Simmental Cross Helps Combine Performance & Efficiency
O
Story By Lee Hart
wen Almberg along with his family partners of Lazy HE Ranch are expecting to have at least 1,650 good reasons to continue with a crossbreeding program that has well served their multi-generation family ranch over the past 30 years. All things being equal, the Lazy HE Ranch located in Czar, Alberta should be weaning around 1,650 calves at the end of October. Their crossbreeding program with three breeds — Simmental, Hereford, and Angus — produces excellent calves on their extensive family ranching operation in the scenic rolling, prairie hills. “They are not necessarily what some might call high performance cattle, but they do very well on these dryland pastures,” says Almberg, who along with his wife Lyanne, is part of the fourth generation. “The calves from these mid-size cows are healthy, vigorous and grow well. When buyers look at these calves they are always impressed with the nice uniform groups, and they know will perform well in the feedlot.” The ranch has deep roots in the Czar area. Owen’s great grandfather homesteaded in the area in 1911. The Lazy HE Ranch name was created by the Almberg family in 1960. At one time they raised straight British breed crossbreds — Hereford, Angus and Shorthorn — then as the exotic or Continental breeds appeared in Canada they included a combination of Simmental and Charolais in their breeding program. Roughly 20 years ago they decided to focus on Hereford and Angus crossed with the Simmental influence.“What we were really looking for were maternal characteristics,” says Almberg. “Yes, we wanted growth and performance, but we also wanted females with good mothering abilities, structural soundness, excellent udder quality and manageable temperment. Along with those features we felt the Simmental influence also added that extra “style” that we desired.” Four Breeding Herds With a large number of females, the Almberg’s have developed four different breeding herds. They have an Angus-sired cowherd that is bred to black Simmental, a Hereford-sired cow herd that is bred to black Simmental,a solid red and black Simmental cow herd bred to polled Hereford bulls, and a white/brockle faced Simmental cowherd bred to black Angus bulls. “What we are working towards in this breeding program is to develop females that are 50/50,” says Almberg. Females that are 50% British breed and 50% Simmental. This is something that takes years to develop. Over time, cows have been culled heavily to select for performance, structural soundness, udder quality and temperament. An 80 head bull battery consisting of roughly 30 Simmental bulls is selected from trusted purebred programs for performance, style, athletic ability and other traits, including a good heavy hair coat that protects cattle from the some times harsh winter prairie winds. The 2018 calving season is a few months away at Lazy HE Ranch. They start calving on pastures within fivequarter sections in mid-April, with the last calves being delivered on pasture by mid-June. After fall weaning all ranch calves are backgrounded until mid to late winter the following year before being marketed.“We are fortunate to have accumulated a land base to accommodate the various herds,” says Almberg. “Nothing is calved in the yard, always out on large calving pastures with dry rolling hills, covered with grass and brush. While we are checking and tagging regularly, we have developed and managed a herd that largely calves on its own with minimal assistance. This is very important as there can be as many as 75 calves per day when things get rolling.” With calf birthweights ranging from 80 to 100 pounds depending on the breeding program, Almberg says it is an easy-calving herd with as few as perhaps two dozen calving assists over the season. Once calving season is underway, the ranch begins sorting the herd. They do two or three sorts during the season

pulling the females still to calve from the cow-calf pairs, and moving the yet-tocalve cows to fresh ground. Later during the calving season, they sort to assemble females into their breeding groups for branding and just ahead of the breeding season. “Fortunately we have a land base that provides lots of room to get cow-calf pairs out to nearby pasture before they go to summer pasture,” says Almberg. Their summer pasture is a mix of native grass with some older tame grass species mixed in. With their pastureland assembled in reasonably close proximity to ranch headquarters, all cattle can be trailed to summer pasture.
