his month millions of people will take part in WWF’s Earth Hour, the world’s largest event to protect the planet.

At WWF’s Living Planet Centre in Woking they’ll be marking the day with fun, family-friendly activities and providing lots of inspiration to help you to make a difference. Alongside face painting and crafts, you can discover if you’ve got what it takes to generate enough energy to make a cup of tea and whether you really know your recycling from your waste. Taking place at 8:30pm on Saturday 24 March, Earth Hour will help to raise awareness of how our actions are damaging the planet. We are living beyond our means and we are only beginning to realise the scale of our impact. Climate change is having a negative impact on wildlife, oceans are being suffocated by plastic and the forests and wild places that animals called home are being destroyed. Earth Hour is a chance to take a stand for nature and make your own commitment to helping the planet. We are asking people across the UK to make a Promise for the Planet - a small lifestyle change that can help make a big difference for the environment. From saying no to plastic cutlery and straws to switching to a green energy supplier, together we can turn things around and help to restore nature. These actions might seem fairly small on their own, but millions of people together can make a difference. You can also show your support for Earth Hour by joining millions of people and thousands of landmarks across the world and switch off your lights at 8.30pm. Renowned comedian Bill Bailey brings his new tour ‘Larks in Transit’ to Surrey this May. With his trademark musical virtuosity, surreal tangents and laser-sharp intelligence, he tackles politics, philosophy, the pursuit of happiness, death metal, ringtones and recalls hilarious tales from his 20 years as a touring comic…

Hi Bill. So what kind of ‘larks’ are we talking about on this tour – the adolescent, rock ‘n’ roll sort or the kind that involve bird hives? Haha, yes, I think a bit of all of them really. This is ‘larks’ as in the Dickensian context of ‘What larks, Pip!’ from Great Expectations. The tone of it is really stories of travel, doing comedy and making films all around the world. And it’s something that I hadn’t really visited much before in my comedy. In fact, it was only really the last tour where I’d told a story about a family holiday, and it was a bit of a lightbulb moment in some ways, because I thought that there were probably a lot of these tales that I could tell that could connect with an audience. I’m naturally quite a private person, a little bit shy and retiring, but I thought there was something there. And there’s a very ancient human compunction to tell stories, we all do it, so I just thought I’d love to do a show like this and punctuate it with music and some topicality.

What have you learnt about travel after 20 years on the road? I think you become a ‘better’ traveller, certainly. When you’ve experienced countries around the world where things don’t exactly run with great efficiency, you do appreciate it when things go well, because you realise that it doesn’t take much for things to grind to a halt (laughs.) And you become a bit more patient, you accept that some things are beyond your control and not to get too wound up by it. Maybe that’s not a bad way to be generally.

Do you have a favourite souvenir from your adventures? Well I do collect instruments. In China, I got a ‘Sanxian’? I can never pronounce it right. It looks like a strange, strippeddown banjo (laughs.) It’s homemade and has three strings and I saw a bloke playing it in a little band. I went up to him and through a translator said I really liked it, what was it? I don’t think he

understood me because he said, “Come to my house tomorrow night and I’ll sell you one.” And so I went and bought it off him and it’s just fantastic. It just has this other-worldly sound but it’s a bit fragile to take on tour, unfortunately.

What have been your experiences of comedy scenes abroad? There’s a burgeoning comedy industry in Asia that’s very new and raw compared to ours. It’s very difficult to find ways of expression there because in some countries independent and critical voices of the government are discouraged. You have to have a bit of courage to stick your neck out. It does make you appreciate our freedom of speech, the robust nature of the press and how we’re able to get up on stage and say whatever we want. We’re kind of a bastion of free speech.

Music has always been integral to your act, but have your tastes always been so broad and does new music still excite you? I think so. As a teenager, mine was the punk era, so I listened to the Buzzcocks, the Stranglers, Sex Pistols and Siouxsie and all that – but at the same time I wanted to listen to something completely different, out of my sphere such as music from New York like New Wave; the Talking Heads and the like, which seemed more sophisticated. And one of the great advantages of technology these days is that you can browse around and listen to all manner of bands and new sounds, which I love to do.

