A SEDER TIP I’d like to share this tried-and-true technique for easy-to-peel hard-boiled eggs: Fill a pot with eggs, and add water until only the bottom quarter of the eggs are immersed. Cover loosely with aluminum foil, and cook for fifteen minutes. Enjoy easy peeling! Yidel
CHANNELING THE DISAPPOINTMENT My father, a gabbai tzedakah for many years, ad meah v’esrim, distributes hundreds of thousands of dollars to people in need, both here and in Eretz Yisroel, particularly before yom tov. Over the years, he has been privy to countless touching experiences that demonstrate what an amazing nation Klal Yisroel is. He asked me to share the following: This week, my father received a call from a particular donor, who generally gives a specific amount before each yom tov. To my father’s surprise and delight, the donor noted that he would like to up his standard donation to $20,000 for this Pesach season! Upon hearing this, my father exclaimed, “Wow! The whole world is losing money, and you’re making money? So good to hear!” “No,” the man said, “to the contrary. I’m losing money too! But this is money I usually spend on Pesach vacation with my family at a hotel. This year, that is not an option, and so I’d like to forward that money to people in need.” Wow! What a beautiful idea! My father quipped that if everyone would have the same idea, so many Yiddishe kinder would be able to benefit by having their financial load eased. In addition, all gabbaim tzedakah and yeshivah administrators would cover their deficits in no time, and we’d definitely hasten the Geulah. Individuals like these, who think out of the box and seek to help others despite their own disappointments, uplift us and remind us of who we are. It’s so heartwarming to see how Yidden act and react in these chaotic times! Yisroel kedoshim! S.P.
THE GREATEST CHESED I would like to address an issue that is perhaps overlooked. Many retail stores have been forced to close, right after investing hundreds of thousands of dollars in stock to ensure that their customers can purchase their wares in time for Pesach. Many of us have turned to Amazon and other online storefronts to do our shopping — perhaps even at cheaper prices. But please take note: Your local heimishe store may be offering the same service to you. Please don’t waste this opportunity of chesed and

tzedakah! Call your local stores and give them the opportunity to service you while at the same time recoup some of their financial loss. Please, dear brothers and sisters, remember your brethren and do all you safely can to alleviate any financial strain on others. May we hear of yeshuos, refuos and besuros tovos! M.S.
A SURPLUS SOLUTION When my son was diagnosed with celiac disease, I was overcome with confusion and fear. What would this mean for my son? What would he eat? Eventually I learned that there was an abundance of delicious products for the glutenchallenged, and I relaxed as I realized he would not be as deprived as I had feared. But gradually, as one grocery order followed another, my excitement turned into dismay. Gluten-free products are expensive! Just a small bag of gluten-free bread, for example, often costs more than double the price of a regular loaf. I debated about cutting back on the cake, snacks and pizza mixes, since they aren’t an integral part of a healthy diet, but decided against it; I wanted him to be able to enjoy a Rosh Chodesh doughnut together with his classmates, a glutenfree pizza with his family, and some chocolate chip cookies with his friends. Then Pesach came. My son was thrilled at the variety out there. Almost everything in the store was okay for him! He was just like everybody else! Then Pesach went, and I wondered about people’s leftover Pesach products, which don’t get touched once Pesach is over. And one day I heard about a woman who opened a post-Pesach gemach so that people could get rid of their unopened packages of food, while spreading happiness and relief to families on a gluten-free diet at the same time. All types of unopened foods are fair game: cookies, cakes, potato starch and potato chips. Macaroons, frozen kugels and Pesach rolls and pizza. The idea is so simple, yet can be such a help for families who often have more than one member with celiac disease or gluten sensitivity. So many losses In so little time So much pain It staggers the mind As this terrible plague passes through the land, we are all left reeling by the shocking transformation the world has so quickly undergone. Formerly thriving businesses are hustling for every penny, the schooling of our children has become a complex matter, and families are shuttered inside, far away from the ones we love. Shuls and batei midrashim are desperately longed for — but a sefer in seclusion is our tafkid now. More painful still is the loss of so many precious Yidden. One by one, they are taken from us, leaving behind so many new widows and orphans. New almans, too. Our ateres zekeinim, those older and wiser, are succumbing at an astonishing rate, the light of these gems fading, leaving behind a void that is acutely felt. We are so confused. There is little rhyme or reason that our earthly eyes can see, no way to understand why so many are falling so deathly ill. The burden of pain is shared by all. May Hashem comfort us soon.

PA RS H A S T Z AV A king had many servants to manage his large palace and grounds. The king gave a list of instructions that the servants were to perform once each week. The servants were to polish all of the king’s gold and silver vessels, cook all of the king’s favorite delicacies, wash and iron all of the king’s garments, make sure that the palace and grounds were spotlessly clean at all times, and so forth. In addition, the servants were each required to keep their own appearance neat and presentable at all times. Also, to make the palace a pleasant environment in which the king would want to dwell, the servants were required, in addition to showing reverence to the king, to maintain a calm and peaceful relationship with one another. The servants were scrupulous in meeting all of the king’s demands — well, almost all. All of the servants understood the
great importance of certain rules, such as cooking the king’s favorite meals and keeping the palace clean. But most servants also felt that their relationship with one another was their private business, and between themselves they squabbled. Other servants found small details to be unimportant. One servant felt that it wasn’t necessary for the golden vessels to be polished each week when they still looked perfectly fine, so he skipped his turn on that job. But there was one servant who did it all, and he did it with reverence and joy. Day after day, week after week, and year after year, he made sure to do everything the king asked, down to the tiniest detail. One day, the king called this servant in for a private meeting and informed him that he had been keeping careful watch over all of the servants for many years. The king was well aware that the other servants were cutting corners, and he was also aware of the loyal devotion of this particular servant. The king confided in the loyal servant that, being childless, he had been searching for an heir to his kingdom. The king said he could find nobody more worthy than the loyal servant, and so he chose the servant to be his son and heir. It says in this week’s parsha, “And the Kohen shall put on his linen tunic, and he shall don his linen trousers on his flesh. And he shall lift out the ashes into which the fire has consumed the burnt-offering on the altar� (Vayikra 6:3). The Kohen is required to don the bigdei kehunah for the seemingly mundane task of cleaning out ashes after the fire burned down. Rabbeinu Bachya concludes from this that even the simple act of removing ashes is part of the holy avodah.

There are 613 mitzvos in the Torah. If we are zealous to perform each and every mitzvah with equal reverence, no matter how small the mitzvah may seem in our eyes, then we can truly be called avdei Hashem. But if we only fulfill the mitzvos that seem big in our own eyes while overlooking others, chas v’shalom, then we are not truly serving Hashem. Instead, we are serving our own will, picking and choosing. “Be as careful with a minor mitzvah as with a major one, for you do not know the rewards of the mitzvos” (Avos 2:1). Likewise, it says, “Run to pursue a minor mitzvah, and flee from a transgression. For mitzvah goreres mitzvah...” (Avos 4:2). When Moshe Rabbeinu was facing war against Og, Hashem told Moshe, “Do not fear him, for I have delivered him, his people and his land into your hands” (Bamidbar 21:34). Rashi explains that Moshe had been afraid to go to battle with Og, because Og did a mitzvah by informing Avraham Avinu that Lot had been captured, enabling Avraham to save Lot (Niddah 61a). R’ Moshe Feinstein, zt”l, in his sefer Darash Moshe, points out that even a small mitzvah performed by one such as Og can be a powerful zechus. Indeed, we learn from Pirkei Avos (4:11) that a person who performs a single mitzvah acquires a malach of protection. Every mitzvah we do carries great weight. “Eitz chaim hi lamachazikim bah v’som’cheha m’ushar — It is a tree of life for those who grasp it, and those who draw near it are fortunate” (Mishlei 3:18). We are living in challenging times. We need to uphold the Torah, and we uphold the Torah by treating every mitzvah with great reverence, no matter how great or small it may seem in our eyes.

