READ THE FINE PRINT I would like to begin with expressing my gratitude for your weekly magazine. Each member of our family finds something to read and enjoy, and we are a multigenerational household! I feel compelled to write a letter to caution your readers to be careful about not paying their mortgage payments. So much misinformation is being circulated. Just a few facts: 1. Forbearance is not a gift. The missed payment must be paid back. 2. The missed payments will not automatically be added to the term of the loan. 3. The forbearance will affect your credit. I have personally seen a credit report of a client in forbearance, and the credit report stated that the loan is in forbearance. Although such a report does not report a 30-day late payment (though I’ve seen instances where it did), a forbearance is a

negative. How does one pay back missed payments? There are different solutions being offered. The only current solution that is guaranteed is a lump sum with all missed payments due at the end of the forbearance period. (Example: If your mortgage payment was $3,000 and you didn’t pay three payments, in month four, you would owe $12,000.) Any other workout solution, whether paying the missed payments over time together with the regular payments (e.g., instead of paying $12,000 — $9,000 of arrears and a current payment of $3,000 — the arrears of $9,000 can be paid over six months so the new monthly payments for those six months will be $4,500) or a modification, where the loan term can be extended so that the missed payments can be added to the term of the loan (e.g., a mortgage loan with 325 payments remaining would be modified to 328 payments remaining), need to be approved by your lender. Read the fine print. I have read my clients’ offers and letters. Each one stated clearly that any workout solutions need to be approved by the lender, and financial documents may need to be provided. As a mortgage lender, I get questions daily about forbearance. Do you know that if you wanted to refinance to the low interest rates of today, you would not be approved if your loan is in forbearance? Do you know that when you refinance you can miss two mortgage payments legitimately with no potentially dire consequences? I went through the financial crisis of 2008, and this financial crisis is certainly different, but I saw people lose their homes in foreclosure because they were misguided by not paying their mortgage payments, with the hopes of being approved for a modification. PA RS H A S AC H A R E I MOSKEDOSHIM It says in Parshas AchareiMos, “Ush’martem es chukosai v’es mishpatai asher ya’aseh osam ha’adam vachai bahem... — You shall observe My statutes and My ordinances that a man shall do, and live by them‌â€? (Vayikra 18:5). Chazal derive from this pasuk: “V’chai bahem v’lo sheyamus bahem,â€? meaning that we are to live by the mitzvos and not die through them. Saving your life or the life of another person overrides every mitzvah in the Torah except for the three cardinal sins, such as murder. R’ Schach, ztâ€?l, explains that “v’chai bahemâ€? refers not only to staying alive, but also to living a life al kiddush Hashem. There are times when the Torah demands that we sacrifice mitzvos in order to live, and there are times when the Torah requires

that we sacrifice our lives to keep the Torah. Living a life al kiddush Hashem means always being ready to do whatever is required, and always making sure that what we are doing is indeed the right thing. This is no simple matter, and each person must consult with his doctor and his rav when issues arise. We were raised to be willing to be moser nefesh for mitzvos, and willing to endure great difficulty while keeping those mitzvos. We were raised on stories of tzaddikim who kept every mitzvah they possibly could in the war camps, trading hearty soup that was treif for less nourishing but still lifesustaining bread, which was presumably kosher. We were raised on stories of Yidden in Russia learning Torah in secret, moving their yeshivah from place to place to avoid detection by the communists. During these difficult times, many of us, depending on where we live, have been asked to set aside certain mitzvos, such as davening with a minyan, because of pikuach nefesh. For a person who loves Hashem “b’chal l’vavcha uv’chal nafshecha uv’chal me’odecha,� this is a tremendous sacrifice. For a person for whom it is paskened to set aside these mitzvos because of pikuach nefesh, doing so is indeed living al kiddush Hashem.

Living a life al kiddush Hashem means utilizing every moment of our life to do what is right.

The Brisker Rav once paskened that the needs of a certain sick individual superseded Shabbos. When asked why the Rav was being meikel in regard to Shabbos, the Brisker Rav responded that he was not meikel in regard to Shabbos; rather, he was being machmir in regard to pikuach nefesh. Walking the fine line of halacha requires the guidance of daas Torah, but once that psak is given, a person should trust that he is being machmir in fulfilling that psak, as it was given with daas Torah. It also says in this week’s parsha that the sons of Aharon Hakohen died “b’karvasam lifnei Hashem� (Vayikra 16:1). Chassidishe seforim say the problem with the sons of Aharon is hinted at in the word “b’karvasam� — they were busy with their avodah and not as busy with the needs of Klal Yisroel as a

As focused as a person should be on his avodas Hashem, so, too, must he be focused on the needs of those around him, both in gashmius and in ruchnius, as it says, “Kol Yisroel areivim zeh lazeh” (Shavuos 39a). We are all responsible for one another, so if a person finds himself in a situation where he is being asked to set aside certain aspects of his avodah in order to safeguard the health of others, such as many people today are being asked to do, then he is truly making a kiddush Hashem by doing so. Living a life al kiddush Hashem means utilizing every moment of our life to do what is right. We are all familiar with the story of Rabi Akiva, who sacrificed his life for Torah (Brachos 61b). As Rabi Akiva was being tortured and killed, he recited the Shema, his neshamah departing as he was uttering the word “echad.” The Gemara relates that Rabi Akiva recited the Shema then, because it was the time for saying Shema. What we see is that Rabi Akiva was not reciting the Shema only because he was dying, but because it was the time when everyone was required to say Shema. Even as Rabi Akiva departed this world, and despite the pain of torture, Rabi Akiva fulfilled the mitzvah that was incumbent upon him at that time. The time had come to sacrifice his life for Torah, and Rabi Akiva did so with love — but for every last moment he was alive, he did every mitzvah that came his way. He lived al kiddush Hashem, and he died al kiddush Hashem. May we soon be zoche to a time when we are all free to live al kiddush Hashem, and pursue mitzvos in good health.

Cuomo Announces Gradual Upstate Reopenings as Coronavirus Totals Drop With the number of reported coronavirus deaths and hospital intubations decreasing, Governor Andrew Cuomo began broaching the subject of reopening New York, a multiphasic, weeks-long process that would begin in the upstate counties that have seen relatively low numbers of COVID-19 cases. Cuomo’s announcement of possible openings on May 15 will have little effect on New York City and Rockland County, but the idea of a slow and steady return to some semblance of normalcy in any part of the state is still encouraging news. Although Brooklyn has had 43.3% of its residents testing positive for the coronavirus, Schuyler, Cortland, Chautauqua,

