Corrections:
In the December issue, the instructions for the Papaya Shrimp Ceviche recipe were mis-printed. The following are the full correct instructions: “In a nonreactive bowl mix the juice and zest of lime and orange, add the habanero, onion, and shrimp. Cover and marinate refrigerated for two hours. Add the remaining ingredients and marinate for an additional twenty minutes. Serve chilled with tortilla chips and enjoy!” For full monthly recipes, photos, and articles visit rgvgoguide.com.
Future front covers: The Go Guide is holding a local photo contest. This is your chance for fame and fortune (as long as your idea of fortune doesn’t include $$). Photos should showcase an RGV location, activity, etc. If your photo is selected, you will be contacted via email for follow-up information to be published in the next issue. All entries should be cropped to fit in a 4.25” x 11” space. Budding journalistic talent? Want to be published in our publication? Let us know what your idea is for an editorial and we’ll hear you out. We want to give novice writers a voice! Get in touch through the email address above.
dear READERS: I recently read this statistic for 2012: the average American spends 123 hours a year reading magazines. That’s 10 ¼ hours a month or 2 ½ hours a week; whether it’s at your house, in a bookstore, or in the loo, we hope that The Go Guide becomes a part of your yearly hours in 2013. If statistics aren’t your thing, let’s try Twain. Borrowing from his famous quote about reading, I’ll argue that those that don’t read good material: whether it’s a magazine, book, or news article, have no advantage over those who simply cannot read. We make choices daily as to what information we receive. We don’t have to turn on the TV, pick up a book, or read Facebook posts. We choose to do this. As I look to the coming year, I am dedicated to building content in The Go Guide that meets the standard of “good reading”. Our aim is to create conversation, action and a sense of ownership of the place we are from and issues that might concern us. Even the Greeks, Plato specifically, wrote that the world of knowledge has a soul, whereas writing is only an image, unchangeable once placed and unable to defend itself. It seems that we must take the invention of writing, take the creation of The Go Guide, and put it into good use within the world of shared knowledge: discussion, more writing, action. Go then and talk about what you read, talk about what you experience and what you want to know rather than simply reading and forgetting. It is the discussion and interaction with the content in The Go Guide that is the aim of this publication. Use it to inform yourself, then go and do, talk, enjoy, share these events and places and ideas with others. Only if we do this, will we grow as a community. Only if we participate in our community, try new activities: restaurants, music, events, bars, only if we discuss controversial topics, challenge one another’s way of thinking, have different opinions on things, places, people will we grow and create change. My New Year’s resolution for 2013? Be a better contributor to the world. The Go Guide is one venue for this effect. Challenge it, embrace it, talk about it, use it, and approach 2013 with the best version of yourself that you can present: that’s what we’ll be doing. Hope to hear you out there too. Cheers, Pattie Parker Publisher
PAUL CASTANEDA @ JABER ESTATE WINERY
BY PAT COLEMAN
JABER
ESTATE winery It is such a treat to open and drink a bottle of wine made in the RGV. Last September, I attended the Ribbon Cutting Ceremony of Jaber Estate Winery located on 22283 Western Road in Mission. The event included a tour by the owner himself, Mr. Jorge Jaber, an energetic 80-yearold businessman from Mexico. Three years ago he planted two and a half acres of Black Spanish grapes and three acres of Blanc deBois grapes. As he showed us the facility, I was quite amazed. He described every step, from picking the grapes to labeling the bottles. The machinery was all there, the fermentation

tanks, the barrels, everything. It was quite breathtaking. After the tour, as I sat in the outdoors reception area, sipping a glass of red, looking at the vineyards, I was proud. The red wine I was drinking was the product of this land that I love so much. The aroma, soft and soothing. The taste, tangy and refreshing. I was an instant fan, not just of the wine but of the wine-maker, Mr. Jaber, whose dream of making wine has been fulfilled. And now we all have the chance to take a part of that dream with us. I walked out with two bottles of 2011 red. To visit the winery, call 956-330-3609 to make an appointment and to get driving directions. Treat yourself to a wine tasting for $5 or get the whole experience for only $7 (tour and wine tasting). And don’t forget to walk away with your favorite bottle or two of the Black Spanish or Blanc du Bois, each available for $25 each (wine tasting fee waived if you do). The vineyard is also available to host any type of event, from a cozy party for two to any type of large special event.