Given the dark comedy surrounding Brexit and Trump and this post-truth era we’re living through, do you have to resist wading into the scrum or are you happy to be on the fringes of political comedy? It’s hard. I mean, take Donald Trump: He’s almost beyond satire. One of the tools of satire is that you exaggerate

someone’s traits to ludicrous degrees. Well he’s already done that, and he continues to do that. It’s a difficult one to approach, because he’s someone who’s been written about constantly and picked over in the papers, TV and social media. So the challenge is finding your own angle, and my approach is using music. With Brexit, yes, it’s something that dominates the news cycle but it’s also something that I can talk about personally. Because it goes beyond just the referendum and the leaving Europe, it’s about ‘Britishness’. And that’s a theme that I’ve talked about many times in shows before - our strangeness, our unpredictability, our placidness in some ways and our uniqueness in many ways – things that are bound together and are why I love Britain and the people here. I’m very patriotic, so it’s a theme I’ve used before, so I can pick it up very quickly and apply it to this current situation.

You’ve performed at Wembley, made films and travelled the world. What great ambitions do you still hope to realise? I think you have to just keep going. Inspiration will come along, but there’s no point in trying to second guess what you’re going to do. There’s certainly things I’d love to do, certain milestones: I’d like to write a work; an ambitious musical, play or film. But time is pressing, and you can’t just hang around waiting for inspiration. You can’t just expect things to keep happening, you have to constantly keep the momentum going.

Schools and parents play a significant role in the development and preservation of a child’s confidence and self-worth. Parents need to allow their children to make mistakes, and promote the desire to try again even if success is not guaranteed. Schools need to be mindful of the wide range of pressures on pupils, both in the real and virtual world, due to the explosion of social media platforms. At Cranleigh Prep we aim to equip all our pupils with knowledge and skills that will enable the development of their emotional and mental wellbeing. They experience Learning for Life

through a spiral approach PSHE Curriculum, with three core themes: Health and Wellbeing, Relationships and the Living in the Wider World. Some of the essential skills and attributes established include resilience, Growth Mind-set, empathy, anxiety (including what is normal and how to cope), mindfulness, being a good citizen and the power of collaboration. The world has changed significantly and it is easy, for us as parents, to feel out of our depth, hence we are introducing a seminar programme with a particular focus on developing positive mental health and wellbeing. PENNYPOT DAY NURSERY Spring is a time of wonder for children. The weather becomes milder and the days longer, allowing for more opportunities for outdoor play. Flowers emerge from the ground and colour brightens up the days. It is also the season of new life and Easter celebrations.

All-weather, all-year round play is something that we promote at Pennypot Day Nursery in Chobham. It has long been established that engaging in outdoor activities can help to improve concentration, promote wellbeing as well as allowing little ones to burn off their excess energy. As well as developing skills, being outdoors is fun and at Pennypot we are firm believers in learning through play. Children have daily, direct access to the fully resourced garden area where there are seasonal activities for them to enjoy. At nursery we maximise the opportunities that the season of new

life has to offer. We plant vegetables and plants, teaching children about lifecycles, growth and nature. This extends to the kitchen where we sample our harvest later in the year, learning more about nutrition and healthy eating. We hope to inspire a generation of little ones to love and respect the natural world as well as develop a curiosity for healthy, nutritious food. We aim to give children early experiences of the natural world to build familiarity and curiosity. There is evidence that instilling a love of nature from a young age has a lasting impact into adulthood. Children who

Each student will have had their own journey on the path to higher education, but one thing remains a common factor in all their stories – the cost of tuition fees they will need to pay for, whether this be by their own private means or by way of a loan. It is these fees that are beginning to make young people, regardless of academic ability reconsider whether or not gaining a degree via the traditional route is the best way for them to succeed in their future career. The good news is that there is a creditable alternative route into their chosen career – an apprenticeship. The concept of learning on the job is not a new one and apprenticeships today are a far cry from the days of old. Gone are the days of the apprentice making tea or photocopying your reports. Modern apprentices are the future and are making an impact right across the country. You might think apprentices are only for the young entering into the trades and that your business does not need one. You’d be wrong – there is now an apprenticeship for almost every job out there and candidates can come from any age of the working spectrum. Furthermore, an apprentice can now study up to, and including, degree level. So whatever your business sector, an apprentice might well be the answer to your growth. The delivery of apprenticeships has also changed. No longer do they have to follow a rigid structure starting in September with completion in a few years. They have been adapted to suit businesses as cycles require. Yes, some apprentices will start in September but a large proportion of them can start when an employer wants them to and at a location that suits them, often in the workplace where an assessor will come once every few weeks for a few hours.