Lewis, Tompkins, Oswego, Jefferson and Franklin counties have all seen less than 5% of their populations coming down with confirmed cases of COVID-19. Speaking to the media at a Sunday press conference, Cuomo said that eventual plans to lift restrictions in New York City, the Hudson Valley and Long Island, as well as openings of schools, transportation, parks and beaches in those areas, would be coordinated with both New Jersey and Connecticut to maximize public safety. The governor also noted that special attention would be given to summer activities, food assistance programs and child care downstate and said that he hoped to partner with philanthropic entities to facilitate these programs. According to Cuomo, the plans to start moving ahead in upstate counties are based on CDC guidelines that allow for reopenings after seeing a four-day decline in hospitalization rates, and the governor said that he was prepared to start for-

mulating guidelines for a staggered return of some Empire State businesses. The first phase of the process will include the opening of construction and manufacturing firms that pose little risk of infection, with additional openings potentially taking place at the end of May for low-risk “more essential” businesses if infection and hospitalization rates continue to hold steady or decline. A continued decrease in coronavirus cases could prompt additional openings, all of which would be subject to safety protocols. Urging businesses to start formulating plans and implementing precautions that reflect the “new normal,” Cuomo called for creative thinking to ensure public safety, citing risk factors, including physical space concerns and cleaning and hygiene protocols, among others. “I think every business leader gets you can’t go back to where you were,” observed Cuomo. “We have to go back in light of the circumstances that have developed.” According to the governor, the coronavirus data is being measured by the number of hospitalizations in each region, and antibody and diagnostic testing showing past and current infection rates. He acknowledged that ending the current quarantine is a process that has been painfully slow but equally necessary. “We just went through this wild period where people are walking around with masks, not because I said to, but because they understand they need to,” said Cuomo. “How do we make it better? … Let’s use this period to do just that… We’ll reimagine and we’ll make it a reality because we are New York, tough and smart and disciplined and unified and loving, and because we know that we can.”

NYC’s Free Kosher Food Program Flops in Opening Days Elected officials who lobbied the city tirelessly to include those who keep kosher in its free meal distribution for children were disappointed with the program’s execution, which included running out of food quickly on its first day and serving up breakfast and lunch that could only be classified as meager. City Councilman Chaim Deutsch spearheaded an effort


by the City Council’s Jewish Caucus to push for parity after Mayor Bill de Blasio announced repeatedly that he would make sure that meals would be provided for every student in the city without making any provisions for those who keep kosher. The Department of Education was showered with appreciation from local elected officials when it announced that kosher meals would be offered in various Jewish communities throughout the city, but those compliments were quickly retracted when the program failed to live up to expectations. Avi Zirkin told The Daily News that he showed up at the city-run distribution site in Midwood at 7:45 a.m. on April 23, the program’s opening day, and got in line behind approximately 30 people, with 50 others quickly queing up behind him. Within 25 minutes, staffers informed dozens of people still in the line that all the kosher meals had been distributed. Similar shortages were reported at other Brooklyn locations and in Queens, according to Hamodia reports. Deutsch categorized the situation as inexcusable, noting that the coronavirus has left many jobless and unable to buy food. “It’s embarrassing for people to wait in line … only to get to the end of the line and [be told], I’m sorry, there’s no more food left,” said Deutsch, who was also critical of the

Recap: Binyamin ends up having a bad case of the flu, and he is stuck, sick at home, for the better part of a week. In present-day Bratislava, Joe Ludmir searches for information about his past, but so far he doesn’t find anything. He receives a call from Australia that his partner, Alex Korman, just passed away. Blumi walked into her hotel room and kicked off her shoes. This week had been draining beyond belief. She sank into the rattan chair in the corner and passed a hand over her eyes. When she’d first arrived in Eretz Yisroel, she’d planned to stay at her father’s apartment for the week of shivah, but Gideon claimed that her brothers would not take kindly to the idea. “What will they think, that I’m planning to take over the apartment?” she’d argued. “That I’ll lock the door from the inside? That I won’t let them in? What, exactly?” “I don’t think they’ll suspect that those are our plans, especially since we are not lacking for such an apartment by any stretch, baruch Hashem. But family members never like it when one of them displays an especially strong connection to one of the possessions of the parents who have passed on, and certainly not something the size of an apartment.” He took a deep breath. “Inheritances are always a sensitive subject.” To her relief, he did not mention the rift with his own brother, Shimon. She had no energy to hear about his complex family entanglements right now, and anyway, it wouldn’t happen to her. She wouldn’t fight

with any of her brothers over the yerushah; she’d know how to go about it in a smart way. “Fine,” she’d murmured then, a bit dazed. “So we’ll sleep in a hotel.” She didn’t mention the idea of staying at her father’s apartment again, even when, on the fourth day of shivah, the last visitor didn’t leave until after two in the morning. She and Gideon were almost collapsing with exhaustion, but the warning note in his voice stopped her from suggesting that they sleep there. Gideon had had a bitter experience with regard to inheritances, family relations and brothers, and she didn’t want to step on any toes. She wouldn’t overtly display to her brothers any special connection to her father’s apartment, just like she’d made sure that they hadn’t seen the envelope she’d given to that bachur. She had no idea who, if any of them, even knew about it, though she had a feeling that her brothers knew something. But whether or not that was the case, it was clear that they would not take kindly to her interest in the yad from the shelf in her father’s top cabinet. But what did they want? Or rather, what would they want if they would know about it? Over the years, her brothers had always been

so practical, so lacking emotion for anything nostalgic. Who had always been their father’s listening ear? To whom had he told his stories from the past? And to whom had he said, “You want it? Then it will be yours after my one hundred and twenty”? Only to her. Only her. Her brothers would want to sell the yad; of that she was pretty sure. They had no interest in this kind of thing; at most they’d simply want the monetary value of it. She, however, did not want to sell it to a stranger. She wanted the yad for herself. But if she’d tell her brothers this, she knew that they’d respond by offering to sell it to her. Well, excuse them, but why in the world should she buy something off of her brothers if her father had already promised that it would be hers? “That’s a serious accusation, you know,” Gideon had said when he’d heard her thoughts about her father’s yad, years earlier. “They’re not such greedy men, your brothers.” “I didn’t mean for a moment that they’re greedy,” she’d hastily defended herself. “Just that they need the money more than we do, and this could lead to such a thing happening. But, of course, I know we can’t judge them.” Now, in their hotel room, Gideon looked over at her and said, “They want to meet again this evening.” “This evening? What’s so urgent?” “Well, we’re flying back the day after tomorrow, and there are definitely things we need to discuss with them first, no?” “Fine,” she murmured. “I’m taking a nap now. Let them know it’s fine with me to meet tonight.” But she didn’t fall asleep so fast. The shiny little yad flashed incessantly in her mind. It was a small yad, made of silver, with its fingers appearing darker because they were set with stones. “Fingers of steel,” Gideon had murmured, when he’d first heard her enthusiastic descriptions of it. “What?” “Nothing. It just reminded me of Nevuchadnezzar’s statue, and there’s a difference of opinion about what the toes were made of. Fingers and toes are different, I know, but it’s the same idea…” “What are you saying?” she’d bristled. “Comparing a holy sefer Torah yad to the foot of some statue in the king of Bavel’s dream?!” “First of all, the yad of a sefer Torah doesn’t quite have kedushah. It has the status of a tashmish mitzvah.” “Fine. Then you’re comparing this tashmish mitzvah to a statue?” “The statue wasn’t an avodah zara,” Gideon enlightened her. Despite his status as a businessman, he had a wealth of Torah knowledge. “You can check what it says in the meforshim. And besides,” he added, “I wasn’t comparing anything to the statue. Your descriptions just made me think of it.” “Fine. But you should know that this yad is not just