Calves Are Backgrounded
Calves are weaned in late October and moved home to backgrounding facilities, while cows can remain on pasture until December when winter feeding begins. One of the advantages for Lazy HE Ranch is already supply of naturally irrigated, native species of grasses which is put up for hay. Along the Ribstone Creek that runs through part of the ranch are native hay meadows that flood each spring. There are 3,000 acres of the meadow along the creek, with about 1,200 acres of those owned by Lazy HE Ranch. “That naturally irrigated hay land is really a key asset to our operation,” says Almberg. “It is an all-natural system that functions the same today as it did 100 years ago.” Once the water recedes and the meadows dry out, the ranch can put up most of the hay it needs for the winter. As the herd has grown over the years they also produce other supplemental feed. Calves weigh in on an average of 550 pounds at weaning and are put into a backgrounding operation. Along with their own calves they also buy calves to fill their 2,300 head backgrounding feedyard. The ranch used to finish all their cattle as well, but for the past 10 years they have stayed with backgrounding. Steer calves are marketed in groups, usually right off the ranch, as they reach about 850 pounds. Among the heifers they keep about 350 to 375 for replacement females. Another 120 to 150 head of good heifers are marketed as either open heifers to be bred, or as bred heifers. Younger and lighter heifers are backgrounded on grass and sold to finishing feedlots.
Quality Stays In Style
Lazy HE Ranch has long maintained a philosophy to produce good quality, good performing, uniform cattle that will perform well whether they are steers going into a finishing feedlot, or replacement heifers going into a breeding program. The Simmental characteristics and performance has worked well with the efficient British breeds to produce a desirable package.“The cattle are matched to perform under the ranch and forage resources we have here,” says Almberg. “We haven’t chased after producing big, high performance cattle but more moderate sized cattle. Sometimes the industry gets chasing after certain fads, but fads come and go. I have always maintained that good never goes out of style.” He says that philosophy seems to appeal to repeat customers who come back year after year to buy steers for finishing feedlots or replacement heifers. Lazy HE Ranch has been evolving over the past 60 years. Marginal farm land has been seeded to grass and they have been fortunate to purchase land near home. As more family members of the fourth and fifth generations have joined the operation, the ranch has increased cattle numbers. “As we have grown in recent years we probably haven’t culled as heavily as we could have,” says Almberg. “We have a very sustainable operation today in terms of land base and herd size, so we
12
don’t have plans for any major expansion. For the next couple years, at least, our focus will be on fine tuning and managing our breeding program to maintain and improve cattle quality.” While Almberg says the beef breeding industry has done an excellent job in producing cattle that work for commercial cow-calf producers, he does have one project he would like them to work on. He notes, for example, that Texas Longhorn cattle aren’t noted for producing a lot of milk, but it is high quality. Whereas some of the other breeds, including the Continental breeders, can be high volume milk producers.“Udder soundness is a challenging management issue when calving on green grass,” says Almberg. “I would like to see neat tidy udders, producing high fat milk, resulting in lower cull rates due to high volume milk production. The industry has excellent quality cattle now and perhaps with the use of genomics this is some of the fine tuning that could be looked at.”
Lazy HE Ranch Generations
Building an extensive, multi-generational ranching operation doesn’t happen overnight. The roots of the Almberg family that operates The Lazy HE Ranch near Czar, Alberta first took hold on Alberta soil more than 100 years ago, says Owen Almberg — he’s of the fourth generation. It was his great grandfather (first generation) who first homesteaded in the Czar area in 1911. His grandfather and grandmother, Harold and Ruby Almberg (second generation) began ranching in 1936 near the current location of Lazy HE Ranch. Harold and Ruby had two sons, Gary and David (Jick) (third generation) who became active in the ranching operation in the 1960s. In the early 1980s joining Gary and his wife Elaine on the ranch were their sons and their wives — Craig and Jackie as well as Owen and Lyanne. While in the 1990’s Jick’s oldest son Mark and his wife Charlotte (fourth generation) joined the operation. Craig’s son Dayton and Owen’s son Aydon are the fifth generation on the ranch. Mark’s son is looking forward to joining the ranch soon.

