Astronomy Club sharing sky-wonder at Brite Lake BY EMILY BRUNETT TEHACHAPI NEWS
For centuries, the night sky has captured wonder and awe from gazers. Although many things have changed over time, stargazing remains a favorite pasttime and science. The Antelope Valley Astronomy Club is dedicated to bringing the beauty of the night sky to families in the Antelope Valley, as described on the club’s website, avastronomyclub.org. The members are bringing that dedication to Brite Lake Aquatic Recreation Area on Aug. 3 for a public “Star Party” to be preceded by a members-only picnic. Since the picnic is private, the club is asking the public to wait until after 7:30 p.m. to arrive, unless guests need to set up their own telescope, for which they can arrive at 7 p.m. Once there, party-goers can mingle with the members until dawn. At a Star Party, club members and visitors view celestial objects such as planets, galaxies, star clusters, nebulae and sometimes even comets through telescopes of various types, designs and sizes. To preserve nightadapted vision, only red lighting will be allowed and visitors are asked not to use white light flashlights. Even the moon will not get in the way of the celestial gazers; the first weekend in August is that of a new moon, making the sky the darkest possible for astronomical observing. “This will be the third year we’ve had our club picnic, or ‘Star-B-Que,’ and a public outreach event at Brite Lake in Tehachapi,” said the club’s vice president Frank Moore. “My wife Rose and I had wanted to hold it here for years and finally got the rest of the board to agree after a picnic at one of our regular sites, Saddleback Butte

State Park, was incinerated by 112 degree temperatures. “That did it for them,” Moore said, continuing. “They said, ‘Let’s move it to Tehachapi where it’s cooler and the skies are darker.’” Moore said he knew the parking lot at Brite Lake would work for the event since his daughter’s Brownie troop held a star party there many years ago, for which the parking lot lights were turned off. Since Brite Lake is operated by the Tehachapi Valley Recreation and Parks District, Moore said he works with them to ensure darkness for the party. “The TVRPD has been wonderful in supporting this event by turning

Ranchers For Peace at Fiddlers Crossing Aug. 9 BY DEBORAH HAND-CUTLER CONTRIBUTING WRITER
Throughout history, music has been an important form of communication. Early bards traveled from place to place, singing the news of the times and keeping tales of heroism and adventure alive. In U.S. history, songs sung on the plantations would let African slaves know when and how to run for freedom. In more modern times, songs have been used to raise social consciousness to the issues of the day. “We Shall Overcome” became the anthem of the Civil Rights Movement. Pete Seeger’s “Where Have all the Flowers Gone” and Bob Dylan’s “Blowin’ in the Wind” were sung by a generation in reaction to an unpopular war. Woody Guthrie’s “This Land is your Land” was a response to the fencing off of the West. The intent was not “political” in the sense of one party or the

instrumental harmonies that use melodica, harmonica and guitar. Despite their name, they are not actually involved in the livestock business. In their words, their kind of ranching is done “where worldly concerns combine with empathy and, on a good day, become audible.” The “peace” they are “for” is not something that can be directly invoked, they say, but is a byproduct that only arises in the presence of other favorable conditions and qualities, such as justice. “Our mission,” say these Ranchers For Peace, “is to advocate for such conditions, and to join our noise with the long tradition of folksingers, bards, and troubadours who have done the same.” They sing of the great issues facing us today, of immigration, racial tensions, pollution and the excesses of the corporate culture. But their overall message is simply that it’s cool to care.

