Anyone who is not in her circle will not be a recipient of the chasidah’s generosity. Doing kindness only with one’s friends, says Reb Meir of Premishlan, is an indication of tumah. On the other hand, a wholehearted chesed, performed in all sincerity for whomever the beneficiary may be, is sourced purely in taharah. It isn’t enough to put food in the middle of the table, and it isn’t enough to serve only the guest. Because chesed is only considered so when it is done b’shleimus, the way it is meant to be done.

KITCHEN COUNTER PERSPECTIVE Every time I bake challah, the atmosphere around me takes on a life of its own. I enter a magical zone and I’m present in the moment; there’s no space to think about upcoming work or projects. I focus on pouring the flour into the bowl, feeling the dough’s texture, and keeping in mind the many segulos associated with challah baking. Baking challah feels especially poignant when the annual tradition of shlissel challah comes around, heralding the arrival of spring. There is something about the return to the beloved mitzvah of hafrashas challah coinciding with the new season that breathes life into this time-honored tradition. With the extra mindfulness and kavanah around baking shlissel challah comes the extra awareness of what exactly is going into the dough, as well as the quality and authenticity of the ingredients that I am using to feed my family. Indeed, the tactile experience of burying your hands in a bowl of dough feels good in the moment and has lasting benefits (beyond eating the finished product!). Steeped in history and tradition, challah-baking will help you find your way back to your essence. Some even go so far as to say that your state of mind affects the taste of your challah. Slow down for a half-hour and breathe while you crack eggs, measure flour and knead the dough.
WHAT INGREDIENTS? Bread has been baked for millennia using the same basic components: flour, yeast, salt, sugar and water. However, the ingredients available to the common consumer — especially bread flour — have undergone significant changes throughout the years. Tongue twisters like potassium bromate, azodicarbonamide (a compound used to bleach bread) and butylated hydroxyanisole (a preservative) have been introduced to assist with preserving, whitening and improving the rise and hold of the bread. They have since been removed from the approved list of safe chemicals in countries such as the UK, Canada, China and Brazil. The U.S. Food and Drug Administration (FDA), though, still labels them as GRAS (generally recognized as safe), so they often find their way into the challah you serve your family. Leora Siegel, a parenting coach and mother of twelve, says, “There’s so much information about
what’s safe and what’s unsafe. The FDA is probably not a great source; there are things that are unsafe that don’t get banned because there’s too much money in them or too much influence. Wheat, for a lot of people, has its own allergy implications, and I avoid bleached flour.” The best challah starts with flour of the highest caliber. Presifted, unbleached flour that is chemical-free ensures that your challah and baked goods will be free of chemicals and insects. Malted barley is added to hard wheat flours to assist yeast fermentation. During the doughforming stage, malted barley flour provides enzyme activity that converts the starches in the flour into simple sugars. These sugars provide a food source for the yeast to maintain proper fermentation and aid in crust browning. A close friend of mine had an intolerance to malted barley. Mysterious-looking bubbles would appear on her knees and she’d feel an inner tension. On the recommendation of her nutritionist, she switched to flour that was free of malted barley, and the problem was solved. Bleaching describes the process of whitening flour — the carotenoid (yellow) pigments in the flour are oxidized to produce a whiter flour. Historically, millers would age flour for several weeks to achieve white flour naturally. Today, the bleaching process is accomplished using chemical bleaching agents, which diminish the nutritious value and affects the taste. Flours treated with these bleaching agents must be labeled as “bleached flour.” Potassium bromate is a common maturing agent that improves the ability of the dough to capture and hold the bubbles of gas produced by the yeast as it metabolizes the sugar. This helps it turn into dough, increases crust height, and provides a chewier texture. Potassium bromate is a known carcinogen and can cause thyroid problems, among other health concerns. Several years ago, Chinese authorities pulled a batch of imported snack chips from store shelves because they believed the chips contained potassium bromate, a food additive banned in China. The chips’ country of origin? The United States. Potassium bromate is also illegal in the European Union, Canada, Brazil and elsewhere because it is known to
cause cancer in rats and mice. In the United States, however, it has remained legal since it was first patented for use in baking bread in 1914.

Before starting to bake, give tzedakah and say a chapter of Tehillim as is done before many mitzvos. It will put you into a more mindful state. 2. While adding the yeast, representing expansion and growth, daven to have excitement and be “bubbly” while serving Hashem. 3. While adding the sugar, daven for sweetness in your life and to be a person of chesed. 4. While adding water, representing Torah, daven for ahavas haTorah and that your loved ones be able to learn and understand the Torah. 5. Now let the mixture bubble. This is the time to put on happy music and dance! 6. While adding the oil, pour it slowly, “anointing” each person you love by name with a blessing for whatever they need. 7. While adding the salt, which represents din/boundaries, daven to have healthy boundaries and for the removal of “din.” 8. As you knead the dough, daven that the different people in your family and the Jewish People come together in unity, appreciating and complementing one another despite — and because of — our differences. “An important part of mindful challah baking is the kneading,” says Leah. Each of the ingredients used in challah, she explains, has a different touch quality and a different meaning. Just like the ingredients are kneaded together to create delicious challos, so too, each of us brings together different parts and middos of Hashem’s world. In our homes, different family members characterize different middos. One child is more giving (chesed), while another is more ordered and disciplined (gevurah). And the same is true for Klal Yisroel: Every person, with their unique character, plays a unique role in Hashem’s world. Molding it all together brings achdus and harmony into the world. That’s why, when kneading the dough, it’s a terrific time to daven for shalom bayis, for all of the different people in our homes to retain their individuality, yet work together synergistically to create something where the whole is bigger than its parts.

CHAPTER 2 RECAP: In the dark of night, Gamliel Basnoun summons Yechiel to clandestinely meet the master, Shabbesai Tzvi, by the sea, where he will address a select group of followers.

habbesai Tzvi’s gaze swept slowly across the bowed heads. He murmured something inaudible and smiled. “Welcome, my dear children,” he said aloud, his voice soft and melodious. “May the blessings of Heaven forever be upon your heads for having the vision and wisdom to seek truth.” He sat on the oak stump and extended his arms to the young men. “Come, my beloved children,” he cried out. “Come gather around me, and I will tell you the secrets of the universe.” The men rushed forward. After a brief scramble, they were all seated on the ground, crowded together at the feet of their master. Gamliel and Yechiel sat together inconspicuously in the third row, almost totally obscured by the men in the first two rows. Yechiel stared in fascination as Shabbesai Tzvi closed his eyes and threw back his head. A look of ecstasy settled on Shabbesai Tzvi’s pale features, and he began to speak. “For the past few weeks, I have struggled with the forces of darkness from the moment I awoke until sleep overcame my exhausted eyes. As

