Tell Me About it! Onion rings are a popular appetizer or side dish in both British and American cuisine. Typically, they are made by coating cross-sectional rings of onion in a batter or breadcrumbs, which are then deep-fried. An alternative variant involves using onion paste. Though commonly served as a side dish, onion rings are also served as a standalone snack with and interesting sauce or dip.

Chef Tip

Onion rings are always better when they are cooked in a clean high quality fryer oil. 365F-375F is the perfect cooking temperature range. And remember, when the onion rings float to the surface of the oil they are ready to be served. The difference between a good onion ring and a great one is in the small details.

ONION RING BATTER 2 large onions, cut into rings 1 cup all-purpose flour 2 tablespoons all-purpose flour 1 cup milk 1 egg 2 tablespoons vegetable oil 1 teaspoon salt vegetable or canola oil for frying To Prepare Scratch Onion Rings Follow These Steps: Soak onion rings in a bowl of ice water for an hour, then drain and gently pat dry with paper towels In a separate bowl, whisk together 1 cup plus 2 tablespoons of flour, milk, egg, 2 tablespoons of vegetable oil, and salt until you get a smooth batter. Heat oil in a deep fryer or large saucepan to 375 degrees F (190 degrees C). Dip the onion rings in the batter, working in batches to ensure even coating. Then, place them in a single layer on a plate. Fry the battered onion rings in hot oil in batches, until they turn golden brown and crispy, which should take about 5 minutes. Once cooked, transfer them to a paper towel-lined plate to drain any excess oil. Enjoy!

Tell Me The Chicken Wings Story... The origin story of the beloved chicken wing is quite fascinating. While deep-fried chicken wings have been a staple of Southern U.S. cuisine, the idea of incorporating peppery hot sauce was first introduced in 1964 at the Anchor Bar in Buffalo, New York. The credit for this invention goes to Teressa Bellissimo, the co-owner of Anchor Bar, who prepared leftover wings with hot sauce as a late-night snack for her son and his friends. The dish received such a warm reception that Bellissimo included it on the menu the next day. Served with celery slices and bleu cheese sauce, these spicy wings, christened as "Buffalo Wings," quickly gained immense popularity and became an instant classic.

Since people tend to compare burgers to their past experiences, it's essential to select the ground beef thoughtfully and pay equal attention to the toppings and cheese to complete the package. If you’re unsure of what ground beef to choose, keep in mind the “lean point”. The lean point is the ratio of lean beef to fat. An example of this is 86/14. That’s 84% lean beef to 14% fat.

PASTA ELBOWS + MEAT SAUCE Being In The Midst Of Winter Doesn't Have To Be Such A Bad Thing. Comfort food is king this time of year and one of the best ways to help your customers fight the winter blahs is a piping hot bowl of pasta.

Yield: 8 servings

Meat Sauce RECIPE

1 pound ground beef (72/25)

6oz tomato paste

1 medium onion, chopped

2 teaspoons dried oregano

4 cloves garlic, minced

2 teaspoons dried basil

1 small green bell pepper, diced

1 teaspoon salt

28oz diced tomatoes

½ teaspoon ground black pepper

16oz Marinara Sauce

Combine ground beef, onion, garlic, and green pepper in a large saucepan over medium-high heat. Cook and stir until meat is browned and crumbly and vegetables are tender, 5 to 7 minutes. Drain grease. Stir diced tomatoes, tomato sauce, and tomato paste into the pan. Season with oregano, basil, salt, and pepper. Simmer the sauce for 1 hour, stirring occasionally. Serve hot over elbow noodles.

PIZZA DOUGH Yield: Two 12-inch pizzas 153grams 00 flour (1 cup plus 1 tablespoon) 153grams all-purpose flour (1 cup plus 1 tablespoon and 2 teaspoons) 8grams fine sea salt (1 teaspoon) 2grams active dry yeast (¾ teaspoon) 4grams extra-virgin olive oil (1 teaspoon) The following steps outline how to prepare pizza dough:

In a large mixing bowl, combine the flours and salt.

In a small mixing bowl, stir together 200 grams (slightly less than 1 cup) of lukewarm water, yeast, and Arrezzo Olive Oil. Pour this mixture into the flour mixture. Knead with your hands for around 3 minutes until the mixture is well combined. Let the mixture rest for 15 minutes.

