a hearty meal is a feeling like no other. We’re all drawn to the food we eat

for different reasons. For some, the healthier options come first (we love to

brag about eating healthy) others, like bragging about being the first ones to find the newest hole-in-the-wall. Some people want atmosphere, but for me, presentation is everything. For me, it’s presentation, presentation, presentation. There is nothing that helps me decide what I’m going to eat more than looking at an appetizing dish, whether it’s being taken to a nearby table at a restaurant or displayed as an ad in our magazine. It’s important for me to know that what I’m going to eat also looks good enough to put into my

body (and even take a picture). A quick way to understand a city’s culture is to look at the food that is custom to the area. In El Paso, as we’re so close to the border, you can find an interesting mix of spices, herbs, and cultures. Not only can you get a savory Mexican dish that tastes like your grandmother made it, but seafood and Japanese dishes are becoming more easily accessible. As you flip through the pages, you’ll notice that this issue is all about food. It is for people who love to cook, people who love fine dining and people who love “feel-goodâ€? food. As gourmet food and celebrity chefs have become more popular, we wanted to dedicate one magazine a year to our foodies. You’ll find that this issue is packed full of great recipes, wonderfully documented with mouth-watering photos. We want you to slow down, just for a few minutes, smell the delectable aromas, watch the butterflies, simply enjoy life. We want to make you eat. We feature Chef AarĂłn Sanchez, here from the Sun City, who is a part of The Food Network with multiple shows. We also have Elaine Gordon, a local nutritionist, who helps us find healthier restaurant options. You’ll also want to check out our article about The City Magazine Nacho Field Trip, where a group of us from the office traveled from West to East in search of El Paso’s best nachos. On a budget? An Interview With A Local Business Woman | By: NEISSHA KING |

Co-Owner, Los Colorines You Have to Trust Yourself to Make It! Holly is truly a go-getter. No stranger to the business world, as she comes from a successful family (her father is in a similar business), yet her desires were not that of her father’s. She actually had aspirations of becoming a doctor, but life had a different course of action. After finding herself divorced and a single parent, she decided to join the family business. The biggest risk I’ve taken: Is starting my own business. My father presented me with an opportunity, guidance and some start-up money, and therefore I decided to take a chance. It was never my goal to be a business owner. Six years into the business, and six employees later, I am glad that I did. Business lessons to remember: You have to trust that you can make it. During the first year it was extremely challenging. Even though I was the only employee, the business did not make any money … actually, it lost money. There were times I was unable to receive a paycheck, yet as a single parent I had to support myself and my son. I sought out additional ways to bring in income, which was extremely exhausting as I not only spent hours in the business, but that on a second job as well. I quickly realized the business would have to make money in order to move forward. I advise, only keep going forward if you can see the light at the end of the tunnel, I was able to see that light. I trusted myself to make it. I’ve also learned that it is important not just to work in the business, but on your business. When you are the only one, you’re really an employee and your own boss. You have to be willing to hold yourself accountable as you would any other employee. You’ll never regret: Taking a leap of faith to start the business. The moment I knew I made it: Hearing that I was Home Depot’s largest woman-owned transportation provider. My everyday mantra: Pre-plan your day. Time management is an absolute must. You have to set and be committed to your daily priorities. I’m glad that I’ve never: Given up. There are times it can become quite overwhelming and I’ve thought about quitting, but my pride won’t allow me to do so. I’ve never wanted to be seen as the one who couldn’t make it. I wanted to prove to myself, and others, that I can do it and I’m thankful that I am. My greatest joy: Being able to build my dream home and provide a lifestyle for my family that I’ve always desired. The Legacy She Desires to Leave Behind 12

s the sun began to set on a chill Saturday evening, several members of The City Magazine family headed out on a “field trip” to find the best nachos in El Paso. What we discovered though, was that each restaurant offered a unique quality to their dish and selecting an overall winner seemed unjust.

