MAY IS THE MONTH we sit on the precipice of summer, legs dangling. I can literally smell the beach and the swimming pool, but first we have to meander through the rest of spring with its many rites of passage. Kids graduate from kindergarten, make their First Communions and the school year winds down. Teen-aged girls are off to their proms in fancy dresses, and graduates leave home as they close the door on childhood and step into the world as adults. And in May, of course, we take time to honor our mothers. It is an emotionally packed time, especially for us moms. We have to watch as our babies get bigger, come into themselves and leave us behind. All along the journey of Motherhood, we know this is how it is supposed to happen. Our job is to give them their wings right? For me, the sweet irony is that as we mark these milestones, make these transitions and celebrate Motherhood, we realize we were the ones who taught them to use those wings. This month’s issue is a terrific tool for all moms, whether veteran or newbie. Pore over advice about staying healthy from the Northshore’s leading physicians, you may well find a doctor that is right for you. Maybe one of the tantalizing recipes inside sounds like ideal Mother’s Day fare (let someone else do the cooking). Take a minute to check the May calendar and find the perfect event to share with family, or plunge into by yourself. And be sure to grab some tissues while you read our winning Mother Daughter essay. Whatever you do, if you are a mom, savor every moment and enjoy the adulation. If you still have your mom, make sure to thank her for those wings. Thanks Mom.

ON MARCH 26, eleven Enterprising Women and one brave Enterprising Man were honored at Sophisticated Woman’s fifth annual Hats Off luncheon. These Enterprising Women and Man graced the covers of our magazine last year, and provided readers with inspiring stories about their lives and insight into their businesses. Readers were asked to vote for their favorite at the beginning of the year, and the results were announced amidst great anticipation. Things got off to a great start as attendees sipped refreshing mimosas donated by Rouse’s and Saia’s while browsing the silent auction spaced around the main room of the elegant Fleur de Lis Event Center in Mandeville. Local businesses were very generous this year, and the proceeds were donated to the Children’s Advocacy Center. Moe Clary, who recently stepped down as president and CEO of Habitat for Humanity St. Tammany West to throw in her own hat for the mayor of Covington race, served as emcee. A proud graduate of the UNO School of Stand Up Comedy and 2007 Enterprising Woman of the Year, Moe amused the audience with her quick wit. Keynote speaker Rosalind Brewer, EVP and president of the Walmart South Business Unit, gave a fascinating speech about her own rise in the corporate world—starting with a B.S. in Chemistry and working in

Learning About the Dreaded Bloat OF ALL THE POTENTIAL emergencies that dogs face, one condition stands out. It is one of the most dreaded of all: gastric dilatation and volvulus (GDV). This condition, often incorrectly referred to as bloating, requires immediate treatment or death will follow. This serious condition affects mostly deep-chested dog breeds, but can occur in any dog. Normally, the stomach is positioned high in the abdomen and holds a small amount of gas, fluids, and any food being digested. The stomach undergoes a rhythmic cycle of receiving food, contractions, grinding, and emptying. Sometimes, the stomach can become distended with gas or ingesta. This accumulation can stretch the stomach to many times its normal size which causes tremendous abdominal pain. This grossly distended stomach can rotate up and over itself which causes the esophagus (inlet) and duodenum (exit) to twist also. These actions cut off the blood supply to the stomach as well as the exit routes for gas and food, hence the nonproductive retching. This situation is lifethreatening and the dog will die a painful death within hours unless the condition is treated immediately. Signs of GDV may include an obviously distended stomach (especially near the ribs). The most important sign of GDV is the nausea with non-productive retching. If you observe abdominal swelling, nausea, and unproductive retching, you need to seek veterinary care immediately. There are some measures owners can take to lower the chances of GDV. For some at-risk breed owners, there is a benefit of having a prophylactic surgery performed that can decrease the possibility of GDV. If you have any questions or want to learn more about preventative measures, please contact your local veterinarian.

