OH, THE DETAILS! (Re: Students at the Stove) Thank you so much for a wonderful contest! I was amazed by how eager my girls were to try out every dish. And I never realized how many little details cooking involves (way more than how to check eggs and clean chickens), which I would have never thought to formally teach them. I would love to see more of these practical contests, like DIY hairstyling, time management, and how to clean up and maintain a home. With much appreciation, F.M.
SKILLS AT THE STOVE (Re: Students at the Stove) The cooking contest was a great idea. My daughter was very busy with what she had to do each week and made sure we had the necessary ingredients at home beforehand. The program taught the girls excellent skills that our daughters see in the running of a home, but don’t really get to execute on their own. It was something I wanted my daughter to do for a while, and now she wasn’t doing it because I told her to — she did it because it was in The Boro Park View. Looking forward to the next project to keep the girls on their toes. H.F.

I read almost every one of his books; I even read the one about Shabsai Tzvi — The Imposter — twice. Gold’s books are full of suspense, mystery and intrigue, and the dialogue in them is brilliant! Dogged by Criticism, Cuomo Allows Vaccine Distributions for the Elderly and for Essential Workers Slammed for a slow vaccine rollout in New York State, Governor Andrew Cuomo expanded the state’s vaccine program, giving those over 75 and essential workers the ability to get a COVID-19 vaccine as of January 11. Cuomo’s Friday announcement had the state identifying thousands of new providers and vaccine distributors to allow the 3.2 million New Yorkers who fall into the state’s 1B category — first responders, police officers, firefighters, public transit workers, teachers and those over 75 — to receive their vaccines. New York’s initial rollout for group 1A covered only health care and hospital workers, nursing home patients, assisted living residents and those with disabilities living in congregate settings. According to the governor, twenty mass distribution sites will be set up statewide over the next few weeks, with the first located at the Jacob K. Javits Convention Center in Manhattan. New distribution sites will also include nearly 2,000 pharmacies, but Cuomo warned that the federal government will need to step up its vaccination deliveries in order to keep pace with the number of people who need to be vaccinated. According to the governor, it could take until April to vaccinate everyone in groups 1A and 1B because of the limited vaccine supply. Cuomo has been dogged by accusations that his strict protocols have caused vaccines to go to waste, reported The New York Times. In one instance, the Callen-Lorde Community Health Center in Manhattan received 600 doses of the Moderna vaccine, far more than was needed for its

staff, with extra doses sitting unused in the facility’s freezer. In another case, the Family Center of Harlem contacted the Department of Health to find out what to do with extra vaccines that were left over in a ten-dose vial of the Moderna vaccine that had to be used within the next few hours. The DOH advised the clinic to offer them to eligible individuals at several nearby facilities, and when four doses still remained, they were instructed to discard them. Equally daunting has been Cuomo’s announcement that anyone found to be providing vaccines to ineligible individuals could face fines of up to $1 million, while those who fail to use up the vaccines they receive within a week could see fines of up to $100,000.
Hatzolah to Pioneer Usage of New Air Ambulances Hatzolah Air will be taking to the skies in a new way, as the emergency medical corps becomes the first to purchase a groundbreaking new lightweight helicopter currently being developed by an Israeli aeronautics company. SUAS News reported that Hatzolah purchased four of the CityHawk lightweight twin-engine jet propulsion helicopters with vertical takeoff and landing capabilities. With their small footprint, these air ambulances are ideally suited to urban usage and emer-
gency response, and the CityHawks are being built with Hatzolah’s input to accommodate a pilot, a patient, a companion, two EMS workers and necessary support equipment. Additionally, Hatzolah will become the official sales representative and CityHawk distributor for rescue organizations all over the globe, with the air ambulances expected to be in production within three to five years. “Hatzolah’s mission is always about patient care, and adding the VTOL CityHawk has the potential to save many thousands of lives every year,” said Hatzolah Air president Eli Rowe.

Neuberger, also known as Chani, is a Baltimore resident and has been serving as the National Security Agency’s directory of cybersecurity for the past year and a half. According to Politico, she will be responsible for coordinating the federal government’s cybersecurity operations, which is expected to include a response to a cyberattack last year that is believed to have been conducted by Russian hackers. One congressional staffer said that Neuberger’s appointment will be a significant loss for the NSA, noting that she had “proven herself to be one of the most capable and respected cyber experts across government throughout her decade-plus of experience.”

Congress Affirms Biden’s Victory THE PULSE: Vice President Mike Pence presided over a
late-night session of Congress affirming Joe Biden’s victory in the 2020 presidential election. The vote came after a tumultuous day on Capitol Hill where rioters broke through police barricades and entered the Capitol, forcing members of Congress to flee to secure locations. Five people died during the unrest, including one policeman. In a show of strength, Congress reconvened during the night to conclude counting the Electoral College votes. The following day, the president released a prerecorded message committing to a peaceful transfer of power and called for those responsible for the violence to be brought to justice.

