PRIL HAS ARRIVED, ALONG WITH LONGER DAYS AND WARMER TEMPERAtures. Although adjusting to the time change seemed a bit harder this go around, we’re loving the extra daylight it brings with it. To all the people who enjoyed a spring break, we hope it was relaxing and refreshing. We can’t believe summer is only a few months away. It is such a great time to live in this amazing community that we get to call home. There are new things happening all the time around town, and you can read about some of them in this month’s magazine. To learn more about the Sensory Garden that recently opened to the public at Pinecrest Gardens, see the article on page 14. To better understand and appreciate our environment, take advantage of the Educational Series recently launched at The Thalatta Estate, page 16. Thalatta Estate Launches Educational Series BY ANDREA CARNIERO

ESTLED ON THE SHORES OF Biscayne Bay, away from the hustle of everyday life, lies a unique outdoor recreation area and natural conservation area that provides a glimpse into the unique landscape that we sometimes forget we live next door to. The Thalatta Estate is more than a event space. The 4-acre park on 173rd street and Old Cutler Road is famous for its muchlauded lawn and has become a go-to for memorable wedding receptions thanks to the views and 1925 Mediterranean-Revival Estate, but it also acts as home to some of the most stunning natural environments in the area. The desire to see the community understand and appreciate the environment around them lies at the heart of a new educational program series launched by the Palmetto Bay Parks and Recreation department at the historic property. The program, which launched last month with a presentation by the Institute for Regional Conservation on The Coastal Palmetto Bay and Cutler Bay Habitat Restoration Project, will run through October and feature lectures, workshops and events.
“Being that we’re near Biscayne Bay and close to the Everglades there is a huge focus on educating the community on sustainability and the resources that are out there,” said Saylin Paez, the Village Parks and Recreation Department Events and Programs Coordinator. To that end, the department has partnered with local nonprofit Encounters in Excellence to bring filmmaker Richard S. Kern to the Estate this month for a screening of and Q&A about his film “You, Me and the Sea: Human Impact and the Coastal Everglades.” In the film, Kern explores the transitional estuaries of the Everglades, including coastal mangroves, seagrass beds and barrier reefs. Looking forward, villagers can expect lectures on native landscaping, ladybugs and mangos as well as demonstrations on flower arranging and composting. Free, family-friendly workshops on nature photography and bird watching (complete with guided hike through the Thalatta Estate and Ludovici Park) open to all levels. Additionally, the Village will continue its popular (and free) Family Mangrove Kayak-Adventure at the park, taking families out for an easy, 3-hour guided kayak tour by a Nature Posting instructor.

Founded by Boca Raton native and FIU grad P. Scott Cunningham in 2011, and funded by a grant from the Knight Foundation, the festival (run by the nonprofit of the same name) takes place throughout the month, with events taking place everywhere from Soundscape Park on Miami Beach to a Liberty City Elementary School. Though the events and projects change each year, the goal remains the same and draws poets and various visual and performance artists from around the globe as collaborators. Projects include: »» Oral Records: Miami public transit riders and employees will share stories of their daily commutes which will then be turned over to a group musicians, poets, theater groups, and dancers, who will “use the story material as inspiration for new creative works.” The works will be performed at the end of April at the YoungArts campus. »» Orchard Villa Elementary: Poet Laurel Nakanishi will lead an eight-session poetry workshop with students from Liberty City’s Orchard Villa Elementary School. The workshop will culminate in a show of student work. »» Poetry Parlor: Throughout the month poems will be snuck into the pages of tabloid magazines in beauty parlors throughout Key Biscayne, Coconut Grove and Little Haiti. »» Secret Sonnets: This project seeks to spotlight the beauty of braille by translating poems into the visual language. Residents can end a short poem and the Miami-Dade mailing address of its intended recipient to Secret Sonnets and have it translated into braille and sent it to that address, along with an alphabet card that will explain the project and how to read the poem. S THE SCHOOL YEAR BEGINS TO RUN ITS COURSE STUDENTS GET WEARY, teachers begin letting up and activities become less demanding. Miami Palmetto Senior High’s PTSA, however, keeps their drive alive and their fire burning all year long. And one alumni has recognized that. From Drive 4 UR School to the new and improved school store, the PTSA continues to seek new ways to fundraise and show their devotion to Palmetto. And although they come up with the innovative elements behind the events they need sponsors such as PHS alumni Christopher Sanderson to make their visions a reality. The 2000 graduate donated $13,500 to the PTSA this school year to build a new testing center in the library – breaking the record for the largest donation in PTSA history. After Sanderson graduated from Palmetto, he went on to receive a degree in PreProfessional Studies at Notre Dame University and then obtain a masters degree from Barry University in Biomedical Science. Following that, he began teaching students how to take the Medical College Admission Test (MCAT) at Kaplan Test Prep. After working at Kaplan for four years, Sanderson decided to open up his own test prep center —and in 2011 Sanderson Test Prep was born. Today the company consists of 20 employees (depending on the time of year) and contains its own test prep facility. “I heard about Palmetto’s campaign for excellence and really appreciated how the PTSA was trying to revamp the school,” he said. “In my opinion, Palmetto is one of, if not the best public high school in the country. I received an amazing education from Palmetto so I was more than happy to make a donation.” Sanderson says the money will go toward remodeling the library and providing new computers for a testing suite in the back of the library. “When the PTSA approached me with this idea it seemed almost too perfect for what Sanderson Test Prep stands for; I was all for it,” Sanderson said. Palmetto plans to feature a new Advanced Placement course entitled AP Computer Science next school year which will require students to have constant access to a fully equipped and advanced computer lab. Sanderson’s computer suite will assist students in this new class and will provide a positive and comfortable environment for online testing. “I cannot emphasize how excited and gracious we are for Mr. Sanderson’s generous donation. The new testing center will be an amazing new addition to Palmetto,” Palmetto Principal Allison Harley said. “We really appreciate the support of a Palmetto alumni local business leader. This is a great example of partnership between public education and the community in order to better our students.” An unveiling and celebration of the donation will be held after school on April 6th in the library. Students, teachers, faculty, parents and community members are welcomed for the ribbon cutting. “As a graduate of the Miami-Dade public school system, I am a firm believer in not spending $ 30,000 per year for a quality education,” Sanderson said. “The students at Palmetto are hardworking, responsible and dedicated and they should have access to facilities of this nature. My donation was a message to emphasize the importance of giving back to education – these students are the future.” Sidney Sterling is a senior at Palmetto High School and a member of the school’s Panther Newspaper staff.

