Turkey Crown with Lemon and Sage Butter
Method: Heat the oven to 200C/fan 180C/gas 6. Loosen the skin on the turkey crown by carefully sliding your fingers between the skin and breast at the neck end. With a bit of wiggling, it should loosen quite well. Mix the butter with the sage and lemon zest and push this under the skin, smoothing it around as much as possible. Lay the lemon slices in a roasting tin and sit the turkey on top. Pour in the white wine. Score a waist around each onion, cutting through the first couple of layers and pushing a thyme sprig into the centre of each. Sit them around the turkey. Roast for 1 hour and 20 minutes or until the crown is cooked through. Pierce the thickest part of the meat through to the bone with a skewer to check that the juices are clear. Lift the turkey and onions out onto a carving plate or board and cover with foil and a tea towel and rest for 30 minutes. Throw away the lemon slices. Just before serving, put the roasting tin over a low heat and add the stock, bubble everything together, scraping the bottom of the pan and adding any juices that have come out of the turkey. Strain (although not if you like the bits) into a warm jug. Decorate the turkey with watercress, if using, and serve with the gravy.

Green Bean Casserole Directions Preheat the oven to 350 degrees F. Melt the butter in a large skillet. Saute the onions and mushrooms in the butter. Boil green beans in chicken broth for 10 minutes and drain. Add the green beans, mushroom soup, onion rings, and House Seasoning, to taste, to the onion mixture. Stir well. Pour into a greased 1 1/2-quart baking dish. Bake for 20 minutes, then top the casserole with the Cheddar and bake for 10 minutes longer, or until the casserole is hot and cheese is melted.
Ingredients • 1/3 stick butter • 1/2 cup diced onions • 1/2 cup sliced fresh mushrooms • 2 cups sliced green beans • 3 cups chicken broth • 1 (10 3/4-ounce) can cream of mushroom soup • 1 (2.8-ounce) can French-fried onion rings • Pinch House Seasoning, recipe follows • 1 cup grated Cheddar

Thanksgiving is almost here and with Hostess about to close its doors forever, it’s a perfect time to kill two Twinkies with one bird. If you are an international student this is the perfect opportunity to try American cuisine, and the prime rule for American
cuisine is “there are no rules”. If you have a turkey deep fryer and are planning to use it this week, why not fry some Twinkies as well. The Twinkies will absorb some of the turkey juices and taste, delicious? If deep frying Twinkies is not your thing how about some Rum or Kool-Aid soaked Twinkies; just let the Twinkies soak in the liquid until they’re saturated then serve them up, or carefully stick them in the deep fryer; you can also scoop the cream out of some Twinkies, insert a cooked sausage and make a Twinkie corn dog. If you want a more traditional thanksgiving there’s no reason why you can’t add a Twinkie twist to your dinner. Consider taking some Twinkies and
scooping out the cream; tear apart the cake and mix it in with some turkey stuffing and spread the cream over some candied yams for a Hostess twist on your dinner; of course you can always just shove some Twinkies inside your turkey for a mystery result. For dessert you can ice some Twinkies and decorate them, or again scoop the cream out them and mix it with your favorite berry, I think blackberries would do exceptionally well in this mix. With your leftover Twinkie shells you can offer them with coffee as a biscotti replacement or stick them atop some ice cream for presentation; add a splash of Baileys for an additional flavor kick to your dessert. If you aren’t sure about experiment-
ing with Twinkies and turkey , you’re studying abroad in America, so you’re already expected to be eating fattening outlandish meals; my advice: don’t be afraid to try crazy concoctions.

The Pumpkin Pie Martini is ideal for autumn, but delicious for any time. It blends the flavors of vanilla and white chocolate with pumpkin and nutmeg, and has a graham cracker rim just to finish off the flavor to perfection. This drink is obviously a wonderful dessert drink, but feel free to make one anytime you want to feel cozy. 2 ounces vanilla vodka 2 ounces white creme de cacao 1/4 cup heavy cream 1.5 tablespoons of pumpkin puree (pie mix) 1 dash of ground nutmeg (for garnish) Powdered graham cracker (for the rim) Rim two martini glasses with crushed graham cracker. Fill a shaker with ice and add the vodka, creme de cacao, cream and pumpkin puree. Shake well until it’s chilled. Strain into the martini glasses. Sprinkle the ground nutmeg on top for garnish.

