Dijon Mussels Brooklyn Warehouse, Chef Mark Gray For 2 people 1.5 lbs Nova Scotia mussels, cleaned ½ cup (125ml) Nova Scotia white wine 1 tbsp (15ml) butter, salted 1 tbsp (15ml) Dijon mustard 1 tsp (5ml) saffron 2 tbsp (30ml) tarragon, fresh 1. Remove the beard from each mussel, and rinse the mussels quickly under cold water. If the mussel appears open, tap it lightly to ensure it is still alive. If the mussel doesn’t contract, it has died and should be discarded. 2. In a medium pot place wine, butter and Dijon. 3. Bring to a simmer and stir in saffron until the saffron begins to release its color and evenly distribute. 4. Add mussels to the hot broth and cover. 5. Let steam for 1.5 minutes. 6. Remove the lid and toss in fresh tarragon. Stir gently, as you do not want to knock all the mussels out of their shells. 7. Continue cooking until all the mussels have opened (1 - 2 minutes). 8. Serve immediately with grilled bread for sopping up the juices. Hints for storing mussels: Never store mussels in a closed container. If you do, they will not get oxygen and will die. If you are not using the cleaned mussels immediately, store them in a container with drainage holes in the bottom. Place that container inside another container without holes so the mussels do not sit in any excess water. Place a cold damp cloth over top of the mussels and store in a cool, dark place in your refrigerator.

King Mushroom and Potato "Chili" Seasons by Atlantica, Chef Luis Clavel Serves 2 people 2 tsp (10 ml) brown butter 1 clove of garlic thinly sliced, no core 2 tbsp (30 ml) shallots, finely diced 6 quarter pieces of king mushroom 1 large fingerling potato, cut in quarters fully cooked 1 tbsp (15 ml) edamame beans 2 tbsp (30 ml) black beans (cooked) ½ cup (125 ml) tomato water 1/3 tsp (1.67 ml) thyme leaves (fresh) 1/3 tsp (1.67 ml) sundried tomato minced 1 tsp (5 ml) butter 1 tbsp (15 ml) cheese curds 1. 2. 3. 4. 5. 6. 7.

Heat brown butter on medium heat. Add garlic and shallots and cook until translucent. Increase heat and add mushrooms. Cook until golden brown. Add potato and heat without damaging the body of the potato. Add both beans. Deglaze with tomato water. Add thyme and sundried tomato and bring the mixture of all ingredients to boiling point. 8. Once boiled, remove from heat then finish with butter. 9. Add salt and pepper to preference. 10. Garnish the chilli with cheese curds. This dish appears how it is served at Seasons by Atlantica. If you would like to make this recipe in the traditional style, you can put all the ingredients in one pot as you would with a normal chili.

Lobster Ravioli Trellis Café, Chef Emily Dunsworth 4 servings of 4 ravioli per person

Filling:

1 lb (450 g) cooked lobster, drained of liquid and roughly chopped 2 ½ oz (70 g) fresh spinach 1 ½ tbsp (20 ml) butter Juice of ½ lemon Salt and pepper to taste 5 oz (142 g) yellow onion, finely diced 1. 2. 3. 4. 5.

Sauté onion until translucent, add lemon juice, salt and pepper. Add spinach and sauté until wilted. Take off heat and stir in the butter. Check seasoning and adjust to taste. Let cool. Add chopped lobster and mix together. Set mixture aside.

