t’s been an exciting time recently at the beat office as basically the whole process of putting this magazine together has been revolutionized. If you were on our beat update e-mail list, which we’ve been sending out to beat readers for approximately eight years, you would’ve noticed the beat daily popping up in your in-box every day since over two weeks ago. The Beat Daily is a concise report on Bali and national news, and entertainment information that we’re putting together and sending out to our 7000+ subscribers around noon every day. This in turn has changed the way we are organizing the beatmag.com website, which is being updated on a daily and hourly basis. The Beat was groundbreaking in this town when it published every fortnight, but now we are more NOW than ever. Subscribe to the beat daily by going to beatmag.com and simply send us your email address – and keep in touch through your desktop or smartphone with what is happening today in Bali.

The Beat Magazine is Bali and Jakarta’s entertainment gig-guide. Pick it up free at the airport, bars, restaurants, clubs, hotels and Circle K in Bali. We are an independent publication and our aim is to entertain and guide you thru the nightlife and more of Bali and Jakarta.

I’m sure you would all agree it has been the strangest weather in Bali lately but we don’t let that hold us back, the party still goes on. Check the What’s On and HereNow sections inside this edition of the beat for all the details.

beatupdate@beatmag.com

We ask our Beat VIP Card members for Comments I like the beat magazine......all the information about clubs (parties), restaurants and everything, and what I dislike..... the prices to the hotels is still from a long time ago, now these prices have already gone up and in the magazine it’s still from 1 year ago. I live here and I check every time.... it’s wrong. Thank´s a lot. Carlos (yes, we’ll try to fix that up soon. Ed) Firstly, as far as I’m concerned, there is no dislike what so ever about The Beat Magazine. There are only pro’s. Sure, one can check online what is hip and happening in Bali, but TBM gives you an ideal overview, in a handy, up-to-date and easy to read magazine. Being a steady Bali visitor for over 20 years now, I do believe that you know what’s good or not to go to for wining and dining. Or maybe I should say; hot or not! All the best, Humphrey Please send contributions, letters, etc to editor@beatmag.com The opinions expressed in any article or advertisement are those of the writer or advertiser and not necessarily those of the Beat. theSCOOP India Makes a Home in Bali The Indian government announced the approval of the opening of a Consulate General of India (CGI) on Bali. The Consulate General of India will strengthen India’s traditional bonds with Bali and also improve its protocol, commercial and consular presence on the island. This will provide an impetus to the commercial interaction between India and Bali in Indonesia. The CGI in Bali will also be beneficial to the local PIO community (people of Indian descent), which comprises of over 230 families within Bali itself, apart from some more Indians and PIO families in neighboring East and South Kalimantan. An Indian cultural centre was established in Bali in 2004, which has done exemplary work in propagating yoga, Indian culture and performing arts. With the increasing popularity of Bali as a holiday destination, the number of Indian tourists arriving in Bali has also swelled to about 20,000 this year. This has put enormous pressure on the meager resources of the Indian cultural centre in Bali. (The Beat Daily)

Rio Sidik Returns to JP’s After a three-month tour around Europe, Rio Sidik has returned to Bali and will be returning to the place where his musical career started JP’s Warung on the 17th of November. Rio, a well known trumpeter, singer and songwriter has made a name for himself on the local music scene with his band Saharadja not to mention adding his expertise to many different projects on the side. His return from the European tour, has transformed him, giving him a more mature and solid sound. Rio will showcase his new sound every Wednesday at JP’s on Jl. Dhyanapura #6. Be sure not to miss Rio Sidik on stage while enjoying the great menu and drinks at JP’s Warung.

Foreign Tourists Increase

3

The amount of foreign tourists coming to Indonesia in September was a total of 556,400 people - 13.48 % higher than last year. Most of these people came to Indonesia via Ngurah Rai airport, Bali, where last September the figure was 232,519 foreign arrivals (Approx 7750 people per day).”However, this is 4.4% lower compared to August 2010,” stated Rusman Heriawan, head of the Central Agency of Statistics (Badan Pusat Statistik). Since January 2010 there has already been 5.19 million foreign tourists to Indonesia, 12.26% higher than last year (4.62 million). The highest percentage increase in foreign traffic to Indonesia was 46.7% via Adi Sumarmo airport, Solo, while Soekarno-Hatta, Jakarta, was second with 36.41%. (The Beat Daily)