a simple yad. It’s quite valuable, though I think its primary value is the financial lesson that my father learned from it.” Gideon nodded. He remembered that original conversation well. He already knew the story of the yad that had been offered to his father-in-law as a rare and ancient artifact, which he’d ultimately paid a huge sum of money for. Only a few months later did the fraud become clear. Yes, the yad was worth something because of the stones, but its real value wasn’t even close to a fortieth of what Blumi’s father had paid for it. “Strange that he didn’t think that it’s rare to find a metal-like silver piece inlaid with precious stones,” Gideon had mused thoughtfully at the time. “It should have caught his attention.” “He was young and didn’t understand enough about the subject. That’s why he hardly dealt with precious metals after that,” Blumi had said, and with that, closed the subject. But her father had loved the yad. Oh, it had pained him, to be sure; he felt that the outstretched finger was pointing in his direction. But he wrapped it well and placed it for safekeeping in the highest cabinet in an inner room in the house. Because when everything was said and done, he just could not part with it. Already when she was a girl, Tatty had surreptitiously called Blumi over and showed her his yad. “Oh, wow!” her eight-year-old self had exclaimed over it, with longing in her eyes. “It’s really, really nice, Tatty. Why don’t you put it in the silver closet?” “Mommy doesn’t like it,” he’d replied. “And I don’t like it so much either.” “Why?” “Because it reminds me that we lost a lot of money over it, and we had a hard time afterward for

a while.” He gazed at his young daughter, whose eyes had darkened with anxiety, and then lifted her chin with his finger and whispered, “But don’t worry, my dear; it’s all over, baruch Hashem. Now it’s just an unpleasant memory.” ***** It was on Motzei Shabbos, when Binyamin finally felt somewhat better, that the envelope popped into his mind. He had no idea how he had forgotten about it until this minute, but when he remembered, he knew it would be very hard for him to try to recall where exactly he’d put it for safekeeping. He had gone back to the yeshivah. Right. But what did he do

He had no idea if the envelope was in one of the closets in his room, or in his suitcase, or under his mattress. His parents could not understand why he insisted on returning to yeshivah early on Sunday morning after such a bout with the flu. “Are you sure it’s a good idea?” His mother studied him. “You’re still very pale.” “Why don’t you stay home at least until the evening?” his father suggested. But he explained that he was fine already, and that, baruch Hashem, he was feeling good, and that it would be a shame to miss even one more day of yeshivah.

That was all true. He was fine, he felt better, and indeed, every day he missed was a shame. Baruch Hashem, he was learning well with his chavrusos, except when he was very tired in the mornings. But it was not because of this impressive collection of reasons that Binyamin was in such a hurry to get back to yeshivah. It was the pressure and worry about the envelope that was driving him to go. What was in that envelope? Something valuable? Secret? Mysterious? He didn’t know, but he’d only find out if he went back to yeshivah. After a half hour of searching his room, while his friends were learning in the beis midrash, he sat down on his bed and rubbed his eyes. The envelope wasn’t there. So it had to be at home. During those four days of burning fever and disorientation, he could have stuck it anywhere. Now he just had to hope that he’d put it someplace in his house that wasn’t too accessible to his little siblings, and not where it could inadvertently get tossed into the garbage. He had to return home. Fifteen minutes later, he was pulling the key out of its usual hiding place in the stairwell, and he entered the house. He was pleased that none of his sisters were there; they often had “off” days from school because of a test or some other reason. He searched every corner where the envelope could possibly be: the kitchen, the hallway closet, the dining room… But his search turned up nothing; the envelope was nowhere to be found. He had to ask his mother if she’d seen it, but then he’d have to find the right words to probe without getting her nervous. That was all he needed: that his parents should go into debt now to return the value of something that their son had been negligent in watching…


Wait. What was his status, come to think of it? He was a shomer chinam, wasn’t he? And who said that the item was even valuable? He had no idea what was in there. He could not remember what Mr. Katz’s daughter had said. In any case, almost a week had passed, and she hadn’t come or sent anyone else to ask for the envelope back. Maybe it wasn’t quite so valuable after all. So why had she wanted it guarded so well? ***** “Binyamin! Welcome back!” Shabsi met him in the hallway. “When did you get back?” “This morning, but not in time for first seder.” “Not like you. Lunch is in fifteen minutes — you couldn’t come into the beis midrash for even a little bit? Nope, not a good answer for a talmid like you.” Binyamin nodded with a smile, studying his friend cautiously. Did Shabsi know anything? Had anyone from the Katz family approached him about the envelope? “And you really don’t look that great, you know.” “Thanks. Yes, I know.” “Tell me, do you want to go to ‘work’ with me again in a half hour?” “In a half hour? No. I told you, I only want nights.” “Oh, right, I forgot. But you should take care of yourself, because you’re literally the color of the wall. I don’t want to have to learn Mishnayos next to you at any time in the near future…” Despite his weakness and dismal mood, Binyamin poked his friend in the ribs with his elbow and grinned. Trump Poll Numbers Slide THE PULSE: President Trump’s poll numbers continue to slide as voters disapprove of how he is handling the coronavirus crisis. Initially, Trump’s response to the pandemic caused his approval numbers to rise to record highs, but these highs have since dissipated. Much of this is due to his press conferences, which have been erratic and short on empathy. Too much of the focus has been on the president’s grievances and his partisan spats. His hawking of unproven medical treatments, such as hydroxychloroquine, and his offthe-cuff pondering of perhaps using ultraviolet light or disinfectants as COVID-19 remedies, have backfired with the electorate. His support for anti-lockdown pro-

testers and his urge to reopen the economy have also resulted in premature optimism and conflicting messaging. Recent polling in the battleground states of Michigan, Pennsylvania, Florida and Wisconsin shows that Trump trails Joe Biden in the presidential race. THE IMPACT: Trump’s numbers are giving Republican strategists and party operatives cause for concern. They fear that Trump’s poor approval numbers may jeopardize his reelection chances and harm their ability to retain control of the Senate. Many Republican incumbents now look more vulnerable than ever before. Republican Senators in Colorado, Maine, Arizona and North Carolina are all engaged in tight reelection battles, and losing these seats could prove to be cata-


strophic. Leading Republican strategists are actively encouraging the president to put an end to his unwieldy and erratic press conferences. They are attempting to limit Trump’s appearances and commentaries. They would like to see the president take the podium to announce progress in the COVID-19 fight but leave the rest of the analysis to doctors, scientists and the members of the COVID-19 task force.

