VIETNAM ADVENTURE, NATURE AND ROMANCE IN ABUNDANCE Vietnam should be on the top of everyone’s travel list. It’s that simple. With its dramatic landscapes, fascinating history, epic food and pulsating energy, Vietnam will electrify all of your senses and seize you from all angles. Set along the South China Sea on the southeastern edge of the Asian continent, bordering China, Laos, and Cambodia, Vietnam is a country with a rich history and vibrant, fast-developing future. Visit Vietnam and you’ll find a land of natural splendors—lush green mountains, a pris3
tine coastline, majestic national parks—along with buzzing cities full of style and design innovators, and fascinating cultural sites offering insight into centuries of tangled leadership. Of course, there’s also the cuisine: travel to Vietnam is sure to please the taste buds as much as the mind and soul. This Southeast Asia destination is shedding its old look, disrobing itself of the heavy cloak of history to become a pulsating, spirited destination able not just to compete, but to surpass its peers in the region.

TRAVEL TRENDS IN 2019: From ‘Micro’ Holidays To Eco-Friendly Stays From artificial intelligence-inspired holidays to activities that offset the environmental impact of your stay, 2019 promises to be an enthralling year for travel. While we might know where we’re hoping to travel to, it’s about time we start thinking about what we want to do when we get there and the trends everyone will be jumping on this year. In a recent Booking.com survey, over half of global travellers (53 per cent) report that they plan to take more weekend trips in 2019, which will mean big business for local economies. 2019 will be the year of ‘bite sized travel’ - squeezing in more curated travel itineraries into shorter time frames. Thanks to improvements in flight routes, transport, cheap flights, on-demand car rentals and accommodation, micro trips will become increasingly more popular and varied. The chance to stay in unique and remarkable types of accommodation during short getaways will also reportedly become more trendy for those yurt and caravan bookings. Think of 2019 as the year for the conscious traveller, with everything from human rights and equality to improved working conditions and environment issues influencing people’s decisions about potential travel destinations. Almost half of travellers told Booking.com that they feel social issues in possible travel destinations are of real importance when choosing where to go. Meanwhile, over half choose not to go to a destination if
they feel it will negatively impact the people who live there.
in the future and are open to considering the experience themselves.
Safety, regardless of gender, ethnicity or sexual orientation are also of great importance to explorers. Platforms such as Destination Pride are harnessing the power of multiple data sources to provide travellers with a ranking of how LGBT+ friendly their chosen travel destination is, while destinations and organizations will increasingly step up their support for women travelling alone.
Investment in sustainable start-ups will be a big talking point. Expect to see a number of new travel start-ups and individual enterprises committed to pioneering a more eco-friendly future for our planet’s destinations will come to the forefront in the coming year, with intriguing technology at the core of their solutions.
Artificial intelligence, virtual reality, speech recognition - these are the innovations that’ll slowly take over and simplify the way we holiday in 2019.

Think keyless room-access with your phone, personalized travel tips or a robotic concierge who can communicate with guests in their mother tongue. Travellers are reportedly now more enthusiastic about real-time luggage tracking through a mobile app and having a single app for all their planning, booking and travel needs than the prospect of using self-driving transportation in their destination. A third of travellers admit to wanting someone or something to do the hard work for them, and make travel recommendations. Meanwhile, around two fifths want travel brands to use technologies such as AI to make travel suggestions based on past travel experience. Over half says they’d be excited to use a digital tour guide, bringing them a truly bespoke experience. While four in ten travellers admit to being excited about the prospect of space travel

