Something I recently learned is that though motherDate ________________________________________ hood is forever, small pieces of motherhood are finite. Take for instance, the very last meeting with the preschool teacher. I barely made it out of there with dry eyes. The thought of that last preschool performance is downright frightening. This phase is coming to a close. A short while ago, I found myself longing for the days when my kids were little enough to curl up with in the middle of the day, with all the shades drawn—to hunker down for that afternoon nap. What a simple but treasured memory and yet another phase gone. But I have also learned that new pieces will follow, and change—though sometimes painful, is inevitable. As we come to each juncture, we sometimes forget that it will not last forever, so we should really savor every moment—even when they are teenagers. This issue is a tribute to moms. Happy 90th Birthday Anna Ribbeck

WHILE WE ALL KNOW her as Sophisticated Woman’s beloved garden goddess, Anna Ribbeck’s eight children (four girls, then four boys) know her as “Mom.” As she celebrates her 90th birthday on May 26th, we asked her children to give us a glimpse into her storied life. Anna grew up in New Orleans on Venus street in the Gentilly neighborhood, with her mother and father and her grandparents, next door to the man who would eventually become her husband of 55 years—the late Phillip Ribbeck. With two generations of gardeners already in the family, gardening simply became a way of life for Anna. The family grew their own vegetables and spent most of their time together. When she married her beau Phillip in 1943, they moved around somewhat because of his military service, but they eventually came home to live in their childhood neighborhood, where both still had extensive extended families. “We were fortunate to grow up surrounded by many of our relatives,” remembers Lisa Lyons, Anna’s daughter. “Our
Mom was always there for us and when we were not with her, we were usually with another member of our family.” Anna went on to become, “The Plant Doctor” on a local Memphis television show in the early 1970’s and of course, her path led her back to Louisiana where she now enriches the readers of Sophisticated Woman magazine with her knowledge of all things botanical. Moo, as she is affectionately known by her grandchildren, has 26 grandchildren, 24 great grandchildren and two-and-a-half great, great grandchildren (one is on the way). Though her children live throughout four states, the entire family reunites at least twice each year. “My Mom always taught us that family is what is really important. She always looks at the bright side of things,” Lisa says, “and she looks for the good in everyone and in every situation. She gives of herself and what she has and never expects anything in return.” Happy Birthday Anna!

MOST EVERYONE WONDERS how many different outfits she has worn on the show (about 5000) or if she keeps all of those clothes (she doesn’t). For nearly three decades, Wheel of Fortune’s Vanna White, has carried her style sense and sophistication into millions of living rooms every night. But when the taping is over and the work day is done, she steps into her most important role—mother to her two teenage children. So what are this illustrious style icon’s feelings about motherhood, and does she have any words of wisdom to share? “It’s hard to work and be a mom at the same time, in the sense of not having enough time with them. That’s the way I feel. I want to be there so much more. I will say that what you have to do as a working mom is realize it’s not the quantity of time you spend with your children—it is the quality of time. Learning how to balance—that has been what I have learned.” With both a son and a daughter, Vanna has insight into the nuances of raising each and values their differences. “They are both very loving. There’s something about having both a son and a daughter. My son has a very protective side with me. And my daughter and I have lots of fun together because we’re both girls. So we’re able to go to Sephora together and try makeup together. You know those kinds of things.” As her son prepares to leave the nest to attend college, she reveals that she is somewhat sad. “We’re looking at colleges starting next week. I feel sad but good. I know that I can’t hold onto him forever, I have to let him go. But he’ll know that I am always there for him.”

