Simple Tomato Jam Seasons by Atlantica, Atlantica Hotel Halifax, Chef Luis Clavel Makes 3 cups (750ml)
16 ripe tomatoes concasse (poach, then remove skin and seeds) ½ cup (375 ml) red wine vinegar 1 cup (250 ml) turbinado sugar (brown sugar may be substituted) ½ cup (125 ml) agave (honey may be substituted) zest of 2 lemons 1 tsp (5 ml) toasted and ground coriander seeds salt and pepper Once tomatoes have been poached and deseeded, cut in a medium dice. In a pot, proceed to make a gastrique by combining the sugar, vinegar and agave and allowing it to boil until clear. Once gastrique is made, add tomatoes and cumin seeds. Bring to a boil and allow to simmer until it has thickened. This may take anywhere from 45 minutes to an hour. Finish the jam with lemon zest and salt and pepper to taste. This recipe is wonderful on it's own with a piece of bread, as a condiment on a burger or served with your favourite cheeses.

Dressing ¼ cup (50ml) Dijon mustard ¼ cup (50 ml) Parmesan cheese, shaved ¼ cup (50 ml) capers ¼ cup (50 ml) roasted garlic 8 egg yolks 2 cups (500 ml) olive oil 2 cups (500 ml) canola oil 1 tbsp (15 ml) lemon juice 1 tsp (5 ml) Worcestershire sauce salt and pepper ½ cup (125 ml) creamy blue cheese (such as Dragon’s Breath Blue) ½ cup (125 ml) Danish blue cheese Place Dijon, Parmesan, capers and garlic in food processor and process until smooth. Add egg yolks and blend with Dijon mix. Very slowly drizzle in your olive and canola oils to emulsify, making sure not to split the dressing. Season with salt and pepper, lemon juice and Worcestershire until desired flavour is achieved. Fold in crumbled cheeses. Salad Romaine hearts Parmesan cheese, shaved lemon wedges croutons bacon Sprinkle dressing on half a romaine heart and top with capers, bacon, Parmesan, croutons and a grilled lemon wedge.

Warm Mushroom Tart with Aged Cheddar Fid Resto, Chef Dennis Johnston Makes 8 4-inch (10cm) tarts Pastry Shells 1 lb (450 g) all-purpose flour 11 oz (320 g) unsalted butter 2 pinches sugar 1 pinch salt 2 tbsp (10 ml) milk 2 whole eggs 1 oz (25 ml) of wine 1 tbsp (15 ml) Preheat the oven to 400F (205C). Mix together the dry ingredients and the butter; mix this with your hands until they are combined. Then combine the liquid ingredients with the eggs. Very gently, mix in the liquids just until the pastry holds together. Wrap and let chill for at least half an hour. Once rested, roll out the tart shells and let rest for 10 more minutes. Blind bake the shells in the oven for 15-20 minutes or until brown around the edges. Blind baking is done by lining the dough with parchment paper or foil and filling it with pie weights, dried beans or rice to hold its shape during baking.

Mushroom Tarts 1 lb (450 g) dried mushrooms 1 tsp (5 ml) diced shallot Âź c (50 ml) red wine aged cheddar micro green mix Soak the dried mushrooms in enough water to cover. Set aside while preparing the pastry shells. Preheat the oven to 450F (230C). Drain the mushrooms, reserving the liquor. SautĂŠ the mushrooms and the shallots together in a frying pan until there is a light coloration. Deglaze with approximately 1 oz (25 ml) of wine. Reduce the wine until almost dry. Put the mushroom mix into the tart shell. Add 1 tbsp (15 ml) of mushroom liquor. Top with strips of cheddar and place in the oven until the cheddar is melted. Place on a plate and garnish with the micro green mix.

¼ cup (50 ml) extra virgin olive oil 3 cloves garlic, peeled and crushed ½ fennel bulb, sliced ½ red onion, sliced 2 tsp (10 ml) fresh thyme leaves 2 tsp (10 ml) fresh basil leaves, roughly chopped 1 fresh bay leaf 1 cup (250 ml) full-bodied Nova Scotia red wine 3 cups (750 ml) crushed tomatoes in juice 2 cups (500 ml) Clamato juice 2 cups (500 ml) fish stock or water 3 dashes Tabasco sauce kosher salt to taste ground black pepper to taste 1 lb (450 g) haddock, diced 1 lb (450 g) Nova Scotia mussels scrubbed 1 lb (450 g) clams, scrubbed 1-2 lbs (450 g to 900 g) lobster (see instructions) lime wedges baguette
In a large, thick-bottomed pot over medium heat, sauté the garlic, fennel and onion in the olive oil. When the fennel and onion are translucent, add the thyme, basil and bay leaf. Sauté for two more minutes, stirring well. Add red wine and allow to reduce by half. Add crushed tomatoes, Clamato, fish stock and Tabasco and simmer gently for half an hour, stirring often. After simmering, season with kosher salt and freshly ground black pepper. If you are not going to serve the Cioppino until the next day, stop here, cool the base and refrigerate. When you are ready to serve the Cioppino, bring the base to a light simmer. Add the mussels, clams, haddock and lobster. Simmer until the clams and mussels open fully. Serve with wedges of lime and a good baguette. For lobster: Take a raw or lightly poached lobster. Remove the tail, cut in half lengthwise and in half again across. Remove claws and knuckles, cutting each in half with a heavy knife. Simmer the lobster in the shell with the rest of the seafood.

