he 26th Estonian Song Festival and the 19th Dance Celebration took place from 4-6 July and drew the highest number of participants and spectators ever. Over 153,000 people attended the three-day celebration, 33,025 singers and 10,082 dancers took part; and the joint choir that sang for the conclusion of the Song Festival consisted of 22,000. You don’t need to be Estonian, or even understand Estonian to appreciate the power and symbolic meaning of such an event. Ten thousand dancers and 20,000 singers is an impressive sight, it’s emotional and overwhelming, and makes me, proud to be Estonian. The next Youth Song and Dance Celebration will take place in 2017. And, the next Song and Dance Celebration in 2019, will mark its 150th anniversary. The music has not stopped though. August still

in Low German, as this was one of the main things soldiers spent their time doing while on the lookout for intruders. Kiek in de Kök dates back to the 15th century. The tower is 38 metres tall, and the walls are four metres thick. Komandandi tee 2, Tallinn B1.

Viewing Platforms Kohtu Platform - offers one of the best views of the Old Town. The impressive tower of the Niguliste Church seems at arms length. The red tiled roofs with white edges are characteristic of Tallinn. Tallinn B1. Patkul Platform - shows both a view of St Olaf’s Church, and part of the city wall. The church was even taller in medieval times and the tallest building in the world in its time. Nowhere else can you see the city wall from a better angle. Tallinn B1. Kiriku Platform - the platform at the end of Kiriku Street faces west and offers a view of splendid and romantic sunsets. Tallinn B1.

Raeapteek The Town Hall Pharmacy (Raeapteek) is one of Europe's oldest pharmacies, which still operates in its original location, in the Town Hall Square. Tallinn Old Town H 1.

Raekoja plats Tallinn’s Old Town was declared a UNESCO World Heritage Site in 1997. The Town Hall Square (Raekoja plats) is Northern Europe’s best-preserved medieval town hall square and was built at the beginning of the 1400s.

Toompea Castle The Tall Hermann Tower (15th century) on the southwest corner of the hill, and the blue, black, and white Estonian flag signify independence and freedom for Estonians. Today, Toompea is the centre of Estonian government and the Riigikogu (parliament). Look for the pink building behind the Russian Orthodox Aleksander Nevsky Cathedral. Tallinn B1.

Blink and you might miss this narrow passageway off of Vene. Built in 1246, St. Catherine's Monastery (Püha Katariina klooster) is the oldest building in Tallinn. This passageway is also known as the Latin Quarter of Tallinn, and where you can find one of Tallinn’s first Italian restaurants. Tallinn Old Town H 2-3.

St Olaf’s Church (Oleviste kirik) Climb the stairs of the St Olaf Church and you will discover not only the lower town beneath but also the magnificent palaces facing the slopes of Toompea Hill, and the upper town. The old town of Tallinn is divided into a lower and upper part. The lower town was inhabited by hanseatic traders and the upper town, or Toompea was inhabited by nobility. The Kiek in de Kök tower is the entrance to historical underground bastion tunnels. In Soviet times they were supposed to serve as bomb shelters and protect the communist elite in case of a war. Kiek in de Kök means, “look into the kitchen”

Paks Margareeta Fat Margaret (Paks Margareeta) is the most important fortification tower in Tallinn. She was built in the early 1500s. The diameter of the tower is 25 metres and the walls are up to 6.5 metres thick! She was constructed to protect Tallinn from intruders from the sea. Fat Margaret is often the main entrance gate and first encounter for visitors to the Old Town in Tallinn, if arriving by sea. Pikk 70,Tallinn A2.

A fascinating museum about Soviet history in Estonia is located on the top floor of the Viru Hotel. The hotel rooms were under KGB surveillance. The rooms were equipped with microphones, and small holes were made in the walls, where cameras could be placed to take pictures of hotel guests. The museum is only accessible by guided tour. Tours run daily and are held in English, Finnish, Russian, and Estonian. English tours book up quickly so bookings are recommended. Viru väljak 4, Tallinn B2.

Sometimes you just don’t have enough time to see everything, but on the Tallinn City Tour you just might. Three lines run daily, and best of all, each one passes through the Port of Tallinn, making it even more convenient. The tour operates in ten different languages and is guide by a recorded audio track that follows the sequence of the sights. One ticket is valid for 24 hours. This means that you can travel on all three routes in one day. If you purchase a 24-hour Tallinn Card then your journey on the Tallinn City Tour is free.