The president announced he would not be attending the inauguration of Joe Biden, but Vice President Mike Pence said he plans to attend. THE IMPACT: The storming of the Capitol sent shockwaves throughout Washington and the country. Many blamed the president for his rhetoric attacking Vice President Mike Pence and for his attacks on members of Congress who refused to back his objections to certifying the election tally. Fox’s Tucker Carlson, an ardent Trump ally, said the president “recklessly encouraged” the mob. Senator Lindsey Graham said, “When it comes to accountability, the president needs to understand that his actions were the problem, not the solution.” Social media companies removed content posted by the president and shut down his accounts. The president is facing unprecedented criticism.

The reaction was swift; former Missouri Republican U.S. Senator John Danforth, who mentored Hawley, said, “Supporting Josh and trying so hard to get him elected to the Senate was the worst mistake I ever made in my life.” Danforth said that “it is very dangerous to America to continue pushing this idea that government doesn’t work and that voting was fraudulent.” Top Missouri GOP donor Sam Fox said that Hawley had “engaged in an act of reckless pandering,” and would no longer receive his support. David Humphreys, a leading Republican donor who helped bankroll Hawley’s campaign, called him “a political opportunist” and called for his censure. Simon and Schuster canceled its book deal with Hawley. Marriott Hotels announced that it would no longer contribute to either the Cruz or Hawley Campaigns. The Houston Chronicle called on Cruz to resign.

Pelosi Begins Impeachment Proceedings THE PULSE: Speaker of the House Nancy Pelosi announced that she was introducing an article of impeachment against the president for his role in the Capitol riots. Pelosi also announced that she would give Vice President Pence 24 hours to respond to her request to remove the president from office with the 25th Amendment. Should Pence decline, she intends to move forward with an impeachment vote in the House on Wednesday. Some Republicans have expressed openness to impeaching the president. Senator Pat Toomey (R-PA) said that he believed that the president committed impeachable offenses. Senator Lisa Murkowski (R-AK) called on the president to resign, and Ben Sasse (R-NE) said he would consider any articles of impeachment sent to the Senate by the House. Former New Jersey Governor Chris Christie said that if “inciting to insurrection” isn’t impeachable, “I don’t know what is.” Republican Congressman Adam Kinzinger said that Trump should be removed by the 25th Amendment or resign. However, President-elect Joe Biden refused to weigh in on the matter and said that it is up to Congress to decide how to proceed. Biden said that his focus remains on an effective transition. According to reporting by Axios, Biden and his team want to calm the nation and avoid stoking partisan anger. They intend to take an above-the-fray position and keep their focus on their COVID-19 response. THE IMPACT: Many fear that a second impeachment will heighten political tensions when the country needs healing and unity. Congressman Van Drew (R-NJ) said, “Let’s try to come together.” Others believe that impeachment is necessary and that Congress must hold the president accountable to disincentivize future presidents from taking such actions. Ben Sasse (R-NE) said that what transpired in Washington was “the inevitable and ugly outcome of the president’s addiction to constantly stoking division.” Many are also critical of the president for not immediately reaching out to the family of the police officer killed in the riots and for taking three days before ordering flags to be flown at half staff. According to multiple reports, the president and vice president have not spoken since the riots.

tions in Georgia. Raphael Warnock defeated Kelly Loeffler, and Jon Ossoff defeated David Perdue. A Democratic sweep of Georgia, a typically reliably red state, was unexpected just a few weeks ago. Republican infighting over voter fraud allegations and a disjointed approach toward the call for $2,000 stimulus checks likely contributed to both Re-

publican defeats. Former Speaker of the House Newt Gingrich called the Senate runoff losses “a Republican disaster that could’ve been prevented.” With the win, Democrats will now control both chambers of Congress and the presidency. THE IMPACT: Control of the Senate will make it much
easier for Joe Biden to implement much of his agenda. However, due to narrow margins in both the House and Senate, it is unlikely for any radical or extreme measures to pass. The Senate requires a 60 vote majority on much legislation, and many bills will need support from across the aisle to become law.
Biden Announces Cabinet Picks THE PULSE: Joe Biden announced the remaining picks for his cabinet and cabinet-level positions. Biden announced that he was nominating Merrick Garland to serve as attorney general. Garland is Jewish. His grandparents fled anti-Semitism in Western Russia and emigrated to the United States in the early 1900s. Five years ago, President Obama nominated Garland to fill the Supreme Court seat of Antonin Scalia, but Mitch McConnell and the Republican-controlled Senate refused to take up the nomination. Biden also nominated Boston Mayor Marty Walsh for labor secretary and Rhode Island Governor Gina Raimondo for commerce secretary. THE IMPACT: Walsh has a long history of working with organized labor. He served as president of the Boston Building Trades union. Raimondo is a former venture capitalist. As governor of Rhode Island, she cut taxes and eliminated regulations on businesses. She is aligned with the moderate wing of the Democratic Party. Garland is a respected jurist. He is considered a centrist and has espoused a philosophy of judicial restraint.
Jared Kushner Brokers an End to Saudi-Qatari Feud THE PULSE: President Trump’s son-in-law and special
Middle East envoy Jared Kushner added to his string of impressive diplomatic achievements by negotiating an end to the Saudi-Qatari rift. Saudi Arabia will lift its blockade of Qatar and allow Qatari planes to use its airspace. Qatar agreed to drop its $5 billion lawsuit for blockade damages against Saudi Arabia. Both countries are U.S. allies. The forward operations of the U.S. Central Command are based at Al Udeid Air Base in Qatar. THE IMPACT: The Saudi-Qatari deal further weakens the
strength of Iran in the region. During the blockade, Qatar was forced to use Iranian air space for its flights, which led to increased revenue for the Iranian regime. Additionally, having Qatar reenter the orbit of Saudi influence further isolates Iran. Kushner’s achievements in negotiating multiple peace deals in the Middel East have been a bright area of success for the president and his administration.