MADHYA PRADESH Mowgli’s Story and Photos by Steve Klein
It was seven o’clock of a very warm evening in the Seeonee Hills when Father Wolf woke up from his day’s rest…
Although Kipling never actually visited the area, the Satpura Hills near Seoni are featured as the setting for the Mowgli stories that make up The Jungle Book. Based on Kipling’s descriptions in the stories, locals tell that Pench was where Mowgli was born, and Amodagarh was where he spent his early life. Bee Falls is featured prominently in the Red Dog story and Rikki-tikkitavi takes place at the far north eastern end of the range.
Rudyard Kipling The Jungle Book
Pench National Park surrounds the Pench River with the portion east of the river being in Seoni District and the area west of the river in
Chhindwara District. About one quarter of the park is south of the Madhya Pradesh border in neighbouring Maharashtra. Officially called Indira Priyvadarshini Pench National Park it includes the Mowgli Pench Wildlife Santuary, part of the Pench Tiger Reserve, and a buffer zone surrounding it. The buffer zone is easily accessible and home to abundant wildlife. A small local village is actually located within the park and another nine are just at its edge. The reserve on the other hand, is strictly controlled. And for good 6

s Land reason! It is home to an estimated 40 Bengal Tigers. That’s up from only 8 tigers in 1998. Since 1992 when the original sanctuary was expanded to create the tiger reserve, Pench has been part of Project Tiger, an effort to not only save India’s tigers from extinction, but to rebuild their population. Pench was the 19th reserve in India to be included. Tigers are solitary animals, each requiring their own range, and for its size, Pench Tiger Reserve is at capacity. More cubs are born each year and as they mature they are being moved to other reserves to avoid conflicts with other adults. With a full complement of tigers it means that the odds of seeing one in the reserve on any given day are quite high. 7
Tiger safaris are tightly controlled with a maximum number of vehicles allowed into the reserve each day. Gypsies, small, open

Several species of monkeys, plus jackals, sloth bears, wild boars, wolves, antelope, hyena, and foxes all may make an appearance while you are looking for tigers. For birders, more than 200 species can be found in the park.
four wheel drive vehicles with seats for 6 to 7 passengers are operated by specially licensed drivers whose livelihood depends on obeying the rules. A breach of any of the rules can cause them to lose their permits for up to 3 months. Speed limit in the reserve is 20 km per hour and each vehicle is equipped with a gps tracker to monitor their speed and location. ID for each passenger is required at the entry gate where a park ranger hops onto the back of each gypsy. Everyone must be out of the park by closing time, and to ensure that they are, they must leave by the same gate through which they entered. Rangers and drivers stay in touch so when tigers are sighted, gypsies from all over the reserve move toward that location, increasing the odds that visitors will see a tiger. The park is home to several other cat species. Indian leopards are among the big cat species found in India. You may also see the much smaller jungle cat. In total, 39 species of mammals are known to inhabit the park. Gaur, a type of wild bison listed as a vulnerable species, is slowly
Pench National Park is not the only highlight of the Satpura Hills. The highest point in the range is Dhupgarh, located in the Pachmarhi Biosphere Reserve. It is a popular sunset viewing location (see this issue cover photo). The reserve is a restricted use conservation area providing natural habitat for many vulnerable species. Tigers, leopards, gaur, and many other species have been spotted in the area, especially at the edges of the seldom used airstrip. Pachmarhi Hill Station, developed as a refuge from the summer heat by the British army, is now a small town primarily supporting Indian Army installations, tourism and forestry in the area. Local accommodations provide a perfect base for exploring the area. In addition to Dhupgarh, visit the Pandav Caves, Bee Falls, The Bison Lodge Museum and Jata Shankar. Jata Shankar is a shrine to the Hindu god Lord Shiva. It is located in a natural cave well into a ravine that stays cool on hot summer days. One does not need to be a Hindu pilgrim to appreciate the beauty of this place. It is only one of a dozen shrines and temples in the area. There is debate about whether the Pandav Caves actually have historical religious significance, but it is a quick, easy and free stop along the way. It is believed that the 5 caves were cut into the rock by Buddhist monks sometime between the 6th

and 10th century. The remains of a brick structure on top of the hill are thought to have been a Buddhist stupa. Some people believe that the caves were built and occupied by the 5 Pandava brothers of the Hindu epic Mahabharata. Legend credits them with carving out the caves during their exile. The Bison Lodge was once the home of Captain James Forsyth who developed the Pachmarhi Hill Station for his troops. The accompanying museum uses models, dioramas, photos and drawings to showcase the plants and animals native to the Satpura Hills. A small souvenir shop supports the museum and allows you to take home a memory of your visit. Bee Falls brings us back to the Mowgli stories. In Kippling’s story Bee Rocks is a place where great hives of wild bees hang from the rocks with a swift stream flowing below. In reality the place had long been known as Bee Falls. When the summer monsoons swell the stream the sound of the huge volume of water cascading down the cliff face combines with the echo from the gorge to create a roar said to sound like a million bees. For a small fee a jeep will deliver you to the top of the falls. A short walk down takes you to a viewing platform from which you can see the top of the falls and stunning views of gorge. From there a set of steps takes you down to the base of the falls and the pools in which Mowgli and the wolves fought off the Red Dogs.

