“I love what I do,” said Walker. “I really enjoy the policy work and the intricacy of immigration law; I’ve been fortunate to do what I like.” That love for immigration law, or even being an attorney, weren’t always on the radar. She shared that she didn’t have a clue as to what she wanted to be. Her father was a dentist and her mom had a degree in speech therapy. Walker graduated college at the top of her class and wanted to be a Rhodes scholar. While she was selected to compete for the scholarship by the university, she was not successful in being chosen. Not sure of what to do next, her professors suggested that she go to law school. “It was stumbling happenstance that I ended up being a lawyer, but I’ve really enjoyed the part of the profession where you can apply law to fact to try and reach an objective to help somebody; that part is awesome,” she said.

After graduating from law school, Walker came to El Paso to do international tax work. It was after her first year that cross-border situations arose, and companies needed to transfer people into the U.S., when she started working on business immigration matters. Her dedication to her immigration law specialty and love for the city grew quickly. “I have been blessed to be from here because it is a true immigration law center. We have the largest visa processing post in the world at the U.S. Consulate in Cd. Juárez, a field office headquarters for Customs and Border Protection with multiple ports of entry, a field office of U.S. Citizenship and Immigration Services, and detention and removal operations of US Immigration and Customs Enforcement, as well as immigration courts.” She’s served on numerous boards and legal and business associations, including the US Foreign Trade Association. As president, she spent four years working on getting the first dedicated commuter lane in El Paso. In addition, she served as Chair of the Greater El Paso Chamber of Commerce. She also served as the former national president and general counsel of the American Immigration Lawyers Association (AILA), which currently has over 14,000 lawyers as members. She was also Chair of the Exam Committee for the Texas Board of Legal Specialization for Immigration and Nationality Law. When asked what kind of impact living on an international border has made on her career, the answer was immediate—great depth and experience. “The application of immigration law and policy, you see it day in and day out. That depth of experience you just can’t find in the interior of the United States,” Walker explained. “Everything that hits on the application of immigration policy and law are here, so we are a great laboratory for someone who is going to focus on immigration. I have a greater, I believe, appreciation for all the different ways that immigration connects across agency levels than you would have if you were in the interior of the United States, it’s been a great educational opportunity.” Walker’s recognitions span back 25 years, her most recent by Chambers USA (a renowned research organization) in May when she was singled out nationally and statewide in immigration; and in April when she was ranked in Band 1, the highest band rating possible. She is one of 11 lawyers in the United States awarded this ranking for expertise in business immigration by Chambers Global. She has been ranked in Band 1 by Chambers Global and Chambers USA for several consecutive

s I sat in the reception area of his office for the interview, it was a great opportunity to see, up close, the law firm of Anderson, Anderson, Bright and Crout, in action. Even on a Friday afternoon, there is the hustle and bustle of lawyers diligently responding to the needs of their clients. It was worth the wait. An interview with Steve Anderson is much more than a question-and-answer session. It was more like having coffee with an old friend, a conversation about life, about experiences, and about the importance of learning. He is very easy to talk to and made me feel comfortable. With all of his success and accomplishments and involvement in the community, he is genuine and very down to earth.

Anderson, a shareholder in the law firm of Anderson, Anderson, Bright and Crout, is a 1975 graduate of Coronado High School. He received his undergraduate degree in Government from the University of Texas at Austin in 1979, then went on to pursue his law degree at Texas Tech School of Law. He continued his education by earning yet another degree, a Masters of Law in Taxation, in 1986 from Georgetown University School of Law. As if his vitae was not full enough, in 2015 he went back to school to earn a Master of Science degree in Bible and Ministry from Lubbock Christian University. When he is not on the

We can assume one of two things: either our forefathers knew how to have fun or too many of them got a bit carried away and surpassed some limits. The funny thing is, some of these laws are still in effect today. Here are some of the craziest laws (past and present) across our homeland.

