Banana Bread 1 3/4 cups organic all-purpose flour 1 teaspoon baking soda 1 teaspoon baking powder 1/2 teaspoon high quality salt 1/2 cup organic unsalted butter, softened 3/4 cup organic sugar 2 organic eggs 1 cup mashed very ripe bananas 1 1/2 teaspoons organic vanilla extract optional 1 cup milk chocolate chips 1 cup chopped organic walnuts or pecans

Preheat oven to 350F. Butter and flour a 9x5 loaf pan. Mix dry ingredients. In an electric mixer, beat the butter and sugar until creamy. Add the eggs and beat until smooth. Add the vanilla, bananas, and essential oils. Then add the flour mixture, but don’t over-mix. If desired, add in chocolate chips and nuts. Pour batter into the loaf pan and bake until a toothpick in the center comes out clean (40-45 minutes). Cool on wire rack. If desired, sprinkle a few organic oats along the top of the loaf. If it lasts until the next day (!), serve with organic cinnamon ice cream and caramel sauce!
