(Re: Inbox, Issue 22) I absolutely love your magazine and read it from cover to cover every week. I especially like the articles about Pesach cleaning, and I take issue with the letter-writer who wrote that you should only be looking for chometz the size of Cheerios. I’m curious: Will she only be sending two minim for one person on Purim as the halacha requires? Or will she be busy shopping/baking/wrapping for days (or weeks) on end? So why criticize enhancements to a mitzvah as great as cleaning out your chometz? The letter-writer is right that we shouldn’t stress about extras before Pesach, but there is something special about thoroughly Pesach cleaning our homes. A friend of mine had the shock of her life when she removed a piece of shelf liner from a kid’s drawer, and discovered an entire pack of spaghetti perfectly lined up. She would’ve never spotted it had she done it superficially. Wishing all Yiddishe women hatzlacha in their work! A Housewife
MAKE IT WORK (Re: Bite-Size Pesach Cleaning) I just wanted to write in and say that I think some people are missing the point of your Pesach-cleaning program, which is to inspire us to accomplish our Pesach prep in a way that allows us time to avoid last-minute panic. For myself, I’ve found that it doesn’t work for me to do the tasks in the order listed, but I am able to draw inspiration and some practical tips from the column, even if it means that I don’t enter the contest drawing. I’m okay with that. For me, having an eight-week countdown is enough motivation to keep me moving. It reminds me exactly how close to Pesach we are, and that things really are doable. I think that for those who complain that the schedule is overdone or too intense, just use your seichel to take any good advice you find and modify it for your own situation. CAN WE BREAK THE CYCLE? As we are nearing our next yom tov Purim, the happiest day of the year, I sit and think back to the past Shushan Purim. I was sitting on the couch with two bags stuffed with the junk food that my children had happily sold to me. I’m generally not one who thinks it’s fair to take away Purim nosh, or even force kids to sell it, but when seeing so much junk, I decided to casually mention that if anyone wanted to sell ten pieces of junk for $1, I’d be a willing buyer. To my surprise, some of my children actually jumped at the offer. They tried to bargain, of course, but we managed to negotiate and the deal was on! And then it occured to me how truly bizarre the situation is: We mommies want our children to feel good and part of the “in group,” so we buy all kinds of nosh for their mishloach manos at great expense. We hand out beautiful packages to one and all, and then Mommy sees the bulging bags of nosh, and pitying her children’s digestive systems, offers to buy off some. The kids go for it, the bags exchange hands — and then the nosh goes into the garbage. Purim is almost here, and all of us are running around in circles, getting ourselves into the same old game: Buy nosh, send mishloach manos, buy the nosh off from your kids and dump it. PA RS H A S M I S H PAT I M Parshas Mishpatim begins, “V’eileh hamishpatim asher tasim lifneihem — And these are the laws that you shall set before them� (Shemos 21:1). Rashi notes that the parsha begins with the letter vav, which means it is a continuation of the previous parsha. Last week’s parsha detailed Matan Torah, and this week’s parsha begins with mitzvos that Hashem is commanding Klal Yisroel. Thus, we would expect that the first mitzvah given after Matan Torah to be one that is foundational to the Torah. And what is the first mitzvah brought down in Parshas Mishpatim? “If you acquire an eved Ivri, six years he shall serve; and in the seventh he shall go out free...� (Devarim 21:2). Of all the mitzvos in the Torah, the very first one given after the parsha of Matan Torah is to free the eved Ivri. One might wonder why this mitzvah was chosen, especially in light of the fact that it only applies in Eretz Yisroel during times of Yovel, and therefore was not immediately relevant. Further reflection on this mitzvah raises more questions, such as why davka the ear was pierced, why the ear was pierced for something

that is actually permitted and not for doing aveiros, why the ear was pierced near the doorframe, and why a martzei’a was used to do the piercing. Rabbi Daniel Glatstein, shlit�a, brings a beautiful explanation that answers all of these questions while shedding unique light on why we were enslaved in Mitzrayim, how and why we left Mitzrayim, and the nature of our relationship with Hashem. Rabbi Glatstein cites R’ Avigdor Miller, zt�l, that sometimes in the Navi we find additional details about events described in the Chumash. The Navi Yirmiyahu relates that Hashem declared, “I made a bris with your fathers on the day that I brought them out of the land of Mitzrayim, out of the house of slavery, saying, ‘At the end of seven years you shall let go your fellow Yid who has been sold to you, and when he has served you for six years you shall let him go free...’� (Yirmiyahu 34:14). We see here that Hashem made a covenant with us that he would take us out of Mitzrayim on condition that we would free the eved Ivri. Furthermore, the Navi goes on to explain that it was the failure of people to free their servants that brought the churban Yerushalayim. So we see that the mitzvah of the eved Ivri is a yesod of the entire Torah, and the reason is because we were only freed from Mitzrayim in order to become servants to Hashem. Choosing to remain a servant to a human master, or refusing to release a servant from such servitude, defies the entire purpose not only of our being redeemed from Mitzrayim, but also from the reason we were brought to be slaves there to begin with. Designer Gowns Shlah Hakadosh explains that Hashem brought us to be slaves in Mitzrayim for the express purpose of learning servitude. At the time we prepared to leave Mitzrayim, Hashem gave us two mitzvos: pesach and milah. These are the only two mitzvos asei that incur the punishment of kareis if one fails to fulfill them, chalilah. The Bnei Yissaschar explains that these mitzvos were given when we were taken out of Mitzrayim so that we would be under obligation as we left Mitzrayim, ensuring that we would know we were not being set totally free, but that our servitude was being transferred from Paroh to Hashem. Thus, the mitzvah of eved Ivri is truly foundational. Now we can answer the questions raised in the second paragraph. The Gemara (Kiddushin 22b) explains that the ear that heard Hashem say, “Ki li v’nei Yisroel avadim — For it is to me that the Bnei Yisroel are servants” (Vayikra 25:55), is to be pierced for choosing a human master instead, because it undermines the entire reason for our slavery and for our redemption, which was to become servants of Hashem. The door frame serves as a witness to the ear hearing the above as Hashem skipped over our houses during Makas Bechoros. The martzei’a that pierced the ear has a gematria of 400, which is the number of years Hashem decreed us to be in Mitzrayim. Returning to the opening pasuk of the parsha, it says that these are the laws that Hashem set “lifneichem.” The Sfas Emes explains that they were set before us because we have the power to choose whether or not to accept ol Malchus Shamayim. May we all make the right choice to accept Hashem’s Malchus over us, and, in so doing, merit the geulah sheleimah, bimheirah v’yameinu.