theSCOOP Cheap computers, bad quality Beware of computers sold around Bali with prices that are way below normal. There’s a chance they may have been “cannibalized”— original spare parts swapped with lower quality or even fake ones. Heri Wijaya, the owner of an electronic shop in Teuku Umar told Bisnis Bali, “The much cheaper computers are so tempting compared to the originals with a guarantee from the manufacturer. But be very careful because most likely they have been cannibalized. Some components are old or second hand and then they reassemble them and put the latest casing on so it looks new.”Consumers usually can tell from the guarantee that is given by the sellers. “When there is no genuine guarantee from the manufacturer, only a guarantee from the shop, the computer you are about to purchase must be illegal, there have been components exchanged,” Wijaya adds.Bagus Ketut Wijaya, from Bali’s Ministry of Industry & Trade, says that the government has anticipated this by instructing the importers to use labels in Indonesian for all non-food commodities. By putting on labels, the future consumers will get clear information about the contents of the product. As a further measure, the Ministry of Industry & Trade will be holding surprise inspections routinely. (The Beat Daily)

The Surfing Community Mourns

5

On a tragic note, former three-time world surfing champion Andy Irons has passed away at the age of 32. The cause of death is yet to be confirmed, but is probably connected to his withdrawl from a surfing competition in Puerto Rico due to dengue fever. Irons was found lifeless in a hotel room in Dallas, Texas, where he was on a layover en-route to his home on the Hawaiian island of Kauai. A statement from Irons’ family in Hawaii, posted on the website of the Association of Surfing Professionals, said Irons “had reportedly been battling with dengue fever,” although it remains unclear if Irons actually had that illness.

Hiphop With Heart With the many natural disasters ravaging the nation, Bali Hip-hop Community and Daddy-O-Movement have united to raise funds to aid the victims of Merapi and Mentawai. The two high profile hip-hop communities of Bali have designed a special limited edition wrist band especially for this cause. Both communities hope that the funds raised from selling the wrist bands will help rebuild the villages in Merapi and Mentawai. This would be the second charity collaborative movement between Bali Hiphop Community and Daddy-O-Movement after aiding Bali’s street cleaners several years earlier. Prices of the wrist band have yet to be confirmed, but for more information visit www.balihiphopcommunity.blogspot.com or call Daddy O on tel: 081 8055 22 891

Sound Like Techno, electro house Hail From Germany

Have Been Steadily rising through the ranks of the techno fraternity, Sebrok’s ascent began in 2004 when he founded his own label PASO Music with fellow German talent Marc Miroir. He soon found his records getting love from electronic royalty such as Laurent Garnier, DJ Hell and Sven Väth, and as techno gradually came back into favour with crowds around the world, his increasingly impressive productions started to pop up in more and more high profile places. He ditched his successful job at MTV Networks to work on his creative passions, and is now being recognized as one of the world’s most talented up and coming techno producers. Anja Schneider has four jobs: She’s a label head, a DJ, a producer and a radio personality all rolled into one. No wonder one interviewer called her a “perpetual motion machine”: her wheels never stop turning. Anja started out on the airwaves, producing for KissFM and later Fritz Radio, where since 2000 she has hosted the weekly radio show Dance Under The Blue Moon. Anja Schneider also runs the label Mobilee Records and its new offshoot Leena. Her debut solo album, Beyond the Valley, confirms her artistic arrival with ten rich, diverse tracks that range from the anxiety-ridden to the blissed-out and is more than your ordinary collection of dance-floor cuts. are Now Two of the best DJ/producers that Germany has to offer are set to challenge each other in a friendly battle at SOS. Both will try to outdo each other and see whose beats will bring more clubbers to the dance floor. Wanna know who lands the knock out punch? Best make your way down to SOS on the 19th of November to find out.

Hail From UK

Have Been The Shapeshifters are a DJ Duo formed by Simon Marlin and Max Reich who are both self-confessed party people at heart. The pair met when Simon signed Max to the Down Boy record label which he was currently working for. Musically, Simon found his enthusiasm for house on the dance floor in the late 80’s and early 90’s, promoting nights and DJing while Max got into production via a passion for techno, honed whilst throwing illegal raves in his native city of Gothenburg. After four years under the Positiva label, in 2008 they found a new home at Defected Records and have initially made a profound mark on the world with their chart topping beats. Aside from three top ten hit records (‘Lola’s Theme’, ‘Back To Basics’ and ‘Incredible’), a BRIT Award nomination, a bucket full of remixes and productions for the likes of George Michael, Faithless, Christina Aguilera, Leona Lewis and Moby, the pair continue to produce the goods. are Now Their critically acclaimed ‘The Shapeshifters ‘In the House’’ DJ mix compilation was a major success in an already impressive portfolio, and The Shapeshifters also mixed the ‘Summadayze’ compilation to coincide with their Australian tour in January 2010. The Living End

