“Good Enough is Never Good Enough” It’s a motto that drives Gordon T. Herrin’s personal injury law firm in Covington. When his family settled in St. Tammany Parish in the late 1800s, they brought with them a brawny work ethic that was carefully instilled in each successive generation. Gordon Herrin is no exception. He works tirelessly to protect his clients and ensure that insurance companies honor their contracts. “Americans pay over $650 billion a year in auto and property premiums. Insurance companies should gladly abide by their contracts and pay medical bills or hurricane repairs. But, they don’t. That is where I come in. I force them to honor their own contracts or deal with me at trial.” “In the past, lawyers made insurance companies follow the law or face accountability at trial. Today, over 98% of lawsuits settle out of court. The result--many lawyers today don’t have the ability or desire to take an insurance company to trial. The insurance companies know this. Most lawyers barter a bit but give in to whatever the insurance company offers. Then, they sell it to their clients.” “It’s simple. I don’t give in.” Northpark One 106 Park Place, Suite 205 Covington, LA 70433

Stop Waiting: Take Action The Northshore’s Best
WRITTEN BY BILLY BEAUDREAU, PT, DPT, MTC, OCS, FAAOMPT
NEWS FLASH
– If your pain was going to go away, it would have by now! There are many people walking around every day simply waiting for their pain to magically disappear. Living a life of limited mobility, and not enjoying everyday activities, is no way to get through life. Sound Familiar? There are a few reasons we hear why people make the decision to do nothing about their pain. Often it is financial, or too much of a time commitment.
COMING IN AUGUST - SEPTEMBER
NORTHSHORE
VETERINARIANS & ATTORNEYS
We find that if pain does go away on its own, its not because the problem has been solved, it is simply because your body has made compensations so it doesn’t hurt anymore. If it hurts to squat down, people avoid sitting on the floor to play with their grandkids. If it hurts to reach into the top cabinet, people will rearrange their shelves to place the commonly used items lower down. If it hurts to work 8-12 hours a day, people will take a handful of Tylenol just to get through the day. Again, does this sound familiar? None of these solutions correct the problem. Given enough time, this leads to chronic conditions that take longer to handle, often requiring medications and/or surgery to correct. Both of which place a much larger financial strain and longer time commitment to recover from. I encourage you to take action, invest in your health, and save money by reaching out for help from a professional. Physical Therapists are uniquely trained to get to the root of your problem and make changes that will last, eliminating your pain without creating long term future issues.

women who win NAMED FOR THEIR daughter Aubry Pearl, Danielle
Martin and her husband Jason established Pearl’s Seafood Market and Restaurant in 2018. In an industry where most seafood places are run by men, Danielle breaks the mold at Pearl’s as its ringleader and, when duty calls, its hands-on food prepper. “I know how to boil, I know how to shuck oysters, and our customers come back for more,” Danielle says. “Occasionally I’m the only one in the place boiling.” Pearl’s market side offers seasonal seafood like crabs, crawfish, and shrimp, along with a selection of fresh fish, all available for carryout. Inside the restaurant, patrons dine on a variety of platters and plates, some prepared and perfected by Danielle’s husband when he worked for the New Orleans Fire Department. Menu selections include fried and boiled seafood, burgers, stuffed crab, one-of-akind debris fries, and the best roast-beef po-boy you’ll ever eat — all available for your enjoyment at this woman-owned Slidell strip mall seafood restaurant. Now that’s a mouthful! Prior to founding Pearl’s, Danielle spent several years working with her mom Ann at Lama’s St. Roch Market in New Orleans. Her grandparents, Gloria and Anthony Lama, ran the neighborhood seafood market for 52 years. Danielle brought along that authentic seafood market experience, and her family’s own seasoning blend, when she founded Pearl’s. That same tasty blend — it’s only too hot if you rub your eyes! — is now used in numerous Pearl’s recipes. It’s also available for purchase and especially popular during crawfish season. When she’s not running the circus or being so giving to so many seafood lovers at Pearl’s, Danielle enjoys some down time with the family: her husband Jason, their son Maxwell, and, of course, Aubry Pearl. Pearl's Seafood Market and Restaurant is located at 502 Gause Boulevard in Slidell. For more information call 985-214-9014 or visit pearlsseafoodmarket.com.,