With Plastic Bag Ban Looming, Experts Predict YearsLong Paper Bag Shortage New York’s statewide ban on plastic shopping bags is due to take effect in just a few days, but those who are hoping to pay a nickel a bag for paper bags when they head to the store to buy groceries might be in for a rude awakening. A new law that goes into effect on March 1 prohibits any store that charges sales tax from providing customers with plastic shopping bags. The law is intended to decrease pollution and protect the environment, and while
it does ban shopping bags, it does not disallow bags used for uncooked meats, fish and takeout items; newspapers; bulk items such as produce, grains and candy; dry cleaning bags; and restaurant takeout bags. Also exempted are trash bags, food storage bags and bags sold in bulk quantities. Stores will have the option of selling paper bags to customers for five cents each, but according to the New York Post, it could take as long as five years for manufacturers to meet the new demand for paper bags. The 30 Gristedes and D’Agostino stores in New York placed their orders for paper bags back in December, but a store spokesperson said that the chain has only gotten one case of paper bags per store so far. “Our supplier took the order, but also warned us that

there is a shortage of paper bags,” said the spokesperson, who noted that the limited supply could also spark a price hike on the bags. New York is woefully unprepared for the bag ban, say experts; the legislature held its first hearing on the issue last week, nearly a year after the legislation was passed. Phil Rozenski, a spokesperson for Novolex, one of several large bag manufacturers in the country, said that the relatively small supply of paper bags will pose a major problem, with New York facing a shortage of three billion bags over the next five years. “The New York law needs four or five factories that don’t exist today,” said Rozenski. As of February 22, Stop & Shop stores will be offering free reusable bags in exchange for plastic bags, reported Supermarket News, with a limit of one free bag per customer. Store representatives will also be available to answer any questions and to offer free giveaway items for those who come to trade in their bags. “Sustainability is a priority at Stop & Shop, and we’re committed to encouraging the use of reusables and to helping our customers make the transition,” said Stop & Shop President Gordon Reid. The New York City Department of Sanitation is also doing its part to wean residents from plastic bags, reported QNS. com. Over 70,000 free reusable bags have already been distributed to city residents, with another 100,000 expected to be handed out before the ban goes into effect on March 1. “City residents use billions of singleuse carryout bags every year, and they are frequently used for only a few minutes at a time,” said Sanitation Commissioner Kathryn Garcia. “Plastic bags are particularly troublesome as contaminants in our recycling, as they often clog machinery, and we’ve all seen plastic bags stuck in city trees around the city.”

Senator Simcha Felder pulled no punches in Albany last week, slamming Mayor Bill de Blasio for failing to follow through on his 2014 promise to improve special education reimbursements for private school parents. Felder said it took years to get the mayor to agree to intervene in the process that had parents burdened with mountains of paperwork and experiencing long delays in payments for their children’s special education through the Board of Education. But those promises have failed to produce results, charged Felder. “Unfortunately, a short-lived improvement was followed by years of decline,” he said. Felder said that he has been documenting the problems that parents have been experiencing over the last six years. “Incompetence of this magnitude is not believable,” said Felder. “Corruption is more likely what’s happening here.” Felder called on de Blasio to launch an investigation to be conducted by an independent monitor, saying that 10,000 children are affected by the problems, which he described as a “crisis.”
Subway platforms were packed with well-wishers as the last of the R-42 trains made its final run from Far Rockaway to the Bronx on the A line on February 12. The 44-seat R-42 cars debuted in 1969 on the Broadway BMT line, known today as the N train. They were the first completely airconditioned subway cars and one of only two models to be used by the Metropolitan Transportation Authority for more than 50 years. The MTA began retiring the R-42 cars in 2006, with some sunk into the Atlantic Ocean as part of an artificial reef program, which ran through 2010. Since that time, cars that were taken out of service were sent to Sims Metal Management where they were dismantled, reported AM New York. Over time, most of the the R42s were shifted into use on the J and Z lines. The cars were scheduled to be retired at the end of 2019, but they were put back on the rails after their replacements, R-179 cars, were found to be having door problems. The last scheduled run for the R-42 car began at 10:30 a.m., with Sally Librera, senior vice president of the Department of Subways for New York City Transit, MTA Chair and CEO Pat Foye, and outgoing New York City Transit President Andy Byford all on board. “These cars have served the MTA well as a reliable fleet over the last 50 years,” said Librera. While the last remaining R-42s will likely end up as scrap metal, a pair of the cars will remain on exhibit at the New York Transit Museum, said museum director Concetta Bencivenga. “They will be used to educate the public about the city’s mass transportation history, and visitors will get the chance to come aboard and travel back in time,” said Bencivenga.

Recap: Miri meets Tzippy while visiting their grandfather and is incensed when Tzippy, her “rich” sister, asks her to pay for a picture of her Shmuely that was taken at the wedding. After leaving Janek Cohen’s home, Gustav sneaks into the cellar of his old orphanage to get the paper that Edo’s mother had given him years before, which he’d forgotten to take along with him when he’d escaped with Emil. Theodore finds him and confronts him. Yerushalayim
The rain continued to fall outside, but that wasn’t why Gustav was trembling. He stood at the top of the stairs and stared at the knife peeling a long strip off the apple. “I see that you’re dressed well.” The knife stopped. “The Jews are taking care of you, huh?” Gustav nodded wordlessly as he scanned the last two stairs that remained, trying to evaluate whether he could break into a run, dash past Theodore, and escape. “What’s his name? Walkin, huh? Where did he hide you when I came with the policeman?” “You didn’t come with a policeman,” Gustav whispered. “You didn’t come there at all.” “I don’t know where they hid you that morning, but I came to the Jewish orphanage the morning after they abducted you. They didn’t tell you?” “I’m not in a Jewish orphanage.” Gustav cautiously ascended one step. “So where are you?” “In a house.”
“With Edo?” “Yes.” “Emil kidnapped you, didn’t he? Is he a Jew?” Gustav looked at the opening to the black void outside and remained silent. Theodore assiduously chewed the piece of apple, swallowed it, and sliced off another piece. He offered it to Gustav. “Want?” “No.” “So what do you want?” “To go.” The boy’s voice was low, but Theodore heard it. “To go…” he repeated slowly. “You left here once already, right? I guess I only imagined that I once saved your life. But forget that; let’s not talk about it now. You left. So why did you come back?” “I wanted to take something with me.” “What?” Gustav didn’t know what would least irritate Theodore: Edo’s paper or the pocketknife. Or the candies from Emil. Or all three. “What do you have in your pocket?” Biting his lip, Gustav pulled his hand out of his pants pocket, taking with