The pools are a popular swimming spot with locals and tourists alike rising to the challenge of standing below the cold water pounding down from 35 to 40 meters above. You can reach Pachmarhi Hill Station and Pench National Park from Bhopal or Jabalpur in Madhya Pradesh or from Nagpur in the Maharashtra, the next state south.

JAMA Where James Bond W
Ian Fleming after WWII acquired a coastal plot of land near Ocho Rios, and built a bungalow overlooking the sea. Goldeneye became the place where James Bond would be born. Fleming took every inspiration from Jamaica to write his novels. With the perfect cocktail of old-fashioned British law, order and imperial restraint mixed with danger, sensuality and exotic excitement...it was that combination used in his Bond novels and the subsequent movies that have become world famous and put Jamaica on the map. And today, that excitement and adventure that inspired Ian Fleming in Jamaica still lives today waiting for you to experience and enjoy.
Jamaica is a paradise that will make you feel relaxed and will give you a sweet big smile! It is a small country with a rich culture. This radiates in their language, music, welcoming smiles, and their tasty and colourful foods. Everywhere you turn you can see the locals exuding cheerful and relaxed vibes with their philosophy that everything is “No Problem Mon! The Caribbean Sea is home to many unique island nations, but few pack such a vibrant mix of breathtaking nature and global cultural influence as Jamaica. Their heritage includes reggae, jerk cuisine, and voodoo among the nearly 4,000 square mile country. If you are ever looking for a place of warmth, happiness, and
adventure, then Jamaica should be your next vacation destination. This beautiful island has become one of the most popular vacation spots in the western hemisphere for so many reasons. Here are just a few of the reasons to visit Jamaica:
Miles of breathtaking beaches - The island features some of the most impressive beaches in the Caribbean with crystal blue waters and beautiful scenery and sunsets. Most beaches are nestled in lush gardens and forests or coupled between mountains, making them the perfect place to relax. Whichever beach you choose to visit on the island, it is sure to amaze you. 10
AICA Was Born Experience tropical warm patties and introduced the world Swim in the (literally) Glistenweather - One of the best things to Ackee and Saltfish, the Jamai- ing Waters - The Glistening Waabout Jamaica is that you can practically visit the beach at any time during the year. With an average temperature of 81° F , visitors flock to the island, especially during the Winter, so they can throw on a bathing suit and relax on the beach. While the majority of the island is warm, the Blue Mountain hills provide a more relaxing and cooler temperature.
Delicious Jamaican food - Jamaica is known for its exotic and delicious cuisine. The island is the home of jerk chicken, undoubtedly Jamaica’s most loved meal by people around the world. Jamaica has also popularized beef 11
can national dish.
Our group had an opportunity to visit an 18th century estate at Prospect, in Ocho Rios, the home of Yaaman Adventure Park. We started our adventure with an open-aired carriage ride and learned about the history and the various agricultural resources on the plantation followed by a cooking class with their resident chef who taught us how to make jerk chicken. If more time permitted we could have turned up the excitement with a mud buggy ride or hitch a ride and explore more of the park on the back of a camel. Yes there are camels in Jamaica.
ters in Jamaica is an absolute must see and do experience that must be done in the evening when it is dark. We ventured out on a small boat and saw the unbelievable natural wonder of a phosphorescent lagoon filled with microorganisms that glow at night, giving off a luminous effect. This natural phenomenon is said to only happen in three other places in the entire world with Jamaica the brightest of them all which amazes scientists and visitors worldwide. Here, the fresh water from the Martha Brae River meets the salt-water ocean and this amazing creation is formed. The water is filled with phosphorous which allows it to il-
luminate so brilliantly when disturbed. The glow is formed from small microorganisms that emit a flash of light when touched. The microscopic organisms live and create a natural phenomenon, known as bioluminescence. The lagoon is home to millions of these organisms. Once the boat is far out enough, we got the option to swim and it is remarkable to see how people in the water light up.
Range of water sports and activities - Whether you consider yourself a natural water explorer or a stranger to the sea, there are water sports and activities for everyone in Jamaica. Snorkeling and scuba diving are the most popular water activities among guests and are offered at almost every all-inclusive resort. Surfers are not neglected by Jamaican waters either. The amazing tides offer new and experienced surfers an amazing adventure. Our group had the opportunity to experience a Catamaran sailing to Dunn’s River Falls provided by 5 Star Adventure Tours. After setting sail we paused for a good hour for some fun snorkeling before proceeding on to Dunn’s River Falls. Dunn’s River Falls is one of Jamaica’s national treasures and is truly
unique. Described as a living and growing phenomenon, it continuously regenerates itself from deposits of travertine rock, the result of precipitation of calcium carbonate from the river, as it flows over the falls. The small dome-shaped cataracts are usually associated with thermal spring activity found in limestone caves. This, combined with its location near to the sea, gives Dunn’s River the distinction of being the only one of its kind in the Caribbean, if not the world. The Falls are different than most waterfalls in the fact that you can actually climb the waterfall which is 180 feel high and 600 feet long that lead out to the Caribbean Sea. It is required that you wear water shoes when climbing the falls. If you don’t have any they are sold for around $10US a pair. To avoid slipping over rocks or falling with a sudden gush of water, it’s best to climb the falls in groups lead by local guides who know the right rocks to step on that line the edges of the waterfall. Don’t shy away from holding hands with strangers for support. Once you arrive at the top everyone can pause and enjoy an exhilarating massage from the flowing water. For those not up to the challenge of climbing the falls, there is a parallel stairway the follows the