The Invisible Joe Biden THE PULSE: Joe Biden has dropped off the political

radar. Due to COVID-19, he is unable to hold rallies or reach out to voters. He is stuck hosting interviews and broadcasting messages from his Wilmington, Delaware, home. At the same time, the media and the nation remain focused on the president and his COVID-19 press conferences. According to CNN, Trump has a 9 to 1 advantage in receiving top story coverage. THE IMPACT: Many Democrative operatives would like to see Joe Biden take a more aggressive and forceful tone in this campaign. The conventional wisdom has always been that a candidate needs exposure to win. However, a new line of thinking has emerged among political strategists. They recognize that Biden’s numbers have continued to rise even though he has been virtually absent from the national political discourse. They believe that Democrats may have a better chance at winning the White House if Biden continues to lie low, thereby framing the election as a simple up or down vote on the performance of the president. Keeping Biden out of the limelight keeps the focus on the performance of the president. If voters do not approve of what they are seeing, they are likely to vote for his challenger.

Michelle Obama VP Rumors THE PULSE: The vice presidential rumor mill was

awash with the possibility that Joe Biden may choose former first lady Michelle Obama as his vice presidential pick. When asked about the possibility, Joe Biden said that the former first lady tops his list of potential vice presidential candidates, and the country would be better served if she joined his ticket. THE IMPACT: The impact is probably naught. Former Obama White House senior adviser and close Obama confidante Valerie Jarrett stated emphatically that there is “no chance” that Michelle Obama would consider running for vice president. However, this did not stop Jill Biden from saying that she would love if Michelle Obama were her husband’s vice presidential pick.

COVID-19 and Confirmation Bias ANALYSIS: Confirmation bias is a primary cause of

our inability to weigh and consider evidence objectively. Shahram Heshmat, Ph.D., writes in Psychology Today that “once we have formed a view, we embrace information that confirms that view while ignoring or rejecting information that casts doubt on it.” And that “When people would like a certain idea or concept to be true, they end up believing it to be true. This leads the individual to stop gathering information when the evidence gathered so far confirms the views or prejudices one would like to be true.” This bias is apparent in the varied responses to the coronavirus pandemic. China hawks have been quick to highlight information that paints the Chinese government as highly culpable in the spread of the virus. Those who favor global trade and amicable relations with China have downplayed China’s culpability. Those who have harbored misgivings about global institutions have been quick to call out the World Health Organization for its mistakes. In contrast, those who value global cooperation have chosen to highlight how the WHO has effectively aided countries to fight the virus. Each side tends to focus on the story that fits their narrative while ignoring the facts that don’t fit with their previously held beliefs. Unfortunately, this bias has now affected government policy. Many Democratic governors have used the COVID-19 crisis to deem gun sales as nonessential. This has allowed them to clamp down on the sale of firearms even though these sales can easily take place with limited personal interaction. Some Republican governors have used the crisis to enforce their pet projects as well. This week the president announced that due to the current crisis, he was suspending immigration to the United States, even though much of our food supply is dependent on guest workers. The president later walked back his full ban and announced that he would allow temporary workers, including farmworkers, to enter the country. However, he did announce plans to issue an executive order blocking the issuing of green cards and permanent resident visas. Each group can undoubtedly provide reasons as to why the response to COVID-19 necessitates such actions, and at times, such policies may indeed be warranted. Still, when such action fits neatly with preexisting policy preferences, it is ample grounds to call the decision-making process into question. Being aware of our biases is perhaps the only way to fend off confirmation bias. If we are aware and listen to both sides of the argument, we can then weigh both sides seriously and choose to support the policies that are truly effective in fighting this virus.

This is how to neatly and easily slice a large cake.

Brownie Cake Ingredients 5 tsp. coffee (slightly heaping) 1½ cups water 4 T. cocoa (slightly heaping) 10 eggs 3 cups sugar 2 T. vanilla sugar

Cinnamon Marble Cake

1½ cups oil

Ingredients

3 cups flour

12 eggs

3½ tsp. baking powder

3 cups sugar

Directions 1. Preheat oven to 350°. 2. Dissolve the coffee in boiling water, and then add cold water until you reach 1½ cups. Stir in the cocoa. Set aside. 3. In a mixer set to high speed, mix together the eggs and sugars for one minute. Pour in the coffeecocoa-water mixture and the oil. Mix quickly. Fold in the flour and baking powder. 4. Pour into a 10x16” pan. Bake for approximately 1 hour and 5 to 10 minutes.

2 T. vanilla sugar 1 cup oil 1 cup seltzer 4 cups flour 4 tsp. baking powder 1 heaping T. cinnamon

Directions 1. Preheat oven to 350°. 2. In a mixer set to high speed, beat the eggs and sugars for 5 to 6 minutes. Add in the oil and seltzer, and mix gently. Fold in the flour and baking powder and mix until combined. 3. Pour three-quarters of the batter into a 10x16” pan with scalloped edges. 4. Mix the remaining quarter batter with the cinnamon. Drizzle the cinnamon mixture over the white batter, and swirl with a knife to marbleize. 5. Bake for 1 hour and 5 minutes.

Grated Chocolate Cake You may need some muscle power to grate the chocolate, but the results make it worthwhile! You can grate the chocolate in advance, refrigerate it and make the cake later. Alternately, you can finely chop the chocolate in a food processor until the pieces are tiny; the cake will still be heavenly, but not as f luffy.

Chocolate Chip Sponge Cake

Ingredients 14 eggs, separated

2 T. vanilla sugar

3½ cups sugar

1 cup oil

3 T. coffee

3½ cups flour

1½ cups water

4 tsp. baking powder

Ingredients 9 eggs, separated

1 cup orange juice

2½ cups sugar

3 cups flour

2 T. vanilla sugar

3 tsp. baking powder

1 cup oil

1 T. cinnamon 6 oz. baking chocolate, grated (I prefer Shufra Real Chocolate Baking Bar)

Directions 1. Preheat the oven to 350°. 2. In a mixer set to high speed, beat the egg whites with the sugar until stiff. Gently fold in the yolks. 3. Dissolve the coffee in hot water and add cold water to reach 1½ cups. 4. Add the coffee water, cinnamon, vanilla and oil to the mixer and mix gently. Fold in the flour and baking powder, and mix until combined. Last, gently fold in the grated chocolate into the batter. 5. Pour batter into a scalloped 10x16” pan. Bake for 1 hour and 15 to 20 minutes.

¾ cup + 3 T. tiny or extra-mini chocolate chips, divided (mini chocolate chips are not small enough and will settle at the bottom of the cake)

Directions 1. Preheat the oven to 350°. 2. In a mixer set to high speed, beat the egg whites and sugar until stiff. Gently fold in the yolks, vanilla, oil and orange juice, and mix gently. 3. Fold in the flour and baking powder, and mix gently until combined. 4. Pour one-third of the batter into a 10x16” pan. 5. Add ¾ cup tiny chocolate chips to the remaining batter and mix gently. Pour over the batter in the pan. 6. Sprinkle remaining 3 tablespoons of tiny chocolate chips over the batter. 7. Bake for approximately 1 hour and 5 minutes.

I have this thing about recipes. On the one hand, I certainly see their value. Armed with the right recipe, just about anyone who can follow directions and possesses the right equipment and ingredients can whip up something m’chuvadig, and maybe even geshmak.