One of the many rewards of Britain’s food revolution over the last couple of decades has been the resurgent popularity of farmers markets and an appreciation for locally produced food and drink. It’s a movement that has inspired more ethical shopping and eating across the country as well as helping communities, local economies and producers. And now an innovative new enterprise born in France has arrived in Britain promising a better deal for everyone: one where communities get to know each other, farmers get a fairer price for their work, and customers get locally sourced, unique produce directly from local farmers and food producers. The Food Assembly’s vision is to create a better way to eat, where everyone has the pleasure of local food and is connected to the people that make it. This also supports the ecological and economic transition to a better sustainable future and to support the growth of meaningful, fairly-paid jobs in the food and agriculture sector. Selling through The Food Assembly, farmers and producers get over 80% for every product sold, compared to the 15%-25% offered by most supermarkets. All the food is produced within 150 miles from where you live, and producers set their own price which means that they are paid fairly for their work. So how does it actually work for customers? Given the galaxy of wonderful food produced in and around Surrey, a Food Assembly is an ideal fit for the county.

Fortunately, two Assemblies are due to launch in Guildford and Woking in the coming weeks. Jane Crisp-Daly from Jacob’s Well is the woman behind both, a passionate foodie who was inspired by the Food Assembly concept to bring it to Surrey. “I come from a food background,” says Jane “My family came to Guildford in 1972 and ran food-led pubs (my Dad was a chef and trained me) until 1989, and I ran a Crisp-Daly Caterers and a food distribution company until 2014. “I saw the Food Assembly as a way to become involved with food again without having to be in a kitchen! I started my journey with the FA in June last year. My thinking was that launching one couldn’t be more stressful than launching two, in Guildford and Woking; they are only a few miles apart but would have different customers, and they are on consecutive nights.” It has been an evolving project, says Jane, who has spent the last several months scouring the county for the best artisanal producers to get onboard with her Assemblies. So far she’s pulled together such talented local tastemakers as Chimney Fire Coffee of Dorking, Sweet Passion Cakes of West Byfleet, Reigate’s Chalk Hills Bakery, Godalming Fish, Beau & Joe Brownies, meat from Rose Cottage Smallholding of Ash and fruit and veg from Greener Greens of Reigate, and many more. The Guildford Food Assembly will run out of the Electric Theatre while the Woking Assembly will be found at The Lightbox Gallery. Donning the food-spattered robes of a culinary Moses, journalist, author, radio host and Guardian restaurant critic Jay Rayner promises to lead us to the edible promised land when he brings his Ten (Food) Commandments to Woking’s Rhoda McGaw Theatre on 15th March. During this hilarious audio-visual sermon, Jay will explain why thou shalt always eat with thy hands, why thou should most definitely worship leftovers, and why thou must celebrate the stinkiest of foods…

Hi Jay. To talk about your show is to talk about the book, The Ten (Food) Commandments, which you wrote in conjunction with the live show of the same name. Yes, so unlike when I wrote My Dining Hell (2015) and after I went hmm, I wonder how I could turn this into a show? This time I was clear from the beginning that the two things would sit side by side. The book itself is ten quite in-depth essays on subjects chosen because there was somewhere to go with them. Apart from number six which is purely a rant about dining companions. When I was coming up with each of these commandments, what I needed was a real depth to each. So, for example, when I came up with the first one, ‘Thou Shalt Eat With Thy Hands’, I’d started doing a literary review on cutlery and the history thereof. I read studies into how you respond to your food when you’re not using cutlery, and suddenly the whole landscape of it opened up. And so each topic needed that sort of depth to it otherwise they’d be a bunch of knob gags with a few recipes. Which I’m not beyond! As you mention, the original Jewish commandments extend to 613. What other Food Commandments would you prescribe? You’ve actually got to see them (the original rabbinic laws). They were a code of law which attempted to keep together a cultural group while they were a diaspora. So once the Jews had been chucked out of what is now Israel after the fall of the second temple in 70AD, how do you maintain a cultural identity, and that’s what those laws were about. You didn’t even have to believe in God for much of those 613 laws; there was a whole atheistic thing going on which is quite interesting. But yes, I’m quite well known for hating food not being served on plates. I’m willing to accept that that might just be my modern prejudice, but I could make a few arguments about plates being