Tears and Tefillos as Coronavirus Continues The inconveniences of just a week ago hardly seem to matter as the coronavirus has begun taking its toll with a vengeance in Jewish communities all across the tri-state area. The difficulties of distance-learning and stresses of having children home indefinitely have paled by comparison as people are finding themselves adding yet another name to their Tehillim lists or, worse yet, are seeing their lists of those in need of refuah get shorter as victims young and old succumb to the deadly virus. The numbers in New York State alone, the epicenter of the United States coronavirus epidemic, are daunting, the 10,356 cases reported on Sunday, March 22, by Governor Andrew Cuomo swelling to 66,497 just eight days later. New York City’s numbers rose from 6,211 to 37,453 over the same time period, while Rockland’s totals grew nearly tenfold from 262 to 2,511. With the virus striking during the busy Purim season, numbers in close-knit Jewish communities have been particularly high, prompting rabbanim all over the world to instruct members of their kehillos to stay home, without any guests, for Pesach, to limit the spread of the virus. Because the tri-state area has seen such a large number of coronavirus cases, the Centers for Disease Control has urged all New York, New Jersey and Connecticut residents
to avoid any non-essential travel for fourteen days. Hoping to avoid a coronavirus explosion within its borders as Pesach arrives, Florida ordered all tri-state area visitors into a mandatory fourteen-day quarantine, confining them completely inside their homes, and banning even trips to essential stores, friends or outdoor minyanim. Police checkpoints have been set up at airports and on all roadways leading into Florida, with authorities recording driver information and Florida addresses. Motorists

are also being warned that local law enforcement will be making random spot checks over the next two weeks to ensure compliance with the quarantine order, with violators subject to a 60-day prison term and/or a $500 fine. All vacation rentals in Florida have been temporarily suspended, with violators warned that they will face stiff consequences. Rav Chaim noted that anyone who davens in a minyan at this time is classified a rodeif, and that shuls or institutions that violate health department orders should be reported to the authorities. While Governor Andrew Cuomo announced that his PAUSE program, which suspended non-essential business and travel temporarily for two weeks, would be extended until at least April 15, President Donald Trump took things one step further and extended his social distancing guidelines until April 30. Having backed away from his earlier optimistic target date of April 12, President Trump offered a small bit of good news, saying that he hopes that by June 1 the country will be well on its way to recovery, reported The New York Times. “During this period, it’s very important that everyone strongly follow the guidelines,” said President Trump. “Have to follow the guidelines.” Hoping to meet the growing demand for hospital beds, the Army Corps of Engineers will be constructing temporary hospitals at the Brooklyn Cruise Terminal, Aqueduct Race Track, the New York Expo Center in the Bronx and CUNY Staten Island. The four facilities will create an additional 4,000 beds, with the 1,000-bed naval hospital ship, the USNS Comfort, and its staff of 1,200 steaming into New York Harbor on Monday morning to accommodate some of the city’s non-coronavirus patients. In an impassioned Monday afternoon plea, Cuomo called on health care professionals from states that have not been hard hit to come to New York to help alleviate staffing issues. “If you’re not busy, come help us please and we will return the favor,” said Cuomo, adding that when the crisis has passed in New York, health care professionals would happily roll up their sleeves and pitch in in other hard-hit areas. Victim of Shabbos Chanukah Terror Spree Buried in Monsey Nearly three months to the day after he was viciously attacked by a machete-wielding man on Chanukah night, a 72-year-old great-grandfather succumbed to his injuries. Reb Yosef Neumann, z”l, of Monsey passed away on Sunday night at the Friedwald Center for Rehabilitation and Nursing in New City. He was one of six people brutally slashed by Grafton Thomas in the Forshay Road home of Rabbi Chaim Leibish Rottenberg. Neumann opened his eyes briefly in February after 59 days of being in a coma, fleetingly sparking hopes for his recovery. The levayah for Neumann was held on Monday afternoon at the Viznitz cemetery on Route 306, with a relatively small number of mourners turning out to pay their respects in person because of social distancing protocols. Many wore face masks and gloves in the hopes of keeping germs at bay. The Journal News reported that Rockland County District Attorney Thomas Walsh said that he intended to indict Grafton Thomas on charges of murder in the second degree, although most of the court system is currently shut down because of the coronavirus pandemic. Expressing his regrets upon hearing of Neumann’s death, Governor Andrew Cuomo announced that he was renaming his proposed anti-hate legislation the “Josef Neumann Hate Crimes Domestic Terrorism Act” in his memory. “The morning after that horrific night, I went to Rabbi Rottenberg’s home and apologized on behalf of the family of New York, and I promised him we would enact a first-in-the-nation law that calls this hate what it is: domestic terrorism,” said Cuomo. “These acts of hate may have started in New York, but they must end in New York,” added the governor.

Recap: In 2014, Joe Ludmir arrives in Bratislava for a visit. Binyamin gets used to his new job as shomer. One night, while he’s staying with a niftar, the deceased’s daughter approaches Binyamin. She asks him to hold on to a certain precious envelope for her until after the levayah. When Binyamin opened his eyes, his roommates had already left. He leaped out of bed groggily, washed his hands, and hurried to get ready. Somehow, he got through the morning in a hazy fog of exhaustion, though he did notice that Shabsi was nowhere to be seen. “What’s up with you, Potolsky?” his chavrusa, Zilberman, probed after a while. “You don’t look very with it today.” “Exhaustion,” Binyamin said, passing a hand over his forehead. This hadn’t happened the other times. He was an energetic person by nature, not someone who needed lots of sleep, and if he missed a night or half a night of sleep, he usually managed until he was able to catch up. “Looks like more than just exhaustion to me…” Zilberman studied him closely. “Your face is very red.” “Could be,” Binyamin said. He stood up. “I’m going to get a cup of water. I’ll be right back.” “What’s been going on at night that’s making you so tired?” “At night?” Binyamin echoed. “Nothing special.” Zilberman looked at him skeptically.
Binyamin knew he’d have to tell him at one point; otherwise, Zilberman was likely to imagine all kinds of dreadful things his chavrusa was up to at night. “Nothing special? And the night before?” “Really, nothing much.” Binyamin had already taken a step backward. “I went to learn someplace.” Let someone say that wasn’t true! He strode out of the beis midrash. Why did he have the feeling that this was happening to him now only because Yaakov had told him that he would yet see the damage these nights were causing him? Who had asked Yaakov to get involved? He would try to skip lunch and catch up on some sleep. Over the last month, he must have accumulated enough of a sleep deficit to make his body rebel. Energetic or not, Binyamin realized, he hadn’t slept for four nights over the past three and a half weeks, and it was probably taking its toll. Did that make Yaakov right? Wrong? Maybe he just needed to set some boundaries for himself. Just as he hadn’t been embarrassed to tell Shabsi that he could only do this job when the niftar

There was noise in the hallway, and after twenty minutes of tossing and turning, Binyamin decided that it was a waste of time. With glassy eyes, he tied his shoes and left the room. There was no point in trying to sleep, and there was probably no point in trying to get some food for himself in the lunchroom, because the tables were probably empty. Maybe he would just dash home to drop off his laundry and grab something to eat at the same time.

“Tell him I said that also!” Bentzy chimed in. “Because there’s yummy chicken today! You know how long it’s been since Mommy made chicken on a regular Monday? We gotta eat it all up!” Elisheva smiled and waved her daughter off, ignoring Bentzy’s inadvertent barb. It hurt her to hear it. Baruch Hashem, there was always chicken for Shabbos, but in the middle of the week, she usually used ground chicken and prepared patties, or made a big soup from turkey bones. The children rarely enjoyed a delicacy of roast chicken on a regular weekday. It had been Eliyahu’s decision, after he had asked and the rav said that he should certainly take the change from Korman. “It’s not tzedakah; don’t worry,” the rav had said. “And it’s not ribbis either. It’s a deal that you made, and you met all of your commitments. This is just part of it.” Elisheva had thought of using the money to cover a tiny drop of their debts that had mounted since Miri’s wedding. She knew how they weighed on Eliyahu’s mind. But he had rejected the idea. “No,” he said. “Just like we’ve managed to make the payments until now, baruch Hashem, we’ll manage going forward. This money should not be going toward debt.” She thought perhaps he wanted to give it to the young couple, as the lawyer had suggested, and she mused aloud that while Tzippy didn’t have a job yet and Miri did, it seemed to her that Miri was having a hard time with all of the abundance being poured onto Tzippy lately, and maybe they should give her some of this extra money. But that wasn’t what Eliyahu had in mind either. “Miri
works, and Yaakov gets a stipend from kollel, just like Peretz does. Both couples will manage just like everyone else. I want you to buy something for yourself with this money. A new washing machine, for example. Wringing out the laundry by hand for a month and a half, ever since our old one broke, is too much. Besides that, it wouldn’t hurt to

