Directions 1. Heat your oven to 500F for at least 30 minutes. If you have a pizza stone or heavy baking sheet, add it to the oven while it preheats. 2. Sprinkle your work surface with flour. Gently stretch out your pizza dough, carefully not squeezing too much air, and leaving a nice rim around the edge to form a great crust in the oven. 3. Flour a pizza peel or your baking sheet and transfer pizza dough to the peel.

shop Nova Scotia has an abundance of delicious seafood available yearround, from oysters and crab, to lobster, scallops and more. When buying seafood, ask what’s local, what’s in season, what’s fresh and when it should be eaten. When buying frozen or thawed seafood it’s important to know how it’s been frozen, when it was thawed and when to consume it by. The best way to know what’s fresh is your senses. If it smells like the briny ocean, you know it’s fresh.
SERVES
STO R E 1. Always get your seafood home quickly and into the coldest part of your fridge (usually the bottom). 2. Live shellfish like mussels, clams and oysters should be given a quick rinse, drained and placed in the fridge with a damp cloth on top. Live shellfish needs to breathe —place in a bowl or on a plate, not a sealed container. PR EPA R E 1. Thaw frozen seafood ahead of time (ideally the day prior). The ideal is thawing slowly, inside the fridge, in the packaging, over many hours. If this isn’t possible, thaw submerged in cool water. 2. Rinse fresh or live seafood and discard any cracked or damaged shells. For a seafood tower, steam any shellfish that needs cooking with seasoning, cool and serve with raw seafood items. Pre-crack or shell lobster or crab, for easier eating.

3. For previously frozen fish or shellfish you’re looking to serve raw, try a quick, wet brine. Submerge in heavily salted water for 20 minutes. If the fish is fresh, rinse in cold water, pat dry, season and cut. 4. Serve a raw piece of fish or shellfish by cutting into thin, bitesize slices and sprinkle with salt. S ERV E 1. As soon as it’s prepared, present your cooked and raw offerings on ice in a tray with tall edges so that the ice stays contained. 2. The beauty of this dish is in the simplicity and freshness. Serve with accompaniments that add acid, heat, salt and bold flavor, like cocktail sauce, horseradish, mignonette, citrus or hot sauce. Directions 1. Cook pasta in a pot of salted, boiling water until al dente. Drain and set aside. 2. Sauté onion in oil until soft and golden (3-5 minutes), stirring often. Add minced garlic with fresh mussels and sauté another two minutes on medium-high heat until fragrant. 3. Add shrimp and scallops and season with salt and pepper. Cook two minutes per side or until just nearly cooked through 4. Add white wine with high heat and stir for a minute. Add heavy cream on medium heat. 5. Add cooked pasta and sauté around one minute until all the sauce flavour is added to the pasta. 6. Remove from heat and add Parmigiano cheese and chopped parsley as a garnish.

ingredients ½ cup unsalted butter, cubed cold ¼ cup water, ice cold ½ tsp salt 1 ¼ cup all-purpose flour 1 cup soft goat cheese 2 tbsp shallot, finely chopped 1 clove garlic, finely minced ½ lemon, juiced and zested ½ tsp salt ½ tsp pepper 200 g J. Willy Krauch smoked salmon 5 - 6 ripe tomatoes GA R N IS H 2 fresh dill fronds 2 tsp flaked salt
Directions 1. Mix cold butter with flour. Break butter into pea sized pieces. * 2. Dissolve salt in water and add to flour. 3. Lightly mix water with flour and butter until a shaggy dough is formed. Do not knead. 4. Shape shaggy bits of dough into a rectangle. Roll out rectangle until it’s half as thick and then scrape the top, bottom and sides together again to the original size and re-roll. Repeat three or four times until you have a smooth, cohesive dough. You should have a neat rectangle. Wrap the dough and chill in the fridge for at least half an hour. 5. Divide the dough into 4 even pieces. Roll out dough into 3mm thick sheet. Place the sheet of dough over tart shell and press it into the shell until dough goes up the sides. Trim excess dough to the rim of the pan with a knife. Pierce the base of tarts with a fork. Place in fridge and chill for at least 30 minutes. 6. Preheat oven to 375F.
7. Line pastry shells with parchment paper and fill with pie weights. Bake tarts for 20 minutes. Remove pie weights and parchment paper and bake for additional 10 minutes or until the shells are golden and crisp. Remove from the oven and cool completely before filling. 8. In a bowl, mix goat cheese, lemon zest, lemon juice, shallot, garlic, salt and pepper together until well combined. 9. Cut each tomato in half lengthwise and thinly slice into half-moons. Place slices on paper towels to absorb excess moisture. 10. Slice smoked salmon slices into 1-inch strips lengthwise. 11. Divide goat cheese mixture among tart shells and evenly spread so it covers bottom of the tart. 12. Starting from the outer perimeter, layer smoked salmon followed by two layers of tomatoes. Repeat pattern until you reach the center of each tart. 13. Garnish tarts with dill fronds and finish with flaked salt. *Store bought tart shells can be used if you do not wish to make homemade tart shells.

