Possibly it’s time to remind certain security staff at nightclubs in Kuta and Seminyak that heavy handed treatment dealing with their customers is not appropriate. A high-profile Australian family, out for a night on the town after a family member’s wedding, were beaten up by security, apparently unprovoked, resulting in many of their party being treated in hospital and cutting their stays short in Bali. In the heat of the moment anything can happen, but level heads should prevail in all circumstances - especially with the ones employed to keep the peace. We would hope that the security personnel are not there to win battles, but to stop fights before they grow into something worse. Having said that, we’d also like to remind foreign tourists that this is not their home turf and the rules may be different to what they expect. Keeping out of trouble should be a high priority and don’t expect everything to be the same as home. As high season continues to roll, the next two weeks are supplying loads more entertainment for the masses. It’s busy around town and even with a few drops of rain now appearing the show goes on - and bigger than ever. Watch out for major events at Sky Garden, Hu’u bar, Cocoon’s beach and pool parties, the Brewers event on Kuta beach and of course, the Kuta Karnival on Oct 14 – 16 on Kuta beach, including the famed Food Festival held on the Friday to Sunday evenings at a new location on the beach in front of Jalan Benesari. The promotion has been pretty subdued this year but it’s sure to be another big event for Kuta. Also, if you are looking for a fun afternoon and evening out, come join us at The Beat Sunday BBQ at hu’u bar and restaurant this Sunday, Oct 16 from 3pm. It’s a complete gourmet BBQ cooked by master chef Phil Mimbimi, and if you like to eat good food, have a few drinks and chat with friends, it’s the place to be this Sunday afternoon. We’ll be accepting necessities for a local orphanage during the event so bring old clothes, rice, toothpaste or anything you can think of the kids might need. See you there!

Scoop Bali Garden Party Bali has many events in its annual calendar but not many of them are specifically developed for the international community. One such event is the Jakarta Highland Gathering, which has focused on the core traditions of the Scottish Highland Games for the past 32 years. The organizers of the Jakarta Highland Gathering have set up a garden party right here in Bali, based on traditional English garden parties such as the Queen’s annual summer gathering in the grounds of Buckingham Palace. The event will feature flower arranging and a dog show over its two days, starting on the 29th and ending on the 30th of October at Taman Bhagawan in Tanjung Benoa. Jason Mraz Heading to Bali American singer songwriter, Jason Mraz will be making his way to Bali on the 9th of November to perform at Taman Bhagawan, Tanjung Benoa. His performance in Bali will be part of a four nation tour through Asia and themed ‘Jason Mraz: A Special Acoustic Evening with Toca Riviera’. Rivera is a long time friend and renowned percussionist who has played a key-performing role in Jason Mraz’s successful album releases and public performances to date. This will be Mraz’s second time performing in Indonesia after his last appearance at Java Jazz 2009 which received rave reviews. Tickets to the event are available online and range between 390k (regular) up to 890k (VIP).

