NOVEMBER IS THE MONTH when we really Signature _____________________________________ count our blessings. The biggest blessings in my life are my children. November is the Date ________________________________________ month we welcomed our first born a dozen years ago. We literally pulled the car to the side of the road in near hysteria, because we thought people were driving like maniacs that day. (I was genuinely scared.) Isn’t it funny how things change. Now I tell that same child, “If you boys hurt one another, you pay for the ER!” Some things do not change though, and that is the gratitude I felt the minute I saw his little face and held his little hand—gratitude that he made us parents, gratitude that he’s becoming his own person now, and gratitude for his three It starts with art and just keeps going. Behind the Scenes: Enterprising Woman cover shoot
The Northshore’s Best
MUCH TIME and attention goes into making our Enterprising Woman cover shoots as fabulous as the women themselves. To give our readers a peek at the day, photographer Tom Ballantine started documenting at Element. A Redken Salon. Dr. Kelly Burkenstock was pampered for the November cover shoot by stylist Bridget Degioanni. Meanwhile our cover photographer Steve Randon and Art Director Cheryl Sohn prepped the location at Azure Spa. The lush, European-like spa setting supplied a perfect environment for the shoot.

Periodontal Disease and Diabetes

NOVEMBER IS American Diabetes Month and healthcare providers across the nation are dedicating this month to creating awareness and education on early detection, prevention and treatment. According to the Centers for Disease Control, in addition to the 24 million with diabetes, another 57 million people are estimated to have pre-diabetes, a condition that puts people at increased risk for diabetes. Studies indicate a link between systemic health and oral health. An estimated onethird of people with diabetes have severe periodontal disease. According to the American Dental Association, periodontal disease is often linked to the control of diabetes. Your dental professionals can often detect symptoms and aid in controlling diabetes. In addition to periodontal disease, diabetes can have other effects on your oral health including; tooth decay, fungal infections, dry burning mouth, mouth ulcers, changes in the way teeth come together and acetone breath. Be aware and inform your doctor if you experience these symptoms. Keeping your dentist updated on any medications you are taking will allow a proactive approach to detecting or preventing diabetes. Diabetes impairs the body’s resistance to infections. A patient with diabetes can also experience a longer healing time. The LANAP therapy for treatment of periodontal disease uses laser technology to treat the gum infection without the need for traditional scalpel surgery, with significantly reduced healing time and dramatically healthy results. Along with regular checkups, self evaluations and advancements in technology, we can be a part in helping patients control and detect diabetes.

Beauty From the Inside Out, Dr. Kelly Gilthorpe Burkenstock
Sophisticated Woman | November 2010
WRITTEN BY AMY BOUTON PHOTOGRAPHY BY STEVE RANDON

DESCRIBING HERSELF as a “free spirit who stays true to her values,” Dr. Kelly Burkenstock radiates warmth and energy true to these words. “I am passionate about my kids, my work, my family and friends,” she says. “Sometimes I forget how rewarding my life is—my artistry, my creativity that I express in my work. I am a perfectionist.” She is internationally trained in the latest skin and body revitalization techniques, so what she does is rewarding for her patients as well. Her motto is “health and beauty from the inside out.” She truly believes that what you put on the skin and in the body ultimately determines how you look and how you feel. Alesia Williams had high blood pressure, aching bones and low energy when she finally decided to see Dr. Burkenstock. The diagnosis of Metabolic X Syndrome meant that most of her metabolic functions were off kilter. A high-dose Vitamin D regimen and B12 injections were prescribed. “Within a month all of my levels were back within normal range. I was eventually able to decrease my medicines prescribed by a previous doctor,” Alesia said. “One of the things I really appreciated was the way Dr. Burkenstock sat with me to articulate a plan for treatment. This was the first time I had ever had a physician explain to me what she was going to do, what she hoped to see happen, what she expected from me, and the ultimate outcome. My unexplained feelings of fatigue and aches are gone. I think what she does is state of the art.” Making people look as young as they feel is perhaps Dr. Burkenstock’s favorite part of the job. “I love to make clients feel terrific and look fantastic. People leave here with a joy and look they haven’t had in years. Satisfied clients fulfill my life.” Her patients trust her implicitly with this task. “I finally did the whole package with Dr. Burkenstock—PPIX peels, Facial Fillers and Botox. It was such an uplift,” says Terry Mantle, a longtime patient. “I could not see myself having plastic surgery so she guided me through these alternatives. My partner says I look as though I am ten years younger.” Not everyone feels they can afford a combination Anti-aging package though. This inspired Dr. Burkenstock’s latest brainchild, “Club ReNew.” One of her patients needed and wanted full face skin rejuvenation with Botox and Facial Fillers, but because of the cost, she asked that Dr. Burkenstock stick to just one area of her face. “What I do for clients, I consider it artistry. I really want to analyze the face and skin and just create a beautiful work of art. You don’t exercise one finger, you exercise your whole body. It is the same concept when it comes to Anti-aging your face. We created an affordable plan for this client, and her whole face will be rejuvenated via four complete sessions over the course of a year. She loves the outcome of the first session and is ecstatic she has three more sessions to keep her face rejuvenated for the entire year at an affordable membership price.” “Club ReNew—a year of beauty,” includes four sessions of full face Botox, four sessions of Facial Fillers, or both offered at a membership price for a full year. This opportunity makes full face rejuvenation, (Anti-

