One night in the summer of 2014, Shaun and Danny were having a few craft beers around the backyard fire discussing how Nova Scotia needed more great micro breweries.

With a focus on seasonally fresh ingredients, regulars to our intimate eateries will note that the menu changes seasonally. Pizzas with peach, prosciutto, and goat cheese one month, followed by pear, walnut, and crispy sage the next.

They discussed how great it would be to open a full-fledged microbrewery and use recipes from the brewpub to produce the same great beer on a larger scale. Like many talks around a fire on a warm summer night, the more they drank, the more it sounded like a great idea!

We’re also a hot spot for seasonally inspired cocktails and great desserts like the salted caramel tart, which are perfect to enjoy on our lovely outside terraces in summer. We offer special lunch and brunch menus. Take-out and gluten-free pizza crusts are also available.

When they woke up the next morning, the late night discussions came back to them and it didn’t sound like crazy talk. Discussions turned into planning, and that turned into securing a location, and before they knew it, they were building a brewery. This is how Nine Locks was born.

B ee f S h ort R ibs wit h L oaded M as h Beef Short Ribs 5 lbs bone-in beef short ribs, full slab, uncut 8 cups water 1/4 cup salt 1/4 cup sugar 1/4 cup vegetable oil 2 onions, chopped 2 small carrots, chopped 2 stalk celery, chopped 1 ripe tomato, quartered 4 cloves garlic 2 bay leaves Several sprigs fresh thyme 2 star anise pods 3 cups red wine 4 cups low sodium beef broth 1/4 cup Worcestershire sauce salt and pepper to taste

Loaded Mashed Potatoes 3 large potatoes (russet or Yukon gold) 6 strips of bacon ¼ cup butter ½ cup sour cream 1 cup grated local aged cheddar 3 green onions, sliced salt and pepper to taste Wild Mushrooms 2 lbs cleaned mixed mushrooms 1 tbsp extra virgin olive oil 2 tbsp butter salt and pepper 1 tbsp chopped Italian parsley

Beef Short Ribs

1. Mix water, salt, and sugar in bowl. Submerge beef in brine for 4 to 6 hours. Remove and pat dry with paper towels. Discard brine. 2. Heat large skillet and add vegetable oil. Sear beef on all sides over high heat until it takes on golden brown, caramelized exterior. 3. Transfer beef to roasting pan. Add vegetables. 4. Cover beef and vegetables with herbs, wine, beef broth and Worcestershire sauce. Bring to a boil. As soon as it boils, cover pan with aluminum foil and place in 300F oven for 3 hours.

5. When meat is tender, remove from oven and allow beef to cool fully (preferably overnight). 6. Once cool, skim any solidified fat on top of beef jus in pan, then take out beef. Remove bones from meat and cut beef into 6 ounce portions (rectangles 2 by 3-inches long). 7. Transfer braising liquid to saucepan. Bring to boil. When reduced by half, purée liquid including vegetables and herbs, then pass through sieve. Place sauce back on heat and simmer. 8. To reheat short ribs, add to saucepan with sauce and place in 350F oven for 12 minutes.

1. Preheat oven to 400 F.

1 1/2 cups unsweetened peanut butter 1 tbsp fresh ginger, minced 1 garlic clove, chopped 1/2 tsp cumin 3 tbsp lime juice 3 tbsp soy sauce 1 tsp sesame oil 1 tsp sriracha sauce, to taste 1/2 cup coconut water, or more depending on thickness of sauce Local maple syrup, to taste

2. Place rice in a sieve and rinse well under cold water. Place rice in saucepan, add 2 cups of water, a knob of coconut oil, a pinch of salt, and bring to a boil. Cover, turn to low, and leave to cook for 40 minutes (or cook according to package directions - brown rice instructions can vary). 3. Place cubed carrots and beets on roasting pan. Toss with olive oil and a sprinkle of sea salt and black pepper. Roast for 20 minutes, or until crispy-rimmed and cooked through.