Simmental – So Much to Offer
appy New Year and welcome to the first Commercial Country magazine of 2018. A new and promising year lies ahead, however I thought it would be useful to reflect one more time on the 50th Anniversary of Simmental in Canada. Many events were held across the country, from British Columbia to the Maritimes during 2017, celebrating the successes of the Simmental breed in Canada. During these events, it was interesting to visit with some Simmental producers who had been involved with the Simmental breed for many years, and had seen the changes made to the breed. Many of them commented on how Simmental has gained popularity with commercial producers across the country and that “the Simmental breed in Canada has come a long way since 1967” was a comment heard more than once. For those of you who may be new to the cattle business, or are new to using Simmental genetics, it might come as a surprise that the Simmental breed was not always as popular or as well received in the commercial beef cattle sector as they are today. There in fact was a time when Simmental influenced cattle were hard to sell, and were often sold at a discount to other breeds. While Simmental cattle have gained a strong foothold in Canada in the 1970’s, during the next two decades, some Simmental breeders lost sight of the practicality and convenience that was needed to make further inroads into Canada’s commercial cowherds. My how that has changed. Top quality Simmental calves throughout the fall of 2017 brought premiums, and were in high demand across Canada. 2017 calf prices exceeded many people’s expectations and the extra pounds delivered by the Simmental-cross calves increased the take home pay in all cases. Extra pounds per calf paid, and they paid well; buyers in the front row at the auction marts were looking for Simmental calves, and were paying a premium! Why is that? Order buyers know that today’s top quality Simmental cross cattle feed well while providing the yield and will grade to fit today’s market demands. Simmental breeders listened, and learned, and have selected the genetics that produce the cattle to fit the demand.
24
Nowhere was the Simmental presence noticed more than at one of the highlight events this fall, the Canadian Western Agribition Commercial cattle show and sale. Simmental genetics were found in almost every single pen in the barn, the show winners and high sellers all carried Simmental influence. The Grand Champion and Reserve Champion pens of open replacements were Simmental-cross and sold for $2,900 and $2,600 per head. In the bred heifer division, the Grand Champion pen of 5 bred heifers sold for $3,400 each with the Reserve Champion pen selling for $3,300. What was especially great to see was the pens of Simmental-cross females that were bred to easy calving Simmental bulls. Yes that’s right, people are now breeding their heifers to Simmental and Simmentalcross bulls! Other bred commercial female sales this fall also saw some strong prices on the top end females, and with that we also saw some excellent opportunities for those who wanted to add top quality females to their herds. One thing was clear, the maternal influence of the Simmental cow is in demand and brings a premium. It is also evident that there are good opportunities for British based cowherds to use Simmental bulls and sell the crossbred heifers into the replacement female market. The weight gain that will be realized on the steer calves makes for a double win! As we have witnessed in every part of the country this past fall, quality is rewarded in all aspects of beef production and it has never been more important to have more pounds of calf to sell than it is now. The most cost effective way to gain more pounds is through cross-breeding, and no other breed provides more opportunity to increase profitability for today’s beef producers than Simmental. Whether you are looking for a group of quality replacement females, or need a bull that can add performance to your program while still providing calving ease and convenience, contact a Simmental breeder and discover how the Simmental advantage can benefit you. Simmental discover why no other breed offers so much!

Neither Diamond B nor Grinalta were in the need of another bull... but when we studied this bull in the catalogue we both felt he was a rare find. He possesses all the most important traits in one package. Pillar’s pedigree on both sides possesses excellent, proven and popular genetics. Captain Morgan progeny have made him a breed leader, siring cattle with performance that are easy to market, plus excel in competition. A Captain Morgan son achieved the almost impossible task of winning Grand Champion Simmental Bull at Prince Albert, Lloydminster, Farm Fair and Agribition 2017. Pillar’s dam, Tara Lynn 79Y is a productive daughter of Sun Rise and Maxwell’s proven Tara 7P flush cow who shows up in the pedigrees of many top females and herd bulls. 