Pan Roasted Pork Rack, Apple Cider Pan Jus, Taties ‘n’ Nips Roesti Brooklyn Warehouse, Chef Graeme Ruppel For 4 people

1 rack of pork, bone on (4-5 ribs, depending on appetites) 1 cup (250 ml) apple cider 2 Russet potatoes 1 medium turnip 2 heads of broccoli 4 oz (125 g) butter Lightly score the fat of the pork rack in a diamond pattern. Season with salt and pepper. Sear the fat side in an oven-safe pan until well browned. Turn over and transfer to a 350°F (180°C) oven. Cook until the roast registers 135°F (57°C) (medium) to 145°F (62°C) (medium well). Remove and rest 20 minutes before carving.

Roasted Broccoli Trim the broccoli into florets by cutting down the stalk, and then pulling apart by hand. Melt 1 oz of butter (28 g) in an ovensafe pan over high heat. Add the broccoli to the pan and toss to coat. Season with salt and pepper. Place the broccoli under a preheated broiler and allow it to cook until verging on burnt.The toasted broccoli adds a wonderful crunch to the dish.

Taties ‘n’ Nips Roesti Peel and grate together the potatoes and turnip. Heavily salt them and squeeze out as much water as you can. Melt 1 tbsp (15 ml) of butter in a 10" non-stick pan over medium heat and add grated mixture. Using a spatula, press the potatoes into a large patty. When the roesti is browned on the first side, flip it out onto a plate. Melt 1 tbsp (15 ml) of

Apple Cider Pan Jus Place the pan the pork was roasted in back on the stovetop, over high heat. Add the apple cider. As the cider comes to a boil, scrape the bottom of the pan with a wooden spoon to release the fond. When the cider has reduced by half, remove from heat and whisk in 2 oz (57 g) of butter (it should be kept cold right up to this point).

Nova Scotia Lobster Poutine Fid Resto, Chef Dennis Johnston 2 oz (60 g) fresh Nova Scotia lobster tail (cut into bite-size pieces) ½ oz (16 g) Fox Hill Cheese Curds 1 oz (25 g) Socca Fries 2 tbsp (30 ml) mounted butter (beurre monté) Make the socca fries and the beurre monté. Turn your broiler on. Heat the lobster in the beurre monté. Place some of the curds in the bottom of a small bowl. Place the “fries” on top of the curds. Spoon the lobster over the fries and place the rest of the curds on top of the lobster. Spoon the beurre monté over the lobster and heat under the broiler until the curds on top have melted a bit. Garnish with something beautiful and serve. Bon appétit ! Socca Fries 4 oz (125 g) chickpea flour 2 cups (500 ml) water & salt to taste Heat the water in a pot. Thicken the water with the sifted chickpea flour. Season when it has become quite thick. Pour into a container and let cool. Cut into French fry shapes. Deep fry the “fries” in canola oil until they are crisp on the outside and molten on the inside. Beurre Monté ½ cup (75 ml) water 10 oz (300 g) unsalted butter & salt to taste Heat the water and salt in a pot. Gradually incorporate the butter, whisking as you add. Once you have an emulsion you are ready to go. Do not overheat, as this will break the emulsion.

Seared Atlantic Mackerel & Warm Potato Salad with Crispy Bacon & Cucumber Ryan Duffy’s Steak & Seafood, Chef Chris Velden For 4 people

8 mackerel filets (alternatives: Arctic char, wild salmon or albacore tuna) 1½ lbs (680 g) fingerling or new potatoes 4 slices bacon, diced ½ onion, diced ½ cup (125 ml) chicken stock ½ English cucumber, washed, peeled and sliced 1 tomato, washed and diced 4 hard-boiled eggs, cut 2 into wedges, 2 into slices ½ cup (125 ml) white balsamic or tarragon vinegar 1 cup (250 ml) grape seed oil 2 tbsp (30 ml) Dijon mustard salt and pepper The Mackerel Season the filets with salt and pepper. Pan sear on both sides and finish in a 375°F (175°C) oven. Take out and remove all remaining bones. (It is easier to remove the bones after cooking.) The Potato Salad Wash the potatoes and boil until cooked. Drain water and peel the potatoes while hot. Cool. Slice into a bowl. Heat up all the olive oil in a sauté pan. Add the bacon and fry until crispy. Add the onion and sauté. Add stock or water and bring to a boil. Add salt and pepper.