Don’t be put off by the coconut flour in this recipe. The coconut taste is completely lost in this dense chocolate cake that looks impressive, yet takes only one bowl and minutes to make.
INGREDIENTS 1½ cups coconut flour 6 T. potato starch 1¼ cups sugar, divided 1½ tsp. baking powder

Makes 1 9-inch round cake
Pinch salt 1 cups palm (or coconut) shortening 1 tsp. vanilla extract 3 T. water 4½ T. cocoa 5 eggs, beaten 1 T. coffee, dissolved in 1 T. water (optional) DIRECTIONS 1. Preheat the oven to 350°. 2. Mix the coconut flour, potato starch, ¾ cup sugar, baking powder and salt in a medium bowl. With a fork, mix in the shortening and vanilla until well combined but slightly crumbly. 3. Set aside ⅓ cup to ½ cup of this mixture to use as a crumb topping, if desired. 4. Divide the remaining mixture in half. 5. Sprinkle the water over one half and mix very lightly. Press this mixture evenly into a greased 9-inch round pan. 6. Add cocoa, ½ cup sugar, eggs and dissolved coffee to the second half of the mixture, beating well with a fork. The batter may remain a bit lumpy.

7. Pour this over the “dough” in the pan. 8. For the crumb topping, crumble the reserved mixture over the batter. 9. Bake for 35 to 40 minutes, until the center of the cake looks set. Allow the cake to cool completely before cutting.

MARBLE MUFFINS It took quite some convincing to get my tastetesters to believe that the bracha for these muffins is actually Shehakol; that’s how close their taste is to their Mezonos counterparts. Yields 12–14 muffins Sorghum is a lesser-known gluten-free flour, though I wonder why. It doesn’t have a very strong taste, it is whole grain and thus very nutritious, and it is super satisfying as well.

Hi, all! My name is Hendy Friedman, and I have the dubious distinction of having celiac disease. Well, probably. Full disclosure: My official diagnoses are severe non-celiac gluten intolerance and irritable bowel syndrome (IBS). Apparently, you need an endoscopy that’s positive for celiac in order to receive a definitive diagnosis. Since I had gone gluten-free several years prior to seeking a diagnosis, that would necessitate my going back on gluten for several weeks before the test. Considering that even trace amounts of gluten make me violently ill, my gastroenterologist emphatically vetoed that option. Given the severity of my symptoms, the consensus among my doctors is to treat me as if I have celiac disease, which I likely do. A rose by any other name and all that. I’m sharing the details of this journey with you in the hopes of building awareness and to benefit all of my compatriots in the land of gastrointestinal challenges. While this is a series of articles about my personal experiences rather than a research article exploring celiac disease, some basic information is necessary for context. Celiac disease is an autoimmune disorder in which ingesting gluten damages the villi that line the small in-

