Paddle Through the Marsh Big Branch Marsh National Wildlife Refuge is 15,000 acres of pine flatwoods and coastal marsh. This diverse habitat is home to hundreds of bird species, including the bald eagle and the rare, red-cockaded woodpecker. Fun on the Mandeville Lakefront Cycle or walk the seawall paths under moss-hung oak trees and check out two playgrounds located on the east and west ends. Kids fly high on the swing-sets near the intersection of Lakeshore Drive and Carroll Street, and restaurants, shopping and even a candy store are in walking distance.
Touring on the Tammany Trace The 31-mile path offers a scenic tour through St. Tammany Parish with trailheads in Covington, Abita Springs, Mandeville, Lacombe and Slidell. Highlights include playgrounds at the Abita Springs and Koop Drive trailheads, a drawbridge over Bayou Lacombe and splash pads at the Mandeville and Abita Springs trailheads. Bike rentals are available in Covington and Mandeville.
Wonderful Water Play Parks Along with the Abita and Mandeville trailhead locations, interactive water features are located at the Pearl River Water Park at James Lavigne Park, Heritage Park in Slidell, Chappapeela Sports Park in Hammond, at the East Lakefront Park in Mandeville, and at Fontainebleau State Park.
Fabulous Fontainebleau State Park in Mandeville This historic park offers 2,800 acres overlooking Lake Pontchartrain, more than 300 campsites, nature trails, lodge, sandy beach, playground, and the ruins of an 1829 sugar mill situated among towering oaks. Beautiful Bogue Chitto State Park in Franklinton Visitors experience diverse natural habitats on the scenic Bogue Chitto River—one of most traveled rivers in Louisiana by canoe, kayak and tubing enthusiasts. "Just met with neurosurgeon and trauma doctor...the pressure is now impacting the left side of his brain...doing all they can, but it does not look good. They say he either won’t make it or be in this coma state forever. I need to start thinking about (a decision). Please pray hard for a miracle. Brendan is still fighting." This post from May 29, 2019 was made seven days after Yvette Pacaccio’s son suffered a traumatic brain injury while riding an ATV. Brendan went from college-bound football player to fighting for his life. Fortunately, much has been added to the vigilant mom’s Facebook page, Brendan’s Miracle, since then. Through a multitude of prayers, his tenacity, committed caregivers and his family’s love, Brendan celebrated his 20th birthday in December of 2020. During March, Brain Injury Awareness Month, Yvette is educating about her newfound cause. “The traumatic brain injury community is small but growing. Had I not gone through it, I’d never know the scope of it. It’s more common than you’d think — athletes due to injury, stroke in the elderly. My mission is gathering information and resources. Because I felt alone and uninformed when faced with life and death decisions for my son, I want to share what I learned so others can have more support and hope than I had.” Yvette recounts the ordeal with raw emotion, but also a matter-of-factness she’s earned after handling every detail of her son’s very existence for over 630 days with no respite. “He was almost dead. On the 10-point coma scale, he was at 3 and living on machines. Twice in the first 10 days they said I should gather the family for goodbyes. They informed me that I may have to make a decision to pull the plug.” Despite overwhelming medical advice to the contrary, she wasn’t convinced Brendan was finished fighting. It took the insistence of her attorney brother-in-law to convince their neurosurgeon to perform a craniotomy. “They didn’t think it would matter, but removing his skull helped.” Brendan’s pressure went down, but still critical on day 10, Yvette was again counseled to arrange farewells. “Hundreds of people 10 Sophisticated Woman | March 2021
community story came. I don’t know how North Oaks put up with it, but I did know in my heart he was going to make it. I never doubted it.” The Catholic community gave substantial support with visits from clergy and organized prayer from area congregations. “We received an overwhelming outpouring,” recalls Yvette. “I couldn’t respond to all of them but wanted to keep that connection, so I started the Facebook page.” After being in a coma for weeks, Brendan was admitted to Touro’s Neuro Rehabilitation Department. Although still in a semi-conscious state, unable to hold his head up and on a feeding tube, Brendan was now breathing on his own. True to Yvette’s belief, Brendan proved to be relentless. A hard-fought four months at Touro led to continued rehab at TASS, a small, Ponchatoula facility in a home-based setting. “He didn’t just get up and walk out of the hospital. It was slow, steady improvement over time. Brendan’s still in a wheelchair but making progress.” It took Brendan four months and intensive therapy to speak his first whisper. It was over a year before his intense efforts resulted in some movement on his left side and the accomplishment