How to Use This Guide This is your guide to the very best culinary adventures Nova Scotia has to offer. There are over 130 quality Taste of Nova Scotia members across the province including producers, processors and an outstanding collection of restaurants. And to help you experience all there is to see and do, we’ve listed everything alphabetically, grouped by region. Sprinkled throughout, you’ll also find original recipes by some of the best chefs in the province. Chef profiles, event listings, contests, product reviews, and more amazing recipes are available on our website:

www.tasteofnovascotia.com

Appetizing adventures await. Food is inherently social. We’ve long congregated over meals to reconnect, but for 2013 we want to extend the conversation beyond the dinner table. Join us on social media and visit our website to get a greater glimpse into everything that Nova Scotia has to offer. We’ll be running contests throughout the season, so check in often.

Maple Miso Glaze for Pork Belly Seasons by Atlantica, Atlantica Hotel Halifax, Chef Luis Clavel In this recipe Chef Luis Clavel creatively brings together flavours from Nova Scotia and the Far East to create this gorgeous sauce designed to be served with succulent local pork belly. The sweetness of the maple syrup is balanced perfectly with acidity of the white wine vinegar and the flavour of the miso. ½ cup (125ml) maple syrup 6 shiitake mushroom caps, cleaned and sliced 3 whole sliced Brussels sprouts (discard outer leaves) 2 tbsp (30ml) white miso 1 tbsp (15ml) white wine vinegar 1 tsp (5ml) sesame oil 1. In a frying pan heat sesame oil until a light smoking point. Add shiitake mushrooms and Brussels sprouts and cook until a golden caramelized colour is achieved. 2. Add white vinegar to deglaze the pan, then add maple syrup and miso and stir well and bring to a quick boil. 3. Remove sauce from heat and puree in a blender to a smooth consistency. 4. Strain the pureed sauce through a fine sieve. 5. Add sauce back to the pan and bring to a simmer. Finish the sauce with a tablespoon of butter to add a shine and richness. Season with salt and pepper Serve this sauce with braised and sliced Nova Scotia pork belly. It also pairs perfectly with local roasted carrots and Brussels sprouts.

Through partnerships with the Halifax Seaport Farmers’ Market, located practically at our back door, and over 35 other local farmers, fishers and producers, elements on hollis offers menus featuring fresh, local, seasonal and sustainable ingredients. The “eat local” movement has swelled over the past few years; we want to know where our food comes from, support local producers, and be responsible to the environment — and our patrons can be sure of those things when you dine at elements on hollis.

Traditional Fisherman’s Cove is just down the street and we’re only 20 minutes from Halifax — if you’re willing to make the trip, you’ll want to try our award-winning fishcakes, voted by The Coast readers as Best in Halifax 2011 and 2012. But the real recognition is our consistent loyalty from local and visiting Maritimers, who say our fishcakes and other traditional menu items taste “just like my mother made.” Our seafood chowder is fresh from scratch and, like all of our soups, gluten-free. Don’t miss our signature all-day, all-local, farmfresh breakfast. Emma’s, where the food is like a warm hug from the inside out! Open 8 a.m. – 3 p.m. Tuesday to Sunday, closed Mondays

Shrimp & Grits Brooklyn Warehouse, Chef Mark Gray For 4 people Since opening their doors 5 years ago, Brooklyn Warehouse has built a reputation around the inventive use of great local ingredients. A perfect example is this adaptation of a southern classic. This recipe is a wonderful way to showcase Nova Scotia’s beautiful cold water shrimp. 2 cup (500ml) course-ground corn meal 4 cups (1L) water 1 cup (250ml) heavy cream ½ cup (125ml) parmesan cheese, grated 1 cup (250ml) ham hock, cooked and pulled (strain, reduce and reserve cooking liquid) 1 cup (250ml) Chedabucto Bay shrimp, peeled (or any fresh or frozen Nova Scotia cold water shrimp) 2 tbsp (30ml) butter 1 cup (250ml) micro greens salt and pepper 1. In a medium pot, bring water to a boil. Slowly whisk in cornmeal. Cook on low heat stirring constantly for 10-15 minutes or until grits are creamy and begin to soften. (For best results follow suggested cooking directions on corn meal package.) 2. Once the grits are cooked whisk in cream, Parmesan cheese and then season to taste with salt and pepper. Add pulled ham hock to grits and stir. Set aside and keep warm. 3. Heat separate sauté pan over high heat and add butter. Add shrimp to the pan and sautee until pink and cooked through, about 1 minute (depending on the size of shrimp). Remove shrimp from the pan and deglaze pan with reduced ham hock liquid. 4. Divide hot grits among 4 serving bowls. Spoon shrimp and sauce over grits. Garnish with greens and freshly grated Parmesan cheese. Serve immediately.

The Sou’Wester Restaurant and Gift Shop overlooks the famous lighthouse at Peggy’s Cove and specializes in homestyle meals. We feature our very special seafood chowder, fish and chips, haddock dinners and fresh-cooked lobster from our own lobster pound. Dessert specialties include homemade gingerbread and apple crisp. During our off-season, we welcome you to try our hot cider — just the thing on a blustery winter’s day! Or join us for breakfast hot off the grill until noon each day. Come have a tasty dinner and enjoy Nova Scotia beauty at its very best!