him the first thing his fingers grasped. “Hmm, the pocketknife that I gave you,” Theodore said calmly. “Well, do you still go to church?” Gustav was quiet as his eyes flitted every which way. “Put it back into your pocket. What else do you have there?” Gustav pulled his hand out a second time. A candy glinted between his fingertips. “Oh, the type that Emil liked to give to the children. Do you live with him?” Gustav shook his head in the negative. “And what else are you hiding there?” Out came the last two candies from his pocket. “Come, let’s go upstairs. The director isn’t here now, but I’m sure he’ll be happy to see you in the morning.” Theodore chuckled. Sure… Farash, happy to see Gustav? No way. On second thought, perhaps he would be happy — to mete out a punishment. Gustav stood with his foot on the last stair and his hand gripping the railing. He looked at the curled apple peel that had dropped near his shoe, not moving a muscle. And then he took his hand out of his pocket, leaving the folded paper inside. With effort, as though his leg muscles had turned into a rusty lump of steel, he climbed the last stair. He glanced fleetingly at Theodore, who continued eating his apple wordlessly. There was a little smile playing on Theodore’s lips. It wasn’t his regular smile; it was a distinctly unpleasant one. But he didn’t say a word when Gustav continued walking right past him. Gustav didn’t look back; he slowly marched toward the entrance, estimating constantly how many steps he had left. “Are you planning to leave?” Theodore’s voice stopped him. Gustav did not respond. He
simply walked out, and then, finally, he felt as though something had oiled his rusty steel legs, and they were able to move again. He broke into a run, and in less than twenty seconds, reached the gate and gripped it with his hand. He quickly climbed to the top, and only then, before jumping down to the other side, did he turn around. Theodore was standing at the entrance of the building, staring at him. Then he stepped

The teacher had explained then that there were parts of the city that had been destroyed in the bombings during the war and had not yet been rebuilt, even though three years had passed since the end of the war. How long did it take to rebuild homes? Apparently a long time. He abandoned the cover of the concrete slab and began carefully picking his way through the rubble. It wouldn’t be a good idea to fall; he didn’t think people ever came here. The darkness was thick and inky, and he was alone. But Gustav wasn’t afraid. He preferred to be here alone than with Theodore, or with anyone from the orphanage. His knee was aching a bit less now, but he was cold. The wind whipped at him, and he wondered whether it was safe to enter the building through the gaping hole in front of him. It seemed that the room had remained intact. Carefully, he stepped inside, feeling the walls. They looked strong; in fact, they had even withstood the bombardment when everything else around them had crumbled. He looked up. The room even had a ceiling! Wonderful; this was an excellent place for him. Suddenly, he bumped into something soft. A bed! A small child’s bed, a perfect fit for him! It even had a mattress on it. Perhaps it was a bit torn, but he could feel that it was a thick, good-quality mattress. Gustav sat down on the bed and looked around. Slowly, his eyes grew accustomed to the darkness. The room wasn’t entirely intact; the ceiling on the other side had caved in, and he could see a few stars through

He could run very, very fast, through the fields, and get to Janek and Ulush’s house, but Theodore had a car. He would follow him and see where he was going. Then he would catch him again, together with Edo, and poor Janek and Ulush, kind souls that they were, would be sent to prison. * * * * * Gustav stood on the top of a mound of rubble, crouching behind a large slab of concrete. He strained his eyes, trying to see in the dark. Theodore’s car was nowhere to be seen. He wasn’t even

it. There was also a large hole in the facing wall. But next to him, lower down… hey, it was a faucet! He quickly got up to examine the faucet. As expected, though, not a drop of water flowed out of it, and that was when Gustav realized how thirsty he was. It was all right; tomorrow morning, after Theodore would give up on finding him, he could go back to Janek and Ulush. They would give him as much water and milk as he wanted. True, it would take him time to get there, but it was okay. He wasn’t afraid of walking. The child went back to the bed and stretched out on it, licking his parched lips. He hadn’t eaten or drunk anything in hours; come to think of it, he’d put nothing into his mouth since that morning. But he wasn’t spoiled. He would eat tomorrow. Yes, he really was fine. Tomorrow he would eat and drink; it wasn’t that bad. But one thing he couldn’t wait for was a blanket. And a heater. He was terribly cold. He had gotten used to being hungry from his years in the orphanage — often the food wasn’t quite sufficient — but they had never been cold there. There had always been large heaters keeping the rooms warm, and besides for one winter, when there hadn’t been enough wood to fuel the heaters and they had crowded all the beds into one room, it had always been pleasant and warm and clean there. Janek and Ulush’s house was also always pleasant and warm. For the past few days Ulush had baked potatoes with butter in her oven, and Gustav had eaten them when they were boiling hot. That way he’d been warm inside and out. If only he had just one such potato right now, even a small one, so he could warm himself up… Maybe he should just go back right now? The thoughts tumbling around
in Gustav’s brain confused him; they engulfed him and almost choked him as he lay there on the bed. Too bad he didn’t have a small potato… a really tiny one… hot… boiling… He lay trembling on the bed, drained from the exhausting and turbulent day he’d experienced, stiff with cold. His cheek stuck to the moist mattress. Perhaps there were a few rags here with which he could wrap himself?

If he could find a slightly more intact room, that would be good, but wading around in the muddy rubble, when everything was wet and slippery and he was being doused with pouring rain… No. He was better off here. He curled up in the corner of the bed, but quickly discovered that the mattress was saturated with water. He stood up, walked over to the farthest and driest corner, and stood there, gaping at the water pouring into the room. The rain didn’t appear ready to let up any time soon. And even if it would, he wouldn’t be able to go back to sleep now. He didn’t have a normal bed anymore. He stood there for a few more minutes, and then, exhausted and weakened by hunger, he crumpled to the floor, gazing with large eyes at the puddles filling the room. Fortunately, the floor was also torn up, and a lot of the water seeped down into the cracks, so it wasn’t pooling high enough to reach him. He closed his eyes, listening to the sound of the rain. Too bad Edo wasn’t here. Together they could build paper sailboats, like Theodore had once taught them to do. They would then set them sailing on the water, and maybe they would even be able to get into one of those boats and sail far, far away from here. To America, maybe. He fell asleep as the freezing water slowly but steadily filled the floor of the room, inch by inch. The water finally reached him, puddling around his socks and the hems of his pants. His shoes, left next to the bed when he had gone to sleep, had long been carried away by the water. And still he slept.