Dr. Katie Kimble Wonch, Optometrist: More Than Meets the Eye DR. KATIE AND her highly qualified staff at Infinite Vision use state-of-the-art technology to help individuals of all ages with issues ranging from binocular vision disorders and balance problems, to vision-related learning problems and brain injury/concussion recovery. We’ve treated hundreds of children over the years improving their reading ability, academic performance and self-esteem. Our Director of Vision Therapy, Dawn Freret, has earned her excellent reputation for making a real difference in these children’s lives. As the mother of three boys, she personally understands the importance optimal vision plays in childhood development.” Dr. Katie explains, more than just seeing clearly, effective vision includes the ability to understand and respond to what is seen. Infinite Vision can assess and improve skills needed for effective learning including visual acuity – seeing clearly at different distances to view a chalkboard, a computer and a book; focusing – maintaining clear vision as distance from objects change, such as from a chalkboard to items on their desk; tracking – keeping eyes on target such as moving along a page or
following a ball; eye teaming – using both eyes together when reading, judging distances and seeing depth for classwork and sports; eyehand coordination – using visual information when drawing a picture or hitting a ball; and visual perception – organizing images into words and ideas to comprehend reading. Signs that may indicate a child would benefit from an assessment by Dr. Katie, Dawn and her team of vision therapists include complaints of discomfort and fatigue, eye-rubbing, difficulty reading, headaches, head-tilting, eyes turned in or out, and double vision. Always seeking improved solutions for patients, Dr. Katie says a growing area of Infinite Vision is addressing the role vision plays in concussion management. “Often, our vision evaluation can give concussion patients relief of their vision symptoms including difficulty with focus, balance problems, sensitivity to light, and problems with reading and computer work, greatly improving their quality of life.” Dr. Katie Kimble Wonch’s Infinite Vision practice is located at 4050 Lonesome Road in Mandeville. Service Dog Laws For Business Owners WRITTEN BY AMBER SHEPPARD, ESQ.
UNDER THE FEDERAL Americans with Disabilities Act, businesses and nonprofits open to the public must allow service animals to go most places where the public can go. This is true even if they have a “no pets” policy. You can ask the person presenting with a dog at your business only two (2) questions under the ADA if you suspect the dog is a service dog:
1. Is the dog a service animal required because of a disability? 2. What work or task has the dog been trained to perform? If the person answers no to question 1 or cannot answer question 2, then you can ask the dog be removed from your establishment if you have a “no pets” policy. The ADA makes clear that an animal only providing comfort is not a task for a service dog. Even if the dog is allowed under ADA, there

are some rules for Fido’s behavior. The ADA requires the dog always be under control. Control can be verbal or physical. Unless a disability renders a person unable to hold a leash, then the dog must also be leashed under state and local ordinances. The dog must also be housebroken meaning that he cannot use the bathroom inside your facility. Should the dog be out of control or not

housebroken, then you are allowed to ask that the animal be removed from the premises. You cannot demand the owner be removed from the premises nor can you deny service to them simply because of the presence of the animal.