4. While vegetables are roasting, make the peanut sauce by combining all ingredients in a food processor and blitzing until smooth. 5. Taste sauce and adjust accordingly. If too thick, add more coconut water. Set aside. 6. Place kale and chard in steamer over a pot of boiling water. Steam for 2 minutes, or until wilted. 7. To serve, divide rice between bowls. 1. Spread 3-4 tbsp of labneh on a plate. 2. Place a quarter of the roasted carrots on plate.

3. Sprinkle 2-3 tbsp of granola over carrots.

4. Break apart several slices of pickled red onion and place on top of salad.

BLU EBERRY CHIA FLAX & O AT S Q U A R E S 3 1/2 cups oats 3 cups flax flour 4 tbsp chia seeds 2 large bananas, ripe, mashed 1/2 cup Nova Scotia honey 1/4 cup sugar 1/4 cup butter 1 tsp vanilla

Blueberry Chia Jam

4 1/2 cups frozen Nova Scotia wild blueberries 2 tbsp lemon juice 1 tbsp Nova Scotia honey 4-5 tbsp chia seeds

Yogurt Drizzle

1/2 cup plain yogurt, high fat 3 tbsp icing sugar 1 tsp vanilla 1 tbsp melted coconut oil 8 tbsp white wine vinegar Fresh ground pepper, to taste Sea salt, to taste

Oat Mixture

1. In a large mixing bowl, combine oats, flour, chia seeds and banana. 2. In a small saucepan combine honey, sugar, butter and vanilla over low heat. 3. Whisk until butter is melted and honey is dissolved. 4. Pour the wet ingredients over the oat mixture and mix well. Set aside.

Blueberry Chia Jam

1. In a medium saucepan over medium heat, combine blueberries, lemon juice and honey. Simmer until blueberries begin to breakdown and reduce. 2. Turn the heat to low, and let simmer until contents have reduced by at least half. 3. Remove from heat and let cool for 5 minutes. Add 4 tbsp of chia seeds, mix and let sit for 5 minutes until thick like a jam. If mixture is not thick enough, add another tbsp of chia seeds.

1. In a small bowl whisk together yogurt, icing sugar, vanilla and coconut oil.

1. Preheat oven to 375F.

2. Line a 9� x 13� dish with parchment paper. 3. Divide oat mixture into two equal parts. Spread the first half of the mixture evenly onto the bottom of the pan. Pack down and spread to the edges. 4. Add blueberry chia jam to the top of the oat mixture and spread across the surface evenly. 5. Add remaining oat and flax to the top, crumbling it across. Smooth it out gently, as to not press the blueberry jam through. 6. Bake for 20-25 minutes, remove and let cool for 30 minutes. Drizzle with yogurt. 7. Refrigerate 2-3 hours before cutting into them. 4 lbs butter 2 cups whipping cream 4 cups brown sugar 1/2 cup Ironworks Bluenose Rum

IRONWORKS SWEET APPLE BRANDY We took our traditional Apple Brandy, made from 100% Nova Scotia apples, fermented, distilled, and aged in Lunenburg, then we added just a bit of local maple syrup. It’s a perfect compliment to this rich and delicious dessert. Cheers!

Bread Pudding

1. Preheat the oven to 350 F. 2. Using a mixer, mix all ingredients except for bread and raisins. Mix until smooth, then cover and leave overnight in the refrigerator. 3. Add 1 tbsp of raisins to the bottom of each ramekin. 4. Ladle 2 oz of pudding mixture into the bottom. Top with enough bread cubes to slightly over-fill the ramekin. 5. Ladle 3 oz of pudding mixture over top of the bread cubes. 6. Fill a deep pan with a couple inches of water and place ramekins in the water.

7. Place in the pre-heated oven and bake until bread starts to turn brown. To test, poke the centre - it should have resistance. 8. Remove from the oven, and pan, let cool.

