here is a generation of people whose heartbeat is to see a changed world. It’s a generation that’s dissatisfied with the status quo and is actively rising to the challenge of transforming the world through tangible expressions of faith and love. These people are participants in The World Race. The World Race is a grand mission trip of young people between the ages of 21 and 35, who dedicate 11 months to visit 11 countries and spread love, guidance, and aid to people in the chosen places. Sure you may not see the romanticism of sleeping on the ground, eating undistinguishable items, or carrying all your worldly possessions on your back. Many young people would do that and more for the chance to help those less fortunate. Each day on The World Race is a little different. Some days are jammed packed with construction, Vacation Bible School, building relationships with orphans, or praying for the sick at a hospital. Some days are slower — shopping for groceries at the market, cooking for your team, and spending time praying for the community you walk through. Regardless of the pace or the activity, every day will be focused on being a part of mission work. One local young woman, Nicole Bouza, will be traveling to four continents with her team “Brazen Hearts” this

month. Bouza’s journey with The World Race will begin in Honduras and follows with Guatemala, El Salvador, Albania, Bulgaria, Malawi, Zambia, Mozambique, Thailand, Cambodia and ends with Malaysia. For the past two years, Nicole has dedicated her life to studying and giving back to her community, while attending the Miami Dade Honors College, Wolfson Campus. After many long nights of studying and completing projects, she decided to pause her academic career and put her entrepreneurial passion to the test. Since the shoe line TOMS began, Nicole has dreamt of starting a business that gives back to those less fortunate. By blending the business world filled with innovative ideas and her philanthropic mind set, Nicole has molded her famous Bouza Brownies into her ideal start-up business. When hearing back from The World Race Mission Trip almost one month before the rest of her transfer College/Universities gave a response, it was clear to Nicole that now was the perfect time to pause everything and begin a new chapter in her life. Bouza Brownies came to be, simply for the purpose

of helping Nicole raise the funds she needs for the mission trip launching in January 2014. “It is a chance to start a business, travel, and give back; a 3-in-1 combo,” Nicole says. Luckily for her, the Bouza Family is excited to see Nicole grow during this time, as well as continue her family business once she departs. Babson College is deferring Nicole’s acceptance for when she returns, in the spring of 2015. There, Nicole will be able to continue her entrepreneurial studies and earn her bachelor degree. The World Race is a program of the inter-denominational organization Adventures in Missions (Adventures). Adventures is an established missions organization that has been around since 1989, sending people from different churches and backgrounds all over the world on life-changing mission trips. weekend fun History’s Most Playful Time: Art Deco Weekend 2014

hen you think of Miami, perhaps you think Miami Vice; fast cars, blue skies, a little Armani, and a lot of action. Or maybe you just think palm trees and Cuban coffee. Regardless of the things we tend to associate with living at the very bottom of this sunshine-filled state, there is often a more creative part of our culture that we forget to think about, and that is the Art Deco. Actually, the Art Deco District served as the backdrop for Miami Vice, and the vibrantly colored, geometric buildings that paint Miami Beach became recognized internationally, contributing to the visually-striking Deco style that Ocean Drive commemorates every January. The Miami Design Preservation League initiated Art Deco Week in 1978, thus, this year will be marked as the 37th annual Art Deco Weekend, and on January 17th-19th, South Floridians will gather on Ocean Drive to take a step back into the past and find themselves surrounded by timeless art. This year, the event will be a tribute to 1930s pop culture and history, showcasing fashion, music, film series, antiques, automobiles, and even a vintage toy exhibit. All of which featuring icons like Shirley

Temple, Mickey Mouse, and popular games of the 30’s era like Monopoly and Scrabble. Art Deco 2014 will also remind those of us who already know, and educate those who don’t, that the 1930s was a time when Girl Scouts began selling their famous (or infamous) cookies and Legos became all-the-rage. Thus, this year’s exhibit will serve as a tribute to “History’s Most Playful Time,” and rightfully so. All showcases considered, I wouldn’t forget the “Arf Deco Dog Parade” (for those of you who have young children, I highly recommend you do not pass up the chance to watch frivolously decorated dogs parade around with their owners in matching costumes). Basically, it will be an extravagant art-filled blast from the past that everyone in the family can take part in. We forget living down here in Suburbia that Art Deco is a part of our great culture and if tourists can embrace all Miami has to offer, then maybe we should, too. Perhaps revisiting it once a year will help to alleviate some of the humdrum we experience after the holiday excitement passes, or perhaps, it will simply inspire us to be more creative as we ring in the New Year.