With effort he opened his eyes and scanned the room a second time. The moon had slipped out from behind the clouds in the last few minutes, and its pale rays shone through the hole in the ceiling. No, the room was empty; there was nothing to cover himself with. Gustav arranged his coat around his shoulders, tugging the collar as high as it would go. He licked his dry lips again, and in his semi-frozen stupor, fell asleep. * * * * * Cold water wet his face, filled his mouth, and woke him up all at once. He shook off the drops, confused, and sat up. It wasn’t yet morning — it was still very dark — but the sound of the strong rain drumming on the remains of the ceiling above his head had woken him up. And the water. The boy stood up. Yes, the water was seeping in not only where the ceiling was broken; it was also pouring in over his head as well, forming a puddle on the floor. Apparently the ceiling was cracked

Bernie Narrowly Wins New Hampshire Democratic Primary THE PULSE: In a close race, Bernie Sanders won the
Granite State Democratic primary by capturing 25.7% of the vote. Pete Buttigieg performed solidly and came in second, with 24.4% of the vote. Amy Klobuchar surprised many pundits with her strong showing and came in third, with 19.8% of the vote. Both Elizabeth Warren and Joe Biden disappointed. Warren finished fourth, with 9.2% of the vote, and Biden finished fifth, with 8.4% of the vote. THE IMPACT: Since 1972, only candidates who have finished first or second in either Iowa or New Hampshire have gone on to win their party's nomination. Bernie Sanders

and Pete Buttigieg have now achieved front-runner status. However, historical precedent may not be a reliable guide for the chaotic political atmosphere of today. Nonetheless, Joe Biden, who based his pitch to voters on his electability, is clearly in trouble. He will need a big win in either Nevada or South Carolina to stay viable. Speaker of the House Nancy Pelosi said that despite Biden's poor performance to date, she is not counting Biden out. Much of the Democratic establishment is hoping that he can turn things around. Elizabeth Warren's poor performance also casts serious doubt on the future of her campaign. Warren, a senator from Massachusetts, was expected to perform well in the neighboring New England state. However, Vermont Senator Bernie Sanders was able to parlay his geographic ties to the region for his benefit while Warren was not. THE STATE OF PLAY: The Democratic primary calcu-
lus has changed significantly. Bernie Sanders appears to be the candidate that progressives have coalesced around. Should Warren continue to falter, he will be the only viable progressive candidate. However, the centrist Democratic vote continues to be split amongst Joe Biden, Pete Buttigieg and a surging Amy Klobuchar. Additionally, once the Super Tuesday contests begin, Mike Bloomberg will also be playing for the same constituency. As long as each of the centrist candidates believes that they have the best chance to win the centrist votes, they will likely stay in the race. The longer that they all remain in the race, the longer the centrist vote will remain split. The splintering of the mainstream vote may give Bernie Sanders the opening that he needs for the pathway to the nomination. Most recent polling shows a sharp increase in support for Sanders in Nevada and South Carolina.

In a pre-election rally in Manchester, New Hampshire, Trump continued to peddle the unsubstantiated and discredited claim that the only reason that he lost the 2016 general election vote in New Hampshire to Hillary Clinton is because the Democrats bussed in voters from neighboring Massachusetts. To date, there is no evidence to back up this claim. Despite the president’s strong showing, Bill Weld still managed to draw close to 14,000 votes. Being that Bill Weld has absolutely no pathway to the nomination, these votes were likely cast primarily as a form of protest. New Hampshire is a partially open primary state, and undeclared voters can vote in any party primary that they choose. It is possible that Weld drew support from Democratic voters, but it is also likely that disenchanted Republicans decided to cast their vote in the Democratic primary to throw their support behind more moderate candidates like Amy Klobuchar. Trump still polls overwhelming support amongst the Republican base, but even a loss of a small number of voters can prove problematic. Former Trump adviser Steve Bannon said in a statement that if Trump loses just 3% of traditional Republican voters, it will be hard for him to win re-election.

tinues to narrow. Entrepreneur Andrew Yang, Colorado Senator Michael Bennett, and former Massachusetts Governor Deval Patrick all announced that they were quitting the race for the Democratic nomination and ending their campaigns.

THE IMPACT: All of these candidates failed to gain traction in either Iowa or New Hampshire. Governor Patrick was a late entry into the race, and his message never caught on. Senator Bennet's message of pragmatism and practical bipartisanship did not resonate with voters in the current hyper-partisan political climate. Andrew Yang drew the most national attention, as he performed well in his debate appearances. He garnered a dedicated cadre of "Yang Gang" followers. However, Yang had no path going forward. Announcing his withdrawal from the race he said, "I am the math guy, and it is clear tonight from the numbers that we are not going to win this race." The winnowing down of the race will serve to help settle the field of likely nominees and limit the choices of voters to the most viable candidates.

can likely provide an initial boost to the Bloomberg campaign. Clinton has countless party connections and a strong base of supporters among the Democratic base. Having Clinton on board can also bolster Bloomberg's standing among specific segments of Democratic voters, especially those who accuse him of attempting to buy the nomination. Clinton would also get another crack at political success and possible redemption for her disastrous 2016 campaign. However, such a move is also fraught with risk. Hillary Clinton is a lightning rod for the political right. President Trump was highly successful in ginning up opposition to Clinton's dubious business practices and alleged political malfeasance. Republicans would love to relitigate Clinton's email and server scandal. Clinton's impact on the ticket can easily be more of an unwanted distraction than a positive boon.

Homemade babka is the gift that keeps on giving; it turns house into home, homemaker into balabusta. Have a freezer stocked with babka, and you are armed for any eventuality. Ever since my neighbor Mrs. Jacob shared her famous recipe with me, my freezer is seldom devoid of a batch of babka, kokosh cake or rugelach. For this Purim I decided to share the love so you can stock your freezers with delectable treats for mishloach manos, the Purim seudah, and ah gantz yahr! Simchas Purim!
DOUGH 5 lb. challah flour
2 cups apple or orange juice
1 lb. margarine (at room temperature)
1½ cups oil
1½ cups sugar
5 eggs (at room temperature)
3 oz. fresh yeast, diluted in:
Dash of salt
2 cups seltzer (at room temperature)
FILLING 4 lb. sugar
1 heaping tsp. cinnamon
4 cups cocoa
1 cup oil
1 cup flour
2 egg whites
3 heaping T. vanilla sugar
1 tsp. salt
1 heaping T. coffee granules (no need to dissolve)
STREUSEL TOPPING (OPTIONAL) 2 sticks cold margarine
1 tsp. cinnamon
2¼ cups flour
¼ tsp. salt
1 cup brown sugar
DIRECTIONS 1.
Preheat oven to 350°. Add 6 cups of the flour to the mixer. Add remaining ingredients, mix well, and then add remaining flour. Mix until a dough forms. Cover and allow to rise for 1 hour.