Think Pink Luncheon and Fashion Show 2011 Rotary Club Bali Seminyak will be holding a ‘Think Pink’ luncheon and fashion show at Metis Restaurant on the 28th of October. The fashion show will feature fashion designs by Barbara Tollitt and The Inti Collection of Bali, which will be on display between 12pm and 3pm. Funds raised from the event are to help fund a free mammogram for underprivileged woman in Bali. By providing free mammograms to women in Bali, the opportunity to educate women on self-examination and being aware of the symptoms of the disease can be taken. Hot Summer Halloween Nights The time to celebrate the day of the dead is coming soon again. Halloween celebrations are sure to be happening everywhere, with venues all over the island getting their fright on. Kuta’s Sky Garden has a massive costume competition with Rp25 million up for grabs in three categories - Sexiest, Scariest, Funniest and Best overall. Photos will be snapping away for voting on line on both 29th and 31st October. Haunted rooms, treats, sexy witches will be taking over Sky for the two nights. Cocoon’s regular Hot Summer Nights event on the 28th of October will be a ghostly themed beach party, with DJs hitting the beach from 9.30pm. Freaky partygoers can let loose with their feet in the sand and dance until the early hours of the morning. Prizes are up for grabs for the best dressed too, so leave the Scream mask at home and come along in your scariest original costume. JP’s is offering free drinks for those coming in a costume as you do the ‘Dance of the Devils’, while Eikon’s ‘Dead Celebrity’ Halloween party requires you to dress as your favorite celebrity, with prizes to be won for the best costume. he first day of Rip Curl’s Surf & Music Festival was dedicated to the surfers with various surf events - see inside further for the details. Apart from the competitions, other activities going on around the beach included Rip Curl Mirage Boardshort and Surfboard Test Drive Center and a Rip Curl Skate Park which was filled with hopeful competitors practicing for the next day’s competition. The second day of the festival started early with the finals of the surf competition taking place which carried on until the afternoon. As twilight came into play, the winners of the day’s events were all announced and following the lengthy award show, the crowd was entertained by performances from local bands, King of Panda, Nymphea, Teenage Death Star, Endank Soekamti and special guests, Shaggy Dog. I was traveling in Australia working in small coffee shops for pocket money, my visa was finished so I had to fly out for one day. I came to Bali and never went back. I met the right people, like you! I started helping people organize their restaurants, most of which are not around anymore. I opened up the restaurant at the Bird Park and did ‘Cous, Cous’ catering parties. I did this because I loved to do it, especially in those days. Bali was a small community of expatriates and nobody went out every night, there was nowhere to go! S.B. Have you always been in the restaurant field, did you go to school for it? S.A. Yes, I did an apprenticeship. S.B.Warisan Restaurant, which recently had its twentieth anniversary, was sort of an icon for a number of years. What was your involvement there? S.A. Actually helping Warisan with new ideas, doing ‘Cous, Cous’, and organizing the salad bar. Eventually I had the opportunity to take over with my partner Dou Dou in 1996, and we opened the following year. I had met Dou Dou in Jakarta at a party, and he was cooking for the French government’s ambassador at the time. We clicked and he came to Bali. Actually at the time it was called Indochine, and business was slow. It was mostly Asian food which didn’t really work, so they asked me to take it over.

Feature S.B. When you say taking over, in what respect? Managing? S.A. No, we took over the lease. Basically it was our restaurant from then on, from February ‘97 to October ‘09 - twelve and a half years of classic French cuisine. The lease was ending and the contract was offered to extend, but the deal was not what we were expecting, so we decided to move, buy some land and build on it. An exciting new challenge. S.B. So your restaurant now, Métis, was quite a jump, in size and stature? S.A. Well Warisan was small and the kitchen was tiny and there was always the demand for more. We needed to improve a lot and make it more modern because the times are changing. We had only twelve days, with twice the staff to set up. We were struggling at the beginning, but step by step and with the right people we improved. S.B. Do you still have the same menu, more or less? S.A. Same menu actually, classic, but we’ve added a lot of Asian fusion. S.B. These days there’s a lot of competition out there. Your thoughts? S.A. I love competition, it always gives me a lot of imagination. Competition is good for you, it’s very important. S.B. As well as the Métis restaurant, you also have the Gourmet Café and Catering, is that correct? S.A. Yes, plus a new one coming in Nusa Dua near the new BIMC hospital. The main function is private events like weddings, seminars, etc. Food and beverage. S.B. How do you see the improvements in cuisine, both then and now? S.A. I have to say improving. Small crudities all around, improvement on products, much more expensive now for sure, much easier to work. The main thing here is, you have to learn to speak the language, and you have to teach the staff to try the food. What we do here is very intensive training. All the new dishes, they have to cook it, try it, know what’s inside, and get totally involved with us. They have to create new dishes. It’s very interesting because they’re coming up with some very good ideas. We actually had our Indonesian chef cook a six-course dinner for a private affair. It was an experiment and it was a fantastic surprise, amazing.