Mother/Father of the Bride A mother is the truest friend we have, when trials heavy and sudden, fall upon us; when adversity takes the place of prosperity; when friends who rejoice with us in our sunshine  thickens desert us; when trouble around us, still will she cling to us, and endeavor by her kind precepts and counsels to dissipate the clouds of darkness, and cause peace to return to our hearts. When I met my husband, Brian, and knew he would be my husband, I immediately thought of my wedding day—without my daddy. It was heartbreaking and a picture I had in my mind from the day he died. I troubled myself endlessly with the traditional act of the father walking the daughter down the aisle. Who would do that now? It brought me to tears on many occasions. I thought of my brothers—scratch. I thought about uncles—scratch. I thought about friends of the family—scratch. It’s not often our moms will buy themselves the gift of health. A facial is another gift of health that will introduce your mom to the special strokes of massage on the face while nourishing her skin as well. The favored facial usually includes a massage for the hands, feet, neck and shoulders while the face is moisturized and even treated to warm and cold stones. This type of treatment always says, “Mom, I love you and want you to enjoy a gift that you’d probably never buy for yourself.” Ideally, a Mother’s Day gift would include massage, facial and other treatments to last a few hours—throw in some Mimosas and you have the ideal “out of the ordinary” gift. Delight her with a slimming body wrap in a spa package for a special, overall glow. Remember, a spa gift certificate is always the perfect color, style and fit.

Dos and Don’ts of Managing an Inheritance AN INHERITANCE is a bittersweet thing. On one hand, the circumstance which brought about the inheritance is the death of a loved one. On the other hand, your loved one valued your relationship with them enough to think of you and try to make your life better. Here are some pointers to consider when dealing with inheritances. DO: pay down debt, save the money for a rainy day, The Northshore’s Best invest in your own education, put it away for a secure retirement, and put it in your child’s college fund. DON’T: make your newfound wealth well known or WRITTEN BY RONDA GABB you will be preyed upon by persons desiring to part you from that wealth, squander the inheritance on things you really don’t need, make hasty decisions, and invest in “get rich quick” schemes. If the inheritance is an IRA and you take out only Account Executive _____________________________________ Authorized Signature the “required minimum distributions” that the IRS mandates that you take, your inherited money can Date ____________________________ continue to grow tax-deferred for as long as possible. This is often called a “stretch” IRA or “inherited” IRA and you may barely empty it by the time you have reached your life expectancy. Also, be sure to fill out a

new beneficiary designation to ensure that it goes to your preferred beneficiaries. Finally, consider how the inheritance affects your own estate plan. Do you still want the same dispositions in light of your newfound wealth? For example, if you had $500,000 before the inheritance and $1 million after the inheritance, you might want to increase some of the specific bequests you plan to leave. For example, if you were going to leave $50,000 to each nephew and niece before the inheritance, maybe you might want to give them each $100,000 now. On the other hand, if you were going to give a percentage of your estate to each person, consider whether you really want them to get that same percentage of the now larger pie. Or consider adjusting the bequests and leave the balance to a _______________________________________________ worthy charity. Honor your loved one. Make a difference with your inheritance.

Traditional Medicine Merges with Modern Advances Adriana R. Nagy, MD. FACC

Sophisticated Woman | May 2010

WRITTEN BY AMY BOUTON

As seen in May 2010 20

BOARD CERTIFIED CARDIOLOGIST, Adriana Nagy, came to the U.S. nearly twenty years ago and immediately observed that the medical advancements being made here, differed greatly from those of her native country, Romania. She is grateful for the traditional education she received there and the solid foundation that it helped her establish. “What I learned there,” says Adriana “was to really listen to the patients and form a diagnosis based on a thorough physical exam.” Adriana is passionate about her work as a cardiologist because she is familiar with the devastation that can be caused by heart disease. Her own father was 36 years old when he suffered his first heart attack and his struggle with heart disease is one of the reasons she chose to specialize in this field. She’s dedicated to educating and treating cardiac patients with hopes of helping them maintain a long and healthy life. “What I like most about being a doctor is when I see my patients doing well, and I see that I can help them —help them to regain their health.” Adriana not only treats patients, but she also encourages them to be proactive in maintaining a healthy heart. Heart disease is the primary cause of death among both men and women in the United States today, but Dr. Nagy likes to remind patients that there are things that they can do to reduce their risk dramatically. “I cannot stress enough the importance of never picking up the smoking habit,” she says “because it can cause irreparable damage.” It is a significant and preventable cause of heart disease. Maintaining a healthy diet and exercising regularly are important too. As part of a preventative routine, Dr. Nagy advises patients to adhere to a heart healthy diet, which starts with smaller portions and fresher ingredients. She also recommends exercising at least thirty minutes each day, taking time for relaxation, and getting regular check-ups. In addition to treating heart disease, Dr. Nagy also manages patients that suffer from venous insufficiency. She combines her old-school methodology with the latest leading-edge technology at St. Tammany Heart & Vascular Institute using Endovenous Laser Therapy (EVLT). Venous insufficiency is a problem that plagues a significant portion of the population. Usually caused by malfunctioning or damaged valves in the veins deep within the legs, it can lead to unsightly varicose veins, pain and swelling in the lower extremities, venac disease (swelling of leg veins), redness and itching of the legs, and venous ulcerations. With EVLT, you can

