3/4 oz. Compass Distillers Gin 3/4 oz. Green Chartreuse Liqueur 3/4 oz. Luxardo Maraschino Liqueur 3/4 oz. fresh lime juice

DIRECTIONS (SERVES 1)

1. Add all ingredients into a shaker tin and fill with ice. 2. Seal the tin and shake hard for 10 seconds. 3. Strain into a chilled cocktail glass. Note: Compass Distillers Gin is developed using local botanicals and ingredients.

1 Nova Scotia lobster 2 ears corn, brushed with oil and paprika 1 jalapeño, small dice 1 small Spanish onion, small dice 2 stalks celery, small dice 2 medium potatoes, small dice 2 tbsp olive oil ¼ cup white wine 2 cups clam juice 2 cups whipping cream Fresh Italian parsley, 2 sprigs Fresh tarragon, 1 sprig Fresh thyme, 1 sprig

DIRECTIONS (SERVES 4 - 6)

1. Cook the lobster to your preference, then place in an ice bath to cool. 2. Once cooled, remove meat from shell. 3. Grill corn until fully cooked. Once cooled, cut kernels from cob. 4. Lightly sauté celery, onions and half the jalapeño in olive oil. 5. Deglaze with white wine and reduce by half. 6. Add clam juice and bring to a simmer. 7. Add whipping cream and reduce by half, about 20 minutes. 8. In another pot, boil diced potato in salted water until just cooked, then cool. 9. Reduce heat of chowder then add potato, corn, lobster meat and fresh herbs. 10. Heat until lobster is warmed through.

1. Poach eggs in simmering water with a pinch of salt and splash of vinegar, for approximately 4 minutes. 2. Remove eggs from water using slotted spoon, and immerse in ice water to stop cooking. 3. 4 oz of raw bacon, diced 1 small onion, small diced 1 leek, split in half lengthwise and thinly sliced 1 large Russet potato, small diced 1 quart fish stock 1 lb smoked haddock, diced in ½-inch pieces 2 cups corn kernels (fresh, canned or frozen) 3 cups heavy cream 3 tbsp potato flakes Crispy bacon, reserved for garnish 1 bunch green onion, thinly sliced (garnish) Salt & Pepper, to taste

DIRECTIONS (SERVES 4 - 8)

1. Cook bacon until some fat is rendered. Add onions and cook in bacon fat until translucent. 2. Add leeks and cook for one minute, then add potatoes and fish stock. 3. Simmer until potatoes are almost cooked through, then add smoked haddock, corn and cream. 4. Bring to a simmer, and thicken with potato flakes to desired consistency. 5. Season with salt and pepper. 6. Ladle into cup or bowl, and garnish with crispy bacon bits and green onion.

Red and Yellow Pepper: • Cut a red and yellow pepper in half and remove the seeds. • With a cookie cutter, cut the peppers into circular discs, approximately 1 inch in diameter. • Slice the underside of the pepper discs to even them out. • Blanch in boiling, lightly salted water for 5 seconds then cool down in iced-water, drain and reserve. 1. Preheat oven to 400 F (to roast squash). 2. Balsamic reduction; combine all four ingredients into a sauce pot and simmer on medium heat. 3. Reduce until it thickens aux nappe (just coats the back of a spoon). 4. Strain and cool; gently cover with plastic wrap. 5. Bruschetta topping; toss squash in olive oil, one clove of minced garlic and 1/4 tsp salt and pepper. 6. Roast until squash turns deep golden colour, turning once. Remove from oven and cool. 7. Preheat oven to 450 F (to toast bread). 8. Slice, deseed and chop tomato; strain from its juices. 9. Combine squash, tomato, onion, herbs and rest of the minced garlic; toss in olive oil with the freshly grated cheese to taste. 10. Slice baguette 1/2-inch thick and brush both sides with olive oil; place on cookie sheet. 11. Bake in the 450 F oven until crispy, turning once. 12. Top baguette with bruschetta mixture and drizzle with balsamic reduction. Garnish with fresh parsley. 13. Serve with left over olive oil and balsamic reduction for dipping. Serve with Planters Ridge 2016 Elevation, a frizzante blend of L’Acadie, Frontenac Blanc and Muscat Ottonel. This mouthwatering white wine exhibits aroma of citrus and lime zest. Crisp bubbles deliver notes of grapefruit.

