In this recipe book you will find recipes created by the most recognized Chefs in Mexico in collaboration with the Western United States Agricultural Association (WUSATA). Discover new flavors and experiences through products from the United States, which are distinguished by their high level of quality. Each of the recipes has a different origin, but one bite is enough to be part of this gastronomic tour of the Western United States.

Egg Casserole with Agropur Feta Cheese

Rich breakfast with a creamy texture, and a mix of balanced flavors that you can adapt with vegetables at your fingertips and Agropur’s award-winning feta cheese.

Ingredients:

Agropur Feta Cheese

Egg Squash Garlic Cherry tomato Chistorra sausage Olive oil

Butter Cream Black pepper Za’atar Salt Chili oil Chives Serve with bread Cilantro sprouts for decoration

50 grams 100 milliliters 2 tsp 1 tsp 2 tsp 1 tbsp 1 small bunch

Instructions:

• Cut the squash (star shape), garlic, cherry tomatoes and chistorra sausage.

• In a frying pan over medium heat add oil and butter, sauté the garlic, pumpkin and chistorra.

• When the sausage is browned, add the tomatoes, salt, freshly ground black pepper, za ‘atar, cream and Agropur feta cheese.

• Add the pan mixture to small cast iron pot coated with two eggs.

• Bake in a preheated oven for 20 minutes at 180 C.

• Finish with bread, tomatoes, cilantro sprouts, chives and chili oil.

Naan with Renewal Mill Okara Flour, Egg and Jocoque

A great option as a light dish or a starter, it is a very versatile base to adapt to any occasion, I share with you one of my favorites for breakfast made with Renewall Mill’s organic Okara flour.

Ingredients for the Naan:

Renewal Mill Organic Okara Flour Organic Okara Flour Wheat flour Water Whole milk Dry yeast Sugar

Naan Instructions:

Sour cream Canola oil Sea salt Za’atar Melted butter Lubricating spray oil Cooking Spray Plastic Wrap

2 Pieces 1 Tbsp 120 Milliliters 1 Tsp 1 Tsp 10 Tsp

Blend the milk and water in a medium saucepan, put it on the heat and remove when it reach 37.5 ºC. Add the yeast and sugar, stir well with a whisk. Let the mixture stand for 8 to 10 minutes. In a large bowl with a balloon whisk, mix the eggs and cream until incorporated, add the oil little by little in a trickle, then add the yeast mixture and salt. Set Aside. Sift the Renewal Mill Organic Okara Flour and the wheat flour using a fine sieve. Add little by little the flour and knead until obtaining a uniform dough that does not crumble, if necessary add a little more water, oil, or wheat flour as needed.

Grease a container to let the dough rest, considering that the dough will double in size. Place a film or lid according to our container and let the dough rest in a warm place without direct light. On a surface place a little flour and pour the dough, with the help of the rolling pin shape it into circles or ovals and pass it to a tray with a little flour until completing all the Naan pieces.In a thickbottomed pan add melted butter and the dough, salt and za’atar and cook for about 2 to 3 minutes, repeat the procedure on the other side adding butter. Repeat until finished with all the dough. If eating them immediately, keep them covered with a napkin, if not, let them cool on racks and once cold can wrap them in film and refrigerate.

Ingredients to finish the dish:

Heirloom tomatoes 500 Grams

Radish 150 Grams

Creole avocado 1 Kilo

Jocoque 500 Grams Yellow Lemon 1 Piece Dill 1 Small bunch

Eggs

1 or 2 Pieces per Naan Za’atar 1 Tbsp Black pepper 1 Tbsp Sea salt 1 Tbsp Olive oil 10 Tsp

Instructions to finish the dish:

Cut the tomatoes in halves or quarters. Slice the radishes with a mandolin or a knife.Slice the creole avocado with skin, keeping its shape. With the help of a grater remove the peel of the yellow lemon and obtain the juice without seeds, set aside. With the Naan warm, spread jocoque, place the creole avocado with a light bath of olive oil and sea salt. Season the eggs with a little bit of black pepper and za ‘atar on the yolks. In a bowl pour the tomatoes, a pinch of salt and pepper, olive oil and lemon juice, integrate well and place on top of the naan. Finish our decoration with the radishes, lemon zest, dill, a little more oil, salt, pepper and za’atar.

Delicious Sicilian Spicy Pesto with Bella Sun Luci Sun Dried Tomatoes

You can spread it on toasted bread, prepare it with pasta, use it as a dressing on salads, pizza, etc.

Ingredients:

Bella Sun Luci

Sun Dried Tomatoes 241 Grams

Tomato oil 60 Milliliters

Parmesan Cheese 80 Grams

Garlic clove 1 Clove

Almonds 70 Grams

Smal bunch of Basil 1 Fist

Seedless tomato 1 Piece

Oregano 1 tbsp

Chiles de arbol 2 Piece Hot Water 3 cups

Salt to taste

Instructions:

• Process all the ingredients until obtain an homogeneous mixture.

