This year's beneficiary, You Night's "We Lift You Up" Fund, helps cancer survivors overcome the physical

and psychological challenges of cancer treatment through teamwork, coaching and skills training. This year’s luncheon will feature a new twist. Each nominee for Enterprising Woman of the Year will chassé down the runway with a You Night member representing the two organizations joining forces. The event will culminate in the announcement of the 2018 Enterprising Woman of the Year winner. The one obvious absence this year will be our beloved leader Joanne Gallinghouse. Joanne was a visionary who supported all women and their aspirations. Though she is no longer with us, I feel her presence every day and know that somehow she'll give us a sign that she is there in spirit. Connect with us. Oysters Rockin' Ella
A Young Chef with a Bright Future WRITTEN BY JAN WINDHORST
WHAT DO THE Food Network, Emeril Lagasse, John Folse and Mandeville have in common? Ella Petitto. The high school sophomore has been busy since her 2016 win on national competitive cooking show Chopped Jr. and shared some of the highlights with us. Like most 15 year olds, school is first and foremost. Ella was accepted into NOCCA’s rigorous culinary arts program where standard academic classes are paired with cooking instruction. The curriculum starts with cooking basics, knife skills, making soups and sauces, and then progresses through the study of regional fare and international cuisines. Says Ella, “It’s a tough program and you have to do well in your regular classes too. We went from 13 freshman students down to only 3 this year so you really have to love what you’re doing.” And love is at the heart of Ella’s inspiration to cook. She says she began by helping her mother and grandmothers in the kitchen. “I still help with dinner when time allows. I like to bake and I like to make comfort food like red beans and rice for when you’re not having a good day.” Ella participates in charity and community endeavors and served as the guest chef at this past year’s Children’s Museum of St. Tammany fundraiser. She adds that she’d like to feed the less fortunate and has considered running a food truck one day to accomplish that. In the meantime, she’s gotten younger sister Alyssa into the game with their own small catering business called LuElle’s Pantry. A recent bridal shower job included jambalaya pasta, bacon wrapped asparagus, crawfish mac and cheese and mini pralines on the menu. NOCCA and connections from the Food Network also afford Ella the opportunity to work with some culinary heavy hitters. She was awarded a scholarship to the John Folse Culinary Institute at Nicholls State University by the renowned chef himself after being invited to cook with him at his Restaurant R’evolution. She also participated as a food preparation worker and assisted with plating at the prestigious Carnivale du Vin, a nationally recognized charity wine auction and gala in New Orleans put on by the Emeril Lagasse Foundation. Is cooking Ella’s ultimate career goal? Possibly, but she says she’s keeping her options open. “Being a professional chef leaves little time for family and I’m also interested in medicine and law,” says the bright and hard-working teen. Whichever path Ella chooses, it seems that the world will be her oyster. Sophisticated Woman | March 2019

I STARTED MY skincare journey seven years ago to maintain my “nice skin.” I later realized that it was a harder task than I thought. Everyone had a recommendation, tip or trick! I became an esthetician because I realized that people didn’t know how to properly take care of their skin—myself included. The skin is the largest organ of the body but it is not given the care it needs. Many skincare products, including expensive, well-known skincare lines are full of chemicals, toxic filler ingredients and unnatural preservatives. These can have a negative impact on the skin and overall health. Many people wouldn’t eat junk food all day long, so why use the equivalent of this in a skincare product on our skin? What the skin needs is a clean, wholesome home-cooked meal! We read labels for our food, why not read our skincare labels too? Products that are more plant-based are phenomenal for the skin. I tell my clients all the time, if an ingredient is not naturally occurring, they don’t need it. There are also many other simple things that can help your skin. Having a healthy diet and lifestyle plays a major part as well as a consistent skin care routine. Holistic skincare services can also help by reversing damage, improving skin texture and decreasing wrinkles. With all facials, services such as lymphatic drainage and vagus nerve massage are incorporated to improve the outcome and therefore provide longer lasting results. Using completely nontoxic, clean skincare lines helps leave skin glowing without any worry of toxicity. Every year people make resolutions for things like eating better and taking better care of themselves. Maybe we should also make resolutions to better feed our skin.