What about the little ones?” She felt herself blushing. “Devoiry has three winter tops,” she said. “She just recently decided that she only likes one of them. So don’t take her complaints too seriously. On the other hand, she could use a coat, and Riki does need a few things to wear…” She paused for a moment. “You’re right — I didn’t get to buy winter clothes with the whole wedding pressure.” Time pressure and money pressure. “So now you have the time,” he said. “Order chicken, we’ll buy a new washing machine, and you can do some serious clothes shopping for the kids, and get some other things you need at home.” “It reminds me of the joke of the guy who won five million shekels in the lottery. When they asked him what he was going to do with the money, he made a list of some gemachim to whom he owed money.” She chuckled. “When they asked him what about the rest, he replied,
‘They’ll have to wait.’” “Now that I see what it’s like to marry off girls these days, this joke rings so true, it’s almost not funny…” Eliyahu had said, but he’d smiled in spite of himself. So Elisheva had ordered two cases of chickens on the previous day, and in the evening she’d gone out and ordered a new washing machine. It wasn’t a very expensive model, but it was supposed to be good — relative, of course, to the quality of today’s appliances. This morning she’d gotten up early and made a delicious lunch. Did it make her a materialistic person if she was overjoyed at the thought of her new washing machine that would arrive later in the week, or by thinking about the delicious food she’d prepared and the big shopping trip waiting for her later today? She convinced herself that it did not. She didn’t need the hot meal or the new clothes for herself; she was simply a good Yiddishe mama who was happy that Hashem had sent her family some reprieve. And taking this reprieve into account, Bentzy’s remark had touched a raw nerve. It was similar to the way she’d felt, again and again, when preparing for the wedding and watching Tzippy’s eyes sparkle. Eventually she’d gotten used to the constant twinge that told her that she wasn’t the one giving to her children; someone else was doing it. The money was not hers. Perhaps it wasn’t tzedakah, but it was from someone else, a stranger. It was all right; perhaps this feeling was here to remind her that nothing that she gave her children was ever really her own. Not the money, not the shopping, not the smile and not the strength. It was all from Hashem, of course. And yet… and yet… it still hurt. To be continued...

Trump Approval at Close to 50% Amid Coronavirus Outbreak THE PULSE: President Trump's approval ratings rose an average of 5% since the beginning of the coronavirus outbreak. According to recent Gallup polling, his overall approval is at 49%. The Real Clear Politics average of polls has his approval rating at an all-time high of 47%. A recent Washington Post-ABC News poll had Trump and Biden in a virtual dead heat, while a FOX News poll showed Biden retaining a nine-point lead over the president. THE POSITIVE: The administration has received praise for marshaling three recovery bills through Congress.

These billion-dollar bills have had a positive effect on the stock markets. They will provide much-needed relief to individuals and companies suffering from the economic impacts of the coronavirus shutdown. The administration has also reached out to automakers and other titans of the manufacturing sector in a bid to get them to produce much-needed medical supplies and ventilators. Trump has also ordered military hospital ships to deploy to virus hotspots. THE BACKLASH: The Trump administration has also received much criticism over its handling of the coronavirus pandemic. Many fault the president for initially downplaying the severity of the outbreak, when he claimed in late February that the disease was "totally under control" and that "like a miracle, it will disappear." There is also a belief that the administration squandered
precious time in February that should have been used to acquire medical supplies and to develop testing kits. The president has also received criticism for promoting hydroxychloroquine as a cure to the coronavirus even though it is not proven to be medically effective. The ensuing run on hydroxychloroquine caused many states to ban prophylactic dispensing of this medication. Additionally, some states experienced shortages of hydroxychloroquine. There is a real concern that lupus patients who use hydroxychloroquine for treatment may be unable to fill their prescriptions. Lastly, the president's declaration that he intends to reopen parts of the country to business in about two weeks was met with fierce pushback by Democrats and Republicans alike. The president is concerned about extensive harm to the economy. Still, many health experts believe that ending isolation requirements too quickly will result in the continued spread of the virus and will cause worse damage to the economy. THE IMPACT: In a time of crisis, people look for leadership and direction. President Trump has provided a more optimistic and upbeat assessment of the situation than many other health care professionals and politicians. It appears that his approach is resonating with many Americans who are hopeful that a best-case scenario will prevail.
Draft Cuomo Campaign Begins THE PULSE: New York Governor Andrew Cuomo has taken a leading role in battling the coronavirus. Cuomo has been out on the front lines, fighting for supplies and ventilators for his embattled state. Cuomo showed decisive leadership when he forced the hand of NYC Mayor Bill de Blasio and ordered the shuttering of all NYC schools. Cuomo's public stance on the virus has, at times, put him at odds with the Trump administration. Last week President Trump appeared to downplay Cuomo's ventilator requests but ultimately backed down from challenging it. Cuomo actively enabled the surge of hospital capacity in NYC. With help from the federal and state government, the city is in the process of converting the Javits Convention Center into hospital rooms and is creating temporary hospital capacity in tents. Cuomo has also fought to protect New Yorkers from the draconian measures designed to prevent their entry into neighboring states. He successfully lobbied against a federal quarantine of New York City. Cuomo's active and energetic leadership has caused many to believe that he would be the best candidate to face off against President Trump in the fall. A grassroots campaign to get him nominated has begun. THE IMPACT: Joe Biden has a commanding lead in the
delegate count. No one but Biden can realistically secure the nomination. However, as the virus continues its rap-
id spread, Biden has faded from the national spotlight. His few public appearances to discuss the virus have not been a resounding success. Biden's lackluster appearances have caused many to wish for a Cuomo candidacy. Some political commentators have gone as far as to claim that the DNC will find a way to make it happen. Such an outcome is highly unlikely. However, people may begin to clamor for a leader of the pandemic fight to carry the Democratic banner in October. If so, Biden may need to renege on his promise to pick a female vice president. He may find it prudent to choose a running mate like Governor Cuomo instead. It should be noted that Governor Cuomo's father, Mario, who served as Governor of New York State from 1983 to 1994, was often touted as a potential presidential candidate, but he declined to ever seek the Democratic nomination.
Alaska, Wyoming, Hawaii and Ohio Change to All Mail-In Primary Format THE PULSE: Ohio Governor Mike DeWine signed off on a sweeping relief bill that included changes to his state's presidential primary. The legislation set up an all mailin primary scheduled for April 26. Alaska, Wyoming and Hawaii also switched to a mail-in-only format. They had their primary dates initially set for April 4 but extended their voting deadlines to allow voters an adequate amount of time to access their ballots and return them to the state election boards for tallying. THE IMPACT: The DNC has encouraged states not to
delay their primaries, but rather to adopt a mail-in format. The success or failure of these mail-in primary elections will likely determine how other states proceed with their elections.
June 2 Now a Major Date on Primary Calendar THE PULSE: June 2 is the new "Super Tuesday" of the primary calendar. Eleven states are scheduled to hold their primaries on that date. Six of those states had scheduled their primaries on earlier dates but pushed them off due to coronavirus social distancing concerns. THE IMPACT: Changes in primary dates have upended the entire nominating process. The orderly structure of the state voting schedule has become chaotic. Wisconsin remains the lone state intent on sticking to its scheduled primary date. Governor Tony Evers is remaining firm to his plan to hold the vote on April 7. He intends to allow mail-in voting but also to enable in-person voting by placing hand sanitizers in all polling places. Lawsuits have been filed attempting to force the governor to postpone the election.

Left behind is a father, son, husband, brother and friend who didn’t get a chance to share his last goodbyes. As ma’aminim bnei ma’aminim we are certain that the unprecedented tears and tefillos from Yidden around the world will make an impact in Heaven, and that we will soon find ourselves on the other side of this terrible scourge, b’ezras Hashem.
It is hard to imagine a time of the year when a full shutdown would work well, but this much is certain: Having no school or business operations before Pesach makes matters uniquely hard. The Pesach hotel programs have long been canceled, most parents over the age of 60 have wisely requested that their children and grandchildren not come for yom tov, and the regular cleaning