It was decided that we would determine what we liked best from each restaurant. Members of the nacho excursion ranked each dish on presentation, flavor, topping ratio and crispiness of chips. As for restaurant selections, staff members nominated a place from each side of town and those with the most votes were selected. In the end, we visited four restaurants, ate more than a pound of cheese, took countless pictures, made a few “cheesy” puns, met some interesting characters and had a great time doing it. If you plan to do your own “Nacho Field Trip,” it’s recommended to go in a group (you’ll have more fun that way). In no particular order, we present to you our best nacho selection.

Sabertooth | Bar Nachos | $8.00 Found under the “snacks” section of the menu, Sabertooth’s Bar Nachos are topped with cheese, fresh chopped tomatoes, pickled jalapeños, cilantro and your choice of chopped chicken, pork or steak (we chose pork). The homemade chips and their crispness added to the overall flavor of the dish and served as the perfect start to our outing. The serving size of the dish is great for two or three people and is good as an appetizer or a snack with your drinks when you are out in West El Paso. As a whole, we liked the flavor of the fresh tomatoes and the pork.

Kiki’s Mexican Restaurant chicken Nachos | $8.70 Located in Northeast El Paso, Kiki’s has become a local favorite and it was no surprise to find the restaurant packed and filled with people from all walks of life. That didn’t stop them from providing us with their signature hospitality though. Kiki’s Chicken Nachos are topped with beans, cheese, pickled jalapeños, shredded chicken, tomatoes and sour cream. The vast assortment of toppings is all put on their homemade tostadas. Possibly one of the more hearty plates, it is highly recommended to pair it with a side of their own guacamole if you can find the room.

Steve’Os Eat & Drink Brisket Nachos | $12 This Eastside establishment has gained a reputation for their creative burgers, but what also gets people talking is their Brisket Nachos. Topped with brisket, nacho cheese, tomatoes, sour cream, pico de gallo and guacamole, you’ll be staring at a mountainous plate and wonder how to start eating it. Serving size is excellent for couples or a group of four. Be warned though, as you savor your nachos prepare for the nice kick of heat that settles in your mouth as you reach for your second chip. The traditional nacho cheese was refreshing, as it didn’t take away from the flavor of other toppings.

The Tap Nachos Mexicana $12 Our trip ended at one of downtown El Paso’s oldest dive bars, The Tap. This city favorite offers several choices when it comes to nachos, but nothing tops their Nachos Mexicana. Topped with brisket, beans, muenster cheese, tomatoes, onions and pickled jalapeños, The Tap’s homemade and large tostada chips will not leave you hungry at the end of the night. A great dish to eat alone or to share with a friend, you’ll be licking the plate clean. The cheese used on the Nachos Mexicana was selected as our favorite of the night.

The brewery has its five flagship beers on draught, along with another tap dubbed “The Squeege,” which is reserved for one of Salinas’ friends and guest brewers. “He comes in once a month and he can pretty much do whatever he wants,” Salinas said. Portillo explains the food and beer at Ode enjoy an egalitarian status. While he and the other cooks strive to compliment the beer and utilize it in their recipes as much as possible, the ultimate goal is to create quality, unique offerings with no restrictions. He expands: “The beer and food are creating their own identity and we don’t want one or the other limiting creativity. We try to use the beer as much as we can to cook with, but the beer takes so long to brew. With cooking, we can add and take stuff off on a daily basis.” Both Salinas and Portillo strive to expand the offerings at Ode by experimenting with different methods, recipes, ingredients and feeding off the creative synergy that results. In the pipeline right now is a barrel-aged Russian Imperial stout for which Salinas ordered whiskey barrels. “It will be the first time El Paso has a bourbon barrel-aged beer,” he said. Ode Brewing is a casual, comfortable place that offers a variety of delectable treats. Salinas and Portillo are passionate about what they do, and it is readily apparent in every sumptuous sip and bite.

