Grateful Times and Bountiful Blessings NOVEMBER IS A time to count our blessings. Whether that’s family, food or appreciating a sunset over the lake, it’s a season to take stock of our lives and reflect on what’s truly important. For myself, that means enjoying (and cleaning and cooking for…) my three college kids and middle schooler. Having everyone home and around the Thanksgiving table is a ritual I always cherish. And, of course, it’s prime football season! And as the new editor of Sophisticated Woman, I am also grateful for the opportunity to introduce our readers to some of our community’s most outstanding women entrepreneurs on the Northshore. This month’s Enterprising Woman is Ingrid Rinck, founder of Sensible Meals in Mandeville. Ingrid’s operation started with one small kitchen, but now she is at the helm of the largest meal prep company in the country. A Change for the Better in Patient Recovery

NOT MANY PEOPLE change career paths in their late forties, much less go to school for eight years to earn a doctorate. But then again not many people have the determination and vision that Dr. Siobhan Trotter does. A former corporate trainer for a large bank in Ontario, Trotter left her career when her husband Steve’s Nashville job in food and beverage services took off. He was offered an opportunity in New Orleans and the family moved to Mandeville. She wanted to live on the Northshore the moment they crossed the Causeway as Mandeville’s lush greenery and tall pine trees beckoned. “I turned to my husband and said, ‘Hey honey, sorry about your commute,’” she laughed. Some serendipity was involved in their choice to live on the Northshore. Trotter was at a fitness class when she noticed a new member. He happened to be moving from New Orleans to Nashville and he offered her a piece of advice. “It was 2001 and he said New Orleans was way overdue for a hurricane,” she recalled. “He advised me to make sure our property was not in a flood zone. When I asked for suggestions, he recommended Mandeville. And we all know what happened in 2005,” she said. At the time, Siobhan was a stay-at-home mom to their two young children, Conor and Caitlin. But as her kids got older, she became restless. While she loved being a mom, she missed the intellectual challenge and problem solving that working outside of the home gave her. Instead of going back to corporate life, she decided to go to nursing school. It was a career change long in the making. Trotter comes from a lengthy line of nurses. Her mother, aunts, brother and grandma were or are nurses. Even her great-grandmother was a midwife. “I just came to the party late,” she chuckled. Her decision to follow the family’s calling came during a particularly painful time. At only 59 years old, Trotter’s father was dying of colon cancer. She flew back to Ontario to take care of him during his final weeks. “One day when I was tending to him, he just said, ‘Siobhan, you’d make a great nurse,’” she remembered. “I guess it’s in my genes.” 10 Sophisticated Woman | November 2018

Trotter started in Tulane University’s science program and was accepted to Mayo Clinic's nursing program accepting the challenge to wear the hats of mom, employee and student. Some days left her exhausted but she was determined to accomplish her mission. At age 48, Siobhan graduated with honors, earning a Doctorate of Nursing Practice (DNP), the highest degree of nursing education. Her doctoral work focused on improving the quality of life and comprehensive education to prepare patients for oncological surgery. Trotter specializes in prehabilitation of complex cancers in the upper gastrointestinal tract such as esophageal, liver, biliary, pancreatic and gastric cancers. “We let patients know exactly what to expect before and after surgery. Most people are very anxious coming into this and we guide them through the process,” she said. Many of her patients at the Benson Cancer Center are elderly and have lost weight and strength even before their cancer diagnosis. “The upper GI tract is directly linked to digestion,” she explained. “Many patients are malnourished. They can’t eat or digest food. They become anxious, depressed and fragile–and a weakened patient becomes even weaker after surgery.” It troubled Trotter to watch her patients endure such lengthy recoveries. Their health further degenerated when they were frail for weeks and not getting up to walk. “I thought we could do better for our patients,” she said. One day she attended a seminar hosted by Enhanced Recovery After Surgery Society who were discussing the current practice in our country of not allowing a patient to eat or drink water prior to surgery. “For years, doctors in Europe have encouraged their patients to drink complex carbohydrate drinks before surgery and they boast much better recovery rates,” she noted. “After the seminar, something just clicked,” Trotter stated. “The research data was compelling and we were determined to make our patients surgical journey better by creating a