T

he Living End are basically a living, breathing rock legend - a fact which was proved at Kuta’s Boshe on Saturday night, showing that it is possible to bring good Aussie bands to Bali and make a success of it. Local lads Superman is Dead and Bandung’s The SIGIT started proceedings and by the time The Living End got on stage at about 10.15pm the place erupted. They played all their classics including, Who’s Gonna Save Us, What’s On Your Radio? White Noise and stacks more including some new ones off their forthcoming album. They are a tight and talented band giving the mainly Balinese crowd and a smattering of Aussie rockers of approx 1200 people one hell of a performance. The band was so pleased with the show that they played for almost 2 hours - double what they were scheduled.

056 | beatmag.com

So how did it come about? According to Bagus, manager of Boshe, the show was sponsored by a creatively minded cigarette brand (X Mild) with Boshe picking up the tab on local expenses. Apparently the brand sent out a tweet searching for a big indoor venue for their brand activation in Bali and 90% + of the RT came back for Boshe. The rest is history. It’s hard to say if the 100k entrance price would have really paid for all the expenses plus make some profit, but it did prove that local folk are willing to shed a substantial sum of cash to see an international band. Who knows? Maybe now the world is the limit. Rock on Boshe, rock on... It’s a great indoor venue.

DOMESTIC GROOVE Celeb’s Chosen Seven

oppie ANDARESTA Singer, Songwriter, Mother So what music are you into at the moment? Pop ballads, such as Jack Johnson, Ben Harper, also dance punk (The Ting Tings) and some pop rock. What was the first record you bought— any interesting story about it? Symphony (Fariz RM) – Trapesium. I was in junior high. I’m a big fan of Fariz RM and I bought it from my friend’s sister. What are your all-time favorite albums and why are they so meaningful to you? I’d say Joni Mitchell - Turbulent Indigo. Listening to this album feels like having a nice conversation with Mitchell. The music is incredibly deep on many layers. Calming vocals from her soul makes me sure that being a musician is the best profession in the world. Another would be Edie Brickell & New Bohemians- Shooting Rubberbands at the Stars - Wild! Brickell proved that you don’t have to have perfect pitch and tune to be a singer. The most important thing is singing from your heart! The Black Crowes -The Southern Harmony and Musical Companion brings me back to a lot of Potlot memories and Ben Harper – Welcome to the Cruel World is a must have in the car! Also, Slank – Geenerasi Biru. Great music from 5 brilliant musicians. 15 years after, it still rocks! (Check out the backing vocals on Generasi Biru! Ha ha ha!) What was the worst record you ever purchased? Eeeek… Who do you want to be, other than yourself, next time you reincarnate? Jack Johnson’s wife!

Which artist do you choose to start your weekend with? Michael Franti and Spearhead. And to end the weekend? Bob Marley. Cooking for dinner, having a glass of red wine, and listening to Uncle Bob’s stuff is the perfect way to end my weekend!

Oppie is now in the mixing process for her 7th album, with a tentative release date of September 2010 (after Idul Fitri). Since April 2009 she’s been working as the ambassador for Peduli Perempuan and released a limited edition album Tentang Perempuan, in which all the songs are concerned with women’s issues.