Apple Cranberry Custard Torte with Ironworks Rum Butterscotch Sauce Charlotte Lane, Chef Roland Glauser For 12 people
Torte 12 McIntosh apples 1 cup (250 ml) cranberries 6 eggs 3 cups (750 ml) sugar 1 ½ cups (375 ml) flour, sifted 1 ¼ cups (300 ml) milk 8 oz (250 g) butter, melted 2 tsp (10 ml) real vanilla extract 5 tsp (15 ml) baking powder whipped cream fresh mint sprigs toasted slivered almonds First, grease a 12-inch springform pan with the melted butter, then flour it. Prepare apples by peeling and coring, then cut them into quarters and slice. Whisk eggs and sugar in a bowl until creamy. Add the flour and baking powder, then combine. Add milk, butter and vanilla and then mix. Add the apples and cranberries to the batter. Pour into the greased and floured pan, and put pan on a cookie sheet. Bake on bottom shelf of oven at 375F (190C) for 10 minutes. Move to top shelf and bake at 375F (190C) for

50 minutes, checking with wooden skewer for doneness. Reduce heat if cake gets too dark – it should look golden and caramelized. When baked, remove from oven and carefully pull knife along the ring but do not open the springform. Let cool in fridge very well before removing springform. If you store the torte for longer than a day, you should transfer it to a glass plate; otherwise, the cake might oxidize on metal. Sauce 5 oz (250 g) butter 1 cup (250 ml) brown sugar 1 ¼ cups (300 ml) heavy cream 1 tsp (5 ml) real vanilla extract Ironworks Rum to taste When ready to serve the torte, prepare the sauce. Melt butter with sugar until it lightly caramelizes. Add cream and vanilla and bring to simmer until well blended. Add rum to taste. Cut torte into 12 portions. Serve at room temperature. Drizzle sauce over the cake. Garnish with whipped cream, fresh mint and toasted slivered almonds.

Seafood Pie Masstown Market
For 6 people (makes one 9-inch pie) 12 oz (350 g) regular chowder mix (Atlantic haddock, cod, cold water shrimp and sea scallops) pie crust pastry 2 medium white potatoes 1 green onion ½ sweet red pepper 3½ oz (100 g) frozen or fresh sweet corn 3½ oz (100 g) cream cheese 1.7 oz (50 g) grated cheddar cheese 1 tbsp (15 ml) cornstarch 2-3 tbsp (30-45 ml) cream 1 tbsp (15 ml) fresh lemon juice 1 tbsp (15 ml) dried parsley 1 tsp (5 ml) dried summer savory ½ tsp (2 ml) garlic powder ½ tsp (2 ml) Worcestershire sauce Cut potatoes into to half-inch (2 cm) cubes. Cook in boiling salted water so the centre of the potatoes are still firm. Drain potatoes and chill in fridge. Soften cream cheese slightly, cut in cubes and microwave for 2 minutes. Stir together cream cheese, lemon juice and all seasonings. In a separate bowl, combine chopped green onion, chopped red pepper and frozen corn. Add cornstarch to cream and pour over veggies. Add cream cheese mixture and cold potatoes. Stir in chowder mix and finish with grated cheddar cheese. Pour into pastry lined 9-inch pie dish and top with pastry. Bake at 400F (180 C) for 20 to 30 minutes.

Gidney Fisheries is a privately held, family-owned lobster company spanning four generations of the Gidney family, located in Southwestern Nova Scotia. In 1892, Samuel Gidney began buying lobsters from local fisherman and exported them on a weekly basis via steamship to Boston, Massachusetts, and this tradition continues today. We purchase our lobster products directly from local fisherman in the Bay of Fundy and St. Mary’s Bay, Nova Scotia. We have freshcaught lobster for 9.5 months of the year and supply our clients in the off season from our temperature-controlled lobster holding facilities in Metaghan and Centreville, with a combined 400,000+ lbs of holding.