aging) affordable to most everyone through a membership plan much like that of a health club. Dr. Burkenstock is the first to develop a club for beauty in this region—again the leader in the Anti-Aging industry. For clients who come in suffering with unappealing varicose veins, Dr. Burkenstock says she can help most people with her cutting edge vein combination therapy. “Most cosmetic veins do not require extensive surgery or invasive lasers” she says. She first performs sclerotherapy, which is injecting up to three types of premiere sclerosing medications into the veins, followed by a topical light laser treatment applied to smaller networks of remaining veins. Patients generally see terrific results after two to four treatments. Tattoo removal treatments, on the other hand, may require 10 to 14 treatments depending on the size and color of the tattoo; she may use three to four different ink removing lasers. Dr. Burkenstock caters to her clients and minimizes discomfort for all of her procedures with her custom numbing cream and favorite cryoblower which blasts freezing cold air on the skin to block the pain. When she speaks of Azure Spa, just upstairs from her medical clinic, the delighted expression on her face reveals what a treasure it is to her. “I have created serenity for the community to savor and an oasis for my clients to indulge in while awaiting procedures” she says. This sumptuous, sensuous, luxurious oasis is home to European antiques and chandeliers, Italian gilded architecture, Turkish travertine and smells so soothing you only want for more. Two German massage showers complete with adjustable pressures and Belgian aromatherapy spas allow clients to pamper themselves either before or after a spa treatment. Enjoy a massage by one of three licensed massage therapists, one of whom is an internationally renowned professional wrestler trained in deep tissue massage. The Azure exclusive Raindrop massage offers deep, holistic treatment using pure aroma oils. Traditional spa services including facials, manicures, pedicures, waxing services and even kids’ spa parties are also available. In Azure’s boutique, Swarovski jewelry, glamorous shoes and accessories are on display for purchase or perusal while you wait. Dr. Burkenstock’s passionate spirit has merely propelled her vision of beauty from the inside out into reality. She is able to offer clients medical assessments, skin rejuvenation and correction procedures, and ultimate spa serenity under one roof. Add to that her personal expertise (as Dr. Burkenstock performs all procedures), her skincare product line, her professional and accommodating staff, and her vision is a success. As she always says, “You are so worth it!”™

Combat Visual Fatigue Anti-Fatigue Lenses
DO YOUR EYES feel tired and heavy at the end of the day? Do you get headaches after computer use? If you answered yes to these questions, you may be suffering from Visual Fatigue Syndrome. You do not need to be over the age of 40 to suffer from vision fatigue due to close-up work. Whether it is for work or pleasure, most of us are on our computers for numerous hours per day. Excessive near work and computer use can lead to eye fatigue. Visual Fatigue Syndrome (VFS) is a growing concern. A new study found that approximately 83 percent of patients experience some form of VFS. While computer use remains the most common source of symptoms; cell phones, PDA’s and video games can also lead to VFS. The symptoms for most patients include headaches, eye discomfort, watering eyes and redness. There are spectacle lenses available to aid in the comfort of your vision while doing near vision tasks.