Heat a medium pan with three tablespoons of EVOO on medium. Cut the chicken into cubes and then cook in the pan until the chicken browns. Start boiling the water for the noodles. Cut the grape tomatoes in halves and the mushroom into slices. Peel the garlic cloves and mince. Once the chicken browns, throw the vegetables in the mixture and cook 3-4 minutes or until the chicken is at 165F. Start cooking the noodles in the pot. For Gluten-Free version: Use a zucchini noodle tool to make your noodles. Heat a pan on medium: and pour 2 tablespoons of EVOO on the pan and cook the noodles for 2-3 minutes. Lemon Sauce: In a small bowl whisk the juice of 1 lemon, 2 tablespoons of olive oil and the onion powder. Once the noodles are ready, you can mix them in with the chicken pan or just place your noodles/zucchini noodles on a plate and top with the chicken and veggie mixture. arina took on the challenge because she was determined to do it and knew she could conquer it. “My initial plan was to make some turkey chili but I realized I

didn’t had enough money for it so I went with a classic spaghetti and meatballs.” Her plan B (the spaghetti) was the perfect recipe to tackle for this challenge because it’s affordable and the ingredients are pretty basic. “A good recipe is tasty no matter what your ingredients are.” Marina bought all her ingredients in one store but she did have to cut out some “fancy” ingredients like basil and Parmesan cheese. “I didn’t use any coupons. I did cut on some ingredients but everything worked perfectly! Even the meatballs were meatier than the original recipe.” Marina researched the recipe and just tweaked it to work in her favor, which was perfect because her husband loves spaghetti and meatballs. It made more than enough for the both of them and they even had some leftovers.

If you want to get fancy with it (which we normally do), we follow the Martha Stewart school of thought, which dictates that when cooking, one should use the best ingredients possible. So when we’re not on an $8 budget, we use organic crushed tomatoes, Italian bread for the fresh breadcrumbs, we add basil to the sauce and a quarter cup of fresh grated Parmesan to the meatballs. Disclaimer: my receipt doesn’t say $8 because I had to purchase six eggs to get just one. Technically speaking, I came in under the $8 budget for a total of $7.78. Enjoy!”

Make the sauce: Heat the oil in a medium saucepan over medium-low heat. Add onion and sauté until translucent, about 2 minutes. Add garlic and sauté just until softened, about 30 seconds. Add tomatoes with their juice, a pinch of sugar and parsley. Bring to a boil. Reduce heat to low and simmer until sauce is slightly thickened, about 30 minutes, stirring occasionally. Add oregano and salt and pepper to taste. Cook for 1 minute more.

Make the meatballs: In a food processor, pulse the bread until fine. In a mixing bowl, add the beef, eggs, parsley and minced garlic, bread crumbs, then salt and pepper as desired. Add 2 tablespoons of water. Mix well. Shape into 1 to 1 1/2-inch meatballs. This should yield 10-12 meatballs.

Heat the oil in a large sauté pan over medium heat. Add meatballs and fry until undersides are brown and slightly crisp, about 5 minutes. Turn and brown the other sides, about 5 minutes more. Transfer cooked meatballs to paper towels to drain, then add to the marinara sauce. Mix gently.

Valentine’s Day is known as a holiday in which love is expressed and floral shops and jewelry stores make a killing. Have you ever wondered why we celebrate such a holiday? With that thought in mind, I decided to look further into the history behind St. Valentine’s, and the so-called “love holiday.” Although the true story of St. Valentine’s Day remains a mystery, history shows that the month of February has always been linked to celebrating romance. Traces of Christianity and Roman traditions have been associated with the holiday. According

Before his death, it is assumed that he wrote his final love letter signed, “From your Valentine.” A common expression still used today. Although history shows that a man named Valentinus was in fact martyred on February 14th, the legend behind his life supersedes fact. Regardless of which legend you believe, Valentine is seen as a heroic figure and an overall romantic. His reputation allowed Valentine to become the most popular saint in England and France around the middle ages. By the 18th century it was common for people to exchange hand written love notes, or small tokens of affection to their loved ones on February 14th. By the 1900s the printing press was in full effect, and printing cards began replacing written letters. end up communicating with me. It’s sort of like being a “house whisperer.” Some houses become quite chatty and others get down right nasty. Last month in Scottsdale I met a house that was a real screamer.