shit for food but I’m not sure I could extend that into a big moral argument. I’d probably also take a crack at service too. ‘Thou Shalt Not Ask Me “How is Everything?”’ It drives me nuts. And if there were one Food Commandment to rule them all? It’s definitely number six: “Thou Shalt Choose your Dining Companion Bloody Carefully.” Because the food can be shit or the service could be shit but if the company’s rubbish then all is well and truly lost! Scattered throughout The Ten (Food) Commandments are your own recipes, or ones inspired by others’. Is this perhaps a dress rehearsal for a full-blown Jay Rayner cookbook? I’m working on a new book about my pursuit of My Last Meal on Earth and what it would be, and that will also contain recipes. But I’m not writing those kinds of glossy cookbooks that pile up on our kitchen shelves and, through their photography, are an overt invitation to fail. The recipes emerge from the text. I make you hungry and ask what would you like to eat at this moment? So, if somebody finds a couple in there that they’d actually like to give a try, then that’s actually what I’m going for. You take pains to demystify the business of restaurant reviews, but are you surprised that some people still assume there’s more to reviewing restaurants than simply eating a meal? The main mistake that most people make is that they’ll say: “I’d love your job, eating all that lovely food.” But what I always say is that that is not my job. My job is writing, first and foremost. People read me for how I respond to that experience. Or perhaps the knob gags. But it’s not like I go out with some briefcase of doom with test tubes and a spectrometer, it’s nothing like that. Really, all I’m doing is working out my opening line. Because once you’ve got that, the rest is just typing.

You admonish us to ‘Celebrate the Stinky’, but after your graphic depictions of eating the Swedish delicacy of fermented herring, Surströmming, considered the foulest smelling foodstuff in the world, what other challenging foods are there left for you to try? I haven’t tried [notoriously pongy] durian fruit yet, although I know full well that durian is a much gentler experience than eating Surströmming which is very full on. As I show on video during the show, I went up to my local park because I wasn’t going to open the can in my back garden. And yes, the experience was very full on. But I’m sure there are other things to explore. I might open my fridge and go ‘Christ’s sake, what died in there?’ My wife will plead to throw it out and I’ll say “No wait, it hasn’t quite developed a personality yet…” You’re fast becoming an established live musician since you began playing piano with your jazz quartet six years ago. Did you expect that project to run for so long? I didn’t know where it was going to go, but I just kept pursuing it and it doesn’t appear to be stopping. We’ve played Ronnie Scott’s three times, we released our first album last year and this year we’ll be playing the Cheltenham Jazz festival and the Gateshead International. All of those sorts of things took me by surprise but, above all, I’m loving learning more about the piano. It does rather encourage you when you’ve got gigs. I can’t see any reason to stop, because it’s so much fun! Any plans to scale it up, perhaps a big band or jazz orchestra? I do have a desire to play with a big band and I haven’t been subtle about that with various people. I keep dropping hints. But it’s not out of the ambition to show off, it’s just God, what fun. And I enjoy the company of other musicians far more than the whole food lot (laughs.)

WHERE TO EAT: NO.97, SURBITON By Rich Lee A friendly neighbourhood gin bar and restaurant in sleepy Surbiton, No 97 both soothes and dazzles with its easy ambience and stunning food... It takes a special kind of idiot to visit a gin bar while in the white-knuckled grip of Dry January. Better, on reflection, to make that grip an open palm slap to the face of the monster who invented such ascetic punishment during the most miserable month of the year. Happily, though, No 97, found along Surbiton’s foodie mile, Maple Road, appeared to be an uplifting place to spend a long and languid lunch, regardless of whether you indulge in their mindboggling collection of over 100 varieties of the crystal spirit. Yes, gin is definitely the thing at this neighbourhood bar, restaurant and café, but a casual peek at Instagram prior showed some very enticing dishes: perky colours, chunky ingredients, rubbly textures and scattershot presentations that are, of course, rarely anything but. Ever a sucker for a pretty plate, and restaurants that exude a bold indie spirit, we lurched hungrily in the direction of Surbiton and No 97. A dream of local couple Sam and Alex Berry, they opened the place last year with the kind of attention to detail and singular vision you’d ascribe to restaurant moguls, not Mom & Pop. Yet this might just be how empires begin (they’re already hatching their second, ‘114’ in Teddington.) It’s a relatively small but superbly crafted space of hard angles and soft edges, sweeping petrol blue banquette seating, coppertone tables and lamps, and a central bar (which serves as a chef’s table during special tastings) fronting a shiny open kitchen like the prow of a ship. There’s more than a whiff of Parisian bistro about No 97, and it’s not entirely affected nor disguised beneath its contemporary city sheen. This is evidently a place for a gallic-paced breakfast, a breezy lunch or intimate