Kalamaja & Kopli Kalamaja (Fish house) is a historic suburb filled with wooden houses and old factories. From the 14th century, Kalamaja has served as Tallinn’s main fishing port and was home to fishermen and fishmongers. When the railroad connected Tallinn with St. Petersburg in 1870, many factories opened. The colourful wooden houses you still see today were built in the 1920s and 1930s to house the growing working population. Kalamaja has seen a revival over the last few years as artists and other bohemian types moved in for the large spaces and cheap rent. Restaurants and cafés began to open, and the area continues to grow .

Patarei Prison (Patarei Vangla) Patarei Prison gives an eerie glimpse into gloomy Soviet era prison life. For a small entrance fee you can take a self-guided tour through the dark halls of this old sea fortress that has served as barracks, and then as a prison during Soviet times.

Pirita Pirita is an area located a short distance to the east of the city centre and offers a variety of things to see and do. Start by visiting the ruins of St Birgitta’s Convent ruins (Pirita klooster) whose colourful history dates back to the 15th century. A stroll through the ruins and the surrounds, including the small cemetery, is a moving reminder of the past. Its proximity to the Pirita River and the beach makes it perfect as part of a day excursion. The 2km long beach can attract up to 30,000 visitors a day in summer. Also located a short distance from the beach is the city’s Botanical Gardens (Botaanikaaed) and the famous Tallinn TV Tower (Teletorn), which is a must see as it not only provides a number of interactive exhibits but also offers one of the best views of the city and the district. Seaplane Harbour (Lennusadam) Have you ever seen the hull of a real submarine from below? Or better still, crawled through the narrow living and working quarters of a fully refurbished sub from the 1930s? The submarine Lembit was one of two Estonian submarines built in the UK in the mid 1930s. Another sight is an authentic replica of the Short Admiralty Type 184 seaplane, a British two-seat reconnaissance, bombing, and torpedo carrying folding-wing seaplane used in the Estonian war of Independence in the early 1920s and later for mail service. The museum is located in the former seaplane hangars built during WWI

Kadriorg Park is the area that houses the Presidential Palace (Presidendi kantselei) and the Kadriorg Palace (Kadrioru loss), and the KUMU Art Museum. (All located on Weizenbergi). Kadriorg means Catherine’s Valley in Estonian, and dates back to the 18th century. The park and the palace were built by Peter the Great, who apparently helped in its building. As was customary at the time, the main house was named after his wife. There are plenty of other things to see in this beautiful and prestigious park. From the Kadriorg Palace, head straight along the park trail to the Russalka monument, located at the shore of the Gulf of Finland. The famous Song Festival Grounds (Lauluväljak) are only a short walk from the park as well.

Estonian Open Museum (Eesti Vabaõhumuuseum) Visitors can catch a glimpse of the Estonian countryside and village life from the past. The venue has a distinctive rural atmosphere that includes various farm buildings as well as its own church, tavern, and schoolhouse. Several mills, a fire station, fishing net sheds, a dancing area, and a village swing add to the character of the place. Some of the country’s iconic windmills can also be seen. Various demonstrations, displays and interactive activities help bring the past to life and provide visitors with a fun and educational experience.

Dinner in the Sky will visit Tallinn from 12-17 August in the square of the Estonian Academy of Arts (Tartu mnt. 1). This year, chef Vladislav Djatšuk of Tchaikovsky restaurant in Tallinn and chef Jouni Toivanen of the Michelin starred restaurant Luomo in Helsinki will be taking to the skies to prepare an unforgettable meal at 50 metres high. Djatšuk is Estonia’s first chef to make it to the Bocuse d’Or finals. He is known for modern Russian and French cuisine. Toivanen is known for his innovative flavour combinations and use of modern gastronomical technology.

Pegasus, a long-running Tallinn restaurant has reopened its doors in its original location in Tallinn’s Old Town. The playful menu boasts international cuisine with Estonian flavours. he famous burgers from Kuressaare, Saaremaa are now in Tallinn! Owners Derek Ewen and Fleur Sprenk have brought their all-local, all-Estonian burgers to the Old Town, just in time for summer. I caught up with Derek in Tallinn to talk burgers, poutine, and local Estonian food. Dereku Burger is all about fresh, local ingredients. How do you tackle the problem of seasonal ingredients in a country like Estonia, where the growing season is so short? Yes, this is a difficult challenge. If we can’t get to the produce, we have bring the produce to us. For the past seven years we have worked with farmers on Saaremaa through such organisations as Saare Mahe Selts, Saaremaa Turundus Ühing, organised farmers markets and

open air markets like the Kuressaare Turg. We started a store in Kuressaare called Turuköök where the public could buy direct from our farmers and at the same time, we could use them in our supply network. In Tallinn, the short answer is that for a long time we have built up good will and good faith with our supplier network on Saaremaa – this helps us get our food fresh and direct. In Tallinn, we are hosting Saare O.T.T. which will allow our customers to pick up pre-ordered and pre-packed orders for food from our growers, and also give us a fresh supply of farm produce. So, when we can we try to get our tomatoes from the greenhouse, but sometimes we have to go Spanish. We do our best. It’s not easy. Dereku Burger started in Saaremaa and has now moved to Tallinn. How was the move to the “big city”? Have you had to do anything different?