long as this fierce battle raged, there was no joy in my life; despair lurked in the shadows. The Almighty had concealed His face from me, and the battle had drawn me into the abyss. Oh, the anguish of the concealment of the face! “But tonight, at last, my prayers were answered. The veil was withdrawn, and once again, the Almighty let the radiance of His divine Countenance shine upon me. Finally, I was able to use the power of the Kabbalah to break out of the shackles of the physical world. My soul soared up to the third heaven where the angels whispered wondrous secrets in my ears, secrets that let me see from one end of the world to the other. I was invincible; victory was mine. At least for tonight, the forces of darkness were forced to withdraw.” He paused. No one said a word. “The time has not yet come for me to reveal these secrets to you, but I can tell you what they helped me see. At first, I looked out upon—” Shabbesai Tzvi’s body suddenly tensed, and he stopped speaking. The euphoria slowly drained from his face, replaced by frustration and puzzlement. His hands began to
shake. A cry escaped his lips, and he jumped to his feet. “I cannot go on!” he cried. “I am being held back. I sense that there is someone among us who must not hear what I say. But why? Why?” Shabbesai Tzvi buried his face in his hands, his body trembling uncontrollably. The young men sat frozen in bafflement, hardly daring to breathe. Slowly, the trembling subsided, and Shabbesai Tzvi lifted his face. “There’s a stranger among us,” he said in an eerily calm voice. “That’s why I was unable to continue. Throw back your hoods, and we will uncover the intruder.” “Master! Forgive me!” cried Gamliel Basnoun. He pushed his way through the first two rows and fell at the feet of Shabbesai Tzvi. “I’m to blame. Slowly, Yechiel stood up on shaky legs, his hood thrown back to reveal his terrified features. The others had moved aside and now stood watching intently.
“Come here, young man,” said Shabbesai Tzvi. Yechiel stepped forward. He flinched beneath Shabbesai Tzvi’s fiery eyes and hung his head. “What is your name, young man?” asked Shabbesai Tzvi in a softer voice. “Yechiel Tomashov,” was the barely audible reply. “How old are you?” “I am 22 years old.” “From where are you?” “From Warsaw in Poland.” “You are far from home, my son. What brings someone as young as you to Turkey?” “My father sent me here to work in Elazar Ashkenazi’s bank for two years.” “Are there no banks in Poland?” “Of course there are. My father himself is a banker. But he’s interested in establishing banking contacts in the East, and he felt I would be very valuable to him if I had some experience working in a bank in Smyrna.” “I see. That explains what you’re doing in Smyrna. Perhaps you could explain what you’re doing here among us here at this very moment? Did your father think this would also be a valuable experience?” Yechiel Tomashov’s face turned a deep red. “My father knows nothing of this,” he said. “Do you know why everyone is wearing a blue canvas caftan?” Yechiel shook his head. “I’ll tell you why. Blue is the color of the sky and a symbol of the heavens. The rough canvas is to remind us of the insignificance of material things. And they’re all identical to show that everyone here is united in the quest for truth. Do you understand?” Yechiel nodded. “The purpose is not to enable strangers to come among us undetected,” Shabbesai Tzvi concluded sharply. “What do you have to say for yourself, young man?” “I have nothing to say, except that I meant no harm. I’ve admired the master from afar, and I’ve longed to hear the words of his wisdom. I have nothing more to say in my defense.” Gamliel Basnoun stepped forward, his arms outstretched in supplication. “Master, permit me to speak in his defense,” he said. “It was I who suggested —” “Be silent!” Shabbesai Tzvi’s eyes flashed fire. “Do you think for one moment that I do not already know everything you have to tell me? I will speak with you later.” “Yes, Master. Forgive me.” Gamliel bowed his head and shrank back into the crowd.
“There’s a stranger among us,” he said in an eerily calm voice. “That’s why I was unable to continue. Throw back your hoods, and we will uncover the intruder.”

Shabbesai Tzvi turned back to Yechiel Tomashov, and the anger in his eyes subsided. “I’m pleased to see you have the courage to admit your error, my son,” said Shabbesai Tzvi. “It speaks well for you. But we cannot permit anyone to attend these meetings just to satisfy his curiosity.” Yechiel squared his shoulders and took a deep breath. “It was not curiosity that brought me here,” he said. “It was the thirst of my mind and the hunger of my soul.” Shabbesai Tzvi stared intently into Yechiel’s eyes for several long moments. Finally, a small smile appeared at the corners of his mouth. “Well spoken, young man. Well spoken. I’ve looked into your heart, and I’ve seen your sincerity. Do you still wish to join our group?” “Oh, yes! Yes!” exclaimed Yechiel, unable to contain his excitement. “Very well, then. I’ll tell you what you must do. You must lock yourself in your room for three days and three nights. Not one morsel of food or one drop of water is to pass through your lips during the daylight hours, and even in the night you’re not to eat more than a crust of bread. You must spend half the time praying and half the time studying the laws of Rosh Hashanah and Yom Kippur. On the fourth morning, you’re to go down to the sea and immerse yourself seven times. Then you’re to come directly to my home. Do not speak to anyone along the way. Absolutely no one. Even if someone greets you, you must not respond. Not even one word. Not even a nod of your head. Will you do exactly as I say?” Yechiel gulped. “Yes, Master. I will.” “Good. I shall be waiting for you. Go in peace, my son. May the angels of light accompany you on your journey.” Yechiel Tomashov turned and hastened toward Smyrna. Soon, he was among the oak trees of the coastal plain, and the clearing atop the hill was no longer visible. The blue canvas caftan he had borrowed from Gamliel Basnoun scraped at his skin, reminding him of his shame. Without slowing his step, he wriggled out of his caftan, rolled it up and tucked it under his arm. The night was still black, but fishermen were already stirring on the wharves. Yechiel stopped to watch them for a few minutes. Then, on sudden impulse, he climbed up to the ruins of the ancient Ionian temple that dominated the summit of Deirmen Hill. The temple had been built by Greek colonists over two thousand years earlier and was already in ruins when the First Beis Hamikdash was built in Yerushalayim. Yechiel sat on a fallen marble column and looked back to the hilltop from which he had just come. It was far away, but he could still see the tiny animated white form of Shabbesai

Tzvi surrounded by the pale blue forms of the others. What an ancient and mysterious city this Smyrna was, he thought. This small valley, hemmed in on three sides by the Anatolian mountains and on the fourth by the sea, had seen entire civilizations come and go many centuries before the first barbarians had settled in Warsaw. Ancient armies had clashed on this very coastal plain; ancient blood had been spilled into its rivers and swept into the churning sea. Greeks, Persians, Romans, Mongols, Jews and Turks had lived and died in this valley. How appropriate it was, thought Yechiel, that a great visionary such as Shabbesai Tzvi should emerge from this time-blackened cauldron. And how logical it would be for Moshiach to be born in a place such as Smyrna, which lay in the center of the Turkish Empire and, indeed, in the center of the world. On the distant hilltop, the white-clad figure of Shabbesai Tzvi was pacing rapidly back and forth, gesticulating wildly with his hands. Yechiel yearned to hear the mystical secrets being revealed to those other young men at this very moment, secrets he might have been hearing himself had he not been discovered. But upon reflection, Yechiel realized it had been presumptuous to expect to come like a thief in the night with no permission and learn the secrets of the universe. Shabbesai Tzvi had been right, of course. Gamliel should have known better. As Yechiel sat among the fallen marble pillars on Deirmen Hill, soft misty light began to filter into the valley through the mountains in the west. The meeting on the distant hilltop came to an end, and the blue-clad figures began to stream back toward the city. Only one blue-clad figure remained standing in the center of the clearing along with Shabbesai Tzvi. That was undoubtedly Gamliel, thought Yechiel, facing Shabbesai Tzvi’s angry reprimand for daring to bring an uninvited guest. Drowsiness began to overcome him, and he struggled to his feet. He owed Gamliel an apology and a debt of gratitude, he thought guiltily as he stumbled down the east slope of Deirmen Hill and headed to his room to sleep.

