In addition, from my experience working with clients to heal trauma, I’ve learned that most anxieties and fears result from past traumas and intense emotions that were trapped in the body; when eliminated, the fears and anxieties mostly disappear. Perhaps a fear may stem from a time your child was at the scene of an accident, was chased by a dog, etc. Or the emotions might have even gotten trapped even before the child was old enough to remember the trauma. The words “he’ani imach – the poor person [who is] with you” seem superfluous. After all, where else should the poor person be when signing off the transaction? Isn’t that selfunderstood?

THE SHIDDUCH MADE HEADLINES. All of Poland was abuzz with the exciting news of the engagement of Reb Nachum’s daughter to Reb Gedalya’s son. This was going to be a wedding to remember. After all, when two of Poland’s most affluent families unite, the entire community follows every detail. The months passed, and the wedding date was soon approaching. It first began as unverified gossip, but before long the rumors were official: Reb Nachum’s business had taken a turn for the worse. Things got so bad that soon Reb Nachum had no more than your typical pauper on the street. It was clear he would not be able to fulfill his end of the financial deal the two mechutanim had agreed upon at the time of the engagement. Reb Gedalya penned a lengthy letter, expressing his heartfelt wishes to his mechutan in regard to his dismal plight, yet making it clear that he had no choice but to call off the shidduch. To his surprise, Reb Nachum rejected the overture, replying that he was an ones and could not be considered liable for the turn of events. The initial sense of pity Reb Gedalya had for his poor mechutan turned to anger. He sent him a second letter, writing in no uncertain terms that the matter was non-negotiable. The shidduch was off. Reb Nachum sent back his terse reply: “The shidduch is min haShamayim. I won’t call it off for matters of money.” With no choice, Reb Gedalya traveled to Reb Nachum’s home and requested that he join him on a trip to Sanz. They would ask the Rebbe, the Divrei Chaim of Sanz, what to do. But Reb Nachum refused, and Reb Gedalya headed off on his own, intending to have the Rebbe summon Reb Nachum to beis din for a din Torah. It was Friday afternoon when Reb Gedalya arrived. The gabbaim, who would typically not allow anyone in to speak with the Rebbe so close to Shabbos, made an exception for this notable philanthropist. “It’s a mazel you came to me,” the Rebbe said after hearing Reb Gedalya’s tale of woe. “But now isn’t the time for lengthy discussions. After Shabbos, I’ll tell you just what to do.” Shabbos passed calmly. Reb Gedalya was relaxed with the knowledge that the Rebbe was supporting him. After Havdalah, Reb Gedalya was the first to enter the Rebbe’s room. “Don’t wait!” the Rebbe said, “Travel to your mechutan immediately and tell him that since his wheel of fortune turned, you would like to change the conditions of the shidduch contract. The wedding will go on, but you will cover the entire expense on your own.” The room was spinning. Reb Gedalya was too stunned to digest the words his ears heard. Was this for real? But the Rebbe was sitting before him, in all authenticity, a soft smile on his face.

On Friday, the Rebbe assured me that it was a good thing I came. Any other beis din would surely be on my side…” “Ah,” the Rebbe replied, “it seems you didn’t understand my words on Erev Shabbos. I said that it was a mazel that you came to me – and not your mechutan! Imagine if things would have been different, if your mazel had changed and your mechutan would be standing here before me. How would you feel if you lost your fortune and your mechutan was begging you to rescind the shidduch? You should be very grateful to Hakadosh Baruch Hu that you are the one standing before me right now.”

With No Response From City, Chaverim Does 1 A.M. Repair on 16th Avenue Sinkhole A large sinkhole that had appeared in the middle of the intersection of 16th Avenue and 48th Street is no longer a problem, thanks to the efforts of Boro Park Chaverim. Boro Park 24 reported that Chaverim had received several reports of people calling for help after getting sinkhole-related flat tires while driving through the intersection. When repeated calls to 311 to fix the sinkhole proved fruitless, several stopgap measures were taken, with Chaverim placing road cones on the street to prevent people from driving over the dangerous area. But several motorists drove over the cones, which then became wedged under their vehicles. A metal trash can placed in the sinkhole was equally ineffective and had Chaverim answering calls from drivers whose cars were damaged by the garbage receptacle. Hoping to restore safety to the busy intersection, three Chaverim members headed to Home Depot, where they stocked up on asphalt and other essentials. Chaverim blocked off the sinkhole at 1 a.m. one night last week, patching the sinkhole at a time when the roadway is typically deserted. “I hope it will stay like that and people won’t get any more flat tires, said Chaverim coordinator Ari Fleischer.

As New Data Shows Significantly Underreported Nursing Home Deaths, More Democrats Join Push to Revoke Cuomo’s Emergency Powers Newly released data that shows per-home fatality rates in New York’s nursing homes are casting Albany in a less-thanflattering light, with the state now holding the dubious honor of having the thirteenth-highest nursing home death rate in the United States. Governor Andrew Cuomo and the Department of Health had proudly touted New York’s nursing home death rate as lower than average, with the state having been ranked 35th in the country But after a 76-page report released by Attorney General Letitia James accused the Department of Health of underreporting the number of nursing home–related deaths by nearly 50%, a judge ordered the Department of Health to release all of its records on the matter last week, saying its failure to do so violated state law. The new data offers a grim view of last spring —when Cuomo ordered nursing homes to accept COVID-positive patients. It also includes the number of deaths inside nursing homes as well as those of patients who contracted the virus

in a nursing home but died elsewhere, information that had not been previously reported. The original statistics for Boro Park Center for Rehabilitation and Healthcare showed just 32 COVID-19 deaths, but the latest DOH information shows that another 41 of the facility’s patients died in hospitals. Similar data emerged in Monsey, where just four COVID-19 patient deaths had been documented at the Northern Metropolitan Residential Health Care Facility, with the new information reporting that four more patients passed away due to the virus after being transferred out of the home. Sheepshead Nursing and Rehabilitation Center in Brooklyn showed the largest change, with only nine in-house deaths reported, but fifty more fatalities now shown by the DOH’s latest data. The DOH had refused to provide the data, which had been requested by the Empire Center for Public Policy under a Freedom of Information Law request for months. Its release last weekend came when state senators Liz Krueger and Alesandra Biaggi, both Democrats, joined a Republican effort in the legislature to revoke emergency powers granted to Cuomo last spring because of the pandemic. According to Hamodia, Biaggi noted that Cuomo had issued 65 executive orders and suspended 250 others during the first six months when he had complete control over the state. In addition to enacting measures to control the spread of COVID-19, such as limiting public gatherings and closing businesses, Cuomo’s executive orders also required bar patrons to order food along with their beverages and waived annual performance reviews for public school teachers, reported WGRZ. “In the beginning it was probably necessary during the pandemic, but the time has come for this control to be rescinded,” said Republican State Senator Edward Rath. The first ten attempts in the legislature to wrest control of the state back from Cuomo came exclusively from Republicans, but an eleventh try in December had seven Democrats crossing the aisle to support the effort. Since the release of James’s scathing report, Assembly Democrats have been holding closed-door meetings, reportedly discussing how best to revoke the governor’s emergency powers.