A Greener Education
LOCAL SCHOOLS GO GREEN ON A DAILY BASIS. BY ANDREA CARNEIRO
A
BASIC EDUCATION MAY REMAIN THE SAME--READING, WRITING, ARITHMETIC-- BUT THE TECHNOLOGY that goes along with it is undergoing a major change. Chalkboard? Try Smart Board. Report cards and progress reports? Paperless. And the ubiquitous (and heavy) textbook? Now online. But aside from the technology aspects, these changes are having another impact on local schools and that’s bringing green education into the classroom. According to local nonprofit Dream in Green, schools generally spend more money on energy costs than on books and computers combined. It was this statistic that inspired them to create the Green Schools Challenge, a program that encourages K-12 students, teachers and staff members in Miami-Dade County schools to design and implement energy and environmental solutions at their schools via “Green Teams.” And create they do. From on-site nurseries to recycling programs, local schools are taking sustainability and green initiatives to a new level. Here are some of the green programs taking hold at schools in the area:
PALMETTO MIDDLE SCHOOL
Bringing their dedication to the environment to the community, Palmetto Middle is planning an open-tothe-public Earth Day event on April 22 from 4:00-7:00 p.m. The event will feature the planting of baby trees donated by Pinecrest Gardens, a used book trading post, live entertainment and FP&L solar-powered cars. Two free WE-LAB workshops (a Dream in Green and Miami-Dade Water and Sewer partner program) will help residents better understand how decreasing the demand for energy and water can positively affect air quality and improve the water supply, and the workshops will send them home with a free toolkit including shower timer, water-efficient showerhead, lead detection tablets and more. But the middle school isn’t set on just one night of education. The event highlight will be a ribbon-cutting on a new outdoor classroom featuring PhotoVoltaic (“PV”) systems to give students and the community hands-on experience with renewable energy. The solar panels, which will allow students to observe real-time energy monitoring, will not only provide shade for the classroom, but will aid the school in saving money on energy costs. ““Palmetto Middle’s new PhotoVoltaic System is an extraordinary opportunity allowing our students to observe power generation directly from sunlight,” said PTSA President Linda Dwyer. “ It’s a prime example of the hands-on education leaping from the textbooks and into the real world that sets Palmetto Middle School as a leader in our community. As residents of the Sunshine State, it is particularly relevant that our children grasp the concept of renewable energy and learn to harness the sun’s natural power. The PMS PTSA is thrilled to support our children in gaining such a unique educational experience.” Additionally the school’s Green Team maintains a hydroponic garden, aquatic garden, organic edible garden, and bromeliad garden, received a 2015 grant from SlowFoods, and helped PMS become an Official Watch School by transforming our Emerald Garden into a butterfly habitat.
PINECREST ELEMENTARY SCHOOL
The Pinecrest green committee isn’t afraid to get down and dirty, thanks to PTA and Pinecrest Village funding. The team, led by parents Patrick Karakadze, Teresa Albert and Rush Bowles, will install a working nursery by the school’s outdoor classroom, complete with different stages of plant cycles and greenery of all shapes and sizes. together to create a solar-powered golf cart charging station for Palmetto administration and security guards. The prize money saw $2,000 donated to the school and another $1,000 to Schlactman’s environmental science and solar classes.
SOUTH MIAMI K-8 CENTER
Motivated students brought their environmental education home at the South Miami K-8 Center. The students, about 80 over four classrooms, competed against each other for a total savings of 1,806 kilowatts of energy, a reduction in carbon dioxide emissions by 1.41 tons and an elimination of .45 tons of waste. How? The students stuck to the basics by turning off water faucets when not in use, turning off lights, limiting shower times and swapping regular light bulbs for energy-efficient versions. The teams were honored for their work by Citizens for a Better South Florida and South Miami Mayor Phillip Stoddard during a February city commissions meeting.