Personally, she has many different dimensions, and her love of crocheting and knitting is just one. Her signature line of yarns, Vanna’s Choice, donates half of all its proceeds to St. Jude’s Children’s Research Hospital. “This is something I am very proud of. It really touches my heart.” In 2009, $500,000 was donated by Lion Brand, which is the company that represents Vanna’s Choice. So, what does Vanna worry about when it comes to her own kids? “Everything every mother worries about. The safety of my children (my son started driving this year). Need I say more?” And what would she say to her mother in a letter. “I would say thank you for all the love and support you’ve given me and believing in me and allowing me to follow my dreams.” And finally, what does she hope that her kids would write to her? “I would hope that they would think that I was a good mom, you know? You never know. We don’t get a handbook when we become moms. We just do the best we can and hope that they turn out okay. Everyone wants to have fun while doing it. Everyone wants it cheap. Fitness boot camps are one way to achieve this. However, with increased popularity and relatively easy start up, anyone can start a boot camp. Whether your instructor/personal trainer is qualified enough to train a large group of people is the real question. Here are some tips to keep in mind when choosing a fitness boot camp. Results. You want to get fit and you’re paying for it, so you should make sure that your fitness boot camp can provide testimonials that show proven results. Experience. Make sure that you choose a boot camp with a certified personal trainer who has several years of experience in training groups and program design. Accountability. When you join a boot camp, you are signing up for a coach and mentor who will care if you are working hard enough to reach your goals. Diversity. ENTERPRISING WOMEN from all around the region joined Sophisticated Woman magazine and Safe Harbor at the annual 2011 Hats Off Enterprising Woman of the Year luncheon Friday, April 8 at Tchefuncta Country Club in Covington. The splendid setting was only enhanced by the exquisite fresh floral designs provided by Wegmann’s Florist in Mandeville. Publisher Joanne Gallinghouse and Associate Publisher Sarah Cottrell welcomed guests and introduced the Enterprising Women of 2010. A silent auction was opened in advance of the luncheon. The afternoon culminated with the announcement of the 2010 Enterprising Women of the Year, Diane Kimbell and Kandyl Domangue, proprietors of AloraCleanse, their hydro colonic therapy practice in Covington. Diane and Kandyl, our Enterprising Women from the July 2010 issue, graciously received the award from Joanne and Sarah and thanked the Northshore community for embracing their practice so heartily. Certified lifestyle consultant Valerie Poole along with certified nurse practitioner and owner of the Egan Wellness Clinic, Pam Egan, NP, CDE kicked off the day with the two-part professional wellness seminar. Keynote speaker and
internationally published best-selling author, Erica Spindler, riveted guests with her inspiring address on the many meanings of “enterprising.” She recounted the adventures of the many enterprising women in her own family. She expounded on what led her to become a writer, and shared with the audience her discovery of what she calls her “dark gift.” Erica remained on hand after the event to pose for pictures and autograph books. All net proceeds from the event directly benefitted Safe Harbor. Thank you to members of our staff who made this event possible. MANDEVILLE COSMETIC PLASTIC SURGEON, Michele Cooper, attributes many of her accomplishments in life to the people who surrounded her on her journey to achieving them. “At a young age, I aligned myself with friends who would encourage me and set examples of excellence,” she says. “They lifted me up.” In her own life, Dr. Cooper strives to do the same for her two daughters, as well as children back in Baltimore, Maryland, where she grew up, and for young people right here in the greater New Orleans area where Dr. Cooper volunteers teaching math and gymnastics, and welcomes plastic surgery residents and students interested in surgical careers to shadow her. “These activities give me the opportunity to help guide these children and young adults toward success. It sends the message that being a woman should never be thought of as a disadvantage in math, science, or a career in surgery. I want them to know they can do anything they put their minds to. I am here to give them advice on how to best navigate their education and training while avoiding some of the rough patches I had to deal with.” With some self deprecation, Dr. Cooper jokes that she is the first generation in her family to attend college—and she acquired enough
educational degrees for the entire family. Now, she hopes to provide students from her alma mater the same opportunity through the scholarship fund she has implemented. “I went to a public high school where only a small percentage of students obtain a Bachelors degree. In my graduating class, less than one percent went on to obtain a graduate level degree such as a Masters, Phd, JD or MD. An informed decision is crucial to successful results.” Once the residency is completed, each surgeon must pass a written test, practice for at least one year submitting six months worth of cases before they are eligible to take the oral boards. If a resident is invited to take the oral boards (which are proctored by some of the leading plastic surgeons in the country) and they pass, they are then able to denote that they are board certified. This grueling process can take years, and thousands of hours of experience. Though there are other boards out there that sound official, they do not require such rigorous prerequisite resident training, and they are not recognized by the American Board of Medical Specialties (ABMS).” The benefits of having a highly trained and extensively qualified plastic surgeon are, of course, the obvious—the odds of getting the results you want the first time are much higher and the risk of serious complications may be lower. “It is so much easier to try and get it right the first time, rather than try and fix it after the fact,” she says. LIKE IT OR NOT, we are subject to possible floods in Louisiana. Whether they result from a single severe thunderstorm, tropical storm, hurricane or river, we often find ourselves in a position to watch unwanted waters rising. In St. Tammany Parish, we have faced floodwaters both from Lake Pontchartrain and from area rivers. In fact, across the United States, flooding is the number one natural disaster which causes damage to homes and property. In Louisiana, 80 percent of the federally declared disasters in the last ten years have been due to flooding or flood related effects of storms. Despite these numbers, only about 30 percent of the
public has flood insurance. Flood insurance is not usually covered in a homeowner’s insurance policy. It is extremely important to learn about how and why flood insurance is for everyone. A good resource to learn about flooding and flood insurance and some of the myths surrounding it is www.floodsmart.gov. Whether or not you live in a flood zone does not make a difference when it comes to being safely covered. Please take the time to learn about flood insurance and maintain safe coverage for you and your family. Everyone in St. Tammany needs to be protected, and this is another resource we have available.
Another Municipal Project Completed