testine. These villi are responsible for the absorption of nutrients. Damaged or destroyed villi lead to malabsorption of chemicals, which can lead to a slew of health concerns. Some common symptoms are abdominal pain, an irritable bowel, iron deficiency, rashes, fatigue, bone or joint pain, and migraines. Untreated celiac can lead to early onset osteoporosis, fertility issues, arthritis, and neurological and mental health disorders such as ADHD, depression and anxiety. In severe cases, it can lead to Type I diabetes, multiple sclerosis, coronary artery disease, and intestinal and small bowel cancers. In short, we really need our nutrients! If I had to pinpoint a specific point in time when I began experiencing symptoms, I don’t think I could. My symptoms seemed to be a normal part of childhood for me; it never occurred to me then that other people have different experiences. I’m 45 years old now, but let’s keep that between us. In any case, there was little or no awareness of gluten intolerance when I was growing up. Other children had stomachaches too, and I didn’t know then that the frequency and intensity of my abdominal pain were completely abnormal. I remember playing at a friend’s home on Shabbos afternoon, and being suddenly doubled over with pain. I ran home clutching my stomach, desperate to get to the bathroom in time. This scenario repeated itself in varying degrees and situations throughout my childhood and adolescence. Another symptom I have always experienced is bone and joint pain, accompanied by muscle weakness. Random aches and pains all over my body were normal for me, and still are. I now have a diagnosis of Still’s disease, a rare form of rheumatoid arthritis. As I stated earlier, arthritis is not uncommon in celiac sufferers. I was terrible at sports and could never throw a ball across a court or catch a ball during a game. I was never picked for any athletic teams in camp, unless everyone had to be picked. Then I was invariably the last one chosen. I usually avoided sports, preferring to sit on the sidelines and write poetry. After watching me play, my counselors generally left me to my own devices. Given that writing is one of my first and greatest loves, I can’t say I was too heartbroken over my preferred summer activity! I was often sick as a child. I don’t remember the details from early childhood, but as a teenager I was typically given antibiotics for upper respiratory infections or sinus infections as often as six to ten times each year. That may have been largely due to my food choices. My favorite foods as a tween and teen were Super Snacks, bagel chips, pasta, and that amazing bread from Frank’s bakery in Monsey, the one with the sesame seeds on the bottom of each loaf. Anyone remember that? They don’t make bread like they used to, though I wouldn’t really know, would I? I was also tired all the time, and my doctors were unaware that I am unable to absorb iron from foods or supplements. And have I mentioned itchy? I’ve always had skin

rashes that, depending on which dermatologist I was seeing, were characterized as atopic dermatitis, seborrheic dermatitis (dandruff, but not limited to my scalp), psoriasis and fungal infections. When I learned in the parsha about the people of Mitzrayim trying every possible ointment in a futile attempt to relieve their boils during Makkas Shechin, I could completely relate! It wasn’t until I graduated high school and started working as a teaching assistant in Ohr V’Daas, R.I.S.E., that I became aware of how much impact my stomach problems had on my life. In school as a student, there was time between periods for bathroom breaks, and most teachers were understanding about allowing students to leave class when necessary. Suddenly, however, there I was, responsible for a room full of students myself! True, I had a master teacher supervising me, but this was a special education program, with the children divided into smaller groups or getting individual instruction, and I was always responsible for groups ranging from one student to ten. I no longer had the luxury of taking breaks whenever I needed them, and I started training myself to work through the pain. Severe, debilitating pain, but I would force myself to stay upright and keep shouldering on until a break was possible. At that time, the program was located on Route 45 in Spring Valley, just a five-minute walk from my pediatrician, Dr. Seymour Gorelick. Whenever I had one of my frequent upper respiratory infections, I would walk over to his office during my lunch break. One day, my boss commented that I was sick as often as a toddler, and I was stunned to realize that she was right. I’d never thought about it before, but I was becoming increasingly aware that something wasn’t right.

With an overwhelming amount of ready-made kosher food available, the foods we choose to eat seem limited only by our imagination. There are exceptions, of course. But unlike a weight-loss diet, which can be ignored all too easily in the face of temptation, the repercussions of ignoring an intolerance are generally not worth the immediate gastric rewards. But when Shabbos comes around and everyone sits down together, why shouldn’t you be part of the Shabbos seudah and enjoy the food that’s been an oneg Shabbos to so many generations? My neighbor’s daughter is off gluten, and when I asked if she would kindly be the taste-tester while I was creating the gluten-free recipes for this feature, my neighbor graciously offered to share this wonderful challah recipe. For those who cannot tolerate oats and need a Shehakol challah, The Balabuste’s Choice 2 has an excellent recipe (as well as some other tried-and-true gluten-free goodies). This recipe yields 10–12 challah rolls. Multiply as needed.
DIRECTIONS INGREDIENTS 1¾ cups warm water 4 oz. fresh yeast
1. Activate the yeast by mixing it with the warm water and sugar in a large bowl and letting it sit for 10 minutes. 2. Beat 4 eggs in a mixer. Add the oil and Rice Dream. Beat for 2 minutes.

3. Mix the yeast mixture and add it to the mixer. Beat for another 2 minutes.

4. Measure all the dry ingredients into a large bag and shake to combine. Add to the mixing bowl and mix for 10 minutes. The dough will be very sticky.

5. Spray the baking pans with oil. Spoon the dough into the pans. Cover them with a towel, and let them rise in a warm place for half an hour.

6. Preheat the oven to 350°.
1 cup white rice flour
7. Beat 1 egg with 1 T. water. Brush the rolls and sprinkle them with the topping of your choice.
½ cup tapioca starch ½ cup almond flour
8. Bake the rolls for 35 to 45 minutes, until they reach the desired doneness. Remove them from the pans and cool on a wire rack.