And locals enjoyed a one-of-a-kind fundraising event that in its first year raised $30,000 for Pinecrest’s five public schools. The Fashion in the Gardens Luncheon and Fashion Show would not be possible without sponsors and silent auction donations by renowned artists and generous merchants that last year included Williamson’s Automotive, Macy’s and Phil Fung Studios. The event is slated to take place for the second consecutive year in the picturesque Pinecrest Gardens, from 10 a.m. to 3 p.m. on Friday, February 28, 2014. Pinecrest resident and parent Ceil Fitts knows that a vibrant school system is the foundation for a good community. “Fashion in the Gardens is a wonderful example of how local businesses and the Village of Pinecrest truly show their support for the five Village schools. The funds generated by the event help ensure that the quality of local education will remain strong,” said Fitts, who is the Palmetto High School Parent Teacher Association president. This year’s goal is to raise $60,000, doubling last year’s proceeds. In its first year, the event drew over 400 guests and provided an excellent opportunity for business owners to market themselves to a receptive and loyal group of patrons. The money raised goes to educational programs, classroom supplies, campus improvements, and technological resources in Palmetto, Pinecrest and Howard Drive Elementary Schools, and to Palmetto Middle and High Schools. Some 6,000 students benefit from the proceeds 14

of this event. Due to the current state of the economy and reduced allocations from the State of Florida, the need to raise money has never been more critical. Depending on the sponsorship level, sponsors will get recognition at three major Pinecrest events benefiting Pinecrest public schools, an ad in the event program, and recognition in the Pinecrest Tribune, social media and newsletters. Other fundraising events for Pinecrest’s five public schools are the Rotary Club of Dadeland and Coral Gables Golf Tournament held in the Biltmore Hotel and Taste of Pinecrest in Pinecrest Gardens. Mayor Lerner helped raise funds for a Smart Board to be placed in each of Pinecrest’s classrooms through the smARTy Dog campaign and continues champion education initiatives in Pinecrest. “It is a shared vision for parents, local business owners and Village government for our schools’ reputation for excellence to attract young families to our community,” said Lerner. “It truly takes a village to raise our children.” Fashion in the Gardens Luncheon and Fashion Show was the brainchild of the Pinecrest Education Advisory Council which is led by Mayor Lerner and provides a forum for discussion, problem solving and seeking creative opportunities and resources to support and enhance the area public schools. Beauzos in Tribeca and Tasca in Soho. He won Time Out New York people’s choice award in 2006 for best tapas chef at Las Ramblas and left his mark on many restaurants such as Cuba Libre, Savor, Matador Bistro Latino and Euzkadi. Cooking assignments took him around the world from Sydney, Australia to Mexico City, and full circle back to Miami in 2011 where he has work and consulted for several restaurants.

asta Del Giorno is proud to welcome Chef Fernando Echeverri as their newest head chef. Chef Fernando is from Pamplona, Spain in the Basque Country bordering France at the Pyrenees. His parents entertained a lot and after his mother returned from the Cordon Bleu in Paris, he became her “sous chef.” A friend of his father was a chef at a hotel, and as a youngster, Chef Fernando was mesmerized by the magic of the saucier. At the age of 10, he first emulsified eggs, butter and lemon to make Hollandaise sauce and became fascinated by the alchemy of the process. Chef Fernando’s family moved to Miami Beach from Spain when he was 14. Fishing was plentiful in those days and he would spend a lot of time on the First Street pier catching big fish and spearing even larger fish and lobsters along Government Cut. Fernando was the seafood provider for his family and his mother would prepare delicious seafood dishes with his catch. Chef Fernando held a part time position as a prep cook in a diner by on Meridian Avenue where he learned the staples of American comfort foods. Since then, Chef Fernando has worked in many facets of a kitchen in his seasoned history as a rising

chef, including a prep cook at Epicure Market on Miami Beach, a sales clerk at Maison Glass in New York, a chef garde manger in charge of cold dishes, also in New York. He later trained at the New York Restaurant School and completed internships in Gascogne, France under renowned chef Henri Daguin where he become a saucier and expert in charcuterie, and in Spain with Pedro Subijana, one of the top chefs in San Sebastian. He then worked his way up in the New York restaurant scene, introducing tapas at

e are reminded during the holidays of what a great place Palmetto Bay is for families. The Menorah Lighting at Coral Reef Park on December 1 sponsored by Chabad House kicked off the holiday season. The candy Menorah was a special treat for the children following the lighting ceremony, traditional games and dancing. Snow flurries arrived in Palmetto Bay just as planned at the 4th Annual Holiday by the Bay event at Ludovici Park on December 9, 2013. Christmas lights, carnival rides, children’s performances, and pictures with Santa filled the day. Well over 2,000 people enjoyed the event topped off by a blizzard of snow just as dark settled over the park.

The brightly lit Holiday Boat Parade sponsored by the Canal Boating Association left port at sunset from Coral Reef Park and docked at SW 184 St on December 21. The Parade winds through the Palmetto Bay canal system each year collecting non-perishable foods. The food drive in support of the Chapman Partnership was aided in the effort by Palmetto Bay who collected food at Village Hall. The business of the Village continued through December with the Town Hall Meeting on the Proposed North Side Fire Station on December 11th. Approximately 75 people turned out to discuss the need for emergency/fire services. The December Council Meeting included appointments to the Education Advisory Board. The Zoning Meeting of December 16 approved the site plan for the $30 million dollar South Motor BMW project. The project includes a new park as well as street and landscaping improvements to benefit the residents of the area. The Committee of the Whole Meeting on December 17 centered on a detailed presentation by the Down Town Redevelopment Task Force. The Task Force, at work since May, presented the planning program for the US1 business area. This important effort will bring better businesses and services to our downtown area while shifting the burden of taxes from our residential areas to the commercial. To all my Palmetto Bay neighbors, I have great hopes for the New Year with the fresh start that it brings. My wishes for everyone are that the New Year brings the peace and happiness that you desire. school news Gabriel Taylor recognized in Sports Illustrated Kids’ “Fab Five” for his success in athletics