I AM PLEASED TO announce that the Slidell Technology and Cultural Arts Center is now open for business. Almost five and a half years after Hurricane Katrina’s flood waters surged through Olde Towne Slidell, all of the city’s municipal offices are now back in the heart of Slidell. The Technology and Cultural Arts Center, located at 250 Bouscaren Street, is the second of two new municipal buildings that replace the offices destroyed by Katrina. The new 28,632 square-foot facility houses the departments of Cultural & Public Affairs, Planning, Building and Safety/Permits, and Engineering, as well as the City Attorney and City Prosecutor. At a cost of approximately $3.88 million, it was primarily funded by FEMA funds. The building is adjacent to City Hall and the Slidell City Council and Administrative Center, which opened in 2010 and houses the Chief Administrative Officer, Risk
Management, Data Processing, Finance and Personnel, and the Slidell City Council and City Council Chambers. At 32,970 square feet, FEMA was the primary funding source for this approximately $4.35 million project. Still under construction are the Slidell Senior Center, with an anticipated opening in the summer, and the Slidell Municipal Auditorium, which is anticipated to open at the end of the year. The latter of these will mark the final municipal post-Katrina recovery project. Special thanks to Sizeler Thompson Brown Architects of New Orleans and REK Architects of Mandeville for designing the buildings. Also, F.H. Myers Construction of Harahan for overseeing the construction. And finally, I would like to thank former Mayor Ben Morris, whose tireless efforts and dedication to the City of Slidell secured the funding from FEMA for these municipal buildings.

While each is different, we can and should respect and learn from each other. The collective membership of our chamber is very diverse. Nearly 80 percent of our member businesses are in St. Tammany West, but 20 percent come from around the region. Nearly 85 percent are small businesses, but over 25 percent of our funding comes from our large business members who represent only seven percent of our membership. Our mission and goals are very similar to the Junto—Chamber members come together as one business voice, and to help one another grow.

Benjamin Franklin is one of the great founders of our nation. He was also the founder of the Junto Society. Franklin credits his success to the Junto. He invited certain people to meet on a regular basis to contribute to each other’s success. They united around their diversity, giving while receiving to one another, and helping each other grow. Fast forward 235 years. The speaker compared the diversity of our multiple generations—boomers, generation X’ers, generation Y and millenialls—to the Junto. Each generation is a product of their time.

WINTER MONTHS are filled with endless dishes of unforgettable tastes. But nothing can beat the fresh and savory dishes of spring and summer. Fruits and vegetables right off the vine make for good eating, particularly if you like to cook or grill outdoors, which is unbelievably popular in America. We, here in Louisiana, are indeed fortunate to have at our disposal not only farm-fresh produce but right-out-of-the water seafood as well. Combine these with our traditional dishes and this is what makes our cuisine distinctively ours. But somehow, outdoor grilling gives foods flavors difficult or impossible to duplicate indoors. Add to grilled foods your own unique additions, and you can emerge like a rock star. Whether you’re off camping, tailgating, or grilling right in your own back yard, you may want to try these recipes which are so easy and different you won’t believe they can be so delicious. Buon appetito! Ciao for now. Grilled Padaina Bread 2 cups all purpose flour 1 tsp baking powder 1/2 tsp salt 1 tbsp dried basil 2 tbsps extra virgin olive oil 1/4 cup warm water To the flour, add all dry ingredients, mixing well. To this, add the olive oil and blend in. Slowly and sparsely add water to flour mixture and work it until dough becomes
smooth and not dry. If it is too dry, add a little more water. If it is too sticky, add a little more flour. Knead for about five minutes on floured surface and roll into a ball. Dough should be smooth and without lumps. Cut dough into sections and roll each section into the size about the size of a dinner plate. Keep remaining dough covered while working dough in hand. Place the rounds on an oiled grill or pan that is well heated until they begin to bubble and turn golden brown. Turn and cook both sides evenly, about three minutes per side. These can be eaten plain, topped like a pizza, or stuffed and rolled like a tortilla. Topping Sauce 1 can diced tomatoes or 2 fresh tomatoes diced 1/2 cup sliced black olives 2 tbsps capers 2 tbsps fresh chopped basil 1 tsp oregano, dried or fresh 1/3 cup extra virgin olive oil 1/2 cup grated romano cheese Salt and pepper to taste 4 tbsps balsamic vinegar Mix all ingredients together well in a deep bowl and set aside covered. This topping requires no cooking and the longer it marinates, the better the taste. This refrigerates well for up to one week. It may be used over pasta, polenta or other foods as a topping. It is always served at room temperature.