dinner; a drop-in shop for lovely food and lovelier gin, and catch-ups with the warm and gregarious team who make it feel like home. Explore further, though, and you’ll find a subterranean speakeasy and a glass-encased dining room out back for a little semi-alfresco dining. Upstairs in the main dining room, we took our table and were immediately offered a drinks list groaning with those multitudinous gins and other artisan spirits and boozy quenchers. My fad-enforced sobriety flapping in a gale of temptation, our sage server, Kim, glimpsed which way my wind was blowing and brought me a virgin cocktail that was as crisp, clean and complex as any good gin-soaked concoction. The weekday lunch menu is sparse yet very reasonably priced, offering two courses for £15 or three for £20 and around nine dishes and extra sides. We began with bread cooked fresh on site and homemade treacle and horseradish butters; always a good sign when a kitchen is in control of even the humblest details. To start, and a special of octopus: a fat, springy arm given a gentle blistering in the pan for a lovely rusty crust and nutty shingle from toasted quinoa, over squidgy haricot beans spiked with chorizo and a gentle wasabi foam. But this was almost upstaged by a plate of purest rustic pleasure. A puck of herby chicken and sweet-salty ham hock, strewn with petals of burnt onion, streaks of tarragon cream, a hint of blue cheese and two quenelles, one with the fresh mustard punch of celeriac, the other with earthy mushrooms. All my favourite things on one plate, in other words, and enough to banish any January blues, no gin required. Mains only raised the bar further. We’re talking pork, belly and fillet, both succulent and buttery and crowned with crispy parsnip shavings, above red cabbage, a sticky-sweet glaze and pebbles of crunchy roasted pear. With dishes like this, I could happily languish in winter a little while longer. There was Irish hake; skin crisped gold with

meltingly tender flesh over translucent folds of leek and a glossy wasabi sauce, studded with a few clams, mussels and samphire. Desserts were an almost unnecessary victory lap - which made them mandatory, of course. A set banana custard, all satin and silk against cracked pecans and dabs of toffee, coffee, and a swirl of chocolate, was a child’s dessert that had grown up but hadn’t quite lost its innocence. An apricot and rosemary cake, meanwhile, brought an astonishingly fluffy and flavoursome sponge, all jammy fruit and syrup and squidgy depths puckering up to salted caramel. Honestly, casual lunchtime dining rarely gets better than this. Even in sleepy Surbiton, No 97 can easily take on the big city boys with dishes that surprise, subvert and satisfy. When I return, and return I shall now that January is now just a memory, it’ll be to plunge fully, tipsily into No 97’s bohemian delights, artisan gin clinking and spilling in one hand… and a menu in the other. Recipe: Rhubarb, Blood Orange & Ginger Cake By Laura Scott at www.howtocookgoodfood.co.uk

Blood oranges and rhubarb are among the earliest heralds of spring, bursting with bright, sharp flavours and colour. Here, Laura Scott combines them with ginger for a sumptuous cake perfect for an Easter Sunday lunch… This cake may look quite simple in its presentation, but it packs a huge amount of fruity, gingery flavour with a sticky almond crumb that makes it hard to stop at just one slice. I serve this cake with stunningly shocking pink roasted rhubarb, blood oranges and thick cream. If you can get hold of forced rhubarb, it is worth seeking out at a greengrocer. The colour is so striking, the stems are much more slender and delicate and it take very little time to cook through. I like its sharpness, so I don’t overkill it with sugar.

