Plan ahead to find out what’s on your route and make sure it will be open when you're passing through. 2. Be Spontaneous – Have a plan but be willing to take the road less travelled. Festivals & Events – In every region of the province there are exciting festivals and events throughout the year offering up a wide variety of local culinary experiences. Roasted Nova Scotia Lamb Leg with Garlic, Lemon & Olive Oil Brooklyn Warehouse, Chef Mark Gray Serves 6-8 1 5-lb (2.25 kg) lamb leg 5 cloves garlic, split in half 5 tbsp (75 ml) fresh thyme, chopped 5 tbsp (75 ml) fresh rosemary, chopped 1/2 cup (125 ml) canola oil Black pepper to taste Sea salt to taste 2 lemons, zest and juice 1. Make 10 1-inch incisions down the lamb leg and insert the half garlic cloves in each. 2. Coat the leg in olive oil and season generously with salt and pepper. 3. Sprinkle chopped thyme and rosemary over the leg. 4. Allow to sit for 1 hour until it reaches room temperature. 5. Preheat oven to 325°F (160°C). 6. Roast lamb in oven for 45 minutes, then turn over and continue to roast for 30 more minutes or until it reaches an internal temperature of 135°F (60°C). 7. Remove from oven and let rest for 1 hour on a roasting rack. 8. Slice lamb vertically, against grain, until you reach the bone. Turn the leg and repeat. 9. Sprinkle lemon zest over lamb. 10. Strain the jus from the roasting pan into a small pot. Add half the lemon juice and warm. Taste and adjust seasoning as desired. 11. Pour sauce over lamb and finish with sea salt. Serve with herbed white beans (pictured), oven roasted potatoes, or creamed potatoes.

Lamb’s Super Sidekick: Swiss Chard and Pine Nuts Remove leaves from one bunch of Swiss chard. Place leaves on top of each other and roll. Slice leaves in 1/2inch thick ribbons. Take the stalks and slice very thin on a bias. Sauté the Swiss chard stalks in 1 tbsp butter until tender, then add the leaves and sauté until wilted. Fold in 1/2 cup toasted pine nuts and season with salt and pepper.
Making a Local Match At Brooklyn Warehouse, local quality extends to the beverage list. The restaurant is well known for its great local wine and beer program. Brooklyn Warehouse’s co-owner George Christakos has studied with the Canadian Association of Professional Sommeliers and now teaches about wine at the Nova Scotia Community College. For this dish George suggests “matching it with a hearty local red such as Planter’s Ridge Quintessence Red,” which is produced in the Annapolis Valley.

Fanny Chen came to Canada in 1989. She studied cooking in China and learned more upon her arrival to Canada. In 1995, she and her husband Mark opened their small but charming restaurant in the brewery market building. Thanks to its long-standing reputation for authentic Chinese cuisine, the use of local fresh ingredients and warm inviting service, Cheelin is listed once again, as The Best Chinese Restaurant in Halifax from 1996 to 2014 in Where to Eat in Canada. Poached Nova Scotia Halibut with Thai Red Curry Coconut Broth The Five Fishermen Restaurant, Chef Jamie MacDougall Serves 4 4 6-oz (180 g) halibut fillets 6 cups (1.5 l) water 2 small carrots, peeled and sliced 2 ribs celery, sliced 2 small onions, sliced 4 baby bok choy, halved 2 cups (500 ml) coconut milk 3 tbsp (45 ml) Thai red curry paste 4 garlic cloves, sliced 1-inch (2.5 cm) piece fresh ginger, sliced 2 stalks lemongrass, sliced 4 limes, zest and juice 1/2 bunch cilantro 1/2 tsp (3 ml) sesame oil 2 tbsp (30 ml) canola oil 1. Place the water in a shallow pan with the carrots, celery, onion, 4 sprigs of cilantro and juice of 1 lime. Bring to a boil and reduce heat to low. 2. Cut bok choy in half and place in pan to cook (approximately 4 minutes). Remove Bok Choy and place on plate covered with cling film to keep warm. 3. Place halibut in water to poach (6-7 minutes depending on thickness). 4. Place a small pot over mediumhigh heat. Add the oil, garlic, ginger and lemongrass. Cook