color bloom in the spring, so too are people inspired to seek their own new beginnings. And the end of one season of life can hold the
promise of new growth and beauty in the next. But when a hand injury ended Patti Brondum’s long and rewarding hairdressing career she didn’t immediately see a new, flower-lined path of opportunity in front of her. Friends and family encouraged her to take it easy and retire. Her husband Doug, who was also her high school sweetheart, had always taken care of her and daughter Courtney with generosity, strength and humor, and would continue to do so. “I loved hairdressing so when I could no longer do that, I didn’t want to sit still but couldn’t imagine starting all over in another profession.” In the meantime, Courtney had graduated from LSU in Sociology and began a job at a friend’s insurance agency. “It only took me two weeks to learn that I was not office oriented. I’m adventurous and I love the outdoors and wanted to help people in a meaningful way.” Her next job at a furniture store helped plant the seeds of an idea for a business that would bring together the family’s strengths. It would be transformative for her and her mother as well as their clients. Patti has always lived by her motto that ‘your home should be your favorite place on earth,’ and executed her vision with such flair and style that friends had asked for her assistance with remodeling and redecorating for years. Not only does Courtney share this creativity but she also admires Patti’s talent so much that she knew she wanted her mom to be part of her budding new business, Southern Luxe Interiors. This fresh idea pairs a location to shop for home décor with their design services. Patti instilled in Courtney that success is a combination of having a gift and being driven to develop it. In that spirit, Courtney went on to earn her design certification in interior design and taught herself how to create 3D CAD model sketches that help people visualize furniture placement, color schemes and the overall design. They also both agree that success isn’t all about money. “Helping people on a budget is rewarding,” says Patti. “Putting God first means helping people and when we design a living space they love, it can be life-changing for them.” While both mother and daughter bring creativity to their new endeavor, they feel the differences each brings make for a unique combination of strengths. Patti is happy to let Courtney keep up with technology including their website, blog and Instagram page. Courtney has learned from Patti her love of people and passion for giving back while spreading love and light and feels blessed to work with such a talented mom. Courtney’s contemporary tastes and Patti’s classic sensibilities combine to form what they describe as a finished product that stylistically stands stronger than either one on its own. The design duo works hard at making the process fun. They look to create a personal connection with each client, not just a business relationship. Courtney encourages clients to let ideas germinate by talking and getting to know their style. “My favorite part of the process is the reveal,” says Courtney. “To see their reaction is priceless. They can’t believe their home is that beautiful, and some are so moved it brings them to tears.” Sophisticated Woman | March 2019 23
It’s no surprise that the very building that houses the budding business has a transformation story of its own and even held secrets in its walls that would later come full circle. “The cottage was over 100 years old and was falling down,” says Courtney. “We renovated the whole building but wanted to incorporate original elements too.” Once again, their signature technique of combining old and new elements in their designs resulted in a finished product that beautifully merges styles. Reclaimed cedar and cypress beams form casings for the interior door openings and the original tin roof is now repurposed as the interior ceiling.

The new walls under that old roof contain a wonderful balance of eclectic items from modern to retro to classic. Their joint venture represents growth in Courtney’s life from the prospect of settling for an unsatisfying desk job to living her dream. For Patti, it’s the opportunity to walk through an open door to continue her passion of helping people when another door had closed. For their clients, reimagining their living space means getting a new outlook on life by making their home a special space. The family’s visions had been realized - the concept fleshed out, the cottage rebuilt, the inventory received and displayed beautifully, the signs put up and doors open for business. But would that vision blossom as they hoped? Patti still wasn’t so sure.

But Doug was. Both ladies give credit to husband and father Doug for having unwavering faith. “Dad helps us with the business in many ways even though he has a successful business of his own,” says Courtney. “I’m so grateful to have such support.” Patti had complete confidence in her and Courtney’s abilities, but having a storefront was a new twist and she wondered if the customers would come. Patti’s trust in her faith was rewarded with what she describes as a sign that everything would be all right. The day their Covington cottage opened for business, their very first customer was a woman who had traveled from Baton Rouge for lunch—a fact that Patti found odd in the first place. Next, the woman revealed that the original cottage belonged to her grandfather and she had come to visit the house where her mother grew up. That day also happened to be her mother’s birthday. Feeling this was more than a mere coincidence, Patti recalled the secret items discovered in the walls during renovations and brought them out to her providential visitor. Patti explained that she really didn’t know why they kept the items, but since they included a love letter written by a young man and a cassette tape of music, Doug felt that they shouldn’t be thrown away. Shocked and delighted, the woman revealed that the letter and tape had belonged to her brother, and the subject of the love letter was now her brother’s wife. Patti was so overwhelmed by the chain of unlikely events, she presented the woman with yet another item that she discovered during the renovation—a cross that had hung above the original cottage's door. Patti says she feels sure the visit was a sign from God that her family’s new ventures—Courtney creating her dream, Patti entering a new season of service, and Doug seeing them through each transformation along the way—are indeed the right ones. As a designer, I find that for the ultimate satisfaction for my clients, there must be meaning in their spaces. To accomplish a specific style or look with a mere shopping trip will never be a fully completed design. The contents must be personal or they will eventually become disposable. Here, where the residents are surrounded by family history and reminders of the joys in their lives—from grandchildren to traveling - we’ve gotten to complete fullfillment. Add the tequila, melon liqueur, triple sec and splash of orange juice to a cocktail shaker. Shake well and strain into a high-ball glass filled with ice. Garnish with a lime wedge.
Combine vodka, elderflower liqueur, lemon juice and simple syrup in a cocktail shaker with ice. Shake vigorously and pour into a rocks glass. Top with lemonade or club soda. Garnish with a lime wedge and mint leaf.