Eighteen-Year-Old Driver Eyed for Reckless Driving and Speeding in Deadly Canarsie Hatzolah Crash
Federal Government Offers Helping Hand to Cover COVID-19 Funeral Expenses
A deadly crash in Flatlands that took the life of a 95-yearold woman being transported to the hospital by Canarsie Hatzolah appears to have been caused by a motorist who was speeding and driving on the wrong side of the road. Yeshiva World News reported that the Acharon Shel Pesach collision took place at the intersection of Schenectady Avenue and Avenue N at approximately 3 p.m. Police said that the ambulance had a red light when it entered the intersection with its emergency lights flashing and sirens on and was rammed in the rear by a 2002 Nissan Maxima. The force of the crash sent the ambulance into a spin, and it hit a third car before rolling onto its side and coming to a stop. Surveillance footage shows the Maxima traveling at high speed against traffic in the seconds before the accident. The 95-year-old woman was said to be in cardiac arrest before the crash occurred and was pronounced dead at Mount Sinai-Brooklyn Hospital. Multiple Hatzolah members, the woman’s son, the eighteen-year-old driver of the Maxima and his twenty-one-year old passenger were all treated for injuries at Brookdale Hospital and released. The driver of the third car and his passenger refused medical attention at the scene. Sources said that the driver of the Maxima had a learner’s permit, not an actual license. He reportedly underwent drug testing at the hospital and there may have been a small amount of drugs found in his car.
A recently enacted policy under the Coronavirus Response and Relief Supplemental Appropriations Act of 2021 may provide as much as $9,000 in financial assistance toward funerals for those who died of COVID-19. The Federal Emergency Management Agency, known as FEMA, announced that the funding will be implemented this month, with complete details of the plan currently being finalized. Under the plan, funeral expenses incurred after January 20, 2020, for those who died within the United States or its territories and whose cause of death is officially attributed to COVID-19 may be covered. Applicants would need to provide proper documentation of all funeral expenses and must be United States citizens, non-citizen nationals or qualified aliens, although those requirements do not apply to the person who died. Those with burial or funeral insurance or who received funeral payments from other agencies or sources would not be eligible for the funding. “At FEMA, our mission is to help people before, during and after disasters,” noted FEMA acting administrator Bob Fenton in a statement. “We are dedicated to helping ease some of the financial stress and burden caused by the virus.” FEMA will be accepting applications for the funding within the next few weeks.
Trio of 13th Avenue Businesses Loses Tens of Thousands in Pesach Robbery Thieves made off with a massive haul sometime over the last two days of Pesach, hitting a trio of businesses all located in the same 13th Avenue building. Boro Park 24 reported that 15,000 sheitels, valued at upward of $100,000, and anywhere from $2,000 to $3,000 in cash were stolen from Sheila’s Wigs located on the second floor of 4417 13th Avenue. “They took everything here,” said the owner of Sheila’s Wigs. “My whole closet and all these drawers are empty. The police are coming to get fingerprints.” Also hit in the spree was the building’s main floor tenant, Borough Park Variety Shop, which was robbed of its cash register. Cash and unspecified equipment were also taken from a dentist’s office on the third floor.

At Long Last, Vaccinations Opened Up to General Public After months of waiting, New York has made COVID-19 vaccines available to every state resident over the age of sixteen. Governor Andrew Cuomo announced his Roll Up Your Sleeves ad campaign on Isru Chag, touting New York’s universal vaccine policy, which was rolled out several weeks ahead of a May 1st deadline set by President Joe Biden. The governor described the vaccine as “the weapon that will win the war, but only if we all take it,” and noted that despite the latest developments, the fight against the pandemic is far from over. “The truth is that millions of our neighbors still need to get their shot, and we are still in a footrace against the infection rate, so it is imperative that we do not let down our guard and we continue exercising safety protocols,” said

As the number of vaccinated continues to grow, vaccination cards, which document the date, location and type of vaccination received, will likely become increasingly important, reported ABC News. “What these little cards have the potential to do is to make something like international travel easier by avoiding requirements for quarantine or testing,” said Amesh Adalja, MD, FIDSA, an infectious disease specialist and senior scholar at the Johns Hopkins University Center for Health Security. Boston Children’s Hospital epidemiologist John Brownstein noted that proof of immunization may become required for travel, school or to gain entry to entertainment venues, noting that that a three-by-four-inch card may become a person’s “ticket back to normalcy.” Suggestions for ensuring that a person’s vaccination data isn’t lost include photographing or photocopying both sides of the card, which should be stored with other important paperwork. Staples, Office Depot and OfficeMax are all offering free vaccine card lamination services, reported Market Watch. “Knowing who has been vaccinated against COVID-19 is going to be crucial in the months to come,” said Dr. Arthur Caplan, director of NYU Langone’s Division of Medical Ethics, who said that people may one day need to be vaccinated in order to be allowed to return to work. Even as Cuomo continues to put out good news regarding vaccinations, he has been hit with another wave of accusations of improper behavior during the pandemic, this time for prioritizing members of his own family for COVID-19 testing last year, even as the materials were in very short supply. According to Associated Press, Attorney General Letitia James’ office released a statement last week calling on the state’s Joint Commission on Public Ethics to investigate the governor, calling reports that Cuomo gave preferential treatment to those close to him troubling. A report in the Times Union of Albany said that Cuomo’s mother, at least one of his sisters, and his brother journalist Chris Cuomo were all tested for COVID-19 by top state health officials, some several times. Their tests were transported from their homes by state police escorts to a state health laboratory in Albany, located several hours away, where they were reportedly given priority processing. In his frequent press conferences last year, Cuomo discouraged the general public from doing COVID-19 testing unless they had traveled to a problem area, saying that because so few tests were available, they were being limited to those who were likely exposed or sick. A statement from Cuomo spokesperson Rich Azzopardi said that the state went out of its way to test people, particularly in hot spots like New Rochelle, often going door to door to identify those infected in an effort to stem the spread of the virus.

sher’s disappeared?” Ariella gripped the note that she’d pulled off the magnet board. Osher’s handwriting danced in front of her eyes. “This time, he didn’t really disappear,” her mother said heavily. Her voice sounded weary. “But…?” “He left us a message.” For me too, Ariella wanted to say. “The mashgiach called to say that Osher came to tell him thank you and goodbye, and that he was transferring to a different yeshivah. Then we saw the note. He wrote that he…” She fell silent for a moment. “That he loves us, and that we shouldn’t worry about him, because he’s going to a better place.” “Last time, two summers ago, he didn’t leave a note, right?” “That’s right.” “At least he learned something since then.” Ariella’s lips curled into a ghost of a smile. “Let’s hope it’s a good sign.” She was quiet for a moment. “He told the mashgiach he was switching yeshivos?” “Yes.” “And he didn’t write anything to you about the new yeshivah?” “No. Just that it’s ‘a better place.’” “What kind of paper did he write the note on?” Ariella whispered. “What?” “The note. It was silent as the second hand on Ariella’s kitchen clock ticked a complete circle. Then her mother said, a bit tremulously, “Ariella?” “Yes, Mommy?” “I…I’m worried about Osher.” Her voice was very low, almost inaudible. “So am I,” Ariella said. “I’ll try to see what can be done.” “You’ve always gotten along well with him.” Ariella’s mother took a deep breath. “And you have something special about you, something that connects to him. I…I’m relying on you.”

The fourth stopped next to him. “Hi,” he said cheerfully. “Can I help you?” “I’m looking for your principal, Elazar,” the guest said. “He’s on the beach.” “When is he supposed to be back?” “Later. I don’t know if he’ll have time for you.” The sentence sounded somewhat cheeky, and the man’s face clouded. “Are you Yeruchem, perhaps?”
“No,” the boy said with a chuckle, but his laugh lacked even a trace of defiance. “What, you came for him?” There was no point in denying it. “Yes.” “I figured that out right away. I’m eighteen already, so all these officials don’t come for me anymore. Only for Yeruchem. Until what age exactly does the compulsory education law apply?” The man smiled. “You’re a guy who’s interested in learning, I see. What’s this? You sleep here?” He looked at the open workshop door. “Our apartment is down the block. This is the carpentry shop.” “And Elazar lives upstairs?” “Reb Elazar,” the boy clarified. “Yes.” From inside the carpentry shop came a distant call, and the boy shifted in his place. “I’m sorry I can’t stay and schmooze with you — I’m on kitchen duty for supper, okay?” “Is Yeruchem also on duty tonight?” the man asked, glancing doubtfully into the lit-up space, where a few figures were moving around. None of them appeared to be thirteen. “No, he stayed on the beach with the Rav. Do you want me to take you there?” “Can you?” “Yes, but only after I finish preparing supper.” “Oh, I’m not going to wait until then.” “Won’t you join us for supper? Take into account that Reb Elazar will invite you to eat with us. And if you are the fussy kind who won’t eat anything if you’re not sure exactly where it comes from and how it was made, then come and see how we prepare the food, and you’ll be assured that everything is clean and neat.” “I’m afraid I don’t have time to stay.” “But by the time you go down to the beach, they might be back already, and you’ll miss them. Again, the odor of sawdust assailed Shimoni’s nostrils; he was rather aghast at the mess. They passed the piles of planks and boards, and he stopped to gaze at a massive table. There was a large, scary-looking device on one end. “What’s that?” he asked. “We cut the wood planks with that.” “It looks very dangerous.” “It is very dangerous. It can cut anything in a flash,” the boy agreed, with a trace of malice. “So how do you keep such a thing here?” “You need a license for it, Mr. Truant Officer,” the youth replied. “And Reb Elazar has one. And so does Shlomo, the professional carpenter.” “What about Yeruchem, though? Who says he won’t try to touch it or switch it on?” “I say,” the boy declared. “Reb Elazar doesn’t let him, and that’s enough to keep him away from it.” “And he obeys?” “Why did I invite you to the kitchen?” the boy muttered. “Who needs all these questions? …Yes, he obeys, if that’s the word you prefer. We didn’t come here to fight with Reb Elazar, you know.” He said the last sentence in a loud voice, just as they arrived at the kitchen door. The three boys who were there already raised their eyebrows at the pair. “Nice of you to remember to come in, Dovid,” one of them said. “The frying pan is waiting for you. I already diced the onions.” ***** The shelf of cleaning materials in the grocery had always been one of Ariella’s favorites, since she’d done her mother’s shopping as a little girl. The array of colors, sizes and shapes — and the heady aroma — captivated her. She didn’t really like taking Osher along, because he always opened the bottles and smelled them and it embarrassed her. He would also arrange the soap bottles in order of height on the shelf. The employees at the store would give him a pinch on the cheek while she chided him to stop. But often, she took him along anyway, and when she was in an especially patient mood, she would weave charming tales for him about a magical garden that they were walking through. different promising scent. They would muse about which flower to pick from the array, and Osher would — almost always — gaze dreamily at a tall, narrow, green bottle that was impressively named “Dream Forest.” He would invariably ask her to buy that flower — er, floor cleaner. But their mother liked the Fantastik brand better, and they both had no choice but to land right back into reality. Ariella would promise Osher that one day, she’d buy him an entire bottle of Dream Forest, and he could sniff it as much as he wanted — day and night. Then the tall green bottles disappeared from the shelves. Perhaps their manufacturer had closed down. It didn’t matter, though; Osher had grown up and lost interest in the gorgeous garden of cleaning-material bottles. This morning, she suddenly noticed the bottle standing on the shelf, as though it had always been there. It was relatively expensive for the small quantity it held, but she took it off the shelf anyway. She also picked up some bread, jam and pickles, and then headed to the register. “Ariella?” “Hello, Zahava!” Ariella turned

