support one another. He tweaks smoothie recipes based on customer feedback and has added features that customers want. He’s added a juicing machine, which allows for a variety of fruit and vegetable juices, and also increased Live Fit’s offerings of Paleo diet and gluten free options. “Live Fit is a community. We strive to provide what our customers want—high-quality, healthy products—in a friendly and supportive environment.” This is one of the reasons that Live Fit features its own goal board where customers can list their fitness goals and update their progress. “I’ve found that once you write down what you want on paper and include a date to achieve it, you make it real. That’s the difference between having a wish and having a plan,” Ryan said. “It is what helped me make my own dream come true.”

THIS MONTH we address how to use 529 plans to remove large amounts of cash from your taxable estate. Mary and Bill, a married couple, have an estate valued at $12 million. For 2014, they can pass up to $10,680,000 ($5,340,000 each x 2) estate tax free to whomever they choose. However, their estate is “over” that amount by $1,320,000, therefore, their loved ones would be paying an estate tax bill of $528,000 (the maximum estate tax rate is 40%). Bill and Mary want to leave their estate to their children and grandchildren. As part of the annual gift exclusion (AGE) amount, they can each make a gift every calendar year to whomever they choose of $14,000 (or $28,000 by a couple). If they wanted to fund a 529 plan for each of their eight grandchildren, they could gift in one year a total amount of $224,000 ($28,000 x 8). If they wanted to move even more cash from their estate, the IRS allows a one-time gift equal to the full 5 years of the AGE ($28,000 x 5 = $140,000) to a 529 plan. If they wanted to fund this gift to the maximum amount allowed, they could literally move $1,120,000 at one time ($140,000 per grandchild x 8). The entire $1,120,000 is now growing

tax-deferred and can be removed tax-free by the beneficiary to pay for higher education. Because the gift is in excess of the single year AGE they must file an IRS Form 709 (gift tax return) but as long as they survive the fiveyear term, the entire gift is removed from their taxable estate under AGE rules. Assuming they survive for 5 years, they have now reduced their taxable estate by $1,120,000 (and all growth on those funds). The estate tax exemption amount increases every year for inflation (for a married couple it increased by $180,000 from 2013 to 2014), so it is very likely their entire estate value will be below the estate tax threshold. This strategy has now saved their loved ones at least $528,000 in estate taxes! And recall from last month, if Bill and Mary decide they need any, or all, of these funds back, it is still theirs to take back.

Summer Doesn’t Have to Bug You WRITTEN BY ANNA RIBBECK
THE LEADING QUESTION of today’s gardener is “How do I control the insects that invade my garden?” Number one answer—keep your garden clean! This means removing all weeds and dead matter from the garden floor. A clean space will allow the plants to be seen from stem to stern. The gardener must be aware of the type of invader, so frequent observance of your plants will take care of this issue. A good hose spraying will help with the removal of almost any invader. Add a biodegradable soap to the spray every two weeks and you are off to a good start. Chewing or biting insects, such as beetles, caterpillars, cutworms, grasshoppers, leaf rollers and slugs can be controlled by spraying a pesticide on the plants they like to eat. Check with your favorite nursery to find just the right one. Follow directions carefully so as not to poison the plant or other living
beings in your garden. Let the invaders chew themselves to the pearly gates! Sucking insects do not eat plants—they merely suck the life out of them. Contact insecticides will take care of these destroyers by clogging their breathing pores or penetrating to their vital organs. These attackers include aphids, cyclamin mite, lace bug, leaf hopper, mealy bug, red spider, rust mite, scale, thrips and white fly. While not an insect invasion, another garden attacker is the various types of fungal disease. These tend to be very common in our southern gardens. Examples of these are: brown rot, black spot (roses especially prone), leaf spot, mildew, mold and rust. Many of these will be caused by improper soil conditions or improper watering. There are fungicides to treat all of these; but a clean, properly drained and aerated garden will correct many.
It cannot be pointed out enough to read directions and talk to nursery experts when using any kind of poison in the garden. Children and animals are at great risk when poisons are at hand. Oil sprays—even olive oil will help stop certain invaders—can still be applied til the end of May. After that it will be too hot and you may cook the plant you are trying to rescue. Try to use natural solutions whenever you can! Find time to relax in your June garden before the heat really sets in. Some fresh picked mint—free of insects of course—will make a nice mint julip to enjoy as you kick back and observe the fruits of your last spring labor. Now you can be ready to say hello to summer with a pest free garden! Happy Gardening!