Yes – Our challenge has been to stay true to our ‘one burger at a time, one happy customer at a time’approach, but Tallinn has a way bigger grill than we have in Kuressaare. Apart from your own burger, what is the best burger you’ve ever had? The best burger I have ever had…I was seven and it was a burger in Toronto at a bar restaurant named Hector’s, near Yonge and Eglinton. I can’t tell you any more, because

we are going to soon replicate cate it on our own menu. Stay tuned d please! Can you tell those who are nonCanadians just what poutine is and what makes it so delicious? Poutine combines the best of three worlds in one dish: melted shredded cheddar, rough cut deep fried potato wedges and hot beef stock seasoned gravy… yum, I have to stop now. Even talking about poutine induces withdrawal symptoms.

As a guest, the server shows you to your table. This is necessary, because together with the terrace, the restaurant can seat many people; and the restaurant can be fully booked, even on weeknights. To ease the speed of service, pressing the button on the little black device affixed to the table can bring a server to your table or request the bill. For families with children there is a play corner inside and a playground outside. A weekly menu can be found on the first few pages of the long menu. The favourite dishes from

this part of the menu sometimes make it to the regular menu, among which are meat dishes prepared in the Josper oven and Uzbekistani dishes. For those

that love grilled meat you can also find a flank steak on the menu, as well as fish and vegetarian dishes, smaller portions and desserts.

The lamb comes from New Zealand and the Angus beef, from Australia. You could have a taste of a few dishes, shared among friends, including the entrecote, buffalo tenderloin, lamb, and marbled New York steak. The Baltic Guide tried them all. With quality fresh ingredients and proper preparation, it turns out you don’t need any more seasoning than salt and pepper. Warm rolls and flavoured butter was brought to the table before the meal. The restaurant also has a pastry chef who prepared a meltin-your-mouth pavlova. If you get a table right in front of the kitchen, then you can watch the Uzbek cooks at work.

A 200g filet mignon cost 14.50 and a 300g entrecote, 15.30. The least expensive bottle of wine costs 13, and there are also six different beers on tap, starting from 3.40 for 500 ml. ■

Glazed cod and sous vide salmon

he restaurant is located on the 22nd floor of the Tallinn’s TV Tower, and you can just imagine the stunning view on a clear day. Chef Priit Toomits has a difficult task, how to draw your attention back to the food. He uses bold flavours, like those found in Asian cuisine, along with seasonal local ingredients to bring your focus back to your plate and give you a truly unique dining experience. I visited the TV Tower restaurant on a clear summer evening, with the sun setting in the distance and brave people were rappelling from the top of the tower. The restaurant was filled with an international crowd, all there no doubt for the unique dining experience. The menu has something for everyone, including vegetarians. I decided to try some of the fish and seafood dishes. The soft shell crab was served on a bright green plate with melon, fresh salad, and tartar sauce. The flavours blended nicely, as did the colours on the plate to make for a nice, light summery dish. As a main, I tried the glazed cod with salmon cooked sous vide, ginger rice with nori, vegetables and citrus demi glace. The cod arrived

covered by a smoke filled bell jar, which the server removed and the small cloud disappeared. The TV Tower restaurant holds special events throughout the year, like the exclusive Carte Blanche dinner. The dinner comprises of a five course surprise menu paired with different wines, as well a surprise musical programme. Bookings are essential for the event. A ticket costs 50 and includes dinner with wine pairing, entrance to the TV Tower, and access to the exhibits on the 21st floor. The Carte Blanche dinner takes place on the second Tuesday of every month. During the day, the restaurant offers a café menu along with the a la carte menu. And at the base

of the tower a summer grill is open every day from 10.00-19.00, where Chef Toomits is offering a small menu including ribs, chicken, fish and more. Toomits is considered one of Estonia’s grill masters. There is live music on Friday and Saturday nights and TV Tower Jazz takes place every other Thursday. ■

t’s Saturday night, and to quote Cat Stevens, you’ve got some money because you just got paid. If you’re not familiar with every square kilometre of Tallinn, chances are you will want to remain in the Old Town, as it’s easy to walk between places, and everything is well-lit and looks like a known quantity. Even so, there is fun to be had, without leaving the cosy confines of Vanalinn. Here is a route you may wish to take, if you want to have a retro, cultured Tallinn night out. 1. Must Puudel Müürivahe 20, Tallinn Old Town I2.

