We literally pulled the car to the side of the road in near hysteria, because we thought people were driving like maniacs that day. (I was genuinely scared.) Isn’t it funny how things change. NOVEMBER IS American Diabetes Month and healthcare providers across the nation are dedicating this month to creating awareness and education on early detection, prevention and treatment. DESCRIBING HERSELF as a “free spirit who stays true to her values,” Dr. Kelly Burkenstock radiates warmth and energy true to these words. “I am passionate about my kids, my work, my family and friends,” she says. “Sometimes I forget how rewarding my life is—my artistry, my creativity that I express in my work. THE AMERICAN Association of Orthodontists (AAO) conducted a survey of mothers who had orthodontic treatment as children and whose children are currently in, or have had orthodontic treatment. The study was designed to gauge the perceptions that the moms have about current orthodontic techniques, the effects on their children, and the overall orthodontic experience. 86 percent of mothers reported that today’s braces are cooler than when they were children, and 69 percent also said wearing braces makes their children feel cool. The ability to change colors on the braces, for example, provides an exciting way for young patients to customize their appliance and add to the “coolness.” This enthusiasm about their orthodontic treatment can definitely contribute to the success of treatment. That may be why 81 percent of the moms reported that their child’s experience with orthodontic treatment was either positive or extremely positive. Another perception the moms have of current orthodontic treatment is that it seems to be easier than ever and more enjoyable for their kids. A majority of mothers reported that while wearing braces used to be a less comfortable and a lengthier process, new technologies and orthodontic options are making their children’s experience more enjoyable. Many orthodontic offices have become much more patient-friendly. Entertaining video games, music and/or reading materials help enhance the experience for young patients. While the perceptions and attitudes surrounding braces have changed over the years, the goal of orthodontic treatment remains the same—to help each patient achieve a beautiful smile. In fact, 78 percent of mothers who had braces as children believe braces are one of the best investments their parents made for them. And we know that mother always knows best.

“COVINGTON IS JUST LIKE MAYBERRY.” This is a quote you might hear often from people who have recently moved into the city or have spent time roaming its downtown full of locally owned shops, galleries and restaurants. So why compare it to Mayberry? Mayberry is that iconic image of a small town full of colorful characters, who live in a serene atmosphere, where the distance between any two spots in town is within bicycling distance. Most people there know each other, and there are enough funny stories about everyday life to produce ample episodes for television that keep viewers coming back week after week. It’s the kind of place that meets all the definitions of a sense of place. As the Parish Seat, the city has a sleeping population of 9,700 that swells closer to 25,000 during the work day. Home to the St. Tammany Parish Justice Center, St. Tammany Parish School Board, nine schools accommodating nearly 6,000 students, St. Tammany Parish Hospital, and several other major employers; Covington is a

place where a lot of serious work gets done. Its primary street plan is a New Urbanist’s dream. Covington has been a “smart growth” community since its founder John Wharton Collins established the Division of St. John, the city’s central business district, in 1813. The original layout of the downtown is what put the historic district on the National Register in the 1980s. Covington is a community of neighborhoods, rather than a collection of subdivisions. Its electorate has been actively involved in public meetings to update the city’s Comprehensive Plan and Future Land Use Map in 2006, to oversee the rewrite of its zoning ordinance in 2009, and who are currently participating in the rezoning of the entire city. Because its residents care so much, politics can get heated from time to time as passions run deep for the preservation of Covington’s Mayberry-like qualities. A new mayor and council will be elected in April of 2011. The city is not without its challenges, and strong leadership is imperative to meeting those challenges and revitalizing the sections of the city that don’t feel like Mayberry. There are several picturesque parks throughout the city and a two-year-old recreation complex for outdoorsy types. The Historic District is full of authentic structures that remind us of the city’s rich

The city dedicated its Trailhead Museum on New Hampshire Street in 2010 which features an outstanding exhibit of the city’s history highlighted by a beautiful film chronicling that history from its humble beginning, to its continued role as a center for commerce and culture. There is an endless list of special events that are open to the public that can be found at www.cityofcovingtonla.com along with helpful information about navigating your way through scheduling an event at Bogue Falaya Park, to opening a business. However you slice it, Covington is a beautiful old southern small town situated between two scenic rivers, dotted with majestic oaks, and full of interesting characters. Drainage Improvements and Cultural Arts Events

I AM PLEASED to announce that the City of Slidell recently received over $6.7 million from the Federal Emergency Management Agency (FEMA) for projects to replace and improve the city’s drainage systems that were damaged during Hurricane Katrina. I would like to acknowledge FEMA for allocating the money for these projects and thank the city employees who have worked to secure these funds. $6.3 million was allocated to replace barscreens and rakes—used to filter and separate trash from the water to allow for maximum flow—at both the City Barn Pump Station and the Schneider Canal Drainage Pump Station. FEMA also allocated $400,000 to cover the first phase of improvements at four additional drainage sites, including the City Barn Pump Station, Markham/ Peachtree Station, Eastwood Storm Drain Line, and the W-15 Lateral Canal. Once the first phase is completed, the city should receive another $9.3 million from FEMA to complete those projects.