Albany Puts the Kibosh on NYC Plan to Use Second COVID-19 Vaccine Doses for First-Timers A plan by Mayor Bill de Blasio to get more city residents protected against COVID-19 by giving doses intended for use as second vaccines to those who have yet to be inoculated has been shot down by the New York State Department of Health. Hamodia reported that de Blasio has repeatedly advocated for the idea, saying that it makes more sense to provide some protection against the coronavirus to more people, instead of offering greater protection to a smaller group of individuals. “Isn’t that the moral thing to do, to maximize first doses and then we’ll double back on second doses, for sure, even if we stretch out the timeline a little bit?” said the mayor, who vowed that the city would stay on top of its allocations to ensure that everyone gets the recommended two doses within the proper time frame. A written response to the mayor by New York State Health Commissioner Dr. Howard Zucker nixed his suggestion, saying that it would create unwarranted anxiety in those who were already awaiting their second vaccines. Zucker also noted that the Centers for Disease Control does not recommend delaying second doses, although it has acknowledged that they could be administered as much as six weeks after the initial vaccine if necessary. De Blasio isn’t the first to suggest co-opting vaccines that were intended to be used as second doses for those who have yet to be inoculated. The practice is already in place in the United Kingdom, although some European countries have criticized that approach, calling it potentially dangerous.

He decides to finally meet Edo and try to explain to him what happened all these years ago and thus rid himself of the horrible guilt. In a conversation with Eliyahu Potolsky, he admits to what he did, saying that he assumed Edo’s name and identity as his own. It was when she saw the paper trembling in her father’s hand that Elisheva could no longer contain herself. She suddenly burst into a torrent of tears but could not find a tissue. Eliyahu stood there, steady and calm, and handed his father-in-law a small pill. “Take this, please,” he said. “You shouldn’t read this fax when you’re in such an excitable state.” “Yes, you are right,” his father-in-law said, and raised his eyes. “But maybe give Elisheva one as well,” he added with a ghost of a smile as he nodded his chin toward his daughter. “She’s taking this harder than I am.” “But Tatty,” she said, tears still wet on her cheeks. “How can I take it differently? Officially the fax was addressed to her, but it had arrived now, when her father was here, so obviously, she would give it to him to read first, irrespective of whom it was addressed to. Dear Mrs. Potolsky, I am sending this pursuant to our phone call. You can show it to your father, if you wish. I cannot bring myself to write to him directly at this point. I will not try to apologize for what was, because it would be impudent of me to apologize. Perhaps I will just describe those days a bit, with the hope that you might understand my history somewhat and why I came to committing the act that I did.

The war came to an end, and we were rescued from that place only three and a half years later. I endangered myself to go back and get the paper, without telling Edo — who was then five or six — a word about it. Then I contracted pneumonia and was hospitalized. Our paths parted. When I arrived in Eretz Yisroel, I was sent to an orphanage in Yerushalayim, and Edo, who had come to the country before me, was sent to Beit Avot in Bnei Brak. I traveled to Bnei Brak to meet Edo and tell him about his identity, and then, for the first time, I discovered that I simply could not do it. I returned to Yerushalayim. You can be angry with me and claim that what I did was criminal, and I will agree with you, because as I noted — I did not come to apologize, just to relate the facts.

I planned that after I would recover, I would fix the mistake, but by the time I recovered completely, it was many weeks later. By then I had been enveloped in the embrace of a warm and loving family, and I could not think of being cast back into the identity of Gustav, the anonymous boy, the boy without a name, again.

They surrounded me with so much love and warmth, that I, in the dismal situation I was, just went along with it.

I was about three and a half when I arrived at the Lucius Jan Catholic Orphanage. I was alone in the world, with no family and no identity. I grew up in the institution with the name Gustav — the assistant director gave me that name. Two years later, in the middle of the night, a Jewish woman brought her young son and asked that he be taken into the home until the end of the war. At first, the assistant director, who liked me, didn’t want to get involved with another Jew. But the mother begged and pleaded, and I, who apparently was looking at her as an image of my own lost mother, asked him to accept the child. He eventually agreed. The mother gave me a piece of paper that had information about her son, and asked me to keep it for him until he grew older.

I came down with pneumonia again, and then contracted other various infections. During one of my fever deliriums, I mumbled the name Yosef Ludmir. Those around me thought, apparently, that it was my name, and they submitted it to the survivors’ lists. My relatives — in fact, Yosef Ludmir’s relatives — hurried to come and meet me. They surrounded me with so much love and warmth, that I, in the dismal situation I was, just went along with it. I could not tell them that they were making a mistake. I think I even explicitly told them that I was Yosef.

Again, you can say that there is no such thing as “I can’t,” and again, I will agree with you. I will not even ask for forgiveness, because I know that what I did is simply not forgivable. I grew up in the home of the Ludmir family in Magdiel. I attended the local school and then the high school there. Later, I learned business administration and I got married. Then my Uncle Gershon gave me a sum of money that he had been keeping for me, and which I did not know about until then. His brother, Hy”d, Aharon Ludmir — Yosef’s father — had sent some of his assets to Eretz Yisroel at the beginning of the war, for safekeeping. But Aharon had not survived, and the Ludmir family thought that his son, who had survived the war and reached their home, should take possession of the money. Well, Aharon’s son had indeed survived, but the one who came to their home was not him but me. With that money, I opened a large and successful timepiece business. But after two years, it ran into trouble. I tried other fields, but nothing was successful. Eventually, I moved to Australia with my wife. Here, our business started to thrive, and over the years, I felt guilty about my successes — which were attained with the initial investment of money that was really Edo’s. I avoided meeting your father over the years. I’m not a professional liar, and I would not have been able to keep up the façade in front of him. Once, while I was still living in Eretz Yisroel, Ulush wrote to me in one of her letters that he was getting married — so I sent him a gift from my failing timepiece factory, a cuckoo clock. Unfortunately, I do not have children. I have no idea what

I asked my contact in the old-age home, Emmanuel, to maintain contact with you, and to report to me regularly. He told me that you were selling a cuckoo clock — apparently, the one I gave Edo as a wedding gift. I quickly sent someone to buy it for the highest possible price. Later, the old-age home worker heard that you wanted to build a suite for my childhood friend, and I was happy that finally, the penthouse apartment would be used for the purpose I had given it to you. But this initiative went badly, because I asked the worker to send you a contractor to offer to do the job — which I would pay for — but he sent someone who clearly wasn’t fit to present the story as I wanted him to. At this point, you began to suspect that something was going on. You began to make your own inquiries, and ultimately you discovered the truth about me. That’s the story. And as simple as it may seem to write it, this took me nearly two full days. What can I say? True, I am not that old, but I am no longer young either. I am certainly closer to the end of the path than the beginning. Tell me what else I can do to atone, at least somewhat, for what I have done, if you can think of something beyond what I’ve tried to do. I hope that the day will come when I will muster up the strength to make the long flight from Australia to Eretz Yisroel, in order to meet Edo — the real Yosef Ludmir — in person, to ask for his understanding and perhaps even a bit of forgiveness. Congress Passes Key Step for COVID-19 Relief THE PULSE: At about 5:30 early Friday morning, the Senate voted along party lines to adopt a budget resolution allowing for the fast track of President Biden’s COVID-19 relief plan. Vice President Kamala Harris passed the tie-breaking vote. Later in the day, the House voted 219-209 to approve the measure. The resolution makes it possible to move the COVID-19 relief bill through the Senate with a simple majority and avoid a potential filibuster through the process of budget reconciliation. Senate Republicans expressed disappointment that the administration is choosing a partisan approach to the $1.9 trillion relief bill instead of adopting something closer to their $600 billion counteroffer presented to the president last week. The president believes that the Republican offer is not bold enough and that the economy requires a considerable stimulus to avoid stagnation. The administration appears willing to accept one point of the Republican’s proposal, which would target the $1,400 stimulus checks to middle- and low-income families and phase out payments for higher earners. A bipartisan amendment calling for a more targeted stimulus passed the upper chamber 99-1. Biden’s bill also calls for enhanced child tax credits for the upcoming year. Democratic leaders in Congress have drafted legislation that would provide par-

