What a year this has been. We’ve survived the aftermath of the recession, made it through the post World Cup fever blues and endured the effects all the strikes have had. Only in South Africa, right? But that’s all past tense, so let’s embrace the last few weeks we have left of this wonderful 2010 and make sure we end off on a positive note! This festive issue is filled with some fantastic surprises. I buy all my clothes at Miladys because it’s my perfect fit. I don’t have to do any alterations; I always bought my clothes cash, but when I went on pension I had to buy on my daughter’s account. I went to Miladys in Walmer Park to buy cash, but I just explained to the lady that I could not buy on my daughter’s account as she is not with me. The lady asked me why don’t I open my own account. “You don’t accept pensioners,” I said and she said, “Yes, we do.” Then she filled in all the forms for me and the next day I was accepted. t was the chickens that started it. The young couple travelling with their Cocker Spaniel to Bloemfontein decided to stop for lunch at a petrol station. They opened the door for their beloved four-legged friend, and upon seeing the chickens on a patch of grass nearby, the dog went all Cujo on those frightened fowls. Needles to say, the couple left without their toasted sandwiches. Travelling with kids can be a challenge, but travelling with your pets can be downright unpredictable. But if you don’t fancy putting Snookums into a kennel or cattery for the duration of your holiday, and don’t have much faith in the house sitter’s ability to feed your exotic Panamanian jungle python, then you need to know what you are doing. The most obvious is to check your accommodation and see whether pets are allowed. Pet-friendly holiday accommodation is becoming increasingly popular. The website www.petfriendly.co.za has an extensive listing of pet-friendly accommodation in South Africa, and handy tips on things to consider if you’re a first-time traveller with your pooch.

And obviously, the Kruger National Park is no place for your dog or cat, unless you want it to become part of the food chain. A trip to the vet before you depart is also valuable. Not only can you give your pet a full check-up before you leave, but you can also request a printout of your pet’s medical history in case you have to visit a vet while on holiday. You should also have some basic identification for your pet, such as breeding or registration papers, vaccination papers, and an ID with your pet’s name as well as your name and details. Especially those with more exotic pets, and definitely those travelling overseas. A change of environment may cause some stress to your pet, so where applicable take a familiar toy or blanket with you. If you’re travelling by car, it’s advisable to put your pet in a proper carrier and secure this in the vehicle, rather than just letting your pet loose on the back seat. Not only could the slightest accident injure your pet, but the unpredictability of animals could also be a safety hazard. Also, stop regularly to allow your pet, and grandma, to stretch their legs or relieve themselves. By applying just the normal common sense, you can ensure that the family pet is a valuable addition to the family holiday. You’ll all arrive back home with a spring in your step! 

eauty has gone beyond yesteryear’s basics of soap and water, with several fabulous new treatments available to help combat skin problems such as pigmentation, blemishes and the dreaded appearance of wrinkles. In South Africa, with our harsh, hot Summers and outdoor culture, it’s natural that many of us are prone to skin damage. Dermatologists and beauty

Dark rings African and Indian women in particular may be prone to dark rings around the mouth as well as underneath the eyes – an area that is extremely thin and delicate. While there is no permanent cure for this, says Dr Naidoo, since it is a “genetic imprint”, blemish controllers and cosmetics can be used. Should you wish to try a skin lightener, it must not contain

Easy tips to try at home include keeping wellhydrated, using an SPF 30-minimum sunscreen daily, cutting your salt intake, increasing vitamin C in the diet and applying a vitamin K cream, since

this can alleviate bruising. Rest is also a crucial factor in the fight against under-eye shadows. Pigmentation Unsightly marks on the skin can erode a women’s self-confidence, even if the blemishes are not very visible to others. Dr Naidoo lists a selection of credible antipigmentation treatments available in South Africa through dermatologists and skin specialists, including topical application of creams that suppress tyrosinase and melanin production, and fruit acid peels. Ask your healthcare provider about alpha and poly-hydroxy-acid creams, as these have also been proven effective. Pigmentation sufferers could also use sunscreen agents containing the plant extract polypodium leucotomos, or preparations containing kojic and mulberry extracts. Dr Naidoo says that an intensive treatment called Nd: Yag superficial laser peels are also available, but these are performed by experts only. Fraxel laser skin rejuvenation has also become a viable option. Invented in America and also known as fractional resurfacing, it is less invasive than laser skin resurfacing, with a shorter healing time, less redness, oozing and discolouration. One of the treatments available is for pigmentation. After around three to five treatment sessions, patients report improvement in brown spots, or dyspigmentation.