Rum Sauce

1. Melt butter in a saucepan over low heat, stir in brown sugar. 2. Once fully combined, add rum and stir. 3. Allow mixture to come to a boil, while continuously stirring. 4. Add cream and mix thoroughly.

To serve

1. Remove the bread pudding from ramekin and place on plate. Top with 2 oz of warm rum sauce.

9 oz shrimp, peeled and deveined 4 oz Peasant’s Pantry’s orange and fennel sausage 1 tbsp egg white 1 tsp cornstarch 1/4 tsp salt 1/4 tsp ground pepper

SPICY AIOLI

1/2 cup mayonnaise 1/4 cup sour cream 2 tsp sambal oelek 1 lemon, juiced

PORK BELLY

16 oz skinless pork belly 1 oz garlic, pureed 1 tsp brown sugar 2 1/2 tbsp fish sauce 1/2 tbsp Worcestershire sauce 1/4 tsp ground pepper 1/4 tsp salt

GARNISH

2 oz fennel, thinly sliced, rubbed with olive oil and seasoned with salt and pepper 2 oz red onion, rubbed with olive oil and seasoned with salt and pepper 2 oz arugula 4 burger buns, sliced

1. Place shrimp and sausage meat (removed from casing) in a food-processor, pulse until coarsely ground. 2. Add egg white, cornstarch, salt and pepper and pulse again until smooth and sticky. Cover and place in fridge until required. 3. Cut pork belly in long strips about 1/3” thick. Mix evenly with garlic, fish sauce, Worcestershire sauce, brown sugar and black pepper and marinate for at least 4 hours. 4. To make aioli, whisk all ingredients together and place in fridge until required.

6. Transfer pork belly to a plate and reserve pork fat in the skillet. 7. Return the skillet to medium heat to cook thin patties of the shrimp sausage-mixture (1cm) for 4 to 5 minutes, until golden browned and cooked through, flipping once. 8. Place the shrimp sausage patty on the bottom half on the bun, top with fennel and arugula, then 2 or 3 slices of pork belly. Add a generous dollop of spicy aioli, finish with the top half of the bun.

5. Once marinated, lay pork belly in a preheated skillet over high heat until both sides are golden brown and caramelized, flipping once.

Garlic Aioli

1 cup mayonnaise 2 garlic cloves, minced 1 tsp Dijon mustard ½ tsp lemon juice

Marinated Tomatoes

3 medium vine-ripened tomatoes, diced 1 tbsp red onion, minced 1 tbsp extra virgin olive oil 1 tbsp flat leaf parsley, chopped 1 tsp lemon juice Ground pepper, to taste Fine sea salt, to taste

1. Preheat oven to 425 F.

5. Lightly toast buns in the oven.

2. Place scallops on a wire rack placed over a baking sheet pan, with even spacing between scallops.

6. To assemble, place one large leaf of bib lettuce on each bun, then add a heaping spoonful of marinated tomato. Drizzle with aioli and top with 3 scallops. Serve immediately.

3. Bake scallops on middle rack for 10 minutes, remove from oven and flip. Bake for another 15 to 20 minutes, or until bacon is crisp and scallops are cooked. 4. Combine tomatoes, red onion, olive oil, parsley, and lemon juice, season to taste with sea salt, and black pepper. Allow to marinate for at least 30 minutes.

Combine mayo, minced garlic, Dijon mustard, and lemon juice and mix thoroughly.

