A certain kingdom was situated in an area that did not contain any lakes or rivers. The king, however, had constructed several large reservoirs that could provide water to the kingdom. In order for the people to have water — to drink, bathe and irrigate their farms — once a year, the king would open a gate that would allow water to pour forth for the coming year. There was no limit to how much water the king could provide, but the allotment would take place only once a year. At the beginning of each year, the residents of the kingdom had the opportunity to petition the king for their needs. If a person had a large family, a farm and many animals, he could explain this to the king in his petition. However, it was not as simple as asking and then receiving. The king kept extremely accurate ledgers that contained accounts of exactly how each resident had used the allotment they had been given the previous year, down to the last drop. If a person had not used their full allotment, and certainly if they’d wasted their precious water, they could not expect the king to be as generous. And, naturally, if a person dishonored the king, he could not expect to be rewarded with generous amounts of water. The people of the kingdom who were wise and good would come to the king at the beginning of each year and coronate their king anew, hum-

bly declaring the king’s greatness. They would then petition the king to be remembered generously and receive a good allotment for the coming year. Hashem is our King, and each year on Rosh Hashanah when we again crown Him our King, we stand before Him in judgment and ask to be inscribed in the Sefer Hachaim — the Book of Life. The question that is asked is: What did we do with the life we were granted the past Rosh Hashanah? Did we squander our precious gift, chalilah? Or did we use our time, which is really our life, to bring honor to Hashem? Our deeds from the last year have all been recorded, and this book will be open before Hashem as He passes judgment on us. Nothing is hidden from Him. But Hashem, unlike a human king, l’havdil, allows us to “edit” our ledger of past deeds by means of doing teshuvah. And if we do complete teshuvah, we have the opportunity to not only erase our mistakes, but we can even turn them into merits. Furthermore, when a human king passes judgment, each citizen stands alone before the king and is judged alone, but on Rosh Hashanah, if we stand together in achdus before Hashem, we are judged differently. The Ksav Sofer notes that each one of us alone cannot fulfill all of the 613 mitzvos. There are mitzvos that only a Kohen can do, while there are other mitzvos that only
a Levi could do. Certain mitzvos only apply in certain circumstances, such as the mitzvah of pidyon haben, which only applies to those whose firstborn is a son. When Klal Yisroel joins together in unity, we each have a share in each other’s mitzvos. We see this in this week’s parsha. Parshas Nitzavim begins, “Atem nitzavim hayom kulchem lifnei Hashem… — You are all standing this day before Hashem...” (Devarim 29:9). In chassidus we learn that whenever the Torah refers to a day as “hayom,” it means Rosh Hashanah. By all of us standing together on Rosh Hashanah, we become part of a greater entity than our individual selves. When we achieve achdus, we link our judgment with that of the community’s. What can we do to achieve achdus? The Ksav Sofer states that when we do the ratzon Hashem, we are united as one. The Zichron Aharon states that Klal Yisroel is called Beis Yisroel because we are like a house; just as a house without any of its parts, such as the roof or floors, is not a house, so, too, are we not Beis Yisroel if a single Yid is missing. When we do the ratzon Hashem, we not only achieve achdus, but we fulfill also our mission in this world — after all, it is not enough to merit life, but we must use that life in accordance with the ratzon Hashem. May we all join together b’achdus and be zoche to a kesivah v’chasimah tovah.

New Law Will Require NY Day Care Providers to Create Food Allergy Guidelines Parents of small children with life-threatening food allergies can breathe a little easier now that Governor Andrew Cuomo has signed a new bill that will require schools to create and implement policies to deal with anaphylactic issues. Cuomo signed the legislation, known as Elijah’s Law, on September 12. The bill bears the name of three-yearold Elijah Silvera, who died after being given a grilled cheese sandwich at daycare even though his mother had warned the provider that he had a severe dairy allergy. Under the new law, child care providers will be required to create protocols to prevent allergic reactions and to deal with any allergy-related medical emergencies. "As a father, I know there is no greater fear than something happening to your child — especially when you entrust them to someone else's care," said Cuomo. "I'm proud to sign this measure that will give parents peace of mind and will help ensure daycare workers receive the right training to respond to emergencies and prevent tragedies.”
Kensington Water Main Replacement Work Postponed Until After the Yomim Tovim A Department of Design and Construction plan that would have resulted in water shutoffs, partial street closures and loss of parking spaces in Kensington during the busy yom tov season has been pushed off, thanks to the efforts of local lawmakers. Hamodia reported that the work to excavate and replace existing water mains, prune trees, and install and upgrade fire hydrants was to have begun on or about October 7, which coincides with Erev Yom Kippur. The scheduled work would have affected portions of Seton Place, East 5th Street, Parkville Avenue and McDonald Avenue. Senator Simcha Felder, Councilman Kalman Yeger, Community Board 14 district manager Shawn Campbell and mayoral liaison Pinny Ringel advocated for a scheduling change. As a result, the DDC agreed to postpone the project until after Simchas Torah and refrain from storing any materials on Kensington streets until

the work begins. “It took some time, but I am thankful to the DDC for redirecting their resources and rescheduling the project so that the community can prepare for and enjoy yom tov in peace,” said Felder. “I’m thankful that the city agreed to our request to give us back our streets, a reasonable accommodation for our traffic-congested city,” added Yeger.
Cuomo Backpedals on New Plate Requirements Bowing to pressure from lawmakers and the public after announcing a plan that would require every motorist in the state to replace all license plates that are more than ten years old, Governor Andrew Cuomo has said that he will scrap the controversial plan. Cuomo had announced the plan in August, saying that cashless tolling scanners could not read the old license plates. New plates would have cost motorists $25, and even those who’d keep their old plates would still be required to pay a $20 fee. In a rare display of unity, both Democratic and Republican lawmakers and private citizens all across the state trounced the plan, calling it a money grab, reported The Wall Street Journal. “Bottom line message from the voters to state: NO2PL8FEE,” said Steven Greenberg, a Siena College Research Institute employee, who polled New Yorkers about their thoughts on the new plates. Of the 78 Empire State residents who participated in the Siena poll, 60 percent were against the mandatory replacement, with 75 percent describing the fees as unfair. Cuomo has said he will work with lawmakers to ensure compatibility between license plates and cashless toll scanners.