Our recent opening of the Fremaux Towne Center is a great addition to the I-10 corridor and it is still expanding. After Stirling Properties took over the development, in no time phase one was completed with a new list of businesses released for phase two. AS A RESULT of the excitement and interest generated by Covington’s Bicentennial Celebration, the Covington Heritage Foundation (CHF) was established to continue the preservation efforts focusing on the city’s culture, character and community. The Bicentennial Committee did a fantastic job commemorating the city’s 200th birthday and celebrating its history. A dedicated group of Committee members felt compelled to continue their support of historical preservation for future generations and the CHF was formed. The Foundation held a membership kick-off event last December, which was a huge success and through grass roots efforts, the CHF continues to gain exposure and increase membership. On June 8, 2014 beginning at 4 p.m., the Covington Heritage Foundation will hold “Boiling at the Brewery,” a membership recruitment event at Covington Brewhouse, which
has graciously offered to assist in sponsorship of the occasion. Membership for the foundation is off to an excellent start and this will be an opportunity to gain new members, meet new faces and have a great time with existing members. As Mayor, I am tremendously excited about the efforts of the Covington Heritage Foundation, understanding not only the importance of preserving our past, but also how our city’s legacy and future depend on community associations such as CHF and their members. Public input is encouraged, and volunteers are welcomed. IT’S OFFICIAL. Hurricane season began on June 1. It seems early, but it’s time to be prepared. We have had our share of storms and we have learned from every one of them. So this is your friendly reminder to first of all, sign up for E-Briefs and Emergency emails on our website, cityofmandeville.com. It’s right on the front page and easy to do. When we are in hurricane mode, this will give you email notices of evacuations and weather conditions daily as they happen. If you would like a direct phone call, sign up for St. Tammany Alert on the parish’s website, stpgov.org. It’s also a good time to check your generator to see if it is working efficiently and to have the staples you need on hand. If you take care of that now, you won’t have to stand in long lines later on. Have a safety
plan ready for yourself and your family. There are new regulations for construction projects concerning dumpsters. Please call our Planning Department if you are getting ready to build. This is especially important during hurricane season. We don’t want materials to become projectiles and a danger to our residents. Finally, all of our residents were sent magnets in their water bills last year with emergency phone numbers on them. If you live in the city limits of Mandeville and you need a new one, please come to City Hall and pick one up. Contra flow rules have changed and as you well know, circumstances can change in a matter of hours. It is important to keep tuned in and ready to go. Let’s be prepared this season and all the while pray for clear sailing!.

PONCHATOULA IS SPECIAL for many reasons, but one of the elements I find most refreshing is its citizens’ involvement in their own community. Those with young children are involved in church youth groups, sports teams, scouting, dancing and gymnastics. Because of this involvement, kids learn the importance of teamwork, working toward a personal goal and that working and playing in your community brings spiritual satisfaction. In addition, you will find scores of men and women involved in community organizations like the Kiwanis, Lions, Knights of Columbus and the Rotary. Why is community involvement such a high priority in our community? There is a simple reason; because it benefits the citizens here in Ponchatoula and the Tangipahoa area. By being involved
on an organizational level, you come to understand the intricate workings and needs of your community. In addition, comprehending community and organizational decisions and priorities often leads to a stronger personal commitment to a chosen cause or organization. You, dear reader, may have all you need to live a fulfilled, satisfying and happy life, but by becoming involved in your community, your empathetic vision of the needs of others increases. By gaining knowledge of your community, you become an informed and involved member of “those who make a difference.” By sharing your skills, your financial resources, your ideas and your values, you can personally make that impact!

What this means for Parish Government, as well as every citizen, is preparation. As we do each year, every department within Parish government has reviewed and updated their emergency procedures. Revisions, where needed have been made, and a long list of duties, exercises and staffing plans, is complete. Each employee’s designation in the event of an emergency has been planned and the Department of Homeland Security and Emergency Preparedness has met with all departments who will play a role in emergency operations during a storm. We ask you, if you have not done so already, to self-register for our Parish-wide emergency telephone
alert system, ALERT St. Tammany. While all home phone numbers are automatically geo-coded into the system, cell phones are not. So, for the many people who have opted out of home phone services, or land lines, it is essential that you register, so that the Parish can alert you to important information during emergency events. Visit stpgov.org to register. You can enter up to three cell phone numbers and an email address into the ALERT St. Tammany system. You will be notified with a phone call in the event of an emergency.