when everyone is staying home as much as possible, one group stands out as they run toward the fire without hesitation. I’m referring, of course, to the Chevra Hatzolah, who have shown incredible heroism in recent weeks — responding to a call volume, which in Boro Park, has reached five times the organization’s average! One husband quipped that this year he can’t help his wife clean for Pesach by going to shul and being out of the way for a few hours... A number of leading rabbanim and poskim around the world have told their followers that this year they should not be as stringent with meticulously cleaning every nook and cranny, and that certain other chumros are just that — chumros — and should not be followed at their family’s expense. For families with young children, the lockdown has presented a world of challenges. While many parents have made peace with not cleaning for Pesach as thoroughly as other years, having children at home for weeks would be tough even if it wasn’t the month of Nissan. Feeding three meals to an entire family every day is not easy, and thankfully, the government has stepped in and authorized schools to provide meals to all children. To their credit, the local schools have been offering nourishing, quality meals and snacks to local families, and in Monsey, schools are even home-delivering these packages. In what has become an amusing phenomenon, parents have been sharing photos of their daily food packages, with chedarim and schools winning bragging rights and brownie points by providing better and tastier food options. A number of schools have helped ease the parents’ burden by offering classes over the phone or via video stream. Some also set up hotlines where children can call in to daven along, listen to lessons, and continue learning about Pesach. Hatzolah members who have tested positive are required to do a full quarantine before being allowed to rejoin the force. In a conversation with Boro Park Hatzolah Administrator Motty Fleisher, I learned that a number of Catskills Hatzolah members have been called upon to increase the organization’s capacities, and that three or four dispatchers are being used at once to respond to the high call volume, instead of the regular two. In addition, three Catskills Hatzolah ambulances have been put into rotation in Brooklyn to meet the growing demand. A number of patients have received advice from their doctors to receive supplemental oxygen at home instead of going into the overwhelmed emergency rooms. For these people, Hatzolah arranged with Yachad D’Bobov for oxygen concentrators to be delivered to their homes free of charge. I asked Mr. Fleisher if Hatzolah is running low on equipment, specifically PPE, and he shares that, at least for the time being, the organization has everything needed after a number of kindhearted individuals donated many items from their own stock. Mr. Fleisher reiterated the need for continued social distancing, as our community still has many people at risk and Hatzolah is still being flooded with phone calls.While it is hoped that the trends will soon improve, people should understand the gravity of what we’re facing. He ends by saying that “in these tough times, it has been heartwarming to see the dedication of Hatzolah members who are putting themselves at risk to help our fellow Yidden.” While the brave volunteers of Chevra Hatzolah work on the frontlines, there are many silent heroes who are doing hard work out of the spotlight. Chesed Shel Emes volunteers are often called upon to perform the taharah and assist with transport and burial. On the surface, the organization is known for taking care of those with no family, but in reality they always stand ready to assist individuals who don’t belong to a kehillah or those in special circumstances. During this crisis, Chesed Shel Emes’ efforts have been kicked up a notch. The traditional chevrah kadisha organizations cannot handle the increased caseload, and many of the chevrah kadisha members are either ill themselves, are of an age at risk, or are inexperienced in working with cases that require special care and handling. Chesed Shel Emes has jumped in and is filling this void. I spoke to the group’s Director of Operations, Mayer Berger, on Sunday afternoon, and he told me that, unfortunately, their teams have been doing taharos non-stop since the end of Shabbos. In addition, volunteers have been providing transports from hospitals and to beis hachaims, and their members have mobilized in unprecedented fashion. The organization has also prepared a contingency plan that includes teams of volunteers from less-affected areas who can be brought in if additional manpower will be required, Hashem yishmor. Mr. Berger noted that the organization is requiring every member to go above and beyond with personal protection, even in cases that don’t seem to be linked to the virus. Some members have shared links to the organization’s fundraising page and asked friends to help Chesed Shel Emes cover the rising costs of these PPE. Our rebbes have taught us that “A little light dispels a lot of darkness.” The achdus of Klal Yisroel and the efforts of these courageous volunteers will, with Hashem’s help, dispel the darkness around us. Let us hope that this month of Nissan will once again be a month of miracles for our entire nation.

Answering Even More Corona-Related Questions on the Minds of Many It’s been two weeks since the schools and shuls were closed, and yet we’re hearing more and more tzaros. Is social distancing a failed strategy? Chances are that the people who passed away and those seriously ill now were infected before the lockdown was initiated. It generally takes a couple of days for symptoms to show up, a few more days until they become severe and a few more days until ventilation is required. Additionally, it is possible that someone in their home was infected beforehand and passed it on to them at home after the shuls were already shut down. Experts suggest that it takes a couple of weeks before the effects of a lockdown can even begin to be measured.
I have all COVID-19 symptoms, and yet my test came back negative. Does it mean I’m not infected? Tests are created in laboratories, but in the real world nearly every test turns up a significant number of false negatives. This refers to how many times the test doesn’t pick up the virus in someone who is truly positive. For the coronavirus, the percentage of false negatives has been estimated to be anywhere from 15 to 40%(!). These percentages are higher in the rapid tests than in the more established lab tests. If you are showing symptoms, you should definitely selfisolate even if your test comes back negative.
It appears that men make up the vast majority of victims we are hearing about. Is there any medical reason for this? This is the case when looking at data from a number of countries. Some have suggested that men’s behavior might be somewhat responsible as men smoke more, drink more, are less likely to obey what health officials command from them, and more. However, this doesn’t explain the entire disparity, and some scientists have

suggested that there must be an underlying biological reason for this discrepancy.
Is it possible to have the coronavirus without any symptoms at all? Yes. The percentage of patients who fall under this category is very hard to pin down as there just isn’t robust-enough testing for the general population. However, it is nearly certain that a decent percentage of asymptomatic people have had — or still do — this disease, and they might be spreading it around to more vulnerable populations. This is another reason why social distancing is so important right now.
The stores are running low on bottled water. Can the virus spread through our water supply? The CDC says that the virus has not been detected in water. Even if a virus would enter the water supply, every municipal drinking water system has filters and disinfectants in place that would remove or inactivate the viral particles. Many people are hoarding water for fear that the stores will run out of them, but if you can’t find bottled water, rest assured that sink water is perfectly safe from the coronavirus.
There’s lots of talk about the economy entering a recession. How is that measured, and is it happening already? A recession means that economic activity has declined significantly over a period of a few months. The generally accepted indicator of a recession is when the GDP (Gross Domestic Product) is negative for two quarters of the year, meaning that the total economic output of all business is less than the quarter before. The National Bureau of Economic Research is the group that officially declares a recession, but they use more complex methods and only announce it months later. It appears likely that we are entering a recession, but it’s too early to tell for certain.

This column was prepared way before we were hit by the coronavirus and all of its unfortunate side effects. The following intro is all the more appropriate today than I could have imagined when I jotted these few lines weeks ago. This year, more than ever, if all you can manage is to put up a pot of chicken soup, do just that, and may we be zoche to eat the korban Pesach in Yerushalayim.
After weeks of scrubbing and cleaning, it is so rewarding to enter the cooking stage. Some years I get there earlier, and some years… I don’t. Those times I stick to the basics, and yom tov has proven to be just as joyous and beautiful even with simple fare. The following collection of recipes require a bit more time than putting up chicken and potatoes. If this year turns out to be too hectic, don’t fret! Next Pesach may just be your chance. Also, here’s a reminder: It is permissible to cook on yom tov. One isn’t required to have a fully stocked freezer to ensure a kosher chag. Besides, fresh food tastes best!

Serves 4 A dark turkey specialty that serves as a great veal substitute for those who don’t use meat. (I chose not to include the method of the potato ball garnish, for no Yiddishe housewife should be guilty of carving these balls at zero hour.) Ingredients 2 dark turkey cutlets, 1 pound each Salt Potato starch Oil or schmaltz 1 cup sauteed onions 2 T. chrein ½ small knob celery 6 oz. chicken soup
Directions 1. Cut each cutlet in half. Sprinkle with some salt and dredge in potato starch. 2. Heat schmaltz or oil in a 10” frying pan, and sear for a half to 1 minute on each side.

3. Remove cutlets and place onions in a pan. Top with cutlets and then chrein. Slice knob celery, and add to the pan along with the chicken soup. 4. Simmer on a low flame for 2 to 2½ hours.

Latke Surprise Treat your family to a merge of two Pesach favorites: chicken cutlets fried in latke batter. Delicious! Last year our butcher was short on chicken schmaltz and sent duck fat instead. I dared to try it, and it was a hit with everything I cooked! This dish was especially enhanced by the delicate duck flavor. All you need is a scant amount of fat in a nonstick pan and a low flame. Ingredients 4 chicken cutlets
Citrus Capons With Sweet Potato Stuffing
Moist, flavorful and elegant! For a simpler option that is also gourmet, stuff regular chicken bottoms with the filling recipe below. Ingredients 6 dark chicken capons 1 cup sauteed onions, divided 3 sweet potatoes, sliced 2 T. oil or schmaltz (plus some for rubbing) Salt, to taste Juice of 1 orange (⅓ cup)
8 potatoes
Juice of half a grapefruit (⅓ cup)
8 eggs
2 T. chrein
4 tsp. salt Oil or duck fat, for frying
Directions Directions 1. Cut each cutlet in half to obtain two thin slices. Then cut each one in half in the width. 2. Grate potatoes with a fine grater. Mix with eggs and salt. 3. Heat oil in a nonstick pan, drop some batter into the pan, and flatten to the size of a cutlet. Place cutlet over batter and cover with more batter. 4. Fry for approximately 7 to 8 minutes on each side. To prevent browning of potatoes, prepare in small batches as needed.