Making Divorce as Painless as Possible WRITTEN BY BRITTANY V. CARTER, ATTORNEY AT LAW
Weed Like a Pro! WRITTEN BY SNOANN WILLET
WEEDING IS NEITHER glamorous nor exciting any time of the year but is essential to keep gardens and yards looking their best, especially if herbicides aren’t used where pets and people are enjoying the space. And the right tool minimizes time spent while ensuring the entire root is removed. The following are a few tools specialized for the task. LONG HANDLED: handle length should end between the armpit and shoulder for comfortable use. 1. Stirrup Hoe has a thin, double- sided blade that cuts on the push and pull strokes, cutting weeding time in half. 2. Cobrahead Hoe has a short blade at the end of a long hook that scrapes weeds just below the soil surface and works well in wet soils. 3. Collinear Hoe has a narrow blade between four and six inches in length, works by a sweeping motion in front of the user. Best suited for working around closely spaced plants, and low-lying crops such as lettuce. SHORT HANDLED: padded round handles makes for easier gripping. 1. Hori Hori Soil Knife has a long, beveled blade, serrated on one side and straight on the other, that easily slices through tough clay soil. This versatile tool can also divide crowns, dig transplants, and cut bags and twine. Choose one with engraved dimensions for accurate depths planting bulbs. 2. Cape Cod Weeder has a narrow, hooked blade that loosens weeds just under the soil surface for effective root removal. Perfect for tight spaces such as pavers/sidewalks. And is available for left-handers! 3. Taproot Extractor has two long sharp prongs, think snail fork on steroids, that removes deep roots by grabbing underground and pried with a modicum of effort. Use this for prickly plants such as smilax, briars, or thistles. Wash debris and dry before hanging in a location out of direct rain and sunlight. Properly care for your tools and they will care for you. Happy weeding!
DIVORCE IS NEVER a fun experience. However, it can be an efficient and effective process if there is cooperation and everyone’s best interests are at heart, especially those of the children. Divorce does not need to be a drawn-out fight with litigation and courts deciding everything for the two people involved. Even when custody, support, and community property are involved, it is possible to complete the entire process outside of court in what is referred to as a default divorce with Consent Judgments and community property settlements. The parties, with their respective attorneys, should work together to enter into negotiations and draft their own terms with what works best for their unique situation. They can then submit their written Judgments with their signed consent for the Judge’s signature, and the Judgments have the same effect as if the parties had attended court. Should you find yourself unable to avoid court, there are still some options that may be helpful to avoid a full-blown trial. For example, in St. Tammany Parish, domestic court has implemented the use of a Hearing Officer conference in order for the parties and their attorneys to attend a formal court meeting with attempts at negotiations and a resolution in lieu of the necessity of a Hearing before the Judge. The Hearing Officer makes recommendations if the parties cannot reach a resolution during the conference, and that recommendation can become a Judgment. However, the parties also have an opportunity to object within a certain timeline and opt for a Hearing before the Judge instead. Regardless of which path you choose to handle the matters of your divorce, it is important to keep any children involved the top priority. While divorce is not a pleasant process, it also does not necessarily have to have lasting, painful consequences for all involved. As always, it is important to consult with an attorney who primarily handles these areas of law to discuss details of your unique situation, decide what path is most appropriate for you, and help ensure your needs are being met, so that you can have peace of mind and know your rights are being asserted and protected. TOD A. AUST, M.D. DR. AUST INTERVENTIONAL PAIN
MOST PEOPLE WOULDN’T want to be considered a last resort, but Tod Aust isn’t like most people – on many levels. He is, at once, intense while mild-mannered; passionate while compassionate; and on elite ground intellectually while grounded and connected with his patients. It is his mission to relieve suffering by combining an industry-leading utilization and understanding of medical technology with persistence and the art of listening. Dr. Tod Aust is, among other things, an interventional pain management physician with a passion for what others describe as hopeless causes. “Because I can take more time with patients than is the norm in many volume-based practices, I’m referred complex injury cases, long-term chronic pain cases with overlapping issues, and cases that have repeatedly eluded effective treatment – the worst of the worst.” Aust explains his practice motto ‘Pain Relief without Pain Pills’ saying, “It’s of utmost importance to educate patients that pills aren’t the answer. Opioids can’t heal an injury or cure arthritis, and any initial relief is often short-lived when their tolerance builds up. To get buy-in for pill-free treatment, I have to listen and ensure them that this is a long-term partnership where if they won’t quit, I won’t quit. The physical exam and patient interaction are key - not just looking at an MRI.” Aust says difficult pain is often ‘multifactorial.’ “Difficult cases often involve several pathologic processes causing overlapping pain in one area. This is challenging because treatment of one problem does not relieve the pain from the others, so the pain remains if only one source of overlapping pain is treated. A plan must be made for each problem, and the patient must understand the processes causing overlapping pain. By partnering with patients in their care rather than dictating treatment based on imaging alone, 95% of our patients achieve improvement.” Prompted by his practice manager and wife, Tina Aust, Tod tells the story of the beautiful artwork that is the 12-foot cypress conference table over which we meet. “This table was made by a cancer survivor we helped in a particularly advanced case. His face, head and neck were damaged by radiation causing unimaginable pain and the inability to work as a master carpenter for years."