Our worker co-operative started in 1996 as Canada’s first certified Fair Trade coffee roaster. Amazing Apple Cranberry Sausage Stuffed Boneless Pork Loin Roast Meadowbrook Meat Market For 4-6 people
3.5 – 5.5 lbs (1.5 to 2.5 kg) Meadowbrook Boneless Pork Loin 2 lbs (1 kg) Meadowbrook Apple Sausages (or as many as needed) Dried Cranberries (available from Terra Beata) ½ cup (125 ml) Cinnamon Infused Pure Maple Syrup (available from Acadian Maple Products) To make the sausage stuffing remove the apple sausages from the and add dried cranberries to taste or desired appearance. To stuff the loin, cut an opening lengthwise along the part of the loin that has the fat covering. This side will be the top of your roast. Place the sausage stuffing along the opening. Tie the roast if necessary, to keep it from losing its shape or spreading apart. Before placing the roast in the oven pour half of the maple syrup over the roast as a glaze. Repeat with the rest of the syrup about 10 minutes before removing the roast from oven. Bake roast in a 300F (150 C) oven until internal temperature reads 155F (70 C). Remove roast and let it rest 10 minutes before serving. To make the recipe even easier Meadowbrook Meat Market has pre-prepared pork loins or pork chops with sausage stuffing available in their store. Although the sausage stuffing may vary, apple cranberry is one that’s most frequently available. A true taste of the Annapolis Valley – apples and pork!

Honey Roasted Apple & Parsnip Soup Scotian Gold Cooperative Limited & Country Store For 6 people
1 lb (450 g) parsnip 1 ½ lbs (680 g) Honeycrisp apples ¼ cup (50 ml) olive oil 1 tsp (5 ml) coarse salt 3 tbsp (45 ml) butter 1 cup (250 ml) diced onions ¾ cup (175 ml) diced celery 1 tbsp (15 ml) Dijon mustard 2 bay leaves 2 cinnamon sticks 4 cups (1 L) vegetable stock 4 cups (1 L) water 1 tsp (5 ml) milled black pepper ½ tsp (2 ml) sea salt 1 cup (250 ml) Nova Scotia white wine 2 cups (500 ml) heavy cream ½ cup (125 ml) crumbled blue cheese Place the apples and parsnips on a cookie sheet. Drizzle with the olive oil and sprinkle with coarse salt. Roast in a preheated oven at 350 F (180 C) for 45 minutes. Melt butter in a large pan. Sauté the onions and celery until tender, then add the Dijon, salt and pepper. Deglaze the pan with white wine. Add the roasted apple and parsnips along with the cinnamon sticks, bay leaf, water and vegetable stock. Bring to a boil, then reduce the heat and simmer for 30 to 40 minutes. Remove cinnamon sticks and reserve. Purée soup in blender or with an immersion blender. When smooth, reintroduce the cinnamon sticks and stir in heavy cream. Garnish with crumbled blue cheese. Pastrami Cured Salmon Gabrieau’s Bistro, Chef Mark Gabrieau For 10-12 people (as appetizers)
Cure mix 6 oz (182 g) salt 3-6 oz (85-182 g) granulated sugar 2 tbsp (30 ml) cracked black pepper 2 tbsp (30 ml) pickling spice, ground 1 salmon fillet, skin on (approx. 3 lbs or 1.5kg) ½ lemon, juice only 1 bunch fresh cilantro, roughly chopped 1 bunch fresh parsley, roughly chopped ½ cup (125 ml) shallots, minced 3 fluid oz (85 ml) molasses 5 bay leaves, crushed 1 tsp (5 ml) cayenne pepper ¼ cup (50 ml) coriander seed, ground 2 tbsp (30 ml) mustard seeds, ground ¼ cup (50 ml) paprika ¼ cup (50 ml) ground black pepper

Remove the pin bones from the salmon and center it, skin side down, on a large piece of cheesecloth. Brush with lemon juice. Mix the cure ingredients and pack evenly over the salmon. Combine the cilantro, parsley and shallots; pack evenly over the salmon. Wrap the salmon loosely in the cheesecloth and cure under refrigeration for 3 days. After the third day, gently scrape off the cure. Brush molasses evenly over the salmon. Blend the bay leaves, cayenne pepper, coriander seed, mustard seeds, paprika and black pepper; press evenly over the salmon. Rest uncovered under refrigeration for at least 12 hours before serving. The salmon may be wrapped and stored for up to 1 week. Slice thinly for serving. Serve with sour cream, pickled onions or your favourite condiment.