ents with fully refundable tax credits of $3,600 per child for children under the age of 6 and $3,000 for children ages 6 through 17. The payments will be available in monthly installments beginning in July of this year. Republican Senator Mitt Romney introduced an alternative plan to provide permanent monthly child payments to parents. Romney’s bill is revenue-neutral as it eliminates other government expenditures. THE IMPACT: The lackluster January jobs report released last Friday provided the president with additional ammunition to make the case that the economy needs the extra stimulus. Treasury Secretary Janet Yellen said that she believed that the U.S. could return to full employment by the end of next year if Biden’s $1.9 trillion stimulus is passed. Yellen cited an analysis from the Congressional Budget Office that without a stimulus package, full employment would not return until 2025. Former Clinton Treasury Secretary Larry Summers penned an op-ed in The Washington Post where he argued that a large stimulus is necessary but that the Biden plan is too large. He expressed concern that Biden’s plan might inadvertently trigger inflationary pressures on the U.S. economy and that Biden would use up precious political capital best saved for passing his Build Back Better infrastructure plan. Yellin countered that Summer’s concerns were small compared to the risks of doing too little and that the U.S. has tools to deal with inflation should it arise.

Biden Faces Hurdles on Iran Policy THE PULSE: President Biden said that the U.S. would not lift sanctions against Iran until Iran first stopped enriching uranium. Biden responded to comments by Iran’s Supreme Leader Ayatollah Ali Khamenei, who stated that Iran would not return to compliance with the nuclear deal until the U.S. lifted sanctions. Over the past year, Iran has increased its uranium production at its Fordo facility and significantly cut its nuclear breakout time. Last month it expressed its intention to begin research into uranium metal, a step that would bring them closer to bomb-making capacity. The Biden administration has expressed willingness to rejoin the JCPOA, but only once Iran comes back into full compliance. Secretary of State Anthony Blinken told a Senate committee that “if Iran comes back into full compliance with its obligations under the [deal], the United States would do the same.” Israeli Ambassador Gilad Erdan lauded Biden’s response and said, “I think it is a very, very positive sign.” However, Erdan stressed that the Israeli government remains opposed to America rejoining the Iranian nuclear deal. Still, he expressed hope that American and Israeli national security officials would reach common ground on the matter.

THE IMPACT: Biden is committed to reengaging with in-

ternational bodies and engaging in diplomacy. However, the ICC controversy shows that Biden’s commitment to diplomacy has its limits. America remains opposed to the International Criminal Court’s overreach because it believes it will wrongly target American and Israeli citizens.

Biden Rescinds Trump’s Immigration Orders THE PULSE: President Biden issued multiple executive orders aimed at undoing much of Trump’s strict immigration policies. Biden ordered a review of Trump’s “public charge” rule, which would place limits on the immigration of those who would likely need to make use of government assistance programs. He also established a task force aimed at reuniting the 545 children who were separated from their parents at the border. Additionally, Biden signed an order that would prevent taxpayer money from paying to complete the border wall. He said that “building a massive wall that spans the entire southern border is not a serious policy solution. It is a waste of money that diverts attention from genuine threats to our homeland security.” Biden also proposed a pathway to citizenship to millions of dreamers who arrived in the country illegally as children.

THE IMPACT: The Biden administration is in the process of

forming its Iran policy team. The Biden administration tapped Rob Malley, a former lead negotiator on the Iran Nuclear Deal as a special Iran envoy. Malley’s appointment received criticism from many in the pro-Israel camp who believe that he is too soft on Iran and not sufficiently receptive to Isreal’s security concerns. However, Barak Ravid of Axios reported that Secretary of State Anthony Blinken instructed Malley to form an Iran team with diverse views. According to multiple sources, Blinken asked Malley to include people “more hawkish” on Iran. Blinken is committed to forming a team with a range of opinions to avoid the trap of groupthink on this pressing issue.

THE IMPACT: Biden is charting an approach distinct from Trump regarding illegal migrants crossing at the southern border. The Trump administration stressed strict compliance and enforcement, which would deter border crossers from attempting to enter illegally. Biden believes that it is best to address the root cause that drives migrants to make the journey in the first place. The administration is committed to focusing on the Northern Triangle countries of Guatemala, Honduras and El Salvador. Biden plans to funnel aid to these countries to combat gang violence, strengthen democracy and boost the economy.

Biden Administration Opposes ICC Decision on Israel

Trump’s Second Impeachment Trial Set to Begin

THE PULSE: The International Criminal Court announced its decision to investigate Israeli actions in the West Bank and Gaza. Israel is not a signatory of the Rome Statute of the ICC, and as such, the ICC does not have jurisdiction over Israeli actions. The ICC is claiming jurisdiction on the basis that the Palestinian territories are Palestinian land, and that therefore, the court has jurisdiction over acts committed in those areas. The Trump administration strongly opposed the ICC’s actions and placed sanctions on several ICC members. The Biden administration has committed to reviewing those sanctions but has not removed them. In response to the ICC decision to proceed with the investigation, State Department spokesman Ned Price said, “Israel is not a State Party to the Rome Statute. We will continue to uphold President Biden’s strong commitment to Israel and its security, including opposing actions that seek to target Israel unfairly.”

THE PULSE: The second impeachment trial of Donald Trump is set to begin this week. The trial is likely to be hasty as it is improbable that Democrats can reach the two-thirds majority required for conviction. A lengthy trial is not in the interests of Republicans who want to put the events of January 6 behind them and Democrats who want to move on to Biden’s ambitious policy agenda. President Trump’s lead lawyer David Schoen asked the Senate to suspend the trial from sundown on Friday through Saturday to accommodate his Shabbos observance. Senate Majority Leader Chuck Schumer, who often refers to himself as the “shomer” of Brooklyn, acceded to the request. Should the trial last past 5:24 on Friday afternoon, it will be suspended until 6:25 p.m. on Saturday and likely resume Sunday afternoon. Schoen also wrote that he would not “want to in any way interfere with anyone’s religious observance on Sunday, (but) perhaps since the proceedings do not commence

each day until the afternoon, Sunday proceedings will not affect anyone else’s religious practice.” This is not the first time that Shabbos observance has conflicted with an impeachment trial. During the 1999 impeachment trial of Bill Clinton, Connecticut Senator Joe Lieberman would walk four miles from his Georgetown apartment to the Senate chamber and avoid the use of elevators on Shabbos.