FA L A F E L CHICKEN CUTLETS These chicken cutlets with a spicy coating can be oven-baked for a healthier version, or fried in oil for a crispier coating. The spices listed and their proportions are meant as a guideline; please adjust them to your personal preference.
INGREDIENTS 2½ lb. thin chicken cutlets 2 eggs 4 T. oil 2 cups chickpea flour (I use Bob’s Red Mill) ½ tsp. black pepper ¼ tsp. turmeric Dash of cayenne powder 1 T. cumin 1 T. paprika 1 T. celery salt 1 T. onion powder 1 T. garlic powder
DIRECTIONS 1. Beat together the eggs and oil in a bowl. Add the cutlets and toss to coat. 2. Mix the chickpea flour with the spices. Dip the chicken pieces into the mixture. 3. Fry the cutlets in hot oil, or place the coated chicken on a lined baking sheet and bake at 400° for 10 minutes. Turn over the cutlets and bake for another 15 minutes.

KISHKE Chickpea flour is high in protein and fiber, and with the addition of vegetables, this kishke is not only delicious, but healthy, too (though, sorry to disappoint, not lowcalorie). I’ve given the option of sorghum flour in case chickpea flour doesn’t appeal to your culinary senses.
INGREDIENTS 1 large carrot 1 large parsnip root 1 small onion ½ sweet potato Small celery root, sliced (optional) 1¾ cups oil 2 T. water 1 T. salt 1 T. celery salt 1 T. paprika ¼ tsp. black pepper Dash cayenne pepper 8–10 oz. (by weight, about 2½ cups) chickpea flour You can substitute the chickpea flour for ¾–1 lb. sorghum flour, 2 tsp. xanthan gum, and ½ tsp. baking powder.
DIRECTIONS 1. Peel all the vegetables and process them in a food processor until they’re finely chopped. 2. Mix the vegetables with the oil, water, salt and spices. Add 2 cups chickpea flour to the mixture and combine well. Dough will be very loose. Add about ½ cup more flour, until the dough is soft, but able to hold its shape. 3. Wrap the kishke in parchment paper, twist the ends well, and drop it into the cholent. Note: Divide the kishke into the sizes you’d like, and freeze until needed.

VERSION 1 Oats and almonds are the classic gluten-free combination for apple crumble and are good for those who can tolerate oats. This recipe has lots of apples, with crumbs only on top. It’s a great choice when you want something sweet yet light. This recipe yields one 9x13” pan.
INGREDIENTS 8 Granny Smith apples, chopped 2 T. lemon juice 1 tsp. cinnamon 2 T. sugar CRUMBLE OPTION 1: 2 cups oats 1 cup almond flour ⅔ cup oil ⅔ cup sugar
DIRECTIONS 1. Mix the apples with the lemon juice, cinnamon and 2 T. sugar. Pour mixture into a 9x13” pan. 2. Combine the rest of the ingredients, and sprinkle it over the apples. 3. Bake at 350° for about 1 hour.

INGREDIENTS 2 large or 4 small Cortland apples 1½ tsp. cinnamon 4 T. sugar 3 T. potato starch or cornstarch CRUMBLE OPTION 2: Chickpea flour forms coarser crumbs than other flours for a more substantial, almost dough-like crumb base. 1½ cups chickpea flour ½ cup almond flour 10 T. (5 oz.) sugar 4 tsp. vanilla sugar
DIRECTIONS
½ cup oil
1. Peel and coarsely shred the apples. Mix with cinnamon, sugar and starch. Set aside.
CRUMBLE OPTION 3:
2. Preheat the oven to 375°.
The combination of sorghum and almond flour makes a very fine-textured, melt-in-your-mouth type of crumb base.
3. To make either crumble, combine the dry ingredients in a bowl. Add oil, and mix lightly with a fork until the mixture forms crumbs.

4. Divide half the crumb mixture into 12 lined muffin tins, pressing the crumbs down well.

5. Place the grated apple mixture over the crumbs. Sprinkle the remaining crumbs over the apples. 6. Bake for 35 to 40 minutes until the crumbs are nicely browned. Enjoy the look and taste of authentic Yerushalmi kugel that’s not only glutenfree, but mess-free, too. This kugel is prepared in just one disposable pan. How much better can it get?
INGREDIENTS 1 lb. brown rice fettuccine or spaghetti 1¾ cups sugar, divided ¾ cup oil 6 cups boiling water 1 T. salt 2 tsp. black pepper 8 eggs
DIRECTIONS 1. Preheat the oven to 450°. Line a 9x13” pan with parchment paper, making sure the paper comes up above all the sides of the pan. 2. Pour ¾ cup sugar and oil into the pan. Bake for 30 to 35 minutes on the lowest oven rack, until the sugar is dark golden brown and liquefied. 3. Remove the pan from the oven. Break the pasta into fourths and drop it into the pan. Immediately pour the boiling water, salt, pepper, and the remaining cup of sugar over the pasta. (You may add up to another cup of boiling water if you prefer a softer texture.) 4. Allow this mixture to rest for 10 to 15 minutes until the browned sugar is softened and everything can be mixed. 5. Beat the eggs and pour them over the mixture, mixing as you pour. Continue mixing until everything is well combined. (The mixture will be very loose.) 6. Reduce the oven temperature to 350°. Place an empty cookie sheet or a large baking pan on the oven rack to catch any oil drippings from the kugel (don’t skip this step, unless you love the smell of burning oil and smoke). Place the kugel on this pan and bake for 1 to 1¼ hours until the center of the kugel is set.