Worm Fodder

Ill Starred Captain Black Swan Eye F

using together all the elements that arrive together after a long journey across urban landscapes, Ill Starred Captain have a sound that is truly reminiscent of Australia in its mixed dustbowl of music and culture. This doesn’t mean they sound like a two man team on an ‘Advance Australia Fair’ patriotic pub crawl, as there is no ego here, but a number of pub crawls have certainly been achieved none the less. With a solid ten years of consistent touring behind them, you could say that Justin Francis (drums) and Scott Bassham (songwriter/ guitarist/ singer) are dedicated to keeping it real and on the road. Such an amalgamation as a base for songwriting has resulted in a sound that speaks of country roads, traveling adventures and a myriad of woven stories. The word folk has always drawn needles to my brain, but these guys tell a story that is often defined within folk genres, while strengthening it with a strong rock and blues backbone that is always welcomed with raised beers to any stage. Hunters and Collectors, the Australian Crawl and even The Black Keys come to mind, as does whiskey, pub smoke and cheap hotel rooms. Scott’s vocals are not immediately smooth on the ears, nor is the overall production of the recording, yet there is an honesty there that quickly grows on you and in the end it simply adds weight to the background of the duo. This is the underbelly of the Australian music scene that does not rely on an industry of cash ins. This is the sound of two musicians moving from town to town with a stack of songs that could catch the attention of both the local barfly and the prettiest barmaid. From thick rock grooves to acoustic reflections, it’s a sound worth driving to. Check out the single ‘Four Feet Away’ from this second full-length album at www.myspace.com/illstarredcaptain. Cracker

White Shoes & The Couples Company Album Vakansi E

ight years and still having a strong hold on radio airplay, underground respect and commercial recognition, White Shoes & The Couples Company (WSATCC) now has to recapitulate their musical voyage on ‘Album Vakansi’. The album flows even stronger with original members: Aprilia Apsari, Saleh, Yusmario Farabi, John Navid, Ricky Virgana, and Aprimela Virgana all in the mix. Their Jakarta-based viewpoint might reflect metropolis hedonism, but ‘Album Vakansi’ tells WSATCC’s journey in tropical style. Involving influential names like Fariz RM, David Tarigan and Oomleo to their tunes adds another layer to enjoy. It’s a good album to cruise down the ranch to - Indonesia’s indie darlings are riding high again.

Bali Today Show Nanci Holiday Forty five thousand expatriates are wandering them there hills and beaches, tired of crying in their soup over those oh-so-dramatic, tear-wrenching television soaps. the Time has come, for The ‘Bali Today’ Show to stimulate the intellect and put static in the attic. Who’s to blame for all this commotion? Hey! it’s Nanci Holiday. S.B. Curtain call. N.H. Fifty three years old, from Corpus Crispy, Texas, born in a hospital called Sporn, believe it or not (laughs)! It’s not there anymore. Two children, in a relationship with a Balinese man by the name of Ketut Budiarta, he’s also my producer. Cheerleader in my small town high school, Carville, Texas and dreamed of everything else in the world, especially palm trees. I went into theater, Summer Stock Theater near where I lived; no one in my family was remotely theatrical or entertaining in any way whatsoever. So there was always the question of my legitimacy in the family! (laughs) So, I started doing theater, which took me to Los Angeles for a period of my life, then that took me to Australia.

066 | beatmag.com

S.B. At what age did you start traveling? N.H. Twenty six, before university in Utah, the beginning of spiritual stuff - long story. Ended up in Los Angeles, didn’t think I could handle the cold, so even though I was a theater person, I just couldn’t imagine being in New York. S.B. When you say theater person, at what point did you seriously become that? N.H. From the age of thirteen, I did four shows in the space of three months - semi professional. I’m what they call a triple threat, because I sing, I dance and I act as a performer. I have to be honest, I love straight theater, but musicals can be so magical. I’ve done every musical you can imagine; the lead role in Cabaret, My Fair Lady,

the last performance of Kismet, and West Side Story tended to follow me around a bit. I really enjoy doing the work, not the celebrity thing. S.B. Ah ha, the true artist. And so production? N.H.The acting thing was a little non-cerebral for me, especially when you do long run productions. I hung out with the technicians anyway, so I started to move into production, stage management, production co-coordinator for theater or touring groups. I love lighting design, loads of fun. I then branched out and did world expos, then went back to Los Angeles and worked with theme parks. In Japan there was more of the same, and that’s when I met the first person who mentioned Bali. S.B. So here we are with the Bali Today T.V. show. How did that come about? N.H. Two years ago a friend of mine asked me to put together a newspaper in English that was more informative about the community. You’ve chosen to live here, so its your community and you want to participate in your community, you want to know what’s going on; so how do you go about doing that? So I thought about the next evolution, beyond a newspaper. We have two of them, magazines, which are great, then television. There’s a program in America called Good Morning America, it’s their wake up. It’s news and it affects them. I wanted that here and it didn’t exist. You know, for the community of people outside our national boundaries, but people who live here in Bali right now too. S.B. When you say people, are you directing this program directly at expatriates? N.H. In the sense that it’s delivered in English, yes, but our show will always have Indonesian subtitles or if the person is speaking Indonesian there will be English subtitles. The point is, we’re trying to bridge the perceived differences between the expatriate from Italy, France et cetera: we’re all here, on Bali, today. S.B. O.K., two years ago, and now? N.H. I didn’t want to talk about it and not have it happen, there’s enough of that going around. So when I was in Australia, I came back in January and started putting people and things together. This was not about me, it was and is a huge team effort. The first thing we did was make a little pilot to see what we could do, and then talked to Balinese networks. Then we were directed to other