SIMPLE HOME TREATMENTS

If you’re living in the country or cannot afford expensive advanced skin treatments, how about trying some of these cheap beauty remedies in the comfort of your own bathroom? For pigmentation and blemishes try these regularly and preferably on a daily basis: • Mix 1 tsp milk powder, 1 tsp honey, 1 tsp lemon juice and ½ tsp of almond oil. Apply to your face and wash off after 10 to 15 minutes. The result? A more vibrant skin and less ‘tan’. • Place sliced raw potato on the skin, which helps reduce blemishes and other marks. • Turmeric powder and lime juice removes ‘tanning’, as lime juice is a natural bleach. • Drink loads of water and avoid heavy, oily foods to restore your complexion. Including more whole cereals, fresh fruits, vegetables and pulses in your diet also promotes healthy skin from the inside out.

Anti-ageing solutions Watching wrinkles march across your skin is a natural part of the ageing process. A simple way to help halt the ageing process is to start using anti-wrinkle filler treatments or Botox as soon as you feel it’s necessary, says Dr Naidoo. You could also try some over-the-counter remedies, such as Dermabrasion or chemical peels. Laser resurfacing is a plastic surgery option. Other names for this treatment include laser peel, laser surgery, laser vaporisation, laser

Wrinkles can be treated as follows: • Place egg whites on the skin. • Mix the liquid from three vitamin E capsules with 2 tsps of plain yoghurt, ½ tsp of honey and ½ tsp of lemon juice. Apply with cotton wool, leave for 10 minutes and rinse. • An infusion of comfrey, witch hazel and patchouli essential oil also helps to combat wrinkles, as does coconut oil gently massaged into the skin at night.

the aura of confidence, of success and happiness. It is thus no coincidence that the name is fiercely protected. Other countries may grow and bottle superior sparkling wine, but only France - and then not even all of France - produces champagne. The Comité Interprofessionnel du Vin de Champagne, the trade association that represents

pparently there is no truth to this legend, but what a lovely story it is - one that every champagne lover wants to believe. Say the word ‘champagne’, and images of sheer joy are conjured up. The best of life comes to mind: celebrations, romance, elegance, sybaritic indulgence... Champagne carries with it

all the Champagne houses and growers, is tasked with protecting the exclusivity of the appellation. The vineyards of Champagne have been legally defined since 1927. The Comité lays down regulations regarding the pruning of the vines, their height, space and density, and ensures that harvesting is done by hand. More recently, measures have been taken to lengthen the minimum aging time to fifteen months for non-vintage champagnes, up to three years for vintage champagnes, and even longer for prestige cuvées. Time allows the different aromas to develop. As a general rule young champagnes (fifteen months to three years) give off white flower, citrus and fresh fruit aromas. When mature (three to five years) the drink is dominated by the bolder aromas of summer flowers and ripe fruit. Only when older than five years, are the champagnes considered at their peak and do they begin to express themselves through bouquets of dried flowers and grilled nuts. Aging and fermentation forms a big part of what champagne is all about. Since the wines were kept in large barrels during this process, the effervescence escaped. It was only once part of the fermentation process was done in the bottles themselves, that the sparkle was captured and preserved. The shape of the cork reveals a lot more than the novice might think. A cork that splays at the bottom is indicative of a fresh bottle as the cork still wishes to retain its original shape. Fresh bottles are also likely to release the cork with a resounding pop. Older bottles will sigh gently upon opening and their corks are likely to be tapered at the bottom. Champagne initiates will also inspect the very bubbles themselves for confirmation of age. Over the years, bubbles gradually become increasingly smaller before finally dying out. This is not a concern for the true connoisseur. Only the uninitiated will regard a very old champagne as ‘flat’. Champagne corks should never be allowed to

pop off the bottle and fly through the air. This is the drink of romantics, aristocracy and nobility, not a missile of mass destruction. After all, the first King of France was anointed with wine from the Champagne region in Rheims one Christmas Eve late in the ninth century. So, after gently removing the wire cage, hold the cork while twisting the bottle slowly. This way the cork will release itself. Of course, the most flamboyant style is to cut the neck of the bottle with one smooth, practiced sweep of a traditional French sabre, but that is best left to the masters. Contrary to popular belief, once opened, a silver spoon across the mouth of the bottle will do nothing to protect the effervescence - only a proper champagne stopper will do that. For anyone who has a victory to celebrate, for anyone who needs to be consoled, for the wallflowers thirsting after a glassful of poise, for the young and the old, nothing thrills the soul more than a mouthful of golden bubbles. Become a true champagne connoisseur - join popular rappers like Snoop Dogg in embracing champagne as the drink of your choice, and quote Madame Lilly Bollinger: “I drink champagne when I’m happy and when I’m sad. Sometimes I drink it when I’m alone. When I have company, I consider it obligatory. I trifle with it if I’m not hungry and drink it when I am. Top tips for trouble-free holiday travelling with your kids Whether journeying with toddlers or teenagers, good planning and an attitude of ‘don’t sweat the small stuff’ are key to a memorable holiday with your children. hildren of all ages have shorter attention spans and more energy than adults, so being cooped up on an aeroplane or squashed between luggage in the backseat of a car is, understandably, not their idea of fun. Parenting experts suggest preparing in advance by focusing on the following areas – safety, snacks and super things to do. First, ensure that your child is strapped into an SABS-approved car seat, booster seat or seatbelt appropriate for his or her age. Check the child-lock feature on your car, ensure that you have a suitable