79Y is sired by Springcreek Liner 56U whose daughters are known for producing sale toppers and replacement females for the LaBatte, Spring Creek, Sun Rise and Oberle Bros. programs. Liner 56U semen has only been made available to the public one time, selling for $600 per straw at Agribition 2017. A 56U daughter produced embryos by a Captain Morgan son that brought $3,400 per embryo in the same sale. Pillar combines an 86-lb. birthweight with very well-balanced EPDs indicating desirable calving ease and maternal calving ease numbers, a weaning weight EPD in the top 10%, and a yearling weight EPD in the top 1% of the breed. He had a 1,705-lb. sale weight with 42 cm. testicles and produced exceptional semen quality. To complement his pedigree and genetic package Pillar has exceptional length, moderate framed, a desirable calving ease shaped head, smooth shoulders and moderate bone. He’s full in the heart girth, straight-topped, with natural muscling and deep, full hind- quarters. He moves freely with a long stride, on sound feet, and is an active breeder. He has proven to be very docile and easy to handle. We feel he combines so much power into one package, plus potential calving ease throughout his entire profile and early CDN Semen Prices: gestation(hereditary)..making him unique. We believe you can not pay too much for the good ones...herd improvers $50 per dose $40 per dose for 20+ doses always pay the most dividends in the end! Breed Improvement
The Nuts and Bolts of BOLT By: Sean McGrath, Breed Improvement Consultant
H
opefully by now many of you have heard of the new genetic evaluation technology being worked on at International Genetic Solutions (IGS), our genetic evaluation provider. IGS currently calculates most of the EPDs for Canadian Simmental cattle using a multi-breed evaluation model developed at Cornell, roughly 20 years ago. While the system has had upgrades and new science added to it over the years, it is still at its most basic a well maintained, but an old piece of technology. The BOLT system offers a new solution to the problem of genetic evaluation with newer methods, more computing horsepower and the ability to apply a lot more detailed science to the genetic evaluation. To give an example, under the Cornell system, a “growth run” where we calculate the EPD for growth traits for Simmental cattle, took roughly 5 days of computing time. With BOLT, we are looking at roughly 20 minutes to conduct the same type of calculations on the same group of animals.
calculating just in time for the next one to start in 6 months. BOLT provides the computing horsepower that lets us apply new and up to date science into the evaluation, particularly in the form of DNA data. In the Cornell model we calculate EPDs using pedigree and performance data, and then adjust those EPDs up or down based on the reading of the DNA test results. The BOLT model uses the EPD test results directly with pedigree and performance data to directly and accurately calculate the animal’s relative genetic merit. You may hear the term “Single Step” when people refer to BOLT, and this is exactly what it means. We do the math on pedigree, performance and DNA all together, rather than the old method of adjusting the EPDs using DNA results after the fact.
A good example of why we want to implement the BOLT system, is the first trait published from BOLT; sustained fertility. The new stayability evaluation was developed from work done by the Canadian Simmental Association through the CSA Innovations project. The stayability model uses new To put it into perspective, the Cornell system has been science and calculates a better prediction of stayability or upgraded over the years from a rotary dial to a push button sustained fertility than the old system. Previously, evaluation wall phone. BOLT by comparison is a new IPhone. I am sure for longevity was treated as a success or failure that a cow many of our Junior members have never even seen a rotary would reach a certain age in the cow herd. If a cow exited dial phone, let alone used one. It is time for an upgrade. at age 5 she was a failure, if she stayed to age 6 a success. If she stayed until age 10 she was given the same credit as the Members might reasonably ask, “if the Cornell system 6 year old. works then why are we investing in a new evaluation?” The answer is a bit complicated but also very simple. In the With the new methodology, cows receive credit for calves past, genetic evaluations used a few pieces of data. Pedigree as they progress through the herd. In other words, a 5 year (Mom and Dad), basic performance measures, such as birth old is given more credit than a 3 year old and less than a 10 or weaning weight and deviation of that performance from year old cow. BOLT is better able to better define differences the contemporary group average. An animal that was fully between genetics for longevity. The additional benefit is reported on would receive roughly 5 to 10 pieces of its own that the model can now include DNA information directly. individual data and possibly 20 if the owner ultrasounded and Previously, in order to know that a cow had decent odds of collected a few additional measures such as calving ease or making it through several years of timely calving, we had to mature weight. The Cornell software handles that level of wait several years and record timely calvings. Now, we can information quite well. Enter DNA. When you order a 50K collect a DNA sample before she ever has a calf and have a test from the Canadian Simmental Association, and send a pretty good source of information as to her potential level of hair sample in on an animal, that animal will receive data on success at remaining a productive cow in the herd. In fact, roughly 50,000 individual pieces of DNA. That is like adding in the case of stayability, the DNA sample provides as much an additional 50,000 weaning weight records on an animal. information as waiting for those multiple calves. As breeders, Remember how we said the Cornell model takes roughly 5 this lets us shave years off the selection process, providing days to run now? If we were to add 50,000 pieces of DNA the benefits to our customers a lot faster. The CSA’s project information to a few animals, the EPD run would finish work that provided the backbone for the BOLT evaluation 34