In Wyoming, it is illegal to harm or take a fish with a gun.

TOMORROW Her theatre resume includes playing Margot in “The Diary of Anne Frank,” portraying Laurey Williams in “Green Grow” the Lilacs and ruling as the King of France in “King Lear.” For those of us that grew up (or had kids that grew up) watching great 90’s television shows, you should remember the show, “Boy Meets World” (and the great love story of Corey and Topanga). Almost a decade later, Disney decided to create a spinoff show called, “Girl Meets World.” Corey and Topanga now have a daughter, Riley, who the show revolves around. In Season 3 Episode 4, which aired on June 17, Anahi Bustillos plays Riley’s Spanish teacher. “[She was] a strong role model,” Bustillos says of why she liked playing the character. Bustillos, who grew up watching “Boy Meets World,” said working with Ben Savage (Corey Matthews) was great. “I definitely told him and Topanga that I watched their show.” Going through rehearsal in front of the 30 people that were part of the network, Bustillos found that she had the confidence to be there and perform. The show, which is taped in front of a live audience, was rehearsed and performed in one week’s time. It’s hard work. She reassures me that there is fun in between, but the hours are long. Bustillos has also been a guest star on “CSI Miami,” “Medium” and “Up All Night.” She has been a co-star on ABC Family’s “Greek” and Showtime’s hit TV show, “Shameless.” If you watch her in “Girl Meets World” and then switch to her more dramatic TV shows, you can see that the actress can play many faces and emotions.

be (but often is) synonymous with boring. “Casual Fridays”

is a Western term that was created to give the professionals a break from

traditional—and conservative—suits. The cultural act was picked up all over the world as a trend, but the act of designating a single day to

In these times, when more and more jobs are cropping up in the creative,

up. Gabriel Valencia and Andres Romero, owners of Kaedama Food

Bus, are here to revamp that image with a fresh take on an old standby.

Valencia explains how the idea was accomplished:

“The idea [to open up the food bus] kind of came to me and my partner at the same time. The idea was actually incepted on Halloween of last year. We were just hanging out together and he [Romero] had just bought the VW bus that’s now our food bus. We’d seen a few pictures online of buses nationwide that had been converted into food buses. We decided it could be a thing for us and we made it happen.”

Kaedama, which is Japanese for “a second helping of noodles” can be found parked outside Monarch and DeadBeach several nights a week. The menu consists of four different Ramen noodle bowls. Each bowl is made with simple ingredients; however, this simplicity belies the elegant, complex flavors of the different broths, which infuse each dish with a savory and unique flavor. “Our best selling [bowl] is the Tonkotsu; it’s the most traditional Japanese Ramen we have on our menu,” Valencia said. “If you go to a Ramen house in Japan, you’re more than likely going to have a bowl of Tonkotsu, which is pork broth Ramen.” Another favorite is the El Ramon, a nod to the ever-popular traditional Mexican soup, posole. Valencia and Romero have transformed the dish by replacing the hominy with noodles.

September, 2016 When the two first started Kaedama, the menu consisted of mostly Ramen-based soup dishes. They then decided to add some lighter fare for more variety. The addition of a burrito and a sandwich added a new dimension to the original offerings. “At first it was going to be just Ramen, but because of the summer and how people might not just want soup, we started adding other things like the sushi burrito and the Banh Mi sandwich,” Romero said. The sushi burrito is simply a huge sushi roll, generously stuffed with sushi rice, carrots, cucumber, cabbage, cream cheese, avocado, spicy mayo and the choice of tofu or crab. The Banh Mi, which is somewhat of a departure from Kaedama’s Japanese theme, is a traditional Vietnamese sandwich served on a roll and filled with an Asian slaw that consists of carrots, cabbage, pickled daikon [Asian radish], sesame oil, spices and your choice of tofu, crab, or pork belly. The energy of an artist is fascinating. As soon as one enters the room, the energy is altered from calm and collected to a freer, more eccentric vibe. Something about the unrelenting coolness of an artist’s vibe is infectious and invigorating. Christin Apodaca, 26, is an artist from El Paso who exudes an exhilarating energy. She maintains her cool composure as she sits in the leather armchair across from me. She has a relaxed look, wearing a blue-and-white baseball tee, sand-toned shorts, and caramel-colored moccasins. Her hair is pulled up into a large bun to complete the look. Christin tells me she realized her talent in high school: “That was when I really realized that