sun guard in place to keep the heat off young faces and have a basic first aid kit on hand. While sweet treats on trips may seem the perfect bribery tool for tired or tetchy children, bear in mind that motion sickness, improper nutrition or lack of sleep could result in those sugary snacks backfiring while you’re on the road. When packing road snacks, the rule of thumb is: plenty of water, loads of fibre and ‘less mess equals less fuss’! Apart from stocking up on bottled water for everyone, healthy sandwiches with light protein fillings such as egg or peanut butter, vegetable sticks, fresh fruit, biltong, whole wheat

(parents, for those of us who don’t yet know the lingo) and possibly younger siblings. Modern teens are spoiled for choice – laptops, hand-held games, iPods and mobile phones provide great distractions. Try, however, to engage your teen by having him or her taking charge of photographs. They can snap at will and then, if you’ve got one, load the photos onto the laptop (and even play around with editing them). Holiday reading is also a winner – give your teenager sufficient money to buy his or her own magazines and cheap holiday romances or horrors before the trip. You could also buy a guide to your destination and have your teenager help choose activities, tourist attractions and other places to visit once you’re there. They’ll enjoy feeling empowered – especially if they’re folded into a backseat for hours at a stretch. Allow your teenager a bit of freedom during the holiday. Obviously, you want him or her to be safe, but let them spend their pocket money as they choose, keeping aside a bit for friends back home. With a little forward-planning, your family trip can be what it’s meant to be – a heavenly holiday with those you love. 

muffins, mini rice cakes and preservative-free dried fruit are perfect choices. Pre-schoolers and older children will enjoy popcorn, too. Pack snacks in cooler bags, in separate compartments, and take out a selection of goodies as the trip progresses, placing them in an empty bowl to prevent spilling. Teenagers will also enjoy spending their own money at pit stops, so loading up on healthy food while travelling means that they can splurge on a burger and chips halfway through the journey. Toddlers are quite easy to entertain if they’re well-rested and well-fed. During your journey, stop frequently along the way if possible, as this provides welcome distraction and relieves boredom. Stock a cardboard box with safe, soft toys such as finger puppets, books and paper with crayons and magnetic drawing pads. Avoid potentially dangerous objects such as marbles, metal or pencils. Music CDs are also a great aid during trips. Car seat travel trays are fabulous for longdistance travel! Your little one will have a smooth, solid and flat surface on which to do all sorts of things while she’s trapped in her seat – and it makes mealtimes that much easier, too. For older toddlers and teenagers, creating a seasonal journal is a wonderful activity for making memories. Gather some sturdy A4 or A5-sized pieces of cardboard and bind them together by punching holes at intervals and then using string or raffia to gather the ‘book’ together. Label the journal ‘Our Holiday’ and then collect interesting mementoes along the way, such as seeds from a giant tree under which the family had a picnic, or an empty chip packet (a memory of that quaint village stopover). Teenagers and older kids can write down their impressions of the road, nature and the places visited, while toddlers can draw what they see. A teenager can, quite easily, make or break a family holiday. It’s just not easy being in puberty – especially when you’re stuck with the ‘rents

Play the comedian with these easy, budget-friendly games. • Poke fingers and hands into socks and voila – a set of finger puppets • Pretend to paint each other’s finger and toenails • Tell a story by taking turns, saying only one sentence at a time • Draw letters and numbers on each other’s back, trying to guess what was drawn • Engage in ‘no laughing’ and ‘no talking’ competitions. • Play ‘I Spy’. For younger children, use colours, shapes or objects instead of letters if they do not know their alphabet yet.

deally, we’d all like our guests to feel that they’re in a ‘home away from home’ when they come to stay with us – and creating the perfect bedroom retreat for your special visitors is far easier and cost-effective than you think! Whether they’re using the bedroom for business or while on holiday, guests appreciate a personal space, so keep in mind that fresh basics, as well as special touches, are key. Start by imagining your ideal hotel or Bed & Breakfast establishment. In what way did your room make the experience more memorable and pleasurable? If you have the space, a dedicated guestroom is ideal – and one with an en suite bathroom even better! However, even if guests have to share a bathroom or are sleeping in a double-duty room (a home office or family room used as a guest room too), the way you design and decorate it will transform it into the ideal spot for a visitor.

