1. Whisk egg yolk with maple syrup and rosemary in a glass bowl. 2. Slowly add oil to emulsify while whisking. 3. Add lemon juice and zest. Season with salt and pepper, to taste.

1. Heat a cast iron pan to medium - high heat. 2. Place oil into pan and wait until it reaches temperature. Pat fish cheeks dry and season with salt. 5. Add pastrami stock and butter, use your wooden spoon to get golden bits off the bottom of the pan. Simmer for 1 minute. 6. Add dried cherry tomatoes, kohlrabi, tsp of mustard, mint and fish cheeks. Continue to simmer for another minute or until the kohlrabi is slightly tender. Taste, season, and serve.

1. Chop the scallops in quarters, chop shrimp in thirds and chop lobster claw meat in fourths. Place in a bowl. 2. Add in mozzarella and garlic butter. Mix until ingredients begin to form a ball. 3. Slice down the tail of the lobster, and open the shell, peeling back the lobster meat. 4. Form the seafood mixture into a 4 oz. oval and place it into the cracked lobster tail. 5. Sprinkle breadcrumbs on to the tail before baking at 350F for 11 minutes.

1. Heat frying pan on low heat. Sauté lobster meat in 2 tbsp melted butter and 1 tbsp oil until a little colour is released into butter mixture, about 2 minutes. Add cream, increase heat and simmer for about 5 minutes or until cream reduces and thickens.

Heat frying pan on medium heat. Add 2 tbsp butter and 1 tbsp of vegetable oil. Cook haddock fillets until golden on each side and fish is cooked through, about 2 minutes per side.

Preheat broiler in oven on low setting. Brush sheet pan with melted butter. Lay breaded haddock fillets on pan and brush with melted butter. Broil fish for 10 minutes or until golden and cooked through.

Dough

1. In a food processor add flour, salt, sugar and butter. Blend until it forms course meallike consistency. 2. Slowly add water to mix until it comes together. Dough should not become too wet. Mix for another 10 minutes then remove and keep somewhere cool. 3. Roll out to 1/4 inch thick and line a 10 in. tart pan. 4. Blind bake with parchment and beans or rice for weight to help hold shape for 15 minutes at 350F.

1. Cream together butter and sugar until smooth. 2. Add eggs slowly and mix until well combined. 3. Fold in almonds. 4. Add mix to parbaked shell, smoothing with spatula. 5. Place in oven and bake at 350F until set (approximately 20 minutes.)

1. Cut into 8 pieces, dust with icing sugar and slivered almonds. 2. Pour custard over each piece upon service.

1. Drain shrimp and allow to dry on paper towel. 2. In a food processor, combine cream cheese, mayonnaise, minced garlic, red onion, salt and pepper until thoroughly integrated.

For chilled version

1. Tightly wrap desired serving bowl with cellophane. 2. Place in fridge for at least 1 hour before serving.

3. Add shrimp, olive oil, lemon zest, lemon juice, Tabasco and cayenne and blend in processor for 1 1/2 minutes or until shrimp have been shredded to combine with cheese mixture.

3. Remove 20 minutes before serving.

S E A R E D S C A L LO P S WITh B A C O N & LIME B U T T E R PA I R E D W I T h J O S T T I D A L B AY SERVES 4 20 large Nova scotia scallops 1/4 cup demerara sugar 4 limes - 2 for garnish, cut into 12 wedges and 2 for zesting and juicing 2 strips thick cut local bacon 1 tbsp red chili flakes 3 tbsp butter salt and pepper, to taste garNish 2 cups organic greens

1. Place scallops on sheets of paper towel to remove excess moisture. Do not squeeze or press scallops. 2. Spread Demerara sugar over a large plate. Place scallops on top, rolling each to coat slightly. 3. Chop bacon and add to a small skillet on medium heat. 4. Stir occasionally and cook until slightly browned. Do not crisp. 5. Remove from heat, drain and set aside on paper towel to absorb excess fat. 6. Place a large skillet on stove top set to medium-high heat. Heat pan thoroughly. 7. Add 1 tbsp butter and allow to melt. 8. Place scallops evenly in pan. Reserve extra sugar. Allow scallops to sear for 2 minutes. 9. Add crumbled bacon to pan and turn scallops to sear on other side.

What began with two hives placed on the family farm to pollinate their blueberry fields resulted in a successful pollination and a delicious byproduct: honey – minimally processed from the hive to your table. Now, youngest son Benjamin looks after the 350 some beehives while Margaret continues to produce and market their honey products including liquid and creamed honey, honeycomb (seasonal), honey butters, cranberry chutney, and gluten-free Bee Sting BBQ Sauce and Bee Sting Honey Mustard. As well, our flavoured honey, HoneyLiscious! Cinnamon and Lemon Spreads. Margaret can be found weekly at the Antigonish Farmers’ Market, and products can be found at various retailers throughout Nova Scotia.

Crisp TOPPING 1 cup of flour 3/4 cup oats, rolled or quick 1/2 cup butter, softened 1/3 cup of white sugar 1/4 tsp cinnamon 1/2 tbsp thyme leaves, destemmed (optional)

1. Preheat oven to 375F.

3. Once mixed, crumbled, and butter is incorporated throughout, set aside.

8. Bake for 55 minutes or until blueberries are sticky, bubbling, and crisp has turned golden.

Filling 3/4 cup white sugar 3 tsp cornstarch 3 tsp salted butter, melted and cooled 1 large egg, well beaten 1-2 tbsp thyme leaves, destemmed (optional) 4 1/2 cups frozen wild blueberries

4. To begin filling, add sugar and cornstarch to medium mixing bowl and whisk. Then add melted butter and cream until consistent and all dry ingredients are moistened.

9. Cool and serve with ice cream or whipped cream. Cover with airtight wrap and refrigerate for safe keeping.

2. Add crisp topping ingredients to mediumsize mixing bowl and loosely mix with a rubber spatula or wooden spoon and hands. The mixture should form pea to small grape size clumps.

5. Add the well beaten egg and mix again until smooth and consistent. This mixture will be thick, like a cake batter.

6. Pour blueberries and thyme into filling mix. Use a spatula to fold until the blueberries are covered in filling mixture. 7. Spoon filling mix into a deep 9 inch pie plate, cast iron pan, or cake pan. Add crisp topping mixture evenly over the filling.