Once dough has risen (and challah has been taken), divide dough evenly into eight parts. I find a food scale very helpful for this step.

Mix all filling ingredients together in a large bowl. Divide filling evenly among eight containers.

Mix all streusel ingredients by hand to form coarse crumbs (optional).
5.
On a lightly floured surface, roll one part of dough into a large, thin rectangle. Brush dough with some oil, then spread with one part of the filling. Roll tightly, jellyroll-style, into a long log. To create mini babkas, cut the roll in half widthwise. Take one half, fold it in half, and twist to create a babka. Place in a mini loaf pan. To create buns, cut the rolled-up log into 2-inch buns, and place them into cupcake holders.

Cover and allow to rise for 1 hour. Brush with beaten egg and top with crumbs.
7.
Bake babka in preheated oven for about 45 minutes. Bake buns for approximately 40 minutes.

At
every aufruf, young Moishe Engel would scamper around with the other boys collecting the loot — the little baggies of goodies tossed at the chasan as he’s called up to the Torah. The treasures within typically included some candies along with the traditional rozhinkes mit mandlen, raisins and almonds. While his friends were ready to toss aside the nuts and dried fruit in favor of the more “valuable” sweets, by the age of eight, Moishe would barter his candies for his friends’ small boxes of Sun-Maid raisins. The other young boys might not have appreciated the value of those dried grapes, but Moishe knew that with a little effort and some tender care, he could transform the fruits into something precious.

With his mother’s encouragement and support, the young boy pored over relevant books, and by ten years of age, he was laboriously working with grapes, as well, provided to him by his uncle, a local green grocer. And a few years later, at his own bar mitzvah, young Moishe Engel bentched on the very first wine he had created out of those cherished packs of raisins. “It tasted awful!” he now laughs. But the passion awoken couldn’t be stilled.
The Art of Fine Wine “This is a very delicate, neshamah kind of work,” Mr. Engel tells me. “It’s an art that requires an element of refinement; you can’t be forceful or messy. I believe it to be a very healthy and beautiful outlet. And as a bonus, this one has a spiritual element to it, a refined elevation.” With Purim around the corner, and the heavy emphasis on wine consumption, Mr. Engel believes that this message cannot be understated. Wine is a special, chashuve drink, and when being part of its creation, one instantly recognizes it. In Yiddishkeit, Reb Moishe likes to point out, no other juice is as exalted. Whereas other juiced fruits and vegetables, even when fermented, are downgraded to a bracha of shehakol, grapes are the only fruits that are upgraded to hagafen. “Up until now, it was a mere grape, and now it has been transformed into something that can be used on the mizbe’ach in the Beis Hamikdash, for nisuch hayayin!”
The Process Mr. Engel is passionate about the entire winemaking process. The 21-day process starts with a small machine that cuts a little slit in the grapes and then destems them. The stems need to be removed so that they don’t add an unwelcome bitter taste.

“In winemaking, like in life, every step matters. If there are rotten grapes or a little bacteria, the entire barrel will be ruined, and all the work done would retroactively become worthless.” The machine then proceeds to crush the grapes lightly before it is transferred to an oversized bowl (which can hold up 30 gallons!). For approximately three weeks, the grapes are left to ferment. The exact time frame depends on temperature, the type of grapes used, and just how sweet one wants the wine. Every fruit has sugar, and when fermented, the
347.427.5299 sugar turns into alcohol. For less sweet and more alcoholic wine, it is necessary to allow the grapes to ferment fully. For a sweeter wine, the process needs to be arrested earlier. In commercial winemaking, chemicals are typically used to speed up the fermenting. (Conversely, sulfates are also added to prevent the alcohol content from going up.) “The issue with using chemicals for fermenting is that while you get both the sugar and the alcohol, you’re not obtaining the ‘full body’ of the grape. A full-bodied wine is one that is fermented for longer, so that all flavors and nutrients are extracted, even from the skin.”
The Grapes Mr. Engel is quite fastidious when it comes to his grapes. “Before I buy a batch of grapes, I test it to know how much sugar there is so that I know how long it needs to ferment. I also carefully watch as the levels of alcohol and sugar change. Every grape is different.” He draws a parallel here, saying that it is important to remember that there are many types of people, as there are grapes, and that each can be transformed into something beautiful. And each is special in their own right. This year, Reb Moishe is particularly proud of a great Italian grape he obtained in Texas from a large, familyrun vineyard. What’s so impressive about this particular grape is its deep, rich flavor, with an almondy-fruity taste. The wine promises to be sublime!

All We Need Is… Time A Proud Family Legacy Winemaking has been a proud family legacy for generations. Reb Moishe’s maternal grandfather, Reb Shia Klein, a”h, arrived in London from Hungary in ‘56, with his wife and three young daughters in tow. He immediately set about creating his own Kiddush wine, as he had done back inderheim. His wine was soon famous among the local frum Yidden, and two of his chashuve customers would go on to become big rabbonim: the Kalever Rebbe from Williamsburg, Reb Moshe Taub, shlit”a, and the Toldos Aharon Rebbe, shlit”a, from Yerushalayim. The high esteem in which Reb Shia was held was well earned. Faithful and firm in his convictions, he never compromised on any element of Yiddishkeit, especially kashrus, and was reluctant to simply accept the status quo. At that time, when London Yidden didn’t have access to cholov Yisroel butter, it had been acceptable, with rabbinic approval, to purchase the local butter. Reb Shia, though, wouldn’t be meikel on matters of halacha. He would repeatedly travel to Holland with his young daughters, where the family would churn their own butter and bring back the self-labeled containers to London. And so Reb Shia was known for his butter and wine, but churning butter was never a business. Like all else in his life, when it came to kashrus, it was merely a matter of principle. “That desire to do things our own way, the right way, runs in our blood,” Reb Moishe says.

