Timeline Our headbartender Kristof Burm will be delighted to assist you in finding the perfect cocktail! History of the classic cocktails

To give you an idea of when each cocktail was created, or mentioned for the first time, we have made a timeline that guides you through centuries of stylish drinking. Discover how old your own personal favourite is, or develop a true love for the classic cocktail!

17th century - The Sours family spirits, lemon juice and cane sugar. Ask the bartender your favourite sour. Try it with Whiskey, Bourbon or even Absinth starting from 8€ The sour was born in the region of the Caribbean islands between pirates, corsairs and military to ameliorate the very bad taste of alcohol.

1803 - The Mint Julep Jim Beam bourbon Whiskey, sugar and fresh mint served in silver cup 8,5 € During the festival of the Kentucky derby (horse race), they serve more than 80 000 mint juleps.

1830 - The New Orleans Sazerac A mix of Cognac, Old Overholt Straight Rye Whiskey, Absinthe Maison la fontaine and aromatic bitters.

9,5 €

A French creole immigrant Antoine Amadie Peychaud arrived at New Orleans in the 1830s. He began a small liquor shop and he also made his own liquor mix and spirits. He invented the most famous bitter in the world and was given credit for inventing the first Sazerac cocktail.

3

1860’s - Americano or Negroni Campari, red vermouth and soda

8,5 €

It is a popular believe the Italians named the drink after the Americans, as it was loved amongst them. In 1919 The Americano was upgraded with gin by Fosco Scarselli, upon request of Count Camillo Negroni, thus making a Negroni.

1870 - Manhattan Old Overholt Straight Rye Whiskey, red vermouth, white vermouth and aromatic bitters

9,5 €

Named “the king of cocktails” by the American bartenders. Created in New York City at the Manhattan Club by Dr. Iain Marshall for a banquet hosted by Lady Randolph Churchill (Winston’s mother) in honour of governor candidate Samuel J. Tilden.

1874 - Tom Collins Bombay Sapphire Gin, fresh lemon juice, sugar, angostura and soda 8,5 € In New York City a man became the most wanted and despised person of his time, but no one ever met him. His name was Tom Collins, and his name still carries on today. In 1876, Jerry Thomas included a new drink named “Gin & lemonade” in the “The Bartender’s Guide”. The Tom Collins was born.

1895 - Old Fashioned Jim Beam Bourbon, sugar and bitters

9€

At the Pendennise Club, a gentlemen’s club in Louisville, Kentucky. The recipe is said to have been invented by a bartender at that club, and popularized by a club member and bourbon distiller, Colonel James E. Pepper, who brought it to the Waldorf-Astoria Hotel bar in New York City. Don’t be shy to check our other bourbons !

4

1905 - Daiquiri Bacardi Superior Rum, fresh lime juice and cane sugar

8,5 €

Invented by an American mining engineer named Jennings Cox, who was working at an iron mine in the town of Daiquiri near Santiago on the southeast coast of Cuba. Legend has it that Cox came up with the idea when he ran out of Gin while entertaining guests.

1915 - Singapore Sling Bombay Sapphire Gin, Cointreau, cherry brandy, Dom Bénédictine, pineapple juice, fresh lime juice, pomegranate syrup and bitters

9,5 €

Was invented by Ngiam Tong Boon, a bartender working at the Raffles Hotel Singapore. His recipe book was considered so valuable that it was kept locked in a safe. The Raffles Hotel edited the original recipe in the 70s.

1916 - Aviation Bombay Sapphire Gin, crème de violette, fresh lemon juice, Maraschino liqueur

9,5 €

The Aviation was created by Hugo Ensslin at the Wallick hotel New York City´s Times Square. This cocktail is one of the three great classics every guy, who pretends to be a cocktailbartender, has to know.

1930s - Pink Lady Bombay Sapphire Gin, Cointreau, fresh lemon juice and pomegranate syrup

8,5 €

Created by Henry McElhone at Harry’s bar in Paris, this cocktail opened the way to “the girl drinks”. From then on it was presented more and more in cocktail bars around the world.