THE PULSE: In a secret vote, Republican House members voted against removing Rep. Liz Cheney from her leadership position over her vote to impeach President Trump. The vote was a lopsided 145-61 in Cheney’s favor. However, the Wyoming Republican Party voted to censure Cheney for her actions. Cheney was defiant in her response. She said that “The oath that I took to the Constitution compelled me to vote for impeachment, and it doesn’t bend to partisanship. It doesn’t bend to political pressure.” In the other hot button House controversy, House Republicans refused to remove Majorie Taylor Greene from her committee appointments. In response, House Democrats took the unusual step of bringing a resolution to strip her of her assignments to the House floor for a vote. The vote passed the House 230-199. Eleven Republicans joined with Democrats to remove her. Supporters of the resolution claimed that the extreme action was warranted due to Taylor Greene’s past support for comments deemed anti-Semitic and for her past expressions of support for comments calling for the execution of Nancy Pelosi.

THE IMPACT: The controversy surrounding Liz

Cheney and Majorie Taylor Greene highlights the growing rift between pro- and anti-Trump forces in the GOP. While a significant portion of the Republican base remains avid supporters of the former president, a defiant Cheney told Fox News that the former president “does not have a role as a leader of our party going forward.” A point of importance is that Representatives Jim Jordan (R-OH) and Matt Gaetz (R-FL) believed that they had gained enough support to remove Cheney. Last week, anti-Cheney elements claimed that they had secured the support of 115 Republican House members who were committed to removing Cheney from her post. However, in the secret ballot, only 61 Republicans voted in favor of her removal. This appears to bear out the argument that what Republican representatives say in public is different from what they believe in private. Apparently, many Republicans fear the backlash of Trump supporters and do not want to face pro-Trump primary challengers. However, in private, they are willing to support those who oppose the former president.

INGREDIENTS

DIRECTIONS

1 bag (16 oz.) frozen strawberries

1. Blend all pop ingredients in a food processor. Divide into ice pop molds. Insert popsicle sticks and freeze until firm.

1 box strawberry jello 1 cup boiling water ½ cup red wine ½ cup oil

2. Melt the chocolate and oil in a microwave or double boiler until smooth. Drizzle this over the ice pops and quickly return to the freezer.

ORANGE SORBET

DIRECTIONS

1 cup boiling water

1. Combine all ingredients for the orange sorbet. Freeze.

1 cup sugar

2. Soften the ice cream and mix it with vodka. Return this to the freezer.

1 box orange jello 2 cups orange juice

3. Remove sorbet from the freezer and allow to soften for a bit. Reblend.

4. Place some sorbet in the bottom of flat silicone ice pop molds, pressing the sorbet all the way up the sides.

Until recently, most of us hardly paid any attention to our sense of smell. Our olfactory nerves were just there, doing their job, enhancing life in so many ways. Sometimes our ability to smell was temporarily compromised, but we could usually rely on our noses to scout out our surroundings for us and let us know what’s cooking and what needs to be eliminated from the environment. And then COVID-19 hit, and so many with astute senses were suddenly befuddled when foods started to taste like cardboard and smell like — sniff, sniff — nothing. First in a trickle, and then in waves, the world at large was introduced to anosmia, smell blindness, and its crony ageusia (loss of taste), and we suddenly realized how much richness and function these senses add to the experience of life. “It’s temporary,” we were told. Two weeks, three weeks, tops four weeks, and then we’ll be reclaiming our senses. And most did. But months passed, and for some, smell disturbances still stubbornly cling.

Loss of smell and/or taste is one of the cardinal signs of the coronavirus, often the only symptom in otherwise asymptomatic individuals. As of January it was reported that some 86% of people with mild COVID-19 cases had smell disturbances, and many also had taste disturbances. In most cases the sense of smell had returned by 21 days, but about 5% have not yet recovered olfactory function.

“What I miss most? Coffee!” The chief complaint among adults still suffering the lingering gustative effects of the coronavirus is that they can’t enjoy the bitter brew like they used to. Alterations in the taste of this beloved energy-giving beverage leave many frustrated, and in an attempt to make it more palatable, some have cut the sweetener; others mask the bitter taste with a cube of milk chocolate in the mouth; and still others have resorted to drinking caffeinated tea or have given up on caffeine altogether. Gitty: At first I thought my percolator was the issue — chemicals seemed to be leaching into the water. When I replaced my urn and the problem persisted, I bought a new jar of coffee thinking that perhaps there’d been an issue with production. Only later did it dawn on me that it was my taste buds. It’s been months since I’ve drank a coffee cup for pleasure — I now do so for functional purposes only! I do find, though, that iced coffees and cap-


Alphabet Soup puccinos taste quite good (and familiar), so I often treat myself to those. Another greatly altered culinary experience for those afflicted with these issues is fish. Some with smell alterations cannot stand the smell of cooking fish and resort to only purchased seafood. Others cannot eat them at all. Similar complaints were heard from people finding raw chicken hard to prepare. Gavriel: I had my wife try a new salmon recipe because her fish suddenly began tasting and smelling so very fishy. I then purchased the salmon slices at a different fish store, until I realized the issue was in the way my brain now perceives the smell and taste of fish. What I found to be helpful is to eat only baked fish, which to me tastes much better. (And I’m the guy who would turn my nose at baked fish, always preferring traditional cooked salmon.) Some avoid garlic, others onions. Every person with compromised smell and taste will tell you their own version of what they can’t smell, what they can’t taste, and what they avoid at all costs.

There are various ways smell disturbances manifest. While there are those with anosmia — their sense of smell is completely “blind,” so to speak — others have hyposmia, which is a partial loss of smell. Hardest still is dysosmia, where there is a perception of smell but it’s completely distorted, mostly in very unpleasant ways; this manifests as either parosmia, where pleasant smells are perceived as much more intense or unpleasant, or phantosmia, where phantom whiffs of unpleasant odors, like cigarette smoke or burnt wood, are randomly perceived. In the gustative department is dysgeusia (disruption of taste) or ageusia (loss of taste). Additionally seen are changes in chemesthesis, which is different from taste in that it’s detecting chemical irritants in foods like hot chili and mint.