CHAPTER FOUR Recap: Elisheva realizes that she is now responsible for yet another expense: paying for Miri’s baby’s bris. She feels she is choking from her family’s dire financial situation. In Bratislava, 1942, Theodore, the assistant director of the Lucias Jan Catholic Children’s Home, finds an abandoned Jewish child and manages to convince the anti-Semitic director to let him take him in, assuring his boss that the child will convert to Catholicism. The boy doesn’t seem to know any information about himself, and the director names him Gustav.
“One second. Quiet,” Elisheva said. The family was sitting around the kitchen table in the midst of a rowdy supper with the attendance of the new parents, Miri and Yaakov; Binyamin, who had popped in from yeshivah to get his quilt; the older girls; and fourteen-year-old Shuki. Everyone slowly quieted down and then…Cuckoo! Cuckoo! “It’s the clock again!” Elisheva dashed into the hallway and into the dining room. “Can someone tell me what is going on here? But quietly, please, so the little kids don’t wake up.” “The clock!” Binyamin exclaimed. “Did you decide to invest the money to fix it, Mommy?” She laughed. “Not at all! The clockmaker told us that it would cost a few hundred shekels to repair, so we decided to skip it.” “And you haven’t been here the past few weeks,” Shuki told his older brother. “This is the third time that clock has come to life, out of the blue.” “Fourth,” Miri, the kimpeturin, corrected him. “Yesterday morning, when just the baby and I were alone in the house,
the cuckoo bird popped out and began to chirp.” “You mean, to call,” Riki corrected her. By this time, the cuckoo bird had stopped chirping or calling, so the grammatical nuances were pretty superfluous. The bird receded back into its place, and the little door slammed shut. “Strange,” Elisheva murmured, as she walked back to the kitchen. “The food is getting cold, everyone. And it’s 11:30 already. I would have taken it out earlier and let it air out. I know you don’t like the mothball smell.” “Eh, I’m not as spoiled as I used to be,” her son replied. “I was so cold last night that I had a hard time sleeping.” “You’ve always suffered from the cold,” Tzippy remarked as she scraped the plates. “I don’t even use a thick quilt. I think the only time I used one was when we were kids and we went to Zeidy and Bubby Potolsky in Yerushalayim. It’s really cold there, but I love it like that.” “So it sounds like you’d prefer living in Yerushalayim than in Bnei Brak,” Binyamin said with a chuckle. Tzippy grinned. “When it comes to the weather, yes. In other ways, I’m not sure.” Elisheva went to get the blanket from the top shelf in the bedroom closet. Binyamin knew there was no point in trying to offer to climb the ladder and get it down himself. The perfectly organized closets were exclusively their mother’s domain. “In such a small place, I need to keep track of what’s going on all the time,” she would say. And the kids never stopped marveling at how much their mother was able to store in just one closet. “Now seriously, where are you going to live?” Binyamin asked his sister quietly. Tzippy turned on the water. “I don’t know,” she said, after a minute. “Not in Bnei Brak or Yerushalayim. I can start with renting in Pardes Katz, like Miri did, but I can also try from the start to settle someplace where I have a better chance of staying long-term. Maybe Yerucham or Rechasim… I dunno... one of the cheap places. Not that I know much about these things.” “Cheap places,” her brother

The teacher said to come and tell you.” The director and Theodore both stood up at once. “What does that mean, he’s not here?” Theodore asked. “He’s not in class, and he’s not in his bedroom or in any other room, nor in the dining room or in the yard.” The director muttered something under his breath while Theodore ran to the office door. He looked right, then left, and then strode down the corridor. Janko ran after him. As they approached the gate, they found it ajar. “Who saw him last, before the lesson?” Theodore asked the boy. “No one.” “No one! And who saw him at breakfast?” “No one.” “And who saw him when you got up this morning?” “All of the children.” “Aha,” Theodore said, and shaded his eyes with his hand to look out toward the fields — those same fields that, until a short time ago,

Gustav would stand and stare at, night after night. After Edo had arrived, for some reason, his nocturnal outings had dwindled, until they’d stopped completely. “So he slipped out after he got dressed this morning... Tell me, Janko, over the last few weeks, when you played in the yard, did you notice Gustav talking with any stranger?” The child frowned, clearly puzzled. “No.” “No one passed by the gate? You didn’t see Gustav hanging around near the wall? Or near the main entrance?” “No.” Theodore turned toward the main entrance, around the other side of the building. Again, Janko ran after him, but they were not the only ones. The teacher and seven other students were also there. “What’s going on?” Theodore asked. “That’s the issue; nothing’s going on.” The teacher looked at him. “The boy didn’t turn up for class. When I sent someone to look for him, and began to delve a bit deeper into the matter —” “You discovered that he’s been missing since the morning.” “Since the morning?” the teacher gasped. “Yes. But before we give up, let’s just do one last search of the whole property. Not that I believe he’s here, but...” Theodore Heinke was right. Gustav wasn’t anywhere on the grounds of the orphanage. “He went back to his people, the Jews,” the director said when he heard the results of the search. “Very good. You wouldn’t have been able to raise him here as a faithful Catholic anyway, not when our Slovakia is becoming just another little crumb in the Soviet Union.” “I am capable of a whole lot, just so you know,” Theodore said churlishly. “And this whole thing is getting me annoyed. Very, very annoyed.” He looked out the window. The sun was beginning to dip on the horizon of the fields when he saw a small figure running up the wind-
ing path that cut through the fields. “So you’re back, Gustav.” Theodore opened his arms in greeting, but the boy slipped out of his grasp and walked away, his head lowered. “Did you meet anyone interesting?” “No one,” the boy murmured. Then he suddenly shouted at Theodore. “She didn’t come back, Edo’s mother! And neither did my mother! He and I are both left with no one in the world!” “That’s not true,” Theodore said. “You have me.” The boy didn’t respond; he didn’t even look at him. “There were lots of people in the street, and I walked for a long time, but not a single woman approached to tell me she was my mother or Edo’s mother. Finally, one man asked me why I was walking around all day and where I lived, and when I told him that I was looking for my mother who disappeared during the war, he started asking me lots of questions, until I got fed up and ran back here.” He collapsed onto the grass, his heels digging into the loose earth, and began to kick his feet. A shadow suddenly fell over him. The director was standing behind him. “Listen, boy,” he hissed, ignoring Theodore’s looks, “and listen well. You are a little ingrate, that’s what you are. You wail day and night, and disappear without permission — and that is something I will not tolerate in our orphanage, do you hear? The next time you try it, you’ll find yourself outside, with all of your Jewish brothers — for good. And even before that, you’ll be getting some well-deserved wallops from me.” “Never.” Theodore’s lips formed the word soundlessly. Farash sounded so decisive now that he could not overtly contradict him, but it was a good thing that Farash was the one who was good at talking, while he was the action-oriented one. Bill de Blasio Withdraws From Presidential Primary Race BACKGROUND: On Friday, New York Mayor Bill de Blasio announced that he was dropping out of the Democratic presidential race. De Blasio entered the race in May, later than most other candidates, and failed to gain traction and support. As mayor of New York, he has been a champion of progressive causes.