N OVA SCOT I A HADDOCK FRANCESE 1/4 cup sliced almonds 4 4oz Nova Scotia haddock tail pieces 3 large eggs Splash of heavy cream 4 tbsp extra virgin olive oil, divided 3 tbsp butter, divided Flour, for dredging 2 garlic, finely chopped 12 grape tomatoes, halved 1/2 cup Nova Scotia white wine

1 lemon, thinly sliced 3 tbsp capers Handful of flat-leaf parsley, finely chopped 1 lb fresh spinach Salt and pepper

1. Toast almonds over moderate heat until lightly browned and reserve.

8. Add chopped garlic to pan and bring to a sizzle.

2. Preheat a large non-stick skillet over medium-low heat.

9. Add tomatoes, wine, lemon slices, and capers to the pan and increase heat to medium-high.

3. Season fish with salt and pepper.

10. Reduce by half, then add remaining butter and parsley to pan.

4. Beat the eggs with cream. 5. Add 2 tbsp olive oil to the skillet, swirl the oil in the pan then add 2 tbsp butter, which has been cut into small pieces. 6. Dredge haddock in flour and then dip the fish into the egg, making sure to completely coat fish in egg wash.

11. Turn off heat. Stir in spinach until wilted and season with salt and pepper. 12. Pour sauce over fish and top with toasted almonds.

7. Add fish to pan and cook on both sides until just golden, around 5 to 6 minutes. Transfer fish to a plate and cover with a loose foil tent to retain heat.

1. To make syrup, combine white sugar and blueberry juice in a sauce pan.

3. In a collins or highball glass, add 1/3 oz blueberry syrup, 2 lime wedges and 3-5 mint leaves.

2. Heat until it starts to bubble on the surface. Remove from heat, allow to cool and put in a mason jar or bottle.

4. Muddle gently. Add Three Sheets to the Wind White Molasses Moonshine and ice. Gently stir. 5. Top with soda water and garnish with lime wedge and mint sprig.

L O B S T E R D iavolo pappardelle pasta 4 whole shelled lobsters 4 tbsp olive oil, divided 1 cup (plus a splash) local white wine Sea salt 500g dry pappardelle noodles 2 carrots, peeled 1/2 fennel bulb, tough ends removed

1 small yellow onion, peeled 1-2 chilis 1/3 cup tomato paste 3 398mL cans crushed tomatoes 3 tbsp white wine vinegar 3 tbsp unsalted butter 1/2 cup parsley, chopped 3 tbsp chili oil Hard aged cheese, for garnish

1. In food processor, chop carrot, fennel, onion and chilis until small and uniform. 2. In a large pot, warm olive oil over medium-low heat and sweat the chopped vegetables until tender and the fennel and onions have become translucent. Season with a few pinches of salt. 3. Add tomato paste to pot, stir and let cook for a minute until it sticks to vegetables. 4. Deglaze pot with a splash of wine. Simmer until wine has reduced slightly, then add crushed tomatoes and vinegar. Stir, then cover and let simmer for 20-25 minutes. 5. In large frying pan, heat remaining olive oil over medium heat. Cut lobster into 1-2� pieces. Once the pan is up to temperature, add lobster and sprinkle with sea salt. Cook lobster 5-6 minutes, turning halfway through until the meat is opaque and firm to touch. Remove lobster and set aside to cool.

6. Add a cup of wine to the frying pan pan to deglaze and simmer for 2-3 minutes until reduced by half. Add remaining liquid to the simmering tomato sauce and stir. 7. Cook pasta to el dente, rinse, set to the side. 8. Add butter and most of the parsley, saving a bit for garnish, to simmering tomato sauce. Taste the sauce and, if needed, add salt to taste. 9. Remove sauce from heat and add noodles and lobster. Toss gently. 10. Garnish with parsley, chili oil and hard aged cheese. Serve immediately. Recipe credit: Jess Emin

4 hot house tomatoes 1 tsp celery seed 2 tbsp smoked paprika

1. Grate tomatoes into bowl and spread on to a parchment lined sheet. Dry in an oven at 160F overnight. 2. Mix dry tomato with celery seed and paprika then blend in a spice grinder. Set aside.

1. Slice iceberg lettuce to get a 1� cross section then cover with a damp towel. Set in the fridge. 2. Cook eggs in boiling water for 6 minutes. Let them cool, peel them, and set aside. 3. Slice the button mushrooms, celery and cornichons and set aside. 4. Pick 3 or 4 sprigs of dill into nice florets and set aside. 5. Steam lobster for 10 minutes. Chill, crack and carefully remove meat from the shell. 6. Cut lobster meat into bite size pieces.