of stayability, and represents the first multi-breed, single step evaluation for sustained cow fertility in the beef industry. One of the other key components of BOLT is its ability to better reflect how much “useful” data is included in an animal’s EPD. This is expressed as accuracy. Previously, accuracy was calculated as an “estimate” of the volume and quality of data that was included in the calculation of an animal’s EPD. While this gave a pretty good indication of the reliability of the EPD (the associated risk in using the animal for breeding), it was an estimate and sometimes overpredicted the confidence with which we should use an animal in our program. The new BOLT system calculates the accuracy directly. This is made possible simply by the methodology and computing horsepower of the new system. It does mean that Simmental breeders may see some accuracy values appear to drop, however the new accuracy values are a much better, direct measure of the volume and quality of data that is contributing to the individual animal’s EPD. This lets us assess the risk level of using an animal in our program a lot more effectively. It is a bit difficult to wrap our minds around, but the new lower calculated accuracy values provide a better risk management tool than the previously overestimated accuracy values. Because BOLT is able to run much more rapidly, our goal over time is to move towards more frequent EPD evaluations. This means that if errors are found, such as the wrong sire being entered, that the pedigree and the EPD can be corrected in short order rather than waiting for the next evaluation in 6 months. It also means that new performance data can be added in continuously. Miss the weaning deadline? No problem, there will be a new run in a couple of weeks. It also means that BOLT will be continuously able to add new DNA test results into the evaluation so that we can add as much informative data about an animal as rapidly as it is collected and reported. There will be a lot more to read about BOLT moving forward, and the plan is to implement the new BOLT evaluation for all the traits over time. Currently the system is in the testing stages for both inputting data and examination of results. On the ground what it means is that the EPD will be calculated more quickly using more information and thus the evaluation will provide a better and more timely reflection of an animal’s relative genetic merit. The results will be EPD. These EPDs will be basically the same tools you know how to use already, expressed in the same units you are already familiar with. A WW EPD of 60 will still be 10 pounds more than a WW EPD of 50, but it will be calculated with a lot more information behind it. Some animals will have their EPD change when we use more information, but most will rank pretty close to the same within the population. Watch for the rollout of the BOLT evaluation over the next several months, and please do not be scared to ask questions when you see the results.

A
full breech birth during calving time is one malpresentation most veterinarians still need to be involved in. A full breech birth is also referenced as true breech, which is when the calf is presented tail first with both back legs pointing forward under its body. A lot of producers refer to a straight backwards calf as a breech birth, which is a misnomer. The true full breech birth is when the calf has both back legs forwards so the first thing you feel when exploring the cow’s vagina is the tail, rectum or the back side of the hind legs. In smaller calves the tail may even be visible outside the vulval lips. With today’s easy calving herds we seldom experience problems, but a breech birth will almost always require an assisted intervention. On very rare occasions, I have seen some large cows be able to have a full breech calf, but the labor is long and in variably the calf is dead. One should be very mindful of cows, which normally calve easily taking too long; as in nothing presented in 1-1.5 hours. That time frame is a good indication that something is wrong. If nothing is presented a breech calving, torsed uterus or other malpresentation would be tops on my list. Always keep track of the cows, which have had twins in previous years as they have a propensity to twin again. Some producers generate a list of cows that twinned previously to keep a special eye on them. Cows early in gestation or better yet, if ultrasounded with twins should be closely watched. The most common position for twins is to have