He increased the minimum wage for city workers, required employers to pay sick leave for their employees, and provided generous funding for Pre-K and after-school programs. However, De Blasio remains an unpopular mayor and is unpopular with the Democratic base, as well. According to the Siena College Research Institute, 57 percent of registered New York voters and 54 percent of registered Democratic voters have a negative view of De Blasio. Whistleblower Allegations Rock Washington BACKGROUND: On Friday, The Washington Post broke
a story that an unnamed whistleblower expressed concern over discussions that President Trump had with a foreign leader. The conversation apparently took place by phone and included a promise given by President Trump that was of grave concern to the whistleblower. It is alleged that President Trump sought to pressure Ukrainian President Volodymyr Zelensky into investigating possible corruption by Joe Biden and his son Hunter. Trump has long claimed that Biden improperly urged the Ukrainian government to fire then– Ukrainian Prosecutor General Viktor Shokin. Shokin was in the middle of investigating the Burisma Group, a large Ukrainian gas company where Biden’s son sat as a member of the board. Trump has never provided evidence for this claim of wrongdoing, but according to reports, has brought up the issue numerous times
WHY IT MATTERS FOR TRUMP: Should it be established that Trump sought foreign interference for domestic political gain, calls for his impeachment will grow louder. House Intelligence Committee Chairman Adam Shiff (D-CA) is on record saying that if these allegations are proven, “Impeachment may be the only remedy.” Speaker of the House Nancy Pelosi (D-CA) said that if the administration persists in blocking the release of the whistleblower report, “they will be entering a grave new chapter of lawlessness, which will take us into a whole new stage of investigation.” Former Republican Presidential nominee and current Utah Senator Mitt Romney (R-UT) called the allegations “troubling in the extreme.” In all likelihood, these allegations will not result in impeachment. However, it may cause real damage to Trump and his aspirations for a second term. WHY IT MATTERS FOR BIDEN: Biden will seek to use the issue to portray Trump as a corrupt individual and as one who has a total disregard for the law. However, it may not be in Biden’s best interest to have the national spotlight on his son’s actions in the Ukraine. It may also not be beneficial for him to focus on his past interactions with the Ukrainian government. Biden may find himself falling into a trap where Trump can paint him with the same brush that he painted Hillary Clinton. Biden may find himself fighting off allegations of being a corrupt self-dealing Washington insider who is past his prime.

Pomegranate Molasses I was always fascinated by the concept of pomegranate molasses. I’ve come across many recipes that call for it, but I’ve never found a jar with a heimishe hechsher. When it was time to plan for Rosh Hashanah, I had the urge to finally make my own, and that is when I discovered the wonder that is homemade pomegranate molasses. Don’t use store-bought pomegranate juice; it’s worth breaking open your own fresh pomegranates, juicing them and reducing the juice until you are left with a decadent syrup that you will want to use in all of your cooking. The molasses is also great on the dessert plate, drizzled over ice cream.
INGREDIENTS Seeds of 5 pomegranates Juice of one lemon ½ cup + 2 T. sugar
DIRECTIONS 1. Add seeds to a food processor and pulse until all the flesh is removed from the seeds, but the seeds are still whole. Pour through a strainer into a container. The pulp will be rather thick, so use the back of a spoon to press the pulp against the strainer. 2. Pour the juice into a pot with the lemon juice and sugar. Bring to a boil over medium-high heat. Turn heat down to a gentle simmer and allow the syrup to reduce. After approximately 45 minutes, reduce the heat to very low and cook for a few more minutes, until the mixture coats the back of a spoon. 3. Allow to cool and pour into a jar. The molasses will thicken as it cools. Store in the fridge for up to six months.

Pomegranate Chicken With Toasted Pine Nuts I used a Pyrex dish for baking this recipe, as it transmits heat faster. If using an aluminum pan, adjust the baking time accordingly.
INGREDIENTS 8 chicken bottoms
Juice of one lemon
3 T. olive oil, divided
1 small onion, finely chopped
Salt, pepper and cumin to taste
3 garlic cloves, minced
½ cup pomegranate molasses
1 tsp. cornstarch
⅓ cup pomegranate juice
½ cup pine nuts
¼ cup honey
DIRECTIONS 1. Add 1 tablespoon olive oil to a pan, and set over medium-low heat. Add pine nuts. Toast nuts until golden, about 3 minutes, tossing often. Season with salt and set aside. 2. Season chicken generously with salt, pepper and cumin. Wipe out the pan and add remaining 2 tablespoons olive oil. Raise heat to medium-high, and sear chicken on both sides until golden-brown. (It’s best to use tongs, as the oil will splatter.) 3. Remove the chicken from the pan. Add onions into the same pan, and saute for three minutes. Add garlic and cook until fragrant, about 30 seconds. 4. In a bowl, mix molasses, pomegranate juice, honey and lemon juice, and add to pan. Bring to a rapid simmer. Combine cornstarch with water, and add to the pan. Reduce heat and simmer the sauce, stirring occasionally, until thickened. 5. Place chicken in a Pyrex baking dish and top with three-quarters of the sauce. Cover and bake for 50 minutes. Uncover and bake for an additional 10 minutes. Drizzle with reserved sauce and top with toasted pine nuts. Note: Despite their name, pine nuts are generally considered a seed. Therefore, those who refrain from eating nuts on Rosh Hashanah can use this recipe — or, alternatively, use a different seed.

The moonwalk bounced about like a gelatinous blob, dancing not to the beat of the music blaring in the background, but to the rhythm of the tiny feet that banged upon it. Giggles punctuated the air as the children experienced the momentary thrill of flight, but for beekeeper Joe Romance, this was no laughing matter. A new “beekeeper” had moved to town, and when Joe’s friend had gone to welcome them, he’d noticed pallets used to haul beehives — and they looked remarkably similar to the ones Joe owned. Ones that had gone missing together with a load of bees... Pretending to be yet another welcoming neighbor, Joe arrived at the property and found a party in full swing. While smiling adults loaded their plates with food, the newly arrived Joe stared into the flames of the party’s bonfire and saw red. There, just as his friend had told him, were his bee pallets — evidence being destroyed.

WHEN BLACK AND YELLOW EQUALS GOLD There are nearly 20,000 types of bees, but only the European honey bee has been domesticated enough to serve our needs.
Beekeepers like Joe are under extreme stress these days, expending tremendous energy to guard their colonies against bee rustlers who unscrupulously swoop in and swipe bees and their boxes when no one is watching. While Joe is one of the lucky ones, having been able to retrieve his bees once law enforcement became involved after the tip-off, hundreds of beekeepers in America each year rue the loss of their colonies. Many of the thefts occur in January, February and March, a time when millions of bees from all over the world are trucked in to Central Valley, California, home to more than half of the fruits, nuts and vegetables that are grown in the United States. It is there that almond groves spread as far as the eye can see, awaiting pollination from the hardworking bees. Historically, the keeping of bees was rewarded with deep satisfaction but scant cash. With time, however, the value of pollinator bees spiked dramatically upward, due to the com-

