EGGCELLENT EASTER Eggs are basically synonymous with Easter – but they are versatile and can be used to create a perfect breakfast, lunch, dinner or dessert any time of the year. Here are a couple of good reasons to include eggs in your diet daily: THE TOP 10 HEALTH BENEFITS OF EGGS: 1. Protein is required by the body for the

growth, maintenance and repair of all cells. Eggs are valuable sources of high quality protein.

2. Eggs are inexpensive and therefore can be

used as an economical source of nutrition for all of us.

3. Eggs can help with weight loss or weight

maintenance due to its high protein content which is associated with increased satiety, making you feel fuller for longer. They also provide substantial amounts of vitamins and minerals but relatively few calories which can contribute to weight loss if taken as part of a calorie controlled eating pattern.

4. An egg for breakfast every morning has

shown to increase concentration for school children.

5. Eggs help to promote brain health. Choline

Eggs help to prevent cataracts and to protect eye

sight. Eggs are a good source of antioxidants that helps to keep our eyes healthy.

10. Eggs can help to protect our bones. They are one of the few natural food sources of vitamin D, our sunshine vitamin.Vitamin D is essential for calcium absorption and for maintaining optimum bone health. So I would say we all need an egg a day! We have now seen that eggs are good for your health. It is, however, very important to ensure that they are prepared in a healthy way. Here are a few low fat recipes for preparing healthy, enjoyable and interesting egg dishes:

LOW-FAT BAKED CUSTARD Serves 4-6 Ingredients: 2 Eggs 1 egg White 10ml Vanilla Essence 80ml Castor Sugar 500ml Fat Free Milk Ground Nutmeg

Method: Combine the eggs, egg white, vanilla and castor sugar in a bowl and beat until well combined. Heat the milk in a saucepan until just boiling and, while beating, pour the hot milk into the egg mixture. Strain the custard into a jug and divide the mixture between ramekins. Sprinkle with nutmeg. Place the ramekins into a roasting pan and pour in hot water to come half way up the sides of the ramekins. Bake at 160°C for 40-50 minutes until set. Remove and serve warm or refrigerate and serve cold.


LHZ[LY Dr. Seuss's GREEN EGGS & HAM Serves 4 Ingredients: 10ml Olive Oil 2-3 Leeks, sliced 5ml Chopped Garlic 150g Baby Spinach, washed 100g Lean ham, diced 8 Eggs, beaten Salt and pepper 60ml Chopped Parsley 180ml Low Fat Cheese, grated

Method: Heat the oil in a 22cm non-stick frying pan. Fry the leeks and garlic until soft. Add the spinach and let it wilt down. Stir in the ham. Pour over the eggs, seasoning and parsley. Sprinkle over the cheese. Turn the heat down very low and put a lid on the frying pan. Allow to cook until starting to set. Remove lid, and put the pan under a KHDWHG JULOO LQ WKH RYHQ WR ÀQLVK WKH FRRNLQJ DQG EURZQ the top. Slice onto a plate and serve in wedges.

TOMATO BAKED EGGS Serves 4 Ingredients: 4 large ripe tomatoes Salt 60ml Basil Pesto 120ml Grated Parmesan Cheese 4 Eggs

Egg in a Boat Method: Cut the tops off the tomatoes and scoop out the centres. Sprinkle with salt and leave to drain for 15 minutes upside down on a paper towel. Put the tomatoes in an ovenproof baking dish. Add 15ml of pesto to each tomato, then top with 30ml of the Parmesan cheese. Carefully break an egg into each tomato and sprinkle with salt and black pepper to taste. Replace the tops on each tomato and bake at 180°C for 20-30 minutes until cooked to your liking. Remove and serve immediately.