expand even more to help people in the prevention and treatment of heart disease. Adriana and her colleagues, Drs. Farhad Aduli, James Mace, Naveed Malik and Ali Reza are highly trained specialists in the cardiology field. The physicians offer many services such as cardiac evaluations, balloon angioplasties, heart catheterizations, pacemaker and defibrillator implants, TEEs, cardioversions, and PFO closures. St. Tammany Heart and Vascular Institute is a collaborative group. “Our Physicians routinely rely on one another for interoffice consultation, so in many ways it is like having five of the best heart doctors in town as your own personal physician.”

The St. Tammany Heart and Vascular Institute has locations in Covington, Bogalusa and Franklinton. For more information or to schedule an appointment, call 985-871-6020, or visit their website at www.heartofsttammany.com.

get relief from all these symptoms in about one hour in Adriana’s office. The patient undergoing EVLT is first mildly sedated. Dr. Nagy then ablates the troubled vein by inserting a catheter into the vein. This procedure is a minimally invasive alternative to ligation and vein stripping and virtually eliminates recovery time allowing patients to resume normal activity immediately. As well as treating the serious complications of venous insufficiency, EVLT also opens the door for complementary surgeries that offer aesthetic value. Varicose veins cause many people—men as well as women—embarrassment and discomfort. Sclerotherapy is a procedure in which a special foam is injected directly into the vein. It can be performed in conjunction with, or very shortly after EVLT to prevent the recurrence of varicose veins and also to offer cosmetic improvement. After dedicating most of her time caring for her patients at St. Tammany Heart & Vascular Institute, Adriana enjoys spending her free time traveling, enjoying opera and classical music, and exercising. She finds relaxation in her daily walks that allow her to relish in the natural beauty of decades old Oak trees and native plants in her own neighborhood and continues to discover the countless cultural riches Southeastern Louisiana has to offer. “There is something happening here all the time. The music festivals and all of the outlets for the arts. The culture is abundant and different in so many ways.” Adriana is confident that in five years, St. Tammany Heart and Vascular Institute will exceed the current level of patient care and

The high definition provides unsurpassed access and accuracy and avoids trauma to the core abdominal area. The procedure is beneficial to women who need gynecological procedures like hysterectomies or to treat painful conditions like endometriosis. Dr. Williams, a pioneer in the OBGYN field, has performed over 150 robotic surgeries on the Northshore. She glows when asked to expound upon this rewarding aspect of her profession, “While I love the efficiency and sophistication, most importantly, patient recovery is greatly impacted. It is gratifying to know that my patients feel so much better post-op.” Amongst her many obligations, Dr. Williams manages to serve the community as well. As the physician for Danielle Inn, known as the “Home of Refuge for the Unwed, Expectant Mother,” Dr. Williams provides care for the women during their entire pregnancies, through their deliveries. She is President of St. Tammany Parish Medical Society and Vice Chief of Staff at St. Tammany Parish Hospital. DR. KATHERINE WILLIAMS’ PASSION for learning is what makes her practice so unique. Katherine L. Williams, MD, FACOG, specializes in obstetrics and gynecology at the Center for Women’s Health in Covington. She is diligent about searching for answers and finding solutions when it comes to women’s health issues. Dr. Williams is dedicated to compassionate care and proper education. She teaches pre-natal and fertility classes, and instructs her female patients about prevalent health issues such as polycystic ovarian syndrome. She recommends realistic solutions like behavior modification, weight loss, fertility nutrition and the avoidance of environmental toxins. Her unyielding compassion is reflected in her state-of-the-art office, constructed by husband Thad Devier, which was designed specifically to give patients a relaxing spa-like experience. Nurse Practitioner, Kelly Brewster, is on hand to provide additional assistance and to ensure patients feel comfortable with their prescribed care before they leave the office. Dr. Williams is also very proud to announce the arrival of her partner, Dr. Rachael Cresap. Wellness from the Inside Out Pedro A. Serrant, MD