PALMETTO ELEMENTARY SCHOOL
Water bottles are the focus at Palmetto Elementary, as they begin the process of retrofitting all the school’s water fountains to fit water bottles. The school plans to record how many bottles are saved by refilling rather than tossing away. In addition to recycling and gardening, the school’s art teacher painted old campaign yard signs to label endangered plants around the campus. the larger plants and trees grow they will be donated to Habitat for Humanity. Outside of the garden, the school recently set up recycling bins in the front of the school and sent notices throughout both the school and Pinecrest Community, eventually collecting more than 2,000 lbs. of electronics that will be re-purposed rather than ending up in a landfill. And continuing their hands-on approach, the school also plans its 2nd annual Pinecrest Elementary Biscayne Baynanza cleanup on April 25, 2015 at Matheson Hammock Park. Last year’s event brought more than 100 teachers, students and parents volunteers.
RIVIERA PREPARATORY SCHOOL
Riviera’s Debby Lichtner says the school is “fully vested in keeping our campuses green,” providing full recycling for paper, aluminum cans and plastic as well as collecting and recycling toner cartridges and cell phones. The campus has also implemented tablets for every student, reducing the need for regular textbooks as the majority of books are now online. Additionally, all notes that the students take are on “OneNote,” a digital note-taking app for mobile devices that eliminates the need for paper.
PALMETTO SENIOR HIGH SCHOOL
Under the guidance of Science Department Chair Pam Schlactman, PHS students were recently awarded a $10,000 prize in the Lexus Eco Challenge. The students, Seniors Ashlynn Dobbs, Meryl Kornfield, Emma (Renzi) Wise and Mark Hellinger and junior William Nunez came

Leewood has been part of a recycling program through the Funding Factory since 2001, recycling not only ink cartridges, but used cell phones and small appliances, earing funding for their media center. Part of the Dream in Green initiative for the past three years, the school has held showerhead and light bulb exchanges, as well as installed a rain barrel for the school garden. Additionally, as a winner of the Samsung Solve for Tomorrow contest in 2013, they, in conjunction with Samsung, held an appliance recycling drive during which members of the school and neighborhood community were able to recycle unused and outdated technology and small appliances.
GULLIVER SCHOOLS
Continuing the recycling trend, Gulliver students have found a new way to put devices to good use. Through Operation Recycle/Refurbish students refurbish computer equipment donated by school stakeholders by reformatting laptops and desktops and outfitting them with new operating systems and school-friendly software. The equipment is then donated to students in the Greater Miami area who would not otherwise have access to it. Student-driven, the school says the process has emphasized collaboration and taught students courtesy and respect for others. Additionally, students within the school are working with Moringa plants to extract nutrients from the nutrient-rich plant and create a dry-leaf/plant-based product to feed communities in impoverished countries where the plant thrives.

S
O MUCH OF HIGH SCHOOL STUDENTS’ AND THEIR PARENTS’ LIVES REVOLVE around college and the applications process. During freshman year, they seem far off. Then, in a blink of an eye, it’s the fall of senior year and it’s crunch time; applications, recommendation letters, essays, and transcripts become a flurry of papers and ideas as students cram to get everything submitted in time. It’s hectic. It’s difficult. It always has been and it always will be. But it’s not impossible; and being prepared (both mentally and with regards to activities, grades, etc...) alleviates the stress of the situation immensely.

Contrary to popular belief, college applications aren’t all about numbers. In order to be prepared for college applications (and to fill all of the empty slots on the common app) it’s necessary to be a well-rounded person. As Harry Nerenberg, the Palmetto Senior High School CAP advisor explains, it’s necessary to “build the total package. It’s not just always GPA and SAT, it’s about what you do in high school.” But exactly what should you do in high school so that, when application time comes around, you are not completely swamped? Or worse, wishing you had done something you didn’t? And how do you make sure that you stand out in the applications process?Here are a few tips: »» Start your own (or simply get involved in a) a community service project or program. Show you are dedicated to the community, both in and out of school. »» Compete! High school is full of the “thons” – Envirothon, Chemathon, etc... and competitions not only show a high level of school involvement, they show passion. »» Make good connections with teachers and counselors. Recommendation letters are a vital part of the college application process, and colleges know when letters are generic. You don’t have to be best friends with your teachers or counselors, but make sure they know you. »» Don’t wait until your junior year to care about grades. When colleges look at transcripts, they see all your grades, not just the ones you earned your junior year. Slacking freshman or sophomore year is a common mistake; don’t make it. »» Research schools early on. Certain schools or programs may require (or strongly suggest that students take) certain courses before they apply to them. You don’t want to wait until you’re looking at colleges to realize what courses you should have added to your schedule. »» It’s not just about involvement; it’s about level of involvement. It’s better to be highly involved in one, two, or three clubs than to be a member of six. College applications are difficult. But a few tips (and some dedication) can make the application process much simpler than it seems at first. Staying up late studying or dedicating a couple hours a week to community service may seem like a bit of a sacrifice now, but by the time applications are due (and when acceptance letters come out) you’ll be grateful you put forth the effort. We say farewell to the Village’s second village manager, and one of our original Department Directors, Ron Williams. Manager Williams was Palmetto Bay’s first-ever director of Public Works until his appointment to Village Manger. He served the village with distinction from 2003 until his retirement effective March 31, 2015. Coral Gables Police: Delivering Gold Standards of Public Safety Services