Also, people never seem to tire of seeing more of them, keeping cookbook writers and food columnists (ahem…) gainfully employed. Recipes can even become a mesorah of sorts, like when it comes to making and serving Elter-Bubbie’s kugel... On the other hand, recipes, or more precisely, the idea of cooking “by the recipe,” irks me. We Yidden like to find out what lies behind things, to learn the kuntz of something, to get closer to the source and cut out the middleman. However, simply following someone else’s recipe word for word, and being wooed by glossy pictures, is not my idea of real cooking. Therefore, I would like to now, al regel achas, share with you some of the main principles that I’ve discovered over decades of kitchen duty (both professional and recreational) that will allow you to move beyond recipe dependence and discover the kuntz of cooking. These are the things that we recipe developers consciously or intuitively know as we “whip things up,” but there’s nothing mysterious about them, and they’re really quite teachable. 48 / THE BORO PARK VIEW / April 29, 2020 www.thebpview.com / 718.408.8770

Substitution

As someone who has spent a lot of time in both professional kitchens and professional food writing, trust me when I tell you that probably 90% of the “official” recipes out there are the result of what the recipe writer happened to have in the kitchen (or whatever happened to be on sale, was getting close to its expiration date, etc.) the day the recipe was conceived. And I’m fine with that. Necessity is the mother of invention. But for the recipe reader, whose kitchen happens to be bursting with yet another perfectly substitutable item, to run out to get or order the specific product the recipe calls for definitely doesn’t strike me as cooking with a Yiddishe kop. But how do you know what you can substitute for what? It’s not so complicated. Every ingredient, and every food, has certain properties. These are the simple things like its color, texture, water content (is it dry or moist?), fat content (is it rich or not?) and taste properties (is it salty, sweet or sour? bland or intense?). If two ingredients more or less match up in properties, there’s a good chance that

you can substitute one for the other. The truth is that it may be enough if they only match up in some of their properties, or even only one. This depends on what the ingredient is “doing” in the recipe. For instance, is it being used to bind the other ingredients together? Eggs often do that, but so do ground flax seeds, cornstarch or potato starch, and even some seed and nut butters. This means they can likely be substituted for the eggs. Of course, then you have to take into account the differences between them. Eggs are liquidy and moist, whereas ground flax seeds are dry. This means if you substitute the seeds for the eggs, you might need to add a little more liquid to the recipe. Or if you use seed butters, which are oilier than eggs, you might want to cut down the recipe’s fat content in another way. Get it? While it may seem daunting at first to dive into the sea of substitution, after a while, you start to get the hang of it and it becomes a challenge — and even fun. Of course, it’s not recommended to start out on things like your kid’s birthday cake that he’ll be taking to take to cheder, or your spouse’s favorite dessert! Rather, begin with things like low-risk weekday lunches and then work your way up.

The next cooking kuntz is clearly knowing what your priorities are. Some of the priorities people have when it comes to cooking are: health, level of kashrus, cost, taste, special dietary needs, ease of preparation, and the impression it makes on others. Often it’s a combination of several, with the higher priority trumping the lower should they happen to clash. Once you’re consciously aware of your priorities, you can start adapting (or better yet, creating!) your recipes to meet them. I once cooked for a popular kosher restaurant known for its vegan and macrobiotic health food. You don’t have to be a rocket scientist to guess what the priority was there! I was assigned to develop an Erev Shabbos take-out menu to appeal to the clientele who flocked there on Friday to pick up some of their whole-grain sourdough challos. Of course, what’s Shabbos take-out without potato kugel? So I set out to create one to please the priorities of this particular crowd. In its most basic sense, a potato kugel is a baked casserole consisting, obviously, of potatoes and something to bind them together. So what did we do? We steamed grated potatoes and gently tossed them with some organic sesame paste, a sprinkle of sea salt, and a drop of cold-pressed olive oil for flavor — and baked it. Between the natural potato starch from the steamed potatoes and the sesame paste, it stuck together nicely, and while I would never try to serve it to a Boro Park bubby, for people with health food as top priority, it worked. On the other hand, I once cooked for a catering company whose priorities began and ended with “taste!” A kugel mixing bowl by them meant plenty of oil, salt and MSG flavor enhancer, all before it even looked a potato in the eye. Needless to say, at that place, the tafkid — and menu — was different.

Elements

Of course, there’s more to cooking than ingredients. There’s also how they’re combined and cooked. I’ve found that a really helpful way to view the process of cooking is as the interplay of four elements: fire, air, earth and water. (Not to be confused with the four spiritual elements of the same names, which we’ll leave for the Kabbalists.) Here’s a quick rundown:

FIRE.

Fire obviously refers to heat. This includes the intensity of the heat at which a food is cooked, as well as the type of heat used (oven, stovetop, grill, crockpot, sous vide, etc.), each of which has its own special properties. Then there’s also reheating (which is an art unto itself), warming or maintaining heat, and ideal serving temperatures. While it’s obvious that too much heat means burnt food and too little means underdone, it’s amazing how knowing when and how to turn up or down the heat during the cooking process (or even how to switch heating methods in the middle) can ratchet up a dish from just plain “good” to “geshmak.” For instance, after baking chicken bottoms covered to keep them moist, removing the cover for the last few minutes of baking with dry heat can give them just the right crisp.

WATER. The element of

water refers to a food’s moisture content, both regarding an ingredient’s intrinsic properties, as well as a given dish’s cooking process and its finished state. For example, vegetables with a higher water content, such as zucchini or tomatoes, will, as a rule, cook faster than less watery ones, like carrots or winter squash. This is important information to know

when timing stirfries, etc. It also means that a casserole based on the former will need something to offset the extra moisture those vegetables will leach as they cook.

Air.

How moist or dry a cooked dish is depends largely on how much or little it is exposed to the air while cooking. For example, an openair oven roast will come out drier than a covered pot roast, and that’s why oven roasts are generally limited to internally moister — i.e., more fat-marbled — cuts of meat, whereas potroasted meats are usually leaner, more economical cuts. The air factor also includes things like evaporation and condensation, which can intensify flavors as well as make things crispier and crunchier (or, on the negative side, stale). Also, the density of a food (compare, for instance, a light cake to a heavier one) depends on the prevalence of air pockets within it. These things can all be tweaked to attain the desired results.

EARTH.

Earth generally refers to solid ingredients, either alone or in proportion to liquids. It also includes ingredients that cause things to solidify (starches, kosher rennet, etc.) as well as the process of

freezing (and/or congealing), which turns liquids into solids (or at least into thicker liquids). Getting a soup to be just thick enough to be satisfying, without turning it into a cholent, is a matter of finding the right earth-water balance. I’VE FOUND that virtually all cooking is simply a matter of understanding and manipulating these four elements, or factors. People are amazed when I show them how you can take any printed recipe and break it down this way, step by step, noting how all of the elements come into play.


LET’S GET THE FACTS STRAIGHT:

The Snowflake Effect

P

icture this: A single snowflake drifts to the ground. It disappears. A second, third, and fourth flake fall; they remain invisible. Hundreds of flakes land on the ground. They are visible, but only slightly so. Then thousands upon thousands of flakes fall, and the ground if covered in white.

Such is the effect of an Ayin Horah. Suppose some casts an Ayin Horah at you. He casts but a speck.