A queen-sized bed is ideal and, if you can afford it, choose 100% cotton sheets and pillows and use these only for guests – this ensures they won’t wear out as quickly as family bedding does! For both winter and summer, a large comforter works well, adding not only colour but warmth in cooler months and an ideal substitute for hot duvets during sweltering evenings. Try to have at least two types of pillows – both soft and firm. Make sure that any continental pillows have comfortable fabric (nothing too shiny or slippery), as guests often use these while reading or watching television. Clear some space in the cupboard or chest of drawers; while many guests don’t bother to unpack if they’re staying for just one night, some might have a special function to attend and so will want to avoid creased clothing. Have at least five hangers available.

The basics Since so many different people are likely to be using your guestroom, furnishings should be in neutral and warm colours that work for both men and women. For walls, a muted, buttery yellow or cream creates a cosy effect. Complement this gentle palette with tan, brown, gold or rich cream in duvets, carpets and curtains. Eastern Cape interior decorator, Terry Cooper, says that once you’ve got your basic colour

Special touches If you have enough space, always place a small table and comfortable chair in a corner of the room, says Cooper. Add a pot plant, a reading lamp and a selection of magazines and books (one or two novels, a non-fiction book and a local travel guide). You might also wish to add a coaster for drinks or a cup of tea. A small cupboard doubling as a bedside table is super for storing books and knick-knacks such as a torch and a box of tissues. Here you can also place

Personal touches don’t have to cost much. Instead of hanging expensive paintings on the wall, frame your children’s art or use lovely travel scenes from large calendars to give the room a holiday vibe. Cooper says that a pot plant, pretty picture and a cosy lamp are budget-friendly items that give any room a ‘welcome home’ feeling. To spruce up a tired carpet that’s too expensive to replace, shop around at large retail stores for cheap rugs in complementary colours and then add two to four scatter cushions in matching shades for the bed. Mismatched second-hand furniture such as tables, chairs and lamps can be given a new lease on life with a good scrub and paint technique. With a little time and effort, you’ll be well on your way to creating a beautiful space in your home – one in which you might be tempted to sleep yourself! 

Guests love to snack, so a small basket of goodies – nuts, biltong, chocolate and bottled water – will be greatly appreciated. Buy fluffy, guest-only bath towels, hand towels and facecloths, placing these on the bed just before your guest’s arrival. A wastepaper basket, as well as small notepad and pen – and even a map of the area – are thoughtful touches too. If your guest is staying for more than two days, include a small laundry basket for soiled clothes and, if possible, invest in a small television. Check plugs for mobile phone chargers too; while landlines are no longer a necessity in guest bedrooms, your visitors won’t want to be stuck with a flat mobile phone battery. On a budget A good-quality bed is still a must, even if your budget is very small. Alternatively, invest in a sleeper couch or daybed and spend a little more on cotton sheeting and bedding. Small space and no cupboard? No problem – a folding garment rack is the perfect spot for hanging

I

it remains one of our most memorable family Christmas’s. Yet, too often, we forget to pay tribute to the women in our lives. The women who in their, often quiet, ways produce the small moments of holiness that define us and help to keep us sane. The mothers who bring a much-needed gentleness to the world. Boys in particular may be able to grow up without a father, because they have within them an innate strength and brute power which the world craves and will ultimately draw out of them.

t was Christmas Eve, and we were young enough to still believe in the magic of the man in the red suit with bags of presents. And so around the corner of the garden “he” came. With a “Ho! Ho! Ho!” that was a mix between the Grinch and the Marlboro Man, my godmother – a wonderful woman who lived on cigarettes and the deeper meanings of life, and who had gone to tremendous effort to dress up in the red suit and disguise herself – sent us all running and crying into the house in fear. It wasn’t the effect she was looking for, but

men are simple creatures. They begin as boys in love with bats and balls. They run on grass and build their paths to stadiums around the world, becoming powerful leaders in their fields. But they still skin their knees as they did when they were boys. And they still want some comfort when they do. Norman MacLean wrote, “My father was very sure about certain matters pertaining to the universe. To him, all good things come by grace, and grace comes by art, and art does not come easy”. But women are grace and art combined. Many a man has been told that the secret to success in this life is to marry a good woman. A woman who understands that sometimes her husband needs to run around on a soccer field on a Saturday afternoon, with his lungs unable to

But it’s a mother’s touch that is able to temper this with a softness that helps to make the great man. It’s a mother who will buy a pop-up tent for her young sons so that they can “camp” in the living room, or will get them superhero outfits and pretend that peanuts can make you see through walls. Stephen Hawking may well understand the history of time and plumb to the infinite depths of the atom, but he can never explain the depth of a mother’s love. While fathers take over the world in important meetings, groundbreaking discoveries, or thrust themselves ever forward into new lands, it’s the mothers who provide the inspiration and meaning to it all.