THE AMERICAN Association of Orthodontists (AAO) conducted a survey of mothers who had orthodontic treatment as children and whose children are currently in, or have had orthodontic treatment. The study was designed to gauge the perceptions that the moms have about current orthodontic techniques, the effects on their children, and the overall orthodontic experience. 86 percent of mothers reported that today’s braces are cooler than when they were children, and 69 percent also said wearing braces makes their children feel cool. The ability to change colors on the braces, for example, provides an exciting way for young patients to customize their appliance and add to the “coolness.” This enthusiasm about their orthodontic treatment can definitely contribute to the success of treatment. That may be why 81 percent of the moms reported that their child’s experience with orthodontic treatment was either positive or extremely positive. Another perception the moms have of current orthodontic treatment is that it seems to be easier than ever and more enjoyable for their kids. A majority of mothers reported that while wearing braces used to be a less comfortable and a lengthier process, new technologies and orthodontic options are making their children’s experience more enjoyable. Many orthodontic offices have become much more patient-friendly. Entertaining video games, music and/or reading materials help enhance the experience for young patients. While the perceptions and attitudes surrounding braces have changed over the years, the goal of orthodontic treatment remains the same—to help each patient achieve a beautiful smile. In fact, 78 percent of mothers who had braces as children believe braces are one of the best investments their parents made for them. And we know that mother always knows best.

Covington—A Modern-Day Mayberry
Sophisticated Woman | November 2010
WRITTEN BY CANDANCE WATKINS
26
“COVINGTON IS JUST LIKE MAYBERRY.” This is a quote you might hear often from people who have recently moved into the city or have spent time roaming its downtown full of locally owned shops, galleries and restaurants. So why compare it to Mayberry? Mayberry is that iconic image of a small town full of colorful characters, who live in a serene atmosphere, where the distance between any two spots in town is within bicycling distance. Most people there know each other, and there are enough funny stories about everyday life to produce ample episodes for television that keep viewers coming back week after week. It’s the kind of place that meets all the definitions of a sense of place. As the Parish Seat, the city has a sleeping population of 9,700 that swells closer to 25,000 during the work day. Home to the St. Tammany Parish Justice Center, St. Tammany Parish School Board, nine schools accommodating nearly 6,000 students, St. Tammany Parish Hospital, and several other major employers; Covington is a
place where a lot of serious work gets done. Its primary street plan is a New Urbanist’s dream. Covington has been a “smart growth” community since its founder John Wharton Collins established the Division of St. John, the city’s central business district, in 1813. The original layout of the downtown is what put the historic district on the National Register in the 1980s. Covington is a community of neighborhoods, rather than a collection of subdivisions. Its electorate has been actively involved in public meetings to update the city’s Comprehensive Plan and Future Land Use Map in 2006, to oversee the rewrite of its zoning ordinance in 2009, and who are currently participating in the rezoning of the entire city. Because its residents care so much, politics can get heated from time to time as passions run deep for the preservation of Covington’s Mayberry-like qualities. A new mayor and council will be elected in April of 2011. The city is not without its challenges, and strong leadership is imperative to meeting those challenges and revitalizing the sections of the city that don’t feel like Mayberry. There are several picturesque parks throughout the city and a two-year-old recreation complex for outdoorsy types. The Historic District is full of authentic structures that remind us of the city’s rich