Apple Pie Cupcakes For all you apple pie lovers, not only are there apples in the cake, but there is an apple pie filling in the middle! The hidden pocket of apples is a nice surprise when you take a bite and what truly makes these cupcakes seem like a mini apple pie! To round out the cupcakes I thought a nice swiss meringue buttercream would be the perfect choice since it is light, fluffy and almost resembles the texture of a whipped cream. I used a standard recipe and just swapped out the granulated sugar for brown sugar and added a pinch of cinnamon to carry on the flavors from the cake and filling.
For the cake:
Ingredients: 3 cups all-purpose flour 1 cup granulated sugar 1/2 cup light brown sugar 2 tsp baking powder 1/2 tsp baking soda 1 tsp salt 2 tsp cinnamon 3 eggs 1 cup vegetable oil 1/2 cup sour cream 2 tsp vanilla 2 cups grated apples (2 granny smith, 2 gala)

1. Preheat oven to 350 degrees and line muffin pans with cupcake liners. 2. In medium bowl combine dry ingredients: flour, granulated sugar, brown sugar, baking powder, soda, salt and cinnamon. 3. In large bowl combine eggs, vegetable oil, sour cream and vanilla and whisk together. 4. Gradually add dry ingredients to wet ingredients and whisk until combined. 5. Fold grated apples into the cake mixture. 6. Fill cupcake liners 2/3 full with batter. 7. Bake for 18-20 minutes or until toothpick inserted in center comes out clean. 8. Let cupcakes cool in pans for 5 minutes, then remove to wire racks to finish cooling.
For the apple pie filling: Ingredients: 3 apples, finely chopped (2 granny smith, 1 gala) 1 Tbsp unsalted butter 2 Tbsp light brown sugar 1 tsp lemon juice 1/4 tsp cinnamon
For the icing:
Ingredients: 2 sticks unsalted butter, room temperature 3 large egg whites 3/4 cup light brown sugar 1 tsp vanilla cinnamon to taste
1. Place chopped apples, butter, brown sugar, lemon juice and cinnamon in medium size pan and cook over medium heat for about 8-10 minutes, until apples are tender. Stir occasionally. 2. Allow mixture to cool. 3. Use an apple corer to remove the center of the cupcakes and fill with apple pie filling.
1. In bowl of stand mixer combine egg whites and brown sugar. Place over a pan of simmering water and whisk continuously until the sugar is dissolved, about 2 minutes. (The mixture should feel smooth when rubbed between your fingers) 2. Attach bowl to mixer fitted with whisk attachment. Starting on low speed and gradually increasing to medium-high whisk until fixture if fluffy and glossy, about 10 minutes. 3. Change mixer to paddle attachment and on medium speed add butter a few tablespoons at a time, mixing well after each addition. 4. Add vanilla and cinnamon to taste and mix well. 5. Place icing in a piping bag fitted with a large round tip and squeeze a dollop on top of each cupcake.
For the pie crust topper: Ingredients: 1 refrigerated pie crust cinnamon & sugar mini apple pie cookie cutter 1. Bring one refrigerated pie crust to room temperature by sitting on counter for about 15 minutes. 2. Lightly flour surface and roll out pie crust. 3. Use mini apple cookie cutter to cut pie crust toppers. 4. Place on baking sheet and sprinkle with cinnamon & sugar mixture. 5. Bake at 400 degrees for 5-7 minutes. 6. Garnish cupcakes with mini pie crust apples.