Knead the rested dough for an additional 3 minutes. Cut the dough into 2 equal pieces and shape each piece into a ball. Place the dough balls on a heavily floured surface, cover them with a dampened cloth, and let them rest and rise for 3 to 4 hours at room temperature or for 8 to 24 hours in the refrigerator. If you refrigerate the dough, remove it from the refrigerator 30 to 45 minutes before shaping it for pizza.

To prepare the pizza, place each dough ball on a heavily floured surface and use your fingers to stretch the dough out, and then use your hands to shape it into rounds or squares. Add your desired toppings and bake.

TRUFFLED GNOCCHI + SHAVED PARMESAN Yield: 4 Servings

Ingredients 2 potatoes, peeled 2 cups all-purpose flour 1 large egg parmesan to taste truffle oil to taste To begin, bring a large pot of salted water to a boil. Add the potatoes and cook for approximately 15 minutes until they are tender yet firm. Once cooked, drain and allow them to cool before mashing them with a fork or potato masher. In a large bowl, combine 1 cup of mashed potato, flour, and egg. Knead the mixture until it forms a dough ball. Next, take small portions of the dough and shape them into long "snakes". On a floured surface, cut the snakes into 1/2-inch pieces. Bring another large pot of salted water to a boil and add the gnocchi. Cook for 3 to 5 minutes or until the gnocchi rises to the top of the pot. Drain the gnocchi and toss it in a bowl with truffle oil. Plate the gnocchi and top with parmesan cheese.

SOUTHWEST BEAN SOUP 1 large onion, chopped 1 teaspoon canola oil 30 oz black beans, rinsed and drained 28 ounces diced tomatoes 28 ounces chicken or vegetable broth 16 ounces garbanzo beans, rinsed and drained 15 ounces navy beans, rinsed and drained 1-1/2 cups fresh or frozen corn 4 garlic cloves, minced 1-1/2 teaspoons ground cumin 1-1/2 teaspoons chili powder 1/8 to 1/4 teaspoon hot pepper sauce

In a stock pot saute the onion in oil until tender. Stir in the remaining ingredients; bring to a boil. Reduce heat; simmer uncovered, for 5 minutes or until heated through.

BLACK BEAN + GUAC BURGER Yield 6 Burgers

Patty Recipe (Toppings In Appendix)

28 oz black beans, drained, rinsed, and patted dry 1 Tablespoon extra virgin olive oil 3/4 cup (100g) finely chopped bell pepper 1 cup (130g) finely chopped yellow onion (1/2 of a large onion) 3 garlic cloves, minced (about 1 Tablespoon) 1 and 1/2 teaspoons ground cumin 1 teaspoon chili powder

1/2 teaspoon garlic powder 1/4 teaspoon smoked paprika 1/2 cup (60g) bread crumbs 1/2 cup (70g) feta cheese 2 large eggs 1 Tablespoon Worcestershire sauce 2 Tablespoons ketchup, mayo, or BBQ sauce pinch salt + pepper

Preheat oven to 325°F (163°C). Spread beans evenly onto a lined baking sheet and bake for 15 minutes until slightly dried out. Meanwhile, sauté olive oil, chopped pepper, onion, and garlic over medium heat until peppers and onions are soft, about 5-6 minutes. Gently blot some of the moisture out. Place in a large bowl or in a food processor with the remaining ingredients (cumin, chili powder, garlic powder, smoked paprika, bread crumbs, cheese, eggs, worcestershire, ketchup, salt, and pepper). Stir or pulse everything together, then add the black beans. Mash with a fork or pulse the mixture, leaving some larger chunks of beans. Form into patties, about 1/2 cup (130g) of mixture each, about 3/4-inch thick. To bake: Place patties on a parchment paper-lined baking sheet and bake at 375°F (191°C) for 10 minutes on each side, 20 minutes total. To grill: Place patties on grill 8 minutes on each side. Heat temperature is personal preference as all grills differ. Generally, black bean burgers should grill on medium-high heat about 350°F (177°C) – 400°F (204°C). Serve with your favorite toppings like Casa Solana Zesty Guacamole.