one backwards and one forwards, so a breech birth is a far greater possibility on average with twins. I don’t have any hard, fast statistics but in our practice I would say well over three quarters of the breech births we see are on twins, and we are called in for the vast majority of these breech births. In some twins, both will be presented full breech. With extra assisted calving, check for a twin but that is especially true in a backwards calving. When examining a breech calving, often the water bag has not been broken as the cow can’t get enough of the calf out through the back end to break the water bag. The water bag has to then be broken, and the position of the calf exactly determined. Producers may want to check if the back legs are straight forward in a full breech, or if the legs are half bent back. In other words, the hocks are partially back in the pelvis and there is essentially already partial correction before delivery. These presentations I refer to as being a partial, or 44
half breech. These half breeches are not as jammed into the pelvis, as the cow can’t push the entire blocky mass of butt and legs to the back. For that reason, they may be easier to correct and the bottom of the foot protected as it is brought around to create a straight backwards calving. The reason I say most breech presentations are veterinary emergencies is because there is a lot of opportunities for things to go wrong. First off, time is of the essence, considering majority of the time the cow has not gone into full labor to be noticed until it is almost too late. Many of the breech calves are dead before we start, and if that is the case rather than risk damaging the cow, we may perform a fetotomy and cut both back legs off and deliver the calf that way. Most veterinarians are very careful when bringing the back legs around. We need to protect the underside of the hoof as it is brought around to avoid holes being created in the uterus. In some cases, we have been called out where there has been excessive intervention and the uterus already has a major tear in it from the breech calf being pushed forwards in attempting correction. In severe cases, the calf may be pushed right out through the tear, and into the abdomen. With these cases once the calf is delivered often the uterus is amputated as these tears often extend upwards towards the cervix. Veterinarians use a combination of techniques, equipment and knowing when to be aggressive and when to be gentle in order to flex the backlegs and bring them around. Sometimes with smaller calves, or when one twin is breech an experienced producer will correct them. Only attempt this if you are very experienced. Murphy’s Law says if it is twins most commonly the first one is backwards or breech. Another complication to this could be that the umbilical cord is wrapped around the leg that you are repositioning. It is also very hard to tell at times if the calf is still alive, and if the legs start violently thrashing that may be a sign the calf is dying. I have seen instances where the rectum is prolapsed on the calf from the cow straining so much, and yet we delivered a live calf. Other times, a long dead first breech twin is followed by a very alive second calf. You never know until you examine them thoroughly, and if you need help don’t hesitate to call. As mentioned previously, this is the most common malpresentation veterinarians are called in for as we can give epidurals to relax the contractions, and have learned techniques to correct these tough malpresentations. Diligence at calving and watching for subtle signs may allow intervention, and saving breech birth or other malpresentation calves. Here’s to a great calving season in 2018. May your calves be vigorous, suckle quickly and grow.

2017 Simmental Federation of the Americas Conference & Innovations Workshop
A
long with the finale to the Canadian Simmental Association’s 50th Anniversary celebrations at the 2017 Canadian Western Agribition, there were several off grounds activities that featured the Simmental breed. The week-long event and activities involved brought together International guests from Colombia, the Czech Republic, Wales, United States, and Australia along with breeders from across Canada. The week began with an informal “meet and greet” social Monday evening. Tuesday was highlighted by the Simmental Innovations Workshop which featured speakers from across North America who touched on a variety of subjects relating to genetic improvement in the beef industry. Although the attendance from
56
Simmental breeders was disappointing, we were joined by representation from other breeds who were eager to learn about the new tools available to them, as well as how and why they are used. Thank you to all our sponsors, and especially the Friends of Canadian Simmental Foundation who supported this educational event. The workshop led into the CSA’s 50th Anniversary banquet, which saw over two hundred people who have been involved in the Simmental breed gather to reminisce and celebrate the success of the Simmental breed. Our capable emcee, Doug Sauter had many stories and kept the evening entertaining. The Golden Book award was presented to the Canadian Simmental Association by World Simmental Fleckvieh Federation President, Fred Schuetze. There were also special recognition awards on