Hope for the Hopeless WRITTEN BY JAN WINDHORST PHOTOS BY STEVE RANDON
Dr. Aust continues, "It is a testament to the pain-relieving power of an intrathecal pump that we were able to get him off pain pills and out of pain. Being able to return to his craft was more than he hoped for. We were his first customer, and this was his first big project after his extended illness. It is a symbol of the beauty that is often hidden from the world by untreated pain.” Along with the gratitude of his patients, Aust is rewarded with the respect of his educators, peers and industry leaders, and is fueled by impressive abilities. Despite previously running a successful tech company in Los Angeles, his attention was turned to medicine due to Tina’s afflictions with fibromyalgia and rheumatoid arthritis that often left her bedridden. “My dad listened to motivational speakers like Zig Ziglar and Tony Robbins whenever we were in the car when I was a kid,” says the multi-faceted physician. “I hated it, but it sunk in that you don’t have to settle for a preconceived lot in life. You can think outside the box, take control of your future, contribute to society and create an extraordinary life for your family.” Tod pursued many interests in California, but nothing fulfilled his need to make a meaningful difference in life. “Tina was going to be the doctor. We took classes together, and I found that biology and anatomy came naturally to me. I was fascinated with solving the puzzles of the human body, but we could only afford for one of us to attend medical school and decided it would be me. From there I dedicated myself to finding relief for her pain and others like her.” Dr. Aust completed medical school and a residency in anesthesiology at UCLA where he was named resident of the year. He was asked to remain there to complete the coveted fellowship in Pain Medicine where he was mentored by world-renowned pain specialists.
But after his studies, a different calling led him to Louisiana. While attending a wedding in New Orleans shortly after Hurricane Katrina, Tod and Tina both felt a connection to the resiliency and warmth of the people they met here. “We felt no sense of community in Los Angeles and had never been anywhere that felt so welcoming – especially after such tragedy.” By 2015, Aust was practicing medicine on the Northshore and the couple was home. Once again combining talent with passion, Aust was recognized by top innovators in his field. “I found myself across this table from the CEO of a leading pump manufacturer discussing my fantastic success with their product.” An intrathecal pain pump is used to deliver small quantities of medication, such as morphine, directly to the spinal fluid. When delivered in small doses, the side effects often experienced with larger oral doses of the same medications can be minimized. Extreme and refractory pain often requires a pump, so it was especially validating to be offered funding for research involving pain from interstitial cystitis. IC causes pelvic and bladder pain, urinary and sexual issues, and more. IC affects up to 12 percent of women and is refractory to treatment in many cases. By taking the time to listen and customize their pump therapy, I have had amazing results with some of the most difficult of these cases.” Aust says he and Tina are thrilled with their decision to build a life and meaningful practice here. “We’re proud of our dedicated team and the compassion they extend to patients who are desperate for relief, and we are honored to contribute to research making real advancements in the field. Tina’s collaboration is priceless to me. She is my equal in every way, and I know I couldn’t do this life-changing work helping people find hope without her at my side.”
Dr. Aust Interventional Pain is located at 740 Gause Boulevard in Slidell. For more information, contact 985-377-1884 or visit austpain.com. *Details regarding the cancer survivor and the hand-made cypress conference table are used with permission of the patient.