SMELL THERAPY While various therapies exist to help those affected regain their sense of smell, the most common smell therapy is based on the research of Professor Thomas Hummel. Hummel conducted a twelve-week study in 2009 on people with anosmia to determine whether an intensive smelling regimen can have a positive effect on the condition. The subjects of the study — people who’d lost their sense of smell due to head injuries, severe upper respiratory infections, as well as other unaccountable reasons — were divided into two groups. The first group smelled four different essential oils (rose, eucalyptus, lemon and clove) each morning and evening, while the other group did not participate in this therapy. Through “smell tests” conducted at the onset and culmination of this study, it was determined that a large percentage of the group undergoing the smell training had an improved sense of smell. AbScent, a charity in the UK that helps people suffering from anosmia, was the first to sell specialized smell training kits, which include four amber jars, each one with a a fragrant disc saturated with one of the four fragrances: rose, eucalyptus, lemon and clove. If you can’t find the oils to make the specific kit below, keep in mind the advice of AbScent founder Chrissi Kelly, who says that any strong smell kits, like those including shoe polish, coffee or other spices, can be used for the same results. “You just need to get people to really focus and concentrate on what they’re smelling for it to work,” Kelly told Business Insider. Medisense, another company selling smell training kits, has three types of kits — one including the oils in Professor Hummel’s study; another one with mint, jasmin, thyme and mandarin; and a third comprising green tea, rosemary, bergamot and gardenia.

Peshy: When I heard about this method from a doctor (through a family member) who shared that it’s medically proven to stimulate the olfactory system, I was game! I purchased the four bottles of essential oils and smelled them three times a day for fifteen seconds each. For the first two days, I didn’t smell a thing, but dutifully stuck to the regimen. (I knew that the oils smelled pleasant, though, because my little ones all came flocking to partake in the smelling ceremony every time they saw me reaching for the bottles.) After two days, I realized my sense of smell was starting to kick in when I detected a faint smell of eucalyptus! As the strongest of the four oils, that’s what I smelled first. Over the days that followed, I began to gradually regain my sense of smell, one smell at a time. I continued the regimen for two weeks straight. Baruch Hashem, by now my sense of taste is fully back and my smell is 90% back. The most vexing smell disturbance is that freshly laundered clothes do not smell as good as they used to.

Journey to Smelling Rifki: I used to have a very astute sense of smell; I’d pass by the closed garbage can and immediately know which flavor yogurt my children had dropped in there. The smells were so powerful to me that I’d seal banana peels in a bag before placing them in the can, and I’d take out the garbage several times a day. My home was always cleaned and deodorized to perfection. It’s been almost ten months now where I can’t smell a thing! I always feel uneasy that my house doesn’t smell fresh enough, and I don’t even know when I need to change my baby, which is very frustrating. (There’s one thing I smelled throughout, though, and that’s garlic.) Not being able to smell affects me in many ways, but what I miss most is the smell of fresh laundry and the scent of my kids’ shampooed hair after their baths. After hearing about Fraidy’s experience with the essential oils, I decided to give it a try. It seemed simple enough. I called the health food store, and on Thursday night, I received four bubble-wrapped bottles delivered right to my door. They were out of rose oil, so they sent lavender oil instead. Day 1:

As I head downstairs, I am aware of a slight whiff of the cholent I put up last night. Hurray! I began to do some hishtadlus, and already something is awakening in my olfactory system. Once I’m downstairs, I unwrap the four bottles. I start with the clove oil, inhaling deeply for fifteen seconds. Some kind of strong scent registers, but it smells nothing like clove. I then smell the eucalyptus, also perceiving some-

thing herbal that opens my airways, but it’s not the real scent. The same thing happens when I smell the lemon and lavender oils. My brain picks up on something, but none of them smell like I remember them to smell. It’s Erev Shabbos, and I’m not sure if I’m allowed to do this aromatherapy on Shabbos, so I perform the smelling ritual four times over the course of Erev Shabbos (I’ve always been an overachiever) and then put away the bottles for over Shabbos. We ask Rabbi Yechezkel Elias whether this smell therapy is allowed on Shabbos. He responds that the answer largely hinges on whether this is viewed specifically as an act of healing, similar to taking medicine, or if it’s akin to any benign act of enjoying a fragrance. He researches the matter, and it seems the essential oils are of definite medicinal connotation yet of debatable medicinal value, leaving a bit of a question as to their halachic classification. Additionally, aromas are something everyone can appreciate, and not necessarily for therapeutic reasons, yet most people don’t go around smelling random scents... It appears this issue seems to lack a clear parallel among the poskim. (As Rabbi Elias mentions, COVID-19 has brought us a whole slew of heretofore untouched halachic questions, from porch-to-porch minyanim to eating

maror when one has no sense of taste, to many more previously unheard-of situations.) Rabbi Elias maintains that the therapy would be permissible on Shabbos — though specifically when using pleasant aromas that most people would appreciate. As well, he limits this allowance to smelling the oils absorbed into “paper discs,” as opposed to in the original marked bottle. Nonetheless, in light of the novelty of the question, he advises each person to consult with their rav. Day 2:

I head out to an aufruf on Shabbos morning, and when I get home I detect a smell in my house. The smell isn’t very pleasant — it’s weird — but it makes me happy to know that my sense of smell is reawakening. As soon as Shabbos is over and I’ve said Baruch Hamavdil, I head over to the essential oils and smell them. When my husband makes Havdalah, I actually smell the besamim for the first time since I’d had the coronavirus! Reciting a bracha on besamim when one can’t smell is not so simple, and we asked Rabbi Yechezkel Elias to explain the halachic ramifications: One who completely lacks the ability to smell may not make a bracha on any fragrance. As such, when reciting

Havdalah, one should say the initial portion as well as the bracha of Hagefen on the wine, omit the bracha on besamim, and proceed to the bracha on the fire as well as the remainder of Havdalah. Even if one is reciting Havdalah for others, as well, he is not permitted to make the bracha on their behalf. In such a situation, after reciting the bracha of Hagefen, he should pause and allow the others to make their own bracha on the besamim. Alternatively, one of the participants who has the ability to smell can make this bracha on behalf of all those participating. After they smell the fragrance, the one reciting Havdalah can then continue with the remainder. If a person lacking the ability to smell did erroneously make the bracha of besamim, it is a bracha l’vatalah, an invalid bracha that carries no credence. Furthermore, having spoken words that have no value, he has created a hefsek, a break between the earlier and later portions of Havdalah. Being that the brachos of Havdalah must necessarily be recited as one composite unit, such a hefsek will in turn render the earlier bracha of Hagefen invalid as well. In such a scenario, one must go back and repeat the Hagefen bracha, allow for others to make a bracha on the besamim, and then continue with

the bracha of Me’orei Ha’eish and the remainder of Havdalah. (There is one exception whereby one who cannot smell would nonetheless be allowed to make the bracha for others, that being when one is doing so for children to educate them in how to properly make this bracha. However, this is limited to children who are unable to correctly verbalize the bracha themselves. Furthermore, as this bracha is for instructional purposes only, it does not carry the weight of a full-fledged bracha and will not be sufficient for any older children or adults who are present. As well, lacking the status of a full-fledged bracha, it should not be recited during Havdalah, only after the conclusion.) Rabbi Elias also pointed out that if one is unsure whether or not they can smell, they can take a small “test sniff” (without making a bracha) to determine their ability. If they can, in fact, smell, they would then be allowed to make the bracha and smell the besamim during Havdalah. Day 3:

I continue smelling the oils every so often. I prepare some noodle soup, and what do you think? I actually can smell it somewhat! It used to be so overpowering in the past, but for months now even noodle soup had smelled like nothing. Encouraged, I try to smell a bottle of perfume, but I don’t smell anything. Day 4 :

As I use Goof Off to get some stubborn stain off, I find that I can actually smell it! I become hopeful that I will finally enjoy the heady scents of cleaning detergents, shampoos and laundry detergents. I smell a bottle of Tresemme shampoo, and then Pantene, and then baby shampoo, but I still smell nothing. I move on to a bottle of Tide, I sniff, but no, I can’t smell these yet. I continue my smell therapy, perhaps doing it more often than I should, but I want to do something to regain more of this wonderful sense I’ve been missing.