networks. There are a lot of shows addressing Indonesia and they’re great, but I want us to be about THIS community living here now. So we now have a relationship with TVRI Bali, which should be great. S.B. Will this program be broadcast throughout Indonesia? N.H. Not right now, but being in the 21st century, we have a website where you can watch the show from anywhere in the world, anytime you want, through the website (balitodayshow.com), that includes shows from a month ago. S.B. Mind blowing, what a shot in the arm for Bali and the people who are thinking of living here. Are you going to show both sides of the coin? N.H. Absolutely. S.B. TVRI is government subsidized; to what limit are your restrictions? N.H. The only words that were put on the line were that we were not allowed to accept sponsorship from alcohol or tobacco companies. (Laughs). S.B. So basically everything is baby steps. Will you have entertainment as well? N.H. Oh yes - fashion, expatriate kids that are achievers, focusing on movers - people who are doing and making things happen. I also want to know who Imam Bonjol was. I want to know it all, about where I’m living, don’t you? That’s the aim: guests will talk about their life in Bali, and hopefully educate each other. S.B. It will be interesting to see how the Balinese react to this. N.H. We’ve had so many Balinese thanking us for wanting to do this; a lot of travel-educated Balinese are ready to come on board. One who was working for the Voice of America - exciting! S.B. Curtain call is coming down, what do you have to say to your fans out there? N.H. Please grow with us, we really want input from everybody living here, as to what they think the show should be, people they’d love to meet on the show, subjects to discuss. Bali Today Show. Come, every Thursday at 7pm. TVRI... Thanks Nanci, and as they say in the show business world, break a leg! Chow mein, Salvador Bali

utra Hermawan (Nusa Lembongan) claimed his second consecutive victory yesterday at the Quiksilver Open 2010 6 star plus rated Coca Cola ISC tour event at Keramas Beach in Gianyar, beating Dedi Santosa (Kuta) in a mesmerizing final that saw him also take not only the win but the top single wave score of 9.25 (out of 10) and the top combined two wave score of 17.25 (out of 20), in addition to launching him into the number one spot in the ISC Open Division rankings. Hermawan takes home a Rp 25 million paycheck ($2,800 USD) and 3,500 ISC championship points for his win in the pan-ultimate Quiksilver Open 2010 plus rated event (25% more prize money and points), while Santosa nabs Rp 11.5 million ($1,300 USD) and 3,000 points. “That was my best final ever,” said the elated 18-year-old Hermawan back on the beach, “and to win it was so amazing. The waves were great and my board felt really good so I just kept being aggressive and attacking the waves.Dedi was the number two-ranked surfer coming into the event, so I couldn’t let up even once. He kept getting high scores, so I had to keep trying harder and harder. Even when I got that 9.25 wave I still didn’t feel safe. This is such a great feeling, and I am so amped!” The two finalists put on a great show during the 30-minute final, with Hermawan scoring an 8.0, a 7.4 and a 9.25 as his top three waves. The spectators, competitors, and crew on the beach were treated to arguably the best and highest scoring final seen this year.

Flapjaks Jl. Pantai Kuta Seaview, Kuta, Bali tel 0361 765674 For this week’s review, The Beat’s own self-appointed gelato connoiseur Dan Ashcroft dropped into the new Flapjaks on Kuta beach to once again satisfy his sweet tooth...