ERAU Athletics The seventh-seeded Embry-Riddle women's soccer team punched its ticket to the final site of the 2012 NAIA Women's Soccer National Championship with a 5-1 win over Faulkner, Saturday at the EmbryRiddle Soccer Stadium. ERAU (16-5) moves into the Round of 16 where they will face Robert Morris, who advanced with a 4-0 defeat of Graceland in their Opening Round contest. ERAU's offense was powered by senior Ange Durston-Ryan and junior Valerie Obita who netted two goals apiece. EmbryRiddle took advantage of Faulkner's high back line to register 21 shots in the contest, 15 of which were on frame, while the defense limited Faulkner to just two shots on the night. Embry-Riddle grabbed an early lead off the boot of Obita at the 2:53 mark. Krizzy Menez started the play, taking the ball down the right side and whipping a cross into the box. Faulkner goalkeeper Tia Rogers was able to push the ball back outside of the 18-yard box, but collided with another player in the process and
went down on the play. The ball made its way to Martine Olsen who lifted it back into the box to an unmarked Obita. With Rogers out of the play, Obita tapped the ball into an empty net to put the Blue and Gold up 1-0. Ten minutes later, Obita extended the Eagle advantage to 2-0 when she outpaced the Faulkner back line and took the ball about 50 yards downfield and into the box, slotting a shot past Rogers into the lower right corner. Faulkner got a goal back at the 42:11 mark when Latoya Panton latched onto a loose ball following a corner kick and pushed it past Lauren Gallant and a pair of
ERAU defenders to make the score 2-1. Embry-Riddle responded a mere 32 seconds later. Durston-Ryan ran onto a ball and dribbled unimpeded for aprroximately 30 yards toward the goal. Rogers came way off her line and outside the penalty area in an attempt to close Durston-Ryan down, but the ERAU senior was able to slip the ball past the advancing keeper for a 3-1 ERAU lead at the half. The Eagles scored early and late in the second half, beginning with Katherine Ebbs' goal off a free kick in the 49th minute. As the announcer began the 10-second countdown toward the end of the contest, Durston-Ryan took a pass from fellow
senior Lauren McCall, spun and with just one second showing on the clock, she added the exclamation point to seal the win. Rogers finished with 10 saves for Faulkner who closed out its season at 7-13-1. The next round of the national tournament begins on Nov. 26. The remaining tournament games will all be played at the Orange Beach Sportsplex in Orange Beach, Ala. The 2012 season marks the second straight year that ERAU will advance to the final site. Embry-Riddle will take on Robert Morris (15-6) at 11 a.m. (CST) on Tuesday, Nov. 27.

In one of the best-executed games in recent memory, the NAIA II EmbryRiddle Eagles had no problem with NAIA I Carroll on Saturday night in the Van Male Fieldhouse, earning an 83-51 victory over the host Saints. The Eagles (5-1) ended their two-game Montana road trip with a pair of victories over two

NAIA I squads while the Saints (0-5) suffered defeat twice over the weekend at the hands of NAIA II members. The Eagles shot a blistering 57 percent from beyond the arc (12-for-21) and a slightly lower 55 percent from the field in the triumph. The Saints managed an 8-for-16 clip from three, but were just 9-for-38 from the inside the arc in suffering their fifth consecutive loss of the season. Cesar Pastrana got the Blue and Gold going with a layup just a minute into the game, and after the Saints came down the floor to tie it with a Dennis Mikelonis layup the Eagles took the lead for good on a two-hand slam from Rico Saldana off a great feed from DeForest Carter. Saldana's dunk sparked a 20-5 run for the visitors, capped by Daniel Kiesling's three-pointer at the 10:34 mark of the first. Embry-Riddle never relented, ballooning the lead to 22 as Daniel Mondragon hoisted a three ball that dropped through the net, just two minutes before halftime. A Sam Ford layup with two seconds remaining resulted in the Eagles' advantage of 21 at the break, 46-25. Saldana led all scorers at the break with 14 points on 6-of-10 shooting while Mikelonis had 11 first-half points for Carroll.
A quick, 6-0 run by the Saints to open the second frame caused Head Coach Steve Ridder to call time, and the Eagles responded with their own run of 7-0, including Saldana's first three-pointer of the year. Every time the Saints managed to cut into the Embry-Riddle lead, the Eagles would find a way to answer on the offensive end, adding six more makes from long range and a perfect 5-for-5 clip from the charity stripe in the second half. Another Saldana dunk, this time on a fast break, effectively ended any comeback bid the Saints had been eyeing. The Eagles grew their advantage from 23 at the point to 34 on a Jeremiah Applin trey with 60 seconds left. A pair of Saint free throws accounted for the 83-51 final and 32-point victory. Saldana had 21 points on 9-for-13 shooting while pulling down a game-high eight boards. Carter had 11 assists, four rebounds and three steals and Mondragon was the only other Eagle to reach double-digits with 10 points. Embry-Riddle got a three-pointer from eight separate players, including four players with two, and enjoyed a 24-assist night, a season-high for the team. The Eagles owned the glass, collecting 43 rebounds to just 20 for Carroll.