until garlic turns golden. Add the coconut milk and curry paste. Stir to combine. Simmer 3 minutes, then add remaining ingredients and continue to simmer for an additional 3 minutes. 5. To serve, place 2 pieces of bok choy into a large bowl and then lay a halibut fillet on top. Pour equal amounts of the coconut broth in each bowl and garnish with cilantro sprigs and lime wedges.
Serving Up History The Five Fishermen Restaurant has been serving up delicious fine dining fare, including its famous seafood dishes, for more than 30 years. But its history and reputation extends far beyond a mere 3 decades. The building the restaurant is housed in is one of Halifax’s most historically important. The building will soon celebrate its 200th anniversary. It began life as a school for children, then an Art School, owned and operated by Anna Leonowens. Later it was a funeral home and mortuary that played a key role in two major disasters, the sinking of the Titanic and the Halifax Explosion. Is it any wonder why many of the staff claim the building is haunted?

1/4 cup (60 ml) sugar 1/4 cup (60 ml) lemon, juice and zest 2 cups (500 ml) heavy cream (35%) 1/2 vanilla bean, split 2 1/2 sheets gelatin, bloomed* 1/4 cup (60 ml) whipping cream, whipped to high peaks
1 cup (250 ml) Van Dyk’s Wild Blueberry Juice 1/2 cup (125 ml) sugar 1/3 tsp (2 ml) vanilla essence 3/16 tsp (0.56 grams) xanthan gum** 1 1/4 sheets gelatin, bloomed
1. Combine sugar and lemon juice and zest; whisk. 2. Heat heavy cream and vanilla bean until it reaches 200°F (94°C). Remove from heat. 3. Add bloomed gelatin. 4. Cool on ice bath. 5. Fold in whipped cream. 6. Pour mixture into a rectangular mold to set

Nova Scotia Lobster and Mushroom Gratin Atlantica Oak Island Resort and Conference Centre, Chef Konrad Haumering Serves 4 4 uncooked 1 1/4 – 1 1/2 lb (550 - 680 g) Nova Scotia lobsters 1 vegetable bundle (1 carrot, 1 celery stick, 1 onion – all chopped) 1 bay leaf 1 lemon, sliced 1/2 cup (125 ml) butter 1/4 cup (60 ml) onion, diced 4 cups (1 litre) fresh mushrooms, sliced 1/4 cup (60 ml) dry sherry 2 cups (500 ml) heavy cream (35%) Salt and pepper, to taste 1/4 cup (60 ml) chives and parsley, chopped 1/2 cup (125 ml) grated Swiss or Parmesan cheese Lemons for garnish Fresh parsley or dill for garnish 1. Pour water into a large pot. Add the vegetable bundle, salt, lemon slices and bay leaf. Bring to a boil. 2. Add lobster into boiling water, head first, and boil for 8 minutes. 3. Remove lobster and cool down in ice water. 4. Split lobster tails and bodies, lengthwise. Remove meat from tails and from one knuckle and claw per lobster and cut into pieces. 5. Clean one half of each lobster’s shell under running water.

6. In a sauce pan, melt butter and sauté mushrooms with onions. 7. Add the sherry and flame the alcohol. 8. Stir in the heavy cream into the mushroom ragout. Add the lobster meat. 9. Cook over medium heat until the cream is thick and rich. 10. Season with salt and pepper, and add chopped chives and parsley. 11. Place the cleaned lobster shells on a broiler pan and spoon the lobster mixture into them. 12. Top each with equal amounts of each cheese and broil in the oven until golden brown. 13. Garnish with lemon and fresh parsley or dill.

