1. Fill a cocktail shaker tin with ice, lemon juice, honey syrup and Pear Eau de Vie and shake well. 2. Strain into chosen glass and top with 2 oz of Nova Scotia traditional method sparkling wine. 3. Garnish with slices of fresh pear.