September, 2016 She questioned how someone she hadn’t known well enough could have so much faith in her and her work when she herself couldn’t comprehend it; that was the night she changed. Her first opportunity came the same day as David Bowie’s death. Convinced by the perfect opportunity to get her artwork recognized, her first paste was at the Monticello TI:ME building at Mother of Pearl. Chris proudly displayed her first sticker of Bowie himself- a pinkish tone in his face, with deeper pink tones to note the shadows, and the iconic red and blue lightning bolt running across his face.

After high school, she attended UTEP and UNM in Albuquerque, studying studio art in both schools. It wasn’t until after she graduated and returned home that things began to come together for her artwork. “I needed to get back into the creative time and place,” she states. Christin returned to Creative Kids, a non-profit educational community-based art agency. She volunteered in exchange for supplies to satisfy her artistic needs. After a couple of months, she was asked to become an employee. Two years later, she gleefully continues her career. Although she enjoys her job, she admits her personal work has suffered. “I would just put it back into work.” It would always be something that she could show the kids. “Less personal work and more about work,” she says. A New Year’s resolution was how she decided to make herself known as an artist. “In 2016, so many people are going to know what my art looks like, know what my face looks like, who I am, what I make, why I make stuff,” she says with elation. Behind her newly found determination stood a good friend of hers that she met this year upon her return from New York. Taking in the street art scene with photos of her work, and the exposure of Instagram, she connected with this new friend. “He really believed in the things I was making,” she says. www.thecitymagazineelp.com

As the fitness industry gains popularity in American culture, more research is being done to debunk those fitness myths we have all heard in the past. Here’s the top five fitness myths busted!

Myth 1

You can’t burn fat and build muscle at the same time. While these two processes are different, they can actually be done at the same time with the proper diet and exercise routine. Research has proven that people who are on a low-calorie, highprotein diet and perform an intense weight lifting program lose body fat while gaining muscle. When weight lifting, you are tearing apart muscle fibers that afterward need to recover. Since your body needs to work hard to recover for up to 24 hours after a weighttraining workout, you are burning fat as well!

Myth 2

It doesn’t matter what you eat, as long as you restrict the calories. The saying is true that you are what you eat! Sure you can lose some weight from decreasing your calories, but you won’t look as good aesthetically. High protein, low carb, moderate fat diets are the best way to lose weight and to look hard and tight. A low calorie diet will only make you look “skinny fat,” not lean and toned.

Myth 3

Lifting weights will make women bulky.

Not true! Women naturally have less muscle tissue in their bodies, and produce a lower amount of testosterone than men, so even if you’re a girl lifting heavy weights, you will not turn into a female Thor. You will, however, gain a tight and toned physique! The only way some of these women you may see on social media or in magazines that have huge muscles, have this size, is through taking supplements like steroids.

Myth 4

Kids can’t weight train because it will stunt their growth, and it’s pointless anyway because they don’t put on muscle. Recent studies have de-bunked both of those myths. Studies now show that after puberty is the perfect time to have your child start weight training because it doesn’t stunt their growth, but instead it helps with their coordination and strengthening the connection between their nervous system and muscles. But, to be safe, it is best for a child to start with a personal trainer so that someone is teaching and watching to make sure they have good form.