ERAU Athletics The Embry-Riddle women's cross county team ran to a 22nd-place finish at the NAIA National Championships on Saturday afternoon, its second-best place in program history.
Karina Coelho paced the Blue and Gold harriers, running an 18:52mark to 34th overall, the second-highest finish ever for an Eagle. Following Coelho was junior Ellie Staker with a time of 19:09, good for 48th place. Coming in third and fourth on the Eagles' squad were Baliegh Hyatt
(20:26) and Bailey Eaton (20:40) while Kira Ball (21:29) rounded out the Eagle scorers. Hyatt placed 147th while Eaton was 160th and Ball finished in 181st place. Aleiyah Ross (21:29) and Nicole Bonk (21:37) were the other Eagles who participated in the 320-runner event.
ERAU's 570 total points put them just four behind 21st-place St. Ambrose (566). British Columbia (98) won the 2012 national title, while College of Idaho (112), Olivet Nazarene (133), Cal State San Marcos (149) and Carroll (225) rounded out the top five.

Men’s Cross Country finish 26th at NAIA National Championship Michael Pierce
ERAU Athletics The 2012 NAIA Men's Cross Country National Championships were held on Saturday afternoon at the Fort Vancouver National Historic Site in Vancouver, Wash.,
and the Embry-Riddle Eagles finished 26th out of the 32 total teams in the event. The Eagles, who earned an automatic bid to the National Championships thanks to their eighth straight Sun Conference title on Nov. 3, were paced by Vincent Bett, who placed 65th with a time of 26:00. Alec Hernandez
placed 112th in 26:41, while Jacob Dordick finished the 8K in 27:22 (160th place). Rounding out the Eagles scorers were senior Josh Guerrero (28:10, 185th) and Jason Riggs (28:18, 186th), while Ryan Larson (28:21, 189th) also ran for Head Coach Mike Rosolino.
The Eagles totalled 708 points to place 26th. St. Francis (Ill.) put four runners in the top 50 and tallied 138 points to claim the 2012 title. Southern Oregon (153), Cal State San Marcos (165), Oklahoma Baptist (179) and Aquinas (191) rounded out the top five teams.

TWILIGHT: BREAKING DAWN PART 2

Guest Reporter Breaking Dawn Part 2 is definitely a fantastic end to the Twilight franchise. Part 2 perfectly represents the second half of the novel, Breaking Dawn. It artfully brings life to Bella’s (Kristen Stewart) ability as a newborn vampire, Renesmee’s (Mackenzie Foy) existence as a half-mortal half-vampire and Jacob’s (Taylor Lautner) imprinted love for her and the Cullen’s struggle to gain supporters to fight against
the Volturi (the law enforcers of the vampire world). The movie begins with Irina (Maggie Grace, Taken), a cousin of the Cullen family, witnessing what she believes is an immortal child. As viewers saw previously in Breaking Dawn Part 1, Renesmee is not an immortal child (a child turned into a vampire due to a vampire bite), because Edward (Robert Pattinson) is indeed Renesmee’s biological father and she was conceived and carried by Bella while Bella was still human. Irina reports what she sees to the Volturi, who travel to Washington to dispose of Renesmee because immortal children are illegal. Thus, the struggle begins to locate vampires all over the world who will witness Renesmee and attest to the Volturi that she is indeed only a half-vampire. They find around two dozen vampires and the Quileute wolf pack that are willing to witness and battle if needed. Then comes the surprise ending of a lifetime that even surprises readers because it is not described in the book. Without give away too many spoilers, the climax of the movie is when Aro (Michael Sheen) beheads Carlisle (Peter Facinelli) and the epic battle begins between the vampires and wolves against the Volturi. So what is different about this movie than the other Twilight Saga films? Bella actually has a personality other than her

Entertainment Manager A must-see movie this fall, Argo is a drama starring Ben Affleck akin to Hotel Rwanda. The film is an adaptation of the efforts undertaken by the Canadian ambassador to extract six Americans during the Iranian hostage crisis. Argo is a compelling story about what it took to keep six Americans safe during the Iranian hostage crisis. The film shows the
entire effort to rescue the Americans from the moment they escape up to the moment they were safe. The film is a portrayal of all the struggles and obstacles that had to be overcome in order for the Americans to survive. The film does an excellent job maintaining the suspense despite knowing the outcome. The hanging threat of death and cancelation of the mission will keep you on the edge of your seat for the entire duration of the film. The film only eases up once the Americans are safe, drawing forth a collective sigh of relief from the theatre. Although the story is compelling and suspenseful, it was Ben Affleck’s acting that moved the story forward. As the only character of note in the film, Affleck used his acting skills to bring some human emotion and conflict into the film. As the lead character of the film, Affleck was able to elevate the film into a highly acclaimed project. The way in which the story was portrayed through Affleck’s acting and the cutthroat suspense made Argo an excellent film. The film definitely earns its 5 out of 5 airplane rating and is a movie that cannot be missed and it shows that amazing things can be achieved through cooperative efforts.