Reduce heat and simmer for 5 minutes. Pour hot liquid over the sliced potatoes. Add cucumbers and Dijon and mix. Fold in the parsley, egg wedges and tomatoes.Taste and season if needed. The 7 Herb Cream 2 cups (500 ml) sour cream 3 tbsp (45 ml) chopped parsley 2 tbsp (30 ml) chopped chives 2 tbsp (30 ml) chopped dill 2 tbsp (30 ml) chopped chervil 1 tbsp (15 ml) chopped mint 2 tbsp (30 ml) chopped basil 1 tbsp (15 ml) chopped cilantro ½ lemon, juiced 1 clove garlic, peeled and chopped salt and pepper Place all ingredients in a food processor and mix together well. Sauce should have a nice green colour. Taste and season if required. Assembling the plate Scoop the warm potato salad on the plate.Top with the mackerel. Place some sauce onto the fish and around the plate. Garnish with egg slices and a nice herb bundle. Enjoy!!!

Seared Scallops with Sesame Ginger Orange Marmalade Charlotte Lane, Chef & Co-owner, Roland Glauser For 4 people

24 scallops (under 10 or 10/20 size) (Or, if available and accessible, use fresh live scallops in the shell with roe sourced from Indian Point Marine Farm) canola oil for searing sea salt to taste Marmalade ½ cup (75 ml) orange marmalade 2 oz (60 ml) lime juice ½ oz (15 ml) fish sauce 2 oz (60 ml) rice wine (recommend mirin – sweeter than saki with less alcohol) 1 tsp (5 ml) fresh ginger, chopped ½ tsp (2 ml) Chinese hot sauce ½ oz (15 ml) sesame oil ½ oz (15 ml) Worcestershire sauce ½ medium carrot, grated ½ tsp (2 ml) cornstarch just enough water to dilute the cornstarch 8 sprigs fresh coriander Bring all ingredients for marmalade to a simmer, thicken lightly with cornstarch and remove from stove. Keep at room temperature until ready to plate. Sear the scallops in oil on high heat, just until they are well caramelized and golden brown on the outside but still lightly translucent on the inside. Season with fine sea salt to your taste. Place 2 scallop shells (available at some seafood retailers) on each plate, then place 3 scallops on each shell. Drizzle with sauce, and garnish each shell with borage flower (if available) and a small coriander sprig. Serve immediately and enjoy the flavour of Nova Scotia scallops, the Charlotte Lane way.

Acadian Seafood Stew The Grand Banker, Chef Cindy Weaver For 2 people

Stew base 1 tsp (25 ml) flour 1 tsp (25 ml) butter 2 cups (500 ml) fish stock 1 stalk celery, chopped 1 carrot, chopped 1 tbsp (15 ml) onion, chopped ½ green onion, chopped 1 tsp (25 ml) tomato paste 1 tsp (25 ml) chopped garlic 1½ tsp (7 ml) Cajun seasoning Seafood ½ lb (250 g) fresh haddock 6 oz (175 g) scallops 8 large shrimps, peeled 8 mussels In a pot, melt butter. With heat on medium, add flour and stir constantly for 3-4 minutes, making sure it doesn’t brown. Gradually add the fish stock, stirring constantly as it thickens. Add the remaining ingredients. Bring to a boil and then allow to simmer for a half hour or until vegetables are cooked, stirring occasionally. Add seafood to the stew base. Cook until fish is tender and mussels are opened. Finish off with a dab of 35% cream and serve with garlic toast.

Seared Digby Scallops and Bacon Jam The Old Fish Factory, Chef Shelley Steventon For 4-6 people

Seared Scallops 2 tbsp (30 ml) olive oil 1 pound (500 g) Digby scallops (20-30 size) Place scallops on a paper towel to remove moisture – this will prevent the scallop from steaming in its own juice. For maximum tenderness, remove the bit on the side of the scallop. Sear scallops in a hot skillet with olive oil, depending on size, for about 2 minutes on each side until the scallop starts to brown and splits on the side. Larger scallops may require more cooking time. Bacon Jam 2 tbsp (30 ml) Chipotle Tabasco Sauce 1 lb (500g) bacon, cut into one-inch pieces 4 cloves garlic, chopped 1 onion, sliced 3 tbsp (45 ml) brown sugar 1 cup (250 ml) brewed coffee ¼ cup (50 ml) cider vinegar ¼ cup (50 ml) maple syrup Fry the bacon until lightly browned and beginning to crisp. Sauté the onion and garlic in the rendered bacon fat without colouring. Transfer the bacon, onion and garlic into a pot, and add the rest of the ingredients. Simmer for 1 hour, adding ¼ cup (50 ml) of water every 30 minutes, only if required. Place in a food processor. Pulse for 2-3 seconds so that you leave some texture to the jam. Place each warm scallop on the plate. Top with a pinch of bacon jam and serve. *Please note: It is important that the bacon jam is warmed before serving.