Day 6:

My sense of smell is definitely improving bit by bit, though I still have a long way to go. I’ve regained many smells, but I still can’t smell shampoos or detergents. I plan to stick to the regimen. For the first time I peruse the bottles, and I see that Eucalyptus boosts focus, Lavender induces calm, and the Lemon boasts “joyful.” Ah, so those were the stirrings of positivity I’ve been feeling over the past few days! I’d like to think that these oils are making me not only a better smeller, but enhancing my overall mood as well. Most of all, I’ve gained the gift of hope. I was starting to get discouraged and worry that my anosmia will be permanent, and now that I see that my brain is relearning to smell, I hope to be able to make use of this wonderful gift in its full form very soon.

I smell the oils, and though the scent is faint, I realize they are starting to smell a bit more like their true scent. I get a eucalyptus dot on my nose in my enthusiasm to smell it well enough, and a faint eucalyptus smell follows me around all day, reminding me that my sense of smell is reawakening. My coffee — it smells and tastes a bit off, like it has all along. And as I’m going about my business at home, the aroma of the chicken baking in the oven travels to my nose, to my brain, and it smells so good! However, the cauliflower, which I always found to have a distinctly strong smell that I really disliked, does not register at all in my brain. My kids are complaining about the smell, but all I smell is the baked chicken.

USING COFFEE FOR BESAMIM As each Shabbos wanes and we prepare to go forth to the new week, we bid Shabbos farewell by dwelling on the great divide between Shabbos and the weekdays, as well as the divide between all things holy and the mundane, with the recital of Havdalah. Though not of particular conceptual relevance to Havdalah, we are instructed to incorporate as well the partaking of a pleasant fragrance, along with the recital of the requisite bracha, that of Borei Minei Besamim. Why is this so? We are taught that with the dawning of Shabbos, every Yid is imbued with a supplementary measure of spirituality, an “extra dose of neshamah.” As Shabbos departs, though, so does the neshamah yeseirah. How do we deal with this loss? The Torah alludes1 repeatedly to a direct connection between the neshamah and a person’s nasal passageway, as well as one’s sense of smell — which is a topic deserving attention in its own right. Of relevance to this discussion is that we are taught that by virtue of enjoying a pleasant smell, we can bring a measure of solace to our neshamah on this loss. While we are instructed to partake of a pleasant smell, we are given wide latitude in choosing which fragrance to use to satisfy this requirement. Broadly, any natural fruit,

plant, vegetable or herb that emits a strong, pleasant aroma may be used.2 As for synthetically created aromas, it is highly questionable if they warrant a bracha,3 and as such, should not be used for besamim. Which brings us to the question: Can one simply pick up a jar of coffee and make a bracha on its aroma? Not so simple. The Mishnah Berurah clearly rules4 that one may make a bracha on the fragrance of coffee. He does, however, add the important caveat that the coffee must be hot. Though the reasoning is not elaborated upon, it seems the Mishnah Berurah, as well as the sources he cites, maintained that the coffee bean alone is not sufficiently fragrant to warrant a bracha. Only through heat will aromas of sufficient strength be released. It is not clear if the heat the Mishnah Berurah refers to is the heat present when roasting the beans, or when adding hot water to create a cup of coffee. Regardless, it seems the ruling would apply equally in both cases. At this point, it would seem one could generally go ahead and make a cup of coffee and recite a bracha over the aromas (preferably prior to the addition of milk5). However, while this generality would hold true in the days of the Mishnah Berurah and previous eras, in today’s ever-advancing world of coffee production, things are a bit more complicated. To simplify matters, it is necessary to provide a bit of background on the parameters of Birchas Harei’ach. Though there are many methods of creating most wonderful smells, not all forms are equal, and many are considered insignificant in halacha, whereby no bracha may be recited. The key here is a concept called “rei’ach sheyesh bo ikar,” loosely translated as an aroma emanating from a clear and tangible source. An aroma lacking this criterion may smell quite pungent — but lacking source, it would be deemed insignificant.

SOME EXAMPLES: REI’ACH SHEYESH BO IKAR (BRACHA REQUIRED) —

For example, cloves, cinnamon sticks, hadassim (when sufficiently fresh and fragrant), spices, and so on. In these instances, the source of the aroma is readily apparent. This category includes oils and perfumes, where the smell was created by natural (not synthetic) means and the spices, herbs and so on are still present in the mixture. REI’ACH SHE’EIN BO IKAR (NO BRACHA) — For example, aromas absorbed

into clothing. Although one working in a spice factory might have quite a distinctive scent absorbed into his clothing, simply smelling his clothing would not warrant a bracha, as there is no direct connection to the source of the aroma. An additional scenario in this category would be that of smelling


a completely empty spice container. The container may well be suffused with the distinctive scent of the original contents. Nonetheless, as the scent in the container is at present not connected to the spices, it is an odor alone, a rei’ach she’ein bo ikar, and no bracha may be recited.6 REI’ACH SHEHAYAH BO IKAR — This category refers

to an aromatic mixture that did in fact contain the requisite “ikar” at one point, but where the source substance was later strained out or otherwise removed from the mixture. An example would be a perfume or fragrance that was created with various spices that were later filtered out, leaving the aromatic liquid alone. This category falls between the two aforementioned categories and is subject to debate, creating a safek brachos conundrum. (This is a situation where one might be obligated to recite the bracha, yet may not do so out of fear that if in fact no bracha was warranted, the bracha recited would be in vain, a transgression in its own right.) The Shulchan Aruch states7 that as such it would be appropriate to avoid smelling such substances. The Mishnah Berurah, however, rules8 in line with many Acharonim that one who does not wish to be stringent in this regard is certainly allowed to partake of these fragrances l’chatchilah and to recite a bracha.