But it’s a mother’s touch that is able to temper this with a softness that helps to make the great man. remember as vividly as his mind how he used to do this with ease when he was 15. A woman who understands that a beer and just a simple silence is often the church of men. A woman who knows that he will break through walls for her, but is often more fragile than the world will ever admit. A man knows that he can spend his life shouting at the thunder in the clouds above. But that one day it will roll by, leaving a haunting of nothing. He knows that, as someone once wrote, there comes a time when every man realises that if he were to stand still, he will remain at that point forever. And when he does, she must be there. We buried a godmother this year. A woman, who in our lives made her difference. A woman who endured pain, hardship and suffering early on in her life. Yet amidst all of it, she was there to put on a red suit and bring some magic to us. And all too soon, in a haze of cigarette smoke and a throaty laugh, she became the magic we all remember. 

In a bar or on the sports field, you can say almost anything to a man and he may be willing to overlook it. But mention his mother in some derogatory way, and you have crossed a line from which there is no coming back. It’s a line the world of women will never understand. A line where no matter how peaceful a man may be, he will almost certainly want to settle this one with his fists. The world often criticises this as barbaric and thuggish. But in every good man there is the barbarian who is willingly let loose whenever a good woman is scorned. And before they are mothers, they are wives. They are partners who endure camping and fishing trips and the fanciful adventures of men who are still living out their boyhood dreams. They will smile after the painful birth of a child, and will still feel pure empathy for their men when they cringe in pain and claim they are dying because of an ingrown toenail. And they understand their men in ways they themselves will never do. For all their bravado,

We have all become members of Good Wishes Groups rather than individuals who receive personalized Christmas cards without smiley faces on them. Remember those Christmas cards you used to received from Gran? The ones with the bright star

o this day I don’t know who W is. Maybe W doesn’t even know who I am, apart from another name on his or her phone to whom was sent a group “Happy Christmas”. And therein lies the problem with technology.

on the front, or the nativity scene, or the three wise men? And when you opened it, a R2 note used to drop out and reveal a beautifully handwritten message of love from her. It came from a time when my grandparents still used to travel from Durban to Pretoria by train every December, and we would pick them up at the station – my grandfather wearing a suit and tie and my grandmother with her favourite hat. Nowadays you receive an email that says somebody has sent you a card. You click on it and a goldfish with eyes the size of dinner plates and wearing a Christmas hat sings “We wish you a Merry Christmas” so many times that you wake up screaming at night at the thought of it. Earlier this year, CNN summed it up well in an article lamenting the demise of handwritten letters. “Email is quick. Texting is convenient. Facebook has photos, videos and games. But for all the fancy, multimedia modes of communication out there, nothing beats the thrill of opening the mailbox and finding a personal letter, written and addressed just to you.” You just don’t send a personalized Christmas card to someone you don’t like. It’s why they came up with the saying, “You’re off my Christmas card list”. I mean, let’s be honest, you can swear at and abuse the con artists and spam groups in the mails they send you, and they will keep sending them to you. But get on the wrong side of a family member or loved one, and there is guaranteed to be one less Christmas card on the mantelpiece this year. The beauty of a hand-written Christmas card is that it also allows you time to think about what you are saying, and who you are saying it to. For example, there is nothing worse than sending a bulk email or SMS saying “Merry Christmas” to a group including your boss, who is Jewish. But a tastefully written card with “Season’s Greetings” on it will be as acceptable in Mecca as it is in Morningside, Johannesburg. But beware. Jacob Zuma will most likely not appreciate a card addressed “To you and your extended family”, and the Springbok coaching trio of Peter de Villiers, Dick Muir and Gary Gold may think you are being sarcastic sending them a card with the three wise men on the front. But to the corrupt bookies fixing cricket matches, feel free to send them a card wishing them a merry Christmas for 2020. You can bet they already know what the outcome of that one is going to be. 