bination of greatly increased demand for pollinating services and the sudden, mysterious deaths and disappearance of a large percentage of bees worldwide. Back in the 1960s, renting a hive would cost only $3 or $4 per pollinating season. Now, a single hive goes for around $350. For bee thieves, snatching a few hives is a quick way to earn cash. To that end, bee hive “chop shops” have been discovered, where boxes of hives bearing the original owners’ identifying marks are sanded away and painted over. The bees are then rented out or sold to unsuspecting farmers and other beekeepers. During peak pollinating season, the hotels near the almond groves are stuffed to the brim, and with so many apiarists converged on the valley, it is hard to know who is a legitimate bee-raiser and who’s renting out someone else’s stolen bees. To complicate matters, bee thefts are almost always “inside jobs,” as few novices have the know-how to transport bees without suffering injury. Nabbing a colony takes intimate knowledge of how bees behave, as well as special tools to transport the hives. So even
as the beekeepers sit together in the hotels and restaurants, they warily eye one another, not knowing who is friend and who is foe.
BEE BURGLARIES BEYOND OUR BORDERS It’s not just America that has a problem with bee burgaries. All over the world, the European honey bee is disappearing. The most domesticated and useful bee to man, both for its ability to make honey and pollinate, the European honey bee is a prized possession — one that many an unscrupulous bee handler seeks to get his hands on. Over in New Zealand, honey bees are in particular danger of being swiped. That’s due to the recent craze over manuka honey, which is honey produced by bees who collect the nectar of the manuka bush, native to New Zealand. This particular type of honey is touted as having antibacterial and antiinflammatory properties. Prices average at around $30 a cup, but can go even higher than $100 for 8 ounces. The threat looms so large that many New Zealand beekeepers have begun attaching expensive GPSs to their bee boxes — but the bee thieves, too, are progressively becoming smarter. They’ll often leave the box in place and just remove the honeycombs and the bees themselves, transferring them into their own ready boxes. For this reason, pressure-sensing technology that should alert beekeepers to the boxes being taken has also failed. How jarring it must for a beekeeper to arrive at his field and not hear the distinctive buzzing coming from those once-full boxes! One audacious theft in Quebec, Canada, left an apiary bereft of 180 hives, which were worth about $200,000. Only a few months later, a smaller-scale operation landed bee burglars with some of the most valuable bees in the world. Though they had only nabbed thirty hives, four of them had been part of a $7.1 million research project to produce disease-resistant bees.

Bees have many issues to contend with, starting with beespecific viruses and fungi, and continuing with the varroa mite that latches onto a bee and continuously feeds off its blood. Varroa mites are huge compared to the size of the bee’s body, and their parasitic qualities not only drain the bee of blood, but also serve to introduce viruses into the insect. countries, but in that fateful year, the menacing mite of miniscule proportions crossed the border and began attacking bees in North America. Monoculture, too, is a concern of epic proportions. Instead of planting multiple types of crops in smaller patches, today’s farmers have monopolized on specific crops, planting them year after year over large stretches of land. The Central Valley almonds are but one example. Due to the high gain almonds bring in, many farmers have ripped out their crops of other species and devoted their fields solely to almond trees. California now supplies more than 80 percent of the world’s almonds. While the gains of monoculture farming are great for farmers, continually planting the same crops on large patches of land negatively affects the environment. Soil becomes severely depleted of nutrients, causing farmers to rely on chemical fertilizers to help their plants grow. Additionally, nonvaried, repetitious crop planting aids in pest proliferation, pushing farmers to use pesticides to eliminate destructive critters, and fungicides to prevent fungal infections from destroying crops. One very troubling aspect of

this is that pesticides and fungicides are often being sprayed before bees are brought to pollinate the crops, causing the bees to be exposed to these chemicals, as well. Some of these pesticides have been shown to neurologically affect the bees, causing them to become confused and disoriented, unable to find their way back to their hives. Though “bee-safe” pesticides exist, studies are now revealing that though adult bees may not be drastically and immediately affected by the pesticides, the pupae may be. When fungicides and pesticides are both sprayed on one crop, bee colony mortality rates have been noted to rise. Monoculture farming presents another difficulty: Reduction of varied flora creates a “food desert” for varied fauna, which means a reduction of natural pollinators, such as native bees, moths and butterflies. For this reason, most of the nation’s domesticated bees must be trucked in at the beginning of each season to do what they do best: pollinate. The season usually begins in the almond groves, after which the rented bees move up north to Oregon and Washington to pollinate apples, berries and peaches. Then they get trans-
ported to avocado farms and cranberry farms and so on and so forth. Most living beings find the nomadic lifestyle to be stressful; it is suggested that bees do as well. With so many issues impacting the bees’ health in present times, is it any wonder that bees are dropping like flies? As bee researcher Marva Spivak puts it, “I don't know what it feels like to a bee to have a big, bloodsucking parasite running around on it, and I don't know what it feels like to a bee to have a virus, but I do know what it feels like when I have a virus... and I know how difficult it is for me to get to the grocery store to get good nutrition. “But what if I lived in a food desert? And what if I had to travel a long distance to get to the grocery store, and I finally got my weak body out there, and I consumed, in my food, enough of a pesticide, a neurotoxin, that I couldn't find my way home? ...This is what we mean by multiple and interacting causes of death.” Bee immunologist Noah Wilson-Rich has spent years working on ways to keep bees healthy. In an effort to combat the things that make them sick and run-down, Wilson-Rich has experimented with feeding his bees probiotics and giving them oral vaccines. He’s also discovered that contrary to what we may imagine, urbandwelling bees are actually healthier than country bumpkin bees. That’s because with monoculture farming, urban areas actually have greater plant diversity, causing the bees to consume a more varied diet. Despite his, and other scientists’ findings, the natural and commercial bee population continues to struggle. And that is cause for concern.
A WORLD WITHOUT BEES Before we can begin to understand why multimillion-dollar research projects are being launched on behalf of bees, we must imagine a world without bees. Bee advocates point out that nearly every third bite a person takes, on average, is partially due to worker bees’ efforts. From the obvious, honey, to the many different fruits and vegetables we consume, bees play a role in production. Livestock, too, consume crops pollinated by bees. In some areas of the world where bees are scarce, pollination must happen by hand. Farmers will visit each individual plant and pollinate it themselves. This is incredibly time-consuming and costly, and the yield is low if there are not enough workers or the window for pollination is missed by even a day. Bees truly are a vital part of the food chain, hard at work on our behalf.
MORE TO THE SIMAN THAN MEETS THE EYE? This yom tov season, as we dip our apples and challah in honey, we might imagine that perhaps there are secrets to this siman that our sages surely knew. It is not sugar-water or date syrup that adorn our tables, but the product of the humble bee. Perhaps honey was chosen as a siman of sweetness because it truly represents the blessings of economic stability, physical safety, food in abundance, and a world filled with beautiful surroundings. May we all bentched with a honey-sweet new year.
THE NOT-SOSWEET HONEY SCAM With the domesticated bee population more difficult and costly to maintain than ever before, and with a historically low output combined with a historically high demand, honey prices are continually on the rise. To this end, some scammers have been caught selling fake honey — stuff that looks like but isn’t the real deal. Here are some tips to ensure your honey was actually made by bees.
REAL HONEY: • Should have a subtle scent of flowers • Should be thick • Should leave no aftertaste • Should feel silky between the fingers • Should sink to the bottom of a glass of water; fake honey will dissolve • Should not absorb into a paper towel or napkin; fake honey will • Should cause bread to become crunchy after a few minutes of having honey spread on top; fake honey will cause bread to become soggy

Presently, Hashem was assembling the letters into the most beautiful of words. Reb Yisroel of Ruzhin, zy”a, commented that mentioning the Berditchiver, the “Advocate of Klal Yisroel,” is a segulah for sweetening one’s judgment. Many have the minhag to mention stories, facts or even merely the name “Berditchev” on Rosh Hashanah.