ggplant is the featured ingredient in this month’s farmers’ market recipes. Brought to you by Bobby Vasquez, head chef at The Office Bar and Grill, are two different ways to serve up this versatile and nutritious vegetable. A former restaurant owner and chef at The Office for 3 years now, Vasquez sees eggplant with many more options than just your traditional Eggplant Parmigiana. You can bake, sauté, or grill it very similar to squash (although its consistency is much denser), and what’s great about it is it’s aptitude to soak up any flavor you put with it. Not to mention: it’s fresh at your local farmers markets. The following two dishes are easily modified to your liking, and are happily shared with you from Bobby Vasquez and the kitchen at the Office bar and Grill. Enjoy!
EGGPLANT R O L L AT I N I Ingredients: 1 Eggplant 2 Chicken Breasts 1 Yellow Onion 1 Green Bell Pepper 1 Celery Stalk 1 Clove of Garlic ½ Valley Lemon 1 Bunch Spinach 3-5 White Mushrooms Olive Oil Salt and Pepper Sauce: Alfredo Sauce Marinara Sauce Parmesan Cheese Instructions: Sauté chopped onion, bell pepper, celery, minced garlic and a splash of olive oil. When tender, add in chicken breast. Cook through, season with salt and pepper. Sandwich slice the eggplant at 1/10 inch slices and grill or sauté on medium high heat until soft. Slice the chicken breast into 3-4 pieces per breast, then wrap in eggplant slices. Top with Sugo Rosa sauce (half and half mix of alfredo and marinara sauce with parmesan cheese melted in). Sauté fresh spinach, mushrooms, and onions serve on side.
STUFFED CROWN EGGPLANT Ingredients: ½ Eggplant “Crowned” 5 Jumbo Gulf Shrimp Angel Hair Pasta Minced Garlic Olive Oil Salt and Pepper Sauce: White Wine Butter Fresh Chopped Basil Garlic
Instructions: Cut ends off of eggplant and carve zig zagged to make a ‘crown’. Place on roasting pan and drizzle with olive oil. Roast in oven at 360 degrees for 10-12 minutes. While roasting, butterfly shrimp and sautee on hot skillet for 3-4 minutes with olive oil, garlic, salt and pepper. Prepare Shrimp Scampi Sauce and Angel Hair Pasta. To plate: place eggplant crown on top of pasta, surround with shrimp, top with sauce and garnish with fresh dill, basil, or your favorite herb.

THE BREW GURU
BEER: IT’S WHAT’S FOR DINNER... BY JULIAN YBARRA, ‘BREWONION’ Forget about scouring your local HEB for a decent priced bottle of wine with an artistic label. Beer is quickly gaining on wine when it comes to food pairing in many high end restaurants and brewing establishments like brewpubs and beercentric taverns and bars. Ok, we are not talking about pairing Miller High Life with your oven roasted rack of lamb, were talking about beers “aged” in barrels, brewery collaborations, wild sour ales and your rare,

hard to find releases. Caged and corked, these beauties have the looks and elegant feel of a prized bottle of wine, and can compete not only with the price but also the alcohol content as well. Many chefs have replaced wine in their recipes choosing more robust beers and ales that can produce flavor profiles that wine just cannot accomplish. Pricing is another thing to consider when it comes to substituting beer for wine because a GREAT bottle of wine can run you up to $30+ dollars, while on the other hand a GREAT

TABLE BEER: MEANTIME PORTER
bottle of table beer can be easily acquired for less than $20 dollars and both are usually packaged in a 750ml bottle (the same size as a wine bottle). Alcohol content varies by style as seen in bourbon barrel beers that can be a little higher in ABV (alcohol by volume) and boozier due to the extra liquor that was left behind in the barrels. Other styles like wild ales and sour beers are great beers to present at your dinner table and complex enough for the most extreme menu. Each season brings new one-off beers and brewery collaborations that can satisfy everyone at the table whether it’s a romantic dinner, holiday feast, or at your local favorite restaurant. So next time your planning your special feast, make plans to pick up a bottle of table beer. TIME
DEEP
COURTESY OF HARDLY ART
D E E P T I M E BY PATTIE PARKER Deep Time, an Austin based duo made up of Jennifer Moore and Adam Jones, will be headlining a January 18th Tigersblood.org show at Fallback Records in McAllen. With recent international acclaim from leading music reviews like Pitchfork, the band is gaining popularity and momentum from their summer self-titled album release and recent European tour. I interviewed Moore, who sings lead vocals as well as plays guitar and a 60’s style organ, to ask her some questions about the band and their upcoming show. Although they’ve never been to McAllen or the Rio Grande Valley, they did play in Monterrey, MX last March at the Festival Normal with several other Austin bands, and better yet, Jones loves Tejano music and has a bumper sticker on his truck that reads “Tejano and Proud”. As I talked to Moore about
the upcoming show and their current status with the band, she explained that her and Jones are happy to be back home in Austin, TX, rested from their travels and “excited to get back into playing music more now.” She’s not speaking just of shows like the 18th, but of new music that she and Jones have begun to work on. When I asked about a New Year’s resolution, she said “I’d like to see another album out by the end of the year.” What does their music sound like? The band’s Facebook page claims a “weirdo pop” genre that has been created though the 6 years Moore and Jones have been playing together. Moore described it as “challenging pop music with heavy vocals, angular guitars, and herky jerky style melodies.” The two write their music collaboratively. Moore laughed as she explained that a lot of the creation of their music happens over