Wild Blueberry Smoothie Van Dyk’s 100% Wild Blueberry Juice Serves 2 1 cup (250 ml) Van Dyk’s Wild Blueberry Juice 1 cup (250 ml) frozen wild blueberries 1 cup (250 ml) yogurt 1 cup (250 ml) almond milk 1 tbsp (15 ml) wheat germ 1 tbsp (15 ml) flax meal 1 tbsp (15 ml) chia seeds 1 tbsp (15 ml) maple syrup Place all ingredients into a blender. Blend until smooth. Healthy Hints: For a green version, add 1 cup spinach and increase almond milk to 1 1/2 cups. Blend.
Frozen Blueberry Dessert You can easily transform this smoothie recipe into a delicious dessert. Place 1/2 cup (125 ml) Van Dyk’s Wild Blueberry Juice, 1 cup (250 ml) fresh or frozen wild blueberries, 2 cups (500 ml) plain yogurt, 2 tablespoons (30 ml) lemon juice and 4 tablespoons (60 ml) maple syrup in a blender. Blend until smooth. Pour into a shallow plan. Place in freezer. Stir after a couple of hours. Continue to freeze overnight. Serve in bowls.

Wholesome ingredients go into our delicious and nourishing onthe-go foods for people sensitive to what goes into their bodies. We do this in small batches, by hand, in a converted schoolhouse in Lunenburg County. Haddock Francese The Argyler Lodge and Restaurant, Chef Jonathan Joseph Serves 4 1/4 cup (60 ml) sliced almonds 4 4-oz (115 g) haddock tail pieces Salt and pepper 3 large eggs Splash heavy cream 4 tbsp (60 ml) extra virgin olive oil, divided 3 tbsp (45 ml) butter, divided Flour for dredging 2 cloves garlic, finely chopped 12 grape tomatoes, halved 1/2 cup (125 ml) dry white wine 1 lemon thinly sliced 3 tbsp (45 ml) capers Handful flat-leaf parsley, finely chopped 1 lb (450 g) fresh spinach 1. Toast almonds over moderate heat until lightly browned and reserve. 2. Preheat a large non-stick skillet over medium-low heat. 3. Season the fish with salt and pepper. 4. Beat eggs with cream. 5. Add 2 tablespoons (30 ml) olive oil to the skillet, swirl the oil in the pan then add 2 tablespoons butter (30 ml), which has been cut into small pieces. 6. Dredge haddock in flour and then dip the fish into the eggs. Make sure the fish is completely covered in the egg wash.

7. Add fish to the pan and cook on both sides until just golden, 5 to 6 minutes in total. Transfer fish to a plate and cover with a loose foil tent to retain heat. 8. Add chopped garlic to pan and let it come to a sizzle. 9. Add the tomatoes, wine, lemon slices, and capers to the pan and turn up heat to medium-high. 10. Reduce by half (approximately 2-3 minutes), then add remaining butter and parsley to the pan. 11. Turn off heat. Stir in spinach until just wilted and season with salt and pepper. 12. Pour sauce over fish and top with sliced almonds.

Easy Pork Bites with Apricot Dipping Sauce Meadowbrook Meat Market Dipping Sauce 1 1/2 cups (375 ml) apricot jam or orange marmalade* 1 fl oz (30 ml) local white wine 2 green onions, sliced 1 tsp (5 ml) minced fresh ginger 1 tbsp (15 ml) soy sauce 1. Place small pot over medium-low heat. 2. Add the jam and white wine. 3. When the jam has a smooth, sauce like texture, remove from heat. 4. Add the remaining ingredients; stir. * Experiment with jams and jellies you find at your local farmers’ market Tip: Prepare these in the morning before work. When you get home all you have to do is roll them in the corn flake crumbs and bake. Dinner is served. Alternatively, serve them as a hors d’oeuvre at a party. Just accompany with toothpicks so guests can skewer a pork bite and dip in the sauce.

In 1998 they decided to take the plunge and bought the dairy farm in Knoydart, halfway between New Glasgow and Antigonish. Over the years they transitioned the farm to organic and added the cheese making facility in 2009. The Co-op purchases fish from over 160 fishing vessels in the local area and has a processing plant specializing in cooked and frozen lobster and snow crab.