Yet for some parents, these words mean so much more. They require improvising, creativity and a hefty dose of positivity. Let’s see what it’s like to raise a child with celiac disease as we take a peek at its greatest struggles and the beautiful fruit it yields.

Mrs. Y. Sher, London Our journey began around six years ago, when my son began throwing up randomly — and yet he felt fine afterward. We were advised to do a blood test, and the results were clear. The greatest challenge is definitely the food preparation. I find myself fixing two complete suppers every night! Over the course of the past few years, the glutenfree market for celiac sufferers has, to our delight, expanded greatly. Here in England, tasty pizza bases and bread with a good hechsher are new additions. The snacks are a struggle, though, with no variety, so I make an effort to bake permitted goodies. When it comes to siyumim and parties, I usually find out what the host is planning to serve and replicate the dishes so my son doesn’t feel left out. As he matures, he’s learned to embrace his condition and take the disappointments in stride. Recently, we had an interesting incident where we saw a new product with the “No gluten” red sticker. However, my son came down with a stomachache shortly after ingesting some. Upon checking the ingredients, we were shocked to see wheat flour listed! The company assured us that the product was celiac-friendly, and that the second label had been a mistake, but I guess we’ll never know. At first, I was pretty secretive about my son’s condition, yet when I allowed myself to open up, I realized the tremendous benefits of sharing. From pooling ideas and recipes to just plain kvetching when the going gets tough, the support is invaluable. I thank Hashem for this gift that has granted my children an extra measure of sensitivity and goodwill. My heart is full as I knead dough and shape cookies, while I dream and daven for my son to flourish in his own, unique way.

In the meantime, I worked on making my daughter feel special; some foods, such as certain potato chips, were “only for Chavi.” Twelve years ago, the market for celiac patients was nothing like it is today, with shelves bursting with delicious, approved products. I will always remember our joy when gluten-free wafers and pretzels came out! And similarly, after working with a few challah recipes, I was absolutely floored when I chanced upon Rorie’s Original Gluten-Free Dough Mix and recipe. It’s definitely a winner. Sending Chavi to sleepaway camp was a formidable challenge, but with perseverance and positivity, we did it! We baked and cooked like crazy beforehand, churning

At first I attributed it to jitters, but ultimately, I had her checked out. The bloodwork came back positive for celiac disease, and when our gastro took a biopsy, we had our answer. Although it was difficult for her to miss out on spontaneous parties, we were lucky this wasn’t uncharted territory; most of

Instead, I continued running to other doctors, but they all dismissed my worries, saying, “It’s nothing, you’re spoiling her...” Finally, I admitted defeat and went back to Dr. Benjamin. He explained that my baby’s body was seriously damaged and could not fight any infections because it wasn’t absorbing any minerals. Looking back, there is no doubt in my mind that he saved her life. At first, to give her entire digestive system time to heal, Freidy could tolerate only blended foods; slowly, we progressed to small pieces and raw foods. As per Dr. Benjamin’s advice, I made buttermilk for her using whole milk (buttermilk, like yogurt, is predigested and doesn’t need digestive enzymes to be broken down) and she gained four pounds within the first four weeks! It really did wonders to her. She was a changed child, playing and growing and thriving. There were many obstacles along the way. There was hardly any awareness, and I had no support. I will always remember Dr. Benjamin’s parting words: “Freidy, when you’ll be 99 years old, you can bake a birthday cake with gluten!” Amen, im yirtzeh Hashem…
Mrs. B., Yerushalayim Our journey had a rocky start. Although my daughter started displaying symptoms of celiac disease as soon as she started eating wheat, it took over half a year for her to get diagnosed. She was very constipated and generally unhappy. If anyone came too close to her, she became visibly uncomfortable. Deep down, I just felt something was wrong. But the clincher was when my husband changed her one night and said, “You must take her to a doctor — her
hands and legs are so skinny, yet her stomach is terribly bloated!” Our pediatrician did some bloodwork, and the high numbers pointed to celiac disease. However, protocol required us to do an endoscopy. That’s when the fun began. Until they did it, we couldn’t take her off gluten as it could alter the results. As crazy as it sounds, we went three times to have the endoscopy done, but because she had a cold every time, the technicians refused to do it. So while we waited for the endoscopy to be performed, we were forced to watch our little girl suffer until we finally got the official diagnosis. Initially, there was definitely a learning curve as we realized that in addition to anything you would make Hamotzi or Mezonos on, many seemingly innocent products — like beer and sour sticks — are also an issue. At the beginning of each school year, I notify the teacher about my daughter’s needs, and the teacher then includes a note on the Shabbos party/birthday notes sent to parents to remind them to send gluten-free treats. Many do their best to accommodate, some less so. I don’t blame them, yet having a child with dietary limitations changes your perspective. To see my daughter’s disappointment when the birthday girl brings Bissli or cupcakes is torturous. She refuses any alternatives. Overall, I don’t find preparing food such a challenge. All proteins, fruit and vegetables are no problem. Rice and potatoes are okay, and I learned to substitute — for example, to use cornflake crumbs instead of breadcrumbs. I basically cook gluten-free to avoid cross-contamination. My biggest challenge is when I buy a cake or make dessert with gluten. Until now, it’s been fine to give her some chocolate instead, but as she grows older, I’ll need to get used to real gluten-free baking. Interestingly enough, due to my daughter’s diagnosis, I have implemented healthier eating and cooking habits. I did lots of research and developed an awareness of a generally more wholesome lifestyle. And I love it!
Parenting a child with celiac is definitely a voyage. But when loaded with good cheer and care, the sweet taste of love remains with the child forever. Celiac disease is an autoimmune condition where the ingestion of gluten leads to damage of the villi — part of the small intestine — and hinders nutrient absorption, which healthy villi promote. Symptoms are wide-ranging and include gastrointestinal problems, failure to grow, anemia and more. Celiac disease can occur at any age and may be hereditary. A diagnosis is usually given after a combination of blood tests and intestinal biopsies are performed. The only known effective treatment is a strict lifelong gluten-free diet, which ensures recovery of the intestine and improves symptoms. As long as they take care of themselves, those suffering from celiac disease can lead healthy and successful lives.