Of course, there’s a lot more to say. Squeezing 30 years’ worth of tricks of the trade into one article is too big a kuntz for even a kitchen magician like me. But hopefully this taster will be enough to whet your appetites and start you on the road to cooking less by the book — and more like a Yid.

Another person, another speck. It has no real effect. It’s only with the passage of time that many little specks of Ayin Horah accumulate and its impact can be felt.

So no. There is no reason to be

concerned because someone looked at you. The results of an Ayin Horah will not be felt unless many, many, many, ‘someones’ look at you. Einy Yeshuah keeps an ‘eye’ out for Ayin Horah so you can relax, knowing that other’s eyes will not affect you.

There’s absolutely nothing in the world that can compete with the satisfaction of crossing off every single thing on your to-do list. That content feeling that envelops you as you proudly hold a now-completed list, and the acute satisfaction that comes along with it, is like winning the lottery. Or better. However, there’s one list that I (and probably most of you too) can somehow never seem to check off completely. My bucket list. Because, yes, skydiving over the Grand Canyon and deep-diving into the Atlantic isn’t the same as buying eggs and searching for matching socks, so of course, my bucket list stays unchecked. Oh, well. And now I’d like to share with you all a little (well, notso-little) secret that I harbor: I’ve also got a list of a different kind. It consists of things I promised myself I will never, ever, under any circumstances, do. There aren’t many things that made it to the Things-I’ll-Never-Do List, but they’re all, unequivocally, of equal importance. At the very top of the list, in big, bold block lettering, there used to be something that had been in first place for a long while. It read: I am never going to bake Kokosh Cake. There. Phew. I said it. I can see you all shaking your heads in amusement, chuckling to yourself and wondering: Seriously? That’s the

big it? I know, I know, you deserve some answers, so here goes... nothing. The baking of kokosh cake, I thought, is a task for only the most talented of bakers, gourmet chefs and superhuman mommies. I mean, the perfect kokosh — or the perfect babka — was only to be admired longingly as it lay on the bakery shelf, its chocolate oozing and its dough standing tall and proud, as if telling me: You see, Rivky, as hard as you’ll try, you could never accomplish the art of The Kokosh. And that is why the baking of kokosh cake had made it to the top of my Things-I’ll-Never-Do List. A few weeks back, I was reminded of my list while I was on the phone, chatting with my dear friend Pessy. She was telling me all about the kokosh cake she was on her way to pick up from her dear grandmother, who bakes a loaf every week for each of her grandchildren, and how her Shabbos morning coffee just tastes so different with that heav-

enly homemade slice of chocolatey goodness. I nodded to myself nostalgically as she said those words — my Shabbos morning coffees are missing that special something since my Babby passed away, and her homemade cakes are all but scrumptious memories. As Pessy continued yapping about this and that, I thought about that list, once written with such certainty. Because I knew that there, at the very top, in big, bold block lettering, was the first thing I had promised myself I’d never, ever do. Bake kokosh. Ouch. If I was aspiring to be half of what my Babby was, or to be a beloved Babby who bakes goodies for her grandchildren, I realized, I had better reassess #1 on my never-do list and start baking!

And this, my dear readers, was the beginning of the end of the Kokosh Saga. Without further ado, I can now (very!) proudly declare that my Things I’ll-Never-Do List will now become shorter, for I have mastered the art of The Kokosh. No, it will never taste like my Babby’s cake, or yours, but I did come pretty close, and that makes me happy enough. Dare I say, it tastes even better than those oozing babkas on the bakery shelves! In truth, I have no idea why in the world I’d put the baking of kokosh on my never-do list. It proved to be a simple, enjoyable and accomplishing feat, and I’m thrilled — and honored — to share the kokosh-baking journey with all of you.

Come and join me in my kitchen for a step-by-step visual on the magic of baking kokosh cake with less stress and no mess.

The recipe I finally settled on is an absolute winner. The dough is my mother’s recipe, the filling recipe is one my friend Miriam generously shared with me, and the crumble is a combination of a few recipes. When I received only rave reviews from the taste-testers who begged for seconds and thirds, I knew I’d hit the jackpot. First off, and most important, was choosing the day of the week that works best for me: I prefer to bake on a day when there’s not much cooking or baking that needs to be done. That eliminated Wednesdays and Thursdays, which are usually designated for baking and cooking for Shabbos. Fridays are usually out of the question, since there’s so much happening on Erev Shabbos, and Sundays… Sunday is my lazingaround, doing-errands kinda day. So that left Mondays and Tuesdays. On Mondays I like to prepare my suppers for the week, so Tuesday was the lucky day earmarked for kokosh-baking. Also, on Tuesday I have some help with my now-almost-seven-month-old, not-so-quiet and oh-so-yummy twin boys, which is the only way I can even think of baking anything, let alone kokosh cake. The day before I plan on baking, I make sure to have all the ingredients the recipe calls for in my house. Running out every few minutes because I’m missing this and that, or knocking on my neighbor’s door for a missing egg, makes me frazzled, discombobulated and usually causes some kind of mishap to occur in the midst of the baking process.

Before I bake anything, the first thing I do is spread out a plastic tablecloth across my working surface — in my case, my kitchen counters. Thus protected, my counters stay perfectly clean, the mess is contained, and when I’m done baking, I just swoop up the tablecloth and slide the entire mess straight into the garbage. Easy does it! Once the tablecloth is ready, the next thing I do is lay out all of the ingredients. I measure the amount I need, and then I return the rest to their places! It’s a trick my dear mother taught me, and I thank her every time I work in the kitchen. First, it eliminates the back-and-forth running between the fridge, closet and pantry while the mixer is running and I’m pressed for time. Second, I circumvent having to put back floury, sticky or dirty ingredients into the fridge or pantry. Third, when I’m done baking, there’s zero mess to deal with. There’s also that peace of mind when all the ingredients are measured beforehand and all I do is pour, mix and contentedly watch the magic happen. The mixer I use for baking is a KitchenAid Stand mixer fitted with the dough hook. Yes, yes, you can obviously use your Bosch, too, though believe it or not, I actually don’t own one yet (gasp!). Four years ago, when I got married, my apartment was kind of small, and I knew that I wouldn’t be baking much yet, so it wasn’t that important. Well, time flew by faster than I thought it would, and I found myself needing a good mixer for my baking. My mother gifted me the KitchenAid mixer (thank you!), and I’ve been using that for all of my baking expeditions — it’s absolutely perfect. Usually, right when I’m ready to start baking, Moishy or Matis starts becoming fidgety, wanting Mommy’s attention. This time it’s Moish; Matis is being cared for. I seat him in his highchair, place some toys on his tray, and let him join me in the baking fun. Okay. My machine is set up, my ingredients are measured, so let the baking begin! In a bowl (it can even be a disposable soup bowl), I place 1 ounce fresh yeast (or 1½ tablespoons dry yeast), ¼ cup seltzer and ¾ cup warm water, and I let the mixture sit for a minimum of 10 minutes. We’re aiming for that foamy, bubbly state. While my yeast is doing what it needs to (hopefully, anyway), I add the following ingredients to my mixer and mix them all together: 4½ cups flour ½ scoop vanilla sugar ¼ cup sugar 1 stick margarine ½ tsp. salt 2 eggs ½ cup oil