As we approach the new year, we are not renewing our contract or refilling a library card. One must not think: “My home, my children, good health — I have it all already. All I ask is that You help them continue to grow and improve this year!” Instead, we must come toward Rosh Hashanah like a poor man. We must view ourselves as though we have nothing. Our plate is empty, waiting to be filled with our newly decreed fortune. The same holds true of misfortunes. Let’s daven and hope that any difficulties of 5779 be left behind and only good return in its place.
DAY 3: Tzom Gedalya ][מ"ב–נ"ט
Hakadosh Baruch Hu and the neshamah are likened to magnet and metal, the Ramchal explains in Mesillas Yesharim. There is a natural attraction. However, if the two are distanced, it is impossible for them to be magnetized. During the yemei ratzon of Elul and the Yomim Noraim, Hashem bends low toward us, allowing us to be attracted to Him, full force.

As a woman, you may be wondering, “How much am I obligated to daven during the Yomim Noraim?” Picture yourself standing at the entrance to a vast treasure house, facing the gold and glitter, the diamonds and jewels. You are told: “Everything is up for grabs! Take as much as you would like, before your time is up.” Do you think you will ask, “How much am I obligated to gather?” In these powerful days, let us rephrase the question: “How much will I be zoche to grab before the gates are closed?!”
Once, a distinguished man approached Rav Yisroel Salanter, zt”l, with a halachic shailah. After answering, Reb Yisroel let out a deep sigh. He later explained that while answering the man, he noticed that his sleeve was torn. Reb Yisroel was embarrassed. But then he thought to himself, “If this is how I feel about a tear on my shirt, how will I feel about the tears and stains on my neshamah when I reach Olam Haba?!” And that is why he sighed.

During the Aseres Yemei Teshuvah, we add “Shir hamaalos mimaamakim” to our davening (Tehillim 130). From the depth of our being, we cry out to Hashem. Why should Hakadosh Baruch Hu change the course of nature and grant our requests just because we ask? The Baal Shem Tov explained that there is a stream of bracha awaiting every Yid. Sometimes, his negative behavior blocks or reduces the flow. By davening from deep inside, the person changes himself, thus enabling the torrent of bracha to continue flowing his way.

Rav Yisroel Salanter, zt”l, shared that when he was young, he thought he could change the world. He soon realized that it was impossible, but remained determined to change the people of his community. When even this proved beyond reach, Reb Yisroel hoped to at least improve the behaviors of his family members. In his later years, he noted that it was difficult enough to change himself. But, interestingly, as he worked on himself, he noticed that the members of his family and community were inspired to change too! “If you wish to change the world, focus on refining yourself first!” he concluded.

Before Yom Kippur, pushkahs and plates are put out in many shuls for various tzedakah causes. One of the mispallelim in the Baal Shem Tov’s shul was disturbed by the constant clatter of the coins and complained that it was disturbing the davening. “Perhaps this minhag should be abolished,” he suggested. “Chas v’shalom!” the Baal Shem Tov replied. “It is the very clanging of these coins that brings us the yeshuah! It confuses the Satan, who is trying to convince Hashem that we are unworthy of being forgiven.”
A Holocaust survivor reminisced about Erev Yom Hakadosh in Hungary. “When I was five or six years old, I went to eat the seudas hamafsekes with my grandmother. The bubba wept openly in awe of the holy day about to arrive. I watched her and caught on. I cried and cried, not knowing exactly why, but innately feeling the seriousness of it all.” A simple woman, simple tears. A reflection of the kedushah and significance palpable in the air.

With bated breath, Klal Yisroel waited to see the Kohen Gadol return from the Kodesh Hakodashim. When he appeared, they erupted in an outburst of joy and accompanied the Kohen Gadol all the way to his home. “Emes mah nehedar!” The Kohen Gadol’s exultant emergence proved that their teshuvah was accepted on High. The Tana D’vei Eliyahu describes how Hashem calls out joyously to the mountains and valleys on this auspicious day: “Come be happy with Me, because today, I am mochel the aveiros of My children!” May we be zoche to exchange our avodah of tefillah for the avodah in the Beis Hamikdash, and be granted complete kapparah!

Growing up in America, my memories of Rosh Hashanah are comprised of raisin challah, apple wedges dipped in honey, fish heads, pomegranates and tzimmes. Up until recently, I was under the impression that the simanim largely practiced in Eretz Yisroel were more of minhagei Eretz Yisroel than anything else. Then I was surprised to discover that that’s just not the case. Dates, gourds and black-eyed peas are actually the original minhagim, predating the well-known custom of dipping apples in honey by centuries. For the purpose of understanding the progression of the minhagim of simanim, I have listed the individual simanim in chronological order, with the earliest simanim listed first and the most recent additions last. However, this is not the order that most machzorim use. The Yehi Ratzon for tapuach bidvash is traditionally listed first, though many will make the Ha’eitz on a date first since it is one of the shivas haminim. The source for the minhag of simanim is based on a Gemara (Krisus 6a). “Abaye taught: Now that you have said an omen is significant, at the beginning of the year each person should habituate himself to eat kara, rubya, karti, silka and tamari.”1 Note: The nusach of the Yehi Ratzons are from Machzor Yesod Hamalchus. Kara
Kara refers to the gourd family, as is mentioned in Teshuvas Rav Hai Goan Otzar Hageonim Rosh Hashanah, siman 92, amud 52. However, it is not clear exactly which gourd kara refers to. Many are noheg to use either pumpkin or a zucchini-like gourd. The word kara is basically a homonym of both the words yikara (will be torn up) and yikaru (will call out). Kara is similar to zucchini, but with a firmer texture and a more watery flavor. While kara can be cubed and boiled in water until soft, after which it gets strained and then caramelized with sugar, I prefer to observe this minhag by adding a shredded kara to a zucchini kugel recipe.

Rubya
Lubya, which is Arabic for black-eyed peas, is commonly eaten for rubya. The Aramaic word rubya recalls the Hebrew word yirbu, which means “may they increase.” Black-eyed peas can be served in a tasty tomato sauce, similar to baked beans.
Carrots During the 17th century, the Magen Avraham said that one could eat any food whose name indicates many, and so the minhag of eating carrots, mehren in Yiddish, developed. Therefore, the Yehi Ratzon said on black-eyed peas can be said on carrots as well.