top quality beverage created in America.” She presented her idea to surgical oncologist Dr. William Conway, who agreed she might be on to something. “Surgery takes a huge physical toll on the body,” she said. “In the same way athletes load up on carbs before a marathon, Dr. Conway and I knew a complex carbohydrate drink would benefit a patient before and after surgery.” It wasn’t a simple task. The beverage had to have the correct amount and type of carbohydrates, the right pH and the proper absorption time. It also had to suppress hunger and taste good. Trotter and her business partner Dr. Conway invested over three years of intense research, formulation and development and SurgiStrong RecoverAidTM finally hit the market in June of this year. “I put almost my entire life savings into developing this product. That’s how strongly I believed in it,” she noted. A large local hospital system, a health care system in Santa Barbara, and a large GI practice in Mississippi currently implement SurgiStrong in their presurgery and pre-colonoscopy protocol with much success. The partners’ next step is to market the product to physicians across the country. “I feel so fortunate to have found a way to shorten patients’ hospital stays, keep their strength and make the surgical process less traumatic,” she said. “Making people feel better is my calling and SurgiStrong helps me do that.” SurgiStrong is located at 1330 Park Drive, Suite 400 in Mandeville. Healing PCOS Naturally WRITTEN BY DR. LISA MARIE PATE

POLYCYSTIC OVARY SYNDROME

(PCOS) affects 10% of women of reproductive age and is the most common cause of infertility. The main focus of treatments for PCOS are targeted for decreasing insulin, androgens (testosterone and DHEA) and improving LH/FSH ratios. Diet and lifestyle changes are imperative when treating PCOS. Without these changes, not much else will work effectively, including medications. Diet and BMI changes have been shown to have the largest impact in treating PCOS. In a study looking at those consuming a high-fat, high-sugar diet, subjects exhibited impaired estradiol, progesterone and LH surges before ovulation. They also found alterations in progesterone to testosterone ratios, which correlated strongly with ovarian cyst formation. In contrast, a pilot study looking at a low-carb, ketogenic diet found significant improvements in weight, percent-free testosterone, LH/FSH ratio, and fasting insulin in women with PCOS. Other natural therapies that were found to have a great impact on PCOS include berberine, vitex, NAC, cinnamon, saw palmetto and myo-inositol. In a study on IVF, berberine and metformin treatments prior to IVF improved pregnancy outcome by normalizing parameters in PCOS women and berberine was even found to have a more pronounced therapeutic effect and achieved more live births with fewer side effects than metformin. Although metformin can be extremely helpful in those with PCOS, it can also lead to decreased levels of vitamin B12, magnesium and B6. It might be wise to check these nutrients levels if taking metformin or consider adding these nutrients for protection. Although PCOS can be difficult to treat, there are many natural therapies that can help. There is hope for those wishing to heal PCOS!

INGRID RINCK,

a self-made entrepreneur and CEO of Sensible Meals, has been helping people eat healthier and achieve their weight loss goals since 2014. A personal trainer for 20 years, Rinck found her passion for fitness at the early age of fifteen. Within a year after joining a fitness class, she found herself teaching the exact same class where her aptitude for physical health began. Today, Rinck owns the largest meal preparation company in the United States. From humble beginnings, Ingrid was a single mother with two young children and a baby running a personal training business. During that time her 8-year-old son Rock was diagnosed with Type 1 diabetes. This diagnosis changed everything. Rinck began to meal prep for her son, focusing on nutrition and learning everything she could about enhancing health through food. She altered her family’s diet, and in the process she lost weight herself. Friends and clients noticed her results. “They saw my success with portion-controlled meals that I created for my son and wanted me to replicate the meals for them. And that’s how my business started,” she said. As a single mother and businesswoman, some days she worked anywhere from 15 to 18 hours, prepping meals while trying to keep up with the influx of orders. Sensible Meals took off so quickly that it became bigger than she had anticipated. Seeking the counsel of her father, a former restaurant owner, she took his advice and opened a prep facility. Within a short time, her business began to grow and flourish even more. With the support of her father who helped with operations, Rinck had the opportunity to focus on her true passion — marketing her business and helping her clients achieve better health. Rinck is enthusiastic about teaching people that weight loss and physical fitness are not impossible and are very attainable. “It’s about doing it right most of the time and having fun some of the time,” she said. “We give our clients some basic diet meals and built-in Louisiana cooking cheat meals so they don’t feel deprived, frustrated and quit. We keep it affordable and we offer live assistance