The feeling of accomplishment and knowing that I was actually able to make all these foods! Getting the compliments! I love the kitchen, and this contest gave me a great opportunity to actually learn my way around. My favorite part of this project was seeing that I really know how to cook.

Staying up late to cook for Shabbos! Making the fish. It was so easy and fun! Eating the food I cooked on my own. Getting to know what’s inside my food every week. Getting the compliment that my food beats my mother’s! I was so proud to serve the dishes I made. That I got comfortable near a pot, and not just near an oven. Getting to know all the “secrets” of how my mother makes the Shabbos foods. Spending time in the kitchen. Getting heimish in the kitchen. Working in the kitchen together with my mother! Making the easy-to-follow recipes. It got me to complete projects that I sort of knew how to do but never actually did fully by myself. Cooking together with Mommy! Learning new recipes. I love to cook and bake. The chicken soup. Making farfel. I enjoyed puttering around in the kitchen and watching others eat what I made. Figuring out how to cut onions. I felt very good when everyone complimented me on my soup. Getting to know all my mother’s great recipes. Getting compliments from my brothers on the foods I cooked. Having something to look forward to on long homework-free nights. I also loved thinking about what I would buy if I win!

What Mothers Are Saying Realizing how big and mature an elevenyear-old can be in the kitchen! What a beautiful way to connect with my daughter! It gave my daughter the opportunity to try her hand at cooking, something my mother never let me do. She was happy to try the various kinds of dishes and she did what she likes to do best. It was so nice to work together! My kids felt so special to be so productive. Showing my daughter how I make certain things and even teaching certain halachos (like how to check onions) that we tend to think they pick up just from watching us cook. Responsibilities like keeping an eye on the simmering onions that they shouldn’t burn and putting away the food that it shouldn’t spoil. Actually starting to cook… Touching the raw chicken. Now with the short Fridays it was a bit hard to do all the Shabbos preparations in addition to cooking. Dropping food into boiling water (kneidlach, chicken, vegetables, fish), because I was afraid that the hot water would splash on my hand.
Knowing what every ingredient is! Peeling all those vegetables. Cleaning chicken bottoms! Making the potato kugel was the biggest hassle. Washing the fish and chicken. Actually following the recipe completely and hoping the results will be good. Waking up early on Friday morning to make the cholent. Writing the recipes on such tiny lines. Waking up early to make the potato kugel. Learning how to put the fish into boiling water. Keeping on top of the program every week. Cooking the fish, to which I am allergic. Cleaning up after myself, putting back all the ingredients, and washing the utensils and dishes. Learning how to manage the flames. Handling the raw eggs and chicken. Getting used to cooking on my own. I have a fear of raw chicken. But I made it anyway, and I ate it too! Cutting the onions. Waking up early to prepare the food and peeling vegetables for the soup were the hardest parts. Working around my mother’s cooking schedule; she usually cooks Shabbos foods while I’m at school. Handling the hot pans and oven. Starting to cook as soon as I got home from school so the food should have enough time to cook. Cutting the onions. I was crying my head off. I also didn’t enjoy trying to figure out the right amount of spices to add.
I’m very sensitive to onions and found it difficult to work with them.

That I had to get up early to cook. When I made the fish I forgot to put the onions into a mesh bag so I was busy fishing out all of the onions from the fish. Worrying that the food should be as delicious as I hoped. Convincing my mother to let me take over some of the cooking every week.