usual awkward, twitching, mumbling self. Edward is more masculine now that he knows that he cannot physically hurt Bella. As in Breaking Dawn Part 1, there is another not-so-PG13 risqué scene as Bella and Edward christen their humble abode. There is no more Team Jacob and Team Edward, and Jacob is not moping about it because he imprinted on Renesmee. Lastly, the ending of the Breaking Dawn Part 2, and also the end of the Twilight Saga, is, in my opinion, one of the best cin-
ematic endings. It takes Bella and Edward back to the special meadow from Twilight where Edward revealed to Bella that he was a vampire by shining in the sunlight. This time, Bella shows Edward something special: using her special power, she shows him a flashback sequence of their relationship together, which, in turn, shows scenes from all the past films. Then, the last pages of the book, Breaking Dawn, flip by and that ends the Twilight franchise.

From Wu Tang Clan to Lion Clan

Bearing all the tropes of a classic Kung Fu movie, but with a gory Tarantino twist, The Man With The Iron Fist punches holes straight through villains and plot lines alike. Rapper cum director RZA (known for his work with the Wu Tang Clan) draws largely on the styles of Kill Bill and, by extension, Hong Kong martial arts and Spaghetti western films with some elements of 80s Blaxploitation. The final product, although hard to follow, does not lack for action.
Like many Hong Kong martial arts films, Iron Fist is littered with fighting styles and caricatures befitting those styles. This is always somewhat hard to handle, but RZA manages to introduce his pantheon of fighters without slowing down the action too much. These combatants converge upon Jungle Village with mottled motives but with the unified goal to paint the town with blood. Not content to sit out on the action, RZA plays a black Smith who is pulled into a war of many factions. This chaos inevitably forces him to don hands of iron in order to beat down a metallurgy of opponents such as the aptly named ‘Brass Body’ played by wrestler David Bautista. Joining Smith in his fight are Zen-Yi (Rick Yune), whose fighting style is mostly dependent upon him being quite spiky as a person, and Russell Crowe as Mr. Knife the knifey cowboy. The film starts fast with some old school kung fu action and then leads through into a plot, which is sometimes hard to follow. If you are looking for gore, you shall not find The Man With The Iron Fists wanting. The acting is much a tongue in cheek teasing of traditionally dubbed fighting movies, and can lead to a good chuckle now and then, but does not go so far as to make the movie completely ridiculous. Overall, The Man With The Iron Fists is an amusing and visually stimulating good watch; when not taken too seriously.

Entertainment Manager Flight is a movie that every Riddle student should be required to submit a ticket stub for, before they are allowed to graduate. If you were looking for a date movie, Flight is not it; this is a movie you and your friends can watch together, and if you don’t have friends, go to the matinee so no one will know. Rule of thumb dictates that any movie that has full-frontal nudity within the first thirty seconds of the film is unlikely to be a good one; however, Flight proves to be one of the few exceptions. If you’re unsure about spending money to see Flight, I have just two words for you, Nadine Velazquez; Flight definitely delivers your money’s worth in nudity within the first five minutes. Despite opening-scene full-frontal nudity, there was a distinct lack of naked redhead in the film. There is plenty of cleavage in the film, but after the buildup of the opening scene, the lack of redhead nudity

was extremely disappointing. If you are watching Flight with a group of friends, and are looking to pregame a movie; this is definitely a movie you can watch drunk. The plot of the movie was straightforward and entertaining which makes it easy to follow while drunk. Despite its overall theme, this the only movie currently in theatres which I think
it’s okay to watch drunk; unless, you’re being forced to see Twilight, in which case I would recommend getting as hammered as possible before the film. After watching Flight you may leave or stumble out of the theatre with a Top-Gun high which will make you want to down a few screwdrivers before your next prog so you can fly your Cessna inverted, but
don’t! As cool as you may think you are because you’re a pilot, you’re not even close to how badass Washington was in the film, or as good a pilot. Flight was an excellent film but because the movie did not have as much hot, naked redhead as I was hoping, I had to dock one airplane away from its score for a total of 4 out of 5.