Blueberry Crème Caramel Van Dyk’s Wild Blueberry Juice For 6 people

½ cup (125 ml) sugar 1 /3 cup (75 ml) Van Dyk’s 100% Wild Blueberry Juice 1 cup (250 ml) full fat milk (3%) 1 /3 cup (75 ml) heavy cream 1 tsp (5 ml) vanilla extract ¼ cup (50 ml) sugar 2 eggs 1 egg yolk Preheat oven to 350°F (175°C). Combine sugar and blueberry juice in a pot on the stovetop. Allow to simmer over medium heat until the liquid reaches the thread stage, or 108°-118°F (215°-235°C). Remove from heat and immediately pour into large ramekins. Combine milk, cream and sugar. Stir and heat over medium heat until hot but not boiling. Meanwhile, combine sugar, eggs and egg yolk. Temper the egg mixture with a little cream mixture. Once tempered, combine, mix and pour into ramekins. Place ramekins in a baking dish, adding hot water so it comes three quarters of the way to the top of the ramekins (creating a bainmarie). Place into oven and bake for 40 minutes. The crème caramel should jiggle slightly when ready. To serve, run a knife around the rim and invert onto serving plate. May be served warm or chilled.

Clearwater Nova Scotia Prime lobster Chopped Garlic Minced Shallot Chopped Parsley White Wine Olive Oil Butter Heavy Cream (35%) Lemon Sea Salt and Pepper to taste

Method Pasta, cooked according to package instructions, tossed with olive oil and reserved warm. In a sauté pan cook garlic, shallots in butter until aromatic but taking care not to colour. Add lobster meat and wine and cover for 3-4 minutes allowing to steam. Stir and remove meat keeping warm. Add cream and simmer for a few minutes until slightly thick. Add the lobster meat and parsley back in with the sauce. Adjust seasoning. Divide pasta among 4 plates and top with lobster sauce. Garnish with a twist of lemon. Serve with salad & crusty bread. Preparation time: 15 minutes Cook time: 10 minutes Serves 4

4 Cut the tail on both sides or grasp it tightly and squeeze until it cracks. Snap off the tail flippers. 5 Push out the meat in one piece. Peel back the flap on the upper side of the tail to expose the vein, remove and discard the vein.

7 Open the main body section by cracking it apart. The meat in this section can be removed using a fork or pick. Discard the dark sac located between the eyes (since this is not edible). Twist the walking legs from the body. Clench between teeth and nibble meat from legs. The same method can be used to extract meat from the tail flippers.

4 oz to 5 oz (125 g to 145 g) local free-range chicken breast, sliced thinly 1 medium carrot, medium dice 1 medium onion, medium dice 2 stalks of celery, medium dice 1 medium red pepper, medium dice 1 green pepper, medium dice 3 tbsp (45 ml) of Marrakech spice mixture 1 tbsp (15 ml) cornstarch 1½ cups (375 ml) chicken stock ¼ cup (50 ml) whipping cream ½ cup (125 ml) of cooked basmati rice per person Fox Hill plain yogurt for garnish In a large sauté pan, place all the vegetables over medium heat with 1 tbsp (15 ml) of oil. Sauté until the onions are translucent. Add spice mixture and sauté for 30 seconds. Add the stock and boil for 2-3 minutes. Add the chicken and simmer until cooked through. Add the cream. Then mix cornstarch with cold water and thicken mixture. Season with salt and pepper, serve with sliced local fruit. Top with Fox Hill plain yogurt.

Gidney Fisheries is a privately held, family-owned lobster company spanning four generations of the Gidney family, located in Southwestern Nova Scotia. In 1892, Samuel Gidney began buying lobsters from local fisherman and exported them on a weekly basis via steamship to Boston, Massachusetts, and this tradition continues today. We purchase our lobster products directly from local fishermen in the Bay of Fundy and St. Mary’s Bay, Nova Scotia. We have freshcaught lobster for 9.5 months of the year and supply our clients in the off season from our temperature-controlled lobster holding facility with 100,000+ lbs of holding.