12 hours a day. I even do live chats on social media once a month.” The company’s packaged meals are freshly prepared and free of preservatives. Ingrid’s mantra has been “moderation, not deprivation.” Through Sensible Meals, Rinck has created more than 1,200 jobs in the workforce with 98 percent of the employees being women. An astounding 95 percent of them are mothers, with 75 percent of those employees being single moms. “I was once a single mom on a limited income and I understand what it means to have support when you need it,” said Rinck. “People working for me believe in this business as much as I do. It's important and I know they want to help me take care of my business, so I trust them.” Today, she finds innovative ways to help struggling families, whether it be through nonprofit organizations like the Red Cross, American Heart Association, Type 1 diabetes or other charitable organizations. Rinck’s philanthropy extends beyond big nonprofits, and overflows to the people of our community. Sensible Meals raised over a half a million dollars in donations in 2017 to benefit local families and Type 1 diabetes. “Average donations were anywhere between $1,500 to $15,000. For example, we may help a single mom pay for her first year of college or give a mother the funds to help pay for medical supplies that her child needs.” Rinck said. “I like to see where the money is going. The thing that is different about us is people don’t know how charitable we are.” From donating to Louisiana nonprofits as well as reaching out to people in need in our community, Rinck seeks to empower and inspire other women. “People don’t see everything that we do. We keep it private while helping women in their time of need and don't put their struggles on display," she said. Without a college degree, Ingrid relied on her grit, hard work, and determination. “I’m proof that you don’t need a degree to have success. It would have been nice, but it didn't happen for me,” she said. Her sons Rhett, Rock, and her daughter Georgie keep her motivated. “I’m proud of what I’ve accomplished especially since I built it myself. I didn’t always have the right tools, but I have genuine passion and love for what I do and the people I interact with. I hope that comes through. OCTOBER WAS WARMER than usual. In fact, it was HOT! The vegetable plants I put in the ground in October succumbed to the heat. But cooler weather is here, and I will be replanting. Here are a few things you can plant now: spinach, lettuce, garlic, radishes, carrots, cabbage, beets, turnips and Brussel sprouts. Have you noticed all of the goldenrod blooming over the last few weeks? Goldenrod is a very important source of nectar and pollen for the bees. My honey bees are happy, happy, happy! Nature’s pollinators play a key role in the production of most of our fruits and vegetables, and an abundant source of nectar and pollen will help them survive the winter. Speaking of surviving the winter, many of the native bees, such as bumble bees, and butterfly larvae spend the winter burrowed under the fallen leaves of autumn. It perhaps may be best for them ( and us ) to leave the leaves where they fall and not rake them up. Fall is my favorite time of year to garden – cooler weather, weeds are not so vigorous and there are a fewer bugs. If you are new to gardening, now would be a good time to get started and hone your skills. Two pieces of advice, grow what you like to eat, and start small. A small raised bed planted with your favorite cool weather veggie will get you started on the right foot and build your gardening confidence. Visiting your local feed and seed store and talking with their staff, talking to the local growers at your favorite farmers market, or just chatting with other gardeners will provide you with a wealth of information. Fabulous Fall Cocktails BRING ON THE FALL! Get

in the mood for cooler weather and get cozy with these autumnal concoctions. Add some spice to your sangria, some jam to your whiskey and some kick to your hot chocolate. These recipes will add warmth to all of your fall soirees and bring a glow to your nights by the fire.

Ginger Jam

Pumpkin Pie In The Sky Sangria

1 bottle white wine, chilled 3 cups mango-peach juice blend, chilled 1 cup pumpkin spice liqueur, chilled Turbinado raw sugar Cinnamon sticks

thin fresh ginger slices teaspoon apricot jam ounce fresh lemon juice ounces Irish whiskey ounce orange liqueur lemon twist

Muddle the ginger with the jam and lemon juice in a cocktail shaker. Add ice, whiskey and orange liqueor and shake well. Strain into an ice-filled rocks glass. Garnish with a lemon twist.

Combine the wine, mango-peach juice and the chilled pumpkin spice liqueur into a pitcher. Stir and pour into Turbinado sugar-rimmed glasses. Garnish with cinnamon sticks.

Combine pumpkin-spice coffee liqueur, vodka, and cream into glass over ice. Stir lightly. Lightly drizzle caramel sauce over drink. Garnish with a sprig of rosemary.

Mix spiced rum and butterscotch liqueur with hot chocolate in a glass mug. Add a dash of orange bitters. Top with whipped cream and garnish with shaved chocolate.