falls with several lookout points for taking photos. It is also used to walk back down after climbing to the top.
Swimming with Horses in the Ocean – Swimming with horses in Jamaica will fulfil many bucket list fantasies. I’ve taken a few horse treks and trail rides during my travels, but when our program called for us to swim with horses in Montego Bay, I’ll admit, I had a few reservations. It turned out, swimming with horses is a lot of fun. Chukka Horseback Ride & ATV Adventures were our hosts and they take great care in keeping their horses healthy and happy. Our guide told us that horses in Jamaica only go out on one trail ride a day and get to relax and graze the rest of the day. We were told that horses really like going in the water and appreciate cooling off in the water after a hot day in the sun. Can horses swim? Most horses are strong swimmers and can handle themselves in the water. The ride is only 10 – 15 minutes long in the ocean and it switches off with walking in deep water to short bursts of swimming. Therefore the horses are not overworked or in danger of getting tired. The tour starts off with a 3012
After a few more rapids the river current starts to slow down where we were met by a speed boat and towed into the Caribbean Sea to a private beach where we were offered a refreshing rum cocktail, changed our clothes and were met by our driver. We had a great time tubing with River Rapid Adventures.
All-Inclusive Resorts Abound in Jamaica – I had the opportunity to experience the all-inclusive experience in two of Jamaica’s popular resorts:
45 minute trail ride on one set of horses and then they change horses for the swimming. What I liked about Chukka is that all the riders wore floatation belts. They demonstrated that safety is very important when you do a group ride and the belts offer a safe environment for the rider and the horse. There were also several guides on horses close by to ensure everyone had a safe and fun ride. I highly recommend this experience for anyone on their next visit to Jamaica.
Riding the River Rapids - River Rapids Adventures is one of Jamaica’s most popular river attractions located just 20 minutes from the Falmouth cruise port. As you enter River Rapids, you are greeted by one of their friendly tour guides. After checking in and putting on your safety gear, we crossed over a rope bridge along a jungle trail, leading us to the river launch point. After one final safety check it was time to jump in our tubes and begin our journey downstream. With the river current carrying you through the rainforest, you sit back and relax while admiring the scenery of the surrounding landscape. Each lazy section of the river is followed by exciting class 2 rapids. 13
Meliá Braco Village – This beach front all-inclusive resort has a laid-back vibe befitting Jamaica. Opened in January 2016, after a reported $23.5 million renovation of an existing resort site, the 84-acre property put the emphasis on “village” — the outdoor décor has the feel of a 1950s American suburb, with gazebos, fountains, neatly manicured lawns and two pools with covered swim-up bars. The main attraction, of course, is the private beach, all white sand and turquoise water, with a long, narrow cove stretching into the Caribbean Sea. The 232 rooms are mostly in three-story tan buildings, set along gray cobblestone paths near palm and banyan trees. Meliá Braco Village is affordable, friendly, comfortable, with lots of outdoor activities to participate in including a zip line. A great place to choose for a wedding. Moon Place Jamaica Grande The port town of Ocho Rios in Jamaica was once a tiny fishing village, but
today it’s a great place for a family or romantic getaway with wonderful restaurants, dance clubs, shopping, and of course warm Caribbean water and white sand beaches. One of the nicest places to get an unobstructed view of the sea, but still remain close enough to all of the action, is Palace Resorts’ Moon Palace Jamaica Grande. This luxurious property features 700 beautiful rooms, free wireless Internet access, top-shelf drinks, and a long list of other incredible amenities. It’s only 5 minutes from town and a world away at the same time. Without overselling, the food can be described as incredible. Every morning I indulged at their exotic fruit buffet accompanied by something from their omelet station or enjoyed their authentic Jamaican Ackee and Saltfish breakfast; while quenching my thirst with a champagne cocktail that you can keep refilling while enjoying the beautiful ocean view. No better way to start your day. My experience at the resort was incredible! From the moment you arrive your greeted with a friendly smile, a cold drink and a cold towel. This resort took care of every small detail. They went above and beyond to ensure that my trip when it ended was truly memorable.
Bits & Pieces Taking a Dive into History Lake Tahoe is home to one of the most unique trails in California. The Emerald Bay Maritime Heritage Trail is underwater. A boat graveyard from the 1920’s and 30’s, the underwater route includes several barges, a passenger launch, a metal kayak, day sailor, wooden fishing boats, row boats and motorboats at 4 different dive sites.
For more go to: https://www.parks.ca.gov/?page_id=29931
Emerald Bay is on the western side of Lake Tahoe and for more than 150 years it has been a tourist destination. This collection of small craft, likely sunk when they outlived their usefulness, is the largest and most diverse collection of its kind in the United States. Snorkelers and scuba divers have had access to the Historic Barge Site since California State Parks opened it in 1998 however the location of the remaining 3 sites that make up the trail has never been made public until now.

