Toasting & Hosting With A Nod To The Past IN 1972, A merchant mariner-turned-New Orleans waiter named Chris Kerageorgiou built and began operating the original La Provence restaurant where it remained on the Northshore for over 50 years. Kerageorgiou put his heart and soul into creating a unique and comfortable atmosphere for guests to dine and enjoy all of life’s festivities. During its half-century in business, La Provence was a true dining landmark and destination restaurant — drawing bon vivants from across the region to a woodsy stretch near Lacombe to commemorate special times. Many compared the experience to visiting a classic country inn. Cayman and Danny Sinclair, brothers and local entrepreneurs, have now revitalized the property as The Inn at La Provence to host weddings and special events, and are honored to continue the tradition. The plan brings the La Provence property full circle. Surrounded by pine trees in the Big Branch community, it was once a four-room motel and café. Like many from the area, Sinclair has fond memories of visiting the original La Provence through the years, including long weekend lunches with his family. “My family would stay for hours, sitting around that fire in the front room,” he said. “It was a classic place. We're really excited to be able to revitalize it.” The multiple rooms and large courtyard have been designed with a nod to the past and an eye on the future. With its original terra cotta floors and historical architectural details, the restaurant property has several dining spaces with multiple fireplaces. The Stirling Ballroom can be configured to host a variety of events, from seated dinners to buffet-style receptions. The Joyce Bar is ever-welcoming with a comfortable, eclectic style. The name pays homage to the three decades that Joyce Bates — widely known as the poetry-writing bar manageress — delighted patrons there. Relax a Little. Rest Awhile. CERTAIN ICONIC SITES seem destined to carry on. Barrett and Jill McGuire, along with Pat and Chyrl Gallagher, have realized their vision to revitalize a historic location on the Mandeville Lakefront, fulfilling just such a destiny. Like its predecessors, Pat’s Rest Awhile is welcoming guests to rejuvenate while enjoying beautiful vistas of Lake Pontchartrain. In the 1870s, steamers began bringing Southshore visitors across the lake to the blossoming resort town of Mandeville. In 1880, Edmond and Rosy Frapart constructed a hotel, restaurant, bar and dancehall to entertain those visitors. In 1905, the property was rededicated as Rest Awhile, a vacation rest home where "the needy could regain health and find refuge by the Lake." Barrett McGuire describes the building that was left vacant and damaged after Hurricane Katrina as a ghost on the Lakefront. His purchase of the property and restoration efforts began just in time, as had the buildings not been raised, Hurricane Isaac would have washed them away. Chef Gallagher, who curates a collection of popular Northshore restaurants, says he’s thrilled to partner in the project. "Leave it to two crazy Irishmen to start a new restaurant during a pandemic, but the concept just couldn’t be denied. The McGuires are creative and supportive. It’s a fabulous piece of property that the community has embraced. It’s prettier and more well-received than even we imagined." As Gallagher proudly shows off the renovation, he points out unique details including reclaimed wood from the original hotel and bar, and tabletops of local river cypress hand-made by Trevor Griffith. The main dining room and bar reside in the original hotel building, he explains. The RAW Oyster Bar and kitchen are new construction, and the deck was built to connect the 1850s Hadden Cottage — an additional dining area, and the Sophie Cottage — a wine bar and tavern, to form multiple cozy areas and inviting outdoor spaces. “The feel and menu here are different than my other places,” says the award-winning restaurateur. “There are no white tablecloths here. It’s more casual and seafood-oriented. The deck comes alive on the weekends with people soaking up the Lakefront’s beauty and enjoying themselves.” Only opened four months, Gallagher says more plans are in the works including further developing the dog-friendly ground floor area and expanding cocktail areas and offerings. “It’s exceeded expectations in every way. Why do certain people seem to always excel in their endeavors? Is it luck? Timing? Talent? Entrepreneur Magazine lists several characteristics that the most successful businesspeople share. Among them are vision, focus, passion, lifelong learning, hard-working, integrity and gratitude. When talking to Greg Troyer about his ultra-luxury home building enterprise, he completes the ‘success punch list’ beautifully. At an early age, Greg learned how to turn his passion into a lucrative business. By 12, his talent for music inspired visions of a career. “I was just driven towards the music industry. By the time I was in high school, I had a studio set up in my parents’ garage and was recording professional musicians. I found a niche that needed filling, put an ad in the music section of The Times-Picayune, and I was booked almost every evening. After graduation, I worked that business with great success until my late 20s.” The search for a family home in 1998 would change his focus and develop in him a new passion, but his goal-driven attributes and the formula he developed for success in his first business served as a blueprint for fabulous things to come. “My dad was instrumental in me discovering my next passion. After showing him houses I was considering buying, he said, ‘Son, you can do much better than this – just build your own.’ I found that I loved the building process, and I was good at it. THE TWO BENGAL CATS who call this beautiful place home generously allow the Troyer family to reside with them in the cul-de-sac of a private neighborhood in Jefferson Parish. Fortunately, their gorgeous coats are complemented by the neutral, timeless color palette inside the home. This grand home, owned by builder Greg Troyer and his wife Heather, punctuates the end of a street filled with numerous elegant houses and perfectly manicured lawns. With six children and all that entails in life commitments and schedules, coming home to this place feels like the ultimate exhale at the end of a hectic day. Just walking inside from the family entrance is a transportive experience. The mudroom is less about mud than it is about life clad in beauty – custom floor-to-ceiling cabinetry houses the evidence of activity – and the view down the front loggia is reminiscent of European antiquity. The row of arches that form the front hallway are positioned as the main artery of the home; rather than being hidden in the middle of the structure, this corridor is filled with light. The walk to the kitchen rounds the dining area, where a custom marble table will sit until the end of time, says Greg: “It took nine guys to move that into here — it’s staying!” A contemporary crystal chandelier sparkles in front of a moody piece of modern art. Greg’s good friend Tony Mose, owner of the downtown New Orleans Esom Gallery, filled the rest of the home with his art which is edgy and modern, yet somehow feels timeless and soft within this space. Greg, who builds high-end custom homes throughout the New Orleans area, has made his personal residence the crown of his portfolio. Double steel doors open into a double-height foyer, which sets the tone for the experience of the interior. No detail has been missed, but the European-style palette lacks the busy flavor that is sometimes seen in homes with this influence. “We both love being in France, but we didn’t want all the ‘gingerbread’ in our own house. home feature Coffered ceilings over the living room provide a comfortable, cozy touch to the core of the house, which is flanked by the kitchen and dining rooms to one side and the office and sitting area to the other. A sacked brick wall is softened by tall drapes and a spare chandelier around the breakfast table, but as in most homes, the kitchen island is the hub of activity and casual meals. Using a double-island layout in the footprint of the room keeps one surface for cooking — which the large family does all the time – and one surface for homework and snacking. “The rule is, if you’re under 30, you stay outside of this work zone,” Greg jokes. The clean, contemporary look of the tall kitchen cabinetry provides an ideal foil for the striking marble islands and backsplash. The entire kitchen is clad in Calacatta Vagli marble, and the stately pendants suspended over the island are a striking accent to a perfectly proportioned gathering area. “Natural materials have a great warmth to them and nothing man-made comes close to this look and the characteristics of the material,” Greg states. Greg’s philosophy as a builder is that everywhere should be special, from the big spaces to the small, but that none need to be overdone to be enjoyed. Features such as rounded shelves within the pantry and powered shades behind the drapery keep life easy and comfortable for the family, and largescale design elements such as the metallic-finished custom hood and the flanking limestone fireplace provide the visual balance as they move through the space. Although each space is interesting, no space is visually busy or cluttered. Go a few steps in the other direction and you’ll be drawn to the view down the terrace that leads to the pool. Large sliding doors provide a crystal-clear view of the striking white marble patio and the gently bubbling fountain that drowns out any noise that might remind one of the rest of the world. To one end, the outdoor kitchen caps the visual length of the pool with simple columns and height that stands up to the surrounding structures. Even the color palette here remains true to the rest of the house – all simple white stone with black accents, nothing jarring. The integrated hot tub is clad in graphitecolored mosaic tiles, and the deep blue-gray color of the pool gives an air of mystery and the look of endless depth. In the evening, this spectacular outdoor space is showcased with lighting and creates the perfect venue for entertaining family and friends. The two-story poolhouse also features large tinted windows and plenty of open space for hosting guests. Nearby is Greg’s recording studio, a favorite place of his to escape. As a lifelong musician, he keeps multiple instruments handy — from guitars to keyboards — and has a complete setup for recording. Pear & Ginger Pork Chops INGREDIENTS 4 – 6 ounce pork chops Kosher or sea salt and cracked black pepper, to taste 1 tablespoon olive oil 2 tablespoons apple cider vinegar 2 tablespoons unrefined brown sugar 1 cup chicken or vegetable broth 1 tablespoon freshly-grated ginger 1 tablespoon roughly chopped fresh rosemary 1 ripe pear (Bosc or Anjou), roughly chopped or sliced lengthwise 1/2 sweet or yellow onion, sliced into wedges 1 teaspoon corn starch 2 tablespoons cold water