Must Puudel is the kind of place that doesn’t have to look for customers - it’s become a legend over the years because of its recovered, recycled hipster vibe, which you can see in the fixtures and fittings, and because of the sheer reliability and consistency of the cafe. At the weekend Must Puudel transforms into Tallinn’s smallest but coolest place to go and dance. Whatever time you get there, the kitchen will be open and there is a cabinet full of cakes, along with a small selection of international beers. I still recall fondly a Saturday night in Must Puudel that I was about to leave, when the DJ played an extended mix of Paul Simon’s ”Diamonds on the Soles of her Shoes”, making me happy to remain for as long as possible. I left Must Puudel at 7.30 am, a huge grin on my face, my daily worries gone. A l th o u g h S i n i l i n d (Müürivahe 50) is the Must Puudel owners’ attempt at a nightclub-style venue, I wanted to draw attention first to Must Puudel, a place for chat, intrigue, cakes and some very modern dancing.

Klubi. (Noku Klubi was originally an artists’ club, set up in reaction to the admission policy of the nearby KuKu Klubi by rebellious creatives in Soviet times - KuKu stands for art and culture in Estonian, NoKu for, well, something rude). NoKu is locked, unless you know how to get in. It’s also where some of Estonia’s most talented artistic people hide out. It was my second time in NoKu. Inside, it looks exactly like I imagine it did in the 1970s - hardwood furniture, dim lighting and long, plush, deep, beaten-up sofas, perfect for lounging, but not for getting up from! My advice is to take a look at NoKu’s menu for yourself. The place has a great reputation in Tallinn, and is a mainstay of tourist guides to the city, but unlike

many recommended stops, it does not disappoint, and is an essential destination in order to begin to understand Tallinn’s history. Just don’t all go at once!

The original, which sparked a thousand imitators, KuKu is in many ways a traditional Estonian bar/ club, the like of which you will not find elsewhere in modern Tallinn. It’s been kept in a similar condition to when it was the pinnacle of the Estonian art scene in the Soviet era. To go in, you have to enter a dingy part of the old arts building on Vabaduse Väljak, and go downstairs into what looks like one of those 1950s cinemas called something like ”The Generator Picture House”. The club cleverly takes your entry money before you can pass through and see what is there but don’t worry, if it’s the weekend, you’ll have a great time in KuKu. Be prepared for some seriously unreconstructed Soviet-style service at the bar (if you ask for a cocktail that’s on the list but that they can’t make, you’ll be told so in no uncertain terms), but this is a mostly authentic retro Tallinn experience, with good beer and, generally, nice people. The DJ plays singles from the ’60s, ’70s and ’80s that you either didn’t know about, or had forgotten. When your song comes on, the rush is palpable, and you get that amazing feeling of ”oh my word, I haven’t heard that in ages!” Before long, you’re crazy-dancing in a basement nightclub next to a Japanese hipster in red trousers, and an award-winning Estonian film director. It really is that kind of place, and it should be experienced and cherished by everyone who comes to Tallinn. Viru Keskus has added many new shops this year.

Tallinn doesn’t have a main shopping street like other capitals, but its many shopping malls, located throughout the city are convenient and easy to get to. Rocca al Mare, for example, located in the suburb with the same name has a free bus that leaves regularly from the A and D terminals at the port, stopping at Kristiine Shopping Centre as well. The newly renovated Ülemiste Shopping Centre, near Tallinn’s airport has just undergone a massive addition to include many more shops. The renovations are still being finished, but the mall is still open. Tallinn’s two department stores, the Estonian company Kaubamaja and the Finnish company Stockmann are both located in Tallinn’s city centre. Kaubamaja connects to Tallinn’s most central shopping centre, Viru Keskus. This year, Viru Keskus has added many new stores, and some stores have moved into

larger locations to serve you better. ABC King, for example, moved upstairs to the second floor to open an impressive flagship store. Solaris is one of Tallinn’s newest shopping centres and is located across from the Estonia Theatre. The Nordea Concert Hall (formerly Nokia) is attached to the back of Solaris. This is where some of the biggest acts come to play, when in Tallinn. The large bookstore Apollo is located on the second floor of Solaris, and offers a modest selection of English language books. The bookstore shares part of the second floor with a modern cinema. Rotermann Quarter is a grouping of old industrial buildings that have been renovated, with a few new buildings mixed in, and now stand in one of the most stylish areas of Tallinn. The area is filled with hip restaurants, trendy fashion shops, and more! When in Tallinn be sure to visit the Telliskivi Loomelinnak (Telliskivi 60A) and the Baltika Quarter (Veerenni 24). The Telliskivi Loomelinnak