1. Finely dice shallots and soak in water. Strain. 2. Finely dice the dill pickles, capers and dill. Mix these and the shallots together, then set aside. 3. Mix the mayo, ketchup, cream, Worcestershire, lemon, brandy, salt and pepper. 4. Add the chopped mixture to the dressing.

To serve

1. Place cut rounds of iceberg lettuce on plate. 2. Spoon Mary Rose Remoulade on top and gently spread, about 2 spoons per salad. 3. Place 2 pieces of claw meat and 2 pieces of tail meat on top of lettuce. 4. Gently cut the soft egg in half and place on left side of lettuce. 5. Arrange mushrooms, celery and cornichons artfully on top of lettuce and lobster. Finish with dill fronds. 6. With a mesh sieve, sprinkle tomato powder over the left half of the salad, dusting the egg and some of the lobster and lettuce.

Fruit Compote

1. Place 1 cup of chopped dried mixed fruit in a bowl with 1 cup of your favourite local icewine, cover and allow to sit at room temperature for at least 3 hours.

1. Place water in a small bowl. Sprinkle gelatin over the water and set aside until softened, about 5 minutes. 2. Place cream, milk, 3 tablespoons of the sugar, and salt in a saucepan. 3. With a small knife, cut halfway through the vanilla bean lengthwise. Open vanilla bean and scrape the seeds into the pot. Add the beans to vanilla mixture. 4. Bring saucepan to a boil over high heat, then reduce to medium heat and boil for 1 minute, stirring constantly.

5. Remove pan from the heat and whisk in remaining sugar and gelatin mixture until dissolved. 6. Strain cream through a fine-mesh strainer; discard vanilla beans. 7. Chill in the refrigerator or over an ice bath until cool and slightly thicker than heavy cream, but not set. Pour into 6 5-oz ramekins. Refrigerate for 3 hours. 8. After the custard is set, cut around the ramekin with a small knife and turn out onto a dessert plate. 9. Place one tablespoon of fruit compote on top of custard and drizzle leftover icewine around custard. Garnish with fresh mint and serve.

1. In bowl of a stand mixer, whisk together milk, egg, egg yolk and yeast.

2. Using the dough hook attachment, add flour, sugar, ¼ cup butter, salt and beat at low speed for about a minute, until dough comes together. Continue beating for about 5 minutes, until dough is smooth and pulls away from sides of the bowl.

4. With a pencil, lightly draw a 12 x 8-inch rectangle on a sheet of parchment. Turn the paper over after drawing the rectangle so that either ink or led isn’t transferred to the butter. Place 1 cup of butter on parchment and roll out. Top with another sheet of parchment and shape to fit the rectangle, keeping it nice and

straight to the edges. Transfer wrapped butter on a baking sheet, refrigerate overnight. 5. Turn dough onto a lightly floured surface and shape into a 8 x 10-inch rectangle. Wrap dough with plastic wrap, refrigerate overnight. 6. Let butter rectangle sit at room temperature for 15 minutes. 7. On a lightly floured surface, roll dough into a 16 x 12-inch rectangle. Unwrap butter and place at centre of the dough. Fold dough over the butter, meeting in the middle and press to seal dough around butter. 8. Turn dough 90 degrees and roll dough into a 18 x 12-inch rectangle. Fold into thirds, turn 90 degrees and roll again. Fold into thirds once more. 9. Wrap dough in plastic wrap and refrigerate until cold, about 20 minutes. Roll and fold into thirds. Wrap in plastic wrap and refrigerate for 1 ½ hours.