Funding provided by the Sierra State Parks Foundation has made it possible for underwater interpretive panels to be placed at the sites which have been open since October 1. The signage gives details as well as the history of the sunken craft. Waterproof cards are available giving divers exact GPS coordinates of each of the sites. The wrecks are well preserved due to the extremely cold water temperature (6-7 degrees C) Divers should be prepared for the cold temperatures and be properly trained for high altitude diving. All boats and artifacts are protected and are not to be disturbed. Not a diver? You can still enjoy the Emerald Bay Maritime Heritage Trail. Bits & Pieces Wiivv (pronounced weave)
One of the worst things that can happen on a holiday is to end up with sore feet. Day 2 of 7 and you are limping! After paying thousands for the trip, a pair of custom insoles would be a wise investment. Just ask Steve Klein, Manager of the Vancouver International Travel Expo and Associate Editor of Talk Travel. “Over the course of 3 days preparing for and being at the expo I log over 100,000 steps. This year I received my Wiivv custom insoles a few days before the show. The difference was incredible. So much so that I made sure I had them along on a subsequent trip to India. I’ve worn them ever since and will continue to wear them.” Feet are unique so even good quality shoes are designed to almost fit most people and off the shelf insoles are no different. When you’re travelling you can spend a great deal of time on your feet, running for flights and exploring new places. Shoes that don’t fit perfectly can cause more than just sore feet and put a damper on the rest of your holiday. Wiivv (pronounced weave) now offers affordable custom sandals and insoles. With the Wiivv ap and your smart phone you photograph your feet. The images are submitted to the lab where more than 200 points are digitally mapped and custom sandals or insoles are 3D printed. By: Wayne Hansen It has been said that Cambodia’s Angkor Wat can only be rivalled by a few of the world’s other great historic sites, such as Petra in Jordan or Peru’s Machu Picchu. But once you’ve paid a visit to the famed temple complex that has become a symbol of the country, you’ll quickly realize that Cambodia’s magic extends far beyond the walls of Angkor Wat.
After attending the recent Cambodia Travel Mart in the capital Phnom Penh I quickly discovered that this small country has so much more to offer first time and repeat visitors. While Siem Reap, for many, is the entry point into Cambodia plan to visit and explore the other parts of the country. Visit the coast and dine at the crab shacks along Cambodia’s
CAMBODIA –
premier beach town. Cambodia’s beaches are often neglected in favour of Thailand’s, but slowly, surely, the country’s idyllic islands and shining white sands are becoming known to the world’s beach lovers.
Sihanoukville, formerly Kompong Som is a seaside town featuring Cambodia’s best-known beaches. It’s white sand beaches and warm Gulf of Thailand waters combine with a laid back, beachy atmosphere to provide a great little tropical getaway. Sihanoukville is a place to unwind, enjoy the fresh from-the-ocean seafood, take a snorkeling or scuba trip, and generally show-down, lay back and chill-out. Considering the moderate number of visitors to Sihanoukville, the town offers a surprising number and variety of restaurants and bars. Fresh seafood, especially crab, prawns and ocean fish, has always been one of the town’s biggest draws, but there is also a wide variety of places offering foreign cuisines – Australian, French, Indian, German, Sri Lankan, British, Italian, a couple of western bakeries and even espresso coffee shops. And these days Sihanoukville offers a pretty good night life as well as a wide variety of bars that stay open well into the wee hours, especially on Weather
Station Hill, in the downtown area, and the beach bars on Ochheuteal, Serendipity and Victory beaches.
Kep Province The tiny province of Kep is on the eastern coast near the border with Vietnam and is home to a number of idyllic beaches. The area was originally founded as a resort town for wealthy French merchants in the early 20th century. When you see it, it’s easy to understand why. The elegant feel of the area has stood the test of time. Kep is renowned for spectacular sunsets, sandy shores and sumptuous seafood. Koh Tunsay, or Rabbit Island, is just a few miles offshore and can be easily accessed by boat. Aside from a handful of luxury resorts, Koh Tunsay is completely deserted, so exploring this remote island makes the perfect day trip Exploring Siem Reap’s countryside by bicycle - When you’re all beached out – if such a feeling exists – head inland and to Siem Reap and rent a bicycle. The flat, quiet and unpaved roads surrounding the city make this one of the best places to cycle in Cambodia. Cycle out to Cham village, where there is a picture-perfect mosque. Enjoy lunch at a local restaurant, and then continue to the golden Wat Tschor Pagoda, which is not far from Cham, and well worth the ride. Although close to the 16