And we both know that running a private preschool in our area is not exactly super profitable. Forget it; you don’t have to pay for me to play for you. Just turn on some Rebbe Alter CDs for the kids, or tap something out on your old keyboard. It’ll be enough.” “Oh, that doesn’t compare!” Zahava protested. Ariella didn’t respond. She was too busy putting her items onto the conveyor belt. Only after she paid and took her bag from the counter, and Zahava started putting her own things there, did Ariella say in a very low voice, “It wasn’t for me, Zahava. But at least I got a trip out of it.”

mitzvah performance, she began to unpack her bags. She took out the slim green bottle and put it on the shelf in her small bathroom. She began walking out, but then reconsidered and went back to the bottle. She pulled off the cover and sniffed it slowly. It had a pleasant smell, but she’d definitely smelled better stuff. She wondered if Osher had smelled the bottle’s contents before choosing it the first time, or if it was just the name that captivated him. With a quick motion, she put the bottle back in its place. Let it wait there. She finished unpacking the rest of her groceries, davened Maariv, placed a few phone calls to her accordion students and her math students, said Tehillim, threw in a quick load of laundry and hung it to dry, rifled through a book that Shoshi had urged her to read, promising it was fantastic, and got ready to go to sleep. It was already 11:30 p.m. Once upon a time, that had been an active evening hour for her, but these days, she preferred to work in the early morning hours. Sunrise and the moments that followed were much more beautiful to her than the stars and the darkness. The phone rang. She picked up. “Hello?” Perhaps it was one of her students. “Ariella?” the voice on the other end whispered. “Osher!” “Mm…welcome home.” “Well, hello to you, too, absentee brother. Where are you?” He was quiet for a minute. “Up north,” he said finally. “Seriously.” She sat down on her bed. “I heard that joke from Tatty or Mommy already. Or Lakey…I don’t remember who told it to me first. Nu, Osher, where are you?” “In a nice place.” “I heard that too,” she said, and automatically lowered her voice to match his. It’s a nice place, I feel good, and…everything is fine with me.” She was quiet. “Is there a forest there?” she asked, after a minute. “What?” “A forest, where you are.” “No. Why?” “Because I thought you like dreamy forests, and that’s why you decided to go up north. Northern Israel, Northern part of the world… Besides, if you’re interested, I bought you a bottle of Dream Forest. Remember that?” He didn’t answer her, but she got the impression that he did not remember. “Well,” he said suddenly. after a moment’s silence, “I need to go, Ariella.” “One second, what you told me isn’t enough. Who are you with? What is this place?” “I’ll call you again, b’ezras Hashem,” he said. “And tell Tatty and Mommy not to—” “Worry. I heard that also already,” she filled in somberly. Then she realized that she hadn’t cut him off. He had been the one to hang up.
Osher I quietly put the ancient black telephone receiver down on the table in the hallway, and padded barefoot back to the room. Yeruchem didn’t move, but I think he was saying something in a sleepy voice. I stopped near the door. I didn’t want him to see me. He continued lying there with his eyes closed, and I slipped back into bed. The others all slept in a different apartment a few houses down. Rabbi Elazar had rented it for them. But Yeruchem, Shlomo and I sleep here. Rabbi Elazar said we still need a real house, because we are young; Yeruchem is a kid of just thirteen and a half, and Shlomo is seventeen. Now I’ve joined them. They gave me a folding bed near the wall, and that’s my place. I saw the others’ apartment, and the truth is, I really couldn’t imagine myself living there. I’m used to Mommy’s clean floors and white walls. That apartment doesn’t begin to compare. They try to keep it somewhat neat, and to clean it a bit, and Rabbi Elazar speaks to us a lot about how order on the outside helps make order
inside. But it looks like a real bachurim apartment, where the definition of “neatness” is very different from how our mothers would define it. I closed my eyes, but for the longest time I couldn’t fall asleep. First I thought about Ariella, and about Nosson, zichrono livracha. He had barely been my brother-in-law, but I think if he would have remained in this world, he would have understood me well. Like Ariella. Then I thought about Yeruchem, and about that truant officer who is really not pleased that Yeruchem left his school before finishing eighth grade. He was pretty obtuse, that Gad guy. He sat with us at supper and stared at us from the side, as though we were lepers or something. He spoke to Reb Elazar in an irritating tone. The Rav answered him very calmly and didn’t get angry or anything. He just talked and talked and hardly ate anything himself. When we cleared the table after the meal and sat down in a circle for our regular conversation with the Rav, they were both still talking. Meanwhile, Mayerson, I don’t remember his first name, brought out a guitar, and Yonatan sat with his darbuka drum, and they started a little kumzitz. I didn’t sing; my voice is too hoarse. After a few minutes, the truant officer called Yeruchem over, and Reb Elazar gave them some privacy and came to join our singing. Finally, the guy left, and Yeruchem came back, looking a bit dejected. He said that there was going to be a visit next week also. Poor guy. His friends tried to reassure him that there was nothing anyone could do to him. What, they’d take him away in a patrol car? But he was pretty nervous and wasn’t really up to listening to reason just then. Then I thought about the carpentry shop and the cubby that I’m trying to build, and about the ugly hole that I mistakenly made with the drill. And the edges that Dovid has to teach me how to do tomorrow… Then I thought about how people who know how to listen like Reb Elazar are really rare these days. Then I thought about other people I know, and about my family…and then I fell asleep. To be continued…