Ingredients: 1 pound crab meat, picked over for shells
1 bunch green onions–sliced white part only, reserve tops
2 pounds headless shrimp
6 cloves garlic, roughly chopped
3 cups frozen or fresh shucked corn kernels
2 bay leaves
2 poblano peppers, charred and peeled
1 bundle of 6 thyme sprigs tied with cotton twine
1 ½ cups any dry white wine or pinot grigio
1 teaspoon hot sauce
2 tablespoons vegetable oil
1/8 teaspoon cayenne
4 tablespoons unsalted butter
1 teaspoon sea salt
2 medium white onions, roughly chopped
½ teaspoon black pepper
1 medium bell pepper, chopped
3 tablespoons flour
2 celery stalks, sliced
1 quart shrimp stock
2 carrots, sliced
1 quart chicken stock
1 leek, sliced–white and yellow part only
2 cups heavy cream
Directions: 1. Place whole poblanos rubbed with vegetable oil on a baking sheet and roast for 15 minutes in a 450 degree oven. Turn every five minutes until evenly charred. Cover with plastic wrap in a bowl for 15 minutes. Then peel, seed and chop. 2. Peel the shrimp, put tails aside in fridge and place the shells in a dry skillet. Cook on medium heat until the shells begin to brown. Add the wine and reduce liquid, then add five cups water and bring to a full boil. Lower heat and simmer 20 minutes. Strain stock to remove shells. 3. Heat the oil on medium high in an 8 quart stock pot and then add the butter. 4. When butter foams, add the onion and stir for two minutes. Then add carrots, bell pepper, poblano pepper, celery, green onions and saute' for two minutes. 5. Add the garlic, herbs, spices and hot sauce. Stir for two minutes. 6. Stir in the flour and cook for two minutes. 7. Add the shrimp stock slowly, bring to a boil and simmer for three minutes. 8. Allow to cool, remove bay leaf and thyme stems, puree in batches in a blender or in the pot with an immersion blender. Return soup to pot, add chicken stock and corn, bring to a boil then lower the heat and simmer 30 minutes. 9. Add the shrimp and simmer for five minutes. Then add the crab and cream and heat just to a boil. 10. Finish with green onion tops. Sophisticated Woman | March 2019 33

happening in Madisonville. Founded over 200 years ago, we are one of the oldest communities in Louisiana and the oldest permanent settlement in St. Tammany Parish. We’re excited about our growth! We have a beautiful town park and playground, wonderful restaurants, two museums and the oldest cemetery in the parish. New businesses are opening monthly. Dixie RV has purchased the old Friends, we’ve welcomed Geaux Donuts, and approved the application for a new dentist office and furniture/ clothing store. The town has joined with Heritage Bank to have Spring Music events in April and May. CPEX (Center for Planning Excellence) is developing a downtown master plan and we are excited about this vision for our future. Boat Parade. The Garden Club's Flower and Plant Show is on March 9th and Madisonville Jr. High has a Gumbo Cook Off on March 30th. April 17th, the Town will host the St. Tammany Municipal Association and on May 17th, the Lake Pontchartrain Basin Maritime Museum has their Anchor Classic Golf Tournament. Madisonville is a great place to visit, but an even better place to live. EACH SPRING MANY of us turn our thoughts to gardening. As trees and shrubs send out new growth and we drive by local nurseries that are full of bright, colorful bedding plants, we get the urge to plant. But the wise gardener knows that before planting comes planning. Before digging in to add new life to your garden, take the time to assess your landscape so that you have an idea of the growing conditions on your property. Pay attention to which areas are in full sun, shade, or a combination of both. Walk around and see if you have areas that remain wet for days after a rainfall or stay dry. After you review your property, pull out your gardening books or hit the internet to see which plants are suited to the various areas of your garden. Knowing which plants are suited to your garden will help in the selection of new plants. Louisiana Super Plants are tough and beautiful plants that perform well in our climate. Information on Super Plants and extensive information on gardening is available on the LSU AgCenter website lsuagcenter.com. Prior to your shopping trip, make sure your beds are prepared–pull weeds, remove dead foliage and add new soil to beds if needed. Have a plan for placement of your new plants. When you are shopping, consider adding native plants which are well-suited to our St. Tammany growing conditions and are attractive to our native pollinators. Many gardeners combine bedding plants, usually flowering annuals, with warm-season vegetables and herbs. Local nurseries can provide information on which plants can be planted now and those that prefer warmer temperatures arriving in late spring. Happy gardening!