Once the grapes have finished fermenting, it’s time to press them. “I have a press that manually extracts the juice from the pulp,” Mr. Engel explains. “We then put the juice into airtight barrels, both wooden and glass.” Among the factors that are pertinent for optimal wine production, beyond temperature and even the necessity of a clean, odorless, environment, are the keilim used. They need to be sterilized so there are no detrimental influences. “Even with the best grapes, if the environment or other exposures are negative, the final product will definitely suffer.” And that environment especially matters when barrelling. Whereas wood adds to the flavor, glass has no impact at all. Some prefer glass, because it leaves less up to chance. That’s also why commercial vats are typically stainless steel, which, like glass, have no real influence on the taste. “When you put the juice into the barrel, there’s still some bubbling going on, because it’s still fermenting a bit, and this fermentation generates air bubbles. An airlock seal is therefore essential — it allows air to escape the bottle, but without allowing the air into the wine.”

cally ready for Kiddush after four months — and it’s definitely drinkable, but for the ultimate experience, it is ideal to wait two years for the wine to reach its prime. Over the ensuing months, the wine is raked. Because the sediments at the bottom can give the wine a bitter taste, there is great care in removing it from the wine with a pressure method: A pipe is put into the higher barrel, and the wine then flows into the lower barrel — all without disturbing the settled sediment at the bottom. At this point, the process of creating the wine is more or less complete — other than the waiting, of course. But there is
To Live and Learn For Mr. Engel, a successful insurance broker, wine selling is less of a business and more of a meaningful pastime. He does sell some of his superior wine to cover the expenses of this “fun hobby,” and those who’ve been lucky enough to taste it will vouch for its perfection. But his desire isn’t so much to profit off this venture as much as sharing his passion with those who can appreciate it. As he reverently explains winemaking to the many who are keen to learn about the process, he particularly focuses on our capacity to transform the mundane into something elevated. “I obviously enjoy the process myself, but there is such fulfillment in allowing others in on the awesomeness of the transformation. When I decided to start teaching the winemaking process, I immediately thought of how this will be rather fascinating for bachurim.” In the bein hazmanim season, he works with teenagers. “I find that for many of them, it provides something positive to look forward to, something to focus on. But even more than that, there’s so much they can learn from the metamorphosis. About their potential and capacity to change into something more.” In his work with bachurim, he draws parallels between the maturity of the grapes and that of human growth. He explains how every type of grape will yield different results. And he stresses that even if a boy has to deal with a rosh yeshivah who is not happy with him, or even if he feels like he will never measure up with an older or younger brother, it is paramount that the child realizes that he might not be like the other grapes — but he doesn’t need to! He can be wonderful in his own right. “Just like grapes can be transformed into wine,” he stresses, “every person can be elevated and transformed to serve Hashem. And once that happens — you become a different bracha. Something else entirely!

one further step involving the pulp, which can be utilized to create stiffer drinks. “Once I separate the juice from the pulp, I ensure that nothing goes to waste by adding sugar to the remaining pulp and re-fermenting and distilling it three times. This extracts a purer, higher-quality alcohol, creating a cognac of 140 proof. “This pulp-created 140-proof spirit can then be added to the fermentation of any other fruit such as cherries, making for a really good cherry brandy or kirsch.”
Kindred Spirits “My kids, ages eleven, eight and six, all enjoy being part of the process! It has become a family project,” their father proudly shares. “On the days that the bucket still holds the beginnings of the wine, they’re very involved. When the pulp swims up, it needs to be pushed down with a special tool. “Each child has their own batch
of grapes that they monitor throughout the process. They take the responsibility seriously! They run downstairs first thing in the morning, before school, before Shabbos and immediately after Shabbos. It’s a fun, pleasant and healthy family activity! The children are also involved in pouring the wine into the barrels with a funnel. This requires a delicate hand and concerted focus. Getting frustrated just makes one prone to error. And even the cleaning up is part of the experience. “According to the Maharsha, you can identify the techinas hanefesh of the person who made the wine. The person’s personality matters,” Mr. Engel says. He’s proud of his children’s involvement and appreciates that the process aids in maturity, personality development and overall refinement. And, of course, he’s pleased that that passion for winemaking is already extending to the next generation.
Ad D’lo Yada Nothing in our calendar is by chance. Grapes are fermented in harvest season, which takes place right after Sukkos. Simple math will tell us that Adar is four months later
— and that’s when the first batch is ready for consumption. Purim and wine go together, but Reb Moishe has his own insight into the tradition of ad d’lo yada. “The common misconception is that it is necessary to become so drunk that one can’t tell the difference between arrur Haman and baruch Mordechai. Over the years, there have been many different interpretations of ad d’lo yada, but I believe that it simply means that when drinking a sufficient amount of wine, a person’s true essence is revealed. “Some people might give that tzaddik impression, but wine can reveal their true nature. On the other hand, there are people whom you never thought much of, yet after a few glasses, their sincerity and ehrlichkeit shine through.” Wine is revealing — and transformational.
Lofty Libations Not all wine consumption is the same — outside circumstances can impact the way even the best wine is appreciated. Sometimes the same wine tastes differently, depending on the surroundings or one’s temperament that day. A nicer weather, or simply taking on a more positive attitude, can suddenly allow us to appreciate the beauty and full flavor of the wine — and life. L’chaim!

There are about as many opinions about drinking on Purim as there are Yidden, but for me, I see it as sort of a yearly “checkup” (Nichnas yayin, yatza sod). Once a year, when the mask is off, I get an inside peek at where I’m really up to. Some years, I have to admit, the results were somewhat… sobering, but most years, baruch Hashem, I was happy to discover that there were no hidden Hamans inside of me, waiting to jump out.

Besides whether to drink on Purim, there’s also the question of what to drink. Obviously, wine’s the ikkar inyan, but I think wine must have been stronger back then (as indeed Chazal tell us), because nowadays, to drink enough to get seriously “besumi” wouldn’t leave in the stomach any “room-y.” I’ve tried different eitzos over the years. For a while, my Purim drink was vodka with Pepsi Max. I found that the latter’s high caffeine content would counteract the former’s tendency to put me to sleep (which, according to some, would actually be the best way to be yatza). Of course, I’d have a glass or two of wine as well, as a nod to tradition. But being a creative cook by vocation and avocation, I’ve since branched out into exploring other, more-interesting (and tasty) homemade concoctions that can add a little “spirit” to the Purim seudah, and to the after-fish l’chaim at the Shabbos table, as well. (Speaking of which, why is it that after making Kiddush and a small l’chaim at the Shabbos table, I already can feel tipsy, but on Purim, cup after cup of wine doesn’t seem to make a dent?) Others may be different, but to me, a good recipe has to have just two qualities: It has to be simple and taste good. I don’t like to patchke, and also, I feel it’s more of a kuntz — and the sign of a good cook — to be able to make more out of less. (I think this is a pretty common Yiddishe trait, and in fact, I once heard that it’s about our wanting to come as close as possible to emulate the Eibeshter’s making the world, “yesh m’ayin.” But then again, maybe we’ll just consign that one to a Purim Torah and move on to making some fun, easy and delicious recipes — yesh m’yayin!