I mix it all on medium-high speed for a few minutes, until everything is incorporated and combined well. When the yeast is ready, I add it to the mixture and continue mixing until I have a smooth dough. Next, I gather the dough together and form a nice mound. I place it in a garbage bag, wrap it, cover it with a towel and let it rise for a minimum of 1 hour. The dough needs to double in size, and the warmer it is, the faster it grows. I sometimes use my oven to help with rising — it’s simple: I preheat the oven to 200°, place the dough in a clean bowl, and cover it. Then I turn the oven off and place the dough inside the warm oven. Once it’s inside, I leave the oven door cracked slightly open and watch the dough grow! While the dough rises, I continue with the yummiest part of the kokosh — the filling! I clean the mixing bowl and pour in the following ingredients: 1 cup cocoa 1 cup confectioners’ sugar 1½ cups sugar ½ cup brown sugar ½ bag instant chocolate pudding 2 T. vanilla sugar A dash of cinnamon I mix this by hand with a spatula to combine well. If you’re anything like me, and you love overflowing, rich, chocolatey babka, I would recommend that you double the filling.

As I wait for the dough to finish rising, I tidy up the kitchen — I wash the mixer, measuring cups and spoons — line two loaf pans with parchment paper, and prepare a floured surface and rolling pin. I’m still left with some extra time, so I enjoy some playtime with the kids before putting them to nap. The dough has now doubled in size. I punch it down to release the air bubbles, divide it in two, and it’s time for my arms to get to work. On my floured surface, I roll out the dough — thin, but not too thin — into a basic rectangular shape, and I liberally spread the filling and roll them both up, jellyroll style. You can choose to twist the kokosh cake either one of these ways: 1. Once the dough is rolled, twist it a few times and place it in a lined pan. 2. (The way I do it) Once the dough is rolled up, I cut it in the center (in the length) so I have two strands. I twist the two strands together and place them in a lined pan. I cover the two pans with a towel and let them sit for about twenty minutes or so.

Before placing them in the oven, let’s not forget the crumble! With my hands, I crumble 1 stick margarine, 2/3 cup sugar, and 1 cup flour. I cover almost the entire top with the crumble (you can sprinkle the amount you prefer). I slide the rolls into an oven preheated to 375° and bake them for 40 minutes to an hour. I like my babka slightly underbaked so I usually take them out after 40 to 45 minutes. The smell that permeates my house when the babkas bake is out-of-this-world delicious. You’ll want to eat a slice as soon as these beauties are out of the oven, but remember to wait 10 minutes before cutting them. Once they’re cooled, I cut myself a thick slice (diet? What diet?), slide it onto a nice dish — yes, I treat myself too — and let myself get lost in the wonderful world of chocolate babka heaven before reality and bottles and deadlines pull me back…

So all of you who were like me before reading this article (and everyone else too!), I hope I inspired you to add a new something to your to-do list this week: Tuesday: Bake kokosh cake!

As a young child (young enough for her to have now forgotten how old she had been), Golda was at the kitchen counter creating messes — and successes. While she was fond of her final creations, she was well aware of the mess she left behind for her patient and proud mother to clean up. But all those hours experimenting in the kitchen did well to hone her talent.

An Aspiring Artist In the summer of her thirteenth year, young Golda was getting ready for her cousin’s bar mitzvah. Her Brooklyn-based aunt was bringing the simcha to Monroe so that the extended family summering upstate would be able to participate. Along with the entire family’s simcha wardrobe, her aunt dutifully lugged the large centerpiece she had ordered at her hometown bakery. Whether she overestimated the cake’s resilience or underestimated the August sun, upon opening the box, melted icing greeted them — eliciting gasps of horror from all but one. Quick-thinking twelve-year-old Golda assured them that the cake was salvageable. And sure enough, with some heart and skill, she presented her flustered aunt with a beautifully decorated masterpiece. “Prettier than what I’d brought from the city,” her aunt always makes sure to point out.

A Coincidental Cakery Despite her impressive imagination, Mrs. Porges never imagined that messing around in the kitchen would one day lead to a full-time profession. It was only after giving birth to her oldest that she first entertained the idea of supplementing the family income with her favorite pastime. Still, she hesitated before placing the $50 ad. “I recall wondering whether the advertisement would ever pay for itself,” she now laughs. But with her husband’s encouragement and faith in her abilities, she took the leap. And the public responded! Prior to Porges Cakes, most bakeries either specialized in delicious cakes or elegant decorations. It was rare to find both in the same creation. “I believe that was what put us on the market,” Mrs. Porges reminisces. “We were pleasing the palates as well as enhancing the presentations!” “One of our biggest secrets is that we always use the freshest, most authentic ingredients and never substitute with inferior, ready-made cheaper products. The end result is our signature delicate flavor that the public has come to love.” Very quickly, with her husband’s expert managerial skills and tremendous siyata d’Shmaya, the business took

off. Initially they only serviced customers upstate, but with Mr. Porges’s insistence and extraordinary investment of time, money and energy, ten years ago the company expanded and was finally able to cater to additional locations like Brooklyn, Lakewood, and even out of state. They are also busy all summer long, delivering to the mountains. Nowadays, Porges Cake is synonymous with exquisite artistry and delectable goodness in every bite.

Designing Delights Mrs. Porges is usually the one creating the actual art, but she is grateful for her entire creative team — a dozen employees overall, each one an expert in their particular field. “One of the important elements of employing a talented staff is to recognize what each employee excels at and how to utilize her skill to enhance production,” she explains. “Some girls are especially adept at fondant, others cream cakes seamlessly, while still others seem particularly skilled at baking…” A simple cake can be creamed and designed by her talented employees in a mere fifteen minutes, but even with her capable staff, complicated creations might require Mrs. Porges’ attention for days on end. One of the more intricate creations she remembers was an order for a cake shaped like a massive school building, which was to be presented to the philanthropist who had donated the structure. This showstopper, like many of her elaborate designs, took a number of days to complete. Each layer of fondant had to dry and be ready to accommodate the necessary additions. In these creations, the actual cake is added fresh, as the final addition to this intricately created masterpiece. When asked about where she draws

her ideas from, Mrs. Porges reveals that inspiration seems to come to her from the most random places: from the soft petals of a kallah’s flowers to the cascading colors in apparel showrooms. Whatever she gazes upon, she easily envisions being transformed into edible art.