1. Heat half a cup of sauteed onions in a pan. Add sweet potatoes and cook until soft. Mash very well with oil and some salt. 2. Rub the inside of the capons with some oil or schmaltz. Place 2 to 3 tablespoons of the potato mixture onto each capon and roll it up. 3. Place remaining sauteed onions into a 9x13” pan. Place capons seam side down onto onions and rub tops with prepared chrein. Pour juices over chicken. 4. Bake at 350° for 2 to 3 hours. Or freeze and bake at a later point at 350° for 4 to 4½ hours.

Even a seasoned balabusta who prides herself on home-cooked meals suddenly realizes just how much she relies on storebought “basics� when Pesach comes around. I actually find this lack of choices liberating, as I enjoy the challenge of creating exciting and special dishes with only so few ingredients. But for people who need a list of ingredients and directions to go with it, the following are recipes for standard kitchen staples.

“Bread” Crumbs Use these crumbs to coat chicken, fish, mashed potato balls or to top a vegetable kugel.
Ingredients 4 egg yolks About 1 cup potato starch 3–4 T. oil Pinch salt
Directions 1. Mix all ingredients with a fork until crumbly. 2. Put an ungreased frying pan over flame and add the mixture, breaking up large clumps as it cooks. If crumbs are too large when done, pulse in a food processor for a few seconds.

Mayonnaise Creamy and rich, this is a great accompaniment to all of your favorite foods. It also serves as a perfect base for homemade salad dressing.
Ingredients
Directions
3 egg yolks
1. In a food processor or blender, or using a hand blender, blend egg yolks with onion until light and bubbly.
1 T. chopped onion
2. With the blender running, slowly pour 1 cup of oil in a steady stream over yolks. Mixture should thicken.
1½ cups oil, divided 2 T. lemon juice 2 T. sugar 1 tsp. salt
3. Add lemon juice, sugar and salt. Mix well. 4. Add remaining oil and blend again just until well combined. Note: If the mayo doesn’t thicken in step 2, don’t fret; It happens to all of us (it actually happened to me when I was making the mayo for these pictures). Just blend an egg white well, and with the blender running, slowly pour the flopped mayo in. Then continue with the rest of the directions.
Ketchup With way more kugel and french fries being consumed during Pesach than the whole year combined, shouldn’t they be served with their best friend?
Ingredients 4 ripe plum tomatoes, peeled and diced
1 tsp. salt 3 T. lemon juice
1 large onion, finely diced
4 tsp. wine (see note)
3–4 T. sugar
1 cup water
Directions 1. Place all ingredients in a small saucepan and simmer over low heat for 2 hours. 2. Blend in a food processor or with a hand blender until smooth. Note: You may use lemon juice instead, but the wine gives a more authentic flavor to the ketchup.

Salad Dressing This is an all-purpose dressing for every type of salad. The horseradish gives it a tiny bit of kick in place of the year-round seasoing of black pepper or mustard. Makes about 1 cup
Ingredients ½ cup mayonnaise (recipe above) ¼ cup water 2 T. lemon juice 2 T. sugar 1 tsp. salt 1 T. finely grated onion 1 T. finely grated horseradish (chrein), optional
Directions Measure all ingredients into a container with a tight-fitting lid, and shake vigorously to combine. Alternatively, blend with a hand blender.
Veggie Dip Combine equal amounts of ketchup and mayonnaise with some salt to taste. Cut carrots, zucchini, cucumbers or cooked beets into thin sticks. Set them out neatly on a platter along with some dip for a healthy snack that’ll keep everyone happily munching.

Imagine being a contestant in the ultimate cooking contest. The rules are you that have to prepare everything from scratch — the entire menu, from condiments to compote. You have a very limited basket of ingredients, which does not include almost any of the world’s most basic, versatile and filling ingredients, and you need to hold the interest of the same group of food panelists for nearly twenty meals straight! Sounds familiar? Welcome to Pesach! To me, Pesach is a time when less equals more — and I’m not talking about less food equaling more money at the checkout counter. It’s a time when many heimishe cooks get to experience the unique pleasure of working with simple, real ingredients and getting back to the basics. It’s true that nowadays there are so many kosher l’Pesach products out there that one who avails themselves of them could almost not notice the difference. And, of course, there’s always takeout catering and gourmet, five-star Pesach hotels (though perhaps not this year). I’m certainly not k’neged any of those options for those who choose them, but for those of us who by minhag or by inclination go the route of only
(or almost only) homemade foods, it can feel both overwhelming and exhilarating. At the Safran house, the only prepared products we (officially) use are oil, sugar, salt, tea, grape juice and wine. I say “officially” because over the years, coffee (a week without coffee!), diet sweetener, and the occasional chocolate bar to keep the kinderlach, and later the einiklach, awake and interested at the Seder have crept their way in. If you’ve noticed, there are no spices listed in that menu (an eater’s dream — or nightmare, depending on the eater). No packaged, dried spices, that is. But what are spices, or at least herbs, anyway? They’re leaves. So, before Pesach, I stock up on a va-

riety of wonderful fresh, bug-free herbs — dill, cilantro, basil, parsley, mint leaves and more.* Now, checking, washing, plucking and chopping leaves before every recipe is by no means as convenient as shaking spices out of a jar. I won’t try to tell you it is. So what I do is wash them all at once before yom tov and bag them in individual Ziplocs. I put a sheet or two of paper towel into each bag to absorb excess moisture, and line them up like ducks on a shelf on my refrigerator door. Then, as needed throughout
each compartment of an ice cube tray, cover the tray with aluminum foil, and freeze it. But for me that’s already too much of a patchke, and frozen fresh herbs just don’t taste as good as fresh, fresh herbs. You can also dry and flake the herbs in advance, for that matter, but why do that? I don’t stop there. Many other spices are available in fresh, whole form and can be similarly purchased and processed. Roots, such as fresh ginger and turmeric, to name two, can be prepared in advance, and those of you (us) who only use nuts in the shell can also buy whole coconuts, and crack and shred them in advance. Then, of course, there is the perennial pair of flavor kings, onions and garlic*. For the former, I chop and fry a whole week’s worth at once. Fry at least twice as many onions as you think you could possibly need. You’ll need them. Plus, when you really fry them until they caramelize, for maximum taste, they shrink down to (almost) nothing. A good tip when mass-frying onions is to not add the oil right away. Rather, just add the chopped onions to the heated pan along with a decent sprinkle of salt. The salt leaches the moisture from the onions, and if you stir them occasionally until the onions just start to stick to the bottom of the pan, and then add the oil, the onions will fry quick and clean. If you do otherwise and add the oil right away, you’ll end up with a mishmash of oil and water (moisture from the onions) at the bottom of the pan, and it will take twice as long to prepare, as all the water has to boil out before the onions even start to fry. For garlic, I usually just use them clove by clove as needed. But if you’d rather avoid the joy of “garlic-fingers” throughout yom tov, you can also chop and freeze portions in advance (adding a little oil and salt for kashrus purposes, as per your minhag). In truth, you could also just refrigerate the whole batch in a plastic or glass container. Then there’s the fun of trying to make “storebought-tasting” products from scratch. When our kids were young and wondering why they weren’t getting some of the store-bought Pesach treats their friends were, we bought a small home cotton candy machine that used only one simple ingredient — sugar — to spin out flossy treats that sated the kids’ sweet tooths (teeth?) and kept our older ones’ hands busy making them the entire chol hamoed. Homemade potato
For those of us who by minhag or by inclination go the route of only (or almost only) homemade foods, it can feel both overwhelming and exhilarating. the chag, I grab one or more of these pekelech and pluck out the herbs I want to use. I suppose, if you really wanted to work hard to make it easy, you could pre-chop the herbs in a food processor, press a pinch or two into