Prep Time: 15 minutes | Cook Time: 40 minutes | Serves: 8

INGREDIENTS

METHOD

2 Beat the butter and sugar together until light and creamy using a hand mixer /food mixer

•

200g golden caster sugar (175g for the cake & 25g for the rhubarb topping) 175g unsalted butter softened

•

2 large eggs

•

Zest of 1 blood orange & Juice of half a blood orange

•

1tsp ground ginger

•

1 large lump of stem ginger in syrup chopped finely

•

125g self-raising flour sifted

•

50g ground almonds

•

1tsp baking powder sifted

•

1 large stalk of rhubarb chopped & coated in the remaining 25g of golden caster sugar

1 Pre-heat the oven to 170 degrees

3 Add in the eggs and beat again until incorporated 4 Next, add the stem ginger, ground ginger, zest and juice of the blood orange and beat into the cake mixture 5 Finally fold in the ground almonds, sifted flour and baking powder 6 Place the cake batter into a lined 7-inch cake tin and top with the chopped rhubarb which has been coated in the 25g of sugar. Use up all of the sugar by sprinkling it over the top surface of the cake 7 Bake for 40 minutes until golden around the edges 8 When it’s completely cool, dust with icing sugar and serve with some roasted/ poached rhubarb, blood oranges and lots of cream.

This cake is best served warm or at room temperature. As it has fruit in it, keep leftover cake refrigerated and take it out at least an hour before serving it or warm it up in the oven for 5 minutes before eating.

THIRSTY BUSINESS: CRUMBS BREWING

ow one independent brewers in Reigate have used their loaf to craft astonishing beer using leftover bread from Surrey’s favourite artisan bakery…

Food waste is an unavoidable and inevitable by-product of food production, and it’s an issue that’s coming under increasing focus from government, industry and activism. To take a local example, not even Chalk Hills Bakery based in Reigate, perhaps Surrey’s most lauded independent artisan bakers, can sell every crumb and crust that comes out of their ovens. And if throwing away perfectly fresh food feels tantamount to criminality among ethical foodies, then discarding, say, a hunk of Chalk Hill’s sublime sourdough bread possibly warrants a trial at The Hague. Possibly. But it was while sitting in Chalk Hill’s cheery café back in 2016 that Reigate resident and beer lover Morgan Arnell had an inspirational moment that’s since propelled him, his wife Elaine and friend Adrià Tarrida to become one of the most interesting artisan beer producers in the county. As a marketing consultant with ties to what he simply calls the “booze industry”, Morgan Arnell was well-placed to find a gap in the market for a new kind of beer. “I was doing a lot of work with SAB Miller, helping them build up new products and beer brands. And while doing that

I thought ‘why am I spending my time doing this for other people and not myself?’ My wife Elaine and I had always wanted to start a business together, to have control for ourselves, but we wanted to do something local. We love Reigate, and everyone really supports local businesses here. “I was musing over what we could do and realised I could link an interesting story with something that’s embedded in a local business like Chalk Hills Bakery.” He understood that he could incorporate unsold or wasted bread produced by the bakery, owned and run by former publicans Chris and Rosie Robinson, and infuse his own beer with the starch and flavours unique to the bakery’s loaves. As by-products go, he surmised, what could be better than beer from bread? Chris and Rosie evidently needed no persuasion to put their waste bread to such a noble use. Taken at face value, adding bread to beer doesn’t seem too bizarre. After all, both the ‘staff of life’ and the ‘stuff of a good life’ begin their journey as grain. Even the Ancient Egyptians buffed their beer with bread, and a handful of Belgian brewers still do. A London start-up, Toast, only very recently took up the idea of using leftover bread in beer, but the method still remains niche within the notoriously traditional and insular world of craft beer. Introducing bread to the brewing process adds natural starch that replaces much of that usually provided by malt. It also, and very much so in the case of Crumbs and Chalk Hills Bakery, instils some of the character of the bread used

in the process. “I’d played around with home-brewing,” explains Morgan, “but started to formulate the idea. I did a lot of research. We did a lot of trials, a lot of tests. I was keen to get the most out of the bread.” With the help of their brewery, Goddards in the Isle of Wight, and with the money-raising power of Crowdsourcing, the Crumbs team produced their first successful batch of real beer in May last year; 6000 bottles to sell at markets and festivals over the course of the summer. “We sold out in eight weeks,” he laughs. So what began with Crumbs first beer, Bloomin’ Amber made from Chalk Hill’s Surrey Bloomer loaf, has seen them add the baker’s celebrated sourdough to their fabulous Pale ale, while their Ruby Ale uses Rye bread for a deep, complex flavour laced with caraway. To date, Morgan estimates that they’ve brewed over 35,000 bottles and recycled over a tonne of bread. Buoyed by the success Crumb Brewing has seen in such a short amount of time, Morgan is flush with ideas for building their brand. He’s currently hatching a type of Porter made from coffee grinds, and soon plans to roll out kegs for their beer to be enjoyed from the tap in local pubs. SPARKLE INTO SPRING AND SAVE A FIZZING FORTUNE

