INGREDIENTS
5 large Digby scallops Olive oil Bacon Jam* Seasonal greens or arugula
CORN SALSA
2 ears of fresh corn, husked 1 tomato, seeded and diced 1/2 red onion, finely diced 1 green onion, finely diced 1/2 red pepper, finely diced 1 tsp finely minced garlic 1/4 Thai chilli pepper, finely diced, seeds removed Handful of chopped cilantro Juice from 1 lime Sea salt Freshly ground black pepper
DIRECTIONS (SERVES 2 - 3)
1. Remove corn husk, rub with oil, and grill until slightly charred, about 12 minutes. Let cool and cut off the kernels. Combine all remaining ingredients, salt and pepper to taste. Set aside. 2. Pat scallops dry and lightly season with salt and freshly ground black pepper. Heat olive oil in a pan until hot, sear scallops on one side until they turn brown, flip them, then turn off the heat. Add a tablespoon of bacon jam to the pan to warm it up. Let scallops sit for 20 seconds (in the pan) before plating. 3. Using a spoon, make a straight line of corn salsa; place 5 scallops on top of salsa. Top each scallop with a small dollop of bacon jam. Garnish with greens. Serve hot, as an appetizer or main course. 12

1 lb fresh scallops 1-2 jalapeño peppers, seeded 1/2 cup red onion, finely chopped 1 cup fresh parsley, finely chopped 1 tbsp fresh mint, finely sliced 3-4 ripe, peeled peaches, small dice 1/2 cup English cucumber, finely diced 1 cup buttermilk 1/3 cup lime juice 1/3 cup lemon juice 1 tbsp honey 3 tbsp olive oil Salt to taste

Serve with Blomidon Estate Winery 2013 Crémant, a traditional method sparkling wine produced in Nova Scotia’s beautiful Annapolis Valley. This fresh and slightly sweet sparkling wine offers bright fruit aromatics, a perfect pairing for the delicately marinated raw scallops and peach-cucumber flavours in the ceviche.
DIRECTIONS (SERVES 6 - 8)

1. In a mixing bowl, place buttermilk, lemon juice, lime juice, honey, and a pinch of salt, and whisk together. Thinly slice scallops, lengthwise in rounds, and place in a glass or non-reactive bowl. Add the buttermilk mixture, cover, and place in fridge for 2 hours. 2. Chop seeded jalapeño, red onion, cucumber, peaches, parsley, mint and combine; season to taste with salt. Set aside until ready to serve. 3. Spoon marinated scallops out of buttermilk mixture and into a bowl with the chopped fruit and herb mixture. Gently combine and season with olive oil and salt to taste. 4. Place ceviche in bowls or glasses and serve with your favourite corn tortilla chip.

1 bag Made with Local Loaded Oats 1 cup milk 1 cup maple syrup 3/4 cup butter, melted and slightly cooled 1 tbsp vanilla 2 eggs 1 tbsp baking powder 1 tbsp cinnamon 1/2 tbsp ginger 1/2 tsp nutmeg 1/2 tsp coriander 1/8 tsp freshly cracked pepper 1 tsp salt 1 cup chopped pecans, or other nuts Fox Hill vanilla yogurt to serve
DIRECTIONS (SERVES 4 - 6)

1. Preheat oven to 400°F. Combine Loaded Oats, spices, salt, and baking powder in a large bowl, whisk to combine and smooth out any lumps. 2. Grease a 9 x 13-inch baking pan. In another bowl, whisk together milk, maple syrup, eggs, butter, and vanilla. Add wet ingredients to dry, stir to combine and pour into prepared pan. 3. Bake for 35 to 40 minutes. Allow to cool 15 minutes before digging in, and serve with a hearty scoop of Fox Hill yogurt.