chips require nothing more than skewering potatoes on a fork and “peeling” slices (after they were already officially peeled) directly into a skillet of hot oil until only a stub remains. And the same can be done with sweet potatoes and beets for a variety of flavors. I admit I overreached once, trying to make my own homemade cola. I’d heard that the basis of cola flavor was caramel, lemon and vanilla. So I cooked (caramelized) sugar until dark brown, made it into a syrup with water and more sugar, added some freshly squeezed and strained lemon juice, and then an infusion made from fresh, whole vanilla beans. I then poured some of this heimishe “coke syrup” into bottles of soda water. The result? Well… I liked it. But my kids were more than happy to wait out the week for the “real thing.” Come to think of it, that’s what excites me so much about back-to-basics cooking. It’s the real “real thing.” Using fresh ingredients, just the way Hashem made them, somehow makes me feel more connected to their Maker. And while it’s true we’re here to adapt and even “improve upon” the raw material of creation (i.e., bread… er, matzah, instead of wheat kernels; wine, instead of grapes), when we do that work of “improving” with our own hands, rather than giving the zechus to some big factory and ad agency, it somehow “improves” a part of us, too. The metzius is that life today is just too mechanized and rushed for almost all of us to live in a more back-to-basics way. But once a year, just for a week, to allow ourselves to feel what it was once like — the unique satisfaction and yishuv hadaas that comes with connecting a little closer to the Source — might be worth peeling a few potatoes for. Ostreicher’s cookies are associated with the strictest tradition and kashrus. To give you an idea, check out the side of their cookie package, where it notes in simple Yiddish font, “We sieve the flour and check the eggs.” But don’t take their word for it; discover the depth of their ehrlichkeit the way I did. When I was assigned this interview, I tried to search for the company’s contacts, assuming I would promptly find “ostreichers.com” as the domain name for a brand of such repute, but I didn’t. I tried several searches to no avail, until I picked up a package of cookies in my local grocery and tracked down a phone number by putting in their exact mailing address. “We don’t have a website,” confirmed Mr. Moshe Kaff, director and grandson of the founders. “Our brand is all about tradition.” It is no wonder, then, that a cookie steeped in tradition would be so popular on Pesach, too, when people generally stick to homemade goods. In this conversation with three generations, Mr. Moshe Kaff, his mother Mrs. Kaff, and his elderly zeide, Reb Yisroel Dovid Ostreicher, shlit”a, of New Square, the founder of the cookie company, we set out to find out more about the family business’ Pesach production. Reb Yisroel Dovid, can you tell us some background about yourself? I am from Debrecin, Hungary. During the war, I was in the little-known but notorious Gunskirchen lager, which was located deep in a forest a few miles from Mauthausen. I can only tell you that even Auschwitz didn’t beat this one. Since you have come to hear about our Pesach production, I will tell you about Pesach during the war. One of the laborious jobs we had to do was clear the snow from the deep trenches that had been dug to trap the Allied tanks. Slogging on in one of these fields on Erev Pesach, we found a crop of pietrishke growing, and we were so excited that we could make soup for yom tov. L’maaseh, the soup turned out so bitter, we ended up fulfilling the mitzvah of eating maror. The rest of Pesach was spent on a death march that lasted for days on end. We were not given food or drink, and people dropped like flies. Of 18,000 inmates, some 3,000 survived. I remember we came across a lone tree with sweet-tasting leaves. Literally, in one minute, there was not a leaf left; every leaf had been picked by us ravenous prisoners. It’s a nes that I survived the war. Baruch Hashem, I married soon after in Budapest, and in 1949, my wife and I moved to America.
What made you start a baking business? Back in the DP camp, I had learned engineering, but when I came to America, I was told my qualifications were worthless. So I went from job to job, even trying the post office where many Yidden worked then, until my wife, a’’h, pointed out that there were no cookies on the kosher market and suggested that I perhaps go into the cookie-baking line. I told her that I know nothing about baking, but she was a great balabusta and a perfectionist in the kitchen, and she assured me that she would help. She got hold of a recipe, went to the library several times to research the properties of dough, perfected the recipe she had — and only once she was absolutely happy with the results were Ostreicher’s cookies born. That was in 1964. Every morning I would daven k’vasikin, prepare the dough for the workers, and after the fresh-baked

cookies were cooled, weighed and packaged, I would go around to the local stores with my car to distribute them.
Were you matzliach from the start? I didn’t have the money to buy even secondhand machinery, so I went to the Skverer Rebbe, zt”l, and shared my plight. He straightaway gave me $500. Baruch Hashem, I was quickly matzliach, so I was able to repay that money, but I kept one $10 bill from the Rebbe. Until today I cherish it as a segulah for continued hatzlacha.

What makes Ostreicher’s cookies so special? Two things: our chumros and our healthfulness. Many companies rely on commercial pre-checked eggs, but we have a yungerman checking our eggs fresh every morning, without relying on any leniencies to leave them open overnight. Also, all of our flour is sieved with the highest level of stringency. In addition to the kashrus, my grandmother Mrs. Zissel Ostreicher, a’’h, was very particular that our products should not have any coloring or preservatives whatsoever, so children are not fed junk, but pure, wholesome cookies. Rav once came all the way down to us to give us a picture he found of the Rebbe doling out cookies from our bags! (See photo.) We also have clients who order our cookies to take to high-level business meetings with associates who don’t necessarily eat kosher — you can’t get such uniquely delicious chocolate chip cookies on the wider market.
What made you start a Pesach line? It can’t be easy for a purely chometz-based company to switch to Pesach mode! Our Pesach line came about unintentionally. Since we do not sell our chometz over Pesach, but rather get rid of it entirely, we finish our chometz production around Purim time with careful calculation to ensure that we have enough stock to last the stores until Pesach, and not more. But that used to mean that year after year, our staff was left with no work after Purim! Wanting to employ them during this season as well, we decided to make a Pesach line.
Does your Pesach production take place in the same facility as the one you use year-round? few years ago, she reminded me not to add any coloring or preservatives to her original recipes. It was like her tzava’ah. In fact, the packaging of the chocolate chip cookies remains exactly as she hand-designed it. Today some of our products, like honey cookies, come in Ziploc plastic packets; that’s because they maintain their softness better in plastic, while the chocolate chip variety stays crispier in paper packaging. My grandmother was also very insistent that we keep prices down so that the goodies were affordable even for large families, even though the profit could’ve been greater.
In what countries do you sell your products today? In America, Canada, England and Europe, and this year we started shipping to Eretz Yisroel, due to the great demand from the Americans living there.
Have you had any VIP customers? The Lubavitcher Rebbe, zt”l, used to eat our cookies because of our reputed hashgacha. A Lubavitcher

It used to, but the logistics were very complicated. We had separate Pesach equipment so that only the ovens had to be kashered, but the changeover was a huge hassle. We worked so hard to clean it meticulously that when our Rav Hamachshir, Rav Moshe Neuschloss, would come to check it, he would have to reassure us, “Ess iz shoin git, ess iz shoin git,” to get us to put our shmattes down. To avoid the whole cleaning hassle, I built a commercial Pesach kitchen, and it is used only those few weeks a year. The staff mustn’t even bring their bags into the facility; we rent a second, separate space for two weeks especially for this purpose, and this area serves as the “staffroom.” When the employees come back after lunch, they wash their hands and don fresh plastic gear again.
You said “a few weeks.” Don’t food companies start Pesach production months before Pesach? Correct, other brands start their Pesach production as early as Chanukah time, but as we don’t use preservatives, we have to bake everything as close to Pesach as possible. So from a week or two before Purim, we work around the clock churning out truly fresh goods!
Can you tell us about your cookies in numbers? We don’t have a massive production, because it would deter us from maintaining our promise of a heimishe, traditional product, but I can say that we never meet demand. Whatever we make is not enough.
Would you consider going more commercial, even for your year-round production? Doing so would mean much larger profits, of course, but we don’t want to go commercial, because then we would lose our reputation of producing a “homemade” product. Our company is based on tradition. The way we run it is exactly how we ran it 50 years ago, just like my bubbe wanted it.
What does your Pesach line include? Besides our classic chocolate chip and marble cookies, we produce a highly popular chocolate brownie cake as well as macaroons, which is uniquely made of pure walnuts as opposed to coconut. Our bestselling Pesach product is the baby fingers, which people on a gluten-free diet stock up on for yearround use. People also use the baby fingers for the base of their Pesach cheesecakes. I don’t know if you noticed, but they were called lady fingers until a few years ago when our Rav Hamachshir told us to change its name to something more eidel. After we renamed them baby fingers, the other brands followed suit, so it is now its universal name.