of walking with a hemi walker. “His team loves him because he’s so self-motivated. Being the parent of a brain injury child, you mourn his death even though he’s alive because of all the things he’ll never do again. I wouldn’t wish this on anybody, but I’m thankful for any progress that’s made.” Yvette reports that everyone affected by brain injury has personality changes and that her once easily angered son is now “cool as a cucumber” and easy going. “He’s grateful, thankful and blessed just to be alive. I don’t know if you believe in God, but Brendan and I will tell you. Brendan said God told him he wasn’t ready for him yet. Our slogan is "42 Strong," referring to his football number. So he stops and prays at the 42nd minute of every hour no matter where he is or what he’s doing. And his prayers are more for others than himself.” Although his speech is not fully restored, Brendan can communicate, even making a speech at a recent fundraiser. Messages of encouragement from friends and strangers, seeing his 42 Strong magnets on cars and news coverage have made him feel like a celebrity. “His favorite was being honored at a Hannan High football game. I’m grateful for his attitude, because with all the progress, we still have devastating disappointments. We’re going on his sixth surgery – the third skull removal. Each time it doesn’t take, it’s a months-long setback. I ask him if he understands, and he smiles and sings the Humpty Dance song because he says he looks like Humpty Dumpty without his skull.” Despite her own challenges, Yvette works to help others in her situation. “With no funding support and caring for her own injured son, Kim Hill became Executive Director of the Brain Injury Association of Louisiana, a resource for patients and caregivers. It’s a dark time going through it alone. It’s a fight to get costly surgeries approved and to keep loved ones from being sent to a facility to exist or die. The organization asked me to be a mentor, and I’ll help any way I can. I’ve raised some funds, but they need so much more. Beauty. It’s all around us if we know where to look, but more importantly, if we learn how to experience it. Melissa Mitrik feels beauty while connecting with locals over a cup of exquisite European coffee during overseas travels. She’s found beauty in empowering an underestimated woman to reach full potential in business or relationships. She’s learned beauty lies in realizing the wounds of a fearful and difficult childhood can be seeds of determination that bloom into a fruitful adulthood. Through hard work, self-reliance and a mission to shape her own destiny, she’s created her own beautiful peace, filled with blessings and the capacity to give greatly. “To me, beauty means embracing who we are in all aspects. It’s how we feel about ourselves– body, mind and soul – and how we choose to present that to the world,” muses Melissa Mitrik. “It starts within, but I also understand that our exterior self-image plays a significant role in how we feel, and that can significantly affect our attitudes and actions.” Though now a well-traveled, sophisticated and remarkably successful adult, Melissa’s childhood self didn’t yet dare to dream of such a life. Her humble beginnings included challenges of facing her parents’ divorce, a lack of material niceties, and suffering mistreatment by trusted elders.“I was a little girl that lived in fear. Life was not easy. I endured more than you can possibly imagine – things that could’ve broken my spirit and spiraled me out of control.” One particular instance of beratement became the crossroads at which she’d choose her life’s path. When a close adult assured her she’d never amount to anything, the impressionable teen faced a critical decision. “Rather than letting those words break me, they catapulted me to strive hard, better my environment and exceed expectations. I’m proof that our upbringing does not bound or restrict us, and that we choose to become who we aspire to be despite all obstacles.” Melissa left home at 18 and met her husband, Ryan, who was active duty Air Force. Military assignments stationed them in Europe for many years. There, Melissa felt a sense of wonder and comfort she’d never before experienced. “I befriended locals to broaden my mindset, grow and learn about other culture. I made lasting connections in their warm family settings, ate, drank and embraced their deep love for friends and family. I felt more at home there than any place I’d ever been.” While living in Italy, Melissa was introduced to the med spa arena and knew she somehow wanted to become involved. As she traveled through Europe, she learned that their industry standards were much higher and stricter than in the United States. “I became immersed in it all – the architecture, the lifestyle of constant socializing due to walking everywhere, and their long history of culture. Our country is so young, I wanted to bring European standards back home as they related to me personally and professionally.” After returning stateside, she worked