Karsi
In Eretz Yisroel, karsi is generally understood to be leeks; however, the Artscroll Machzor says that cabbage may be used for karsi as well. The Yerushalmi minhag is to prepare leek patties for karsi. The Aramaic word karsi recalls the Hebrew word kareis, which is the reason we ask that our enemies be destroyed in the Yehi Ratzon.
Leek Patties Yields 25 medium-sized patties 2 lb. leeks 2 eggs ¾ cup matzah meal 1½ tsp. salt ½ tsp. black pepper Oil Sautéed onions, optional
1. Check leeks. Cut each leek open lengthwise, separate into individual leaves and rinse. 2. Dice and sauté leeks until lightly browned. 3. Place sautéed leeks into a mixing bowl with the eggs, matzah meal, salt and pepper. Mix and form into patties. Fry in oil until browned.

Silka
Silka is generally considered to be mangold (otherwise known as Swiss chard or beet leaves). Some people substitute silka with spinach. Beet leaves make a delicious patty.
Beet Leaf Patties Yields 25 medium-sized patties 3 packages greenhouse-grown beet leaves Oil 2 eggs 1½ tsp. salt ½ tsp. black pepper Matzah meal 1. Soak the beet leaves in soapy water and rinse each leaf individually. 2. Steam the leaves in a bit of oil and water until soft. Strain and grind in a food processor. 3. Add eggs, salt and pepper. Slowly add the matzah meal, until the batter is firm enough to form patties. Wet hands and shape into patties. Fry until browned. Note: Rebbetzin Auerbach recommends shaping the leek patties and beet leaf patties into different shapes so they will be easily distinguishable.

Out of this minhag developed another custom (most likely in the 15th century): to dip challah in honey instead of salt.

Head
The mekor for using honey on Rosh Hashanah dates back to the era of the Geonim. It is based on a pasuk in sefer Nechemiah (8:10) in which Ezra and Nechemiah told the Jewish people not to be sad on Rosh Hashanah and exhorted them to enjoy rich foods and sweet drinks. The Machzor Vitry — completed in the year 1208 and authored by a talmid of Rashi, Rabbeinu Simcha ben Shmuel of Vitry — mentions that for this reason the Jews of Northern France developed the minhag of eating red apples on Rosh Hashanah. Only later, during the Middle Ages, did Ashkenazi Jews combine the minhagim of eating honey and eating apples by dipping the apple in honey, as is mentioned in the Tur.

The minhag of eating a sheep’s head on Rosh Hashanah dates back to the era of the Geonim and is also mentioned in the Machzor Vitry as being practiced by the Jews of Southern France. In 14th-century Spain, the Avudraham wrote that those who find it difficult to purchase a ram’s head should eat a fish’s head, and thus the minhagim of eating fish and eating a head were combined.

It is little wonder that our fear and awe have perhaps weakened through the years, considering the fact that most of us have never seen a king. leader of Egypt and Syria, the Rambam met daily with the man who decided the fate of hundreds of thousands. Though Saladin was known to have a benevolent streak and would frequently allow residents of captured cities to freely escape, he was not by any means shy with the sword. As his armies battled the Crusaders who sought to forcibly convert both Jew and Muslim alike, hundreds of thousands of soldiers were slain under his command. Saladin himself was known to take up the sword in particularly heinous methods of execution. This was the person whom the Rambam reported to on a daily basis. We can only imagine the heaviness of heart that our revered sage must have felt when he approached the palace steps and made his way into the throne room. We can only assume that he whispered prayers under his breath for siyata d’Shmaya with his every word, action and treatment. His every move scrutinized by Saladin and his entourage, a miscalculated step or moment of less-than-enthusiastic

aware that just as he stood before an earthly king on a daily basis, so, too, he stood before the King of all kings. Despite severe fatigue he persevered, leaving behind one of the greatest legacies of all time. As it’s said of the Rambam: “From Moshe to Moshe, there arose none like Moshe.” Though we may never reach the level of servitude that the Rambam had, may we experience just a little of the constant awareness that he was privy to.
TESTING THE HEART Hailed as one of the greatest emperors of all time, Napoleon Bonaparte was the undisputed leader of much of Europe and Egypt during the mid-1800s. Hundreds of thousands of men were slaughtered as his armies conquered each new country, region by region. A complicated character, Napoleon made reforms to each area that fell under his domain and enabled the open practice of Judaism. In many locales, the Jews were finally welcomed beyond the ghetto walls for the very first time. In general, though, Napoleon’s rule was a heavyhanded, totalitarian dominance, and his name was whispered with a combination of dread and delight. The Baal HaTanya, Rabbi Shneur Zalman of Liadi zt”l, saw the unique spiritual danger that Napoleonic regime

presented the Jews. With the fall of the ghetto walls, the great tzaddik realized that although Napoleon appeared to have peaceful intentions toward the Jews, his ultimate goal was to annihilate the ancient traditions of the people. “I will never accept any proposals that will obligate the Jewish people to leave France, because to me the Jews are the same as any other citizen in our country. It takes weakness to chase them out of the country, but it takes strength to assimilate them,” Napoleon proudly boasted, dreaming of the day when the Jews would no longer stand apart from any other group of people in religious distinction. To combat the spiritual destruction planned for the Jews, the Baal HaTanya charged one of his beloved chassidim with a mission to infiltrate Napoleon’s army as a multi-lingual translator. Once accepted within the upper echelons of the French forces, Rabbi Moshe Meisels would be exposed to state secrets, and he would then be able to share those with the Russian army to help them toward victory. Though the Czar at that time presented great physical danger to the Jewish body, the Jewish neshamah was the sole target of Napoleon, and thus life under Russian control was deemed as the safer of the two options. Rabbi Meisels did, in fact, alert the Russians to an at-
tack planned by the French army and saved them the loss of many weapons in an attempt to destroy an arsenal. When the highest commanders of the French army discussed tactics before the attempt on the arsenal, Rabbi Meisels absorbed every detail. Suddenly, in the midst of the meeting, the door burst open with a crash, and every person in the room feared that Russians had invaded camp that very night. Instead, Napoleon himself burst into the room, demanding to know plans. Then he turned upon Rabbi Meisels and scrutinized him, clearly distrustful. “Who is this stranger?” he demanded with a roar, and stretched out his hand, laying it upon the rabbi’s heart, attempting to detect a quickened pulse that would signal the nervousness of a spy. But he felt none, for when he’d first burst in, Rabbi Meisels had told himself to remember the rule of chassidus, that “moach shalit al halev — the brain should rule over the heart.” Despite knowing that human nature is to have a quickened heart rate when standing before an earthly king in judgment — and even more so when truly guilty of the crime suspected — Rabbi Meisels was able to control his physical reaction. That physical reaction, however, should be second nature to us when we contemplate standing before the King of all kings, with our year’s fate hanging in the balance.
TO STAND BEFORE THE KING During the time that Rabbi Moshe Feinstein, zt”l, lived in Russia, he was once seized by the secret police and forced to stand for a long period of time while facing a wall. If he’d move, the agents acting in the name of the Russian monarch said, he’d be killed. Mustering all of his mental and physical prowess, the rabbi held himself as still as possible, focusing only on the mitzvah of V’nishmartem me’od l’nafshosechem. By standing perfectly still for hours, he was saving his own life. The fear was unbelievably powerful, even though the Czar himself was not in the room. It was enough that his emissaries were standing behind Rabbi Feinstein with bared weaponry. Years later, Rabbi Feinstein could still be found standing perfectly still — but this time, the stillness was during the Shemoneh Esrei. The incredible awareness of his life being placed under judgment that he’d felt when forced to stand at attention stayed with him all of his life, and he tried to recreate that fear every time he stood before the Ribono Shel Olam in prayer. For truly, as the Yom Hadin comes upon us, we will be standing before the ultimate Ruler of the universe, supplicating for forgiveness, compassion and a beautiful new year. May we all feel true awe as we stand before Hashem, and may we merit to find favor and sweet judgment as we stand before the true King.