VERY THREE YEARS, THE CORAL GABLES POLICE Department goes through a rigorous process of analyzing every aspect of its administration and operations. This is a voluntary process of self-assessment, along with community input, in order for the Coral Gables Police to receive accreditation and ratification that it continues maintaining high professional standards in the delivery of public safety services. The process of accreditation is not a simple one: only one percent of all law enforcement agencies in North America achieve accreditation. I am very proud to inform you that the City of Coral Gables Gables Interim Police Department has earned reaccreditation by the prestigious Coral Police Chief Ed Hudak Commission on Accreditation for Law Enforcement Agencies (CALEA), the international gold standard in public safety. The department was awarded its seventh reaccreditation after a formal hearing held at the CALEA Conference on November 22, 2014, in Albuquerque, N.M. The award was presented to our department last month at a City Commission meeting in the presence of city leaders and members of our devoted police force. In order to receive accreditation status, the Coral Gables Police Department needed to comply with 483 standards regarding policies and procedures, management, operations and support services that are deemed essential. One criteria for earning accreditation with excellence requires that agencies be in compliance with a minimum of 90 percent of all applicable standards. The Coral Gables Police Department earned an impressive 97.4 percent standard compliance. This is truly amazing and the most recent from a series of great accomplishments by the Coral Gables Police Department. Receiving this Gold Standard Accreditation with
Excellence signifies that our agency goes above and beyond the highest professional standards of law enforcement, for which I am honored and very proud to lead at this time. I
T’S NOT OFTEN THAT A TRIP TO THE DENTIST CAN BRING ABOUT AN epiphany. But for Norma Jean Abraham and Iliana Garcia, the dentist was key to their destiny. After scouring Miami for a location for their dream tea house, they became frustrated by sky-high prices and questionable spaces, holding out for a prime spot. It wasn’t until Abraham left a dental appointment that she noticed a small space for rent in the same shopping center. Though that space ended up being too small to accommodate their vision, another one in the same location soon came available and Serendip-A-Tea found a home. “I handpicked every chair in the place,” says Garcia, who met Abraham through her cousin more than 20 years ago. “I found them, I refinished them. I saw it all in my head.” The “shabby chic” decor was the final step for the two friends, who say the idea took more than a year to come to fruition after Garcia left her music industry job. When Abraham asked her what she wanted to do next, Garcia says the answer was clear. “I wanted to do something for me,” she said. “I said ‘I’d love to have a tea room.’” Garcia’s love of tea began during her time living in San Francisco, where she says tea rooms are a common sight. “I fell in love with the whole ritual of the tea service,” said Garcia. “You have to sit and relax and wait for your tea. It’s an opportunity to chat with a friend or just a take a minute for yourself. For the last 10 years this has been dwelling in my mind.” Abraham, too, fell in love with the idea. “So many teahouses I’ve seen are dark and dreary, we wanted to create a whimsical, fun space. A teahouse with a twist,” she said. Launching with 23 varieties of tea (including green, white, black and oolong) and growing, the shop not only sells tea and “eclectic” accessories (think etiquette books, vintage-inspired jewelry and a carefully-curated selection of teapots) but serves light food and refreshments sourced from local artisans. Even the decor has personal, local ties, with a whimsical mural painted by Garcia’s brother, Luis Garcia-Nerey and “Adam and Eve” doors created by another friend, local artist Carlos Navarro. Another theme close to the pair’s heart are the owls that dot their menus, signs and space – a nod to Garcia’s grandmother’s collection of owls that inspired the friends to start collecting as well. “It all fell into place the way I had envisioned it,” Garcia said. In addition to the tea room and retail aspect, the shop is putting a year of catering service to work by hosting events in the space that range from a 91-year-old’s tea party to a 6-year-old’s birthday party. A kids table complete with art projects and chalkboard decorations sits in one corner while a simple and clean “guy’s table” takes space among the tableclothes and vintage china. When the shop opens April 1 the two friends say they will be side-by-side in their respective positions: Garcia as “tea mistress” running the daily operations and Abraham, the “promo queen” out promoting the store in the community. “We each have our forte and we each work at making it what we focus on,” said Garcia of the partnership. Abraham, for her part, hopes to bring awareness to the neighborhood (just past Dadeland in the King’s Creek shopping center) by hosting monthly events that will raise money for various causes and by working with other shops in the area to increase activities. Abraham also hopes for a large contingent of children’s events and parties to go along with her longtime charity work with children’s causes and organizations. “I want to bring what I do out in the community into the teahouse,” she said. For now the friends are moving slowly, planning for an April 1 launch party and planning dairy- and gluten-free menu options to please visitors. “We’re willing to learn from our guests,” said Abraham of the evolution. But in the end, the main focus will stay the same. Great tea. So what’s the “tea mistress” pick these days? “I’m seasonal,” Garcia said with a laugh. “Right now I’m hooked on Raspberry Rosepetal herbal tea. It smells delicious and tastes fantastic iced or hot. Q: WHAT IS THE DIFFERENCE BETWEEN A FILLER AND A NEUROTOXIN? A: Neurotoxins, such as Dysport, Xeomin, and Botox, are used to smooth wrinkles in the face. Dedication, Sacrifice and Time BY GABRIEL LAMAS, OWNER, FITNESS TOGETHER
L