Georgia’s Voting Law Controversy THE PULSE: Georgia’s Republican Governor Brian Kemp
signed into law Georgia’s SB 202. Proponents of the new law claim that it will streamline and improve the security of election systems. They claim that the law is necessary to restore confidence in the reliability of America’s voting process and to ensure equal access to voting in both rural and urban counties. Opponents decry it as a political power grab intended to depress voter turnout in minority areas. SB 202 follows on the heels of record Democratic turnout in Georgia in the 2020 election and has local and national Democratic politicians crying foul. President Joe Biden condemned the bill’s passage, calling it “Jim Crow for the 21st century,” comparing it to the infamous racist laws that were widespread in the American South before the civil rights movement. He called it “UnAmerican” and “sick.” However, Governor Kemp defended the bill and insisted that it will increase voter access. THE LAW: SB 202 has multiple provisions. Below are some
of the more controversial ones: The law gives state officials the ability to seize control from the local county board of elections. The state legislature, which is Republican-controlled, appoints the state board of elections. Some of Georgia’s most populous counties — such as Fulton County — are Democratic-controlled. They could potentially have their power to verify or dis-

qualify questionable ballots usurped by the state board. Additionally, Georgia Secretary of State Brad Raffensperger, whom many praised for his impartiality in the 2020 elections, will no longer chair the state board of elections. His deputy Gabriel Sterling called Raffensperger’s reduced role “political payback, no question.” The law bans “the giving of any money or gifts, including, but not limited to, food and drink,” to electors within 25 feet of a voter waiting in line to vote. Ostensibly, the purpose of this provision is to stop unscrupulous actors from buying votes. However, Georgia is known for its long voting lines, and banning food and drink distribution to those waiting in line will likely decrease voter turnout. The bill allows any Georgia citizen to file an unlimited number of fraud claims. It places limits on drop boxes for ballots. It requires enhanced ID for mail-in voting and creates a hotline where people can anonymously report voter fraud. It also shrinks the timeline for requesting absentee ballots from six months to 78 days and shortens early voting in runoff elections. However, the bill also includes provisions that proponents argue will expand voting access. The bill codifies the requirement for a minimum number of drop boxes statewide. It provides resources for precincts to ensure lines do not get too long and adds an additional day of voting for most rural counties. A provision to ban Sunday voting, which would likely have adversely affected black voters, was struck from the final legislation, as was a proposed ban on no-excuse absentee voting.

CORPORATE RESPONSE: Georgia is home to some behemoths of corporate America, such as Coca-Cola, The Home Depot and Delta Airlines. Coca-Cola’s CEO James Quincy said that SB 202 is “unacceptable” and “a step backward.” Home Depot’s co-founder Arthur Blank said, “We should be working to make voting easier, not harder for every eligible citizen.” Delta Airlines CEO Ed Bastian at first hailed Delta’s “success in eliminating the most suppressive tactics that some had proposed.” However, he later said that “I need to make it crystal clear that the final bill is unacceptable and does not match Delta’s values” and that “the entire rationale for this bill was based on a lie: that there was widespread voter fraud in Georgia in the 2020 elections. This is simply not true.” A leading sports league canceled a major event scheduled to take place in Georgia during the summer. THE IMPACT: Georgia’s bill is an outgrowth of the 2020 elections and pits those
who hailed record voter turnout against those who believe that the system is ripe for fraud. Republican members of the state assembly criticized Delta’s public statements and voted to repeal Delta’s jet fuel tax subsidy. Other members of the state legislature have threatened to ban Coca-Cola products from their offices. Georgia Secretary of State Brad Raffensperger argued that the “cataclysmic predictions about the effects of this law are simply baseless. The next election will prove that, but I won’t hold my breath waiting for the left and the media to admit they were wrong.” Many point out that the new voter ID requirements included in the law streamline the system and are an improvement over the signature match method that was in effect until now. Additionally, other states such as Delaware require photo ID verification for mail-in ballots. Many Republican-controlled states are contemplating enacting similar voting laws, and the controversy over Georgia’s law may be a harbinger for America’s next big political fight.
Manchin Opposes 28% Corporate Tax Proposal THE PULSE: Senator Joe Manchin (D-WV) announced that he is opposed to hiking the corporate tax rate from 21% to 28%. The tax increase proposal is a crucial component of Joe Biden’s $2 trillion infrastructure and jobs plan. Manchin indicated that he would be okay with a 25% tax rate. Manchin said that he was not alone in his opposition to this segment of the bill and that “there are six or seven other Democrats who feel very strongly about this.” Senator Mark Warner (D-VA) told reporters that he had expressed unspecified concerns about the bill to the White House. THE IMPACT: The Senate Parliamentarian ruled that Democrats can use reconciliation to pass two more bills, including Biden’s proposed infrastructure plan. This would enable Democrats to pass the bill with a simple majority, but this would require that every Democrat vote in favor of the legislation. Manchin argued that the bill in its current form would not pass and that the Senate would make revisions to it. In a statement, he said, “The bill, basically, is not going to end up that way.”
White House Praises McConnell’s Leadership on COVID-19 Vaccines THE PULSE: The White House put out a statement highlighting Republican Senate Leader Mitch McConnell’s efforts to promote the COVID-19 vaccine among GOP men. A Marist poll conducted last month showed that nearly 50% of Republican men would refuse to take a COVID-19 vaccine. McConnell, who is a polio survivor, encouraged all who are eligible to get vaccinated. He said, “I’m a Republican man. I want to say to everyone: We need to take the vaccine.” The White House said that McConnell is “right” and that “we thank him for his leadership.”

CINNAMON STREUSEL CAKE Everyone needs a delicious cinnamon streusel cake recipe in their baking repertoire, and this absolute winner is the perfect option.
STREUSEL TOPPING AND CENTER 1¾ cups WonderMills flour 1 cup light-brown sugar, divided 1¼ tsp. cinnamon, divided 1 tsp. salt 1½ sticks cold margarine, cut into small pieces 1½ cups coarsely chopped toasted pecans, divided CAKE 1 stick margarine, at room temperature 1 cup sugar 2 eggs 1½ tsp. vanilla extract 2 cups WonderMills flour 1¼ tsp. baking powder ½ tsp. baking soda ½ tsp. salt 1 cup oil, divided GLAZE 1 cup confectioners’ sugar 2 T. almond milk
DIRECTIONS 1. Prepare the streusel topping: Mix together the flour, ¾ cup light-brown sugar, 1 teaspoon cinnamon, and the salt. Cut or rub in the margarine with your fingers until small-to-medium clumps form. Mix in ½ cup pecans. Refrigerate this mixture until you’re ready to use it. 2. Prepare the streusel center: Mix together the remaining ¼ cup light-brown sugar, ¼ teaspoon cinnamon, and 1 cup pecans. Set aside. 3. Preheat the oven to 350°. 4. To make the cake, beat the margarine and sugar on medium speed until the mixture is pale and fluffy, about 2 minutes. Beat in the eggs, one at a time, and then the vanilla. 5. In a separate bowl, mix together the flour, baking powder, baking soda and salt. Pour ⅓ of this mixture into the batter and mix. Then add ½ cup oil to the batter and mix, then another ⅓ of the flour mixture and mix again. Add the rest of the oil and mix, then the rest of the flour mixture and mix again. Continue to beat until everything is well combined. 6. Spoon half the batter into a lined 9x13” pan. Sprinkle the streusel center mixture evenly over the batter. INGREDIENTS 1½ cups (3 sticks) margarine, softened 2 cups sugar 4 eggs 1 T. vanilla extract 3 cups WonderMills flour 6 T. cornstarch 2 tsp. baking powder 1½ tsp. kosher salt 1 cup almond milk GLAZE 2½ cups confectioners’ sugar 5 T. almond milk ½ tsp. vanilla extract DIRECTIONS 1. To prepare the cake: Preheat the oven to 350°. Line a 9x13” pan. In a large bowl using a hand mixer (or in the bowl of a stand mixer), beat together the margarine and sugar until the mixture is light and fluffy. 2. Add the eggs one at a time, beating well after each addition. 3. Add the vanilla and mix until combined. 4. In another large bowl, whisk together flour, cornstarch, baking powder and salt. 5. Add half of the dry ingredients to the wet ingredients, beating until just combined. 6. Pour in the almond milk and mix until fully incorporated. Then add the remaining dry ingredients and stir until just combined. 7. Pour the batter into a lined pan and smooth the top with a spatula. Bake for about 55 minutes, until a toothpick inserted into the center of the cake comes out clean. Let the cake cool in the pan for 10 minutes, then place it on a cooling rack to cool completely. 8. To prepare the glaze: Whisk together the confectioners’ sugar, almond milk and vanilla. Pour this glaze over the cake and serve.