behalf of the Colombian Simmental Association and the Czech Fleckvieh Breeders Association in appreciation for the CSA’s development of Simmental in Canada. Bruce CSA General Manager was also recognized by the Colombian Association for his assistance in developing the Simmental breed in Colombia and around the world. Another highlight of the evening was the induction of CSA past President Brian McCarthy, along with Jim and Agnes Asher to the Canadian Simmental Hall of Fame. Wednesday was a day at Agribition which featured an extremely strong Canadian National Simmental show and 50 for 50 Simmental sale. Both were huge successes with standing room only crowds that created a real buzz in the air and made you proud to be in the Simmental breed. Congratulations to the Saskatchewan Simmental Association for running a first class event. Thursday began with a stop for the International delegates at the Saskatchewan Legislative building where the group was introduced at the morning sitting by Agriculture Minister, Lyle Stewart. In his address he spoke of Simmental and the impact the breed has had on the beef industry over the past 50 years. The opposition also rose and congratulated Canadian Simmental and
a comment was made that it was great to see everyone in the Legislature agreeing on something. A delegates meeting was held Thursday afternoon to discuss issues and structures of the Simmental Federation of the Americas member countries. These discussions always provide value in better understanding the structure of Simmental Associations in the various countries, as well as the challenges some face from market pressures or Government regulations. An evening at the Agribition Pro Rodeo was enjoyed by all, and completed the day. Friday included a tour at Double Bar D Farms in Grenfell, Saskatchewan. As always they were tremendous hosts and allowed everyone to see all aspects of the Simmental breed that are available in Canada. After returning to Regina there was a guided tour at the RCMP Heritage Centre and then it was back to the Double Tree Hotel for an informal farewell dinner before the delegates returned home. “Simmental was on the move” on many fronts during this year’s Canadian Western Agribition. Congratulations to all who participated, a special thank you to our sponsors as well as the volunteers and CSA staff that assisted throughout the week.

Cowboy Cupcakes
These little lasagnas are easy to make and are the perfect nosh for game night at home or a tailgate party out at the field.
INGREDIENTS 1 lb (0.45 kg) ½ cup ½ cup 1 cup ¾ cup 2 tbsp 1 tbsp
24 1 cup EACH
Lean or Medium Ground Beef minced onion minced mushrooms pasta sauce ricotta cheese chopped fresh basil minced green onion or chives Salt and pepper wonton wrappers grated Parmesan and shredded mozzarella cheese
DIRECTIONS 1. Pan-fry ground beef, onions and mushrooms thoroughly in large skillet. Drain if necessary. Add pasta sauce and heat through. 2. Meanwhile, combine ricotta with basil, green onion, salt and pepper to taste; set aside. 3. Spray a 12-cup muffin tin with cooking spray. Press a wonton wrapper firmly into the bottom of each muffin cup. Spoon in a scant 1 tsp EACH Parmesan, mozzarella, ricotta and top with 1 tbsp of the meat mixture. 4. Layer a second wonton into each cup and top each with approx. 1 tsp EACH of the cheeses. Divide meat mixture evenly among the cups (approx. 1/4 cup each). Top with additional grated Parmesan or mozzarella if desired. 5. Bake in preheated 375°F oven for 15 to 20 minutes or until edges are brown and cupcakes are bubbling. Remove form the oven; let stand 5 to 10 minutes. Use a knife to remove each cupcake from muffin tin. Ti ps • Cupcakes can be made ahead and frozen before baking. Bake from frozen for 25 minutes. • Be sure to buy wonton wrappers – NOT egg roll wrappers – wonton wrappers are the best size. If you haven’t used these wrappers before, you’ve got to give them a try – you usually find them refrigerated in the produce section where you find tofu. They work just like a lasagna noodle in these cupcakes, without the hassle of having to boil noodles Mexican Version: Use shredded Cheddar or Tex-Mex Cheddar cheese instead of the mozzarella. Add ½ cup salsa, 2/3 cup canned kidney beans (drained and rinsed), 2 tbsp chili powder and 1 tsp ground cumin to the meat sauce. Greek Version: Use crumbled feta cheese instead of the mozzarella. Add 1-1/2 tsp dried oregano leaves or Italian seasoning and ¼ tsp ground cinnamon to the meat sauce.

The Canadian Simmental Association introduced the Award of Excellence program this year to promote and highlight the over one thousand head that enter the show ring registered at Simmental cattle across Canada each year. The Awards of Excellence (AOE) program encourages breeders to travel between shows in different locations and provinces to show cattle as each provincial association is required to select two or three shows that will qualify for the Award of Excellence points program. Points were given based on the size of Simmental cattle entered in each show and following the final show- Canadian Western Agribition, the CSA had tabulated an Award of Excellence Show Female and Bull of the year.