ATELY, MY PERSONAL TRAINING COMPANY HAS BEEN doing a lot of work with triathletes and marathon runners. To most of us (myself included), these people represent the pinnacle of dedication in physical fitness. As someone who is obviously passionate about working out, it boggles even me to think about running for three or more hours straight or - beyond that - the Iron Man athletes who run, swim and bike non stop for over 12 hours! The dedication, sacrifice and time spent that these athletes give to their endeavor is all encompassing. What I have found quite interesting, though, is one of the overwhelming goals that many of these amazing athletes have is actually changing their body composition and “looking like” a stereotypical “athlete.” I was talking with someone the other day who just completed an Iron Man - perhaps the pinnacle of endurance athletics - and she was describing her surprise, and frustration, that while she is undoubtedly an unrivaled athlete - she could not see her abs! At first, it may seem puzzling as to how someone with such athletic prowess can not have the muscular and toned body type he or she desires but once you look at the concept a little closer, it actually isn’t that surprising. Long distance, long duration cardiovascular activity is fueled by carbohydrates. Once the body’s storage of carbohydrates is depleted, the next step is that muscle is actually broken down and turned into glucose (a type of carbohydrate). So, imagine running, biking and swimming for 14 hours straight. After a certain point in time, muscle is inevitably going to be broken down and that is going to compromise getting that lean, toned and defined body. Obviously not all of us aspire to be marathon runners with six packs, so how does this apply to the average person? As I’ve said in a few articles before, focus less on the amount of time spent doing cardio and more on fast paced, efficient weight training combined with short duration, high intensity cardio - and of course, make sure your diet supports your goals! Ironically, sometimes it requires doing a lot less to look like an athlete that does a lot more. OU COULD SAY THAT CRISTINA MISTRI SAW THE sunshine through the clouds, no pun intended. The Under One Umbrella owner had spent two years working for an Italian outdoor company when they suddenly closed their doors. Needing work, and sensing opportunity in a single product the company had carried, she took a leap of faith. “I exchanged the commission owed to me for an inventory of umbrellas, borrowed $300 for new business cards, corporation papers and stickers and I introduced myself to existing customers as the new company,” says Mistri. Today, more than a decade later, Under One Umbrella is the exclusive American distributor of Poggesi umbrellas as well as carrying gazebos, pergolas, retractable awnings and other sun shade accessories. With Mistri at the helm (and her two children working next to her) she works with both commercial and residential clients to find the right shade solutions. “For the first 10 years our business developed in the restaurant and hotel market, and we have become one of the leading providers of umbrellas on South Beach,” said Mistri, who is originally from Italy but came to the U.S. more than three decades ago. “The residential market has been growing in the last few years and that’s where we are developing more.” The Under One Umbrella process is simple. Mistri and her staff meet with the clients on-site to determine what solution best fits their needs. After the product and size are determined they then go over color, base type and other details. Once satisfied, the order usually takes about four weeks to produce. Her most popular item? The O.N.E. Original New Evolution, which Mistri says appeals to most clients because of its simplicity. “Our customers are looking for a simple and elegant umbrella that is designed to their specification.” Beyond aesthetics, many Under One Umbrella customers find they reap deeper benefits by shielding themselves from the Florida sun. “We like to say that we help prevent skin cancer,” Mistri said. “The sun’s rays are getting stronger and stronger, and everyone likes to be under shade.” Additionally, Mistri says she enjoys the interaction with clients, which allows her to meet new people and help them bring their design ideas to fruition.
The community also factors in to the way the company operates on a day-to-day basis. Mistri says their commitment to the environment inspired them to find creative ways to make use of leftover parts. “All of our remains of material are sent to the Sunbrella recycling plant and with our leftover aluminum we build a lot of our furniture, frames and other things,” she said. “It is our intention, with the new showroom coming, to create useful items from our scraps and sell them, giving the profit to one of our local non-profit organizations.” As the company looks forward they’re also looking toward new trends in the outdoor market. Mistri says in addition to a continuing rollout of new umbrella designs and models, outdoor spaces are now being used as an extension of the indoors, with lighting and misting systems as well as drop curtains creating useable and comfortable outdoor rooms. But at it simplest, the owner says her products are appealing to the market at large… especially in South Florida. A basic PA system has three components: »» A microphone to convert regular speaking volumes into an electronic signal. »» An amplifier – oftentimes called the powerhouse, boosts the voice signal to one that is capable of reaching hundreds of people. »» A loudspeaker to convert the electrical signal from the amplifier back into sound ways. I
F EVEN THE IDEA OF PLAYING WITH YOUR DOG OR CAT GIVES you a bad case of the sniffles, then you are not alone. You are among the 15-20 percent of pet owners that are allergic to their pets. Now, this does not mean that you have to give up your best friend. First, let’s understand what makes you allergic to your pets. Proteins found in your pet’s dead skin cells can trigger an allergic reaction, as well as proteins found in their saliva, urine and secretions from their skin’s sebaceous glands. The length or type of fur surprisingly does not influence the potential for a pet to cause allergies. It is a myth that there are hypoallergenic dogs or cats, since allergies are very particular for each individual; what induces allergies in you may not induce allergies in someone else. A single person may be allergic to several things; For example, you may be allergic to your cat in addition to dust mites, molds, mango trees and even your favorite perfume. The severity of the symptoms will then depend on the cumulative effects of these allergens in your environment at a given time. For this reason, getting rid of your pet may help to some degree, but may not solve the problem. Most importantly, before assuming that your pet is the cause of your allergies, go to a doctor specialized in allergies and get a proper diagnosis. If you have been diagnosed with allergies to your pet, here are a few tips to follow in order to live a happy, allergy-free life with your pet: »» Decontaminate Your Home Environment.