S.B. I presume you have to have good communication with your staff? S.A. For sure, you got that, and they’re happy to work for you and come up with ideas. They are very talented and creative, you must give them the chance to express themselves. S.B. Do you train your staff with some kind of schooling? S.A. Something with F&B of course, cocktails and recycling and to understand about pollutions, collecting plastics from the cartons, all the glass from the solid foods. Eco friendly is key. Also customers who come in from the beach and are dehydrated and looking feint - they know exactly what to do. We have a big room upstairs with photo projection and books and not long ago we had the fire department training on how to stop a fire. We keep up with these basic things. S.B. Do you have the staff roleplay? For example, one sitting and ordering, the other taking orders from the menu? S.A. Yeah, all the time, brain wash, it’s all step by step. The food - they have to know what they’re selling and the motivation makes it possible to move up. We also give them language courses, English, Japanese, even thinking of Russian. S.B. How would you say Métis compares with Mozaic, which has a cooking school? S.A. I think it’s great. I have a lot of respect for Chris Salans, this has brought to Bali a very high standard, and actually we send our staff there. We support each other, no ego trips here. One hand washes the other. S.B. How do you go about controlling the standard of consistency? S.A. For example, there’s quality control. For fresh fish, it all has to be the same. Also vegetables. This is a very hard job to do, we have a receiving end here, everything is checked, and if dirty, it has to be washed before entering the kitchen. Meat products come from America and Australia, many local fish, except for salmon and chess and butter from France and Italy, and Bali of course. Fruits and salads also, supporting the local farms in Bali. S.B. What do you have to say to all your fans out there? S.A. Be happy, like me! (Laughter)

Ubud Writers & Readers Festival: Goodbye 2011, Hello 2012 The eighth Ubud Writers & Readers Festival (UWRF) drew to a close last night and was yet another great success. “This year’s festival was more successful than we ever imagined. There was an audience increase of a further twenty percent and the writers and readers are full of praise about our event,” commented festival director Janet DeNeefe at the closing night. This year’s UWRF went for five straight days from Oct 5th - 9th. Officially opened on October 5th at the Ubud Palace, the festival threw up many interesting topics. Some of the highlights were sessions with Paul Kelly, probably one of most the famous rock/folk Australian singers. On the 6th, Kelly presented a discussion about his book ‘How to Make Gravy’ to a packed audience at Indus restaurant. Next up was a charity concert at Betelnut Cafe on the 8th, together with Lucky Oceans, Greg Day, Tika & Dankie from Navicula and Salena Godden. More than 250 people came - and danced - with Paul Kelly. Other highlights was the ‘Coups, Crusades and Revolutions’ session with British Pakistani intellectual Tariq Ali, German author Horst Geerken and Turkish sociologist and writer Oya Baydar. The discussion was mainly about the coup

d’états that have occurred in Turkey, Pakistan and also Indonesia - of which Geerken witnessed first hand due to his close relationship with Soekarno, the first Indonesian president. The festival also invited several local writers and art activists including Agustinus Wibowo, who talked about his breathtaking adventure crossing all the ‘stan’ countries (Afghanistan, Uzbekistan, Turkmenistan etc.), which he has detailed in two books. Also on the bill was Marzuki Mohammad, who talked about his trip to New York and other states in the US with his batik-wearing rap group, Jogja Hiphop Foundation. He also brought up how a few 18th century Javanese songs combined with modern day hip hop were used as a rallying cry for the city of Jogjakarta during the conflict between Jogja and Jakarta (central government) a few months ago. This year’s UWRF was not only confined to locations in Ubud, but also in Denpasar at Serambi Arts Antida with music and poetry performances, and literary discussions at Danes Art Veranda. Get ready for the ninth UWRF!