12 Nova Scotia oysters, fresh and in the shell 1 stick (4 oz.) unsalted butter 1/2 tsp chopped thyme 1/2 tsp finely chopped garlic 1/4 tsp smoked paprika 2 tbsp Aged Gouda, finely grated 2 dashes of good quality hot sauce 2/3 tsp coarse sea salt

DIRECTIONS (SERVES 4)

1. Preheat oven to broil at 425 F; place rack 3/4 of the way up inside oven. 2. First, make brown butter by slowly caramelizing the stick of butter in a sauce pan over medium heat. 3. Once the butter has reached a toasty brown colour, remove and let cool. 4. To make the vinaigrette, combine brown butter, thyme, garlic, smoked paprika, Gouda and hot sauce. Mix until smooth. 5. Shuck oysters and drain liquid. Add equal amounts of butter mixture to each oyster. 6. Place on baking sheet; broil for 2 - 3 minutes or until golden brown. 7. Allow to rest 3-4 minutes, then add a pinch of sea salt. 8. Place on top of Hana Tsunomata seaweed salad, then serve. 3 oz Nova Scotia lobster 3 oz scallops 3 oz salmon 3 oz halibut 12 mussels 12 clams 2 tbsp butter 3/4 cup onions, diced 1/2 cup carrots, diced 1/2 celery, diced

3/4 cup yellow-fleshed potatoes, diced 1 sprig of thyme 5 sprigs of dill, chopped 3/4 cup heavy cream 2 cups milk 1 tbsp butter 1/3 cup white wine 3 tsp cornstarch (optional)

DIRECTIONS (SERVES 4 - 5)

1. To start the base, melt 1 tbsp butter in a large pot over medium heat. 2. Add diced carrots, celery and onions. Sweat (by covering) until onions are translucent; then add sprig of fresh thyme. 3. Add cornstarch to the pan if a thicker consistency is desired. 4. Deglaze the pan with white wine until liquid is reduced by half. 5. Add the cream and milk; simmer over low heat for 10 minutes. 6. Add the diced potatoes and cook until almost fork tender. 7. Melt 2 tbsp butter in another pan, over medium heat and add all seafood. 8. Once the clams and mussels have opened, transfer seafood into the chowder base. 9. Add dill, and season to taste with salt and pepper. Garnish with fresh dill (optional).

6 medium mushrooms, thinly sliced 6 tbsp green onions, chopped 3 tbsp butter 1 cup cooked Nova Scotia lobster meat, chopped 1 cup small scallops (or chopped medium scallops) 1 cup medium shrimp, chopped 6 oz fresh haddock, diced 4 oz cream cheese, cubed 8 oz goat cheese, crumbled, reserve 4 oz for garnish 3/4 cup whipping cream 3 tbsp fresh parsley, chopped 2 tsp ground cardamom (freshest possible) 1⁄4 cup chopped green onion (for garnish) 16 warm, unsweetened 8-inch crêpes (previously prepared)

DIRECTIONS (SERVES 8)

1. Sautée the mushrooms and 6 tbsp green onions in butter until tender; add haddock, scallops and shrimp, and allow to cook through. 2. Add lobster meat. 3. Add whipping cream, cream cheese, 4 oz goat cheese, cardamom and parsley in the pan, over low-to-medium heat, until the cheese has melted and mixture thickens. 4. Remove from heat and set aside. 5. Fill each crêpe with ¼ cup seafood mixture. 6. Plating: Place two crêpes per plate, top with a bit of crumbled goat cheese, extra seafood mixture, and garnish with chopped green onion. 7. Serve with Jost Tidal Bay, as the texture of the fresh seafood cream and delicacy of the cardamom balances beautifully with this wine.