INGREDIENTS
340 g box good quality linguini, or homemade pasta dough* 1/2 lb (200 g) local smoked bacon 1 tbsp (15 g) minced garlic 1 1/2 pound Nova Scotia lobster 3 egg yolks 1/3 cup (80 g) shaved Grana Padano cheese Salt & pepper Fresh basil 1 lemon
DIRECTIONS (SERVES 4)
1. Boil the lobster for 8 minutes, then immerse in an ice water bath. Cool for 10 minutes. 2. Shell the lobster, trying to keep the claws whole. Cut the rest of the meat into a large dice, and set aside. Save the tail and claw shells. 3. Slice bacon into large strips, and begin to cook in a large frying pan. When half cooked, add garlic and the shells (to be removed later). 4. While the bacon is cooking, add pasta to salted boiling water. Cook until al dente (usually about 10-12 minutes). 5. In a separate bowl, add egg yolks, half of the Grana Padano, salt, pepper, lemon juice and zest, and lobster meat. 6. Remove the lobster shell from the frying pan. Drain half of the bacon fat from the frying pan, add to egg mixture, and mix. 7. When the pasta is cooked, drain and add to egg mixture while still hot. Mix quickly, as the eggs cook in the mixture; add torn basil leaves. 8. Serve, plate and enjoy. 22

Grasp the body and twist off the large front legs and claws. Separate the claw from the knuckle.

Cut the tail on both sides or grasp it tightly and squeeze until it cracks. Snap off the tail flippers.
Push out the meat in one piece. Peel back the flap on the upper side of the tail piece to expose the vein. Remove and discard the vein.
Break the hinged part off the claw and remove the meat with a fork or pick. Crack the claw with lobster crackers. Be careful to crack the shell only and not damage the meat inside. Knuckle meat can be removed with a lobster fork.
Unhinge the back from the body and remove the green tomalley. The red roe of a female lobster is extremely tasty and considered a delicacy.
Twist the tail away from the body.
Open the main body section by cracking it apart. The delicious meat in this section can be dug out with a fork or pick. Discard the dark sac located between the eyes (since this is not edible). Twist the walking legs from the body. Clench between teeth and nibble meat from legs. The same method can be used to extract meat from tail flippers.

2-3 lbs trimmed local pork tenderloin 1 leek 8 oz local Gouda Cheese, sliced 1 lb Pork Shop Applewood smoked bacon Salt and Pepper to taste
2 cups Ironworks Apple Brandy 3 Nova Scotia Honey Crisp apples, peeled and diced 1 1/2 tbsp Nova Scotia honey 2 cups demi-glace 20 g of fresh sage vegetable oil
DIRECTIONS (SERVES 4)

1. Pre-heat the oven to 350°F. Butterfly the pork tenderloin by slicing vertically down the middle, leaving 1-2 inches at either end, and making sure not to cut all the way through. 2. Place 1/2-inch cheese slices in the centre of the butterflied pork. Wash the leek thoroughly and lay whole leek on top of the cheese. Roll the tenderloin over the leek and cheese. Wrap in bacon to enclose all the ingredients. 3. Place bacon-wrapped tenderloin on baking sheet. Bake in pre-heated oven for 25 minutes.
4. Cook the diced apples in a sauté pan on medium-low heat. Add brandy and honey to the sautéed apple. Add demiglace, and reduce to desired consistency. 5. Pinch off leaves from sage. Heat oil in a small skillet over medium-high heat until hot. Fry 6–8 sage leaves at a time until crisp – approx. 2–3 seconds. Transfer with a fork to paper towels. 6. 1 tbsp olive or canola oil 2 red onions, halved and thinly sliced, then cut into quarters 2 cups sour cream 3/4 cup J. Willy Krauch brand smoked mackerel, flaked 1 tbsp finely chopped chives 1 tbsp finely chopped parsley 1/2 tsp smoked paprika Sea salt & ground black pepper to taste 3 finely chopped chives, garnish Good quality kettle chips
DIRECTIONS (SERVES 4 - 6)

1. In a medium skillet over medium heat, combine the oil and onions. Cook, stirring occasionally, until the onions are caramelized, about 20 minutes. Remove pan from heat and let onions cool to room temperature. 2. In a medium bowl, combine the sour cream, flaked smoked mackerel, chives, parsley, and smoked paprika. Roughly chop the cooled onions, then combine with sour cream mixture. Season to taste with salt and pepper. Cover and refrigerate at least two hours before serving. 3. Place in your favourite serving bowl. Garnish with chopped chives and kettle chips.