What is the feedback you receive on your Pesach line? People ask us why we don’t make it all year — that’s how much they like it!
If you don’t sell any of your chometz over Pesach, does that mean you have to start from scratch after Pesach? Indeed. The morning after Pesach is probably our most hectic one. We dive right into a fresh production to replenish our stock for the waiting stores who particularly want products baked after Pesach. The many einiklech who are home chip in with the workload by doing things like sticking on the special Yiddish “baked after Pesach” stickers.
Those hours must be very high pressure. Do you have any memories or mishaps to share? One Motzei Pesach, our commercial mixer broke. It would have meant a huge loss had we not been able to bake that very night. But Yidden are baalei chesed, and another bakery kindly lent us their machine for a few hours, saving us from potential disaster.
Is it a challenge to work with different ingredients? Our baby fingers use more egg whites than yolks, as most Pesach baking recipes call for. In the early years of our Pesach production, after the Yiddishe workers separated the eggs, there were batches of yolks going to waste. My zeide then heard that he could buy commercial ready-separated eggs, but my bubbe wouldn’t hear of it, determined to give customers the high standard of heimish that they grew to expect from Ostreicher’s, especially for a yom tov like

The Pesach Sleuth By: Rabbi Levi Cohen
Imagine walking into a factory and noticing the ceiling, 25 feet overhead, lined with rows upon rows of similar-looking pipes. How is it possible to know what goes through these pipes? How can they be checked for a proper cleaning, and how can they be kashered? When we purchase products for Pesach, we look for a hechsher that we trust. And fortunately, an experienced mashgiach will know how to trace all those pipes and figure out what each one contains, though it will take him time to do so. When it comes to kashrus, most people apply the “What do the neighbors use?” system or — probably more accurately — the “What does the chevrah use?” or “Do bnei Torah eat from that hechsher?” approach. So what’s it like for a mashgiach to be in a factory that is supervising a Pesach’dig production run? What does checking a factory to see if it is maintaining its standard of kashrus entail? Although one article cannot give the full picture, it can provide some direction and background to the hashgacha scene.

One Product’s Journey Let me begin with a somewhat typical kosherfor-Pesach example whose production doesn’t pose any difficulties to get an idea of the nuances of producing kosher l’Pesach products. Ketchup, a common North American household product that is an irreplaceable staple in some households, is a relatively simple product containing tomato paste, water, corn sweetener, vinegar, salt, spices and flavoring. Several of these ingredients require substitutes for Pesach. When producing Pesach’dig ketchup, corn sweetener, which is kitniyos, requires replacing, probably with a kosher l’Pesach sugar made from either cane or beets. Pure spices ground for industrial use is fine, but extracts or oleoresins do require more research. The water does not present any problem, and the tomato paste and salt used for commercial production are generally also fine (though it always pays to double-check with the manufacturer). Both the vinegar and the flavoring, however, could contain chometz and almost certainly contain kitniyos if they did not come from a special Pesach run. Let us see how these sensitive ingredients are typically handled.
Vinegar Regular vinegar, usually called white vinegar, is manufactured from alcohol processed with yeast, vinegar food, and perhaps other raw materials, until the alcohol turns to vinegar. Every one of these ingredients can involve a potential chometz issue: Alcohol is commonly produced from grain, and vinegar food, too, may include chometz ingredients. Kosher l’Pesach vinegar would require that the alcohol, the yeast and the vinegar food all be from a non-chometz, non-kitniyos source. Of course, assuming that the hechsher certifying the production of the ketchup is not the one that certified the vinegar, the rabbanim or poskim of the hechsher on the ketchup will decide which hechsher for Pesach’dig vin-
egar they will accept. In theory, kosher l’Pesach vinegar could be produced in a much easier way with virtually no halachic complications. Chemically, white vinegar is a solution of acetic acid and water. Pure acetic acid can be produced synthetically, and therefore, a product identical to vinegar can be produced by simply mixing glacial acetic acid and water. Such an item would be very easy to produce, simple to supervise and less expensive than kosher l’Pesach vinegar.
So why not ? If it is much easier to produce kosher l’Pesach vinegar this way, then why is it not done? The answer is that it is illegal in the United States to call this product “vinegar,” notwithstanding the fact that it is perfectly safe to use and will accomplish whatever the “vinegar” in your product will. In the United States, this ingredient must be labeled as “diluted glacial acetic acid” or something similar, and companies are concerned that customers will not purchase a product with this ingredient listed on the label instead of “vinegar.” Vinegar, according to FDA regulations, must be produced by the fermentation of alcohol, and the alcohol used for this production must also be fermented and distilled from sugars or starches. (Alcohol can also be produced synthetically, but in the United States this alcohol is usually denatured, which means it is rendered inedible, and then used for non-food purposes.) However, there are many countries in the world where it is perfectly legal to use syn-

thetically produced vinegar in food production and to label it “vinegar.”
Flavoring Ketchup requires the addition of herbs, spices or flavoring. The sizes of flavor-producing companies vary greatly. I have seen flavor companies that are literally mom and pop shops, and I’ve also been inside flavor factories the size of a small city. Some flavor companies manage without any major sophisticated equipment, whereas others own dozens of production machines, each which costs in the millions of dollars.
usually about the height of a threestory building, is to convert a liquid product into a powder. It does so by heating the product so that most of the liquid gets evaporated, thus making it heavily concentrated. It then pumps the viscous liquid until it is dropped through the top of the spray tower. In the tower, which is usually gas-fired, very hot air (usually about 500 degrees Fahrenheit) is forced along the inside walls of the tower, and the liquid product is dropped through the middle. The temperature is hot enough for all the liquid to evaporate, leaving behind a powder that drops to the bottom of the spray tower, where it is boxed or bagged. Many thousands of spray towers are used in the United States alone. Possibly their most frequent use is to powder skim milk, which is highly perishable, into nonfat dry milk. Once powdered, it occupies a fraction of the space of the liquid product, and if kept dry, has an indefinite shelf life without any refrigeration, thus making it very easy to store and ship. Assuming that a spray tower is used only for milk, the major question that will come up is how to kasher it for a cholov Yisroel produc-
tion. There are many halachic issues here, including that a spray tower physically cannot be filled with water and brought to a boil, which constitutes hagalah, the most common way of kashering. Additionally, it is unlikely that this method even suffices to kasher the tower, since the absorption into the walls of the spray tower is without liquid. Another option is to kasher the tower by use of a flame thrower, which is basically a larger form of a blow torch. On the other hand, there are halachic authorities who contend that the spray dryer does not even require kashering, since the product is not supposed to touch its walls. Because of the tremendous heat that absorbs into the stainless steel walls of the dryer, a product that would touch the walls would probably pass distaste into the final product. These last-quoted authorities contend that a spray tower is halachically the same as a very large oven, and that it therefore does not require kashering. When it comes to Pesach, these questions become amplified. So how does one kasher such a piece of equipment in order to produce Pesach’dig powdered milk?
Spray towers
Here is a very practical example: Many products, including many flavor components, are dried today in a massive piece of equipment called a spray dryer, or spray tower. The purpose of this piece of equipment,

Larger Operations
There are also companies that have contract spray dry equipment. This means that they do not always use the spray tower for their own product, and, not wanting to leave a very expensive piece of equipment idle, will spray dry other products during “down” time. For example, I have seen soy powder, wine powder, medicinal items, and even nonkosher meats spray-dried on equipment that was also at times used for kosher supervised products.
Back to the Product At this point, let us return to our special kosher-for-Pesach ketchup production. A flavor whose components were spray-dried, which is a fairly common procedure, would require researching what else was produced on this spray dryer, or alternatively, attempting to kasher the spray dryer. All of these complicate the research involved in producing kosher l’Pesach ketchup. In our case, to resolve all of these potential complications, the flavors used for the production of this kosher l’Pesach ketchup were ordered from a small manufacturer. The order was to use only pure essential oils that would be extracted by pressure — in other words, oil that is squeezed out of

the spice source in what is called a “cold press” operation. Of course, a knowledgeable field representative (yours truly) was dispatched to oversee that the manufacturer indeed did this. The flavor company blended together these liquid oils and then added a significant amount of salt to the product. The reason for the addition of the salt was to dry out the finished spice so that it could be easily shipped and stored. From a kashrus perspective, this was certainly a far better alternative to using a spray-dried product and having to kasher the spray dryer. At this point, our hechsher has successfully located all the ingredients and overseen the production of all the raw materials for the kosher l’Pesach ketchup. The next step is to send a knowledgeable mashgiach to the production facility where the ketchup is to be manufactured to ascertain how that equipment will be kashered prior to the Pesach run, and to clarify with the company its production schedule prior to the dates when the equipment will be kashered and the Pesach’dig product manufactured. And this entire process and the nuances it involved was for a relatively simple product.
Having shown how a relatively simple Pesach’dig product is made, I will shift from the simple to what is possibly the most complicated: the kashering of hotels for Pesach, which has become a colossal international business. A glance at any frum newspaper includes advertisements marketing opportunities to spend Pesach on any continent, always only with non-gebrokts, cholov Yisroel and glatt kosher food, and shemurah matzos; under a rav’s strict supervision; with several prominent English speakers as scholars-in-residence; babysitting provided during the lectures; and many sightseeing activities available for chol hamoed. Yet individuals interested in experiencing yom tov this way should be aware that kashering a hotel for Pesach is a mammoth and difficult process. It is even more difficult to do when only part of the hotel is being kashered for Pesach, when the hotel’s regular kitchen staff is used, or when the chef and sous-chefs are