Make the morning bun

1. Grease muffin pan with cooking spray. 2. In a small skillet over medium heat, melt remaining butter. Add onions and cook until translucent, about 5 minutes. Remove from heat and let sit at room temperature. 3. Roll dough into a 18 x 12-inch rectangle. 4. In a stand mixer with paddle, whip 1 cup of quark with 3 tbsp of heavy cream until fluffy. Spread the quark mixture onto dough, sprinkle cooked onions and gouda cheese, leaving a 1-inch border on the bottom edge of the dough. Starting at 18 inch long side, roll up dough. Trim the edges and cut into 1 to 1 1/2-inch pieces. Place rolls into greased muffin tins. 5. Preheat oven to 375 F degrees. 6. Bake for 15 to 18 minutes or until golden brown. Let cool in muffin pans for 15 minutes. Remove and serve with local honey or jam.

1. Mix salad ingredients together and arrange on a platter or plates.

1. Dry scallops by patting down with a paper towel. Season with salt and cracked pepper.

2. Make dressing by combining olive oil, red wine vinegar, maple syrup, garlic, Dijon and fresh thyme in a sealed jar. Shake until ingredients are mixed.

2. Heat pan on medium to high temperature and add vegetable oil to the hot pan. 3. Sear scallops by gently placing the seasoned top side down into the hot oil. 4. Cook for approximately 2 minutes, then flip. 5. Cook for another minute on the other side, until slightly golden brown. Remove immediately. 6. Serve with dressed arugula and apple salad.

2 8oz Atlantic salmon fillets, cubed in 16 pieces 16 large shrimp - peeled, deveined 16 large scallops 3 tbsp fresh minced garlic 1/4 cup extra virgin olive oil Fleur de sel or sea salt Fresh ground pepper 8 8” or 10” stainless steel or pre-soaked bamboo skewers

1/2 cup butter 2 tbsp grated lemon peel 2 oz cooked lobster meat, chopped 1 tsp dill, chopped 1 tsp tarragon, chopped Fleur de sel or sea salt Fresh ground pepper

8 ripe grape or cherry tomatoes 1 lemon cut into 8 wedges 3 tbsp parsley, chopped

1. In sturdy medium saucepan, gently melt butter on low heat.

5. Evenly distribute brochettes on baking sheet, lined with parchment and brushed lightly with olive oil.

2. Add lobster and salt, allow to sit for a few minutes.

6. Place in oven for 8 to 10 minutes, turning half way through.

3. Add herbs, pepper, then grated lemon peel.

7. Remove from oven and carefully add lemon wedge and tomato to the tip of each skewer.

4. Keep on very low heat until ready for use.

1. Pre-heat oven to 400 F. Prior to cooking, ensure seafood is dry. 2. In large mixing bowl, add seafood, garlic, salt, pepper and olive oil. 3. Toss gently and allow to sit for 10 minutes.

4. Take skewer and add a scallop, a shrimp and morsel of salmon, then repeat. Continue until all skewers are complete, leaving 1” at tip of each skewer.

8. Place two brochettes on a plate, drizzle lobster butter over each and garnish with a pinch of parsley. A squeeze of lemon juice on top is optional. Brochettes may be served with a lovely green salad with local honey and white balsamic vinaigrette, or an aromatic rice of your choosing. 4 1 lb lobsters 4 oz butter 2 sprigs dill 16 ml truffle oil Salt and pepper

Fava Bean Purée

1 lb fava beans, cleaned 2 cups vegetable stock Dash of tabasco Juice from 1/2 lemon 8 baby carrots 2 tsp vegetable oil Salt and pepper

3 tbsp olive oil ½ white onion, finely chopped 2 cups Arborio rice 4 cups fish or vegetable stock 8 stalks asparagus 1/4 cup local white wine 3/4 cup Parmesan cheese 1 tsp flat leaf parsley, chopped 1 tsp fresh chervil, chopped 1 tsp chives, finely chopped 4 oz butter 1 lemon, juiced and zested Salt and pepper to taste