he first year I was privileged enough to carry the title Mommy, I knew I would not be spending Rosh Hashanah in shul the way I had every year until then. I knew that mommies belonged at home, caring for their kids. And I was aware that doing so was in fact a genuine act of coronating our King. I’m taking care of His little, helpless servant, I told myself again and again in preparation for the big day. That’s why I couldn’t figure out why, as I tried to rock my newborn back to sleep early on Rosh Hashanah morning, I was feeling a pit inside my stomach. And it was growing larger. What was Rosh Hashanah without the opportunity to be in shul with my machzor? How could I miss the heartwarming, emotional rendition of the baal tefillah? Having davened in a large shul, one part of the Rosh Hashanah davening that I’d especially anticipated each year was the soul-stirring boom of “Hamelech,” when the entire crowd called out as one, “You are our King!” That rousing call impacted me in a powerful way and instilled such extreme emotions inside of me. How could I miss it this year? Perhaps, I thought suddenly, I did not have to miss it. Before I even realized what I was doing, my baby was dressed in her new sweater, and I was briskly wheeling the carriage down the street. I parked it just outside the shul window and stood nearby. I could catch snippets that told me where the davening was up to, and finally, I heard it. The baal tefillah chanted an introduction, followed by a powerful, “Hamelech,” immediately echoed by the loud roar of the olem. I stood rooted to the spot for a couple of moments, tempted to remain, before making my way home. Finally, I felt energized and uplifted. I was part of this huge mass of servants jointly crowning our Master. I didn’t take the experience,

as short as it was, for granted. This little “luxury” I had indulged in was a treat for my thirsting soul. And unlike the past years, when I had spent Rosh Hashanah in shul, this year I had managed to truly crown our King. What especially invigorated me was that my little boost came at no one’s expense. And later, even as I sat on a chair in my home rather than in shul, my machzor felt more alive than ever. I don’t think a year has passed since then without the topic of “to stay home or go to shul” coming to the table. I’ve heard both sides of the coin: those who believe young mothers should never think of stepping foot inside a shul during their child-rearing years, and those who will never miss a year of sneaking into shul for at least some portion of the day. T summer was drawing to a close, and my winter plans were beginning to materialize. I had plans. Detailed plans. Because after all that lack of routine and non-stop hosting of the summer, a winter break was very welcome. Determined to make it work, we booked our trip for after Sukkos. And then came the days leading up to Rosh Hashanah, and my itinerary was tucked away and replaced by cookbooks and resolution lists and shanah tovah cards. The entire nation was preparing for the day of judgment with trepidation, and so was I. There was so much to have in mind, enough to paralyze us in fear. Just contemplating the media headlines and the Yiddishe tragedies, calamities and misfortunes, was cause enough for anyone to soak through their machzor with unbridled tears. I sat down to compile a comprehensive list of names I wanted to keep in mind during davening. The unemployed, those battling illness, older singles and some couples I knew who were yearning for children — all these and more were on the list that I slipped into my machzor. Then came Rosh Hashanah, and after that, Yom Kippur. Racing against a rapidly emptying hourglass, the congregants of the shul attempted to tap into the waning moments and utilize each second. When the davening was over, everyone went home with tear-streaked faces, crumpled tissues in their machzorim and wishes for a gebentchte year ahead. A zee-

sa, gebentchte yahr. Hashem, though, had very different plans for me. Because in the hecticness of hosting and serving on Sukkos, I discovered a lump on myself, a protuberance that hadn’t been there before. It was that, I feared. The dreaded word. I tried to ignore the lump, but it had become my steady companion, always there whenever I felt for it again, without plans of going anywhere.

The unemployed, those battling illness, older singles and some couples I knew who were yearning for children — all these and more were on the list that I slipped into my machzor. Until the last vestiges of the yomim tovim were stowed away, I didn’t breathe a word to anybody. Only after all the guests were off, some by bus, a few by car and yet others by plane, did I share my dreadful discovery with my husband. And thus began my journey. Instead of navigating the globe, visiting exotic destinations, I traveled for scans and consultations, chemotherapy and radiation. Instead of deciding whether we should stop in Gibraltar or head straight for Rome, I needed to decide if and how to share the news with my children and the very many loved ones in my life. Instead of waving goodbye to my family with promises of souvenirs and goodies, I waved goodbye to any semblance of my usually tip-top home and the sensation of being alive. Instead of joining the many simchos I had been looking forward to attending, I stayed under my covers in a comatose-like sleep, sapped of all energy. Instead of being there for my married and single kids, assisting the younger ones with homework and urging the married ones to take a break and leave their little ones with me, my children were there for me and strangers were there for them. Instead of being my usual giving self and volunteering for important causes, I was now reliant on others, on the receiving end of the many organizations I’d supported in the past. And instead of living the year I’d planned for myself, I was learning that, like all along, my strings were being pulled by the Master Puppeteer. When one is flung into an abyss like this, they can somehow relate to the panicky, white-knuckled passengers stuck on an unstoppable, upside-down roller coaster in yet another amusement park disas-

At first glance, the variety of fruit on display at your local supermarket may seem plentiful. In actuality, nature’s bounty far exceeds the small sampling available. The world is chock-full of the most unusual fruits that are commonplace in their country of origin, but are unique to us. A fruit is classified as exotic if it is considered to be rare and unusual, and is only available at its place of origin or cultivated outside the country. Palates have become more adventurous as well as more demanding over the past few decades. Food trends have increased the popularity of exotic fruits due to the diversity, visual impact and different flavor profiles they offer. For example, the pitahaya’s (or what you probably call dragon fruit) beautiful plate presentation has made it very popular in the United States.
Exotic Facts Most exotic fruits are of tropical origin, and are therefore sensitive to refrigeration and don’t have a long shelf life.
Because of their short shelf life and the distance of their countries of origin, the only way to transport certain fruits overseas is by air, making them very expensive to ship.
Many varieties are infested with bugs and have to be treated before they are allowed into the United States. The mangosteen was not allowed in for a long time because of the fear that they contained the destructive Asian fruit fly.
Although mangoes may still be considered “exotic” in the U.S., they are considered “the king of fruits” in India, China and Latin America and are the number one fruit consumed in the world.
Oxymoron? Common Exotic Fruits Many fruits considered exotic don’t seem so because they’ve been introduced to the U.S. and Europe over 40 years ago. Some examples are mango, papaya, coconut, pomegranate, pineapple, kiwi, passion fruit and even gooseberries.