Delicious by Design Styles come and go in all areas and industries, and this one is no different. When I ask her about the hottest designs, Mrs. Porges explains how, much like fashion, artistic edibles have to be in vogue. “At one point the popular item was painted cakes, at another it was rose balls. The trends change, but at the core, we always have a solidly delectable cake,” she explains. “We recently got to showcase our exquisite cookie cake creation at the massive Keiravtuni event at the Crowne Plaza in Stamford, Connecticut. “Whenever we get to pull off a particularly large project, from an artist’s perspective, it feels incredibly rewarding.” She also finds it fulfilling to share her passion and have others recognize their own latent, or already budding, talent. Some years back, when she still somehow found time on her hands, Mrs. Porges accepted the repeated request to teach some of her secrets to twelfth graders. With patience and expertise, she ensured that all of her students who put their minds to it were able to excel, not only in class, but later in their own kitchens at home. Despite her years of successful teaching, the innate talent is not readily transferable. Ultimately, Porges Cakes is repeatedly called upon. Typically, the busiest seasons are prior to yom tov, especially Purim and Sukkos. That’s when their customers notice that good intentions by themselves don’t get cakes baked. It is usually at the last minute that they realize they just don’t have the time (or is it the skill?) to possibly churn out a masterpiece on their own! From a professional standpoint, the company requests that all orders be placed in a timely manner, but they are well aware of the sudden influx that may come in at the last minute. Even as their energies wane, Mr. Porges rallies the troops as they continue to produce their luscious and sumptuous art.

Icing on the Cake

At Porges, kashrus is paramount. he wants his goods with a hechsher like that of his own home, he should head to Porges Cakes — and he was unaware of the relation. The randomness, and therefore authenticity, of the suggestion made it extra special.”

Grateful Retrospection Mrs. Porges makes it a point to repeatedly express her gratitude to Hakadosh Baruch Hu for directing her to a calling in something as delightful — and delicious — as designing delicacies. She is increasingly grateful for her husband’s business acumen and the tremendous efforts he exerts into managing every facet of the business. Her current profession also gives her a unique perspective on the origin of her impressive culinary skills. She expounds on how we don’t arrive at an end product without the proper ingredients and dedicated craftsmen at the helm. To that end, she credits her mother for her creative streak, and is quite certain that she got her artistic gene from her father. Yet, even more than that which she inherited organically, Mrs. Porges is quick to point out that their support and encouragement (despite their oft-splattered kitchen!) were equally, if not more, instrumental in forming her identity as a successful, artistic baker.

If you think about it, the craziest thing about this entire coronavirus situation is how quickly it became the new normal. I don’t know about you, but if I were to get the dream message now that school resumes tomorrow, it would be a change that I would have to prepare my kids for. A correspondence I had with a close friend drove this point home. She was sharing the difficulty of having everyone home and mentioned an article we both read that (very logically, don’t ask) explained why, according to all possible scenarios, some of the major changes to our lives are here to stay long-term, if not forever. She ended off by writing, “Even if Moshiach’s coming — the most logical scenario — doesn’t happen, chas v’shalom, the other solutions such as…” Allow me to stop here. What she wrote doesn’t matter. What matters is that as things stand now, somehow, without us noticing, Moshiach has become the most logical solution. It has somehow moved from a faraway concept to an obvious reality. Which is incredible. The world has rolled over onto its head, and that feels normal to us. And this is why: Because normal, simply put, is whatever the majority is. I am normal, because I do what most people do; someone else is “not normal,” because they’re different from the majority (read: me). We kicked and screamed, because normally — that is, most days — our kids go to school; now school is a far-fetched concept, because most of our days are spent locked up in self-quarantine, and we almost forgot what freedom feels like. For each of us this will happen at a different point in time, but the moment we stop fighting the change and accept it as the new reality, that’s when things move from “crisis” to “normal.” Even if normal looks like what our houses look like now. And here’s how all this is connected to Camp Corona: The point of our camp is to turn uncertainty into structure, and frightening into normal. Of course, you don’t have to actually run a camp for that. A simple drawn-up schedule of your day is an amazingly powerful tool for making the world safe again for your children. Personally, I chose to take it a step further and move

further from “normal” to “fun” — because once I’m not getting my freedom (you know what that means, right? Ten minutes of drinking coffee slowly, with no little people around or shaking the door handle), I may as well give my kids some great memories. It doesn’t look like I’ll be getting any work done anyway. But let’s talk about the schedule. Before we even began Camp Corona, I called everyone in for a family meeting. My teenagers rolled their eyes and my husband gave a long-suffering sigh, but they came and sat down around the dining room table. I said to them: “Look, guys. The situation doesn’t look like it’s changing anytime soon. Now, it’s our choice whether we’ll be miserably cooped up at home, or take advantage of this rare opportunity and turn it into a fabulous time for us all.” I invited them to think of what they would like to do during this unexpected “vacation,” and the suggestions started coming fast. Even the older kids quickly warmed up to the idea and began throwing in their own suggestions, like family newsletters and mailboxes and raffles and prize shops and night activities. Already their eyes filled with stars. Then we drew a basic schedule to follow each day. In our case, our schedule includes “camp” after lunch, but it doesn’t have to. A simple schedule that makes the day predictable is all it takes. It can even look like this: Here’s a favorite: • We wake up

• Get dressed • Brush our teeth • Eat breakfast • Daven • Play with toys • Story time • Drawing, arts and crafts • Lunchtime • Yard toys and fun • Exercise • Bath time • Listen to Rabbi Juravel on the phone • Bedtime

Sounds obvious? It is to you — but it may not be to your children. And following the predictable list, knowing what’s coming next and what the day is structured like, is an incredibly soothing tool for the children, which will make life feel familiar and safe again. And safe is the greatest gift we can give our children during these turbulent times. DOING ACTIVITIES ANYWAY? There’s absolutely nothing wrong with just plain fun, but sometimes, infusing some added meaning into a game can turn it from a momentary adventure into a long-lasting, warm memory and a boost of confidence that will last forever.

Step 1 We pulled out large sheets of paper (like those used to line the shelves for Pesach) and cut them to size. Every child took their turn lying on a sheet and having a sibling trace them.

Then we cut around the traced image, and had the kids draw features and basic outlines.

Next we hung the cutouts on the wall.

Step 4 Once the papers were hanging, each child received a sibling’s cutout to color. I told them to color the papers based on that sibling’s special characteristics. The younger kids drew pictures such as a sefer, because “he loves to learn Torah” and a heart because “he has a good heart.” I helped them out a bit, ensuring that every child got a generous dose of chizuk and compliments!

ADDENDUM:

The older girls received more vague instructions. I told them to think of their sibling and then just color according to what feels “right,” without thinking. Honestly, I thought this might be too vague and difficult for them (I’ve done this with women, and it’s not easy!), but my girls surprised me with their ability to let go and with their insights.

While we were cleaning up the mess that all that cutting of huge papers had left, I had another idea and told the kids they could tear up the leftover paper into pieces and dance with them. We turned on music (this was before Pesach), and the fun began!

The youngest kids simply received their own cutouts to color.

The children continued with their own ideas — they always seem to do a better job than we do! They stuffed the papers into their sweaters and danced around the room without letting any papers fall out — and without holding on to them! A fabulous time was had by all… with zero planning beforehand.

Step 6 Finally, each child presented their masterpiece and explained why they drew what they did. For the older girls, this was the first time they were putting words to what their hands had done, and their insights were absolutely amazing!

And as a side benefit, they all crashed into bed pretty quickly that night. A true win-win!