I waited every week to see what was coming next, and I couldn’t wait for Thursday, when I would get to make it! Thank you for arranging this project that gave me the opportunity to work with my mother in the kitchen and to learn how to cook for Shabbos! I loved this project! I always enjoyed to patchke in the kitchen and now it gave me the opportunity to really cook for the Shabbos meals. Thank you for the challenge. I didn’t realize until now how much fun and rewarding cooking is. This was amazing! I always loved the kitchen but I’d never done any of the Shabbos basics yet. Chazal have identified five species of grain – wheat, oats, spelt, barley and rye – as the chameishes minei dagan. We recite the bracha Hamotzi on breads, and Mezonos on snacks, cookies and cakes, that are baked from these grains.
WHEAT
OATS
Wheat is one of the foremost food staples and is relatively simple to grow. When the wheat crop looks dried out and dead, the time for harvest has arrived.
Oatmeal, granola, oatmeal cookies… The beloved oat is enjoyed for breakfast and snack in so many different ways. Its versatile deliciousness has even earned it a spot on the calendar — October 29 is officially tagged as National Oatmeal Day!
Wheat grown in one acre can produce some 1,500 loaves of bread.
Old Mr. Quaker, the mascot on the Quaker Oats packaging, was born in 1877, though he’s had a couple of face-lifts since. The Quaker Oats brand also claims to be the first to splash a recipe on food packaging; it was a recipe for oatmeal bread, printed in 1886.
Wheat kernels consist of three layers — bran, endosperm and germ. Whole-wheat flour is the result of the whole kernel being ground, while white flour is produced when the bran and germ are removed before grinding. Whole wheat retains more minerals, vitamins and fiber.
Oats are known as a natural beauty product and are used by the cosmetic industry.
You may have discovered when cleaning for Pesach that wheat finds its way into the strangest things! Here is but a sampling of random items that take advantage of wheat.
Dieting? Feel full longer! Oats ranked third on a satiety index compiled by Australian researchers. A British study also claims oats can help you work out. They reported that individuals who ate oatmeal three hours before exercise had greater endurance.

This supergrain relieves itchy skin. It can also soothe skin conditions such as eczema, sunburn and chicken pox. Try an oatmeal bath! Add 1 cup of finely ground oats to the bathwater and feel the relief. An open bowl of oats in the fridge can eliminate bad smells. With oats and oat bran beneficial for digestion, a bowl of oatmeal for breakfast can provide digestive comfort.

BARLEY More than 50% of barley grown around the world is used as animal fodder. Humans enjoy barley primarily in beer and whiskey, though our kehillah might be more familiar with it in cholent and soup. Malt vinegar is also produced using barley. Barley is rich in fiber and beta-glucan, which lowers cholesterol. Barley retains its nutrients throughout processing, more so than wheat and other grains. Because of its high nutritional value, barley is often added to cereals and other products.
SPELT The Germans call it dinkel, and the Italians call it farro. The Romans called it “marching grain” because of its high energy content. To us, it is simply “spelt,” named this way because of the way its husks are split during threshing.
The farmlands of Russia produce the most barley in the world: more than sixteen metric tons per year.
Spelt is a covered wheat, with tough husks that don’t fall off easily.
Barley money was one of the first forms of currency. People exchanged specific measurements of barley to obtain anything they needed.
Spelt was a staple food for centuries. Farmers slowed down their spelt production when modern harvesting and processing methods arrived in the fields. The very machines that made reaping wheat so simple couldn’t handle the toughness of spelt.
In 1324, King Edward I of England introduced a measuring system based on barley. Three barleycorns constituted one inch. The modern shoe-size system used in the United States was also influenced by barleycorn measurements.
Spelt is pricey because it yields less crop per acre than wheat, and also because it requires a double grinding process.
Caffeine-free coffee? During World Wars I and II, roasted barley was used in place of good old coffee, which was expensive and often unavailable. Today the concept is making a comeback, and the brew is downed by people who want to avoid caffeine.
Today, spelt is viewed as a nutritious alternative. It can be used as a substitute for wheat flour in many recipes. Many people find it easier to digest.
RYE It isn’t wheat and it isn’t barley, though it does look so similar that an amateur wouldn’t be able to distinguish between them. Rye is a cereal grain that is easy to grow. Rye is said to be more nutritious than wheat. It leaves you feeling fuller and doesn’t impact blood sugar levels quite as much. With its sour taste, rye is limited in baking uses. It also has less gluten, which makes for rather dense dough. It doesn’t produce fluffy breads or cakes, as it doesn’t rise much. Most rye breads contain some wheat flour to help with this issue. Some recipes of fully rye bread call for 24 hours of rising time. Growing rye is great for the ecosystem. It is a cover crop, enhancing soil health, preventing erosion and reducing weeds. Rye sports the old-fashioned nickname of “poverty grain” because it grows well in poor soil and was often eaten by poorer communities. Canada grows more rye than the United States. They use much of their crop in whiskey. L’chaim!