Eat at Your Own Risk! The ackee or ackee apple is nicknamed “vegetable brain” for its resemblance to one. Only the fruit’s inner, brain-shaped arils are edible. If not eaten properly (only the yellow flesh around the seed is edible), it can lead to vomiting, a coma or even death.
There are about 30 recognized Durio species, with over 300 named varieties in Indonesia, and about a 100 each in Thailand and in Malaysia. Its flesh is like a custard and has a strong almond flavor. It has an extremely intense aroma that can be smelled even with its shell intact. Its strong odor has led it to being banned from hotels and public transportation.
Be careful when consuming lychees. The seeds of this sweet, delicious fruit are toxic, and the fruit can wreak havoc on the digestive system.
Pitanga, aka the Surinam cherry, doesn’t look anything like the cherries we know and isn’t actually a cherry. It should only be eaten when very ripe, because its taste in its unripe state will have you regretting you even thought to eat this fruit.

OddLooking Fruit The name of the rambutan, a fruit that is related to the lychee, is derived from the Malaysian word rambut, which means hairy, and it so named because of the fruit’s hairy appearance. In Vietnam it is called chom chom. Jabuticaba is a most unusual fruit that seems to sprout directly on the bark of the tree, causing the tree to look like it has purple warts. The finger lime is a particularly unusual type of citrus fruit. Finger limes are becoming more popular as a garnish in gourmet food and are referred to as lime caviar. The little bulbs, which burst when chewed, contain juice that tastes similar to lime.

Black eye Peas

Black eye peas are more prone to infestation than most other beans and peas, and their internal infestation is difficult to detect. If three peas in a bag are found to have any sign of infestation, it is recommended that the whole bag not be used. Signs of infestation: A hole in a pea, a dark stain showing through the peel, or small white particles (eggs) on the pea. [Note: Some peas have natural dark spots or blemishes on the outer peel (besides the ‘black eye’ in the center), which are not a sign of internal infestation. Since it’s difficult for the average person to differentiate between the different spots, we recommend not using peas that have any dark spots on the outer peel.] • Put the peas in a pot with an ample amount of water (about 3 times the volume of the peas), bring them to a boil, then turn off the flame, and leave the peas covered for about 3 hours. (Not all infestation can be detected without soaking.) • Spread out a handful of peas on the palm of your hand, and inspect them for signs of infestation. Turn the peas over onto the palm of your other hand, and inspect the other side of the peas as well. All the peas should be checked this way. ~ One may choose to precheck the peas (in the way described above) before soaking. If signs of infestation are found, this will determine that the bag should not be used, without having to go through a lengthy soaking process. Fresh: Fresh dates (that are sold on a twig) are generally not infested. It is advisable to make sure that there are no holes on the outside of the date. [The dates should be removed from the twig before Yom Tov to avoid a שאלהof ]מפרק. Dried: USA grown Medjool dates are generally less infested than other dates (Deglet Noor, etc.). • Each date should be cut open lengthwise, and inspected carefully around the pit. If one sees worms or any signs of infestation (such as brown crumb-like particles), that date should not be used. (The small white particles are sugar crystals, and are not a sign of infestation). • The dates should then be held against a light (or placed on a light box) for a more effective inspection, and to make sure that there are no small dark beetles in the flesh of the dates. ~ Dates from Tunisia and Pakistan have a high infestation rate of scales. It is advisable not to use them at all. Dates from Eretz Yisroel may sometimes have scales on the outer peel. It is advisable to check each date for scales. Fresh: Only high-quality fresh figs should be used. If the indentation on the bottom of the fig is wide open, the fruit should be discarded. If the indentation is naturally completely closed, one should trim it off and cut the fruit in half. Each half should be inverted, (to resemble a yarmulke), and thoroughly inspected. If any worms (maggots) or black specks are seen, the fruit should be discarded. The worms may be similar to the color of the fig. Some experience identifying these insects is necessary for this inspection to be effective. Dried: Dried figs are highly infested and the process of inspection is very difficult. Only someone who has experience checking figs should attempt such an inspection. One who is not an expert may eat dried figs only in the following manner: • Scrape out and discard ALL inner seeds. • Cut out the hole at the bottom of the fig. • Wash the remainder of the fig (the skin) on both sides with water while rubbing it to remove any residue.

White fish: White fish heads are free of concern. Salmon/Baby salmon: Salmon heads [even farm raised] are commonly infested with salmon lice (small brownish parasites ranging in size from approximately 1-3 cm). • The entire gills must be removed. (It may be easier to first cut the head in half before cleaning). • Rinse the head thoroughly with water while rubbing all surfaces of the head (inside and outside), including all cracks, crevices and folds, and under and around the tongue. Inspect the head to make sure it is clean. If someone wants to avoid the checking process, they may just rinse the head and cook it in a separate pot, take a small piece from the flesh of the head, and visually inspect it before eating to make sure this is no foreign object on it. Carp: Carp heads may be infested with very small transparent insects called Argulus that are very hard to detect. There is no known method to clean infested carp heads properly, and they should not be used unless checked by an expert.

Leek is usually infested with thrips. Thrips in leek are camouflaged and difficult to detect. Although older thrips are usually black or brown, young thrips can be white, yellow, or light green, identical to the color of leek. The young thrips are found in every part of the leek. Leaf miners can also be found in the dark green part of the leek. • Cut off and discard the upper green leafy part [see diagram]. • Cut off the very bottom part of the leek with the roots. • Discard the outer layer. • Cut the rest of the leek in half (lengthwise), separate the layers, and remove the loose thin plastic-like skin between the layers (since that’s where the thrips tend to hide). • Place the leek in a bowl of soap water for a few minutes. (The water should contain enough liquid soap for the water to feel slippery). Agitate the leek a few times while soaking. The bowl should not hold too many leeks at a time, so that the water can reach all parts of the leek. Make sure that all the leek is immersed in the water. (A plate or weight can be placed on top of the bowl to help keep all the leek below the surface of the water). • Rinse both sides of each layer under a strong stream of water while rubbing it. (Rubbing dislodges the grip of the thrips, and the strong stream of water rinses them off).

Pomegranates sold commercially are generally free of infestation. If there is a hole on the outside (similar to a round drill hole), one should cut open the fruit and follow the hole to ensure that there are no worms. Any inner part that is decayed should be discarded. Dark/brownish areas inside the fruit are not a sign of infestation.
Spinach is usually highly infested and difficult to check. It is recommended to use fresh baby spinach leaves, which are generally more smooth and don’t have deep folds. • Check the leaves against a light (or on a light box) for leaf-miners. Discard any leaves that have signs of leaf-miners. • Soak in soapy water for a few minutes. Agitate a few times while soaking. • Rub each leaf lightly with a soapy sponge. Make sure to reach all dents and crevices. • Rinse each leaf very well under a stream of water. Make sure the water stream reaches all dents and crevices.