Masstown Market’s Famous Seafood Chowder Masstown Market For 8-10 people

3 tbsp (45 ml) butter, unsalted if possible 1 large onion, diced 3 celery ribs, chopped 4 cups (1 L) potato, peeled and diced ½ lb (225 g) haddock filet, cubed ½ lb (225 g) cod filet, cubed ½ lb (225 g) scallops, chopped ¼ lb (115 g) lobster meat, cooked & shredded ¼ lb (115 g) shrimp, cooked and chopped 4 cups (1 L) water for poaching/stock ¼ cup (115 g) butter, unsalted if possible ½ cup (115 g) all purpose flour, unbleached 2 cups (500 ml) cream 1 bay leaf 1 quartered onion for poaching liquid pinch nutmeg salt and pepper to taste Over medium-high heat, melt butter in a heavy-bottomed, large pot. Add the onions and cook until transparent, about 3 minutes. Add the celery and cook for approximately 10 minutes, stirring often. Add the potatoes and just cover with water, bringing to a boil. Reduce heat and simmer until potatoes are tender but not soft. Remove from heat. In a second pot, heat the 4 cups (1 L) of water with a bay leaf and a quartered onion until

just before boiling. Maintain temperature below boiling and add the haddock, cod and scallops. Poach until just opaque and tender. Remove fish and reserve the poaching liquid for your stock, discarding the bay leaf and quartered onion. In a saucepan over medium heat, melt the butter. Then add the flour, mixing to a smooth paste. Cook for approximately 1 minute. Gradually whisk the poaching liquid into the saucepan until you have a smooth and free-flowing mixture. Cook until it begins to thicken. Return the potato and vegetable pot to medium-high heat. Slowly stir in the butter/flour/poaching liquid mixture. Add the fish, scallops, lobster and shrimp. Continue stirring until chowder thickens. Add cream and stir until heated through, but do not boil. Season with a pinch of nutmeg and salt and pepper to taste. Ladle into bowls and top with freshly chopped herbs. Serve with warm biscuits and creamery butter.

The Capicola Steak The Pork Shop This capicola steak is a true Pork Shop signature. The marinated pork steak can be used for your next backyard barbeque. During your travels, make sure to stop in and try a sample of the capicola steak at either Pork Shop location. In this recipe, enjoy capicola steak prepared as a hoagie. 10 oz (300 g) capicola pork 1 medium onion, julienned 1 tbsp (15 ml) butter 8 oz (250 g) button mushrooms, sliced 2 7-inch sub buns Cook your capicola steak on the barbeque until medium. Let rest for 5 minutes, then slice. In a frying pan, melt butter then sautĂŠ onions and mushrooms until soft, about 3 minutes. Add your sliced capicola steak and mix well. Grill your Hoagie bun and cut open. At that point, add your favourite cheese to the mixture in the pan. Stuff both buns and serve with your favourite Nova Scotia beer.

6 egg yolks (4 oz, 125 g of egg yolk) 4 oz (125 g) sugar 8 oz (250 g) Nova Scotia Icewine or late harvest wine 1 tbsp (15 ml) lemon, lime or orange juice In a stainless steel bowl, beat the yolks until foamy. Beat in the sugar, wine and juice. Place over a hot water bath and continue beating until thick and hot. Serve hot as a dessert pudding, or as a sauce for fruit or fritters. Serve without delay – it will lose some foaminess and begin to separate if it is allowed to stand. For this preparation, place assorted fresh berries on a plate or in a shallow soup bowl. Cover with the sabayon. Serve with a crisp cookie or biscuit, lady finger, etc. Garnish with mint.

Lakeside’s Fish Cakes with a Smoked Salmon Mayonnaise Lakeside Restaurant at Inverary Resort, Chef Sean Murphy For 6 people (makes 12 fish cakes)

Fish Cake Mixture 5 medium potatoes, peeled 6 large shrimp, peeled 1 tbsp (15 ml) butter ¼ cup (50 ml) onion, chopped ½ small red pepper, finely diced 1 small garlic clove, crushed 1 tbsp (15 ml) lemon juice ¼ tsp (1 ml) parsley, chopped ¼ tsp (1 ml) dried or fresh thyme ¼ tsp (1 ml) Cajun seasoning, or to taste 4 oz (125 g) lobster meat 4 oz (125 g) haddock fillet

Breading 1 egg ¼ cup (50 ml) milk 1 cup (250 ml) flour 2 cups (500 ml) panko bread crumbs

Boil potatoes until soft; mash, but not too finely. Let cool. Cut shrimp into medium dice and sauté in melted butter along with the onion, red pepper and garlic, until the shrimp is just cooked, about 3 minutes. Add lemon juice, parsley, thyme and Cajun seasoning, and stir to combine. Drain in colander and let cool. Chop lobster; drain and stir into cooled shrimp mixture. Steam or poach haddock fillets. Flake haddock and combine with potato, shrimp and lobster mixtures. Cool. Form into patties, using about ¼ cup (50 ml) mixture for each.