PURIM SANGRIA
Sangria is a traditional Spanish drink consisting essentially of wine and fruit. I call this recipe “Purim” Sangria to distinguish it from my famous (at least among my family and friends) “Pesach Sangria,” as this recipe calls for some added brandy to give it more of a kick, while on Pesach we personally only use wine and not (even kosher for Pesach) liquor. It’s best made the day before to let the flavors mix. This recipe yields a large pitcher.
INGREDIENTS 1 standard-size bottle of red wine Dry, semi-dry or sweet, depending on what you like. Another option is to use dry wine and then sweeten it to taste with sugar or your favorite diet sweetener.
½ cup brandy 2 oranges 1 lemon Sprigs of fresh mint leaves (optional)
DIRECTIONS 1.
Pour the bottle of wine and the brandy into a large pitcher (at least 1½ times the volume of your wine bottle). You can taste a bit with a spoon at this point and sweeten as desired.

Slice the oranges and lemon horizontally into about ¼-inch slices. If not seedless, remove the seeds from the slices. They can be either peeled or unpeeled. It looks nicer unpeeled, but the peel’s intense citrus zest can strike some as bitter (and halachically, it may also be preferable peeled). Add to the wine/brandy mixture.

Refrigerate. (It’s best to do so overnight, though it will still taste good fresh. It can last in the refrigerator for at least a week, and actually tastes better with age!)

Serve in glasses (on ice, or not), with a sprig of fresh mint over the lip of the glass (optional) to decorate.

HEIMISHE CHOCOLATE LIQUEUR
This classic, creamy, parve liqueur can be made as lightchocolate, medium or dark, and lends itself to various flavor options.
INGREDIENTS 12 eggs ½ cup vodka ½ cup cocoa powder (for medium chocolate coloring; add an additional ¼ cup for dark chocolate; use ¼ cup less for light)
½ cup powdered sugar (or equivalent of diet sweetener) 2 tsp. vanilla extract
DIRECTIONS 1.
Crack and check the eggs (for extra-thick liqueur, use only the yolks of twice as many eggs). Pour into a blender, or the blending cup of a hand blender.
2.
Add the vodka, cocoa powder, sugar and vanilla. Blend until thoroughly mixed. (You might have to coax the chocolate powder down with a spatula during the blending process, as it tends to clump up near the top.)
3.
Pour mixture into your decanter, pitcher, etc. Chill and enjoy! Store refrigerated.
FLAVOR OPTIONS: To make Mocha Liqueur, substitute instant coffee powder for half the cocoa powder. For Mint Chocolate Liqueur, add a teaspoon of mint extract. Experiment with different flavorings; I’ve found hazelnut extract makes it especially geshmak.

This is a refreshing, Caribbean-based drink, mixing tangy pineapple with creamy coconut. A friend reported to me that he was once on a Caribbean cruise, and they docked and stopped off at one of the local island tourist traps. He watched as some tourists from another ship eagerly imbibed the free piña coladas being freely offered by the smiling sales clerks. Happy at getting “something for nothing,” they were sure they’d taken advantage of the natives — who actually got the last laugh, as the now-tipsy tourists ended up spending ten times as much as they ever would sober!
INGREDIENTS 1 cup pineapple juice
1 cup cream of coconut
⅔ cup light rum (If preferred, you can substitute for vodka, with a tablespoon of rum extract.)
DIRECTIONS Pour all ingredients into a blender or the cup of a hand blender. Blend, and serve over ice. As delicious as it is easy. L’chaim!

Face Painting
Face paint done right is a costume on its own. Wear the right color clothes, and you have a full look! And it’s pretty simple, especially if you have a photo to copy. Here you will see step-by-step instructions for three adorable looks. But with these few tips under your belt, and any face paint picture to copy, you’re good to go!
Supplies needed:
Basic colors:
1: Face paint The most important thing to keep in mind is to buy the right type of face paint. I recommend waterbased, washable face paint. When mixed with a bit of water, the paint should be smooth and opaque, dry quickly, and wash off easily with soap and water. Many face paints come in packages with a few colors. Check to make sure that the package you purchase has either the specific colors you need, or the primary colors in addition to black and white.
2: Soft bristle brush, with a fine tip
With these colors you can create any color you’ll need.
3: Small sponge A face paint kit will usually come with a brush and sponge. Otherwise, you can use any good paintbrush and makeup sponge.
4: Fine grain glitter (optional) 5: Cup of water
Add red for warmer brown, or purple and green for darker shades.

Good to know before you start: • Before you begin, assess the face you’ll be working on. See if you may need to adjust the design based on the shape and size of the face. (Think: A smaller forehead may need the snowman’s head lower down, closer to the nose.) • Looking at a full picture can often be overwhelming: Where should you start? Try breaking the picture you want to draw into smaller shapes. That usually helps. • To start painting, wet the sponge or brush with water. Rub it gently on the cake of paint. The less water you use, the more opaque the colors will be.
SNOWMAN 1. Using a wet sponge rubbed into white paint, create a small circle between the eyebrows.

Continue by making wide moon-shaped strokes around the eyes, and longer moons shaping the cheeks.
3.
Add white down the nose and on the eyelids.
4.
Switch to the brush, and with black paint, draw the hat and outline as shown.
• Always start with the background color using a sponge (like the pink on the ballerina) or with the filler colors (like the white on the snowman). • Once the background and fillers are done, proceed to draw the black or white outlines. Using the brush, overlap the background color (you don’t want a gap of skin showing). • Last, focus on the small details that need a brush. • Make sure to wash your brush and sponge between colors!

ors using a sponge around the mouth, nose and eyes. Make sure to wash the sponge between colors. (Mix white and blue to get light blue.)

You don’t want exact outlines of pink; once the background is done, stretch the pink paint softly by using a clean sponge and blending it into the skin.

Using thick white paint and a brush, create the swirls as shown. You may want to practice this first on your arm until you get the hang of it.