for the Department of Defense running a multi-billion-dollar program that foreshadowed a challenge her family would face years later. Her responsibilities included all phases of deployment and reintegration – the process that military families go through after being apart for long periods. “Families have to learn reconnection and grow together again. When Ryan's retirement was denied at 20 years, we lived apart for two years. Even after developing and running the program, it was a completely different experience to live through it. Individuals grow apart when separated, and it’s a much greater challenge with children in the mix. We sought counseling, and my on-the-job experience helped but succeeding certainly took personal effort and commitment.” Melissa Mitrik – continued on page 24 Sophisticated Woman | March 2021 23

Her high-level military experience and the commitment she’d shown repeatedly throughout life would once again serve to propel Melissa to success in her next endeavor. Though she began her business plan for Bleu Med Spa years earlier (the French spelling of her favorite color an homage to her ancestry), she opened her first location in March of 2019. Within 22 months, that number grew to six. “I wanted to cultivate everything from start to finish.” Her background in management, program development, implementation and corporate training allowed her to create an innovative model of everything she learned an elevated med spa should be. “Working with highpowered government men under Congress was not my passion, but it was a huge benefit. It gave me skills to excel in all areas I needed to create the prototype for what would become my franchise and a reflection of myself.” Giving credit to Ryan, who became a financial advisor after 22 years of military service, Melissa is particularly proud that they required no business startup funding assistance and remain debt free despite launching right before Covid hit. “Because we also provide health and wellness services like concierge medicine, hormone therapy and weight management, our mandatory closure was short and had minimal impact on the business.” The self-proclaimed one-woman-show says it was difficult to give up direct control of her concept, but that her sought-after franchise platform is implemented with ease by qualified owners. “I don’t really need to market the concept, and the vetting process is rigorous, but God leads the right people to me. One constant is my desire to lift others up because of my past experiences. Once I franchised, it wasn’t about me anymore, but about elevating franchisees to a level they couldn’t attain on their own. Now, my passion is helping them fulfill their dreams.” Now able to focus more on her family and close circle of friends, Melissa and Ryan enjoy yearly travel through Europe with sons Aidan and Ashton, sharing the beauty they’ve found there. She enjoys recreating some of those experiences back at home. “The social gatherings I host are intimate but usually over the top. A favorite theme is pizza making with good wine, cheese and the recipe we learned from a cooking class on the Amalfi Coast.” A healthy life balance doesn’t keep the stunning businesswoman from giving “150%” to her enterprise though. This month she will launch her proprietary anti-aging, clinical-grade skincare line available across the franchise. Of her life’s unfolding richness, she says her challenging beginnings keep her grounded in humility and gratitude. “My idea of beauty is helping people feel good inside and out. It doesn’t matter what anyone says to us. We are more than enough and have unlimited potential. We can achieve anything we set our minds to. It takes consistency, commitment and accountability to truly elevate ourselves personally and professionally. Before heading out this summer, consider if you have these few estate planning items checked off your list. Child gearing up for College? Once your child becomes 18, you no longer have that default, legal authority to manage the child’s financial or health care decisions—even if you pay tuition, health insurance premiums, or claim the child as a dependent. But, having the child put a Power of Attorney in place in favor of a parent or another trusted adult can provide considerable benefits if an unexpected event or accident occurs, if health care decisions must be made, or if the child plans to travel or attend school abroad. Making Plans to Travel? Are you considering taking a business or spouse-only trip but need someone to care for your children? A Provisional Custody by Mandate is a Power of Attorney of limited duration and basis. This legal document provides another adult with legal authority to act on the