Smoked Salmon Mayonnaise 1 cup (250 ml) mayonnaise ¼ cup (50 ml) julienne of smoked salmon 1 tbsp (15 ml) chopped capers 1 tbsp (15 ml) fine diced red onion zest of ½ lemon lemon juice to taste

Beat eggs; whisk in milk. Dip patties in flour, shaking off excess flour. Dip into egg mixture until well coated, then dip into bread crumbs. Deep fry in canola oil for about 3 minutes, until browned and crispy. Drain on paper towels and serve with a dollop of smoked salmon mayonnaise.

Combine all ingredients in a bowl and season to taste.

Beets n’ Blueberries Salad Chanterelle Country Inn & Cottages Chef Earlene Busch 2 lbs (900 ml) fresh beets 2 lbs (900 ml) Nova Scotia blueberries, fresh or frozen ¼ cup (50 ml) organic sugar 1 /3 cup (75 ml) sunflower oil ¼ cup (50 ml) white wine vinegar ½ tsp (5 ml) salt 1 tsp (5 ml) freshly grated ginger grated zest of one orange Scrub beets. Roast in a tightly covered dish for approximately 1½ hours until knife inserted comes out easily. Cool. Slip off the skins. Cut into half-inch cubes and place in large bowl. Toss with sugar, white wine vinegar, sunflower oil (or other neutral-tasting oil), salt, freshly grated ginger and blueberries. Let set for at least an hour. Serve with grated orange rind as a garnish. This will keep – and even improve – for a week. “I came up with the recipe this summer, when one of my producers brought in several pounds of beautiful organically grown Cape Breton beets. I had just gotten 10 gallons of blueberries from my dear wild blueberry picker. So … what to do but combine them somehow? Cold Water Shrimp Salad Sandwich with Lemon Aioli Louisbourg Seafoods Ltd. For 3-4 people

1lb (455 g) frozen cold-water shrimp, thawed ¼ cup (60 ml) chopped celery ¼ cup (60 ml) chopped yellow pepper 1 tbsp (15 ml) chopped fresh dill 1 cup (250 ml) Lemon Aioli (or enough to reach desired consistency) salt and pepper zest of 1 lemon 1 tsp (5 ml) Tabasco (optional) Mix all the ingredients together and add enough Lemon Aioli to reach the desired consistency. Serve on a buttered bun, such as a ciabatta loaf, with pea shoots or seasonal greens. Lemon Aioli 1 egg yolk ¾ cup (175 ml) oil (canola recommended) juice of 1 lemon 1 tsp (5 ml) Dijon mustard salt and pepper In a heavy mixing bowl, combine the egg yolk with the Dijon. Whisk in the oil, adding only a little at a time until you reach the desired “mayonnaise” consistency. Add the lemon juice and season to taste. Please note: If desired, the egg yolk and oil in the Lemon Aioli recipe can be substituted with a mayonnaise or whipped dressing and similar results will be achieved.

Chedabucto Bay Lobster Risotto with Spring Peas and Garden Herbs DesBarres Manor Inn For 4-6 people

5½ cups (1.25 L) chicken stock 1½ tbsp (20 ml) olive oil 3 shallots, finely chopped 2-3 cloves garlic, finely chopped 1½ cup (375 ml) arborio rice 1 cup (175 ml) dry white wine 1½ cup (375 ml) cooked lobster meat, coarsely chopped 5 tbsp (75 ml) butter ½ cup (125 ml) spring peas (fresh or frozen) 2 tbsp (30 ml) flat-leaf parsley, chopped 1 tbsp (15 ml) chives, chopped ½ cup (125 ml) asiago cheese, grated Celtic sea salt and freshly ground pepper to taste Heat stock in a medium saucepan and bring to a simmer. In a separate large saucepan, heat the olive oil over moderately low heat. Add the shallots and a pinch of Celtic sea salt and sauté for two minutes. Add the garlic and sauté another two minutes. Turn the heat up to moderately high, add the rice and stir for 2-3 minutes. Simmer peas in salted water until tender, about two minutes. Drain and set aside. Turn heat down to medium low, add the wine and continue stirring. When almost all the wine has absorbed into the rice, add a ladle of hot stock, a pinch of salt and freshly ground pepper and continue cooking, stirring often. Continue adding ladles of stock, stirring often until liquid has been absorbed into the rice before adding more and until rice is tender with some bite and risotto is creamy. Remove the rice from the heat. Gently stir in the chopped lobster, butter, asiago, peas, flat-leaf parsley and chives.