Everything, it seemed, was grouped into “three’s” – Three pillows on the couch; three paintings over the fireplace; three cookie jars in the kitchen; three candles on the table, etc. When I asked the owner if she was in a triangle relationship she looked at me like I was a carnival sideshow freak but finally admitted she was in love with two people at the same time. I reminded her of a few examples in literature: The Phantom of the Opera, Wuthering Heights, and who could ever forget Sex in the City when Carrie Bradshaw was in love with Big and Aidan (I never did figure out who to root for in that one). Books and movies feature love triangles because a lot of us can relate to having feelings for two different people at the same time. But is it actually possible to love two people at once? “The answer is a resounding yes,” says Debra Silverman, a psychotherapist for over 35 years in Boulder, Colorado. “Of course we can love two people at the same time. Love is not jealous, humans are.” I agree and here’s my stab: humans will always push boundaries, explore, and devise new ways to connect with each other emotionally and sexually. And because we are complex beings it is possible that two people can appeal to us as we grow and develop. Naturally we might be drawn to people who complement different aspects of who we are. It’s possible to love two people at once because you can love them in different ways. Each relationship between two people is absolutely unique. There’s no way to love anyone the same. You love each person differently because of who they are and the uniqueness that they draw out in you. Physical touch is not required because we fall in love with their courage, intelligence, passion, sincerity and the ability to move and be moved by subtleties of the mind and spirit. They remind us of every good day we’ve ever had. Every summer spent in grass. Every sunrise. Every sunset. They feel like home. And when they speak, it’s like someone slowly plucking the stings of a guitar, a sadly beautiful song, all their own. Relationships are always a spiritual practice because love has a part to play in the destiny of every soul. There is a path at the heart of each love connection; each has its own karmic blueprint. God, or the universe, or whatever one chooses to label the great systems of balance and order, does not recognize Earth-time. To the universe, four days is no different than four billion light years. Love is measured in its effects, how it transformed you, not how long it lasted. Sometimes

the longest connections yield very little growth, while the briefest of encounters have the ability to change your life. Real connections never die; they may go to a secret place, stay there warm and all curled up. They can be buried or ignored or walked away from but never broken. If you’ve deeply resonated with another person, the connection remains despite any distance, time, situation, lack of presence, or circumstance. Real connections live on because they live inside of us. But this concept may or may not be the raison d’etre for all couples. When I asked my husband he said, “Sure, you can love two people at the same time, anything is possible.” His response makes me think … I may want to listen to my own house.

or most kids right out of high school, the next big step is getting ready for college. For Justin Maese his step has brought him closer to his dream in Major League Baseball.

Maese was drafted as a pitcher, just three days after he graduated high school, as a third round pick by the Toronto Blue Jays. With his first year a rookie

coming to an end, Maese reflected back on how the last year changed for him in and out of El Paso. “After being selected my life changed instantly,” he said. “In less than a week I was living on my own on the other side of the country. At first, it was difficult adjusting to my new lifestyle but I ended up learning to love it.” Maese added that being part of the majors helped him improve his skill set, giving him the best stats on the entire team, which lead him to be awarded MVP. He is also the number 8th prospect in the Blue Jays organization. “I really got to learn a lot more just by watching my teammates,” Maese said. “As far as games go, I adjusted really quick on how to pitch against other teams. I had to change my pitching style to be ahead of the competition and it worked out fine. I know I couldn’t have done it without all the learning my teammates and coaches taught me. This season has taught me to keep moving forward.” Maese’s first season as a rookie was a year he would not soon forget when he was asked to pitch in a playoff game again the Detroit Tigers. “It was a win or go home game and I did exactly what I had to do to win the game,” he said. “Everyone did great that game on both offense and defense and ended up winning.” The Ysleta High School graduate began playing baseball at the age of three alongside his older brother Carlos, who also went to Ysleta. While Carlos was in high school he held all the records in pitching, which is what drove Maese to be the best. When it came time for Maese to step up to the plate, he beat all of his brother’s records. “Growing up my older brother and I were extremely competitive and I’ve always wanted to be better than he was, he said. “Seeing him succeed in baseball pushed me to