matters is whether we let it stop us, or find a way to move forward regardless. We all have that voice inside our head; we all have self-doubt – let’s just accept it, and embrace rather than run away from it. “Everything that you want is just outside of your comfort zone” - R. Allen Interestingly, the moment you expand yourself, start taking responsibility and gaining more control of your life, there comes a time when you will have to face your fears. You cannot continuously grow or realise your dreams without confronting your fears. Most people will do anything to avoid the feeling of fear. Are you perhaps one of them? FEAR, as the acronym stands for: “False Evidence Appearing Real”. Read this again - we create 99% of the fears in our minds and hearts. We create things that do not exist, we forget that our fears are an illusion, and yet we then live in

s we near the end of 2010, it is a good time to reflect back on the things that you wanted to achieve this year, yet perhaps didn’t. It can be way too easy to say, “Oh, I just got too busy this year, things got in the way; I just didn’t make my goals important; I didn’t have the energy/finances etc”. While all of these may be true for you, in my experience as a coach, they may also all be simple excuses for not living your life the way you want to. But why? Another factor usually comes into play, and that is called FEAR. We want to Be, Do and Have so many things, yet the moment we even state what we want, start thinking out of the box or dream of a new life, all sorts of weird, “wonderful” limiting beliefs and “what if” scenarios start vying for our attention immediately, stopping us dead in our tracks, even before we have taken that first baby step. It happens to all of us – the only thing that

You may need to give up your fears in order to get the life that you want. So here is one closing thought for you: “What would you be doing right now if you had absolutely no fear whatsoever? How would you be living and creating your life? You are the only one that can live your life and do your own push-ups. Braised White Asparagus with Hollandaise & Sweet Potato Chips Ingredients Mixed salad leaves Braised Asparagus 24 white asparagus spears,peeled 500ml vegetable stock 1 garlic clove 1tbs butter 1 bay leaf Place peeled asparagus in stock in pan. Cover with a lid and cook over medium heat for 5 minutes or until asparagus is tender but still crunchy. Sweet potato chips 1 medium sweet potato, peeled Using a potato peeler, peel strips off the sweet potato and place into oil at 130ÂşC until lightly browned.

Remove from oil and place on a kitchen towel to drain. Hollandaise sauce /2 cup butter 3 large egg yolks 1tbs lemon juice 1tsp lemon juice 1/8 tsp salt 2tbs hot water

Heat butter in a heavy saucepan until hot and foamy, but not browned. In a small bowl, whisk or beat egg yolks with lemon juice, salt, and cayenne pepper or hot sauce. Gradually beat in butter, then water. Return mixture to saucepan and beat over very low heat until mixture is slightly thickened. Serve immediately or

let stand over warm water for up to 30 minutes. If desired, sprinkle with chopped fresh parsley before serving. Makes about 2/3 cup of Hollandaise sauce. For presentation, place the warm asparagus onto a plate, spoon over the Hollandaise, top with dressed leaves and crispy sweet potato chips.

Sautéed chicken livers and crispy prosciutto Ingredients 200gr chicken livers trimmed and marinated in olive oil, garlic and fresh thyme 1 /2 red onion, sliced 100ml beef jus/reduction 4 tbsp butter 2 tbsp olive oil Salt and pepper to taste 2 tblsp fresh parsley chopped sherry vinegar 1 roll today puff pastry 1 egg 2 very thin slices of prosciutto or ham For the puff pastry Roll out the puff pastry to 0.5cm and cut out 4 rectangular boxes 4cmx10cm, place them on a non-stick baking tray and brush with egg wash.

Place tray into preheated oven @ 200°C for 10 minutes and then turn down to 180°C and bake for a further 5 minutes, remove from the oven and allow boxes to cool, cut off the lid and remove middle to cool, remove insides. For the livers Clean the livers by removing any connective tissue, cut them in half and pat them dry on paper towels. Heat the butter and oil, place the onions in the pan, and sauté, add the chicken livers when the onions become translucent, cook for 5 to 6 minutes, season with salt and pepper. Add the beef jus and reduce, add a splash of sherry vinegar and the chopped parsley.

Medallions of Monkfish* saltimbocca with crispy pap and salsa verde Ingredients For the monkfish: 1 monkfish fillet 3 fresh sage leaves 3 slices pancetta 1 tbsp olive oil ½ lemon juice only

in batches, about 4-6 pieces at a time (do not overcrowd), for 5-6 uninterrupted minutes per side. Drain on paper towels. Cover with foil while frying the remaining pieces. Your first batch may not turn out as nicely as the remaining batches since the oil may not be hot enough etc. Replenish oil after each batch

For the fried pap: 4 cups whole milk 1 tbsp rosemary, finely chopped 11/2 tsp fine sea salt 11/2 cups maize meal 1 3 / cup plus about 6-8 tbsp extra-virgin olive oil 11/2 cups parmesan, finely grated Lightly grease a 9”x11” high-rimmed dish with oven spray.

Salsa Verde Ingredients 1 cup fresh basil 1 cup fresh Italian parsley 1 cup fresh mint 2 cups extra-virgin olive oil 1 /2 cup red wine vinegar 4 anchovies 1 tbsp capers 2 garlic cloves 1 tsp black pepper, freshly ground Method 1. Purée in a blender or food processor all the ingredients until smooth. 2. Allow the sauce to sit in the refrigerator for at least 1 hour before using.