Myth 5

It’s good to do meal replacements with protein shakes or protein bars. Nope. Real food is always best. Nutritionally speaking, shakes and bars never measure up to the nutritional value of real whole food. They tend to contain large amounts of refined sugars, artificial ingredients and fall short of the calcium or fiber that whole foods contain. Not to call out any companies, but there are some companies out there that claim to provide weight-management through meal replacement shakes. The truth is, by choosing a “short-cut” you are never going to really force yourself to make healthy choices or exercise regularly, so it’s not

Sweet and Russett Potato Onion Chile Pa Fritas Serves: 6-8

Ingredients: 1 large organic sweet potato 1 large organic yam 2 large organic russet potatoes 10 button mushrooms 1 large organic sweet onion 1 heirloom tomato 1 small can organic hatch chopped green chili Sea salt to taste Black cracked pepper to taste Directions: Scrub all the potatoes and then poke tiny holes. Bake at 350 degrees, until they are medium done (about 45 minutes). Remove from the oven, peel the skin off and chop the potatoes into 1-inch squares. Place in a large bowl and set aside. Wash the mushrooms and slice into 1-inch pieces and place into the same bowl as the potatoes. Cut the tomatoes up into small pieces along with the onion and place them into the large bowl. Season all the vegetables with salt and pepper to your liking and place all the contents of the bowl into a large skillet with a small amount of Irish butter and begin to sauté until the potatoes and other vegetable are at a semi-soft consistency. Place the sautéed potato mixture into an oven-safe baking dish and just warm in the oven until you are ready to serve. Salsa sauce may be served along with this entrée. www.thecitymagazineelp.com

the age of 50 were diagnosed with ovarian, breast, colon and/or endometrial cancers. Even more

cancer, many of which are inherited. I often asked myself why so many Hispanic women under interesting was that fact that some of these mutations were thought to be specific to certain founder populations in Europe, like those of Ashkenazi Jewish ancestry. It turns out that approximately 5-10% of cases of hereditary breast and ovarian cancer (HBOC) have a strong hereditary component, 15-20% are “familial”/multifactorial (genes and the environment) and 70-75% are thought to be sporadic (simply put, just happen). The same is approximately true of hereditary colorectal cancer, some of which may present with ovarian or endometrial cancer (Lynch Syndrome). Founder gene mutations from European ancestry can be traced historically to immigration or migration responses to political or world war events. So, what does this have to do with me, you ask? Nothing really, unless you were diagnosed with a specific hereditary cancer or one or more of your immediate family members has been diagnosed with a hereditary cancer.

What are the red flags to look out for? Patients meeting one or more of the following Red Flags should be evaluated for HBOC: • Breast cancer before age 50 • Triple negative receptor breast cancer • Personal or family history of: - Ovarian cancer - Male breast cancer - Two primary breast cancers - Ashkenazi Jewish ancestry with a HBOC-associated cancer (ie. Pancreatic, aggressive prostate) - Breast cancer with two or more relatives with a HBOC-associated cancer at any age - A previously identified HBOC mutation in the family 128

may have a 50% chance of inheriting these gene mutations. Yes, 50%! Then what? Genetic cancer testing is now done with multi-gene panels from various companies through blood or saliva. Most of these gene mutations are “actionable,” which means some management options are available. Most include some form of cancer surveillance, for example, annual

breast ultrasounds combined with MRIs for high-risk HBOC patients, or frequent colonoscopy for Hereditary Colorectal Cancer syndrome. Depending on counseling and patients’ wishes, some proceed with a prophylactic double mastectomy (removing both breasts) or bilateral oophorectomy (removing both ovaries), like Angelina Jolie brought attention to, in order to prevent breast and/or ovarian cancer. At RGU Cancer Center, we offer not only genetic risk assessment, but also genetic testing through multi-gene panel platforms for patients and family members. If you test positive for a gene mutation, we proceed with surgical management for gynecological cancers or refer you to the appropriate specialists for breast or colon cancers. Further, we follow NCCN (National Comprehensive Cancer Network) guidelines for cancer surveillance for most inherited gene mutations.