Travel by boat to Tonlé Sap Lake - From Siem Reap, travel along the Sangker River by private boat. Here, you will get a unique glimpse into traditional, rural Cambodian life. There are several places you can stop along the way, including the pagoda at Cheur Khmao and the floating village of Prek Tuol. After enjoying a lunch at a traditional village, continue to Tonle Sap Lake, which is the largest freshwater lake in Southeast Asia. As your boat carries you across, you’ll be amazed by the infrastructure of the floating villages that inhabit the lake: there are pagodas, mosques, hospitals, libraries, shops and schools that float perpetually on water.
graves by the Khmer Rouge following the advent of “Year Zero” (the year 1975, when Khmer Rouge took over Cambodia). A visit here is not for the faint of heart, however, these sites are sobering reminders of the history of the Cambodian people. Wildlife lovers will want to make a day trip to Phnom Tamao Wildlife Rescue Centre (PTWRC). A haven for animals rescued from illegal wildlife trade, PTWRC helps in their recovery and rehabilitation with assistance from the Wildlife Alliance. Opt for an exclusive behind-the-scenes tour and you will be allowed to interact with an array of wild animals, and also meet the team that cares for them. End your days in the city with strolls
Explore Phnom Penh - Cambodia’s down the Sisowath Quay. Running capital city is also its largest. There is a lot to do here besides relaxing in some of the city’s luxurious hotels. Adventurous travellers with a taste for history will want to visit Tuol Sleng and Choeung Ek to get a real picture of Cambodia’s past. Tuol Sleng was a former school used by the Khmer Rouge as a place of torture. It has now been preserved as a museum. Nearby is Choeung Ek, otherwise known as the Killing Fields, an area where thousands of men, women and children were murdered and buried in mass 17