home feature THE SPIRIT OF Old Covington is captured beautifully in this gem that has been inadequately described as a coastal cottage. In fact, it is the integration of a 100 plus-year-old caretaker’s cabin with a modern structure, built at the turn of this century. These two structures now flow effortlessly together to create a nostalgic revival that performs functionally and warmly as a welcoming family home with enviable extras. The land upon which the house, a studio, pool and pool house now sit was part of Favrotville, a 20-acre community founded in the early 1900s. The cottage’s occupant, known as Nolan, cared for the property which contained 14 summer homes along what was then a bustling port area of the Bogue Falaya River. In the late 1990s, Judy Applebaum purchased the cottage with the vision to build an adjoining house that would add kitchen, living, bed and bath areas, appealing to today’s families and bringing the total area up to 3,300 square feet. The two structures are unified by a tin roof and interior finishes with living areas that are distinct yet complementary providing a unique and versatile layout. Current owners Cleon (Kiki) and Steve Randon have utilized the space beautifully, using their talents to fashion a wonderful childhood home for Kiki’s sons and an artist’s dream for their photography business and Steve’s various creative endeavors. The transformed caretaker’s cottage now houses a sitting/TV room that leads to a bedroom, currently used as one of Steve’s studios. The space is inhabited with high-tech photographic equipment alongside prized musical gear including vintage guitars and amps. The remaining area of the initial structure includes an additional bedroom with bath and a dining area which was originally the cabin’s back porch. The windows look out onto a courtyard and picturesque, two-story studio that serves as an additional artistic space for Kiki’s photo projects and Steve’s painting easels and supplies. The view from the dining table makes it a favorite place for the couple to perch with steaming coffee while enjoying the tranquil view. Crossing into the new structure, themes of wooden beams, bead board, built-in bookshelves and hardwood flooring are repeated, lending to a modern farmhouse feel. The kitchen coordinates with copper counters

and backsplash, a marble-topped island, stainless steel appliances and a Jenn-Air cook top. The kitchen’s adjacent keeping room reflects the rustic-wood-encased wall-of-windows motif that is seen throughout the home and offers a view of the courtyard from a different point of view. home feature Entering the cozy living area through a frame of thick, squared cypress wooden beams, one beholds oversized, transomed windows which, once again, provide an open vista onto lush and inviting grounds. From this perspective, the back porch, yard and pool area are in view — additions Kiki made after the purchase. A crackling fireplace against the backdrop of a floor-to-ceiling Old Chicago brick surround brings the sounds and smells of the wooded landscape indoors to be enjoyed when weather prohibits outdoor forays. In balmier weather, the pool and outdoor living area — designed in wood, slate and Old Chicago brick by Matt Voelkel of Studio MV — provides yet another facet of enjoyment to the versatile homestead. Even in chilly weather, the full-sized outdoor fireplace and generous cooking area are favorite spaces to entertain and share refreshments, as friends and family take advantage of the heated pool built by Gary Maestri of Maestri Pools. Of her fortuitous find, Kiki says she knew it was home the minute she walked in. “I saw the renovated cottage with beautiful beadboard walls and ceiling, and instantly felt a sense of peace and belonging.

I knew this would be the perfect home to raise my three sons. We’ve done so much living here, especially around the pool. Each unique space has its own purpose, and every area is someone’s favorite.” Back porches on both the main and second story levels provide a cherished transition from inside to out. Kiki describes precious family time spent on the lower-level tongue and groove porch accessed by cypress French doors. Quieter, early morning hours of serenity are had on the upper porch accessed through the primary bedroom’s windows. A hammock is the preferred vehicle to enjoy a bird’seye view of the grounds or melt into the sound of rain on the tin roof. With the requisite windows, bookcases, ample room for oversized furniture and a bath suite that boasts the Carrara marble found downstairs, the upper level is a haven unto itself. An additional upstairs bed with bath, dubbed The Angel Room, provides yet another sleeping space or comfortable work area. As the couple transitions to a down-sized version of this historic and storied location, Kiki sums up her fond memories saying, ”This is a timeless home that has a wonderful feel to it. first images we saw of Russell. Our rescue team immediately moved into action to help this oncemistreated pet. What others would think is a grave and horrendous situation, we saw as a new beginning for an innocent and beautiful soul. Judging by the severe condition of his skin, it was clear Russell had been abandoned for quite some time. What we couldn’t see and may never truly know are the years of neglect and/or abuse he had endured. Upon arrival at our rescue, Russell was so scared; he shook uncontrollably when approached and flinched when we tried to touch him. For the first three years of his life, his body and his mind had been severely beaten, but all of that was about to change! Russell has started what could be a year-long treatment. Pruning Made Simple WRITTEN BY SNOANN WILLETT, LOUISIANA MASTER GARDENER