1/2 cup minced J. Willy Krauch smoked salmon 5 tsp minced red onion 5 tsp minced capers 4 tsp olive oil 5 tsp fresh dill finely chopped 2 tsp freshly squeezed lemon juice Freshly ground black pepper 5 oz of baby arugula 1 French baguette 2 tbsp butter, melted Fresh dill sprigs, garnish Whole capers, garnish 1 cup vegetable oil
DIRECTIONS (SERVES 4 - 6)

1. In a small bowl, combine the salmon, red onion, capers, olive oil, dill, and lemon juice, and combine. Season with freshly ground black pepper to taste. 2. Slice baguette on a bias, butter the slices, then toast in the oven at 400°F, on a sheet pan, until desired doneness. 3. Heat vegetable oil in a small sauce pot on the stovetop, to 350°F, and fry whole capers for 30 seconds or until they are crisp and the buds open. 4. Top toast points with one tablespoon each of tartare. Arrange on platter and top with arugula. Sprinkle capers on top. Garnish platter with fresh dill sprigs. Serve as an appetizer or hors d’oeuvres.

Melt butter in a large sauté pan. Add bacon, onions, jalapeno pepper, and tomatoes. Sauté for five minutes. Deglaze the pan with red wine vinegar and grainy mustard for a few more minutes. Add the brown sugar and maple syrup In a large bowl, add the mashed potatoes, cod mixture and let simmer for 60 minutes on low heat. Stir and summer savory. Mix well. Stir in the pepper, salt occasionally until reaching jam consistency. and parsley, and refrigerate the mixture for 30 minutes Cool, jar and refrigerate. until firm. Remove from refrigerator and form into 3 oz. (85 g) patties. Lightly dredge in flour and fry in butter Serve on slider buns topped with bacon relish. until both sides are golden in colour. Drain and rinse the cod with fresh water. In a medium sauce pan, add the cod and onions. Top with cold water and bring to a gentle boil. Cook until fork tender - approximately 8 to 10 minutes then drain.

1 lb fresh cooked Nova Scotia lobster, broken into pieces 1/4 cup mayonnaise 1 stalk of celery, diced very fine 1 tsp lemon juice Salt and pepper to taste 2 tbsp of butter 6 slider rolls 1 cup fresh greens 6 cherry tomatoes
DIRECTIONS (SERVES 4 - 6)

1. In a bowl, gently mix the fresh cooked lobster, mayonnaise, celery, lemon juice, and salt and pepper to taste. Take care not to overwork the mixture. Refrigerate until ready to use. 2. Heat a large pan over medium heat. Butter the cut side of each slider roll and place them, buttered side down, in the pan. Fry rolls until lightly golden, about 1 minute, and transfer to a work surface.
3. Place a cluster of fresh greens on the bottom half of each slider roll. Spoon approximately 3 tablespoons of lobster mixture on top of greens, then top with other half of the slider roll. 4. Garnish with a toothpick-skewered cherry tomato, and serve, immediately, with a chilled bottle of Jost Tidal Bay.

Since 1980, the Laceby family has served regionally-inspired cuisine to locals and visitors alike. Dinner is prix fixe. Soup, salad, main course (choice) and dessert (choice). The offering changes each evening to reflect diversity and what’s in season, locally. Everything is made and baked in-house. In season much of the herbs and produce are supplied by the extensive on-site gardens, which you can tour.