Create a pet-free room. This should be your bedroom since you spend at least five-to-eight hours every night sleeping in it. Limit the amount of curtains and carpets; these are ideal places for allergens to accumulate. Vacuum frequently with a special filter to control allergens or use a vacuum with a disposable bag. Install room air purifiers with special filters to control environmental allergen particles. Use “low-dust” cat litter, and clean the cat box frequently. »» Decontaminate Your Pet. Bathe your pet once a week in order to remove dead skin cells, dried saliva, and other allergens from their coat. Brush their coat several times a week outside of the house. Wash their bedding in the washwashing machine weekly. »» Protect Yourself. Assign a person in the family to decontaminate your pet and home. Avoid doing it yourself if you can. Wash your hands after touching your pet and avoid touching sensitive areas like your eyes, nose, and mouth. Set up an outfit for playing with your pet to avoid contaminating all of your clothes. Finally, find an allergy specialist to help you set up a therapy plan that hopefully will not require getting rid of you best friend. After all, we are all in this together; many veterinarians are allergic to animals and many pets are allergic to their humans. Finding a way to live in harmony is the goal. What It’s Like to be a U.S. Marine Officer BY LUIS ORTEGA, OWNER, SECURITY ARMS INTERNATIONAL
I
T IS NOT UNCOMMON FOR A FORMER SERVICEMEMBER TO be asked, “what was it like to be a...” As a preamble to a nearing Memorial Day commemoration, this column is dedicated to what it was like to be a U.S. Marine officer, described in terms of the fourteen leadership traits ingrained during a rite of passage called “Officer Candidate School”. Officer candidates who aspire to “the title” are first given a swift lesson in unselfishness, where any semblance of egoism is quickly stripped in favor of the welfare of fellow warriors. Selfishness in battle, as in an honorable life, has no room. This is also true of loyalty, because a gripping esprit de corps pervades the soul of every Marine. Speaking of honor, the most important and enduring leadership trait in Marines is integrity, sometimes simply referenced as doing the right thing when no one is looking. Another crucial trait in a small Corps is initiative, a powerful force multiplier, given that not all necessary orders can be covered by instructions, nor can all sequels of a situation be foretold a priori. It, however, must be tempered by judgement, whereby the discernment between right and wrong is considered often absolute and at times situational. It is closely tied to justice, indispensable in the daily apportionment of praise and reprobation. Speaking of communication, tact is usually evident in confident leaders; and, it is closely related to an immediately appreciable Marine trait, which is their bearing, an ongoing “visible” side of military discipline manifested in an upright posture and unflinching composure. The latter connects well with the endurance needed to overcome tough times, whether in training or in battle. It is always expected and, many times, even life-saving. Marine officers pride themselves in their dependability as enjoyed, through thick and thin, by their peers, their subordinates, and the Corps in the cause of freedom. The latter often calls for them to display steely-nerved decisiveness, making the right call at every level of command. To be decisive, however, one must almost innately display courage. Being a Marine officer is not for everyone, and certainly not for the weak of heart or mind. But it’s not all brawn in the Marine Corps. Knowledge is essential, as leaders owe to their subordinates technical know-how and tactical proficiency. Finally, all is put together by a trait that is sometimes difficult to enact, enthusiasm. Not every meal will be a feast, nor every muster, a parade. But the mission will always be constant, and they are charged with setting the example, Marine officers must reach deep in their soul to brave situational discomforts to carry out the plan of the day. In the end, being a Marine officer really meant “working for my Marines”, ensuring they were provided with all the leadership tools available for success and growth. They were the muscle, the energy, the heroes. They were unselfish, courageous, and loyal to boot. At the end of their initial “forming period” it would not have been uncommon for Marine officers to be commissioned with these words: “Go on out into the Fleet and lead proudly and selflessly, so that when your grandchildren ask you what is was like to be a Marine, you can accurately recall exhausting yourselves in the relentless pursuit of your subordinates’ greatness.” I only hope my Marines also recall it as such. Natural Ways To Prevent and Get Rid of Fleas on Your Dog BY TAMI MAIER

SHARE MY LIFE WITH MANY FOUR-LEGGED FRIENDS; OWNING MY OWN AND caring for many more at any given time. My canine companions make up a huge part of my life so, of course, I want to care for them… naturally. Like human medications, popular dog medications, such as flea and tick preventatives, are full of strange and dangerous chemicals that can have potentially harmful side effects to you and your pet. If you have little ones running around the house you don’t want them getting into the medication or touching your dog after the spot-on treatment has been applied. Because I board dogs all year long I have to be up on the best and safest way to control these little pests, especially as we enter the warmer months. In addition to the risks associated with spot -on treatments, there is simply no chemical-based pest control pill, dip, solution, shampoo, or collar that is without the potential side effects. Just because a substance is applied to or worn on your dog’s fur doesn’t mean it is safe. Remember, what goes on your pet goes in your pet, by absorption through the skin or ingestion during grooming. Fleas, ticks, mosquitoes and other parasites feed first on unhealthy animals. So the goal of preventive pest control is to make sure your dog is at optimal health, which will make him naturally more resilient and less attractive to these nasty parasites. I encourage you to work with your vet to find a natural way to control fleas and ticks. Instead of applying synthetic repellents, there are many safe and natural substitutes that I turn to to help keep the fleas away, and to keep your dog and your family away from potentially toxic chemicals.