he culinary spectrum of Bali is growing ever more diverse, particularly at the epicurean end of things, where French, Italian and Japanese cuisines are well represented by a select group of high-end eateries. Flying the flag for serious Turkish cuisine, Petitenget’s Tulip restaurant and lounge joins the island’s elite list of restaurants that provide quality service, tasteful décor, and above all amazingly good food created by passionate people. If you’re after a greasy doner, you’ve come to the wrong place.Tulip serves up the freshest and finest authentic Turkish food this side of Istanbul for lunch and dinner, with a vast array of meze tasters sitting alongside both vegetarian and carnivorous mains - not to mention devilish desserts and an impressive wine list. Once past the ample car parking area in front (don’tcha just hate having to park on the street around Seminyak?), the restaurant opens out on to a breezy garden area with two large lilly ponds either side of a raised walkway to the back. A large bar runs down the right side, with classically elegant wooden chairs and tables scattered throughout. Being so far back from the road, the overall ambience is pleasingly chilled out, with the muted sounds of classic jazz spilling lazily out of the speakers. Currently playing host to family from home, I decide to bring along the rabble to help me out with things. Lucky I did to, as the meze tray selection of no less than 17 different Turkish style tapas certainly plays well to a crowd. Every single one looks suitably tempting, but we manage to exercise a bit of restraint and pick out the hummous, haydari, circassain chicken, kopoglu and muammara, along with a bowl of freshly baked ciabatta and Turkish puff bread. To round off the starters, we order up a couple of Turkish pizzas, namely the kasarli and sucuku pide, and lahmacun (30k+), which I’m reliably informed was around long before the Italians started smearing tomatoes onto flat bits of bread... I could quite easily graze on this kind of food all day, but it’s time for the mains, which come in the form of the steamed barramundi (90k+), and the Tulip signature dish of kuzu guvec (140k+). Although the tender white barramundi is nothing less than mouthwatering, it’s the seven hours slow cooked lamb and vegetables of the signature dish that is the clear crowd pleaser. A Mediterranean salad (40k+) rounds off the mains. Despite being just three months in town, Tulip has already made a name for itself with its dessert list, and so without too much persuasion, I’m convinced that we should put this reputation to the test, and before long we’re crossing dessert spoons over a plate of profiteroles (45k+) and the latticed sugar of the spectacular sutlac (35k+). With a lounge areas complete with sofas and shishas on the way and late night snacks available on Saturdays, the future looks assured for this new addition to Petitenget’s fine dining scene. A NOT SO NEW FACE ON THE STREET

Scott Matthews is no new-comer to the competitive world of Bali kitchens, and has already done the hard yards in some of the best restaurants the island has to offer. He’s now behind the wheel of a new restaurant, Bistro Batu Kali on busy Jalan Laksmana - better known as ‘Eats Street’. The Beat booked a table to catch up with an old friend.

How did you first get involved in cooking? I started when I was 14, cooking for cafes and restaurants in Adelaide, South Australia then moved to the Sunshine Coast, Queensland and worked for restaurants and a hotel there. Then I made the move to Bali. You have already been on the island quite a while, how did you first come to be here? I’ve been in Bali 10 years now, and pretty much started like everyone else. I came on a holiday and never went back, and have never looked back since. Where have you cooked before in Bali? There’s been a bunch of places; Kudeta, Rumours, Bali Garden Hotel, and now of course Bistro Batu Kali here on Eats Street. And what did you learn from all that experience? Kudeta was a beautiful place to work, great restaurant, but it was the time of the first bomb so I wasn’t there too long. I then met the owner of Rumours when they were starting that restaurant and with a team of people we opened it up. The concept at Rumours was pretty simple; good food with great prices and a really cool place to be. At Bali Garden I helped to open the boardwalk restaurant, which is a stunning little known place on the beach in Tuban where I learnt how to manage all aspects of a restaurant. Now I’m with Batu Kali and I’m really passionate about my job. I love waking up and cooking there, trying to improve my skills but always giving great value. What kind of food are you serving at Bistro Batu Kali? I would probably say Modern Australian cuisine. My favourites are the duck confit, barramundi and I always love cooking and making my desserts. Every month we have a three course set menu for 99k where I like to play around a lot with new ideas. How is it running a restaurant on busy ‘Eats Street’? Great! Always run into interesting people and always good to catch up with old friends. What do you see in the future for Bistro Batu Kali? I would like Bistro to be known for really good food at amazing prices in a great atmosphere where the level of personal service is always there.