The city dedicated its Trailhead Museum on New Hampshire Street in 2010 which features an outstanding exhibit of the city’s history highlighted by a beautiful film chronicling that history from its humble beginning, to its continued role as a center for commerce and culture. There is an endless list of special events that are open to the public that can be found at www.cityofcovingtonla.com along with helpful information about navigating your way through scheduling an event at Bogue Falaya Park, to opening a business. However you slice it, Covington is a beautiful old southern small town situated between two scenic rivers, dotted with majestic oaks, and full of interesting characters. Drainage Improvements and Cultural Arts Events
WRITTEN BY FREDDY DRENNAN, MAYOR OF SLIDELL
I AM PLEASED to announce that the City of Slidell recently received over $6.7 million from the Federal Emergency Management Agency (FEMA) for projects to replace and improve the city’s drainage systems that were damaged during Hurricane Katrina. I would like to acknowledge FEMA for allocating the money for these projects and thank the city employees who have worked to secure these funds. $6.3 million was allocated to replace barscreens and rakes—used to filter and separate trash from the water to allow for maximum flow—at both the City Barn Pump Station and the Schneider Canal Drainage Pump Station. FEMA also allocated $400,000 to cover the first phase of improvements at four additional drainage sites, including the City Barn Pump Station, Markham/ Peachtree Station, Eastwood Storm Drain Line, and the W-15 Lateral Canal. Once the first phase is completed, the city should receive another $9.3 million from FEMA to complete those projects.
I would like to invite everyone to Olde Towne Slidell for the city’s annual Arts Evening cultural celebration. Over 100 artists will display their works at various locations throughout Olde Towne. Enjoy live entertainment, great food and drinks and antique and boutique shopping. The fun starts at 4:30 pm on Saturday, November 6 in Olde Towne Slidell. The So You Think You Can Paint? exhibit is currently on display through November 12 at the Slidell Cultural Center in City Hall. Elected officials, community business leaders, media personalities and professional artists were asked to create original artwork on 12”x12” canvases. The works will be auctioned at the Cultural Extravaganza on November 13, with proceeds dedicated to the city’s arts programming. For more information, please call 985-646-4375.

New Members of Team Mandeville
WRITTEN BY DONALD VILLERE,

MAYOR OF MANDEVILLE

I AM PROUD to announce two positions that have recently been filled in the City of Mandeville. Our new Cultural Development Director, Alia Casborne, was chosen from a pool of 51 applicants. She comes to us with over 16 years of marketing, promotions and sales experience in the fields of publishing, telecommunications and brand marketing. Alia is responsible for implementing and documenting the cultural and economic development program for the City of Mandeville. She will be working cooperatively with businesses and property owners, identifying and securing grant funding. Her office will be located at the Mandeville Trailhead. This position has been needed in the City for many years and will finally transform Mandeville from a bedroom community into a more vibrant city with a lifestyle all its own.
The new Paul Spitzfaden Community Center Coordinator, Arnita Alexander, will replace Angelo Cavaretta who recently passed away. Chosen from 91 applicants, Arnita recently retired from a 25-year career as an executive secretary with Cleco Corporation at their headquarters in Pineville, Louisiana. She holds the designations of Certified Professional Secretary and Certified Administrative Professional and is presently an active member of the International Association of Administrative Professionals. Her service record, personality and willingness to work well with others will offer a perfect bridge with COAST, the New Image Club and the general public who rent the building in the future. I look for the Community Center to thrive under her leadership.

Come Enjoy Camp Salmen Nature Park
WRITTEN BY KEVIN DAVIS, ST. TAMMANY PARISH PRESIDENT
THE CAMP SALMEN Nature Park recently opened to the public, bringing a significant area of Southeast Louisiana and St. Tammany Parish to public use. Camp Salmen is one of the most culturally and historically significant locations in St. Tammany Parish. It is important environmentally, as it contains gardens and interpretive trails displaying the unique habitat of our area. It is important historically, as it contains one of the oldest examples of a Creole cottage which still stands on the grounds. And it is important culturally, as it is the location where generations of Boy Scouts camped, created memories and developed leadership skills. It was a Boy Scout Camp for nearly 60 years. The 130 acres of the Camp Salmen Nature Park were once part of the Salmen Brick and Lumber Company. Many bricks used to build New Orleans were manufactured on the site. The only remaining building in the
camp is of historical and architectural significance. It is a French Creole residence and one of only 26 buildings in the parish which date before the Civil War. It has been named the Salmen Lodge, and is on the National Registry of Historic Places. The Camp Salmen Nature Park boasts walking trails, gardens and a large covered pavilion. St. Tammany Parish is hosting a free concert series under the pavilion during the fall. The last of these concerts will be Witness on November 7th from 3–5 pm under the pavilion. The park is open Wednesday through Sunday from 9am to dusk during the fall and winter. Come out and enjoy the natural beauty of St. Tammany Parish at Camp Salmen Nature Park. Bring a blanket and chair, and listen to some great music in a beautiful natural environment.