directions Shallot confit 1. Combine ingredients in pot and ensure shallots are not on top of each other.

Celeriac linguine & purée 1. Remove outer skin and wash celeriac. Use spiralizer to make celeriac linguine. 2. Place medium pot of salted water on stove and bring to gentle simmer. Add celeriac and cook until al dente (2-3 minutes).

3. Remove from water and cool in ice bath to prevent further cooking. Remove from water as soon as cool to prevent from becoming waterlogged. Reserve noodles.

4. Cut scrap celeriac into pieces, place in pot and add half milk and cream to cover scraps.

12 chives, finely chopped ½ lemon Lobster tails, blanched and peeled
5. On low heat, slowly cook until fork tender. Scoop out celeriac from liquid and place in blender.
6. Add residual liquid as needed to blend into purée. Once smooth, season with butter and salt to taste. Reserve until ready to plate. Lobster 1. Bring large pot of salted water to boil. 2. Remove lobster tomalley from tail. 3. Blanch tails for 4 minutes then place into ice bath of 2 parts ice, 1 part water to stop cooking. 4. Using scissors, cut along the underside of the tail and pull off shell. To plate 1. Reheat lobster tails in pot with 80 per cent of butter over low heat until cooked (3-4 minutes). 2. Reheat linguine in pot with mashed garlic and remaining butter. Season with salt and lemon juice. 3. Reheat shallots in oven. Reheat purée in small pot. 4. Plate celeriac purée in bowl followed by celeriac linguine. Garnish with shallot confit and chives. Remove lobster tail from butter and place alongside linguine.

1 small onion, chopped

7. Add each ball to pan. There should be a slight sizzle. Allow to cook for 3-4 minutes. Using tongs, turn to cook all surfaces evenly. This should take 10-12 minutes total time. If using right away, place in oven proof dish and set in a 250F pre-heated oven.
Directions 1. Add onion, garlic, yellow pepper, ginger and celery to a food processor and pulse to a fine mince.
8. Keep fry pan on stove and reduce heat to low. Add sesame oil, fresh ginger and garlic and allow to soften. Add cornstarch or flour and mix well – it should start to thicken.

ingredients 1 lb local smoked haddock filets (rinsed and soaked in cold water for an hour), cut into small pieces 1 small onion, finely chopped ½ cup carrot, finely chopped 1 stalk leek, thinly sliced 1 stalk celery, finely chopped 2 tbsp canola oil 3 medium Yukon Gold potatoes, peeled and cubed to approx. 1 cm 2 tsp dried thyme leaves (or 2 tbsp fresh thyme) 1 bay leaf
Directions 1. In a large pot on low to medium heat add oil, carrot, celery, leek and onion and allow to soften, but not brown.

ingredients 500 ml Tatamagouche Ice Creamery Very Vanilla ice cream, softened* 2 cups milk 1 cup cocoa powder ½ cup sugar 1 tbsp espresso or strong coffee Pinch of sea salt Marshmallows (bonus points for homemade) GA R N IS H Chocolate shavings
Directions 1. Remove ice cream from freezer and let soften at room temperature for 10-15 minutes. 2. In a medium saucepan over medium heat, whisk together milk, sugar and salt until dissolved (approximately 3 minutes). 3. Whisk in cocoa powder until fully incorporated.
6. Pour into mugs and garnish with marshmallows and chocolate shavings. *Very Vanilla helps the chocolate flavour pop while also rounding it out. Try going full-blown chocolaholic by substituting with Tatamagouche Ice Creamery’s Chocolate Moose ice cream or add a touch of Canadiana with their Salted Maple.
4. Add ice cream and continue cooking over medium heat, continuing to whisk, until mixture is hot. 5. Add a tablespoon of espresso or strong coffee. This will be enough to amplify the chocolate flavours without tasting like coffee.