Here are just a few suggestions:
»» Essential oil sprays containing lavender, peppermint, geranium, lemongrass or citronella can be very effective as parasite deterrents. If you are making this yourself please work with an animal aromatherapist to make sure you are using safe oils at the correct concentration for your dog. »» Cedar oil is a long recognized flea eradicator. »» Natural, food grade diatomaceous earth helps to remove fleas and ticks from your dog’s body. »» Fresh garlic can be given to dogs to prevent internal as well as external parasites. Work with your vet to determine a safe amount based on your dog’s size and weight. »» Organic Apple Cider Vinegar can be added to your dog’s daily drinking water, again check with your vet on the safe amount for your dog based on his/her size or weight. As always before trying anything new with your dog please check with your local veterinarian as to what is best for your dog before making any changes to their diet and daily care. Elkhart Lake – A Bygone Era BY DEBBIE MARTINEZ
I
F DIRTY DANCING IS ONE OF YOUR FAVORITE MOVIES, THEN PACK YOUR BAGS and book a flight to Elkhart Lake, Wisconsin and step back to a simpler time. Since the 1800s, it has been a summer resort town that has morphed into a year-round destination. Indians discovered the lake and believed it had spiritual healing powers, and I can attest it will most definitely heal your soul. Sprawling farmlands, cows, red barns, and silos reaching skyward guided me into the Village of Elkhart Lake. A few small streets, antique shops, unique restaurants, and a rail station transported me back to a bygone era. I stopped at Off the Rail, a cozy café that has taken over the original railroad depot in the center of town, for lunch under their umbrellas. Outside the Vintage Elkhart Lake Wine Shop and Tasting Bar was a little blue book house adorned with Disney characters. You could take a book or leave a book. A true testament to the type of town this is. Surrounding the 286-acre lake are private homes and three magnificent resorts, Siebkens, Osthoff, and Victorian Village with its Barefoot Tiki Bar. Each has its own special atmosphere and no matter where you stay, you will not be disappointed. My days were spent exploring the postcard-perfect lake, experiencing Road America, and indulging in some pretty fabulous restaurants. I was never at a loss of activities. I paddle boarded on the lake while others hydro-biked, canoed, or kayaked. I spent some time with a book in a gazebo by a pond edged with wild flowers. I took a long walk on paths that wound around the lake passing boathouses, waving fishermen, and Adirondack chairs perched on docks as the sun was setting. Rounding a bend I walked straight into a huge field of wood violet, Wisconsin’s state flower. It was just covered, and no matter how many pictures I took, I could not capture the beauty of that moment. One day was spent at L’ecole de la Maison cooking school, which is housed in the Osthoff Resort, learning the art of bistro cooking, and from there over to their spa, Aspira. It was hard to choose from their diverse menu, but I finally decided on the Mind, Body, and Spirit Alignment. Between my treatment and the meditation room, I left there feeling peaceful and calm, just in time for dinner at Lola’s. The bourbon barbeque prawns and fried butternut squash ravioli were to die for. A slight drizzle lured me to my room a little early. I poured a glass of wine, sat in front of the fireplace, and reflected on what a very special place Elkhart Lake is. New adventures lay ahead with the dawn. Back in the day, 1950-1952 to be exact, Elkhart Lake hosted open road sports car races. The event ended after three years, but in 1955, Road America was born. It is a permanent road racing circuit with 14 turns and multiple elevation changes within 4.048 miles; 50

the fastest one in the world. One of the experiences I picked was the off-road driving. I jumped into my Yamaha Viking utility vehicle and I was off. I covered various types of terrain on my trail ride and had the time of my life. There is go-karting, motorcycle and driving school, and you can even get strapped into a pace car if you have the need for speed. Lunch was at The Stop-Inn Tavern at Siebkens Resort. The sun porch was the perfect place to enjoy crab cakes, sweet tea, and re-energize for my afternoon at Hennings Cheese. While there, I saw cheese curds being made (and tasted them), learned about all the many different kinds of cheeses they make (and tasted them). The Horseradish Cheddar and the Mango Fire Heritage Cheddar were my favorites. Dinner was at Lake Street Café, a restaurant that boasts the third largest wine list in Wisconsin. I highly recommend the shrimp in smoked gouda cheese grits and collard greens. As the night progressed, I found myself back at the Stop-Inn Tavern to hear a local band and do some dancing. The place was packed as I made my way to a corner of the bar. I barely had ordered my drink when a friendly face asked me to dance. Having felt like I was on the set of Dirty Dancing for the last couple of days, how could I resist? The clock was winding down as I left the bar and passed by Sissy’s Coffee and Ice Cream Shoppe; I turned back around and ordered a cone of strawberry. HY IS IT THAT WHEN THINGS GO WRONG IN A RELAtionship we feel an overwhelming need and compulsion to understand? “I could let it go if I only understood why he/ she left me.” “It would be easier to let go if he/she would only explain why he/she cheated on me.” The need to understand is actually a form of control. You want to feel in control of the situation, and what will make you feel in control is an explanation, an understanding. Well, that’s great if one explanation will placate you, but what I have found is that one explanation always leads to another question. It turns into a bottomless pit. So how does one move past needing to understand? One word and one word only – acceptance. To be able to just accept that the relationship/marriage is over