February, 2016 do as best as I could and that’s what got me to where I am. Alongside the inspiration he receives from his brother and family, Maese says it is his fans and supporters who have a large impact on his drive to be the best. “When the season was over and it was time to come back home, I had a whole bunch of fans and supporters welcoming me everywhere I went,” Maese said. “It’s an experience I’ll never get tired of. What really impacted me were little kids coming up to me asking for autographs and advice. I’ve had scheduled meetings with some kids and we’ll talk about how nothing is impossible and for them to chase their dreams.” As spring training begins to round the corner Maese will soon head out to begin his second season. For him, being drafted does not mean he can take a break from his continuing hard work.

“I really just want to keep improving,” Maese said. “Seeing how much I’ve improved within a three month season makes me excited to see what more I can do.” Like Maese many years ago, there are kids out there getting their first taste of baseball. I have decided this month to create a very simple but elegant meal that can be prepared in a relatively short amount of time. I don’t usually include many prepared foods, however, these products have been examined for their healthiness and also for the simplicity of creating the meal and the great gourmet taste.

Focusing our attention on love for this Valentine’s Day does not necessarily mean for others only. I want to shine the spot light on a love that is rarely paid attention to. That love is love for self. The reason I chose this very easy meal to cook is because I wanted this Valentine’s Day to remind us that we can enjoy this meal ourselves if we happen to be alone. It is a quick meal to put together and it can also be a very enjoyable memory for you even if you are the only one dining in alone. Being single myself, I often find myself dining in alone and making the most of my experience. It is a great time to remind yourself to treat yourself as you would treat others. Not very often do we celebrate ourselves, buy flowers for our home, light candles for the dinner table set for one, or play lovely soft music. It is very caring and nurturing to ourselves to take the time to enjoy our own company and to recognize how important we really are. Self-love is the first place, I believe, where love needs to originate from. If we are not able to truly love ourselves, then it is truly difficult to love others in the truest sense. So this Valentine’s Day, if you are going to be dining in alone, please make your Valentine’s Day a pleasant event. Remember to realize that you are a special person and worthy of great love, even if it is the love you have for yourself. Bon Appetite! And Happy Valentine’s Day…

Health Sciences Center El Paso partnered with Make-A-Wish® Foundation

of North Texas El Paso Regional Office to give children facing life-

threatening medical conditions a Christmas party. The Foundation grants

the wishes of children with life-threatening medical conditions to enrich the

human experience with hope, strength and joy. Majority of wishes fall into four

categories – “I wish to go;” “I wish to be;” “I wish to meet” and “I wish to have.”

“[The party provided] a special opportunity for medical students to get to know

these incredible children and at the same time provide a service that will hopefully

bring joy into their lives during a trying time,” said Crosby Rock, Oncology Interest Group President.

The event held December 12 included holiday activities such as building a gingerbread train, watching the Disney movie Polar Express and an appearance made by Ana and Elsa from Disney’s Frozen. Almost 20 children participated in the event. “We hope that this event will bring many smiles to the children, help them laugh, make friends and enjoy the Christmas season,” said Dana Galvan, Oncology Interest Group Secretary. “We also hope that parents will feel the support of the medical community and that it may give them strength and hope to keep going.”