5

1930 - Mai Tai Bacardi Reserva and Bacardi Superior Rum, Cointreau, pineapple juice, lime juice, almond syrup and bitters

9,5 €

Invented by Trader Vic, owner of a famous restaurant and cocktailbar in San Francisco. He let his best friends from Tahiti taste it and they exclaimed “mai tai roa”, which means “very good”. Have a sip on our softer version with additional pineapplejuice.

1934 - Margarita Camino Real tequila, Cointreau, fresh lime juice and salt rimmed glass

9,5 €

Marguerite Hemery lived in the Rio Grande Valley since the 1930s and went to a restaurant in Matamoros called Los Dos Republicas. She was friends with the owner and, as the story goes, his bartender composed a special drink for her.

1940 - Mojito Bacardi Reserva Rum, fresh mint, fresh lime, sugar and soda water 9 € Bodeguita del Medio bar in Havana is by urban myth credited with the first Mojito and this is apparently where Ernest Hemingway went for his. The great man wrote of Cuba’s unofficial national drink, “it wasn’t just a drink; it was a symbol of national pride.”

1950 - Black Russian Eristoff Brut Vodka and Kahlua liquor

8,5 €

Mixing Vodka with Kahlua, this cocktail was a Belgian discovery by the most famous Belgian barkeeper Gustave Tops. Also ask for the white version with fresh cream.

6

1954 - Pina Colada Bacardi Superior Rum, fresh pineapple, pineapple juice and coconut cream

8,5 €

Introduced in August 1954 at the Caribe Hilton’s Beachcomber Bar in San Juan, Puerto Rico by its alleged creator, Ramon “Monchito” Marrero. Apparently, the hotel management had explicitly requested Monchito to mix a new signature drink that would delight the demanding palates of its star studded clientele. Monchito accepted the challenge, and after 3 intense months of blending, shaking and experimenting, the first Piña Colada was born.

1954 - God Father William Lawson’s Finest blended whisky and amaretto

8,5 €

Created by Italian bartender Donato Antone alias “Duke”, one of the greatest barmen after the second world war.

1960 - Cosmopolitan Citrus infused Eristoff Brut Vodka, Cointreau, fresh lime juice and cranberry juice

8,5 €

The Cosmopolitan is one of those drinks that has had various incarnations through the ages - some of them, quite probably, independent of one another. Whatever the origin, however, it was Sex And The City’s Carrie Bradshaw who popularised the drink when she swapped Martinis for Cosmos. Not too fond of the vodka, and want a sweeter touch? Ask for a Cointreaupolitan!

7

1970 - Long Island ice tea Bacardi Superior Rum, Bombay Sapphire Gin, Camino Real Tequila, Eristoff Brut Vodka, Cointreau, lemon juice, cane sugar and a splash of Coca-Cola

11 €

Invented by Robert Butt, barman at Oak beach inn in long island (N.Y). Story said he was inspired by Ernest Hemmingway. Now we understand better why the cocktail contains more than 30% alcohol.

1888 - Dry Martini Bombay Sapphire Gin, Noilly Prat, garnished with a twist of lemon or green olives

8,5 €

The word Martini was first mentioned in the “New and Improved Illustrated Bartending Manual.” Finally, in 1911 at the Knickerbocker Hotel in New York the head bartender, a gentleman by the name of Martini di Arma di Taggia, mixed half and half London Gin, Noilly Prat Vermouth and orange bitters. Many visitors to the Knickerbocker asked for variations of the drink. The olive and the lemon twist were added later.

Carpano formula antica

The benchmark and classic version of vermouth. Coffee-coloured, and based on white wine aromatised with a secret recipe of dozens of herbs and spices. First a taste of cola-like sweetness, then sharply bitter at the back of the tongue, with a complex web of tastes in between. The red variant, Cocchi Storico Vermouth Di Torino, has rich and vibrant notes of citrus, cocoa, rhubarb and a balanced bitter undertone. The white version, Cocchi Americano is based on an all-natural recipe containing white wine, sugar, alcohol-infused herbs and spices, especially Artemisia flowers, gentian roots and peels of bitter orange. A slightly fruity and sweeter white vermouth based on an old-school recipe.

A red vermouth. Made by a company that claimed to have made the very first vermouth ever. It has rich, dark notes of licorice, herbs, figs, cocoa, and sweet cinnamon. It’s full-bodied and a little sweet, but spectacularly balanced. It finishes bone dry.