Private Paradise on the Tchefuncte WRITTEN BY JAN WINDHORST PHOTOS BY KIKI RANDON
HIDDEN AWAY IN in one of the most convenient and desirable golf communities on the Northshore, the estate at 9 Iris Lane in Beau Chêne is a beauty to behold. Ten sprawling acres alongside the navigable Tchefuncte River surround a 9,450 square foot luxury home that offers comfort, privacy and a host of amazing amenities. Renovated with quality, this chic home features a gated entry, grand marble foyer, spacious light-filled living areas, incredible chef’s kitchen, luxurious primary suite, custom furniture, a media room, game room, heated salt water pool and spa, yacht dockage and much more.

The three-story French chateau style architecture houses five bedrooms, five full baths, four half baths, and includes a garage with ample storage for three vehicles. The current owners, Mark and Chi Bergeron, renovated the home upon purchasing it four years ago. Chi explains, “The house and the grounds were everything we wanted, but we also wanted to put our own touch on it. The interior was dark, and we wanted it lighter and brighter. We removed a wall to make the flow better and replaced windows to maximize the beautiful natural light that comes in.”

The Bergerons added marble floors and vanities, quartzite countertops and extended the bar in the kitchen to achieve more countertop area. Because Mark is in the restaurant business and loves to cook, the kitchen appliances were upgraded to Wolf Sub-Zero. Outdoors, the pool and pool house were renovated, and a palm treesurrounded hot tub with fire feature was added. The choice of high end materials, oversized rooms, custom designed furnishings and expansive windows throughout are just some of the features that qualify the home as a luxury property, but Chi’s first priority was making the house a haven for her family. “I wanted the design to be modern, fun and livable with lots of natural light and these wonderful views. Between the pool, two game rooms and the movie room, we always had kids in and out. It was so easy for Mark to take everyone on a boat ride to Madisonville for the day – those were great times. And there’s plenty of parking for guests. Now that the kids are grown and out of the house, it’s time to turn it over for the next family to enjoy.” Some of the Bergerons' favorite memories are sitting in the living room around the piano and fireplace (one of three in the house), and enjoying the pool area, including the pool house which features a kitchen, bath, sitting room and grilling area. A full outdoor kitchen is also currently under construction. Chi says that of the ten acres, five Sophisticated Woman | June/July 2022 41

An additional covered dock measures 100 feet. “It’s easy to forget you’re in Mandeville back here. It’s a real retreat, but still incredibly convenient.” Chi explains more of the history of the house saying that the previous owner named their street after the abundance of irises on the property. That owner also designed the house and grounds according to the principles of feng shui which includes achieving balance, openness, and letting in air, light and nature. WAYNE & STEPHANIE SONGY
W
ayne and Stephanie Songy are quite a team. They met at UNO, married in 1992, and started their life in Slidell as teachers and coaches at a private school while beginning their family. They became involved in the community through church and local sports with their three children, Hayden, Abby, and Grace. All three children attended Slidell High School, with their son and oldest daughter both graduating from Southeastern and the youngest currently attending Southeastern majoring in Social Media Marketing. Wayne and Stephanie are very proud of their children and their growing families, and anxiously await the arrival of their first grandchild this summer. They both love the business and get the most joy from helping clients - especially former students and their families - achieve their real estate goals. They share the family atmosphere of the company with agents both new and experienced whom they help to achieve success in the industry. The company also participates in community service such as “May”king a Difference Facebook giveaway and recent toy collection benefiting a local Knights of Columbus organization. Wayne and Stephanie enjoy spending time with their family, hiking, playing tennis and trivia, visiting craft breweries around the country, and participating in a local JEEP club. They are so excited for the future of Wayne Songy and Associates and love the thought of it being passed down to their children one day to continue its strong tradition of personal, professional real estate service.