I would like to invite everyone to Olde Towne Slidell for the city’s annual Arts Evening cultural celebration. Over 100 artists will display their works at various locations throughout Olde Towne. I AM PROUD to announce two positions that have recently been filled in the City of Mandeville. Our new Cultural Development Director, Alia Casborne, was chosen from a pool of 51 applicants. She comes to us with over 16 years of marketing, promotions and sales experience in the fields of publishing, telecommunications and brand marketing. Alia is responsible for implementing and documenting the cultural and economic development program for the City of Mandeville. She will be working cooperatively with businesses and property owners, identifying and securing grant funding. Her office will be located at the Mandeville Trailhead. This position has been needed in the City for many years and will finally transform Mandeville from a bedroom community into a more vibrant city with a lifestyle all its own.

The new Paul Spitzfaden Community Center Coordinator, Arnita Alexander, will replace Angelo Cavaretta who recently passed away. THE CAMP SALMEN Nature Park recently opened to the public, bringing a significant area of Southeast Louisiana and St. Tammany Parish to public use. Camp Salmen is one of the most culturally and historically significant locations in St. Tammany Parish. It is important environmentally, as it contains gardens and interpretive trails displaying the unique habitat of our area. It is important historically, as it contains one of the oldest examples of a Creole cottage which still stands on the grounds. And it is important culturally, as it is the location where generations of Boy Scouts camped, created memories and developed leadership skills. It was a Boy Scout Camp for nearly 60 years. The 130 acres of the Camp Salmen Nature Park were once part of the Salmen Brick and Lumber Company. Many bricks used to build New Orleans were manufactured on the site. The only remaining building in the

camp is of historical and architectural significance. It is a French Creole residence and one of only 26 buildings in the parish which date before the Civil War. It has been named the Salmen Lodge, and is on the National Registry of Historic Places. The Camp Salmen Nature Park boasts walking trails, gardens and a large covered pavilion. St. Tammany Parish is hosting a free concert series under the pavilion during the fall. The last of these concerts will be Witness on November 7th from 3–5 pm under the pavilion. The park is open Wednesday through Sunday from 9am to dusk during the fall and winter. Come out and enjoy the natural beauty of St. Tammany Parish at Camp Salmen Nature Park. Bring a blanket and chair, and listen to some great music in a beautiful natural environment.

LAST YEAR THE Northshore Community Foundation allocated $150,000 to produce a revitalization plan for the West Thirties Neighborhood in Covington, traditionally home to low to moderate income families. This neighborhood has experienced blighted housing and a disproportionate instance of crime. It’s actually amazing and full of people who have strong ties to the community and one another, and want to see its beauty resurrected. Many public meetings and the determination of its council representative Frances Dunn, have led to the first draft of a plan to rehabilitate blighted buildings, clean up the general landscape, and bring commerce and jobs back to the neighborhood. To reestablish the neighborhood we must start with its most precious resource—the children. There is a way to provide them a safe and nurturing place to guide them toward good citizenship, better grades,

and create community leaders of our future. It’s the Covington Boys and Girls Club. The Club closed this summer but can reopen with community support. We need your help to provide the programs that help kids navigate the choppy waters of childhood in the 21st century. The Covington Unit Council will launch an internet fundraising program to raise $100,000 (one year’s operating capital) by requesting $10 donations, to reopen the Club. That’s right—$10. We need LOTS of people to participate. So if you receive my “I’ve got a secret” email, I hope that you’ll open it, give $10 and forward it to as many people as you can. NEARLY 100 REPRESENTATIVES of our over 1,000 member businesses attended five different focus groups held last month. We recorded their input about Chamber benefits and services as well as local, state and federal governmental issues including; education, housing, financial issues, new government regulations and more. We also completed our annual survey with 200 respondents. That is an outstanding percentage of input! I assure you, our board of directors is listening. While there is more concern than ever about new governmental regulations impacting small and large businesses, health care reform immediately rose to the top of the list as the issue of major concern in the year ahead. While some Chamber events are designed for networking, others are meant to give first hand reliable accurate information you can use to save or make money.

Since December is standard renewal time for most employee sponsored health plans, we have swung into action on this issue by planning a special event designed to give first hand information on what this massive federal bill means to a business’s bottom line. This is the second such event planned in the 2010 Chamber year. An informative overview of health care reform is set for 8 am, Friday, November 5 at The Dakota. Heat the oil in small fry pan. Add the scallions and garlic, and cook gently for four to five minutes. Add the vodka and cream and sauté over low heat for about five to eight minutes more. Pumpkin and Crab Bisque By: Tracey Liberto of Covington 2 tbsp oil 1/4 cup chopped tasso 1/4 cup chopped shallots 2 cloves garlic, minced 2 cups canned pumpkin filling 1 cup chicken broth 1 cup heavy cream 2 cups half and half 2 tbsp. flour 1 lb. white lump crabmeat 3 tbsp. chopped chives 1/4 tsp. liquid crab boil Salt and pepper to taste Heat oil over medium heat in a large dutch oven. Add tasso and cook, stirring for about two minutes. Add shallots and cook for another couple of minutes. Add garlic, pumpkin and broth. Bring to a boil. Cover and cook for about 15 minutes. Whisk together the milk and the flour in a bowl to make sure flour is dissolved. Add to soup mixture. Add crab boil, salt and pepper. When soup begins to thicken add crab meat. Cook for an additional 20 minutes. Serve hot topped with chives.