Spicy Italian Sausage Soup The Pork Shop For 4-6 people
1 lb (450 g) hot Italian sausage, casings removed 1 medium onion, diced 3 cloves garlic, minced 3 stalks celery, diced 3 large carrots, peeled and diced 4 cups (1 L) beef broth 1 cup (250 ml) Nova Scotia red wine 1 28 oz (795 ml) can stewed tomatoes 1 cup (250 ml) tomato sauce 1 tsp (5 ml) dried oregano 1 tsp (5 ml) dried basil 1 cup (250 ml) dried pasta such as ziti Parmesan cheese for topping Place a large pot over medium-high heat and sautĂŠ the sausage meat. Remove the sausage meat and add in the onions, garlic, celery and carrots. If the sausage meat is not overly fatty you may need to add some olive oil at this point. SautĂŠ until everything has begun to soften, about 7 or 8 minutes. Add in the stock, red wine and stewed tomatoes. If the tomatoes are whole, break them up with the back of your spoon. Add the oregano and basil. Toss the sausage meat back into the pot and let it all come to a boil. Reduce to a simmer for about 40 minutes or so, stirring occasionally. Add the pasta just 20 minutes before serving, so you don't end up with soggy starchy bits floating around your soup. Serve garnished with grated Parmesan cheese and some fresh bread. Wild Blueberry Pie Chanterelle Country Inn & Cottages, Chef Earlene Busch For 12 people
3 tbsp (45 ml) cornstarch ⁄ 8 tsp (.5 ml) salt 1 cup (250ml) sugar ½ tsp (2 ml) ground cinnamon 4 cups (1 L) blueberries 1 cup (250 ml) orange juice 1 tbsp (15 ml) butter grated zest of 1 orange 1 prebaked 9-inch pie shell 1
In a heavy-bottomed saucepan, mix all of the dry ingredients together well. Add one cup of blueberries and the orange juice. Cook over medium heat, stirring constantly until the mixture becomes thick and clear. Add the butter, orange zest and remaining three cups of blueberries. Cool slightly before pouring the mixture into the pie shell. “Zillions of recipes have been written for blueberry pie, of course. I love this one because only one cup of the berries is cooked; the other three are fresh. Dill and Parmesan Rémoulade 4 tbsp (20 ml) mayonnaise 1 tsp (5 ml) Dijon mustard ¼ cup (50 ml) fresh grated Parmesan cheese 2 tsp (10 ml) fresh dill, finely chopped 2 tsp (10 ml) fresh lemon juice 2 tsp (10 ml) fresh Lime Juice 2 tbsp (30 ml) shallots, finely minced salt and pepper to taste Mix all ingredients together and refrigerate until needed. Crab Cakes 1 ½ cups (375 ml) fresh snow crab meat (if frozen, thaw and squeeze out excess liquid) ¼ cup (50 ml) yellow pepper, minced ¼ cup (50 ml) red pepper, minced ¼ cup (50 ml) shallots, minced 2 tbsp (30 ml) fresh dill, chopped ¼ cup (50 ml) mayonnaise 1 egg white ¼ cup (50 ml) corn flake crumbs (plus extra for breading) ¼ tsp (1 ml) pepper Mix all ingredients well and divide into 12 balls. Form each ball into a 1-inch (2.5 cm) cake, then roll in bread crumbs and gently pan fry until golden brown. Serve hot with the dill and Parmesan remoulade. Cucumber Shots DesBarres Manor Inn For 10 people
4 cucumbers extra virgin olive oil Fleur de Sel (coarse sea salt) 10 shot glasses Wash and juice cucumbers. (Alternatively, puree cucumbers in a blender and strain through a fine sieve.) Refrigerate cucumber juice for 3 hours. Refrigerate shot glasses. Remove shot glasses from fridge. Fill each glass with cucumber juice. Place 4 granules of salt in each glass. Add 1 tsp (5 ml) of extra virgin olive oil to each glass. Drink as a shooter. This recipe is a perfect to start a meal or to cleanse your palate between courses ‌ a refreshing taste of summer. .

5 Push out the meat in one piece. Peel back the flap on the upper side of the tail to expose the vein, remove and discard the vein. 6 Unhinge the back from the body and remove the green tomalley. Red roe of the female lobster is extremely tasty and considered a delicacy. 7 Open the main body section by cracking it apart. The meat in this section can be removed using a fork or pick. Discard the dark sac located between the eyes (since this is not edible). Twist the walking legs from the body. Clench between teeth and nibble meat from legs. The same method can be used to extract meat from the tail flippers.