LAST YEAR THE Northshore Community Foundation allocated $150,000 to produce a revitalization plan for the West Thirties Neighborhood in Covington, traditionally home to low to moderate income families. This neighborhood has experienced blighted housing and a disproportionate instance of crime. It’s actually amazing and full of people who have strong ties to the community and one another, and want to see its beauty resurrected. Many public meetings and the determination of its council representative Frances Dunn, have led to the first draft of a plan to rehabilitate blighted buildings, clean up the general landscape, and bring commerce and jobs back to the neighborhood. To reestablish the neighborhood we must start with its most precious resource—the children. There is a way to provide them a safe and nurturing place to guide them toward good citizenship, better grades,
and create community leaders of our future. It’s the Covington Boys and Girls Club. The Club closed this summer but can reopen with community support. We need your help to provide the programs that help kids navigate the choppy waters of childhood in the 21st century. The Covington Unit Council will launch an internet fundraising program to raise $100,000 (one year’s operating capital) by requesting $10 donations, to reopen the Club. That’s right—$10. We need LOTS of people to participate. So if you receive my “I’ve got a secret” email, I hope that you’ll open it, give $10 and forward it to as many people as you can. Believe it or not, you can change a child’s life—and a neighborhood—with $10. I hope you’ll “Join the Top Ten” and be a part of the revitalization of the West Thirties Neighborhood. For more on the B&G Club, visit www.bgcsela.org.

Are You Struggling to Understand Health Care Reform?
WRITTEN BY LACEY TOLEDANO, WEST ST. TAMMANY CHAMBER

NEARLY 100 REPRESENTATIVES of our over 1,000 member businesses attended five different focus groups held last month. We recorded their input about Chamber benefits and services as well as local, state and federal governmental issues including; education, housing, financial issues, new government regulations and more. We also completed our annual survey with 200 respondents. That is an outstanding percentage of input! I assure you, our board of directors is listening. While there is more concern than ever about new governmental regulations impacting small and large businesses, health care reform immediately rose to the top of the list as the issue of major concern in the year ahead. While some Chamber events are designed for networking, others are meant to give first hand reliable accurate information you can use to save or make money.
Since December is standard renewal time for most employee sponsored health plans, we have swung into action on this issue by planning a special event designed to give first hand information on what this massive federal bill means to a business’s bottom line. This is the second such event planned in the 2010 Chamber year. An informative overview of health care reform is set for 8 am, Friday, November 5 at The Dakota. Come learn more about this sea of regulation and its bottom line impact. Make sense of the coming changes in today’s health insurance landscape without rehashing what you’ve already seen or heard. At the close of the presentation attendees will have an opportunity for questions and answers. For more information about this and other Chamber events or to RSVP, visit www.sttammanychamber.org.

Italian Elegance WRITTEN BY PAUL CIMINO
ONE OF ITALY’S favorite and most elegant pasta dishes comes out of Rome. This incredibly simple combination of flavors comes to a finale that is unforgettable in its savor, yet it is an elegant and easy way to serve angel hair pasta. Long an aftertheatre or after-opera favorite of Romans, it is now popular throughout Italy, Sicily and Sardegna. Angel hair pasta has its own reason for being, in that its lightness and flavor when properly cooked defy comparison. Coupled with vodka sauce and topped with caviar, it romances the taste buds and ends in an unforgettable marriage of flavors and textures. This is a dish that is destined to become one of your favorites also, and it makes not only holidays festive, but makes any occasion special. Buon appetito! Ciao for now.
to become one of your favorites also, and it makes not only holidays festive, but makes any occasion special.
Heat the oil in small fry pan. Add the scallions and garlic, and cook gently for four to five minutes. Add the vodka and cream and sauté over low heat for about five to eight minutes more. (DO NOT bring to a boil.) Remove from the heat and stir in the caviar. Season with salt and pepper. Meanwhile, cook the pasta in a large pan of rapidly boiling salted water until AL DENTE. Drain the pasta and toss immediately with the sauce. When plating, either individually or family style, top the pasta with additional caviar.