“Absence makes the heart grow fonder” gains a very corporeal meaning on Pesach, as we refrain from eating chometz. And when Pesach ends — along with the frenzy of ripping silver foil, manhandling a dozen Ball jars, and returning our living quarters to some semblance of normalcy — comes the yearly fevered search for a freshly baked piece of chometz; a childish excitement in indulging in a slice of raw pizza or a half-baked Danish as we celebrate our Motzei Pesach cleaning. But upon further introspection, it’s not only the Motzei Pesach chometz that triggers ecstasy. Many carb-loaded foods evoke a trove of emotions, recollections and experiences. When I prompted friends and family to name memory-triggering foods, the answers were varied, though the reactions — the excitement and nostalgia — ran a constant thread all throughout their responses.

A TASTE OF HOME For Nechama, the question inspired a trip down memory lane. “Oh, my! Bubby’s legendary mandelbrodt! My great-grandmother, who is now in her 90s, may she live and be well, was famous for her mandelbrodt — and not just among family. She would make sure to bring it along on doctor’s visits, and I wouldn’t put it past her to have given some to her mailman and cleaning lady, too. She made this for years, way past the time you’d think a not-soyoung woman would be baking!” Even the sight of coffee containers throws Nechama back into her childhood years, when her bubby would send this treat to her family in these containers via mail. “My family still laughs when they remember how as a young child I pointed to coffee containers in ShopRite and asked if there were some of Bubby’s mandelbrodt in there.” Anyone with a Hungarian lineage is quick to recount the various babkas and their alternate varieties (kokosh cake, rugelach, kipelach) their bubbies used to bake. “My authentic Hungarian grandmother would make the most decadent chocolate, cinnamon and cheese babkas — unquestionably without a recipe,” Yitta shares. “And she knew precisely which flavor was favored by which grandchild. I loved the way she would think for a second — or pretend she was — and, with a special half-smile, exclaim, ‘Cinnamon!’ as if

she had just discovered a secret of sorts. And although I spent so much time with her, it still bewilders me how she always had a fresh one right out of the oven.” Growing up as the youngest, Shiffy reminisces about her own mother’s Hungarian-balabusta career. “My mother always had a batch of her popular chocolate rugelach on hand. When the grandchildren stepped in, she would quickly rewarm them in the oven so that the children could enjoy them ‘freshly baked.’ My father also had an incentive program where the boys would come to be farhered. These learning moments were my mother’s pride and joy, and as an expression for her love of Torah, she prepared a tray of these warm rugelach and served each boy a glass of freshly brewed coffee. Although it’s many years since, just the smell of rugelach elicits in my mind the sweetest melody of Torah learning.” Moving away from one’s hometown brings along a host of unexpected challenges and hurdles. For Brucha Goldy, moving to Eretz Yisroel proved to be harder than she envisioned. “The challenge that hit me quite unexpectedly was missing my mother’s kitchen!” she shares. “Besides the constant chatter of my high school sisters and a fully stocked freezer to nosh from after an exhausting day, I sorely miss my mother’s famous cinnamon sticks that are
always hiding somewhere in the freezer. They are my mother’s signature cookies, proudly presented as mishloach manos, at any simcha, and packed up weekly for my married siblings. In the past, my mother would send them to me with people flying to Eretz Yisroel, but now, what with the strict COVID-19 regulations, I haven’t had one in months! A sniff of cinnamon is all it takes to bubble up feelings of homesickness,” she says candidly. Although it came to her as a surprise, others can easily relate to Brucha

Sara, also living overseas, admits her feelings of wistfulness. “I so miss my mother’s plain old chocolate chip cookies,” she says. “As a child, I loved dipping these cookies in slightly cooled raspberry tea, especially after the Shabbos night meal. To this day, when I enjoy a glass of raspberry tea along with a cookie, I am right back home. The nostalgic taste is so much sweeter than the actual treat!” Besides triggering wonderful memories, food can also preserve connections to people and places. Rifki shares one such link. “My beloved great-aunt
MY HAPPY CAKE By: Ruchy Reese As a fruit fanatic and lover of uber-moist cakes, this is the delicacy of my dreams. From the first time I tasted it as a young child, it made it straight to the top of my Favorite Foods list. From then on, I requested it for every single special occasion. No, I didn’t always get it, but each time I did, my mouth was in PleasureLand. This is my happy cake. Pineapple Upside-Down Cake is great all year round, but it’s truly perfect for cold nights in the sukkah, for not only is it extremely rich and wonderful and just screams “yom tov!” it’s also best served warm. And it’s pretty, too! Pass out slices of this cake together with hot tea, and trust me, it will be a magnificent end to a beautiful meal.
PINEAPPLE UPSIDE-DOWN CAKE TOPPING
DIRECTIONS
¼ cup margarine
1. Preheat the oven to 350°.
½ cup tightly packed light brown sugar pineapple rings (canned or fresh)
2. Melt margarine and pour into a pie pan, taking care to thoroughly grease the bottom and walls of the pan.
VANILLA CAKE
3. Sprinkle brown sugar evenly over margarine.
½ cup margarine, at room temperature
4. Place pineapple slices side-by-side on top of the margarine and brown sugar. If there are empty spaces, cut pineapple slices in half and place there, too.
¾ cup sugar 2 eggs 1 tsp. vanilla extract 1½ tsp. baking powder
5. To prepare the vanilla cake batter, beat margarine and sugar together until creamy and well combined.
¼ tsp. salt
6. Add eggs, beating one at a time until combined.
½ cup soy milk, or any other milk alternative
7. Stir in vanilla extract.
1½ cups flour
8. In a separate bowl, whisk together flour, baking powder and salt. 9. Alternate adding flour mixture and pareve milk to wet ingredients, mixing until just combined. 10. Pour batter evenly over the prepared pineapple layer. 11. Bake at 350° for 30 minutes, then loosely cover with foil and continue to bake for another 15 minutes, until a toothpick inserted in the center comes out mostly clean. 12. Cool for about 15 minutes, and then use a knife to loosen the edges from the side of the pan. Wearing oven mitts (because it will still be very hot!), carefully invert the cake onto a serving platter. Allow to slightly cool before serving. Note: This cake is very versatile and works well in different shapes of pans. If you don’t have a pie pan, just use a Pyrex dish that’s a bit smaller than the typical 9x13” aluminum pan.

MAKING MEMORIES HAPPEN When Bruchie recalls her grandmother’s cake, it’s not just the memory of the cake that warms her. “So often, I found myself salivating for my grandmother’s chocolate kokosh cake. My grandmother, in all her Hungarian glory, baked the most flavorful (calorie-loaded), ooeygooey cakes. She would make them twice a week and serve them to anyone who walked through her door. Motzei Shabbos, we would clamor for our share, and she would rewarm a slice for each of us.” But Bruchie claims it was more than the piece of cake. “My grandmother would serve the slice in a porcelain dish paired with a glass of cold milk for the children and warmed milk for the adults. I think what makes the memory so cherished was the special feeling that accompanied that piece of cake. The porcelain dishes made us feel so important! That was my grandmother — always treating everyone, down to the little children, with respect and dignity.” More often than not, it is indeed the nuances and details that come along with the piece of cake that remain with a child. One bubby shares her little secret. “I don’t think it’s the brownie cake that my children and grandchildren beg me for. I think it’s the way I give it to them. I always have a stash of nice, black paper bags to pack up the cake, and of course, the cake goes into a special box that keeps it moist. I’ve learned over the years that these details make a tremendous difference!” Mrs. Gurvitz, a mother and grandmother to a large brood, also feels that it’s not her oatmeal cookies that her grandchildren pine for, but the notes she attaches to the boxes that she sends each week. “I love writing a short message acknowledging something that occurred during the week — be it a performance, great report card, or an act of chesed one of the children did. Many of my children proudly display these notes on the fridge!” “Baked with love” stickers got several mentions. “I buy a roll of ‘baked with love’ stickers, stuff two muffins in a plastic bag, close it with these adorable stickers, and watch my children beam as I hand them the bags in the morning,” Sara mentions as we speak about her recollections. “Even my teenage son likes these stickers,” Basya says, and chuckles. “He was caught off guard the first time I stuck it onto his lunch, but he admitted that it felt great.” “Truthfully, I think it was those small surprises my mother would present at our weekly pizza party that made us so excited,” Esther says. “One week she would prepare pizza boxes, another week she found some exotic topping, and a third week she would quickly sketch a menu sign before we came to eat the pies.” She sums up with a sentiment that everyone seems to share. “It’s these seemingly insignificant details that make all the difference.”