Charles, a former TV writer, grew up in the 1960s when “music was part of the conversation” about civil rights, the Vietnam War and other social issues of the day. Seventeen-year-old Ray doesn't think it's cool to be detached -- too "chill," in her words -- and she welcomes a chance to demonstrate that a little catharsis is good for the soul, and good for society. “We think and we feel, and often both at the same time. Maintaining diabetic diet can be daunting BY PAUL G. DONOHUE, M.D. CONTRIBUTING WRITER
DEAR DR. DONOHUE: What should I eat with type 2 diabetes, high blood pressure and high cholesterol? All the advice I get tells me what I cannot eat - no potatoes, no bread, no crackers, no cereal, no fruit. Since breakfast is the most important meal of the day, I don't know what to eat. — C.L. ANSWER: The diet for type 1 and type 2 diabetes is not as restrictive as it once was. You can eat all the foods you mentioned. Sugar also can be eaten, something that was strictly prohibited in the past. You have to use it in moderation, and it's best to save sugar calories for other carbohydrates by using artificial sweeteners. Weight reduction, if applicable to you, is the best way for you to control blood sugar. A 5 percent to 10 percent weight loss is a sure way to keep blood sugar where it should be. For high blood pressure, limit salt. You ought not to eat more than 1,500 mg a day of sodium. Read the sodium content of foods on their nutrition labels. For cholesterol control, cut back on fatty meats and whole-fat dairy products. You can use low-fat dairy. Carbohydrates are an issue with diabetes. Carbohydrates are sugars and starches. They should con-
stitute 50 percent to 55 percent of your total daily calories. Fruits (yes, you can eat them), vegetables, cereals, breads, crackers, pastas and similar foods are carbohydrates. You have to get a book that lists the calorie content of foods and their protein, fat and carbohydrate makeup. These guides are in all bookstores, and they're cheap. Breakfast shouldn't be a problem. You can drink orange juice if you like it, have cereal, have toast and drink coffee or whatever. You need a coach in the form of a dietitian. The dietitian can help you navigate through the difficulties of understanding a diabetic diet. Your doctor or the local hospital can put you in touch with one. You also need to contact the American Diabetes Association, whose website is www.diabetes.org. Or call 1-800-342-2383. The association will provide you with tons of information on diet and on diabetes in general. The booklet on diabetes presents this illness and its treatments in detail. Pan Seared Rib Eye with Balsamic Glaze and Crispy Salted Potato Wedges Serve with Las Rocas Garnacha, a vibrant and versatile red wine with rich dark berry flavors and aromas. Yield: 4 to 6 servings
For Crispy Fingerling Potatoes • 1 pound small Yukon gold potatoes cut into wedges • Kosher salt and freshly ground black pepper • 3 tablespoons extra virgin olive oil • 1 teaspoon roughly chopped fresh rosemary leaves, plus a couple of sprigs
For Steaks Kosher or coarse salt and freshly ground black pepper • 4 3/4-pound bone in rib-eye steaks, about 1 inch thick • 1 large shallot, thinly sliced • 1/2 cup aged balsamic vinegar • 2 tablespoons unsalted butter For potatoes: Place the potatoes in saucepan and cover with cold, salted water. Set over high heat and bring to boil. Cook until potatoes are fork tender, about 10 minutes depending on size of potatoes. Drain and rinse under cold running water. Pat potatoes dry with paper towels and season with salt and pepper to taste. Set potatoes aside and begin steak. For steak: Sprinkle large cast-iron skillet with kosher or coarse salt; heat skillet over high heat for about 8 minutes, then add steaks. Sear until steaks are crusted brown, about 4 minutes; turn steaks. Sear to desired doneness or about 6 more minutes for medium rare. Transfer to cutting board and let rest while you make sauce. Wipe out pan and add shallot; cook, stirring, about 1 minute. Slowly add vinegar and 1 tablespoon of water and bring to a boil. Stir continuously until reduces and thickens, about 2 minutes. Remove pan from heat, swirl in butter, and season with pepper to taste. Drizzle sauce over steaks just before serving. To finish potatoes: Heat olive oil in large skillet over high heat. When hot, add seasoned potatoes, cut side down, and rosemary. Cook until golden and crispy, about 2 minutes per side. Sprinkle with additional salt and pepper to taste.
Red Wine and Vanilla Bean Panna Cotta Yield: 6 servings
• 1 orange • 1 cup blackberries and or raspberries • 1 vanilla bean, cut in half • 3 cups Las Rocas Garnacha wine • 2/3 cup sugar • 1 cup whole milk • 1 1/4-ounce packet unflavored powdered gelatin • 2 cups whole Greek style yogurt • Fresh mint sprigs for garnish Remove a wide, 2-inch-long strip of zest from orange with sharp paring knife. Peel and segment orange and toss with blackberries, cover and refrigerate.
Scrape seeds from vanilla bean. Place seeds and pod in small saucepan. Add wine, 1/3 cup sugar and orange zest strip. Simmer over medium-low heat until reduced to 1 1/4 cups, about 35 minutes. Discard vanilla bean pod and zest strip. Cool completely. Set aside 1/4 cup for serving. Combine milk with remaining 1/3 cup sugar in medium saucepan. Sprinkle in gelatin and let stand, undisturbed, until gelatin softens, about 4 minutes. Cook over medium heat, stirring occasionally, until gelatin and sugar are just dissolved (do not boil); let cool. Whisk in 1 cup of wine reduction and yogurt until smooth. Pour into six 6-ounce ramekins or jars, cover and refrigerate until set, at least 3 hours or overnight. If using ramekins, dip bottom of each ramekin in warm water to loosen. Invert each panna cotta onto a plate. If using jars, skip this step. Drizzle panna cottas with reserved wine reduction and garnish with oranges and berries and sprig of fresh mint.
Goat Cheese Crostini with Grilled Peaches, Serrano Ham and Marcona Almonds Serve with Las Rocas RosÈ, a fruit-forward seasonal wine with notes of raspberry and strawberry. Yield: 1 dozen crostini
• 12 slices French bread, sliced on the diagonal into 1/2-inch-thick slices • Extra virgin olive oil • Kosher salt and freshly ground black pepper • 12 thinly sliced pieces Serrano ham • 2 ripe peaches, halved, pitted and sliced onto 12 thin wedges • 2 ounces goat cheese, crumbled (about 1/4 cup) • 1 tablespoon roughly chopped Marcona almonds Preheat grill. Brush each slice of bread on one side with olive oil and sprinkle with salt. Grill, oil-side down until lightly golden brown, about 3 minutes. Remove from grill and place a piece Serrano ham on each. Drizzle peaches with 1 tablespoon of olive oil and sprinkle with salt and pepper to taste. Grill peaches until grill marks appear, turning once, about 1 to 2 minutes per side. Place warm grilled peaches on top of each crostini and sprinkle each with crumbled goat cheese and Marcona almonds. Drizzle them lightly with additional olive oil. Serve. Source: Las Rocas