• Hydrate the chiles de arbol with hot water. Process again.

• Store in a jar in the refrigerator.

Chef´s note:

The jar has the perfect amount. I liked that they are already seasoned, without being too salty. The touch of extra virgin oil helps enhancing the flavor.

Kimchi BruxMix Waffle with Pork Rinds

Authentic Brussels waffle with a spicy, comforting twist.

Ingredients:

Brux Mix 454 Grams

Warm water (125 ºF / 52 ºC ) 2 Cup

Whole milk 1 Cup

Melted unsalted butter 250 Grams

Chicharrón with meat 350 Grams

Kimchi 100 Grams

Gochujang Sauce 2 Tbsp

Cambray onion 5 Pieces

Chives 1 Small bunch

Egg to finish the dish 1 or 2 Pieces per waffle Salt 1 Tbsp Black pepper 1 Tbsp

Instructions:

• Mix 2 cups of water at º52 C, and milk in a large container.

• Add 454 grams of Brux Mix to the container with 170 grams of melted unsalted butter and using a whisk or mixer, blend until smooth.

• Cover the container or apply food film and let it stand at room temperature for 1 to 2 hours until the size of the mixture grows by 50%.

Chop: 350 grams of pork rinds with meat in small cubes. 100 grams of kimchi in small pieces. 1 bunch of very fine chives. Finely the green part of 5 cambray onions.

After the resting time add to the container: 250 grams of chicharrón with meat,100 grams of kimchi, 1/2 bunch of chives and the green part of 5 cambray onions and 2 tablespoons of Gochujang sauce. Cook the mixture in a waffle iron for about 3 to 4 minutes per piece. With the remaining butter we spread our waffles lightly.

To serve, we place the waffles with 1 or 2 pieces of eggs, salt and pepper, the remaining chives sprinkled on top and the remaining chicharrón.

Our Brussels Waffle is world renowned and known for it’s distinctive characteristics of a light, airy, and crispy product that allows endless Sweet and Savory menu creations. Batter can last 3-5 days in refrigerator. Waffles can be made in advance and placed on wire rack. The waffle can be held in this state for 30-40 minutes. Place back into waffle iron for 15-20 seconds or in oven @ 350F until warm.

All-Natural Pancake

Our All-Natural Pancake- taking pancakes to another level with their light and fluffy texture. Pancakes can be made traditionally or with seasonal favorites such as Pumpkin Spice or Lemon Ricotta. Batter can last up to 2 days in refrigerator. Pancakes can be made in advance and placed on wire rack. The Pancake can be held in this state for hours. To reheat, place in oven until warm. “

Western Hoagie Sandwich with Organic Sepoli Datehini and Roast Beef

This sandwich made with organic Datehini from Sepoli and roast beef with Swiss cheese is an excellent alternative to satisfy hunger.

Ingredients:

Dahetini of Sepoli 2 tbsp

Baguette 1 Piece Roast Beef 100 Grams Spinach 10 Leafs Apple 1/2 Piece Swiss Cheese 4 Slices Grain mustard 2 tbsp

Instructions:

• Brown the bread.

• Cut the apple into small slices.

• Spread one of the bread tops with Datehini and the other with mustard.

• Add the apple, spinach, cheese and roast beef.

Chef´s note:

We chose to include Datehini from Sepoli Organics in the sandwich because, when combined with the apple and the roast beef, it provides a sweet and sour touch that is very pleasant to taste.

Cuban Sandwich enhanced with the flavor of Secret Aardvark Sauce

A sandwich accompanied by Secret Aardvark’s Drunken Jamaican Marinade sauce that will leave an excellent and delicious taste in your mouth.

Ingredients:

Chapata Bread 1 Piece

Drunken Jerk Jamaican Marinade by Secret Aardvark 236 ml Grain mustard 2 tbsp Ham 3 Pieces Pork Loin 150 Grams Swiss Cheese 4 Slices Pickles to taste

Instructions:

• Cook the tenderloin with salt and pepper.

• Spread mustard on the ciabatta, add the ham, cheese, pickles and cooked loin.

• Top with Drunken Aardvark sauce.

• Place on a panini griddle until the cheese is melted and the ciabatta turns golden brown.

Chef´s note:

We decided preparing this Cuban Sandwich with the Secret Aadvark Sauce since we considered that the touch of Habanero and Jamaican Rum would make a great mix with the pork loin, resulting in an explosion of flavors.