Resident Evil 5 The grandaddy of survival horror videogames, the fifth edition of the Resident Evil series sees the return of Chris Redfield in a zombie infested Africa. Accompanied by new eye candy Sheva Alomar, the two go around capping the ‘Majini’ (parasite infected zombies) who don’t just try to bite you but attack you with spears, guns and an assortment of other weapons. Aiming for the head is not always 100% effective so you’ll need to get trigger happy, but don’t worry as there’s plenty of ammo lying around.

Dead Rising 2 The sequel to the 360’s zombie slaying cult classic, this action-adventure-horror-comedy allows you to create unusual weapons to vanquish the living dead. This time you play protagonist Chuck Greene as he fights off hordes of zombies, all the while trying to find a cure for his zombie infected daughter and save a few people while he’s at it. As mentioned before some of the unique weapons you can create in the game include the ‘Hail Mary’ hand grenade duct taped to a football, the ‘Dynameat’ - a stick of dynamite duct stuck to a piece of meat, and our favourite, the ‘Paddlesaw’ - two chainsaws taped to the business ends of a kayak paddle. Tasty.

Red Dead Redemption: Undead Nightmare Fans of westerns and zombies get the best of both worlds with this title, as the hit Red Dead Redemption is given a zombie apocalypse makeover. Once again taking the role of John Marston, players scour the American wild west looking for a cure and cause of the zombie plague while busting the undead at the same time of course. Not only shooting down zombies, you’ll also come across mythical creatures such as Sasquatch, Chupacabra and a unicorn. Open world zombie killing in the wild west, what more could you ask for?

his erstwhile Spicegirl has been a little off the radar of late, but that’s not to say Sporty Spice is out of ideas. Her last offering ‘Northern Star’ was well received, and this follow up is a solid effort that has begun to gather momentum in the charts. Musically this album contains nothing surprising, but there are plenty of fans out there who will lap this polished pop up. ‘One By One’ is a typically British ditty (think Lily Allen without the swearing), while ‘All About You’ is a nostalgic nod to the pop sounds of the beginning of the noughties. Either way, it’s a refreshing change from the slew of Lady Gaga impersonators. Good to see Mel C on her own ground.

he thrash metal movement never really died out, largely thanks to bands like this one. The Huddersfield four-piece are now spearheading the revival movement in shining form. They grind like an 80’s metal band with their raw sound. ‘Descent Into Madness’ is perhaps the most hardcore melody on the album, yet somehow is also the most accessible. ‘Origin Of Oblivion’ is such original thrash that it verges on the territory of Megadeth more than a few times. Thrash fans won’t care about any of this though, they’ll be buying this in their droves.

Has Been Mr. V is a DJ who grew up in the 80’s and has always followed the development of music, getting inspired by various genres from house, hip hop, latin, garage, disco classic, RnB and even jazz. His talents were founded by dance music legend DJ Louie Vega, and with the skills he had gained, earned the trust of his master to give him the reigns to the renowned music label ‘Masters at Work’. From there Mr. V often shared the limelight with his mentor and showed a more eclectic characteristic compared to Louie Vega. In 2001, Mr. V decided to start up his own label with partner Alix Alvarez to form ‘Sole Channel Music’. The hits he created under his new found freedom include the 2006 dance floor hit ‘Da Bump’ which was followed up by the track ‘Put Your Drink Down’ in 2007. His multitalented expertise as a DJ, producer and remixer has lead Mr. V to become a respected name in the world of electronic dance music. is Now Sundaze has become a highly anticipated event from Androitz and has even gone global.