email; “We like to email things across the street” she said, funny because they are neighbors in Austin. What to look out for at the show: the hit songs “Clouds”, “Coleman” and “Gold Rush”. Among Moore’s favorite songs to play live is “Home Body” because of the challenge it presents the band on stage. “It has a lot of parts,” she said, “we have to fool around with loop pedals and multiple instruments, which makes it fun.” Recently, Moore and Jones have included a third member to their shows, Daniel Francis Doyle. Doyle, an Austin based musician as well, will be joining the duo on the 18th, playing guitar and bass. Moore expressed a lot of excitement about his involvement in the show, and after looking up his album “We Bet Our Money on You” online, I can see why. Prior to checking out the show, you can view some funny videos on the band’s website www.deeptimezone.com. For those of you wondering the big question of: “Kanye or Jay-Z?” Jones is actually Jay-Z fan. Interesting enough, the band periodically covers “Love Lock Down” at their shows. Not sure that it’ll be on the set list on the 18th, but you’ll have to show up to find out. Local bands The Young Maths and Jungle Bodies will also be playing the show; doors open at 8p.m.

WHY? BY NATHAN GOWER SCHWARZ I am very grateful that The Go Guide includes an LGBT section in the magazine. The genesis of the idea came because there was really nothing to do on Monday or Tuesday night. We would decide we wanted to do something, and then twiddle our thumbs for a while. We’d name one venue after the next – and then with a sigh, “Ah, but they are closed.” Well, this year we won’t have to look any further. Just keep a copy of The Go Guide in your glove box – or chic messenger bag (we’ve all got one, right?) and your problems are solved. I hope the community will feel free to contact either myself, or the editor, so all the various events and various are listed here in one quick place. For instance – did you know that Broadway Avenue has pool tables? I personally love to play pool, but get a little uncomfortable at some of the other establishments. It’s a great idea for a date, or just a relaxed atmosphere with some friends where you can go and have a drink and actually talk without blaring music. It’s also a great way to break the ice with your new paramour. Or what about karaoke? Jackie O’s is now offering this on Wednesday nights. I think some of the most fun I’ve ever had is doing karaoke – but I only do it at establishments in Dallas or Houston. Fortunately for the RGV I’ve only ever done one performance here – I like to be invited back places. There are also tremendous services, like the Valley Aids Council (VAC) which offers free HIV and STD testing. They have new rapid HIV tests which give your results within minutes, and gone are the days of cotton swabs and other intrusive methods for the other STDs. It’s completely painless and fast! The Stonewall Democrats of the Rio Grande Valley, the RGV’s premier LGBT civil rights organization, hosts monthly meetings and a “Sunday Tea” at Jackie O’s that features BBQs, drink specials, and socializing on a Sunday afternoon to end the weekend. Unfortunately it’s only once a month – but it’s something that is not to be missed. Looking for a more “mature” crowd? We have the RGV Prime Timers, a social organization dedicated to gay and bisexual men over the age of 21. PFLAG (Parents, Families & Friends of Lesbians and Gays) hosts movie nights featuring LGBT films and holds regular monthly meetings. All in all things are shaping up for the LGBT community around the country and in the RGV.

GOOOOOOL!!! BY FRANCO TORRES
That battle cry loved by millions around the world can now be heard loud and clear coming from the State Farm Arena with the arrival of the Professional Arena Soccer League to the Valley. Our team, the Rio Grande Valley Flash, started their inaugural season this past November and need your support. New to arena soccer, or, ahem, futbol? Well, let me give you the lowdown on the fledging sport. Aside from playing in an arena rather than a stadium, arena soccer is not that much different from the brand of soccer played by MLS or the US National Soccer Team. However, it does come with a few elements and rules not normally a part of its better known counterpart, the most striking of which are the following: The game is played 6-on-6 including the goalkeeper in four fifteen-minute “periods” instead of halves, which include timeouts and unlimited
player substitutions. In addition to the yellow and red cards handed after fouls, the sport includes a blue card which sends the player who committed the infraction to a hockeystyle penalty box for two or five minutes depending on the foul. Fouls committed inside the penalty area result in a shoot-out, also characteristic to hockey, which is actually fun to watch because it showcases the players’ skills more than the [chance-driven] penalty kick usually awarded in this case. These rules, along with the smaller field of play, make for a fast-paced, high-scoring game. It is not uncommon to watch a game with 10 or more goals. In fact, forget the typical 2-1 scores common in MLS, arena soccer’s dizzying pace means lots more goooooaaaaaals than you’re used to. Oh, and did I mention it’s fast? The constant back-andforth play means there’s plenty of excitement at both ends of the field.
IT IS NOT UNCOMMON TO WATCH A GAME WITH 10 OR MORE GOALS.
Our boys are staying true to their name. They got off to a good start this season and are scoring flashy goals left and right. So come on down to State Farm Arena and enjoy a game with friends and family. The atmosphere is perfect for kids with lots of chances to win prizes just for being a fan. Home games are usually played on weekends between 5p.m. and 7:30 pm and the 16-game season runs between November and February. Go watch a game, and who knows, you might go loco for the RGV Flash.
