PEAR COLLINS WITH IRONWORKS PEAR EAU DE VIE

SERVES 1

1/2 oz fresh lemon juice, 3/4 oz honey syrup (dissolve 2 parts local honey into 1 part hot water & cool), 1 1/2 oz Ironworks Pear Eau de Vie, 2 oz Nova Scotia Traditional Method Sparkling Wine

GARNISH: local pear, sliced

1. Fill a cocktail shaker tin with ice, lemon juice, honey syrup and Pear eau de Vie and shake well. 2. Strain into chosen glass and top with 2 oz of Nova Scotia traditional method sparkling wine. 3. Garnish with slices of fresh pear.