Sweet-toothers of Bali rejoice! Strengthening their presence and reputation as purveyors of sugar and spice and all things nice, Flapjaks House of Pancakes and Home-made Gelato have thrown open the doors to a new dining space right on Kuta’s famous beach. It seems there has been a gelato revolution over recent months, with a host of gelato parlours popping up all over the place, and a huge increase in tourists and locals alike ambling along, waffle-cone in hand slurping up the delicious icy beverage. Already boasting outlets in nearby Tuban and Sanur, the Kuta location is another step to island-wide gelato domination for the Rama Restaurant group. However, gelato is just one of the strings to Flapjaks’ sugary bow. Drop in between 9am-12am everyday and you’ll find a fully loaded menu including coffees, juices, smoothies, pancakes, waffles, and crepes – not to mention the rolling assortment of 56 gelato flavours. But it’s not all sweetness and light – there’s a delicious selection of savouries for the non sugar junkies. Change up the chocolate on your pancake or waffle for creamy mushroom sauce, triple cheese or sausage and cream (amongst others) if you’re after a more wholesome snack. You can also order all-day breakfasts, salads, pasta dishes and sandwiches to

Last up on the agenda comes Flapjaks’ party piece; the mixed fruits gelato set (short – 49k++, bigman 95k++). Prepare to clear the table for this one as it’s served in what can only be described as a wineglass for I arrive having been sat in the traffic jam from hell for giants. Five scoops of gelato (diner’s choice) sit atop a the last 30 minutes, and so am in need of some serious mound of chopped fresh fruits and crispy flakes with refreshment. A Bali strawberry whirl smoothie (short enough chocolate tubes sticking out of it to make it – 35k++, bigman – 42k++) is quickly whipped up and look like a sea-mine. The whole thing is finished off I greedily suck it down despite the risk of brain- with a mountain of whipped cream and sauce – an freeze. It barely touches the sides, but the delicious ice-cream dream. I won’t pretend I managed to finish mix of fresh strawberries and raspberries with honey, this off too, you’ll need a minimum of four friends milk, gelato and apple juice hits all the right spots, and to do that – between the photographer and myself I immediately order another. Thirst duly quenched, we barely made a dent. I pack up my dessert spoon, I’m ready for business and get stuck into a caramel utterly defeated, and vow to return with a few willing Baileys waffle (half – 42K++, full round – 60k++); a volunteers next time in order to tackle this delicious plate-flattening symphony of large Belgian-style waffle monster. with rum & Kahlua flavoured mascarpone cheese, caramel Bailey’s sauce, shaved rich chocolate flakes Flapjaks is open every day on Jl. Pantai Kuta between and a generous dollop of gelato on top. They say that Poppies Lanes 1 and 2 from 9am in the morning the customer is always right, so I opt for caramel until 12 at night – plenty of time for a big breakfast flavoured gelato, but this can be substituted for any of on the morning after the night before, a lunchtime the other 56 flavours according to preference. Next respite from the heat, or simply to get your dessert up I plump for one of Flapjaks’ chicken tandoori rolled fix whenever the mood grabs you. With a takeaway sandwiches (55k++) – tangy chicken pieces wrapped service and another two locations in the pipeline for in warm toasted pita bread with fresh lettuce, onion, Seminyak and Bali Galleria the future looks bright for tomato and mayonnaise with a side helping of home- Flapjaks House of Pancakes and Home-made Gelato. made potato wedges. Dan Ashcroft satisfy even the hungriest of stomachs, comfortably enveloped in the bright and breezy air-conditioned interior.

Home Sweet Home

Missing mum’s cooking? For those a long way from their Thai roots, head down to...

Cupumanik In the Hindu tale of the Ramayana, ‘Cupumanik’ refers to a small jeweled case that is fought over by several characters in the mythological epic. It is considered a precious object, and therefore an appropriate name for a unique restaurant that tantalizes the taste buds with culinary delights from Thailand. With both an ala carte and a set menu, Cupumanik serves up a traditional style of Thai cuisine with modern presentation and has earned a name for itself as being a local favourite. Winning an award for ‘The Best Restaurant and Service Excellence’ at the ‘International Business & Company Awards’ in July of this year hasn’t gone to their heads either. There is no pretentiousness here so if you’re after a place to relax, enjoy good food and feel at home, you know where to get your next stir fry. Cupumanik is at Jl. Mertanadi No. 29 Tel. 731468.

Local tastes for a traveler’s appetite…

Sambal Matah

S

ambal Matah is a chili-based sauce, using raw cuts of onion and chili, and cooked very briefly with coconut oil. Sometimes, it is not cooked at all, and is referred to as ‘matah’, or ‘raw’. This sauce is traditionally used as a condiment, often listed in a Balinese set menu to enhance flavour or enjoyment, and is ideal for those who love it hot and spicy. You’ll no doubt learn that sambal means chili once you start trying out local food. Just go easy at first and have some water handy as it can often pack a punch!