In a large saucepan, bring milk, rosemary and salt to a boil over mediumhigh heat, watching carefully that it doesn’t boil over. Add maize meal in a slow, steady stream, whisking constantly. Reduce heat to medium-low and cook about 20 minutes, stirring frequently with a wooden spoon. Remove from heat and stir in 1/3 cup olive oil and parmesan. Pour pap into greased baking dish, cover with plastic wrap and chill in the refrigerator for 1 hour. In a large sized skillet (preferably non-stick), heat 3-4 tbsp olive oil over high heat, until almost smoking, coating skillet evenly and completely. Make sure the pan is hot enough or the pap will stick. Remove the polenta from the refrigerator and cut into rounds using a 6cm diameter cutter. Carefully transfer pieces to skillet. Fry the pap

Preparation method 1. Preheat the oven to 200°C/400°F/Gas 6. 2. For the fish, place the sage on top of the monkfish fillet, then wrap the pancetta ham slices around the fish. 3. Heat the oil in an ovenproof frying pan, place the monkfish into the pan, squeeze over the lemon juice and cook for a few minutes on each side, until the pancetta is beginning to brown. 4. Transfer the pan to the oven and bake for 7-8 minutes, or until the pancetta is golden-brown and the fish is completely cooked-through. 5. To serve, cut the monkfish into three medallions and place onto a plate on top of the crispy pap and serve with lashings of salsa verde.

* You can substitute Monkfish with any white fish like Kingklip

Smoked Chicken & Green Asparagus Salad Ingredients (for 6) 2 mozzarella Balls 300gr mixed baby leaves 150gr pencil (thin) green asparagus cooked in boiling water for 2 minutes and cooled in ice water 24 black olives, pitted and cut in half 24 cherry tomatoes cut in half 24 leaves basil 1 /2 cup Italian style salad dressing

Crème Brûlée Ingredients 600ml whipping cream 4 egg yolks 1 /2 cup Huletts Castor Sugar 1 vanilla pod Method 1. Place the cream in the top of a double saucepan or in a heatproof bowl over a pan of hot water, heating gently, but do not allow to boil. 2. Beat the egg yolks, half the castor sugar and scraped vanilla pod together in a bowl. Add the cream and mix well together. 3. Place 6 ramekin dishes in a roasting pan, then fill the pan up with hot water until it reaches roughly halfway up the side of the ramekins. Pour the custard mixture slowly into the ramekins, dividing it equally between them.

For the brine: 1.5lt water 6 skinless free range chicken breasts 1 /2 cup sugar 1 /2 cup salt 1 tbsp quick cure or 12.5gr saltpetre Bay leaf, white peppercorn, star anise and thyme Bring to the boil, cool and refrigerate, place raw chicken in brine for at least 3 hours -better if it is done for 12 hours. Rinse off the chicken and place it in a smoker for 35 minutes until cooked Remove and slice in thin slices. Preparation Tear the mozz balls apart, add all the ingredients into a bowl including the leaves. Add the dressing just to coat everything and season. Toss all together and place on bowls or on plates so that all ingredients can bee seen. Place 4 asparagus spears on top of salad and finish with alfa alfa sprouts. 4. Bake in the oven at 150°C for about 1 hour or until set. Do not allow the water to boil. If it does, lower the oven temperature i m m e d i a t e l y. Remove ramekins from roasting pan and leave to cool for 1 hour. Chill for 2–3 hours, preferably overnight. Sprinkle the top of each créme brûlée with the remaining sugar and put under a hot grill for about 2–3 minutes until the sugar turns to caramel. Chill again for 10-15 minutes before serving. Using a blow torch can be more efficient and allows to serve the crème brûlée immediately. 

Ask the right

INSURANCE QUESTIONS It is often difficult to think of all the relevant questions to ask upfront when taking out an insurance policy. In hindsight, and unfortunately once things have already gone wrong, it is usually easier to spot the questions you should have asked. ince people in the insurance industry, however, know the kinds of things that go wrong, most often they are the best placed to advise on the kinds of questions that prospective buyers of insurance should always be sure to ask,” says Gari Dombo, Managing Director, Alexander Forbes Insurance. Questions which consumers should always be certain to ask include: Do I need to tell my insurer that I am now renting out my house? Insurers rely on the information that clients

supply to accurately assess the risk that each client faces. This is why clients must advise their insurance providers of any changes that may affect their risk profile. Insurers use this information to assemble the most suitable cover for their clients’ lifestyles. As such, any changes that improve a client’s risk profile should also be passed on to the insurers as this may result in lower premiums. On the same token, any changes that negatively impact a client’s risk profile must be disclosed to allow the insurer an opportunity to re-rate policy, impose terms and conditions, revisit the excess