Drunken Jerk Jamaican Marinade is a complex combination of Jamaican jerk seasoning with just the right balance of thyme, allspice, habanero peppers, and garlic. We are a small operation in Portland, Oregon. We started peddling our sauces at the Portland Farmer’s Markets in 2004. Hot Cakes with Sagra's Lolly Waffles

A sweet and delicious breakfast made with Sagra’s Belgian Waffle mix with a natural touch of raspberries.

Ingredients:

Sagra Lolly Waffle Belgian Waffle Blend 32 Oz Water 1 Cup Maple Syrup 1 tbsp Raspberries to taste

Instructions:

• Pour the waffle mixture into a container, add water and whisk until the mixture is fully integrated.

• With a spoon, pour over a hot pan, once bubbles on the top stop coming out, turn over and wait until it is fully cooked.

• Garnish with raspberries and add maple syrup.

Chef´s note:

We decided to prepare these pancakes with the Sagra’s Lolly Waffle Belgian Waffle Blend mix to make the most out of its fluffy consistency, managing to create puffy and soft pancakes.

Easy-to-make Cookies made with NW Hazelnut and Oatmeal

Easy recipe for homemade oatmeal cookies using NW Hazelnut hazelnuts to give them a truly spectacular touch.

Ingredients:

Large egg Sugar Unsalted butter at room temperature Vanilla Oats Wheat Flour Hazelnuts NW Hazelnuts roasted and chopped Salt flakes to taste

1 Piece 100 Grams 95 Grams 1 tsp 150 Grams 150 Grams 130 Grams

Instructions:

• Beat the sugar with the butter at medium speed until they incorporate.

• Add the egg and vanilla, beat again.

• Add the flour, oats and the previously toasted and chopped hazelnuts. Mix again until obtain a homogeneous mixture.

• Form small balls by hand and place them on a greased or waxed paper tray. Flatten a little with a glass and sprinkle them with salt flakes.

• Place in the fridge for 30 minutes and then bake for 15 minutes at 180 degrees Celsius (previously heated), let them cool and enjoy.

Sandhill Wild Rice 1 Cup

Water 2.5 Cups

Green asparagus 8 Pieces

Garlic 1 Clove

Walnuts 65 Grams

Feta Cheese 70 Grams

Instructions:

• Cook the wild rice for 40 min. Cover.

• Remove the bottom part of the asparagus. Cut them

• Sauté the asparagus on medium heat with a little olive oil and the garlic clove.

• Mix the asparagus with the rice, feta cheese and chopped walnuts.

• Season with the olive oil, lemon, honey, salt and pepper.

Delicious Panela Cheese with USimplySeason's Togarashi

A delicious, practical, quick and healthy snack made with panela cheese and seasoned with USimply Season’s Togarashi.

Ingredients:

• Slice the cheese.

• Coat with olive oil and cover with togarashi.

• Serve with tortilla chips or Arabic bread.

• Place in the air fryer at 200 degrees for 15 minutes.

Chef´s note:

We thought of using two different flavors: one intense and one neutral. Being the USimply Season’s Togarashi an ingredient with quite intense flavors, and the panela cheese the one with a neutral flavor, the result of mixing these two is an accent of flavors from all the spices contained in our togarashi.

Navajo Pride Blue Cornmeal Corn Muffin

Recipe by Chef Luigi Tlachi

A delicious traditional corn muffin served with a Creole plum jelly made with Navajo Pride blue cornmeal.

Ingredients:

Canned corn 300 Grams Egg 5 Pieces Butter 295 Grams Condensed milk 375 Grams Baking powder 1 tbsp Sugar 100 Grams

All-purpose flour 125 Grams

Pancake Instructions:

Navajo Pride blue corn flour 125 Grams Canola oil 120 Milliliters Vanilla 1 tbsp Salt 1 pinch Cooking Spray

• Blend the corn with the condensed milk, tablespoon of vanilla and 2 eggs for 30 seconds, set aside.

• Sift together the all-purpose flour, Navajo Pride Blue Cornmeal and baking powder, add the pinch of salt and mix.

• In a mixer cream the butter with the sugar, add 3 eggs, one at a time, and mix. Gradually add the ground corn mixture alternating with the flour mixture, beat until incorporated.

• Grease and flour the mold, pour the mixture, bake at 180ªC for one hour. Let cool and unmold.

Ingredients for plum jelly:

Star anise 1 tbsp Allspice 1 tsp cinnamon 5 cm piece

• Wash and pit the plums

• In a saucepan toast the star anise, the coarse pepper, and the cinnamon stick. Pour the water and sugar, cook over medium heat, stirring continuously until syrupy, remove the spices and add the plums, stir constantly.

• Leave to boil for 5 minutes and turn off, set aside and let cool.

To decorate:

• Yellow lemon zest

• Sliced fresh plums
