• 3 cups frozen corn • 2 large eggs • 2/3 cup milk • ½ cup buttermilk • 1 (15 oz) can pumpkin puree • 1 ¼ cups flour

• 2/3 cup fine cornmeal or corn flour • 1 ½ tbs baking powder • 1 ½ tsp salt

• Oil for frying • Syrup for dipping and pow dered sugar for dusting

In a medium bowl beat the eggs until frothy. Add the milk, buttermilk and pumpkin puree and whip until smooth. Gently stir in the corn. In a separate bowl sift flour, cornmeal, baking powder and salt and stir dry into wet mixture. Heat a cast iron skillet or other heavy bottomed pan and fill to one inch with the oil heated to 325 degrees.

Pour small scoops of the batter into the hot oil, carefully pressing each one with the back of your scoop. The batter is a bit dense due to the puree so it needs to be flattened out to cook evenly. Cook for five minutes while turning a few times so they brown evenly. Place on paper towel. Serve with powdered sugar and pure maple syrup.

In a small mixing bowl whisk together flour, baking powder and salt. Set aside. In a separate bowl whisk together yogurt and 1 egg; whisk until well combined. Whisk yogurt mixture into flour mixture; set aside. Slice apples and using a round small cookie cutter, or a knife, cut “rings” out of the middle of the apple slices. In a large deep skillet, heat the oil over medium-low heat to 375 degrees. Dip the apple rings in the batter then place in the skillet and cook in batches, 1 to 2 minutes per slice, or until golden, turning once to cook the other side.In a bowl or plate combine sugar and cinnamon; mix well. Sprinkle sugar mixture over the apple rings while still hot. Serve immediately.

• Dark Chocolate Kisses

• 2 tsp. Pumpkin Pie Seasoning

• Caramel Sauce (if desired)

• 1 tsp. Vanilla

• 1 cup all-purpose flour • 1/4 teaspoon baking powder • 1/4 teaspoon salt • 1 cup plain yogurt • 1 large egg • Canola Oil for Frying • 1/2 cup sugar • 1 to 2 teaspoons cinnamon • 6 cooking apples (Granny Smith)sliced into 1/4-inch thick slices

Chop up the white chocolate so it melts easier when added to mixture. Over low to medium heat, whisk the Half and Half, Pumpkin Puree, Vanilla and seasoning together in a sauce pan. Bring to a slight boil. Add the white chocolate to the mixture and whisk until completely melted. Drop a Chocolate Kiss into each mug the pour the mixture into the mugs and garnish with Whip Cream and sprinkle with pumpkin pie seasoning. Drizzle with caramel if desired. Enjoy!

Directions: 1. Preheat oven to 350 and line a baking sheet with parchment paper. 2. In a large bowl mix all ingredients one at a time, kneading well after each addition. 3. Knead dough into ball and roll onto a floured surface 1/4 inch thick. Cut with a cookie cutter. 4. Place on prepared cookie sheet and bake for 10 to 15 minutes. Cool and refrigerate. Makes 5 to 6 dozen small circles.

FROM ANCHORAGE FIRE DEPARTMENT’S FIRE STATION 11 - EAGLE RIVER The leaves have fallen off the trees and the weather is getting chilly. Our transition from fall to winter is here and we need to be ready for it. Here are a few suggestions as well as a few safety tips:

FOR WHEN YOU’RE OUT AND ABOUT • Dress your kids in reflective clothing. Help them be seen when they’re out in the dark. • Stay off of thin ice! This includes keeping your pets off of thin ice also. • Check your tires. Make sure your tires are ready to safely transport you and your family on icy/snowy roads during our long winter.

FOR WHEN YOU’RE HOME • Check that your smoke detectors and carbon monoxide monitors are working properly. Change the batteries and test them out so you know they work. • Have your furnace serviced. Doing so could reduce your energy bills, reduce the risk of carbon monoxide poisoning, and reduce the risk of fire. • Check your emergency kits. Keep extra flashlights and batteries on hand, and if you use any medication, be sure to have a week’s supply just in case.