Direct, traditional or hybrid insurers, what is the difference? Traditional insurers have been around the longest. They deal with clients through brokers who develop close relationships with their clients and tailor the cover to best suit their needs. Direct insurers cut out the broker to deal directly with the client, usually through call centers and Internet sites. Hybrid insurers, on the other hand, provide a personalised insurance service more efficiently by using in-house professional service consultants. They provide the best of both elements of direct and traditional insurers.

structure and, in a few cases, decline client cover. How can I lower my monthly insurance premiums? There are many ways to do this, says Gari Dombo, “You may increase the security of your property by linking your burglar alarm to an armed response company. You could also take on a share of the risk yourself, by taking a voluntary excess, or by reducing the scope of cover.” You can attend an advanced drivers’ course, get your policy to be on a named driver basis, revisit the use of your vehicle, say from business to personal use, etc.” How long does a bad driving record affect premiums; will my status improve after a certain time if I do not get involved in any accidents? Most insurers use a “Claim Free Group” system. A discount accumulates for each year that you don’t claim, and each time you claim the discount is reduced. Client loss ratios are measured over time. So, the longer one is with an insurer and the better one’s claims record, the lower one’s premium is rated.

Loyalty and honesty to one’s insurer - does it pay? “The relationship that one has with one’s insurer is definitely taken into consideration when it comes to paying claims. In fact, over the years, insurers build up detailed risk profiles of clients, particularly regarding the veracity of their claims,” says Dombo. What if I miss a monthly payment? Strictly, if you miss a monthly payment your insurer is within their rights to reject your claim. Most companies, however, do provide a period of grace (most common is 15 days from the date that the payment was due). “Alexander Forbes will only reject a claim that happens after a second consecutive missed payment,” says Dombo. The above list of questions is by no means conclusive. “If you have any enquiries about your insurance cover it is always a good idea to approach your broker or insurer, or thoroughly go through your insurance policy to better understand the terms and conditions of your cover,” adds Dombo. The only facts that count are those embedded on your insurance policy. Relying on the Internet, friends or hearsay will only misguide you. 

Does insurance cater for people in a relationship? Insurance treats all people in long-term relationships (LTRs) the same. Married or not, gay or straight, you can still be insured. In short, for insurance purposes, all LTRs are now treated in the same way that married couples were treated in the past. Are my valuables covered when I go on holiday? An all-risks policy - providing 24/7 worldwide cover, insures you for any possessions that you might take with when you travel. The catch, however, warns Dombo, is that the insured needs to prove the value of a loss. You should also be sure that the sum insured is enough to replace the items.

4 ICING EYES Keep eyes simple this season. Use soft golds, aquas, peaches and sorbet shades to compliment bright lips and cheeks. Begin by using a soft gold or peach shadow. Last year, RedCap Foundation in collaboration with Institute for Partnerships Between Education and Business (IPEB) launched a national annual competition – PEO Suthu for seed (www.peo.org.za) to support Early Childhood Development in deserving, needy primary schools across the country. T

he aim of this competition is to give a helping hand and encouragement to Grade R teachers in our nine provinces. Teachers in public schools are faced with many social and systemic challenges that hinder the effectiveness of their teaching in these schools. The competition recognises teachers who go all out and use their creativity to educate children in the midst of challenges. Grade R teachers were invited to share stories of how they conduct their lessons for the growth and stimulation of young minds in their classes. Teachers were asked to submit motivations that show the need for support in improving the quality of teaching and learning of their children. KwaZulu-Natal winner, Miss Nombulelo Khumalo, is the Grade R teacher of Phenduka Combined Primary School. Phenduka is a no-fee rural school, looking down from Msinga Top, 17 kilometres north of the Msinga town in KwaZuluNatal. The school has an enrolment of 442 children with 37 in the Grade R class. Nombulelo Khumalo is an amazing educator who comes from a humble rural background where her mother was a domestic worker for a local doctor and her father worked in Johannesburg. She started working at the school in 2002 as an unpaid volunteer teacher. Prior to being offered a teaching position, Nombulelo used to get to school at 05h00 every morning to cook food for the children. The school Principal, Mrs Ngubane, saw her potential and passion for children and encouraged her to

become a teacher. She is now a permanent teacher and is in her first year of an Advanced Certificate in Education with the University of KwaZulu-Natal. She holds a Level 4 ECD Certificate which she obtained through Little Elephant Training Centre for Early Education. Nombulelo chose to teach the little ones in Grade R because of her passion and love for young children, as she says, “I like to see my community get life from me.” Her dream is for the children in Grade R to become lawyers, doctors and teachers like her when they grow up.