PRUNING IS ONE of those necessary gardening tasks that often goes awry or is intentionally neglected for fear of doing it wrong. No need for concern! Follow a few simple guidelines to take your pruning to the next level. Much like planning a planting area, pruning is no different. 1. What is the intended goal? Overgrown holly bush along the driveway scratching the car? Leggy growth after hydrangeas finished blooming? Roses? Usually, pruning is an opportunity to encourage more blooms, for shaping, or merely for convenience. 2. Once the goal is determined, what is the best way to accomplish the task? Is the plant an evergreen tree? Spring or summer flowering shrub? Climbing or old garden variety shrub rose? Lirope ground cover? Spend some time researching the natural growth or bloom habit of a specific plant. Let that be the guide because every plant has particular methods of pruning to achieve the desired result. Three Strategies For Pruning: 1. Pinching: finger method for removing thin, young shoots/growth 2. Heading: shortening limbs and shoots to encourage fullness; rejuvenation and maintain shape 3. Thinning: controls size and shape Thinning should be considered first because it allows more space between existing main branches, enabling the remaining branches to fill out. Heading has a tendency to stimulate growth. The natural form could be sacrificed if ample room is not available, causing the new, robust growth in an undesired direction. Head carefully. Pruning is basically intended to promote a healthier, more attractive plant. Whether large or small, all plants benefit from planned pruning. The plant will reward with larger and more numerous blooms. And sometimes less pruning will be needed because resulting new growth can follow its genetic predisposition. Happy Growing! Shepherd's Pie INGREDIENTS
FOR POTATOES
FOR MEAT MIXTURE
1-1/2 pounds potatoes, peeled
1 tablespoon extra-virgin olive oil
Kosher salt
1 large onion, chopped
4 tablespoons melted butter
2 carrots, peeled and chopped
1/4 cup milk
2 cloves garlic, minced
1/4 cup sour cream
1 teaspoon fresh thyme
Freshly ground black pepper
1-1/2 pounds ground beef or lamb 1 cup frozen peas 1 cup frozen corn 2 tablespoon all-purpose flour 2/3 cup low-sodium chicken broth 1 tablespoon freshly chopped parsley

DIRECTIONS
1. Preheat oven to 400°. Make mashed potatoes: In a large pot, cover potatoes with water and add a generous pinch of salt. Bring to a boil and cook until totally soft, 16 to 18 minutes. Drain and return to pot. 2. Use a potato masher to mash potatoes until smooth. Add melted butter, milk, and sour cream. Mash together until fully incorporated, then season with salt and pepper. Set aside. 3. Make beef mixture: In a large, oven-proof skillet, heat oil over medium heat. Add onion, carrots, garlic, and thyme and cook until fragrant and softened, 5 minutes. Add ground beef and cook until no longer pink, 5 minutes more. Drain fat. 4. Stir in frozen peas and corn and cook until warmed through, 3 minutes more. Season with salt and pepper. 5. Sprinkle meat with flour and stir to evenly distribute. Cook 1 minute more and add chicken broth. Bring to a simmer and let mixture thicken slightly, 5 minutes. 6. Top beef mixture with an even layer of mashed potatoes and bake until there is very little liquid visible and mashed potatoes are golden, about 20 minutes. Broil if desired. Garnish with fresh chopped parsley.

1 lime, quartered with seeds removed 1½ tablespoons raw sugar 2 ounces of cachaça Brazilian liqueur Lime slices for garnish Mint leaf for garnish
1 ounce Irish whiskey 1 ounce Irish cream 1 ounce butterscotch schnapps 2½ ounces coffee, freshly brewed Caramel syrup
Muddle the lime quarters with the raw sugar in a tumbler to gently crush and squeeze out the lime juice. Add the cachaça to lime juice and stir well. Add crushed ice to the glass and stir. Garnish with a lime slice and mint leaf.
Warm a glass mug by filling it with hot water. and let sit for a few minutes. Then pour out the water. Add Irish whiskey, Irish cream and butterscotch schnapps into the warm mug. Fill with coffee and stir. Stir in a drizzle of caramel syrup.

1½ ounces tequila 1 tablespoon agave nectar ½ ounce lemon juice ½ kiwi fruit Club soda Fresh mint & blueberry for garnish
Add kale juice, white rum, cucumber juice, ginger beer, simple syrup and lime juice to a blender filled with one cup of ice. Blend on medium speed for 30-45 seconds. Pour into tumbler and garnish with a kale leaf.
In a shaker, combine tequila, agave nectar and lemon juice. Muddle in kiwi and mint. Shake vigorously, then top with club soda to taste. Garnish with blueberry, kiwi and mint. Sophisticated Woman | March 2021 39
