Mosaic Fine Dining: Bringing the world to The Mountain

The Taos foodie IQ is pretty sophisticated, says Executive Chef George Bartel, co-owner with Isabel Alford of Mosaic Fine Dining on Taos Plaza. And that goes hand-in-hand with Bartel’s “global cuisine” emphasis — a catch-all term he says basically means, “The chef can do whatever he wants without messing up. It gives us the freedom to do what we want.”

Locavores rejoice From late spring, summer and fall Mosaic sources everything locally. Taos Farmers Market is an amazing local market, Bartel says. Other staples are locally derived year-round.

If a sophisticated foodie rating for Taos seems a little over the top, Chef Bartel has the chops to back up his judgment, as evidenced by some of his professional “foodie” history of the past couple decades. The Texas native attended the New England Culinary Institute where he won the Sommelier Award; he was meat station chef at Relais and Chateaux’s Clifton Inn in Charlottesville, Va.; he was sous chef and

“global cuisine” emphasis − a catch all term... “The chef can do whatever he wants...” kitchen manager at the Aventino Restaurant in Fort Worth; and executive chef and manager at Cafe Darieds in Arlington, Texas. Admittedly, they do cater to what he fondly calls “the steak belt” — the Omaha and Texas visitors who love their steaks and want them perfectly cut, grilled and plated. “Then you have Taoseños, there are a lot of vegetarians and vegans,” he says. “The Vegetarian Mosaic specialty is real popular because it’s not just a bunch of sautéed vegetables.” The “Vegetarian Mosaic” is a green chile polenta cake with spicy harissa, lentil pecan paté with house-made pita chips, a house pickle and Greek salad with feta. If you’re a pesto freak like I am, this Middle Eastern or North African pepper pesto called harissa sounds like heaven (it even starts with an “h”). And the lentil-pecan paté sounds dreamy, all cavorting with green chile polenta? Oh yeah. On this dish alone, I’m very interested in Bartel’s global cuisine theme. Open now only nine months, online reviewers love the truffle assiago frites and the pan roasted duck breast, and flat iron steak is also a big hit, with noticeable nods to the mussels and bouillabaisse.

“Back Porch Farms in Talpa, run by McLaren Scott, has wonderful, fantastic products, everything from feta and chevre to goat’s milk,” Bartel said, noting Scott and company are now looking at setting up a brewery (not verified, but remember that you heard it first here). “Taos can be a tough audience because they’re very loyal — which is good, because that’s how businesses should start,” Bartell said. “There are some very, very good chefs in town. And there’s a great sense of community among the restaurateurs here — like Arik (Zamora) and Lisa (Menzutto-Zamora) at The Gorge, Skot (Kirshbaum) at Byzantium, Adam (Kerr) at The Taos Inn. In larger cities you don’t find that, it’s a lot more cutthroat. Here, everybody wants to see everybody succeed, so you need to help each other.” Co-owner Isabel Alford says it is most rewarding to her when she observes the camaraderie and creativity that springs up almost daily amidst the cooking madness. “I like seeing what comes out of it,” Alford said. “I love seeing the look on people’s faces when they try something new from the kitchen, saying, ‘Oh my god, I never would have thought to mix this with that!’ ” An example is a couple weeks ago when Bartel added bacon and curry to the cream

of mushroom soup and the flavor was a startling hit.

Bartel uses New Mexican ancho chiles and Bueno brand red chile powder for the choriso.

She says it’s inspiring to see the creativity and how the chefs are encouraged to cook outside the recipe box.

They brine their own corned beef and grind their own beef for their burgers. All the pasta is made daily in house, as are the breads and desserts.

“It’s using what’s available,” Bartel admits. “It’s fun. That’s when we really get to explore.” Mosaic makes all its own sausages (the choriso I saw hanging in the walk-in fridge was just a day shy of being ready for the frying pan).

Micah Roseberry may be new to the restaurant biz, but she’s got decades of experience in the food industry. Roseberry, who opened the Farmhouse Cafe and Bakery in El Prado has been farming in Northern New Mexico for 25 years. Almost all of the produce she serves comes from the garden right outside the restaurant or her farm up in Cerro. Even

Roseberry originally came to Taos to check out the Sustainable Native Agricultural Center in Arroyo Hondo. She said that at the time, the center was growing more than 200 varieties of produce. When she got here, she discovered rich agricultural communities within the Pueblo and Hispanic cultures. She felt she could help create more opportunities for these cultures to flourish.

“I know I’m going the distance... And it’s a huge commitment.” the flowers on the tables are grown on site. And the products that Roseberry doesn’t cultivate herself come from local producers. Her dishwasher at the restaurant, for example, is also her goat cheese supplier. Roseberry said the she aims to create a market for local farmers through her restaurant. “I want to build the local food system,” she said. “The best way I know how to do that is to create a market.” The food Roseberry serves is nonGMO, and it’s either organic or close to organic. She offers gluten-free, vegan and vegetarian options. “I know I’m going the distance,” she said. “And it’s a huge commitment.”

“Some people come here and want to bring ideas from other places here,” she said. “I think it’s important to honor the culture that’s already here.” She’s also been active in promoting agricultural education. In 1994, Roseberry co-founded the Taos Waldorf School. The campus has a greenhouse, a garden, an orchard and livestock. She now teaches with the agricultural program at Enos García Elementary. “I’m really working on linking youth with agriculture and knowing where their food comes from,” she said. The Farmhouse serves breakfast, lunch and dinner. The menu features grassfed beef, bison and elk from local ranches. Dishes are created depending on which vegetables are in season and include grass-

The bakery features an incredible assortment of artisan breads, croissants, tarts, muffins, cheesecakes, cookies and more, all featuring local Sangre de Cristo flour from the Costilla wheat project.