If your wallet has ever been lost or stolen, you know what a pain it is to replace your driver's license. That goes double when other vital documents like your, passport, birth certificate or car registration are misplaced or destroyed in a natural disaster. Without the proper ID, you can't start a new job, buy a house, apply for insurance or a host of other common transactions. Here's a guide on how to get copies or replacements for many common documents: Birth, death, marriage and divorce certificates. These records come from the states where the events occurred. The Centers for Disease Control and Prevention has a handy directory that provides links to the appropriate agencies in all U.S. states and territories, including costs and mailing instructions (cdc.gov/nchs/w2w.htm). Passport. Immediately report lost or stolen passports to the U.S. State Department by calling 877487-2778. If it happens overseas, contact the nearest
U.S. Embassy or Consulate. Visit travel.state.gov/passport/lost/lost_848.html for further instructions. Driver's license, car registration. To learn how to replace your driver's license, vehicle registration or car title (which you'll need to transfer ownership), or to access other motor vehicle services, contact the Department of Motor Vehicles. Go to www.usa.gov/Topics/Motor -Vehicles.shtml for links to each state's DMV. Social Security card. These days, you may not actually need to replace a misplaced Social Security card. If you know your Social Security number, you generally can still collect Social Security benefits, get a job and apply for government benefits and services. However, if you do want to replace the card, you'll need to gather documents proving your identity and citizenship and complete an application (www.ssa.gov/online/ss5.pdf); then mail or take the paperwork to your local Social Security office. Military service records. Veterans often need copies
Medicaid card, contact Medicaid (medicaid.gov). Tax returns. If you need exact copies of previously filed and processed tax returns (including attachments), you may order them from the IRS by submitting IRS Form 4506 (at irs.gov). Last summer my sister-in-law visited from Massachusetts. She spotted a little leafed plant with beautiful leaf markings and tiny pinkish flowers. The plant grew in a dense mat in drier areas of the garden and very spindly where it received lots of water. She had never seen anything like it in her garden and had to know what it was. I told her that’s a weed that seems to grow everywhere here in Tehachapi. She couldn’t believe that the obnoxious Spotted Spurge (Euphorbia maculata) was on the unwanted plant list of gardeners. In California, it is the most common species of the spurge family, and is a weed which invades many home gardens and commercial crops, lawns ornamental beds and container plants. Spotted spurge, with its tiny, dark green leaves, often have a reddish spot midway down the center leaf vein. The leaves grow in pairs opposites of each other and are approximately one-eighth to onehalf-inch long and about one-eighth inch wide. The plant has a central tap root that is can reach more than a 22 inches long straight down in the soil. The abundant tiny pink flowers produce seed capsules early and once they burst open can start the cycle of a very invasive weed problem. A single plant can produce several thousand seeds, which can remain dormant in the soil until conditions are suitable for sprouting. When the stem is cut or damaged, it will ooze a poisonous milky sap that can irritate the skin and eyes. See A MOST UNWELCOMED GARDEN GUEST/Page 12

A most unwelcomed garden guest Continued from page 11 According to the University of California, Agriculture and Natural Resources, Spotted Spurge can establish itself in horticultural, agricultural, and non-crop sites. It overgrows sparse turf areas and lowgrowing ground covers, invades open areas in gardens and landscapes, and can grow in sidewalk cracks. In addition to reducing the growth of desirable plants, spotted spurge reduces uniformity and quality of turf, provides a habitat for undesirable insects in citrus groves, serves as an intermediate host for fungal diseases of cultivated crops and attracts ants with its seed. Spotted spurge is poisonous and can kill sheep grazing in pastures where it is the
predominant weed. Sheep that consumed as little as 0.62 percent of their body weight of this plant have died within a few hours. Pre-emergent herbicides can help prevent spotted spurge outbreaks if you apply them in late winter before weed seeds germinate. Apply before the soil temperature exceeds 55° to 60°F at a depth of one inch. Use gloves to dig out the plants to avoid skin contact. Dig up Spotted Spurge with a dandelion digger to get as much of the root as possible. This tiny pretty leafed plant can be a devil weed in disguise. Have a great day in the garden!