Schoolhouse Gluten-Free Gourmet is a 100% gluten-free kitchen. Wholesome ingredients go into our delicious and nourishing on-the-go foods for people sensitive to what goes into their bodies. We do this in small batches, by hand, in a converted schoolhouse in Lunenburg County. From potato millet bread to focaccia rounds, pumpkin muffins to brownies, our goodies feature quality nutritionally dense ingredients like chia and flax, and natural sweeteners like agave and maple syrups. Although we do not have a storefront location at our production facility in Martins Point, you can find us at farmers’ markets in Halifax and Lunenburg, and at select independent retailers. Please visit our website for more information and a list of retailers.

As you enter through the Folk Art Forest, past the crew cooking the lobster and mussels and over the Red Carpet, you can settle in for a feast. Fresh boiled lobster, unlimited fresh cultivated mussels, all-you-can-eat salad bar, homemade rolls, your choice of dessert and coffee or tea. Steak, chicken, vegetarian and a children’s menu are also available. Our goal is to serve the best lobster in a unique setting with friendly Nova Scotian hospitality. Open Wednesday, Thursday, Friday, Saturday and Sunday, 4 – 8 p.m., Mother’s Day weekend in May to Thanksgiving weekend in October. Reservations highly recommended.

Terra Beata is a cranberry grower and processor nestled next to the Atlantic Ocean near Lunenburg, Nova Scotia. You'll find our products in all Sobeys Atlantic stores, as well as many farm markets and specialty stores. Creamed Lobster This traditional dish is a diet-busting local favorite. We just had to share it! 3 cooked 1¼ lobsters = 2 cups of meat In skillet add 4 tbsp butter. Melt butter over medium heat, then add 2 cups of lobster meat. Add salt and pepper to taste.

The mouth watering Yarmouth & Acadian Shores is a lively little slice of France on the scenic southwest coast of Nova Scotia. Wandering through one of the largest fishing communities in Canada means you’ll get a taste for seafood so fresh you should slap it! Come, immerse yourself in our vibrant seafaring history, evident in streets lined with gracious sea captains’ homes. Our popular Living Wharves program gives landlubbers a chance to rub elbows with local fishemen. Come listen to salty fish tales, and try your hand at braiding rope and mending nets.

Sauté until juice and lobster are reddish in colour. Remove from heat, then add 1 cup of 10% blend cream. Continue to simmer for 10 minutes, in order for the sauce to thicken. Serve over buttered toast. Bon appetit!

All that hard work, plus breezy days on secluded beaches will give you a hearty appetite! Bring it to our Musique de la Baie kitchen parties. Over 5000 people attended last year (and no one

Apple, Maple & Mustard Caramelized Ham Meadowbrook Meat Market For 4-6 people Meadowbrook Meat Market in Berwick is “Home of the Jimmie Lamb Ham. Choose from their fully cooked boneless hams (either natural wood smoked, maple ham) or a ham that requires roasting (old-fashioned ham or picnic ham). Purchase Meadowbrook directly from their farm market or or their shop at Alderney Landing in Dartmouth. FOR THE GLAZE:

FOR THE SAUCE:

2 tbsp (30ml) maple syrup 2 tsp (10ml) Dijon mustard

1 cup (250ml) apple cider 4 tbsp (60ml) maple syrup 1 tbsp (15ml) Dijon mustard 2 tbsp (30ml) apple, peeled and diced salt and pepper

1. Preheat oven to 350F (177C). If using a fully cooked, boneless ham, place ham in oven and warm to 130F (55C). 2. Whisk maple syrup and Dijon together. Brush sauce onto the warmed ham. Return ham to the oven uncovered. Broil on high in the middle of the oven about 10 to 15 minutes. Check to see that the maple and mustard make a nice caramel color. (Watch carefully while under the broiler to avoid burning the ham.) 3. Remove from oven, slice and serve with the apple maple mustard reduction.

1. Place all ingredients in a sauce pan over medium heat and reduce until half. 2. Before removing from the heat add the apple. Simmer for two more minutes.

The ham can be served with local in season vegetables such as roasted potatoes and steamed asparagus. This ham recipe is also perfect to eat as leftovers.

Cider Braised Chicken Chanterelle Country Inn & Cottages, Chef Bryan Picard For 4-6 people This rustic chicken dish was inspired by Chef Bryan Picard’s love of cooking with cider, especially Tideview Cider’s Heritage Dry. This is a great recipe for entertaining as it can be made ahead of time and left to simmer away on the stove all afternoon filling your home with amazing aromas. 1 whole chicken, cut into 8 pieces 2 cups (250ml) hard cider ½ cup (125ml) tomato sauce 1 medium leek, cleaned and sliced ¼ cup (60ml) sunflower or grapeseed oil ¼ cup (60ml) heavy cream ¼ cup (6oml) flour 1 bay leaf salt & freshly ground black pepper 1. Heat the oil in a large skillet. 2. Dust the chicken in the flour sear the chicken pieces for a few minutes on each side until they are golden brown.

www.chanterelleinn.com

3. Transfer the chicken to a medium-sized pot and deglaze the skillet with half of the cider. Allow to simmer for 1 minute. Add this to the chicken with the rest of the cider, leek, tomato sauce and bay leaf. Simmmer on low heat, half-covered for at least 2 hours, stirring occasionally. 4. Add the cream. If you want the sauce to be thicker, low-boil until the sauce reduces. Taste and season with salt and pepper. 5. Finish with some fresh chopped chives, tarragon, or parsley.