The True Heart of Cambodia – My trip to Cambodia was a combination of both educational and cultural, but mostly it was meeting the local people. Despite their recent history, they are so friendly and open. Even if they don’t speak English, they’ll look at you and smile. Every day in Cambodia I was constantly reminded that while there’s a lot of pain and trauma from the recent past, there’s also a lot of resilience, strength and love. I finally realized that the true heart of Cambodia does not lie in its killing fields, temples or bloody history; yes, these things are an undeniable part of the country, but they do not define it. The true heart of Cambodia lies in its people.

what’s cooking in
JAMAICA Jerk chicken
, a spicy grilled-meat dish mostly associated with Jamaica but common throughout the Caribbean. Jerk refers to a style of cooking in which the main ingredient—which most often is chicken but may also be beef, pork or goat—is coated in spices and slowcooked over a fire or grill traditionally composed of green pimento wood positioned over
burning coals; the resulting smoke is key to the flavour of the dish. The cuisine had its origins with the Taino Indians, who developed the jerk method and later taught it to African slaves, who in turn adapted it in creating jerk chicken. The word jerk reportedly stems from the Spanish charqui, meaning dried strips of meat similar to the modern-day jerky.
Jerk Chicken Ingredients: 1 medium onion, coarsely chopped 3 medium scallions, chopped 2 Scotch bonnet chiles, chopped 2 garlic cloves, chopped 1 tablespoon five-spice powder 1 tablespoon allspice berries, coarsely ground 1 tablespoon coarsely ground pepper 1 teaspoon dried thyme, crumbled 1 teaspoon freshly grated nutmeg 1 teaspoon salt 1/2 cup soy sauce 1 tablespoon vegetable oil Two 3 1/2- to 4-pound chickens, quartered
How to Make It: Step 1 In a food processor, combine the onion, scallions, chiles, garlic, five-spice powder, allspice, pepper, thyme, nutmeg and salt; process to a coarse paste. With the machine on, add the the soy sauce and oil in a steady stream. Pour the marinade into a large, shallow dish, add the chicken and turn to coat. Cover and refrigerate overnight. Bring the chicken to room temperature before proceeding.
Step 2 Light a grill. Grill the chicken over a medium-hot fire, turning occasionally, until well browned and cooked through, 35 to 40 minutes. (Cover the grill for a smokier flavor.) Transfer the chicken to a platter and serve. 22

All About Jamaican Rum There’s nough no doubt so much the spirit calms as rum and true religion – Lord Byron
Fifteen men on a dead man’s chest, Yo, ho, ho and a bottle or Rum. - 17th century Rum, and its fraternal twin, cane spirit, are made by distilling fermented sugar and water. This sugar comes from the sugar cane and is fermented from cane juice, concentrated cane juice, or molasses. Molasses is the sweet, sticky residue that remains after sugar cane juice is boiled and the crystallized sugar is extracted. Most Rum is made from molasses. Molasses is over 50% sugar, but it also contains significant amounts of minerals and other trace elements, which can contribute to the final flavor. Jamaica is well known for its rich, aromatic Rums, most of which are produced in pot stills. Jamaica has official classifications of Rum, ranging from light to very full-flavored. Jamaican Rums are extensively used for blending.