SO HOW DOES THIS ALL PERTAIN TO COFFEE? “TURKISH” COFFEE — This style and similar variants

refer to a powder of ground beans mixed with hot water. The ground beans are not soluble, leaving a thick, murky mixture near the bottom of the cup and much perceptible sediment throughout. Here, the source of the aroma, the ground beans, is readily apparent, and this would certainly qualify for a bracha, included in the first category above. It is this form of coffee that was prevalent in the times of the Mishnah Berurah. BREWED COFFEE — Be

other similar product, most brewed coffee today involves pouring hot water over beans and then having the mixture filtered, leaving particle-free coffee. Although the beans were present in the mixture, once they are removed, the status of the coffee shifts to shehaya bo ikar, the third category. One can certainly make a bracha on smelling this form of coffee, although it would not be as ideal as using something within the first category. COLD BREW — As with standard brewed coffee,

cold-brew coffee is created using water and coffee beans. However, the process of creating the coffee, as is evident in the name, involves no heat whatsoever. In this case, the simple technique is merely to place the beans into a pitcher of cold water and leave this refrigerated for anywhere between 18 and 20 hours. The coffee flavor is extracted by marination, kavush. As stated previously, the Mishnah Berurah rules that only the aroma of coffee created via heat has sufficient strength to warrant a bracha. Hence, no bracha may be recited, and this may not be used for besamim. INSTANT COFFEE — A standard container of instant

coffee contains no beans or bean particles whatsoever. The process of producing instant coffee runs basically as follows: Hot water is mixed with beans to create coffee quite similar to every cup of brewed coffee. The difference, of course, is that this is done on a scale several thousand times the size of the coffee one brews at home. As with brewed coffee, the beans are removed from the mixture, leaving only an enormous volume of brewed coffee. This liquid is subsequently “dried out” into little granules by removing the water content from the coffee. This is generally done by either spray drying or freeze drying the mixture. The remaining particles are not beans at all – they are simply what remains after you dehydrate a cup of coffee. At this point, there would be room to debate the status of aromas emanating from these particles. Is this a case of a smell lacking a tangible source, or could this be equated to this very same coffee prior to dehydration where, as stated above, it would fall into the third category of rei’ach shehayah bo ikar? demic and not of practical relevance. In actuality, the instant granules offer not much fragrance at all. That delicious aroma wafting up when you peel off the covering of a new container? That’s the fragrance of a spray that is sprayed onto the particles to boost their appeal, not the smell of the coffee particles themselves. In fairness to the coffee companies, this spray is generally not some random synthetic concoction, but rather is taken from the evaporated liquids created during the spray-drying process, allowing the companies to argue they are doing nothing more than “spraying the coffee with the coffee itself.” Regardless, as far as halacha is concerned, the infusion of these fumes into coffee particles carries no more significance than the absorption of spice fragrances into a worker’s clothing. This is a clear case of ein bo ikar, where there is no tangible connection to the source of the aroma, and no bracha may be recited.

constant evolution of coffee production has resulted in a number of new innovations, including many designed to improve the flavor of instant coffee. The specific intent, in this regard, is an attempt to bring the flavor as close as possible to that of a freshly brewed coffee while maintaining the practicality of instant coffee. To this end, a number of companies — including Starbucks, Nescafe and others — have introduced high-end lines of instant coffee created by a mixture of both traditional instant coffee as well as microground beans. Essentially, these companies have created a process of grinding roasted beans to an extremely fine degree, thus making them soluble. The result is a cup of coffee containing the actual bean, yet where all particles dissolve, leaving little or no sediment. As this coffee contains the actual beans, it would qualify as rei’ach sheyesh bo ikar, and thus perfectly ideal for our purposes. AN IMPORTANT NOTE: The flip side of having real beans present is the creation of a serious concern about the permissibility of using these coffees on Shabbos. Some nightmares do happen. I never feared getting sprayed by a skunk, sort of the same way I wasn’t concerned about having my bike stolen or getting stuck on a roller coaster — you know, the stuff that happens to “other kids.” But one black-andwhite creature had different plans for me, and on that fateful night, there he was, waiting silently for his unassuming victim: me. It was a muggy night in the summer of 2006 when I came home from yeshivah to an empty house. The rest of the family was away at a simcha, and after grabbing something to eat, I figured I’d be a good boy and take out the garbage. That turned out to be a big mistake. I went out, opened the lid to the large garbage bin and mindlessly dropped in two bags — and was immediately overcome by a powerful, pungent chemical substance that left me choking and gasping for air. I let out the loudest shriek I could and instinctively started running away, toward the street. As I realized that I had just been the victim of a surprise skunk attack, and that all of myself, in addition to my clothing, was probably toxic enough to be in violation of a half-dozen Geneva Convention rules, my predicament slowly began to dawn on me. I had to get out of these clothes and wash down — but how could I get back into the house when my new mortal enemy was still lurking in supposed friendly territory? The only safe way back was by crawling up the side of our front porch and hopping over the gate — no simple feat, even when you haven’t just gotten maced and are not utterly disgusted by your own existence.

hindsight, I think I just wanted to get even with him (or her, I guess). Then I thought the better of it and stayed inside. As I stood there weighing my options, a burst of wisdom washed over me, and I figured it out: Let me call Chaverim! Whether I needed to be hosed down at a fire hydrant or soak in tomatoes for days, I figured they could probably make it happen for me. The helpful operator seemed to be fighting back a chuckle (or maybe when you’re covered in skunk spray, you just think everyone is laughing at you) and said he would get back to me. A short while later Chaverim returned my call and told me to take a sponge bath with, if I recall correctly, lemon juice, peroxide, baking soda and dishwashing soap. It worked! At least I think I did. But for a young chassidish bachur, their other bit of advice was tougher to swallow: “Take all the clothes you were wearing and get rid of them.” There went my nice G&G suit, belt, shirt and other garments. When they were wrapped tightly in a garbage bag, we parted ways, forever. The next day at yeshivah, everyone gathered to hear my story. One tough kid called me “smelly,” but all I smelled was his obvious jealousy that I was the center of attention. My maggid shiur soon found a way to try and take a valuable lesson out of what happened, but the positive effects were gone quicker than I got rid of that awful smell. To this day, whenever I tell my friends this story, they say, “Yeah, we still smell it.” I think this probably says more about my choice in friends than it does about my hygiene, but I do think some scars remain forever. I’ve read that some people actually have skunks as pets, with their scent-emitting glands removed. Personally, I would quicker adopt a hippopotamus or that old homeless guy who never stops talking, but I guess only tomato juice can ever fully wash off this trauma. It’s been about 15 years since that dark night, and somehow, these kind of weird stories keep happening to me (I’ll leave the others for another time). But it is ironic that my most colorful story comes from a little black-and-white animal who continues to haunt my dreams. I sometimes wonder what happened to the skunk and if he knows that he played such a large role in someone’s life. Would it mean a lot to him if he knew? Also, are there others who’ve also felt his wrath, and do I need to invite him to my simchos? I don’t know the answers to these questions but I gotta go — I have a pot of tomato soup cooking. Hey, that reminds me of the time I… Oh, there it is again!