Pasta:

In Robot Coupe (or food processor) add the following: 6 eggs Pinch salt 3 cups (750 ml) all-purpose flour Note: Depending on the size of your processor, you may need to do this in two batches. 1. Pulse until the dough forms a ball. 2. Sprinkle in 1/8 cup (30 ml) flour (or more) until the dough becomes coarse but not dry. 3. Form the dough into a smooth ball. 4. APPLE CRANBERRY CUSTARD TORTE Chef Roland Glauser Charlotte Lane, Shelburne Serves 10 to 12 people TORTE 12 McIntosh apples 1 cup (250 ml) cranberries 6 eggs 3 cups (750 ml) sugar 1 ½ cups (375 ml) flour, sifted 1 ¼ cups (300 ml) milk 8 oz (250 g) butter, melted 2 tsp (10 ml) real vanilla extract 5 tsp (15 ml) baking powder whipped cream fresh mint sprigs toasted slivered almonds First, grease a 12-inch springform pan with the melted butter, then flour it. Prepare apples by peeling and coring, then cut them into quarters and slice.

Whisk eggs and sugar in a bowl until creamy. Add the flour and baking powder, then combine. Add milk, butter and vanilla and then mix. Add the apples and cranberries to the batter. Pour into the greased and floured pan, and put pan on a cookie sheet.

Bake on bottom shelf of oven at 375F (190C) for 10 minutes. Move to top shelf and bake at 375F (190C) for 50 minutes, checking with wooden skewer for doneness. Reduce heat if cake gets too dark – it should look golden and caramelized. When baked, remove from oven and carefully pull knife along the ring but do not open the springform. Let cool in fridge very well before removing springform. If you store the torte for longer than a day, you should transfer it to a glass plate; otherwise, the cake might oxidize on metal. SAUCE 5 oz (250 g) butter 1 cup (250 ml) brown sugar 1 ¼ cups (300 ml) heavy cream 1 tsp (5 ml) real vanilla extract Ironworks Rum to taste When ready to serve the torte, prepare the sauce. Melt butter with sugar until it lightly caramelizes. Add cream and vanilla and bring to simmer until well blended. Add rum to taste.

Bring the mixture to a boil over medium heat, then simmer uncovered, stirring frequently, for 30-40 min, or until thick and pulpy. Remove from the heat, leave to cool and transfer to sterilized, clean, dry jars and seal.

Pound cutlets very thin. Blend egg and milk. Dust the cutlets in the flour. Dip cutlet into egg. Roll in seasoned bread crumbs. Heat oil in a large skillet. Fry cutlets until golden brown on each side (1.5 to 2.5 minutes per side). Remove and place on a cookie sheet lined with parchment paper. Spoon 2 tbsp (30 ml) of tomato sauce onto each cutlet. Sprinkle with cheese, green peppers, mushrooms and tomatoes. Broil in oven 3 to 5 minutes until golden brown. Serve Hot.

Gidney Fisheries is a privately held, family-owned lobster company spanning four generations of the Gidney family, located in Southwestern Nova Scotia. In 1892, Samuel Gidney began buying lobsters from local fishermen and exported them on a weekly basis via steamship to Boston, Massachusetts, and this tradition continues today. We purchase our lobster products directly from local fisherman in the Bay of Fundy and St. Mary’s Bay, Nova Scotia. We have freshcaught lobster for 9.5 months of the year and supply our clients in the off season from our temperaturecontrolled lobster holding facilities in Metaghan and Centreville, with a combined 400,000 + lbs of holding.

Seared Sea Scallops with Beet Purée and Orange Butter Le Caveau Restaurant, Chef Jason Lynch Serves 4 people 3 large beets ¼ cup (60 ml) dry white wine 1 orange 4 tablespoons (60 ml) unsalted butter 12 large scallops Sea salt Ground white pepper 1. Roast beets in a 350°F oven for 45 minutes or until a fork slides into them without much force. 2. Cool beets and peel, purée in food processor until smooth. 3. Place beet purée in small pot. Heat white wine and reduce by half, then add juice and zest of orange. 4. Whisk in 3 tablespoons (45 ml) of butter and set aside. 5. Melt the remaining butter in a hot pan. 6. Cook scallops until crisp on the outside and just warm on the inside. 7. Reheat beet purée, season to taste with salt and pepper, and mold into a round in the centre of each plate. 8. Pour the orange butter around the beet purée, and arrange three scallops on top of the purée on each plate.