here are few places you’d rather be than Surrey when spring starts to sparkle so, as the darkness slides away what better way to celebrate than by popping a cracking bottle of bubbly. If Champagne’s beyond your pocket as spring approaches, don’t panic, just grab your passport! With most winemaking countries now producing sparkling wine you can buy an amazing array of fizz and, save a fizzing fortune t’boot. The Kings of Bubble, Champagne (Deutz NV, Taittinger NV, Henriot NV, £35) and English Sparkling Wine (Albury NV, Exton Park NV, Greyfriars NV, £30), are generally a blend of Chardonnay, Pinot Noir and Pinot Meunier grapes. They initially make a dry still white wine which is then poured into bottles with a pinch of sugar and yeast; the result is a ‘second fermentation’ which produces a little more alcohol and carbon dioxide - the fizz. Most sparkling wines are made in exactly the same way, often from the same grapes. There is one big difference of course, a smaller price tag! Champagne Houses have been making bubbly in the New World for decades (Moet et Chandon’s ‘Chandon’, Argentina, £12.99) but the locals have long realised their potential for top fizz. Chile (Montes, ‘Sparkling Angel’ £15.50), South Africa (Graham Beck, £11.99), Australia (Jansz, £16) and New Zealand (Lindauer, £14) are now very happy hunting grounds for the bubble seeker. Back in Europe, Cava, the Spanish sparkler from vineyards not far from Barcelona offers brilliant value. Made in the same way as Champagne but from Xarello, Macabeo and Parallada grapes you can pour a crisp Cava (Cordorniu Brut NV) for £8 and often Vintage Cava for not much more (Codorniu Grand Plus 2015, £10.99). I’m not a fan of cheap Prosecco but this sparkler from Glera grapes grown in vineyards behind Venice in northeast Italy has taken the world by storm. That said, when it comes to Prosecco it’s worth paying a few quid more. Look for the words Valdobbiadene, Superiore and DOCG on the label – better (hillside) vineyards equal better grapes equals better wine (La Gioiosa Valdobbiadene DOCG, £9.99). By the way, Prosecco is

made by the Charmat Method, where the second fermentation produces bubbles in a closed tank as opposed to a bottle for Champagne. A question coming to a pub quiz near you! Staying in Italy, a bottle of Franciacorta from the Lombardia region of northern Italy will herald the spring in fine style. Chardonnay is the major player (with Pinot Noir and Pinot Blanc) in this super Champagne alternative. It’s not cheap but often has a price tag £10 lower than the Kings of Sparklers.

after Champagne it’s the most popular sparkling wine in France. So, it’s well worth a try! To add even more excitement to your springtime festivities pour sparkling rose versions of these international beauties or how about a red Sparkling Shiraz from Oz (Jacob’s Creek, £10). Another tip for your springtime patio; serve your sparklers in normal wine glasses – flutes are so yesterday.

Shooting back into France opens up a fizz fest. Loire Valley Sparklers have lost a few headlines in recent years which is a pity as Cremant de Loire (Chenin Blanc, Chardonnay) from the limestone vineyards around the castle topped town of Saumur is well worth searching out (Wine Society, £11.95). Burgundy often means big price tags but the sparkling wines of this famous region offer great value; classy Chardonnay based bubbly for little more than a tenner, (Cremant de Bourgogne, £10.99). Cremant de Limoux from high altitude limestone vineyards in the LanguedocRoussillon region in the south of France, (90% Chardonnay and Chenin Blanc) will also blow away those February blues (Les Graimenous Brut 2015, £14.50). Alsace’s Cremant d’Alsace (Waitrose, £10) hails from vineyards tucked into the north east corner of France, just up the road from Champagne. Little known in the U.K., it’s interesting to note that