DIRECTIONS 1. Season your pork with salt and pepper. Cut slits into fat along the edge of the pork chop so that it doesn’t curl as you cook it. 2. Heat oil over medium-high heat in a large skillet. Add the pork chops and cook them until browned and just cooked through, about 3–4 minutes per side. Transfer the pork chops to a plate and cover to keep them warm. 3. Add vinegar, brown sugar and fresh rosemary to the skillet. Stir over medium heat until the sugar has dissolved. Simmer until the syrup turns a dark amber color, about 10–20 seconds. 4. Add the broth and bring to a simmer, stirring occasionally. Add the pear slices, ginger and onions. Cook uncovered for about 5 minutes. 5. In a small cup or bowl, whisk the corn starch and cold water together with a fork until the corn starch has fully dissolved. Slowly add it to the simmering sauce in the skillet and stir until the sauce has thickened. 6. Reduce the heat to low and return the pork and any juices to the pan. Spoon the sauce over the pork chops and serve, topping with onions and pears.

Pour Campari, dry gin and sweet red vermouth into a glass. Stir gently. Add one large cube of ice. Add a splash of soda water. Squeeze the orange twist mustache over the glass and rub the rim. Garnish with the orange mustache.
In a cocktail shaker, combine the lemon juice, simple syrup, blended scotch and Islay scotch. Add ice and shake 20-30 seconds. Strain into a rocks glass filled with ice and garnish with candied ginger pieces.

Fill a cocktail shaker with ice. Add the rum and lime juice and shake well. Strain into an ice-filled collins glass, then stir in the ginger beer. Skewer the ginger slice and lime wedge and garnish the cocktail.