Changing of the Guard

NOW THAT A NEW Mayor-Elect has been chosen, it is time to prepare for the changing of the guard. Mayor-Elect Mike Cooper (congratulations Mike) has been meeting with city officials regularly to prepare to take the reins in July. The City Charter provides for the new mayor and council to take over at 10:00am on the first Monday in July. Uh-oh. This year, the first Monday is July 4. Hiccup number one. What to do about that? Welcome to Covington City government and the minutia we deal with everyday. Keeping in mind that City government provides the following basic services—utilities (sewer and water services), public safety (fire and police services), recreation (athletics and park maintenance), public works (everything from potholes to drainage), and administration (managing the City’s money), one must temper their expectations to the efficient delivery of those services. Loftier goals are great, but secondary to these. Our primary purpose for existing is to provide for the public health, safety and welfare. So please don’t expect miracles from the new administration. They
will soon find out why many of the conditions that could use improving exist, and how limited we are in the resources to fix all the problems. It’s the nature of the beast. State and federal government require more and more regulation at every level of local government. Sometimes people think that the “small town” atmosphere of the city has dissipated by choice, when the fact is that Covington is charged with the same rules as any larger city. Mayors need thick skins because so often decisions are not judged on fact, but rumor and to educate the public to the degree necessary to explain each one is impossible. The good news is that the same holds true when you are given all the credit for successes you had very little to do with. Ponchatoula Receives More Recognition

think? The population has increased over the last 10 year years, too. Believe it or not the median age in Ponchatoula is 32.3 years old. The study showed that the highest increases were in ages 25-34 and 55-64. No wonder we see young people shopping all over town— they live here. The possibilities for new businesses moving to Ponchatoula are endless. Approximately 60 law enforcement officers from several parishes were in town for a week conducting K-9 Trials, and our Chamber sponsored a dinner that one of our board members cooked and the rest of us served on the patio of Rockefeller’s Restaurant. The participating officers and their families appreciated our hospitality which included door prizes galore, donated by our generous members. We also cosponsored the annual United Way Art Contest, which had its start in Ponchatoula about five years ago. Using the theme “My Community Cares” third graders entered posters and along with other sponsors we awarded gifts to the three top winners at an ice cream party in Hammond. THIS WAS THE FIRST year Ponchatoula entered the Cleanest City Contest, sponsored by the Ponchatoula Gardenettes, with the support of Mayor Zabbia. Three judges from the Louisiana Garden Club Federation toured the 6.8 mile route and then met at City Hall for a reception and results. We won second place in our category! For our first effort, this made us very proud, and with the Garden Club as our chairwomen, we are already planning ahead to take first place next spring. Southeastern University’s Business Research Center conducted a commerce study for our Chamber of Commerce and the City of Ponchatoula, and recently presented their findings to an open meeting at City Hall. The study found some interesting facts that I feel compelled to share with you. Our growth as a tourism destination is second only to New Orleans’ Mardi Gras. When businesses consider moving to Ponchatoula, traffic count is a major deciding factor that they look at. Highway 22, or Pine St (our main street) right in the center of historic downtown has an average daily traffic count of 22,770. Great exposure, don’t you

A COMPANION is someone who shares either your space or a place in life with you. Experts have found that companion gardening works very well when growing vegetable plants. Companion plants in the same garden area are effective at warding off diseases, as well as pests, and at promoting optimal growth. If you are planning a veggie garden this year, remember that vegetable plants adore sunlight, rich soil, good drainage and consistent watering. Here are a few tips for companion planting. Peppers, tomatoes and basil enjoy the company of marigolds. Cucumbers, eggplant and radishes like to grow with bush beans. They do not like to be near onions! The cabbage family abhors strawberries, but strawberries like onions, lettuce and bush beans. Do not plant carrots near dill—they enjoy the company of peas, tomatoes, radishes and sage. Cucumbers also detest herbs, so use marigolds and nasturtiums for insect control. Eggplant may be paired with spinach and pole beans. Lettuce makes a beautiful border. Use lettuce in a garden with onions, radishes and carrots. (Sounds like a ready-
made salad garden!) Parsley does well near tomatoes. Squash likes the company of corn and onions. Tomatoes do not like to be near corn or fennel. Home vegetable gardens do not need to be planted in rows. Companion plants may all be mixed in one bed and also accompanied by annuals or perennials. The flowering plants will be helpful in attracting pollinators (bees, butterflies and hummingbirds) which will in turn help the pollination of the vegetable plants. It is also preferable to use organic pest control in the home garden. You are going to eat your produce, aren’t you? Biodegradable soap and water can work wonders and don’t be afraid to prune the infected leaves away. Marigolds and geraniums are also a very helpful, natural means of pest control at soil level and below. Check your local agricultural center (www.lsuagcenter.com) for the latest in tips and helpful ideas. A good garden companion is always worth their weight in gold—or in garden terms—manure!
