Vine and Dine Cheese and tea pairing

1st Course Nano, Taiwanese White Esclusive to Tea Cellar, very rare with exceptional complexity Saint-Angel (AOAP) French cheese Pasteurized cow's milk, triple cream A soft luscious texture, with a clean finish. Sweet, rich, decadent! Cattail Hearts, amuse bouche Delicate and incomparable, taken from the middle of the stem of this edible wild plant

2nd Course Si Ji Chun, Taiwanese Oolong Green oolong from the high mountains of Taiwan. A rich cup with floral notes (lilac) , a edge of fresh vanilla and soft buttery notes, on a finish of sweet caramel. ComtĂŠ, French (AOC) cheese Raw cow's milk, semi-hard aged. Ancient cheese, produced since the time of Charlemagne. Complexe nutty and caramelized flavours. Wild Plum Compote

This wild plum rivals in taste with any cultivated variety.

3rd Course Kabusecha Takamado, Japanese green From Uji in Japan, this shaded green tea of great finesse, offers a liquor with vegetal caracter and delicate sweet and velvety taste Ossau Iraty, French (AOC) cheese Raw sheep's milk, soft type. Creamy and buttury on the palate with nutty flavours and a hint of fruits and herbs. Pickled Milkweed pods stuffed with Matcha Mayonaise A delicious gift from mother nature which makes delicate pickles. The Matcha Mayonaise is one of my culinary experiments that I am proud of.

4th Course Xiao Ye 2006, Laos Pu'erh This post fermented vintage pu'erh reveals warm aromas of lether, woody and spicy notes on the palate. Its sweet liquor is dence and delicious! Saint-Nectaire, AOC French cheese Saint-Nectaire is an ancient cheese that was made in monasteries. It is an uncooked, pressed, semi-hard type. It has nutty and fruity flavours, with a touch of salt and spices. The heartyness of its rind, stand on the caracter of Xiao Ye. Spruce syrup dip Who would beleive that Spruce can be the source of a delicious treat? A sweet taste that you will never forget.