is located in the bohemian area of Kalamaja. This creative space has grown so much over the last two years, and it just keeps getting better. The Baltika Quarter houses a new pop-up fashion shop called Zero. Fashion designers that are just starting out can sell their clothes and accessories here. Also located in the Baltika Quarter is Moetänav, or Fashion Street. Moetänav brings together Estonia’s leading fashion brands into a very unique space. Run by the Baltika Group, this retailer has five lables under its brand that you will not only find in this store, but throughout Estonia. Look for Monton, Mosaic, Ivo Nikkolo, Baltman, Bastion. Don’t forget about Tallinn’s Old Town. It’s not all souvenir shops and restaurants. Top name designer brands, including Estonian designers can be found throughout. Formed in 1279, Haapsalu is a beautiful town with colourful wooden houses, narrow streets, and a miniature town hall. One of the most striking buildings is the Kuursaal, or resort hall that stands on the seaside promenade. The first mud spa opened in 1825 and attracted even the Russian Tsars with its curative abilities. The small yellow house on Linda Street is where Ilon Wik-

land grew up. Wikland illustrated the children’s books of Swedish writer Astrid Lindgren. She did not have to go far for inspiration in this idyllic seaside town. August is the best time to visit Haapsalu, especially if you happen to be in town for the White Lady Festival. The legend goes that in the Middle Ages, women were forbidden in the Episcopal Castle, but a Canon and a lady fell madly in love. The Canon dressed the lady up as a boy and brought her inside the castle to sing in the choir. But,

eventually they were discovered. The Canon was thrown into the castle’s dungeon and starved to death and the lady was immured alive in the wall of the Baptistery. Since then, on a full moon night in August, she appears in the circular window of the Baptistery on the southern wall of the Dome Church. ■

How to get there: Haapsalu is less than two hours away from Tallinn by car. Buses connect to Haapsalu frequently.

Sun, warmth, seawater, and wind are all part of summer, but at the same time, they dry the skin and bring out small wrinkles and pigmentations. Wrinkles and other imperfections become more visible in the summer sun. When the skin dries and tans, fine lines can appear more easily. In the fall, the wrinkles between the eyebrows and around the eyes become more visible. It’s often thought that during summer it’s not important to take care of your skin because the sun takes away the need for treatments, or that you can’t go out into the sun after treatments anyway. Skin needs moisture and care, especially in summer.

Mesotherapy Mesotherapy is a skincare procedure, developed in France, where small drops of vitamins and a hyaluronic acid solution are injected with a tiny needle into the top layer of the skin. ■ Viimsi Open-Air Museum & the Museum of Coastal Folk This small open-air museum looks at life in the coastal areas of Estonia. See a collection of seaside farmhouses dating back 150 years. During the summer, they will be hosting numerous cultural events, as well as one of the best farmer’s markets in town, every Saturday from 9am to 2pm. There is a fabulous view of Tallinn’s skyline across the bay, and the Viimsi area makes for an interesting day trip.

How to get there Take bus No 114 from Narva mnt at the Hobujaama or Pronksi stop and get off at the Rannarahva stop. The journey lasts about 30 minutes. You will have to walk about 500 metres and the museum will be on your left next to the sea. Rohuneeme tee 51, Pringi, Viimsi.

Located in the west end of the city, in the area known as Rocca al Mare, this large open-air museum looks at farm life in Estonia. The end of August will mark the Openair Museum’s 50th anniversary. Here you can take a ride on a horse drawn wagon, taste traditional Estonian foods, and visit the different farm houses spread out over 70 hectares of land.. ■

How to get there Take bus No 21 or 21b from the train station and get off at the Rocca al Mare stop in front of the main gate to the museum. Bus No. 22 and trolley buses 6 and 7 will take you from the city centre to the Zoo stop. Cross the street and walk along the seaside road for about 15 minutes until you reach the entrance. PUBLIC TRANSPORT Tallinn’s public transport system consists of trams, buses, and trolleys. All three use the same ticketing system. In 2013, a smartcard ticketing system was introduced. If you plan on using public transport more than three times, this is your best option. Smartcards can be purchased and topped up at R-Kiosks and are transferrable. Parking in Tallinn can be confusing. There are public paid areas as well as private parking lots. The first 15 minutes of parking is free , if the driver is using a parking clock or written notice stating the start time – placed visibly on the windscreen of the vehicle. This does not apply to privately owned off-street car parks.