Incidentally, travel tours create the most significant issues regarding kashrus supervision even around the year. Many hechsherim will simply not supervise them because of the complications involved in traveling to different places and using
what is available locally. These issues become even more complicated when you are dealing with Pesach. I will share with you just one nightmarish story of which I have firsthand knowledge. At one point in my career, I was in charge of the hechsherim in an area that encompassed a well-known tourist spot. Simply put, if anything was supervised kosher in our area, I knew about it. There indeed were some reliably kosher tours, some of whom used us to supervise their activities, and those who did not seemed to me to maintain a fairly respectable kashrus standard. One day I saw an advertisement in the Anglo-Jewish press for a “glatt kosher tour” through our area. Since none of the tour companies with which I was familiar was involved, I called the number listed for reservations and inquired as to who was overseeing their kashrus in the area. The woman who answered the phone dutifully notified me that “Jim Klein oversees all food production and kashrus arrangements in that area.” I knew Jim well. Not only was he completely non-observant, but he was married to a nonJewish woman! For sure we know not to use anything “supervised” by Jim. But can we eat something supervised

On the Kashrus Trail The package of triple-layer blackand-white sandwich cookies you picked up at the supermarket today is labeled kosher, but itâ&#x20AC;&#x2122;s not as if all the hashgacha had to do was send a mashgiach along to check the cookie factory and stick their labels on. Making sure a product is kosher goes way back before the cookies become cookies, and before the cream makes its way into the sandwich,

and it isnâ&#x20AC;&#x2122;t always black and white, either. To the average frum shopper, being careful about kashrus means looking for exactly the right hechsher on the packages we buy. But the realities of kashrus are far more complex and far-reaching than most kosher consumers understand. My father was a kashrus mashgiach for many years, and I felt like
his job gave us a unique appreciation of the intricacies and pitfalls of kashrus. It certainly made me appreciate the intrepid mashgichim who fly to the ends of the earth to ensure that what we put into our mouth is totally, completely, 100% kosher. My father had two main takeaways from his experiences: First, you can never be too careful, because potential kashrus problems exist at every
stage. Second, a sincere mashgiach needs, and receives, exceptional siyata d’Shmaya to accomplish his mission.
Under Cover of Night Often, when a mashgiach arrives at a factory, he inspects every delivery note, every invoice, and the label of every single product to triple-check and see which raw ingredients are entering the factory to ensure that each one’s standard of kashrus is up to par. He also checks the boiler room to make sure that no vapor from any nonkosher production line is mixing with the factory steam. But the checks are never enough. A mashgiach still needs siyata d’Shmaya. Among my father’s areas of expertise was kashrus supervision at oil refineries. Oil is a raw ingredient in almost every product, so a supply of kosher supervised oil is vital for everyone. At one point, he was working at a refinery in California. Together with another mashgiach he had a trailer on site, and he spent much time checking every stage of production. Everything seemed to be going according to the letter of the law, until he got a shocking late-night phone call. “Rabbi?” “Yes. Who’s calling, please?” my father asked. “I’m an employee at the refinery, but I can’t give you my name.” “Well, how can I help?” “It’s just that, rabbi, I can’t bear to see you being fooled. Do you know your way around Zone A?” Zone A was an area through which the sealed oil pipes ran. “Yes?” he said. “You know it’s all sealed pipes there. But in a certain spot there’s a hidden inward valve, where liquids can be brought in. At night, long after the workers go home and the refinery closes, after you leave the production area, they open the valve and unload tankers of other, cheaper oils.” My father thanked the worker for speaking up and investigated. Indeed, the owners were trying to fool the hashgacha and make a profit in their own way. The rabbanim of the kashrus authority he worked for flew out to California and the issue was addressed.
Smells Fishy Another time, my father was working with a facility in Asia to produce kosher tuna fish. He had some suspicions about the owners’ attitude, so he scheduled a trip

to Asia to check out the whole place. When he had thoroughly checked out the entire area and found no whiff of anything wrong, he was ready to fly home. A few minutes later found him in the office calling the airline to change his ticket. While on the phone with an airline rep, he looked around for a piece of scrap paper to write down the details of his new flight. He absentmindedly reached for one that had come out of the fax machine and turned it over. It read: Make no shrimp today. The rabbi is coming. Most facilities have more than one production line, and when you produce a kosher-certified product, you
often only take over one line, so the factory continues manufacturing their other products on other lines. But these owners were clearly trying to beat the system by preparing their shrimp on machinery that was usually used for tuna. My father stowed this scrap of paper safely in his briefcase, and upon the dayanim’s review, their hashgacha was removed from the company’s products. So enjoy those kosher snacks. Someone went to a lot of trouble to make sure you could snack wholly and truly kosher. And Someone up there was watching out too.

I Spy… The Finish Line We’re approaching that wonderful day when we get to revel in our status as royalty. To that end, I want to do my part to ensure that your reclining on Seder night is not due to exhaustion, but is rather the result of exulting in your status as queen of the Seder who was zoche to bring simchas yom tov into her heart and home. Let’s finalize our preparations for the grand event with the ideal Pesach tool: lists. Let’s break it into three quick checklists. One list for the final tasks to tackle over the next few days, another for bedikas chometz day, and a final Erev Pesach checklist.
For this week, allocate days and times for the following tasks: Ironing and mending. I’ll start with mention of the kittel. You might as well get that out of the way first. The rest of the ironing and mending may not need to be done three days in advance, but by promptly checking all items off your list — whatever they may be — you’ll gain a calm lead-up to yom tov! Porch or patio. For plastic or wrought iron furniture, a mild dishwashing detergent with a Dobie sponge will make quick work of this. Telephones and cell phones. Cotton swabs moistened with vinegar or alcohol can really get your phone clean and germ-free,

but be careful never to allow either of those agents onto your glass screen. While you’re at it, I will remind you to clean any other devices you may have at home.
Door knobs and light switches. You’ve likely touched the doorknobs and switches in your home after eating, and you’ll probably do the same on Pesach, too. Let’s give it a fresh washdown l’kavod yom tov, but keep in mind that this simple task is easily delegatable. As you’re holding the microfiber cloth in hand, also look out for chubby fingerprints around the light switch and knob — particularly lower down on the door, where little hands may have opened and shut it. Those are simple and rewarding to wipe away. Shoes. While I know some who have the family tradition of engaging in scraping the underside of shoes, I don’t believe there is any halachic necessity for that preparation (though family chumros are always to be respected!), but freshly polished shoes l’kavod yom tov are certainly doable and wholly appropriate. Double-check school bags, coat pockets, etc. With kids (and — let’s be honest — some adults), we truly never know.
Shake out the shtreimel! Setting the vacuum on a low setting and gently cleaning it easily does the job.
Polishing jewelry. A rubbing alcohol soak accompanied by a light scrubbing with a soft-bristled toothbrush will do a beautiful job on genuine jewelry and have those gemstones sparkle on Seder night!

Erev Pesach Checklist:
• Sweep or vacuum the entire home. It’s time-consuming, but al pi Shulchan Aruch, quite necessary.
• Prepare charoses.
• Follow your thorough cleanup with disposing of the vacuum bag and preparing it for sreifas chometz. • Clean the broom thoroughly and wash down the dustpan. If you have a separate broom dedicated for Pesach, make sure to bag this broom and place it in a “sold” and marked area. • Which brings us to the next point: Make certain all sold cabinets are clearly marked — and stash all that needs to be sold in those cabinets. • Do I need to remind you again? Iron the kittel! • Double-check all wardrobes (including your own), and make certain that everything is ironed and ready for yom tov.
• Prepare lettuce. • Prepare salt water. • Prepare food for the ka’arah (remember the zeroah). • Boil eggs. • Boil potatoes, if needed for karpas. • Review the two lists above — it’s not unheard of to miss something. But do get a move on. We need to have it all done by chatzos!

By the Numbers The Wild West of Kashrus The state of kashrus in America in the early 1900s was chaotic at best, if not outright corrupt. Any company was able to claim their products as kosher, even if they sold the completely forbidden. Though some companies hired a “rabbi” to guarantee kashrus, the credentials of said rabbis were often dubious. To compound matters, each “rabbi” received his pay directly from the companies being certified, creating a potentially shochad-like situation.
Setting Standards in Place In a revolutionary move, the Orthodox Union set up a new method of kosher certification in 1924. It became the first not-forprofit kashrus organization that independently chose the mashgichim for each job and directly paid them, thereby removing the potentially blinding risk of personal gain from the equation. Since then, the OU has grown to be the largest worldwide kosher certification agency.

The first OU-certified product was vegetarian baked beans made by the H.J. Heinz Company. There are currently 1,201,950 individual products certified by the OU.