Whether I NEEDED to be hosed down at a fire hydrant or soak in tomatoes for days, I figured they could probably make it happen for me. If that wasn’t enough, teenage me was still under the misguided belief that a tomato-juice bath was my only hope (spoiler alert: it’s a myth), and I was trying to figure out how to get to a grocery store, buy three cases of tomato juice and crawl back up into the house with the heavy cartons. I could not continue to just stand there, so I mustered up the energy to get to the front door. Once inside the house, I tried calling my parents but couldn’t get through. Part Five

Last week I promised to tell you about life after gluten. And yes, there is life after gluten. For real. I can practically feel the skepticism some of you are exhibiting right now, but bear with me. At first, going gluten-free was a huge adjustment. For one thing, at that stage in my life, my cooking was completely traditional (read: Hungarian). Chicken cutlets got breaded; vegetables could be served only if they were modestly wrapped in some sort of dough, at least most of the time; and bread was a staple at meals. Shabbos wasn’t complete without homemade challah; gefilte fish; chicken soup loaded with lokshen, croutons and kneidlach; farfel; cholent with barley and kishke; onion and lokshen kugels; and of course, cake for dessert and Shabbos afternoon snacking. Obviously, there was also the requisite weekly Shabbos treats, often consisting of goodies like baked goods, wheat snacks and licorice… Are you starting to sense a pattern here? Yup, you got it! Gluten wasn’t just present in my home; it ruled! At first, I kept my mindset about what food was supposed to look like and attempted to replace all gluten options with similar gluten-free equivalents. For those of

you interested in psychology, this was something akin to Piaget’s concept of assimilation, where new information is made to fit preexisting ideas, rather than accommodation, where new information leads to the growth of a new, enhanced understanding. This is a bit embarrassing to confess, but these attempts were met with varying degrees of success, most of them admittedly falling on the abysmal end of the scale. I am a fantastic cook and pride myself on preparing foods that look and taste perfect, but I’m not a magician. No matter how hard I tried, I couldn’t make gluten-free challah taste like the mouthwatering loaves I used to produce. This led to the next stage in my life, where I began moving toward accommodation. I became adept at the replacements that worked, like potato or tapioca starch in place of flour to thicken sauces and soups, and at cooking rice pastas perfectly. I stopped trying to replace everything with a gluten-free alternative; instead, I started becoming more creative and diverse in my food preparations. I’m basically a nonconformist and hate following recipes unless I absolutely must, so I began experimenting with my own glutenfree recipes. Soon I discovered that food has so much more potential than I had previously known. Hashem, in His Infinite kindness, created a world filled with foods of every color, shape, texture and flavor. It’s like an artist’s palette of untouched paints and other mediums, just waiting to be transformed into masterpieces of lasting beauty. I must tell you, my fingers practically itched to play with it all, to make magnificent offerings out of so many choices of raw material, and that desire to create new delicacies in my kitchen has never faded. To this day, or at least up until the pandemic began, I regularly cooked gourmet meals for my family, extended family, friends, and our frequent Shabbos and yom tov guests. The food was, and still is, all gluten-free and absolutely delicious, if I may say so myself. Those of you who have been the lucky beneficiaries of my largesse are nodding as you read this, and quite possibly salivating. No false humility here, I am that good of a cook. Lest you think going gluten-free has been an easy stroll through the park on a path scattered with rose petals, let me be the first to assure you that this wasn’t the case at all. Not even a little bit. There were many inevitable pitfalls. To all the pessimists and realists reading this, you can now breathe easier. What follows here will definitely be more your style.

For starters, forget about buying takeout. Ever. Okay, there are some notable exceptions, but I’m talking as a rule here. Most people who work the takeout counters don’t really know what gluten is, and which foods contain it. True story: I ask the guy behind the counter if their gefilte fish has flour and explain that I’m allergic to gluten. He assures me that it doesn’t. When I ask him what they use as a starch, to hold it together, he explains that they use matzah meal. So no flour. Right. Here’s another true story. I’ve learned that most upscale restaurants are very accommodating when I make specific requests. Not that I can afford them that often, but it’s still good to know, right? Now, you may not know this, but soy sauce, as a general rule, contains wheat. So there I was, in a new restaurant I hadn’t tried before, ordering a Chinese stir-fry. I made sure to specify that they needed to use clean pans and utensils and that the food couldn’t contain flour or soy sauce. They eagerly reassured me that it was no problem, and I ordered the food to go. My children enjoyed their dinner immensely, but I had only eaten a few bites when I started feeling nausea and severe abdominal cramps. As soon as I was able to, I called the restaurant and asked to speak with the chef, and he assured me that he had only used a little bit of soy sauce. The manager apologized profusely and proceeded to send us another dinner, on the house, this one without soy sauce. But it was too late. I was no longer in any condition to eat anything, and in any case, wouldn’t have felt safe eating anything else from that restaurant. Silver lining? My kids enjoyed their second bonus dinner immensely! Then there was the time my father was in the hospital, and having little time to make Shabbos, I bought a container of clear chicken soup at a take-out. They assured me that they didn’t use any soup mixes or flavor enhancers. Yes, many of those contain gluten too. Again, I was doubled over with stomach pain. Further investigation revealed that they were catering a simcha that Friday night, and had cooked the lokshen for the soup in a mesh bag inserted into the chicken soup. Who woulda thunk?

DID YOU KNOW? While that loud honk may jerk you out of your sleep, a strong or even unpleasant smell will never wake you. That’s because in contrast to the other senses, the sense of smell goes to sleep when you do.

THE SEVEN SCENTS Just like there are five primary tastes, scientists have identified seven primary smells: Floral: soft and light (think rose and orange blossoms) Musky: heavy and sweet (think the smell of an old book) Pungent: strong and sharp (think a smell that makes your eyes tear) Camphoraceous: strong and medicinal (think eucalyptus and sage)

Not only does every person have a unique scent; the uniqueness carries over to our sense of smell as well! We each pick up certain notes in smells while missing others, which means the end olfactory experience may be individual to each person. It’s not only the landscaper and bike man that are busy in the summer; your olfactory sense, too, is on a roll when the moisture in the air during spring and summer helps it to identify many more scents and notes. Is that why fresh grass smells so lovely?

Women have a stronger sense of smell than men do. But seeing as it’s often the woman who is doing the cooking and laundering the clothes and noting when the trash belongs out the door, that’s a very good thing!

Interestingly, our sense of smell has a very long memory. We can remember scents way longer than we could sights, sounds, tastes and feelings.

While some may insist that “food makes the mood,” there is evidence to suggest that it’s a pleasant smell that leaves us feeling uplifted and happy. Bring on the scented candles!

POTPOURRI The word potpourri is a combination of the French words pot (which means pot) and pourri (which means rotten). Potpourri: the pot of rotten botanicals. Enticing, eh? Even as far back as the Middle Ages, little cloth bags filled with aromatic dried flowers and herbs were cleverly placed in homes to create a pleasant-smelling environment. Tucked between linens and in closets, it was an old-fashioned attempt at getting the house to smell nice and fresh. Herbs, especially, were hung in bunches around the house, both for their aromatic benefits and for their medicinal uses, and they were also strewn across the straw floor to freshen it up. Stepping on the tiny herb leaves would release their essential oils, which filled the house with their fragrance. In seventeenth century France, dried flowers and herbs were repeatedly layered with coarse salt throughout the spring and summer until the entire mixture was dried and preserved. In the fall, additional oils and florals were added to the somewhat unpleasant mixture, and this sweet-smelling potpourri would be placed in pretty pots or vases around the house.

I know you appreciate your sense of smell, but there was a perfumer out there who valued his olfactory skills so much that he had the distinction of owning the most expensive nose in the world! Remarkably, even after he lost his sense of smell toward the end of his life, this master of perfumes still managed to produce some highly acclaimed scents.

As time went on, the dried florals, now in prettier hues and with more consistently pleasant scents, were available for purchase in shops all over. Combinations would soon fill vases, sachet and bowls, adding fragrance and decor to homes all over the world.