“IF YOU START HEALTHY on the inside, that vitality will express itself on the outside too,” says Dr. Pedro Serrant. He calls it “inside out care,” and it incorporates his philosophy that medicine should take a powerful preventative approach, helping patients establish a lifetime of healthy habits. “Focus on optimal functioning of the body’s system rather than symptom relief,” he says. A board certified internist, Dr. Serrant addresses the total needs of each patient. His practice offers a unique combination of excellence in primary care in addition to comprehensive, state-of-the-art medical spa services. It’s this specialized holistic approach to total wellness paired with an unparalleled level of dedication to his patients that’s earned him recognition as one of “Louisiana’s Best Doctors” by Louisiana Life magazine—and even landed him on a national “best of” list published by New Orleans magazine. After 20 years in practice on the Northshore, Dr. Pedro Serrant and his staff of nurse practitioners, Danielle Tranchina and Tara Dodd, have become like family members to many of his patients, a fact that’s not surprising when you discover that in addition to their warmth and compassion, they’re deeply dedicated to the practice of medicine. Dr. Serrant sees himself as a” partner” in his patient’s healthcare. In addition to the treatment of illnesses like diabetes, skin cancer and hypertension, Dr. Serrant and his staff stratify risk factors and spotlight initial symptoms. “We’re here not just to treat diseases but to address those early signs. Let’s have you lose weight to reduce the risk of stroke and heart attack. You don’t have to make big changes,” he explains. He counsels patients to eat a lean, nutrient rich diet. “Avoid fast foods. Take the stairs instead of the elevator. These little things will impact your life tremendously.” For additional weight loss support, the dietary supplement Bios Life Slim is sometimes prescribed. By stabilizing the production of glucose and improving a sense of satiety, Bios Life Slim is an extremely effective tool in the battle against unnecessary pounds. Just as optimal health of the body can be achieved by improved diet and lifestyle, Dr. Serrant believes skin care also begins from within. In addition to encouraging a diet rich in antioxidants to reduce free radical damage (ageing to the LEFT: Dr. Serrant’s medical and spa staff include (left to right, top row) Priti Patel, medical aesthetician, Natalie Fradella, laser technician, Kristi King, licensed aesthetician, (left to right, bottom row) Danielle Tranchina, nurse practioner and Tara Dodd, nurse practioner.

skin), the spa offers topical products that will actually improve the chemistry of the dermis, resulting in increased collagen production and improved elasticity and firmness. “Many of the products we use in skin care are actually just vitamins,” explains Dr. Serrant, “We put vitamin C right on the skin. What is Retinol? It is Vitamin A. We’re trying to reincorporate these vitamins that we lose as we age.” Fine tuning our cosmetic appearance is a proven catalyst for making healthier choices. One such example is the use of the Zerona laser. “One of the things we’ve been seeing all through the country, where they’ve been using Zerona,” explains Dr. Serrant, “is that people are getting motivated to lose weight, eat better, and they are trying to continue with those inches of weight loss.” Used to re-contour areas of the body, Zerona melts the fat under the skin. As with liposuction, it reduces inches where resistant fatty deposits have accrued. However, unlike its older and more invasive predecessor, the treatment requires no down time, and it’s completely painless. The procedure is completed in six 40-minute office sessions over the course of several weeks. Dr. Serrant and his staff make the patient comfortable, position the laser over the targeted area and leave the room. Patients report that they enjoy the time to themselves, where they can listen to music or read a book. The result is an impressive reduction of anywhere from three to six inches from treated areas. For the purpose of skin rejuvenation, wrinkle reduction, and spot and vein removal, the medical spa uses the state-of-the-art Candela laser. Considered an industry leader, the Candela laser is safe for all skin tones. “A lot of people with darker skin types are always concerned about using laser treatments for hair removal,” explains Dr. Serrant. “This one can do it.” Depending upon your needs, licensed aestheticians, Priti Patel and Kristi King and laser technician, Natalie Fradella, can customize a full spa menu that includes medical grade dermabrasion, photodynamic therapy with Blue Lite for precancerous lesions and for the treatment of acne, waxing, tinting, facials and PCA skin peels. “Even though we’re a med spa, we want the patient to come in for a short time and to have the focus be all about them. Women, moms, we don’t focus on ourselves enough,” says Kristi King. Dr. Serrant nods in agreement. “How you perceive your well-being—your physical and even mental well-being—is an essential. But ultimately,” he says with a smile, “we’re all going to be beautiful if we’re healthy.” Dr. Pedro A. Serrant’s medical office and Laser Care of Slidell, is located at 1850 Gause Blvd., Suite 103 and 104, Northshore One Bldg., Slidell. For more information call 985-646-4574.