Bimbi, who unfortunately passed away at a young age, baked the most scrumptious brownie cake. We’d cut the cake in half, put a coating of a margarine-rich cream between the two layers, and top it off with some more cream. The cake became a family staple and, more importantly, a bond to our deceased, cherished aunt.”
BEYOND THE FOUR WALLS Although most women shared how the sight and smell of pastries bring them back to their parents’ home, others’ reminiscing took them beyond their mother’s kitchens. “On the way to school, my friends and I would pass Korn’s Bakery,” Rochel says. “They had these fresh pull-apart cinnamon buns that smelled and tasted out of this world. They were approximately 40 cents apiece, and we would count the change in our pockets to see how much breakfast we would get that day.” She chuckles as she remembers these daily carb-loaded “breakfasts.” “I could still see the steam rising as we would eagerly pull them apart!” In another recollection of a local bakery, Shevy recalls the sugar-coated spritz cookies from Frank’s Bakery in Monsey. “We called them thank-you cookies because the box had the words ‘thank you.’ The spritzes of chocolate were so crunchy, and the sugar was

And although I no longer spend the summers in South Fallsburg, I love when my husband drives past the bakery and I get a delicious whiff of the store.”

For many of us, baking on the scale of our mothers and grandmothers feels daunting. “Although I like the kitchen, I couldn’t continue the challah baking tradition I grew up on,” one woman shares. “Since I can remember, my mother has been baking perfect challos every Erev Shabbos. Be it the day before the Shabbos aufruf of my brother or Erev Shabbos when the zman was 4:15, we could count on a batch of the most beautiful, fluffy challos. And my mother’s challos are definitely her claim to fame! The texture, the color, the taste and shape are matchless, and we children never tried competing! When I began baking my own challah, I remember feeling inadequate, as I was unable to do it as my mother did every Erev Shabbos. But even though in my current stage I can’t quite swing it, I’m still aspiring to bake challos every Friday.” Others find it very meaningful to introduce their children to some favorite food traditions. Esther recalls her favorite mealtime tradition with palpable delight. “Motzei Shabbos implies homemade pizza for my family. That’s how I grew up, and that’s what I do with my own family! Along with the chanting of ‘G-tt fun Avraham,’ my mother would defrost her portioned pizza dough (those were the days before ready-made pizza dough was readily available), and after Havdalah we would all sit around the table for a most fun pizza party, as we dubbed it fondly. There would be a quick distribution of the basics, and then we excitedly chose toppings. While we waited for the pizzas to bake, my mother had us bathed and dressed in pajamas, her secret trick to getting us ready for bed on time on those nights! These pizza nights were the highlight of the week,” Esther concludes, “and I was so excited to give that to my children, too!” “I was quick to begin baking my own batches of mandelbrodt,” Nechama says while regaling me with her mandelbrodt memories. “And I taught my kids how to dunk them in orange juice like I used to do. Needless to say, when I bake a batch, the treat is gone before I even have a chance to freeze some!” Nechama’s last remark resonates with many of us. As we watch those fleeting cakes and cookies end in crumbs and messes, we can erroneously think that our efforts are rewarded with only a meaningless mess. However, while our delicacies may not last longer than a few hours, they create the most everlasting, warm childhood memories.

Eggs are awesome, aren’t they? They’re everywhere, in so many dishes! From what I’ve heard, there are more than a thousand ways to make an egg — though I certainly don’t know that many! But what do you do when a loved one can’t have eggs — and therefore, all those yummy foods? That certainly makes life more challenging. Baruch Hashem, even though my family has dairy, fish, sesame, honey and peanut allergies, and one of my kids had a rare food allergy disease called FPIES that he’s since outgrown, I’ve never had to struggle with an allergy to either eggs or wheat — both of which are daunting, because they’re truly staples in almost every pantry. But when my neighbor’s son exhibited an egg allergy, I felt his pain and decided to tackle the challenge. A little research, combined with trial and error, and you have some awesome, life-changing discoveries for deprived people. The recipes below look like the real deal and some of them taste even better than, or on par with, the egg-filled version. So let’s get cracking — but not eggshells!

There are two foods that work incredibly well as egg replacements in baking, and no, I don’t mean applesauce (which doesn’t work well in most recipes I’ve tried) nor chia seeds (which turn dough rather unpleasant in appearance). They’re flax and aquafaba.
FLAX MEAL Flax is an amazing plant seed that is considered a superfood, providing omega-3 as well as protein and a host of other nutrients. But honestly, in this article we’re not concerned with physical health as much as emotional health, because it’s the deprivation of kids (and adults!) who have allergies that we’re addressing. Sometimes having a delicious “same-as” treat is a balm to the soul; the health benefits are just a boon. Flax meal can be purchased at most grocery stores, and if you can’t find it, check the health food store.
How to Use To use as a replacement for one egg, mix one tablespoon flax meal with three tablespoons water.
When to Use Flax “eggs” are perfect to use in dense baked goods that don’t need to rise much, such as cookies or kugel. They can also be used in goods such as bread, which rises through yeast and not through the egg or egg substitute. I love the challah recipe on the back of the (orange) Quality Flour six-pound bag, and I simply substitute five tablespoons of flax meal combined with 15 tablespoons of water in place of the five eggs. Flax, however, does not work well in cakes or muffins.
AQUAFABA I know what you’re thinking: “Aquawhat?” Yeah, aquafaba. Aka, the “juice” found inside a can of chickpeas. Wait! Calm those visceral reactions and don’t turn the page. Yes, it sounds weird. Yes, it smells… beany. And yes, it is awesome. That smell goes away once you’ve added some pleasant-smelling ingredients, and you’d never know there was something so unexpected in the finished product. Trust me on this; your little eaters won’t know the difference.
How to Use Aquafaba — a contraction of two Latin words that mean “bean” and “water” — whips up into meringues just like eggs and can easily take the place of eggs in cakes and the like. The basic substitution is three tablespoons of aquafaba to one egg. I’ve found that there’s usually between 14 and 19 tablespoons of aquafaba in one chickpea can.
When to Use Use when flax seeds won’t cut it, such as when things need to rise and won’t contain yeast. Otherwise, save yourself the smell and stick to flax.
I’ve included some recipes below, and if you’re going to make only two of them, I suggest making the cookies, which are truly amazing, and the potato kugel. I hope these tips and recipes will have a positive impact on your egg-free loved ones’ lives!

THE EGG-FREE CHOCO-CHIP COOKIE EVERYONE WILL LOVE Everyone loves chocolate chip cookies, right? Well, that trend will continue with these delicious cookies. No one — and I mean, no one — will imagine that these are eggless. The only problem you might encounter is that the egg-eaters might eat up all the eggless cookies — leaving little for the one who is medically required to avoid them! So double the recipe; I promise you it’s worth it!
MODIFIED CINNAMON MARBLE CAKE
2 T. flax meal + 6 T. water
2½ cups flour
½ cup sugar
¾ tsp. baking powder
1 cup brown sugar
¾ tsp. baking soda
Big shout-out to Miriam Paskes for her amazing family-sized cakes featured in the past. I fell in love with her super-simple and absolutely amazing cinnamon marble cake, so I tried modifying it for the egg-free audience. I also cut the recipe in half. It turned out well, though the eggy version is better.