Lobster

1. Bring large stock pot of water to boil. Add 2 cups kosher salt to water.

6. Repeat until most of stock is used.

2. Boil lobsters for 5 min. Submerge in ice water to cool.

7. When using last of the stock, add asparagus and continue to cook.

2. Place ¼ of risotto in middle of plate. Place lobster on top of risotto.

3. Remove lobster from shell. Cut tail in half to remove back vein and impurities.

8. Once liquid is almost fully absorbed add herbs, lemon zest and juice, Parmesan and butter.

6 - 8 McIntosh or Gravenstein apples 3/4 cup sugar 1/4 cup all-purpose flour 1 tsp cinnamon 1/4 tsp salt 3 tbsp salted butter Juice of one lemon

1 3/4 cups & 1 tbsp all purpose flour 1/2 tsp salt 1/3 lb lard 1 tsp egg, beaten 1 tsp white vinegar Ice water Extra flour for dusting surfaces 1 egg OR 1/4 cup cream for brushing the pastry

1. Stir flour and salt together, then cut in the lard until the shortening is in pea size pieces. 2. In a 1/3 measuring cup, combine 1 tablespoon of egg and white vinegar. Top the rest of the measuring cup with ice water. Stir gently. 3. Drizzle water mixture over flour mixture and mix together until it forms a ball. Wrap with plastic wrap and place in the refrigerator for 1 hour.

2. Remove the dough from the refrigerator and cut it into 2 equal portions. 3. Lightly flour the work surface and roll dough into 2 equal-sized rounds. Use the pie pan as a measure for the size; pie dough should exceed the edge of the pan by 1 – 1 1/2 inches. 4. Put the crust base into pie plate and fill with apples. Apples should make a mound that goes 1 or 2 inches above top of the pie plate.

1. Peel, core and slice apples, keeping as much of the apple as possible. Drizzle apples with lemon juice, toss and set aside.

5. Take 3 tablespoons of chilled butter and pinch small pieces off and place over top of apples.

2. In a small bowl, whisk together sugar, flour, cinnamon and salt. Set aside.

6. For the pie top, roll remaining dough and cut into 8 strips. Start by laying 4 strips down all in the same direction, and then start the cross section, going over and under.

3. Pour sugar mixture onto the apple slices and toss until evenly coated.

1. Preheat the oven to 425F.

7. Cut extra dough off with scissors to ½ inch overhang from the pie plate, then fold dough over the edges and either pinch or press down with a fork. 8. Once pie is ready to bake, brush the crust and top with either beaten egg or heavy cream. 9. Cover the crust with tinfoil. 10. Bake for 50-60 minutes, or until pie is golden brown. 1. In a pan over medium-low heat, cook sliced onion until soft and translucent.

1. Using a mandolin, slice potato and soak in cold water for 1 hour to remove excess starch.

2. Bring water to a boil and steam lobsters for 20 minutes.

2. Slowly add stock throughout cooking process, making sure onions are always covered in 1 inch of stock.

2. Once soaked, dry potato between sheets of paper towel until liquid is absorbed. Potato should become white around the edges.

3. Once translucent, puree until smooth.

3. Heat oil to 300-325F. Fry potato until bubbles no longer appear.

M aple B acon C r ê pes Crêpe Stuffing

4 eggs sunny-side up 1 package local maple smoked bacon 1 package local breakfast maple sausages 2 large potatoes Mayonnaise (to taste) Maple Syrup (to taste)

Crêpe Batter

4 eggs 1 1/3 cup whole milk 1 cup all purpose flour 2 tbsp butter, melted and cooled ¼ cup parsley, finely chopped ½ tsp salt Dash of fresh ground pepper

Crêpe Stuffing

1. Prepare the eggs sunny-side up. 2. Fry or bake the local maple smoked bacon. 3. Pan fry the local breakfast maple sausages and slice into rounds. 4. Wash and peel the large potatoes then cut them into small cubes, season and pan fry. 5. Set aside all ingredients and keep warm.