abriel Taylor, a sixth grader, at Gulliver Academy has been recognized as one of Sports Illustrated Kids’ “Fab Five.” Taylor earned this honor in large part because of the success on the football field for the Gulliver Raiders. He led the Raiders to a 6-0 record this year and was voted the team’s Most Valuable Player. Playing running back for the Raiders, Gabriel gained 900 yards and 13 touchdowns. In addition, to dominating the offensive side of the ball, Gabriel found success on the defensive side playing safety, where he recorded 60 tackles and broke up 10 passes. He takes special pride in playing the safety position because it is the same position his late brother, Sean Taylor, who led Gulliver to its first ever state football title in 2000, played for the Washington Redskins from 2004 to 2007. Gabriel also wears the number “1” in memory of his brother. Gabriel’s achievements in Pop Warner football and AAU basketball also contributed to his selection to the “Fab Five.” The mentality of giving his all on the field helped Gabriel lead the Florida City Razorbacks to a Pop Warner title in 2012. In basketball, Gabriel averaged 15 points and 14 assists a game in 2012-13 for his AAU team. Gabriel Taylor will definitely be a player to watch!

school news Riviera Schools Students in the Giving Spirit

ecember is the month of giving. In this spirit, Riviera Schools delivered thousands of toys and infant needs to various charities throughout South Florida. Student Government representatives and National Elementary Honor Society members from Riviera Day School collected more than 850 toys, all donated by Riviera families, and distributed them to select needy children in preschool through third grade in the MiamiDade County Public School System. “Our students were grateful for the opportunity to help others. We’re also excited knowing that the children enjoyed dancing and singing with our troop of elves, reindeer, candy canes, Santas, and menorahs,” stated Betty Johnson, Riviera Day School’s Student Government faculty advisor. Through the efforts of Riviera Preparatory School’s Student Government, more than 1,000 toys and infant needs were donated by the student body and delivered to the Chapman Partnership Homeless Assistance Center in Homestead. Chapman Partnership is the private sector partner of the Miami-Dade County Homeless Trust and operates two homeless assistance centers with 800 beds located in Miami and

our smile says more about you than you may think. Actually, most dentists would agree that the mouth is the window to the overall health of the patient. Without healthy teeth, we cannot eat or even speak well. Although most of us are much more conscious these days about what we eat for dietetic reasons, not many are aware that our teeth and mouths directly benefit from eating healthy foods as well.

Water

Not all fruits and veggies, however, are healthy as far as your teeth are concerned. Unfortunately, dried fruits such as dried cranberries and raisins are extremely sticky and adhere to the teeth, acting almost as badly as a highsugar lollipop. The longer they stay on the surface of the teeth, the better the chances for breakdown of enamel and formation of decay. The bacteria in our mouths feed off these sugars, releasing acids that eat away at our teeth and cause cavities. There are also nutritious, acidic foods like oranges and tomatoes that can actually erode enamel and should be eaten in limited quantities or in conjunction with other foods as part of a meal.

Water is definitely one of the most essential elements in maintaining overall health of the mouth and entire body. Fluoridated water is the easiest and most cost effective way of making teeth strong and keeping them that way. However, many of us are drinking bottled water in which the fluoride has been filtered out. Recently, many bottled water companies learned that is detrimental to our health and began adding fluoride to bottled water. Systemic fluoride is critical in depositing strength in developing teeth, which directly assists in prevention of tooth decay. There are many interwoven factors that help maintain your teeth and gums healthy. Limiting added sugar and making intelligent choices with what we eat and drink are extremely important steps to achieving great oral health. Aside from brushing and flossing twice a day, including dairy, fruits, vegetables, protein and plenty of water will help assure you keep your smile healthy and beautiful. And keeping your smile healthy will definitely help promote your overall health.

Calcium & Protein Rich Foods

Most raw fruits and vegetables are powerhouses to promoting great oral health. Aside from delivering important vitamins, nutrients and antioxidants to our bodies, the tougher ones to chew, such as carrots, celery and apples, physically remove plaque from our teeth as we chew them, keeping our teeth smooth and shiny. The smoother our teeth are, the harder it is for plaque (and pathogenic bacteria) to accumulate. These pathogenic bacteria are the culprits for tooth decay and gum disease. The chewing also stimulates saliva production, which essentially helps wash teeth clean in between brushing.

Foods that are rich in calcium and protein are also considered very important in maintaining good oral health. Milk, cheese, yogurt and leafy greens are just some of the calcium-rich foods that help make our teeth and bones stronger and more resistant to decay and gum disease. Meat, fish and eggs are examples of the protein-rich foods that help round out a balanced diet. The phosphorous in protein and the calcium found in these foods work in conjunction help keep enamel strong and to remineralize areas of the teeth that may be weakened.