without that nagging need to understand would bring you such peace. Accept that you might not understand everything in life and that it is OK. To accept things as they are at face value and deal with what is before you without all the angst would be a gift. You are not always going to get an answer and, if you do, it might not be honest or you might not understand it. Are you going to go through life always feeling like there is unfinished business, or are you just going to accept it for what it is, turn that page, and not let yourself be controlled by something that you have no control over? Acceptance is one of the hardest words in divorce but one of the easiest to deal with if you believe in a higher power. To deeply believe that all things work for your good, that there is a purpose for everything, and all is as it should be will give you one of the best gifts ever – freedom. Do yourself a favor, stop putting so much effort into understanding why someone did something, and put the focus on understanding yourself. Control comes in many forms. It can be overtly and self-imposed as in the case of trying to understand someone else’s actions. Take back control of your new life by simply accepting. And remember, karma does exist. S CONSUMERS, YOU WANT TO DO BUSINESS with companies you know, like and trust. Trust is defined as the reliance on the integrity, strength, ability and surety of a person or thing; confidence and integrity is the adherence to moral and ethical principles; soundness of moral character; honesty. Aren’t these traits that you want to see in the roofing contractor you choose to work on your most-prized possession? Of course you do! In fact, nothing is quite as important when dealing with any contractor you choose to improve your home. There are simply too many fly-by-night contractors out there who will you tell you what you want to hear to get the job, but will ultimately burn you in the end. While a contractor may appear to be knowledgeable and professional, you’ll quickly find out why he was charging you a lower price than the others you contacted. Never trust a Miami roofing contractor who: »» Works out of the back of his truck. If he doesn’t have an office/office phone number – and only provides you with a cell number – he probably isn’t very trustworthy or experienced. »» Doesn’t provide you with a list of references and a history of similar projects. You want a contractor who is proud of the work they’ve done, has an
extensive list of satisfied clients and a history of similar projects to yours. »» Doesn’t provide a clear time frame for when the roofing project will be finished. This is definitely a red flag; you don’t want a new roommate – you want a roofing contractor who will come in and complete the project in a timely and professional manner. »» Offers you the lowest price. Many times these contractors will offer you the lowest price to get the job and then inundate you with unnecessary additional work orders to make up the difference. »» Doesn’t gladly spend time with you to answer all of your questions and guide you through the decision-making process. This is what separates the true professionals from the pretenders. You deserve high quality service from an expert who will be there for you and provide you true peace of mind. »» Has a sloppy appearance. You can bet that if his appearance is messy, his jobsite, craftsmanship, organization, and service will be too. These are just a few of the types of roofing contractors you should avoid. The bottom line is that when choosing a roofing contractor, without trust and integrity,
you have no basis for a successful project. Integrity is knowing the difference between right and wrong, so how can you trust a contractor who doesn’t possess this highly-important trait? Palmetto Middel School’s team of all 6th graders (Sofia Vinueza, Andres Laventman, Maia Wenger, Nicholas Leyva, Dylan Leyva, Gabi Rousseau, and Leah Melendez) tackled the issue of bullying in our schools during Odessey of the Mind’s “Odessey Angels” competition. The team designed a slogan and T-shirt and approached No Place For Hate and several area schools to implement their idea to raise awareness about bullying. They have raised $1,280 to be donated to No Place For Hate. The tshirts have been approved as official school shirts at Palmetto Middle, Howard Drive, Palmetto Elementary, Pinecrest Elementary and Palmetto High School.

The Palmetto Elementary Cheerleaders attended their first competition last month at the FCDA (Florida Cheer and Dance Association) competition where they placed third overall.

Hundreds of residents gathered at the Village’s sixth annual all-inclusive Bike Day at the Pinecrest Community Center on March 14, hosted in collaboration with Miami-Dade County Public Schools Vice-Chair Dr. Lawrence Feldman. All types of bicycles participated including, stroller, tandem and recumbent styles. The event commenced with a Safety and Information Fair and Bicycle Rodeo where children rode through an obstacle course that taught them about bicycle safety.
HABITAT FOR HUMANITY BLITZ BUILD
An 18-person team from TotalBank joined 2,000 local volunteersto participate in Habitat for Humanity of Greater Miami’s annual BLITZ BUILD. This year’s BLITZ BUILD ran from February 13-28, and saw the construction of 10 new homes for deserving low-income partner families at the Habitat Landings Community in South Miami-Dade. Contestants at the VeritageMiami grape Crush-a-Thon stomped 25 crates of grapes in front of Coral Gables City Hall in anticipation of the upcoming four-day culinary event next month, which brings together more than 3,000 wine, beer, spirits and food lovers from across South Florida at select venues. While Indulge Magazine Editor Betty Cortina-Weiss and Aniece Meinhold of the Federal Food, Drink & Provisions did their best, the ultimate champion was Coral Gables Chamber of Commerce President and CEO Mark Trowbridge, who stomped his way to victory after a foot-to-foot showdown with Mayor Jim Cason.