Crêpe Batter

1. In a large mixing bowl, beat together eggs, milk, butter, parsley, salt and pepper. Mix in flour a small amount at a time until the batter is uniform. 2. Place a 9 inch, or larger, frying pan over medium to high heat. Once it reaches temperature (a drop of water will sizzle and evaporate quickly from the pan) use a ½ cup measuring cup to pour the crêpe batter into the middle of the pan. 3. Immediately lift off heat and rotate the pan to coat the entire pan to its edges and place back on heat, for about 20 seconds, watching closely for it not to burn, and flipping with a large spatula once golden brown.

Crêpe Assembly

1. Place one crêpe on each plate and place a tablespoon dollop of mayonnaise (or for those more into sweetness, substitute for peanut butter or maple syrup) on each, and spread around the middle. 2. Place the egg , a few strips of bacon, and ¼ of the sausage slices and hash browns into the middle area of each crêpe and season with salt then fold the edges toward the middle to make 4 folds. 3. Serve with maple syrup, salt and pepper. Recipe credit: Jess Emin

4. Repeat until batter is gone. HINT: Any extra crêpes can be frozen in a plastic sealable bag with wax paper between each crêpe. 5. Keep the crêpes warm in the oven, on a plate, at the lowest setting.

4-6 halibut filets (approximately 2.5” x 4” by 1.5” thick) For best results, use fresh halibut; DesBarres Manor proudly serves local fish caught by Chef Anna’s fisherman husband.

Glynnevan Double Barrel Whisky Sauce

4 tbsp olive oil 8-10 slices low fat bacon or pancetta, diced 1 small red onion, finely diced 2 tbsp dijon grain mustard 2 tbsp Nova Scotia maple syrup 2 tbsp Glynnevan Double Barrel whisky

Grilled Halibut

1. Wash and dry halibut.

2. Heat frying pan with additional olive oil to high temperature. Once hot, turn down and cook over medium heat.

1. Heat the olive oil.

3. Season halibut with salt and pepper. Cook for 3 minutes and then turn over and continue cooking until halibut feels slightly firm to the touch.

3. Add red onion to the oil and slowly cook until translucent.

2. Add diced bacon/pancetta and cook until lightly browned. Remove from pan.

4. While onion is cooking, whisk together the mustard, whisky, maple syrup and vinegar. 5. Once onion is cooked, return bacon to the pan along with the whisked ingredients. 6. Season with salt and freshly ground pepper. 7. Serve over cooked halibut with your favorite roasted potatoes and veggie.

SWEET & SAVO U RY GRILLED CHEESE Grilled Cheese

4 slices local sourdough bread 1 cup grated local cheddar cheese 1 pear, thinly sliced 2 – 3 tbsp fresh thyme leaves (approx. 6 – 8 thyme segments) 2 tsp Dijon mustard 2 tbsp local honey 2 tbsp butter 1 garlic clove

1. Warm a large skillet over medium-to-low heat. 2. Take 4 pieces of bread and make 2 pairs of them. 3. Divide cheeses between the 2 sandwiches, and sprinkle each with thyme, making sure to save some for later. 4. Place pear slices over entire surface of a sandwich. Add 1 teaspoon of Dijon and a drizzle of honey to the second half of each sandwich. Save rest of the honey for later. 5. Close the sandwiches. 6. Put 1 tablespoon of butter in frying pan and let it melt, making sure to cover the entire surface area.

8. Add remaining butter to pan and move the sandwiches around to make sure they get greased with butter. 9. Press down on tops of sandwiches with the spatula, wait another 3 – 4 minutes and check for browning. Check if the cheese has melted.

To serve

1. Once the grilled cheese is done cooking, place each on a plate, rub the top with the raw garlic clove and drizzle with honey and sprinkle with thyme. Recipe credit: Jess Emin

7. Place sandwiches into frying pan. Let cook for 3 – 4 minutes, then check for colour. If browned on the bottom, carefully flip with a large spatula.