1 cup mini chocolate chips
18 T. (1⅛ cups) aquafaba
INGREDIENTS
DIRECTIONS 1. Preheat oven to 375°. 2. In a large bowl, mix the flax meal with the water. Allow this to rest for 10 minutes until it becomes egg-like in consistency. 3. Prepare two cookie sheets by covering them with foil that has been crumpled and reopened. (It helps air to circulate, making the cookies bake more evenly.) 4. Mix together the three types of sugar with the flax-water combination until well combined. The mixture should release bubbles of air when you pause. 5. Add the oil and mix thoroughly. 6. Add the flour, baking powder, baking soda and salt, and mix thoroughly. 7. When a smooth dough is formed, fold the chocolate chips into the dough so they’re distributed evenly. 8. Using a tablespoon-sized measuring spoon to keep the cookies a uniform size, scoop out spoonfuls of cookie dough and place them on the foil-lined baking sheets. If you choose to make the cookies larger, they may need another minute or two in the oven, but be careful not to overdo it. If it’s your first time, try to stick to the recommended size to get a feel for the recipe. 9. Bake for 9 minutes. Yields 46 cookies Note: Don’t give in to the fear of underbaking. The cookies may seem raw in the middle when they first come out, but over the course of a few hours they’ll reach exactly the right consistency of crunchy on the outside and super-soft in the center. These are a better-the-next-day food. Tip: If you (or your eggless eaters) are not in the mood for chocolate chips, try butterscotch or white chocolate chips — or even combine all three to please all palates. You can also leave out the chips entirely and add half a tablespoon of cinnamon. My family loves all versions.

In a mixer set to high speed, whip the aquafaba and sugars for 5 to 6 minutes, until it turns white and fluffy. Add the oil and seltzer, and mix. Fold in the flour and baking powder, and mix until combined. 3. Pour three-quarters of the batter into a five-pound loaf pan. 4. Mix the remaining batter with the cinnamon. Drizzle this cinnamon mixture over the white batter, then swirl with a knife to marbleize. 5. Bake for 1 hour and 10 minutes. The cake is ready when an inserted toothpick comes out clean and the top is brown and crunchy.
FLAXIFIED POTATO KUGEL
AQUAFABA HAMANTASHEN
Potato kugel is the bane of the Yiddishe mama who has a child with egg allergies. Because who doesn’t want a slice of piping hot (and usually egg-laden) potato kugel? Life can seem so unfair without that kugel everyone else is enjoying.
I first started playing around with aquafaba around Purim time, and though it’s a bit late in the game, I know this recipe will come in handy for some people next year. So pack it away and pull it out when Adar rolls around again.
But fret no more — the solution is here! Simply swipe out the eggs for our wonderful flax meal-water combo. The taste and texture will be pretty close to standard kugel. Let’s put it this way: While trialing this recipe, I didn’t tell my kids about my sneaky substitution and got only rave reviews — though they did notice that the kugel looked slightly different than usual. But with a shrug of their shoulders, each child asked for doubles.
INGREDIENTS 8 T. flax + 1½ cups seltzer 2 cups oil
Now, let me be honest here: These aren’t bakery-worthy hamantashen, but for a child who would otherwise have none, they’re pretty great. The dough is soft and pliable, making it extremely easy to work with.
INGREDIENTS 1½ cups sugar 18 T. aquafaba 1½ cups oil 2 T. vanilla extract 6 cups flour 2 tsp. baking powder 2 tsp. salt

1. Mix the sugar and aquafaba for about 5 minutes on low speed, then add the oil and vanilla and mix again.

1. In a large bowl, dissolve the flax meal in the seltzer and allow this to sit for 10 minutes. 2. Add the oil and mix well to combine. 3. Shred the potatoes with an S-blade and add them to the mixing bowl. (The S-blade works better than the kugel blade when it comes to flaxified kugel.)
3. Roll out the dough, then cut out circles. Fill with your favorite filling, then fold and pinch them into the classic hamantash shape. 4. Bake the hamantashen at 350° for about 18 minutes or until golden.
4. Add salt and pepper to the bowl and mix all ingredients together very well. 5. Pour this mixture into a deep 9x13” pan (or divide between smaller pans), and bake at 425° until the kugel has some color. 6. Lower the heat to 350° and bake until the kugel looks like, well, a perfectly delicious kugel! Note: Even though the flax kugel comes out a bit less tasty than its egg-rich counterpart, flax meal latkes, on the other hand, beat the eggy version by far! They get super, super crunchy on the outside and all soft and gooey in the middle. Even though my family can have eggs, flax is my official latke go-to. Use potatoes, salt and your basic flax seed substitution in place of the eggs — and enjoy!

It was that kind of week. You know which kind. Baby was tiny, but old enough that I was expected to cope. I was back at work, but floundering in the eddy of conflicting priorities. And the kids were wonderful, of course, but exasperating all the same. Because a little human being had joined our family, and the reintroduction of the diaper bag came along with a laundry list of blessed adjustments. Supper sometimes fell off the to-do list. Laundry barely managed to hang on to the bottom. Baby was fed? Kids were clothed? Then we were good. Shabbos also managed to make the to-do list. But homemade challah? While the warmth and smell of fresh challah wafting through the house was one of those things that made it a home, this wasn’t quite the week for it. And so, on Friday, my husband was dispatched to a beis midrash he often frequented that had a small convenience store stocked with basics. Their challos were delicious, we knew, and if Mommy’s challos weren’t an option, these were great alternatives. But there were no challos on the shelves. My husband circled the store a few times to make sure he didn’t miss them, but no challos were to be found. Now, we needed those challos. My husband knew that the yungerman who managed the store sometimes froze fresh loaves to be sold at a later point, so he thought we could still get lucky. My husband soon found the manager outside discussing something with the Rav of the beis midrash, and so he stood a distance away, waiting for the conversation to conclude. “Do you need something?” the manager asked at last. “I’m looking for challos,” my
husband replied. “Do you have any?” The man shook his head. “No. No challos this week.” “Do you have any in the freezer?” Another shake of the head. “I’m sorry.” “Wait a minute,” the Rav interjected. He was still standing nearby and was evidently listening to their exchange. “Do you need challos for Shabbos?” My husband waved away his concern. “It’s perfectly all right,” he said. “I’ll get some.” After all, there was always the bakery, right? And that was that. Or so we thought. After debating whether to head over to the bakery or come home first, my husband pointed his car toward home. He knew it was zoo hour on Friday, and his pair of hands was urgently needed. He was on the way home when there was a knock on the door. My kids hollered “Come in!” before I even had a chance to say “One second!” and all of a sudden they were lugging a huge brown bag to where I was standing in the kitchen.

FRENCH FOUNDATIONS The word apron originates from the French word naperon, meaning “small tablecloth.” Aprons have been worn throughout the ages for hygiene and protection, to keep clothes from becoming worn out, and to indicate status.
SMOCK SUPPLIES Most of today’s aprons are made from materials like cotton, canvas or lace. Aprons can be decorated and customized using different processes, including embroidery, printing and silk-screening. Custom-made aprons have become very popular, with emblazoned words saying things like: “How burned do you like your steak?” or “World’s Greatest Chef!” What would your apron say?

APRONS THROUGH THE AGES IN EUROPE during the Middle Ages, distinctive aprons pointed to different trades. Barbers wore checked aprons; stonemasons wore white aprons; cobblers wore black, to keep the black wax they used from ruining their clothes; butchers wore blue stripes; and butlers clothed themselves in green. Blue was often spotted on weavers, spinners and gardeners. IN THE 1500S, aprons began to appear in the artwork of rich folks — people who were wealthy enough to have their portraits painted. OVER IN AMERICA, Native Americans wore aprons for both practical and ceremonial reasons. American colonists also often wore aprons; since they owned fewer clothes, they tried keeping them as clean as possible. THE LATE 1940S saw the apron become an icon of a model housewife. The Great Depression and war led to families revelling in the simple joys of home and family and in the royalty of the housewife. THE 1960S, however, emphasized the fulfillment of a career and the importance of the workplace, causing aprons to fall out of favor, viewed as old-fashioned and out of touch. Still, the apron remained a staple in certain trades. RECENT YEARS have brought a great comeback for the modest apron. Cooking from scratch and spending time with family is back in vogue, and it seems that our aprons are here to stay as a symbol of hard work and craftsmanship.