Whether the decision to pursue orthodontic treatment is for improved function or simply aesthetics, there are various options in treatment. Modern technology has provided orthodontists with new and improved techniques for making braces more comfortable and much less conspicuous. Improvements include smaller brackets that bond to, rather than wrap around teeth; lighter, more flexible wires that maintain a pre-formed shape (requiring fewer office visits); tooth-colored or ceramic brackets that do not stain; and removable appliances like Invisalign®. Few adults ever regret the decision to undergo orthodontic treatment and enjoy the benefits orthodontics offers patients of all ages.

Spring Cleaning–Is Now the Time to Buy? SPRING IS THE TIME for sprucing up our yards, cleaning windows, and repairing or replacing items around our homes that have been put off over the winter months. for the family that has outgrown its current home, purchasing a retirement home, downsizing after the children have all left for college, or pursuing that new job that might require relocation to a new area. A positive sign of this return to normalcy came in mid-April with the lifting of the declining market category for our area. This provides for the return of 95% conventional loans that allow for just 5% down payment. We may never see 100% loans again but, for homes that exceed $300,000 or that have structural issues that would not meet FHA standards, the return of 95% conventional loans will enable more buyers to qualify which increases the pool of potential buyers for homes in our area. So, if you are among the number of “pent-up” sellers or buyers, it might be time to venture into the spring market while interest rates remain at historic lows.

І LEADERS Ethics Training to Begin in Mandeville

WRITTEN BY DONALD VILLERE, MAYOR OF MANDEVILLE

THE TRANSITION OF administration has been a smooth one at City Hall, and I have officially begun handling the day to day business of the City of Mandeville. During my campaign, I said I would “reestablish the integrity of the office of the mayor and city government— I will provide ethics training for all elected officials, city employees, police, and any citizen that serves on a board or commission.” At my first council meeting, I offered the council members a schedule on ethics training. All employees, as well as elected officials and department heads, shall participate in a comprehensive training program regarding the Louisiana Code of Ethics. This training shall include, but not be limited to, highlighting general rules

of conduct required by the Louisiana Code of Ethics. This training shall amplify what city personnel can or cannot do in complying with the Louisiana Code of Ethics as well as the City of Mandeville Personnel Policies. It shall also identify and help personnel recognize potential conflicts of interest and provide mechanisms for alerting the proper official of such conflicts. I am pleased that this program will work hand in hand with the Code of Conduct Committee, chaired by Councilwoman Carla Buchholz, and appreciate the hard work and conscientious effort of those committee members. Be assured as your Mayor, I will work diligently to rebuild the integrity of the City of Mandeville.

Celebrate May in Slidell

32

WRITTEN BY BEN MORRIS, MAYOR OF SLIDELL

MAY IS A SPECIAL MONTH, a time of celebration, congratulations and honor. What other month affords us the opportunity to celebrate our mothers, congratulate our graduates and honor our heroes who have sacrificed their lives serving our country? Recently 5,000 people came out for Some Enchanted Evening to see the Louisiana Philharmonic Orchestra perform in Heritage Park. It was a great night, and I was truly honored when the LPO’s music director and principal conductor, Carlos Miguel Prieto, invited me on stage to conduct the final song of the night, a rousing rendition of Sousa’s Stars and Stripes Forever. Besides the symphony concert, Slidell was host to many cultural events and festivities last month, including the Olde Towne Alive block party, the Slidell BBQ Challenge, the spring Slidell Antique Street Fair, Bayou

Jam concerts, the opening of the Salad Days exhibit and the Hospice Foundation’s Crawfish Cook-Off. Who says there’s nothing to do in Slidell? The festivities continue in May with more Bayou Jam concerts in Heritage Park. All concerts are held in Heritage Park from 5:30 to 7:30 p.m. Admission is free. If you haven’t had the chance to see the Salad Days student art exhibit in the City of Slidell Art Gallery in City Hall, you are missing a great show. All artwork is by St. Tammany Parish student artists. It’s been exciting to see our talented students progress over the years, and many of them have gone on to become professional artists. All of these events are part of the city’s ongoing support of the arts; something which I feel is needed now more than ever.