Interdiction? It is the legal process where a court judicially declares a person incapable of managing his/her person, affairs or both. Most often, a loved one becomes unable to consistently make reasoned decisions due to an illness, like Alzheimer’s or dementia. The end result of an Interdiction is a Judgment that removes powers from the interdicted person to enter into legal agreements. Instead, the court appoints a representative, a Curator, who acts under the court’s supervision on behalf of the interdicted person. Why worry about Interdiction? The Alzheimer’s Association provides that in 2018, 5.7 million people live with Alzheimer’s, but this number is forecasted to increase to 14 million in 2050. Often, when someone attempts to help a loved one suffering with such an illness, that person will hit roadblocks with financial and insurance entities, medical providers, and government offices, especially without a Power of Attorney or Judgment. Thus, these helpers often realize the only remaining option is an Interdiction, which is a legal suit filed against the person who is no longer able to consistently make reasoned decisions. This process can be very expensive, requiring medical evidence and testimony, and like most legal matters, the process can be very stressful. So how can Interdiction be avoided? A properly drafted Durable Power of Attorney most often alleviates the need for interdiction. This type of power of attorney remains in effect despite later incapacity. The principal can also name the agent to serve as a Curator, if necessary, and that provision can alleviate others from needlessly filing an Interdiction. The Power of Attorney is a very cost effective, and arguably, the most necessary estate planning tool.

As part of our ongoing commitment to maintain a high quality of life for our citizens through cost effective, innovative systems, I am proud to announce that the City of Mandeville has purchased new water meters from Aqua Metric, a division of the Thirkettle Corporation. This advanced metering system will eliminate monthly manual meter reads and provide timely water usage data regardless of weather conditions or power outages. It will also improve leak detection and our ability to serve customers. Advanced metering supports the City’s commitment to preserving and protecting our environment in a number of ways, including reducing carbon emissions by taking meter reading vehicles off the road. This enhances our ability to quickly detect and stop leaks and provides customers with daily information on water use so that they can improve their efforts to conserve. It will also enable the City to be more efficient by effectively relying on advanced radio technology. The installation project has begun and residents will have minimal interruption in their service. Homeowners will be notified in plenty of time as to when the contractors will be entering their area for installation. They will also be properly identified. The wireless portions of the system will be operated according to Federal Communications Commission rules and will not interfere with other radio frequencies in the area. The transmitters use one quarter of the power of a cellphone. The upgrade has begun and will continue for several months to complete. Aqua Metric is a global leader in utility infrastructure systems and resource conservation, supporting the City’s commitment to maintaining a high quality of life for our citizens. City water will remain safe throughout the project.

Presidential Volunteer Service Award Archbishop Hannan High School is proud to congratulate senior Catherine Kurucar for being awarded the bronze-level Presidential Volunteer Service Award. Enriching Lives Through Art: The Vision of Joanne Gallinghouse WRITTEN BY SARAH KENNEMER

PEOPLE OFTEN ASK, does art matter? Is it worth funding? Is it worth studying? Joanne’s answer, without hesitation, was always yes. Her love for fine arts inspired her to bring this universal language to our community, by helping found the Three Rivers Art Festival. Joanne Gallinghouse was an incredible woman who had a devoted passion for self-expression, and encouraged the same in others around her. Joanne knew that art is an integral part in developing education, local culture, as well as entertainment. Throughout her life, she helped plant the seeds that have grown programs like Arts Alive, Children’s Discovery and many more. Joanne had a vision of enriching the lives of those around her with cultural awareness and diversity through all forms of art. Leo Tolstoy, the author of War and Peace once said, “Art is the activity by which a person, having experienced an emotion, intentionally transmits it to others.” This is the epitome of what Joanne achieved when she helped the Three Rivers Arts Festival come to fruition. From branding to marketing, Joanne invoked inspiration through her businesses as well as the local programs she supported. Although some may regard art education as a luxury, simple creative activities play a crucial role in early childhood development and education. The improvement of fine motor skills, language development and academic performance is directly linked to participation in the kinds of programs Joanne put her heart into. She understood that the children of today will become the leaders and innovators of tomorrow. A great innovator and influencer herself, Joanne was ahead of her time. She knew it was important to create a hub for local artists, aficionados and the future creators of St. Tammany Parish. Joanne laid the fundamental foundations for economic growth of the future through fine arts and was a mentor to women in both business and leadership roles within the St. Tammany Parish community. This year as we celebrate local artists and our rich culture at the Three Rivers Art Festival, Joanne’s absence will not go unnoticed. The care and appreciation that has gone into making the Three Rivers Arts Festival foundation a success will surely be missed by those who knew her best. Joanne was a rare person filled with warmth and light, and as we walk down the streets of our town, finding our inspiration, we will remember her and carry her in our hearts. We are thankful for a woman who laid the foundation for a better future for women in business and the people of our community; she was a true visionary. Most of all we are thankful for her friendship, her passion, and zest for living life to the fullest. Thank you, Joanne. The Three Rivers Art Festival will be held from Saturday, November 10th through Sunday, November the 11th. This festival is a non-profit organization that is run by a volunteer board and part-time coordinator, supplemented by more than 150 additional volunteer committee members and workers. 42 Sophisticated Woman | November 2018