best GRILLED
THE
SALMON No matter what skill level of griller you are this simple recipe is sure to become your new favorite healthy summertime dinner.
Makes 4 servings | Total Time 40 minutes
INGREDIENTS 4 6-8 ounce skin-on salmon fillets, about 1-inch thick 2 tablespoons grape seed oil 2 teaspoons kosher salt 2 teaspoons freshly ground black pepper 1 lemon , cut into wedges
INSTRUCTIONS 1. Prepare the grill for direct cooking over high heat, 450°F-550°F. Brush the cooking grates clean and close the lid to heat. 2. Generously coat the flesh side of the salmon fillets with oil and season evenly with kosher salt and black pepper. Grill the salmon skin side down over direct high heat with the lid closed for about 6-8 minutes or until the fish lightens in color, becomes more firm to the touch and you can lift the fillets off the cooking grates without them sticking. 3. Turn the salmon over, close the lid, and cook to 130°F for about 2-4 minutes for medium rare or longer to desired doneness. Transfer to a platter to rest for 1-2 minutes. Slide the salmon skin from the fillets and serve with wedges of lemon and tartar or cucumber dill sauce.

Cheers to Beers & LarryFest WRITTEN BY JAN WINDHORST
AS FATHER’S DAY approaches, many a dad will contemplate how they’ll be remembered and what legacy they’ll leave. While most probably don’t envision a huge beer festival thrown in their honor, friends and family say it’s exactly what Larry Hartzog would’ve wanted – especially since the proceeds go to Northshore Humane Society. Now in its ninth year, the Larry Hartzog Twisted Beer Fest and Homebrew Competition (LarryFest for short) has grown into a regional event held at Pelican Park in Mandeville. From humble beginnings with Larry’s fellow members of homebrew club, The Mystic Krewe of Brew, gathering at a Covington pizza joint, LarryFest is now a major fundraiser for the local no-kill shelter. Says Scott Bernier, CEO of NHS, "Besides giving the community some great fun and great beer, as a private nonprofit, we rely on fundraising events like LarryFest to achieve and continue our lifesaving missions." Held inside the air-conditioned Castine Center, organizers are quick to point out that it’s the coolest June festival – in more ways than one! They also tout a Beer Garden with over 200 samplings from homebrew and commercial breweries from around the state. Larry’s wife Nancy, who was instrumental in establishing the festival at the behest of her children as a way to honor their dad, says the festival’s variety and enthusiastic participants are a true testament to him. As such, LarryFest is always held on the weekend after Father’s Day and this year will fall on Saturday, June 25 starting at 4 pm with VIP ticketholder entry at 3 pm. Just as Larry was known for his “off-the-wall ingredients and wild homebrew concoctions,” the festival celebrates a wide variety of beer styles and flavor profiles. Thriving brewmasters from the growing craft and specialty beer industry such as Chafunkta Brewing Company, Gnarley Barley, Abita, Port Orleans, Bayou Teche, Urban South and Great Raft will show off their most popular recipes along with some new twists to try out on enthusiastic taste testers. And homebrewers will have their chance to shine, too, via a people’s choice tasting competition. 58 Sophisticated Woman | June\July 2022
Each paid ticketholder into the festival will be able to vote on their favorite home-brewed beer. The homebrewer who receives the most votes will be crowned the winner of the 9th Annual Larry Hartzog's Twisted Beer Fest. That talented homebrewer will receive a first-place medal, recognition on the festival’s website and, most importantly, bragging rights until the next LarryFest winner is crowned. Attendees can also enjoy delicious food and music. And since festival beneficiary, Northshore Humane Society, will be out with their adoptable dogs, organizers have decided to make the whole event dog-friendly and invite attendees to bring their furry friends! Pet-related vendors will also be on hand so pups can have as much fun as their people. Admission includes all beer samplings, with added special food and beer samplings for VIP ticket holders. While all canines are welcomed, organizers emphasize that humans must be 21 or older to attend the fest. Reduced price designated driver tickets are also available to make sure everyone stays safe as they enjoy the day’s offerings. As for Larry Hartzog’s family, friends and fellow brewers who work so hard to honor his memory while supporting a great cause, surely their hearts will be warmed each time a glass is raised and a homeless animal is saved. Cheers! Tickets to the 9th Annual Larry Hartzog’s Twisted Brew Fest are available through Eventbrite and Northshore Humane Society, northshorehumane. org.