Covington is Open for Business

WRITTEN BY CANDACE WATKINS, MAYOR OF COVINGTON

SO MUCH OF OUR TIME is taken up lately with talk about the economy and the negative factors surrounding it. Well, I’m here to say that my glass is still half full and I’m bullish on Covington. Pam Keller, our Downtown Development Director, is planning a gathering under the auspices of the Southern Growth Policies Board for input from prominent members of the business community, elected officials and community organizations. We will discuss how the Covington economy has been affected by national and regional trends and what we can do to prepare for opportunities. Luck is when opportunity meets preparation, and we intend to get lucky. The city is also applying to the Louisiana Department of Economic Development to become a certified Louisiana

Development Ready Community. Our participation in this program would yield an economic development component to the city’s comprehensive plan and act as the basis for strategic planning. Economic development is the foundation of historic preservation. It is a symbiotic relationship that balances the two. With the right perspective and careful preparation, Covington will maintain its place as a center of commerce and professional services on the Northshore. As always, Covington is open for business. For information on the Covington Downtown Development low interest loan program for businesses, as well as other incentives, visit www.cityofcovingtonla.com or call Pam Keller at 985-898-1873.

Chamber Provides Vital Support to Local Businesses

WRITTEN BY MICHELE AVERY, WEST ST. TAMMANY CHAMBER OF COMMERCE CHAIRMAN OF THE BOARD

SO FAR IT HAS been a busy Chamber year with our leadership focused on providing vital services to our members. Since late 2008 the Chamber has witnessed the national recession take its toll. In response, we have placed a strong focus on the support services we offer to our small business members. Through our partnership with SCORE and the Small Business Development Center (SBDC) at Southeastern Louisiana University, we offer comprehensive business education programs and provide business counseling for our members. Our education programs include seminars human resources, financial management, legal aspects of running a business and marketing techniques. We also offer members an array of networking and promotional opportunities including B2B, which is a

business to business promotional experience, Speed Dating for Business, which is a quick pace and intense promotional opportunity; our annual business EXPO, monthly Business After Hours, which provides a casual networking experience; and monthly luncheons. We provide members exposure for their business through our online and printed Membership Guide & Directory, distributed parish-wide, the member happenings page of our website, our ongoing referral program and the “Think Chamber First” campaign. In addition, the Chamber serves our members by advocating the interests of business on the local, state and federal levels. With almost half of 2010 behind us, the Chamber board looks forward to continuing to provide services that support our business community.

WRITTEN BY ERIC WALLACE

EARLY SUMMER is probably my favorite time of the year and after the dark dreary days of winter; color is actually quite refreshing and renews our flagging spirits. In May, we celebrate Mother’s Day. To me Mother’s Day honors any woman who has been important in our lives—this could be your mother, sister, teacher, friend, etc. Mother has prepared this particular dish for many years paired with crisp salad greens and warm French bread and always to great delight. For such an easy dish the result is quite spectacular. Not only are the colors in this dish bright and vibrant, the main ingredient celebrates one of the treasures of south Louisiana, shrimp. The old girl calls this dish Shrimp Casserole but you know I changed the name many years ago to honor her and we all now refer to it as Shrimp Hollingsworth. Mother has come a long way from being an Atlanta Hollingsworth to a becoming a full-fledged south Louisiana Wallace, and this dish is proof. The best of all this is that both Mother and Daddy are from Atlanta and visited New Orleans on their honeymoon trip. Well, as you can tell, they both fell in love with the city and moved here shortly afterwards. Mother prepares great southern dishes as well as Louisiana food, but she also makes the best reservations ever.

I prepared Shrimp Hollingsworth for Mother and Daddy last week using shrimp I caught fresh out of the lake when I went shrimping with a neighbor. While the casserole is baking, uncork a bottle of wine, salute your guests and sit down for some great conversation while enjoying the smell of nice hot food cooking away in your kitchen. Shrimp Hollingsworth 4 pounds medium peeled shrimp 1 can Golden Mushroom soup 1 can Rotel tomatoes 2 packages of Mahatma Yellow Rice 1 stick of butter (I use unsalted because shrimp can sometimes be salty) 1 large white onion chopped finely 1 large green bell pepper chopped finely 1 cup freshly sliced mushrooms Preheat oven to 350°. Prepare rice according to package directions. While rice is cooking, chop onions and bell pepper and slice mushrooms. Melt butter over medium heat until very hot then add chopped ingredients and sauté until soft. Add shrimp and cook just until pink. Now add the soup and tomatoes and simmer for 15 minutes. Combine the rice and shrimp mixtures together. Place in a lightly greased casserole and bake uncovered for about 40 minutes or until the sides bubble. This recipe feeds an army of 8 to 10 adults easily and can be prepared ahead of time.