TUTUS If you’re like me, you might love crafting and creating but have no idea (or interest) in sewing. And if you’re like me, you probably want to know how to make a costume without a sewing machine... By making a tutu, is my answer! Tutus are not only fun to wear; they are also fun to make! Follow along as I show you how to make these adorable skirts.
Supplies: 1: 6-inch rolls of desired color tulle These can be found in craft stores, gift wrapping shops, or on Amazon. You’ll need one full roll for a size 2–3 skirt. If you’d like, you can also use regular tulle that you would buy in a fabric store and cut it into 6-inch strips. In that case, you’ll need 1½ yards for one size 2–3 skirt.

Let’s get started! Before anything, you need measurements. Measure the child’s waistline and the desired length from the waist down.

1. Cut a piece of rubber for the waistband. You may want to make the waistband an inch shorter than measured, since the rubber stretches. Using a threaded needle, sew the loose ends together to form a circle.

Place your rubber waistband on a gallon water bottle (or whatever you are using; I used two bottles because I couldn’t find anything bigger at home).

Double your desired skirt length and measure one piece of tulle. Use that piece to guide you as you unravel the roll of tulle and keep folding it to the same length.
Work with two pieces of tulle at a time. Fold them in half (together). Find the center with your finger.
6. Place the
tulle, loop facing down, behind the rubber.

Find the center at the edges of your big “new roll” of tulle. Cut along the fold. Do the same on the other end. You should now have lots of strips of tulle that are all the same (or almost the same) length.

Pull the four loose ends down through the loop.

Pull them down tightly until the top forms a tight knot on the rubber.
Continue until your waistband is covered in tulle.

VARIATIONS: 1. For a multicolored tutu, like the clown’s, I attached the different colors of tulle in sets of three.

For a doublelayered look, like the ballerina’s, first do the bottom layer, following the standard instructions. When you’re done, add another, shorter layer by knotting the tulle in between the knots of the first layer.

Dear Sisters! Let us wear refined clothes that are appropriate for the Jewish Princess. Let’s not lose our sense of proportion and get excited by immoral low life fashion designers! Your Closeted Life Story Between the Megillah and the Haggadah, there’s a lot of emphasis on telling our stories. Awareness of where we come from, and all that has transpired since then, gives us a sense of identity. It tells us who we are. Our stories are important — and it is not only told in words. Our homes, specifically our closets, tell a tale, and they tell it through our possessions. They speak of past values, present priorities and dreams for the future. This week we’ll “trim” some of this redundantly written story, because as boring or exciting as that story may be, it can likely benefit from some expert editing. To that end, this week we will be decluttering the closets in your home — another area where food shouldn’t reside. You may have picked up on the idea that the countdown starts with areas that are typically chometzfree year round, but would still benefit from a refreshing spring cleaning. Redefining our cleaning as a pre-yom tov task turns the work into a mitzvah! We’re clever that way. Master bedroom closet
Sometimes it can feel painful to dispose of our possessions. But the initial sting does fade after just a few minutes — and disappears entirely when we open those closet doors and smile at the order and space in our little slice of heaven. A Pesach-ready closet can be achieved in 30 minutes with three simple steps: 1. Empty the closet in its entirety. 2. Wipe the shelves, rods and walls. Vacuum and wash the floor. 3. Replace the items. Once the closet is empty, each item should get looked at and seriously assessed with the triple-question questionnaire: Do I love it? Do I use it? Do I need it? Honesty is your friend here, and if none of the questions were met with an affirmative answer, the item can’t make it back into your closet. It’s that simple.

The entrance closet
The most important rule for the entrance closet is for it to only store items that are seasonally relevant. Functionality is key! For an inexpensive yet nifty solution, consider the versatility of hooks. Hooks work especially well for kids’ jackets and knapsacks by making use of otherwise dead space. Even more conveniently, hooks installed at the right height will make it feasible for kids to put their own stuff away. That’s a double win! Another clever tip for this closet is to assign individual bins either for categories (scarves, gloves, rain bonnets, etc.) or for each child. Assigning a location for all the odds and ends that belong in the entrance closet is the simplest way of ensuring order.

Toy closets can generally benefit from decluttering as well. If a game has parts missing, pieces that are broken, or has never captured your family’s interest, it is wasting prime real estate! A rule of thumb: The less toys accessible, the more appealing the remaining games look. Work with the toy rotation concept I mentioned last week, and you’ll quickly realize that having less games within reach means that both cleanup and maintenance are now much easier.

We really could use more, especially with Menachem working such long hours... I ended up walking a lot, which is fine for exercise, but not for my time-sensitive schedule.)

That’s why updating your budget every week is so important. Tracking your actual income and expenses and comparing them to what you predicted helps you plan for the time left before the money runs out. Plus, you’ll have an easier time writing future budgets when you have real numbers to base them on.

Now that we’re budgeting and I’m bringing home a better income (more than my wife, for a change!), life is a lot less stressful. Coming home now is the highlight of my day! Where Corks Come From Ever wondered what exactly cork is? Cork comes from a tree, the cork oak, whose bark is stripped to harvest the cork. The bark is then boiled, softening it, after which the rough outer layer is stripped away. When all is cleaned up and ready, sections of cork are punched out in cylindrical shapes for use as wine stoppers. At least 50% of cork used worldwide comes from Portugal. The country makes 40 million cork wine stoppers a day, and southern Portugal has 1.8 million acres of cork forest! The cork oak is a protected species in Portugal, where specific laws were instituted to protect trees from being damaged. When the bark is stripped following these laws, trees are unharmed and regrow their bark, allowing them to continue bringing cork to the world.

Cork is only harvested when the tree reaches 25 years of age. After that, the trees are given around 9 years of rest before they are harvested again. The first harvest of cork bark is unusable. The second harvest, too, is not suitable for making wine stoppers. It is only the third harvest and beyond that yield wine bottle–worthy cork. Imagine: Every natural cork wine stopper you hold is typically 43 years or older! Cork harvesters are highly paid, and it takes a year of apprenticeship to learn to do the job correctly without harming the tree.

Plugging It Up Before cork wine stoppers were invented, French vinters plugged wine bottles with wooden pegs wrapped in hemp rags that had been soaked in oil. Corks used in wine bottles are typically made of a single piece of punched-out cork, whereas champagne bottles usually have stoppers made of cork particles. Ever wondered why you can get the cork out of a bottle but can never seem to get it fully back in? This is because cork contains what’s called an “elastic memory.” It can be compressed to up to half its normal size, but will return to its original shape with time.
